Slip-Sliding Away There’s a saying: “Growing old is not for wimps.” It’s true. Things to which I once never gave a second thought are now very real concerns. Like falling. During the recent deep freeze, my husband told me I didn’t even need to “think” about stepping a foot out our door because the entire walkway was a skating rink. I was glad to oblige, because falling is something I am incredibly good at, but rarely enjoy. I was reminded of my college days out in Abilene. Snow and ice were much more common there, but still only occurred a few days a year. I remember my brother Ben and I were living in a house behind a shopping center. The roads were coated in ice, but we thought it was a great adventure to “skate” in our shoes to the grocery store and home again! There was definitely a tumble or two, but we never thought a thing about it. Those were the days (before new knees and the thought of breaking a hip)! When I say I am incredibly good at falling, I am not kidding. My husband said he is going to write a memoir for our children titled, Daddy Fell for Mama; Mama just Fell! In our part of the country, there are very dangerous things you have to be aware of in order to stay upright. Recently, I was walking up to a friend’s house for a small group meeting and stepped on one of those “straightfrom-the-devil,” spiky sweetgum balls. I realized it just as my foot hit it, and there was nowhere to grab. I fell very slowly--almost in slow motion--and basically just sat down (one of my best falls thus far). The thing was, I had been to my Airrosti Dr. Smuts that morning; she had really worked on the muscle in that hip; and it was a little sore. As I sat there in the 30-degree weather, I realized the cold concrete was kind of like having an ice pack at physical therapy…so I just sat there a few more minutes! It then dawned on me I should probably call the hostess (in case they had outdoor cameras) to let her know I was okay and was just “chillin’”! Once the ice and sweetgum ball-falling seasons are past, it will be time to beware of the most dangerous thing in my house…the stray dryer sheet on the laundry room floor. If you’ve never experienced that danger, consider yourself warned!

The tradition that evolved into Mardi Gras dates back thousands of years, with its beginnings in pagan celebrations of spring and fertility. When Christianity arrived in Rome, leaders decided to “go with the flow” and morph these celebrations into the new faith, which seemed a much easier task than banning them. Along with Christianity, the tradition spread to other European countries. Today, Mardis Gras is celebrated in many countries around the world—mainly those with large Roman Catholic populations—on the day before the religious season of Lent begins. Brazil, Venice, and New Orleans host some of the holiday’s most famous festivals, drawing thousands of tourists (and party animals) annually. Mardi Gras 2024 will fall on Tuesday, February 13. In many areas, however, Mardi Gras has evolved into a week-long festival (or, with good old American retail commercialization—a whole “season.”) So, what exactly is Mardi Gras (other than a reason to party in New Orleans—which never seems lacking)?

The What In French, “Mardi” is the word for Tuesday, and “Gras” means fat. In France, the day before Ash Wednesday came to be known as Mardi Gras, or “Fat Tuesday.” Historically, in the days leading up to Lent, people would binge on all the rich, fatty foods (meat, eggs, milk, lard, and cheese) to empty their pantries of them, in anticipation of several weeks of eating only fish and different types of fasting. When Lent arrived, they began 40 days of fasting and penance

The word carnival (or carnaval), another common name for the pre-Lenten festivities, traces back to Medieval Latin. Carnelevarium means to take away or remove meat; it comes from the Latin root carnem for meat.

host to the giant Quebec Winter Carnival. In Italy, tourists flock to Venice’s Carnevale (famous for its masquerade balls), which dates back to the 13th century. In Ivrea, Italy, the highlight of the carnival period is a reenactment of the “Battle of the Oranges”. While the
original battle was between the people and troops in the Middle Ages, today It’s simply the largest food fight in Italy. The German celebration-known as Karneval, Fastnacht or Fasching--includes parades, costume balls, and a tradition that

area covering modern Louisiana, Alabama, Mississippi and part of Texas. The now famous parades in New Orleans began in 1837. These parades run for the two weeks prior to Ash Wednesday. Each parade is organized by a different “Krewe,” or social club. Many include decorated floats. Small items, including colored beads, are often thrown from the floats to people in the crowd watching the parade. Many attending and in the parade dress up in costume. Other large Mardi Gras celebrations include Mobile, Alabama; Galveston, Texas; and Pensacola, Florida.
In the U.S. New Orleans, by far, has the most famous Mardi Gras celebration in the United States. This certainly doesn’t mean many other locations with French or Cajun ties (or people who just look for a reason to party) don’t follow the lead.
Mardi Gras arrived in the United States when the Le Moyne brothers were sent from France to defend the French claim to Louisiane, an

In Mobile, mystic societies organize parades with large, colorful floats, balls (including masquerade balls), and other events. It was actually folks from one of Mobile’s societies who started the first Krewe in New Orleans.

King Cake, Colors, and Throws King Cake is a ring-shaped pastry is usually covered in icing, then topped with yellow, purple, and green edible glitter or sprinkles. The cake traditionally contains a porcelain or plastic baby that is supposed to bring good luck to whoever winds up with it in their slice. The tradition of the king cake dates back to the Middle Ages. It was originally made to celebrate the Catholic Epiphany, a.k.a. Three Kings Day. French settlers brought the cake (and the traditions behind it) to Louisiana in the 1800s. So, what’s the meaning behind the baby? Some say the tiny token represents the Baby Jesus, while others believe it comes from another Louisiana tradition of hiding a bean or trinket in one slice of cake during the king’s ball — whoever found the trinket would be crowned the “king” or “queen” of the ball. Regardless of its origins, the baby is said to bring good luck and prosperity. The colors of Mardi Gras can be traced to the first Rex parade in New Orleans, Louisiana in 1872. Purple Represents Justice. Green Represents Faith. Gold Represents Power. According to legend, Mardi Gras colors influenced the choice of school colors for archrivals Louisiana State University and Tulane University. They say when LSU was deciding on its colors, the shops in New Orleans had stocked up on purple, green, and gold for the Mardi Gras season. LSU decided upon purple and gold (and bought much of it). Tulane bought much of the only remaining color – green. The tradition of tossing Mardi Gras throws to spectators during parades started with the second procession of the Twelfth Night Revelers in the early 1870s, with an individual dressed as Santa Claus passing out gifts to spectators as he passed by. The tradition was then expanded and continued by the Krewe of Rex who began to throw glass beads to spectators in the early 20th century. Throws consist of necklaces of plastic beads, coins called doubloons (which are stamped with Krewes’ logos, parade themes, and the year), plus an array of plastic cups and toys. The plastic cups used as throws are sometimes referred to as New Orleans dinnerware. Mardi Gras beads are said to be a symbol of good luck, prosperity, and sharing. Regardless of the motivation for joining in on Mardi Gras activities, we can all gain wisdom from the practice of celebrating and being thankful—in both prosperity and in want. DEAR VVCR Nothing says “I love you” like a bad Valentine. Many years ago, Dud made the mistake of asking me what I wanted for Valentine’s Day. Rather, I made the mistake of giving him a serious answer. I waited with excited anticipation for the day I received the gift I requested. Did you know that, all these years later, you can buy a ‘dime-in’ ring? Back then, he went to the trouble of having his buddy solder a dime to a metal circle. It wasn’t so humorous back then (but, yes, it’s funny now). He’s never been able to outdo that one! He still asks me what I want every year, and I have a standing answer--a weed whacker. Thoughts on the Garden of Life… 2024 marks 39 years for me in the home, garden, and landscape industry…and it has been quite the ride. Highs, and lows, challenges and triumphs—remember, you never fail unless you quit! The tortoise will always win the race while the rabbit is busy “showboating”. Spending almost four decades in the green industry, the opportunity arose to grow more than plants. We grow people, friends, and community. In that time, between myself and senior staff, we have “raised” over 200 college students and folks from all walks of life who came into our sphere. Some needed safe haven and to find a work family, others needed to learn and heal…and others, sadly, never rise to full potential and were with us a very short time. I do believe the blessing is multiplied when these young students, now in their late 30s and 40s (with families and businesses of their own), stop by to “check in” and let us know how they are doing. New babies, new jobs, new spouses, challenges and encouragement are always exchanged. It was not all holding hands and singing “Kumbaya”; to some, it was “do or die” boot camp, and they learned life skills, how to respect themselves and others, and how to work. Folks, not allowing your kids to work is the “worst” thing you could ever do.
We had numerous students who worked secretly, because their parents forbade it. Crazy stuff--they learned how to change a tire; sweep; use a vacuum; rake; use a shovel; mop; clean a bathroom; build a fence; say yes ma’am and yes sir; how to shake hands and look you straight in the eye when talking; and a thousand other life skills they never attained to that point in their life. We sent girls home for wearing too revealing clothes, and 95% of the time they returned dressed appropriately. We gave them standards, and the bar was set high…if you want to be the best, start at the bottom, humble yourself, and learn. My favorite response was, “I’m graduating college and will never have to do those things,” (which, unfortunately, we heard often). Our response was always, “If you cannot do the job of the lowest man/woman on the totem pole, then how will you know how long it takes, what tools are needed, and if it is done properly— all of which you need to know to be an effective, supervisor, owner, or manager?”

When your mom was ‘Rosie the Riveter’, a strong work ethic should come as no surprise. In many ways, Vickie Croston’s story began before she was born, with the experiences of the strong woman who would one day become her mother. Years into the future, her mom would inspire Vickie to become a pilot, a skydiver, a dental professional, and a home builder. She would pass her incredible work ethic to her daughter, teaching her to work hard and never give up.

One day, the well-known actor Walter Pidgeon came to the factory to make an advertising film for a war bond campaign. The film would later be shown between feature movies at theaters across America. The song “Rosie the Riveter” was popular, and the actor
Rose Monroe was in her early 20s when an automobile accident claimed the life of her husband, leaving her with two young children. She needed to support her family, but there were few well-paying jobs near her home in south central Kentucky. Furthermore, she had only an eighth-grade education. “She didn’t have the opportunity to go to school,” Vickie says. “She made a good, successful life through grit and hard work.” One day Rose saw a poor family at a bus station. The children’s shoes were so worn out, the tops and soles were held together with canning jar rings. “Mom said, ‘I will never let that happen. I will work three jobs, if I have to, to provide for my kids.’” During the early part of America’s involvement in World War II, Rose heard there were good jobs available in Ypsilanti, Michigan. She soon got a job making B-24

but was disqualified for the dangerous job because she was a widow with children. After the war, she held a variety of jobs to support her children: she went to cosmetology school, drove a school bus, and drove a taxi. She eventually remarried, and Vickie was born to the couple in 1954. Rose still wanted to learn to fly; although she was busy with the family’s construction business, she finally became a pilot in the early 1970s. Vickie
was
one
of
three
passengers on an ill-fated flight in 1978 that her mother piloted. A child of a family friend was sitting in the front seat and pressed the button that controlled the flaps. It was like putting on the brakes while the plane was trying to accelerate, Vickie explains, and it caused the plane to stall and crash. Two of the passengers were unhurt, but Vickie sustained a broken nose and facial lacerations. The pilot, Rose, was seriously injured. Her vision in one eye was badly impaired, and she lost one kidney. The accident, however, did not deter Rose. She was no longer able to pilot an aircraft, but continued to fly as a passenger.

wanted to include someone from the factory to be in the film. “Mom’s foreman told Walter Pidgeon, ‘I have a lady named Rose who is a riveter and fits that song.’ She got a part in the film,” Vickie says. As the human face of Rosie the Riveter, Rose was in the limelight. She didn’t seek publicity, Vickie says, but she was willing to tell her story. After seeing female pilots transport many B-24s from her factory, Rose wanted to join the Women Airforce Service Pilots (WASP),

We can do it! Meanwhile, Vickie was mapping out her own place in the world. She had always been fascinated with rocks, so she planned to become a geologist. Somewhere along the way, however, she remembered the dental work she had done while she was in high school, and she changed her mind. “I am good at working with my hands, and I like science,” she says. “Dentistry is good for those two traits I was born with.” So, Vickie earned a Bachelor of Science in Dental Hygiene at the University of Louisville, gaining a good

educational background for a career that has served her well, even now in semi-retirement. “I like helping people, and I approach things differently than a lot of hygienists,” she says. She encourages people to take better care of their teeth at home and tells patients, “the why behind the what.” Patients often ask her, “Why didn’t anyone tell me that?” she says. One day, Vickie accompanied her then-husband, a skydiver, to a

parachute drop zone in Kentucky. “At the drop zone, I was watching all these people packing their parachutes and having so much fun,” she says. “Then they would do it again. I thought, ‘You know, if it was that scary, they wouldn’t be having that much fun.’” So, Vickie decided to go on a tandem jump with an experienced skydiver. “I was hooked,” she says. “I knew I would be doing this again.” Vickie ultimately became a skydiving instructor and a professional skydiver, often performing at airshows. During the week, she was a dental hygienist; on the weekends, she was a skydiving performer, jumpmaster, and instructor. “I don’t ever remember taking a ‘sick’ day off to go skydiving,” she says, “but I wanted to!” After spending so much time jumping

out of airplanes, it seemed natural to become a pilot, too; in 2002, Vickie earned her own pilot certificate. She was never interested in flying for the airlines, but considered becoming a corporate pilot. She finally decided to continue working as a dental hygienist and fly as a hobby. She and her husband Merwyn owned three different airplanes over 20 years, which they often flew to other states to visit family. Although it was expensive to own the planes, Vickie says, there were many benefits. Instead of driving to her home state of Indiana in 16 hours, she could fly it in six. She didn’t have to go through security and didn’t have to take her shoes off; she could take her own food on the plane, as well as guns and dogs. They also could leave when they wanted to. Although flying isn’t Vickie’s career, it is her passion. She belongs to many charitable aviation groups, such as Angel Flight, which provides medical patient transport; Challenge Air, which hosts special needs youth flying events; and Pilots N Paws, which flies animals to foster families. She is also a member of the Experimental Aircraft Association, Women in Aviation International, and the Ninety-Nines—founded by 99 female pilots, including Amelia Earhart, in 1929. She also strives to improve air safety through her work with the Federal Aviation Administration as a FAASTeam volunteer safety representative. Vickie doesn’t like the heat and humidity here, but she does appreciate Texas’ commitment to flying. “Texas is a very pro-aviation state,” she says, “and Houston is huge. There are a lot of airports and a lot of flying!” Flying, Vickie knows, is inherently dangerous, but she chooses to persevere. “You live with the danger,” she says. “I am not going to live my life in fear. If that were the case, I would never leave the house.” When Vickie says “house,” she really means her log home. After building a small log cabin, she and Merwyn had a larger log home built, but did much of the work themselves. Vickie has always felt at home around tools, as she and her siblings worked alongside their parents in the family construction business. The family worked hard, but played hard when they were done, which is a lesson that Vickie learned well. Although Vickie didn’t follow her mother’s career path step for step, she—like all American women—owes much gratitude to Rosie the Riveter. Vickie just knew the real Rosie better than most.

What is TAVR? Questions Answered About the TAVR Heart Procedure If you have aortic valve stenosis or your doctor has mentioned the TAVR procedure, you likely have some questions. Starting with: What’s that? TAVR stands for transcatheter aortic valve replacement. The transcatheter part of TAVR means that the aortic valve is fixed via a percutaneous approach that starts with needle punctures and tiny tools that fit inside a catheter — rather than by opening the chest and being placed on a heart-lung machine.

To be eligible for TAVR, an extensive assessment is needed.
The TAVR procedure is far less invasive less invasive than SAVR, making it a safer option. It also shortens the length of hospital stay and overall recovery time and is a way to take care of patients for whom the risk of undergoing open surgery is too great.
“We assess each patient using various tests — echocardiograms, CT scans, cardiac catheterization,” Dr. Masud lists. “The results are reviewed by our multidisciplinary team of experts that includes radiologists, cardiologists and cardiothoracic surgeons during a joint conference, and we have to agree the procedure is the right choice for you.” What should you expect during a TAVR procedure?
“Once the aortic valve narrows to the point of not fully opening, we need to replace it,” says Dr. Ali Masud, Cardiologist at Houston Methodist The Woodlands. “And TAVR is the less invasive option with a dramatically shorter recovery time.” The other is through open heart surgery, a procedure called SAVR (surgical aortic valve replacement). It’s a big operation, which, until recently, was the only aortic stenosis treatment option available to most people who require aortic valve replacement. Even just 10 years ago, most aortic valves were repaired surgically. “TAVR is now widely used throughout the U.S. and the world. In fact, TAVR is now
Who qualifies for the TAVR procedure? When TAVR was introduced some 20 years ago, it was designed for high-risk patients who couldn’t undergo complicated surgery. Now, TAVR is available to almost anyone who requires aortic valve replacement. “The procedure has advanced to the point that it’s no longer restricted to just high-risk patients,” explains Dr. Masud.
TAVR is performed in an operating room, under general anesthesia or local anesthesia with sedation. A few punctures are made in the groin, arm, or neck to reach the blood vessels and heart to position the catheters and other equipment to successfully perform TAVR. The procedure is concluded using percutaneous closure devices, making it entirely minimally invasive. Patients recover in the ICU overnight and go home the next day and are typically back to their normal selves after 10-14 days. Driving is restricted for a week, while strenuous activity and heavy lifting are restricted for two weeks.

Along the Road Last Republic of Texas Boundary Marker
From 1836 to 1846, the Lone Star State wasn’t a state at all, but its own country. In order to show foreigners they were entering sovereign land, granite markers were driven into the ground along the Republic’s borders. Today, only one of these boundary markers remains. Dating back to 1840, this last of the known markers is 10 miles southeast of Deadwood, Texas on FM31. There were many of these stone markers originally, but this one, which is on the National Register of Historic Places, is the only one that hasn’t either disappeared or sunk into the river. Three sides are engraved, providing all the necessary details: Merid. Boundary, Established A.D., 1840 on one side, and sides two and three simply say U.S. and R.T., just to make sure you knew which side you were on.

Lake Charles, Louisiana … Beyond the Casinos Take a drive one weekend to grab yourself a little piece of paradise…
Sparkling towers reflecting off a glistening lake below. The chance to win cash and prizes. Pristine golf courses. Upscale restaurants and luxurious pools. Star-studded shows. The casinos in Lake Charles seem to have it all, or so it seems, because they draw thousands of tourists from East Texas to the bayou state each year. But there is so much more to this midsized city just two-and-a-half hours east of Houston. For 10 years, I have been married to a Lake Charles native, which means I have probably visited Lake Charles close to 50 times. And yet, in all that time, I have never set foot in a casino. The truth is, most of our visits have been spent at my in-laws’ home, but even when we have decided to get out of the house, the casinos have not come to top of mind. Those are for the tourists, I tend to think. You know how it is: the locals know all the best places. Of course, the other activities in Lake Charles are hardly a secret. They are usually listed in the convention and visitor’s information. Yet, they are often overlooked. If you’re an outdoorsperson, a foodie, or an explorer looking for a taste of Cajun culture--pay attention. You might need to take a drive one weekend to grab yourself a little piece of paradise.

Get Ready to Get Your Cajun On Most people think you have to go all the way to Lafayette or New Orleans to catch a Cajun vibe, but that would be far from the truth. Lake Charles has a rich history and celebrates it with events like the Contraband Days Pirate Festival, the Cajun Music & Food Festival, and a family-friendly Mardi Gras celebration. There are several festivals each month that include authentic Cajun Cooking or Cajun/ Zydeco music. If you want to explore the culture of Southwest Louisiana on your own, stop at Creole Nature Trail Adventure Point in Sulphur, just west of Lake Charles off I-10. This visitor center has free, hands-on displays and activities for both kids and adults alike. During our visit there, my family had the most fun “playing along”
with a Cajun and Zydeco band. You can learn how and where to spot alligators and migrating birds, learn about other native Louisiana wildlife, and get maps so you can create your own tour of the Creole Nature Trail and other regional attractions. At the Creole Nature Trail, you can pick up a guide to the Boudin Trail, where you will learn locations to go for the best boudin – a tasty Cajun sausage filled with rice, meat and spices – many of which are located in Lake Charles. To try lots of varieties of boudin from around Louisiana in one place, drive an hour east to Scott, which hosts the annual Boudin Festival each April. In addition to Boudin and other Cajun treats, the festival features arts and crafts vendors from around the region as well as live entertainment.

Two well-established Lake Charles restaurants that are popular with locals and visitors alike, for fresh seafood and traditional Louisiana fare, are Steamboat Bills on the Lake and Pats of Henderson. While Pats offers an upscale dining experience with a full bar in a crisp white plantation-style building, Steamboat Bills is as downhome as you can get, with orders placed at the counter and food served on red-checked tablecloth laden tables.
The Epitome of a Sportsman’s Paradise If you haven’t already heard, Louisiana is often called the sportsman’s paradise, and for good reason. Hunting and fishing are two of the biggest pastimes in the bayou state, and there are many outdoor activities to enjoy in Southwest Louisiana. The Calcasieu River flows into Lake Charles, past the port and into Prien Lake, and ultimately down through Calcasieu Lake into the Gulf of Mexico. Each of these bodies of water, along with bayous in and around Lake Charles, offer opportunities for water skiing, fishing, and kayaking. Google “hunting lodges near Lake Charles” and you will find numerous lodges that lease open land and organize hunts for deer hunting and duck hunting. There are even guided excursions where you can hunt for alligators in the swamps. If you want to get outdoors, but the backcountry isn’t your thing, no worries. There are several acclaimed golf courses in the area (beyond the ones at the casinos) that are open to the public, and Lake Charles even has a lakefront beach! It’s a great place to go to catch some rays during the summer and is set up with sand volleyball courts and shaved ice stands.

Step 2: Sift together cake flour, baking powder, baking soda, and 1/2 teaspoon salt. Set aside.

Step 3: In a large bowl, beat together eggs and sugar on medium-high speed until mixture has lightened in color and tripled in volume, 5 to 7 minutes. Mix in ricotta, olive oil, 1/4 cup limoncello, 2 tablespoons lemon zest, 2 tablespoons lemon juice, and vanilla until combined.

Step 4: Pour in half of the flour mixture and mix until just combined. Add in remaining flour mixture and mix until just combined. Pour cake batter evenly into the prepared springform pan, then place the springform onto a baking sheet. Step 5: Bake in the preheated oven until a toothpick inserted into the center comes out with a few moist crumbs, 65 to 75 minutes. Cool cake in the pan for 30 minutes before removing to a wire rack to cool completely. Step 6: To make icing, mix together powdered sugar, 3 tablespoons limoncello, heavy cream, 2 teaspoons lemon juice, 1/2 teaspoon lemon zest, and pinch of salt until completely smooth and combined. Pour icing over cooled cake.

Lightly season chicken with salt and pepper. Step 2: Set up dredging stations by placing flour on a plate, then set a shallow bowl with beaten eggs beside it. Finally, combine grated pecorino, Parmesan, and breadcrumbs on a plate at the third station. Step 3: Dredge each tenderloin in flour, shaking off excess, then dip in egg, allowing excess to drip off. Place on top of cheese and panko mixture, patting it into chicken until well coated. Set each piece on a plate until all are dredged and breaded.

Step 4: Meanwhile, bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
Ingredients 1 1/2 lbs chicken tenderloins salt and pepper to taste
Step 5: Heat olive oil and butter in a large skillet over mediumhigh heat until butter stops sizzling, then add breaded chicken tenderloins, being careful not to overcrowd the skillet. You may want to cook chicken in batches.

Step 6: Cook tenderloins until nicely browned, 3 to 4 minutes per side. An instant-read thermometer inserted near the center of chicken pieces should read at least 165 degrees.

Step 7: Remove chicken from the skillet and place on a rack over a plate or tray and keep warm, until all tenderloins are done.
2 Tbs unsalted butter 2 cups marinara sauce 6 small fresh parsley sprigs for garnish (optional) Directions Step 1: Place chicken tenderloins between 2 sheets of heavy plastic on a solid, level surface. Firmly pound chicken with the smooth side of a meat mallet to a 1/4-inch thickness.

Vegan Chickpea Noodle Soup
Directions
Ingredients
Step 1: Warm olive oil in large, heavy pot over medium-high heat. Add carrots, celery, and onion and cook, stirring only occasionally, until lightly browned in spots and starting to get tender, about 10 minutes. Stir in garlic and cook 1 minute more.
2 Tbs olive oil 3 large carrots, diced 3 stalks celery, diced 1 large yellow onion, diced
Step 2: Add broth, herbes de Provence, bay leaves, and black pepper to the pot with the vegetables and bring to a boil. Simmer, uncovered, for 10 minutes.
5 cloves garlic, minced 12 cups vegetable broth 2 tsp herbes de Provence
Step 3: While broth simmers, bring a pot of well-salted water to a boil and cook noodles until tender but still firm to the bite, about 7 minutes or according to package directions. Drain and toss noodles with a small amount of oil to prevent sticking.
3 dried bay leaves ½ tsp ground black pepper, or more to taste 1 (12 oz) pkg wide vegan noodles 2 (15 oz) cans chickpeas, drained and rinsed
Step 4: Remove soup from heat and stir in chickpeas, parsley, and lemon juice. Ladle soup into bowls, adding noodles to each bowl right before serving.

A few months ago, Mike Nokes, owner of McGilberry Mechanical, was in church when he got a text notification that a client’s air conditioning wasn’t working. It was a scorchingly hot day, and Mike knew one of the members of the customer’s family had health concerns. As soon as the service ended, Mike—wearing a suit and tie—went straight to the customer’s home. “He didn’t even change his shoes,” says his wife, Tammie. “I made a joke that I got dressed up just for them,” Mike chuckles. On another occasion, he was attired far more casually when a client needed a new air conditioning system on the Fourth of July. Mike had been boating with his family on Lake Livingston when he got the urgent message. He arrived at the customer’s home wearing a swimsuit and Crocs. Although most clients won’t see Mike in either a business suit or a swimsuit, they can have confidence that their air conditioning and heating problems will be solved in a timely manner. Unless a repair is dependent on a hard-to-find part, Mike says, almost all repairs can be accomplished the same day they are reported. McGilberry Mechanical will “come running” when needed, he says, even if it’s at night, or on a weekend or holiday. People must like this level of commitment, because Mike and Tammie estimate 80 percent of their business comes from existing customers, and most of their new business comes from client referrals. Perhaps that is because McGilberry Mechanical ensures that heating and cooling systems are installed, repaired and maintained properly; furthermore, the team goes to great lengths to make sure customers are happy. “We don’t cut corners,” Mike says. “We like to set them up right the first time.” Many clients take advantage of McGilberry’s service agreement, which offers periodic maintenance on a variety of HVAC components, such as refrigerant levels, ductwork, and condenser coils. Subscribers also enjoy a discount on any needed repairs. The goal, Mike says, is to

in 1990, setting up shop in his barn. Family members joked that the business was “born in a barn.” Mike, Danny’s son, was newly married when he joined Danny in the business in 1991. Danny taught Mike the HVAC business; in addition, he taught Mike other things, including Biblical truths, how to build things, and how to work with his hands. “My dad showed me how to work and showed me how to be productive,” Mike says. “One thing I learned: in a small town, you may only have a handful of customers, but you have to cherish them.” When Danny transitioned into semiretirement in 1998, he sold the company to Mike. Tammie worked for the family business, too, but she eventually ventured off into other jobs and worked for McGilberry Mechanical in the evenings. “It grew to where I would come from my regular, eight-hour-a-day job and work in our home office until one or two in the morning,” Tammie says. Finally, about 15 years ago, she became the company’s full-time marketing manager. Operating their business from home wasn’t ideal, Tammie says, but in 2009, Mike found

family members with allergies. Jacob Robinson, a family friend of Amber Fuller, McGilberry Mechanical’s office manager, was a logical choice when the company needed help in 2023. Jacob had his own lawn service business, but soon found he enjoyed working full-time for McGilberry Mechanical. He is now learning the HVAC trade via on-the-job training. “They are great teachers,” he says. So far, his favorite part of the job is installing new units. Jacob is a good example of the kind of people that McGilberry Mechanical likes to hire: humble, personable, hardworking, and willing to learn. “I think this is a great career,” Mike says. “You are learning a trade, and this is something that will stick with you from now on. Once you know it, you can’t unknow it. It’s like riding a bike.” Meanwhile, Amber has been with McGilberry Mechanical for 13 years. She is usually the first voice panicked customers hear when they call to report a heating or air conditioning outage, and Amber enjoys this interaction with the company’s clientele. “I treat them the way I want to be treated,” she says. “I
treat them like family and get them taken care of.” Amber’s favorite day of the year is in September, when McGilberry Mechanical provides barbecue and door prizes for about 150 first responders. “It’s nice to give that to them and let them know we appreciate them for what they are doing every day to protect us,” she says. Amber—and all the members of the McGilberry Mechanical team—strive to make sure customers are happy. Occasionally, that means revisiting a jobsite to make sure everything was done correctly. Mike notes that all new installations, maintenance and repairs are covered by McGilberry Mechanical’s warranty. “We have good work ethics, he says, “and we treat people fairly. And we don’t just say this stuff; we actually follow through with it.”

I was writing a condolence card. Gregory (5) asked what I was doing. “I’m writing a note to say how sorry I am that my friend’s mom died,” I said. He paused for a VERY fraught moment and then asked, oh so tentatively, “…That’s just to be kind, right? You’re not the one who did it?”

Wildlife Wonders Lady Bugs By Cheryl Conley Lake Creek Preserve Board of Directors As a child, I enjoyed having ladybugs crawl on my hand. I’d try to count the black spots. Women in the Victorian era believed if a ladybug landed on them, they would get something new. If it landed on their head, they thought they would receive a new hat; on the hand, it would be new gloves. Today, some believe if a ladybug lands on you, your wishes will come true. In North America, we call them ladybugs. In Britain and other English-speaking countries, they are called ladybirds. Ladybugs aren’t really even bugs. Bugs belong to the order Hemiptera. Ladybugs are part of Coleoptera, the Beetle order. These little beetles have an insatiable appetite. That’s a good thing for those of you who garden, because they eat the insects that invade your plants, like aphids, whiteflies and other destructive bugs.

Most of us are probably used to seeing the orange ladybug with black spots, but they come in a wide range of other colors as well— gray, tan, metallic blue. The number of spots can vary, too, and some have no spots at all. Even though they are small, they still have a defense mechanism to protect themselves from predators. When the insects are disturbed, they emit an odorous, noxious yellow fluid that seeps from their joints. Did you know there are “bad” ladybugs? Asian Lady Beetles were first discovered in the United States in 1988 and are known as the ladybugs’ evil twin. They, too, devour aphids (so in that regard, they are beneficial). Their hefty appetites can extend to non-pest insects as well, like monarch butterfly eggs and larvae, and that’s not good. Asian lady beetles can bite. The bites are not poisonous or extremely painful, but in some cases can cause “pink-eye.” In the fall or winter, if you notice large numbers of what you believe are ladybugs congregating around your home, they’re probably Asian lady beetles. When it begins to get cold, they will attempt to enter your home and can stain walls, furniture, and fabrics with the stinky yellow fluid they secrete. Asian lady beetles can be harmful to dogs. When a dog in Kansas started sleeping all the time, refused to eat, and was foaming at the mouth, the veterinarian discovered over 30 Asian lady beetles had attached themselves to the roof of the mouth. So how do you tell the difference between the good ladybug and the evil twin, the Asian lady beetle? Look at the markings on their head. From above, Asian lady beetles have a white “M”-shaped spot where their head meets the body. As part of our mission, we strive to educate you about environmental issues that may affect your lives. The ladybug acts as a natural pesticide in nature, and they can be easily purchased online. Utilizing this unique feature of the ladybug can discourage the use of dangerous pesticides that are harmful to all living things.

Gearing Up for Potatoes What I often consider a homely vegetable actually has its roots in South America. The potato was discovered at the same time the Spanish Conquistadors discovered gold. The potato later built a nation, then caused a tremendous disruption to that same country with the arrival of a single fungus disease. The result of its dramatic loss had
an enormous impact on global migration and (ultimately) crop protection advances. It is true that what we call an Irish potato is originally from the highlands of Bolivia and Peru in South America. So far as historians can determine, Incans grew potatoes as far back as 8,000 BC. Spaniards brought it back to the European continent in the 1500s, where it soon spread across Europe. The French went so far as to call them “Apples of the Earth.” But no country adapted and benefited from growing potatoes as much as Ireland. Their cool, moist, highland climates closely mimicked their origins in South America. Ireland was heavily producing potatoes in the 1700s, which provided vastly more nutrition per acre than the grains they had
been growing. In just 60 years, from 17801840, the Irish population doubled, reaching 8 million people—due, in large part, to this wonderfully nutritious crop. But, in 1845, a fungal disease affecting potatoes devastated the crop, resulting in what we now call the Irish famine. Just three years later, over 1 million were dead from famine, and over 1.5 million left the country, mostly immigrating into Canada and the United States. In our part of the world, most folks around here swear that you must plant potatoes on Feb 14. So, you have about a couple of weeks to prepare the ground. Be sure to provide 8 hours of direct sunlight for maximum production in loose, well-drained, slightly acidic soil. Work beds 12 inches high and 36 inches apart. Good, high beds will be critical to growth and harvest. Purchase quality seed potatoes from our local garden centers and feed stores. With the seed potatoes, cut them into pieces weighing about 1.2 to 2 oz. (about the size of a good hen egg), making sure each seed piece you use has at least one good eye.

Give these pieces 5-6 days for the cut seed potatoes to “cure” (or dry over) so they will not rot in the soil. In your prepared row, plant seed pieces about 1 foot apart and 3 inches deep. When plants are 4 inches tall, add a cup of complete fertilizer for a 30-foot row and maintain adequate soil moisture so that moisture stress issues (from too wet or too dry conditions) do not occur. In the ground, your crop of potatoes will grow above the seed piece. Knowing this, gardeners will need to hoe or otherwise bring the soil up to the stem to provide more room for tuber growth. Many gardeners use heavy mulch for this purpose. Do not allow sunlight to reach your potato tubers as those areas will turn green. Larger potatoes are ready to harvest about 3 but no later than 4 months, when the tops begin to die back and the skin becomes firm. You can harvest smaller “new” potatoes during the growing season by digging back carefully with your fingers and harvesting them. Several varieties grow well in Texas. While there are thousands of potato varieties found in South America, the following list would serve you well in our part of the world: Red flesh (Dark Red Norland, Norland, Red La Soda, and Viking); White flesh (Atlantic, Gemchip, Kennebec, and Superior); Yellow flesh (Yukon Gold); and Russet types (Century Russet, Norgold M, and Russet Norkatah). Don’t be surprised if your potato flowers or even bears fruit. Though not very common, remember that we are just after the wonderful tubers, which provide a nearly nutritiously complete meal all by themselves.

Have You Ever Been to Egypt? Perhaps a better question is: Are You There Now?

The Israelites spent over 400 years in Egyptian captivity, culminated by a rescue which included ten plagues and the parting of the Red Sea as they fled. More than one author has noted that, in spite of these miracles involved, it was probably much easier for God to get the Israelites out of Egypt than it was for Him to get Egypt out of the Israelites.
We need to embrace the assurance from Genesis 1; also, we should each find time to be still and reflect…so we can remember who (and whose) we are. One ticket out of Egypt, please.
Four centuries of being treated like and told their only value as a slave was in how many bricks they could produce certainly took a toll on their self-image. God sought to repair this partly through Sabbath, which reminded them to rest periodically and remember who they are, and through handing down the creation story found in the first chapter of Genesis, which tells and reminds that mankind is the crowning jewel of His GOOD creation.
