A Letter to Our Readers Welcome to the first issue of the tenth year of Austin’s only 100% homegrown natural magazine – and the only one to feature an annual Swimsuit Issue. (See the provocative Palm Springs Pictorial on page – well, on this page, just to your left.) Not exactly Victoria’s Secret models in bikinis, but you get what you pay for. With a little imagination, putting All Natural on a magazine masthead gives you about as much leeway as it does on a food label – the cover of the maiden issue had Willie Nelson (definitely no maiden) sitting in the cab of a hotrod biodiesel pickup truck, and it just got better from there.
What next? Maybe a few Golden Oldie flashbacks over the summer, maybe even the legendary, often mentioned, any day now (really) website upgrade with full-blown audio and video and YouTube channels and such. With Letterman gone and Jon Stewart going, the market’s wide open for a funny, smart-alecky talk show host willing to make a fool of himself on a regular basis. n my recent visit to Kuwait, a smiling woman named Alaa Alothman came up to me while I was autographing books and asked something that stopped me in my tracks. “You say that many books have influenced you throughout your life,” she began, “so I am curious what children’s book had an impact on you?”
I looked up and just stared at her. “What a truly great question,” I announced. “I’ve never been asked that before.” I hadn’t, either. I went on to tell her that I’d have to think about it, as it was something I never considered. It truly made me think. After all, what children’s book did I read almost sixty years ago? We talked for a few moments while my mind searched my memory banks for an answer.
And then it dawned on me. “You know, it may sound simple, but I think The Little Engine That Could was probably the first book that inspired me as a child. I vaguely remember my mother reading it to me in the 1950s.” Alaa smiled big, nodding her recognition of the famous book. “The book was about an engine and my father worked on the railroad,” I said. “And the message was about believing in yourself, which I soaked up. It was probably the first self-help book I ever discovered.”
After the event in Kuwait, I became curious about the famous children’s book.

Turns out the story of the positive self-talking little engine goes back to at least 1906. The first known use of the story is attributed to Rev. Charles S. Wing, who probably didn’t originate the story, but delivered it to his congregation in Brooklyn in 1906.
It went like this: In a certain railroad yard there stood an extremely heavy train that had to be drawn up an unusually heavy grade before it could reach its destination. The superintendent of the yard was not sure what it was best for him to do, so he went up to a large, strong engine and asked: “Can you pull that train over the hill?” “It is a very heavy train,” responded the engine. He then went to another great engine and asked: “Can you pull that train over the hill?” “It is a very heavy grade,” it replied. The superintendent was much puzzled, but he turned to still another engine that was spick and span new, and he asked it: “Can you pull that train over the hill?” “I think I can,” responded the engine. So the order was circulated, and the engine was started back so that it might be coupled with the train, and as it went along the rails it kept repeating to itself, “I think I can. I think I can. I think I can.” The coupling was made and the engine began its journey, and all along the level, as it rolled toward the ascent, it kept repeating to itself, “I —think —I —can. I —think —I can. I —think —I —can.” Then it reached the grade, but its voice could still be heard. “I think I can. I —– think —–I —–can. I —–think —–I —– can.” Higher and higher it climbed, and its voice grew fainter and its words came slower. “I ——-think ——–I ——-can.” It was almost to the top. “I ———think” It was at the top. “I ———can.” It passed over the top of the hill and began crawling down the opposite slope. “I ——think ——-I ——can ——I —–thought —I —could. I —thought —I —could. I thought I could. I thought I could. I thought I could.” And singing its triumph, it rushed on down toward the valley.
No one knows with any agreed certainty who actually originated the story. But the best-known version of the story is the book, The Little Engine that Could, published in 1930 and attributed to Watty Piper, the pen name of the publisher, Arnold Munk. That little story about “I think I can…I think I can…” influenced many, including me. What children’s book influenced you?

Look, time and life are just magazines. – Skip Looper Going into the tenth year of cranking out a fine natural magazine every month seems a good time to ruminate about – well, time. It’s a poignant rumination when some of your long-time favorite institutions just packed up shop. May started out with the last night of Corazon at Castle Hill, one of the last remnants of an Austin restaurant culture rapidly giving way to generic hipster joints with overpriced baby kale cocktails and sustainable sushi burgers. Mid-month, in a quick one-two combination, both Mad Men and David Letterman’s Late Show aired their last episodes. Corazon’s party for long-time staff and regulars led to meeting Austin artist and history lesson Dwain Kelley, and getting a tour of his hundred-something year-old studio across the street and a perfect June cover, his sculptural assemblage called Sun From Another Time. (If May’s weather continues into June, feel free to hang it on your wall and pretend like the sun’s coming in a very small window.) Hard to find the good in the goodbye to Letterman and Mad Men, except for their outstanding finales. Letterman built up to a really funny and classy final show without being sappy about it, and Matthew Weiner tied up the loose ends for Don, Roger, Joan, and Peggy and them in one of the finest bits of writing, acting, and directing ever. They should just go ahead and deliver them a big ol’ basket of Emmies now, especially Elizabeth Moss for the look on her face when Stan –

Don has his moment of truth and, with a sly smile while meditating at a Big Sur retreat, finally embraces his inner ad man and channels in one of the most iconic TV commercials ever. You know the one. Sing it with me. I’d like to buy the world a Coke… Warned you.

There’s two kinds of people reading this… Those who want to keep geeking out on Mad Men and Letterman, and those who don’t. If you’re of the latter persuasion, might as well just skip ahead to the next page. Dave and Mad Men have a lot in common. As one writer pointed out, Letterman is the last bridge from the old breed of talk show hosts to the present, from Jack Paar in the late Fifties, to Johnny Carson, to the social media conscious guys of today. Mad Men sat right at the cusp of that, straddling the Sixties and ending on a hill at Big Sur in 1970, meditating in khaki slacks. Don Draper created the world that Letterman poked fun at, so it seems only fitting to do a salute to both of them, with:

And, the number one best line from the final episode of Mad Men (drum roll): 1. I hope you’re really drunk – ‘cause you’re gonna need an excuse.

WRITTEN IN STONE Scagliola, ancient Rome, and the magic of masonry by Michael Abedin Quick quiz – what’s the most abundant element in the makeup of this third planet from the Sun? Water? Good guess – but wrong. Suck all the water off the Earth (we’ve made a pretty good start), get rid of all the dirt and trees and animals and such (ditto), and you’re left with a big ol’ rock, spinning through space.
Stone is what the Earth is made of. Along with its offspring Bronze and Iron, it had its very own Age. The world’s marvels, from pyramids to cathedrals to skyscrapers, have been constructed from some form or derivative of stone, and carving it and moving it into place became the work of artisans – magicians who knew how to create structures that harmonized with the Earth below and the heavens above. Stacking it was the building method of choice, until someone figured out you could mix sand or aggregates of crushed rock with water and a binder and, voila – you had concrete, which could be molded into shape a lot more easily
than huge rocks could be carved and stacked. The ancient Romans became masters of its use, and the Pantheon in Rome is still the largest unreinforced concrete dome in the world, nearly two thousand years after it was built. The Romans covered a lot of their brick and concrete structures with slabs of marble, prized for its beauty, but they also dabbled in a technique that came back into style over a thousand years later, when marble and granite became scarcer and more expensive.
Pass me the scagliola, please. Around the seventeenth century, a technique was perfected that allowed Italian artisans to duplicate ornate Renaissance work of inlaid marble and precious stone. Scagliola (pronounced ska-yola) might sound like a pasta dish or one of Don Corleone’s bodyguards, but it’s actually a method of mixing a plaster made of selenite, alabaster, or some other form of gypsum with natural binders and dyes. Scagliola can be polished to a marble-like sheen and was once considered a faux material, but it came into its own as a respected medium, widely used worldwide. (Check out the columns in the county courthouse in Corsicana, near Dallas, if you happen to be rolling through to pick up some pecans or one of their world-famous fruitcakes and feel like a little scagliola side trip.) Scott Brunson of Stone Luxe is an Austin scagliola shaman who creates everything from stove hoods to an installation piece depicting the topography of the lower Colorado River and Lake Travis for the new Colorado Tower building in downtown Austin. “Good design,” he philosophizes, “is an art form that ties left-brain, masculine architecture to right-brain, feminine intuition – a union of yin and yang.” He works in scagliola because, if for no other reason, it’s more environmentally sound than other materials. “The Portland cement technique used to make most concrete is wasteful, resource-consuming, and potentially toxic. Loving Beyond Relationships by Zaeli From movies to novels, poetry to People magazine, it’s clear we’re equally obsessed and confounded by love – either you’re not complete without it, or you must be complete in order to find it. Both are recipes for disappointment, because both are impossible. The trap lies in the myth that anyone is ever “complete.� As long as you’re alive, you’re encompassed in change, within and around you. Talking about yourself as complete or incomplete objectifies your very existence, emphasizing product over process. The same thing happens to love when relationships become nouns rather than verbs. This puts distance between you and your feelings, clouding your ability to heed them.
Words have real power. Names, and the rules attached to them, help predict behaviors with a smaller (albeit imperfect) margin of error, encouraging you to express expectations and open your heart more comfortably. Problem is, labels never tell the whole truth. Believing otherwise leads to confusion, deceit, and self- deceit – such as when you declare a relationship over, yet continue to have feelings for the other person (or even relations). And when reality doesn’t align with your description of it, you suffer. Living in relation is living beyond labels, which means admitting no relationship ever really ends – it evolves. Sure, it might evolve into people avoiding each other or being just friends, but those are still ways of relating, and opportunities to practice living lovingly.

Living in relation vs. being in a relationship.
What you call something determines how you treat it. Instead of saying two people are “in a relationship,� it would be more accurate to say they’re “focusing on relating to each other.� People are in some form of relationship with everyone they encounter, but choose to go deeper at times and give that choice a name – best friend, significant other.
This shift in thinking allows three daunting but very useful developments to take place: t :PV SFMFBTF FOUJUMFNFOU Understanding that intimacy and happiness must be tended to, you stop taking committed partners for granted. t :PV GBDF ZPVS EFNPOT Love no longer covers up other dissatisfactions – personal insecurities, neglected goals, societal corruption – it empowers engagement in all areas of wellbeing. t :PV CSPBEFO UIF TQFDUSVN Love pops up in surprising ways when you open your mind. Preoccupations with permanence, predictability, scarcity, and control relent, revealing love’s abundant nature.
That’s great news. This world needs all the love it can get. (What crisis wouldn’t be better solved by folks who can give and receive love with greater ease?) This, of course, isn’t a new idea. Other movements have tried to dismantle mainstream relationship models and failed – perhaps because they traded in patriarchal rules for the pretense that “anything goes.� In practice, that never works – hearts may be infinite, but they’re still tender. Healthy boundaries connect and protect. Words can bring complex situations into harmony. Living in relation doesn’t abandon order or look down on commitment, it only acknowledges those customs as pliable, and subservient to a higher order – love. This compromise is the marriage of the Sacred Feminine and Sacred Masculine that fairy tales foretold, and at long last your heart can hear those wedding bells a-ringing. How do you know you’re being energetically damaged on a daily basis, when you can’t see what’s hitting you? How do you know you’re aging faster or getting weaker over time, when you can’t see anything bombarding you? We’re all challenged in our world when the enemy we’re fighting is in stealth mode and can’t be perceived. Although more inconvenient, a pat down will be a more positive experience than going through a device that bombards you with frequencies that can weaken your immune system over time.

Jaguars and Serpents and Condors…OH MY! by Christina Allen One of the reasons there’s been a resurgence of interest in the teachings of the indigenous is that our own “civilized” culture has become so out of balance. We have our noses stuck in our phones instead of meeting eye to eye. We take walks in Nature looking at our emails and social media networks, instead of interacting with plants and animals who live there. Unfortunately, the further we get from connecting in with the implicit spirituality in our environment, the easier it is to forget our actions have consequences – and the more out of balance we become. Indigenous people are profoundly connected to Nature. While our cultural psyches are more recently rooted in a dualism that singles Man out from Nature and gives him dominion over it, the indigenous recognize that we are all part of the same web that flows through all of creation. At the very core of their practices is a deep respect for the powers in Nature. Animal allies, for example, are important vehicles for connecting in with the Web of Creation. Each animal has certain aspects or characteristics that give it particular powers or energy to draw from. Power Animals, Totem Animals and Animal Archetypes are all ways the indigenous engage with the natural world regularly. t 1PXFS "OJNBMT are gifts of consciousness that come to us, at the individual level, to help develop specific strengths we’re lacking due to past wounding. They

often come to one who has had soul loss, for example. Soul loss occurs when we undergo an experience that’s too painful to live through, so the innocent part of ourselves leaves. Power Animals return to us the instinctive properties we may have lost in that event. We may have lost curiosity, for example, and it’s returned to us in a monkey, or courage is returned to us as a lion. When these Power Animals restore our instinctual selves, the part of our soul that we lost often feels safe enough then to return. t 5PUFN "OJNBMT are animals that represent the ancestral lineages and myths within a clan or village of people. While the term totem is Ojibwa in origin, a number of cultures worldwide use totems to represent aspects of their clan. Totems are found in regions of Africa, Arabia, Asia, Australia, Europe, and the Arctic. One might belong to the Bear clan, for example, and draw great strength from the properties, or medicine of the bear. The Ojibwa scholar Basil H. Johnston defines a totem as “that from which I draw my purpose, meaning, and being.” t "OJNBM "SDIFUZQFT are different from Totem Animals and Power Animals in that they are profound, universal organizing principles. In Jungian psychology, archetypes are defined as highly developed elements of the collective unconscious. They are constructs for tapping into the universal web, for interacting with and calling upon the Sacred or Divine in a particular way. In the Q’ero traditions of Peru, for example, the archetypes of the Serpent, Jaguar, Hummingbird, and Condor are called upon to help orchestrate their worlds. Calling on Serpent helps us shed old stories like a skin, and connect in deeply with the Earth, belly to belly. Alternatively, to get out of the chaos of the mental, emotional world, we call Hummingbird. This steps us out of time and connects us in more deeply with the nectar of our world instead.

It’s a chance to see firsthand how a biological practice can be very different from traditional dental care. Who doesn’t want to have less dental work, less postop infections, and better health? It seems counter-intuitive that dentistry is a healthcare ¬profession, when patients are continually exposed to unsafe dental materials – especially when there are tests out there to help you determine the best dental materials for your specific situation. Heavy metals are toxic in your environment and your food – but not your teeth?

Bone broth, ozone, and essential oils. Cavitation surgery to clean out dead areas of jawbone is done with specific protocols as well. Bone broth is quite the buzzword these days, but it’s been known to be important in healing for a very long time. Vitamins and minerals contained in it are a key ingredient in the healing process. My experience was pain-free, with a very short recovery. Surgery on Saturday, back to work on Monday, no pain medication needed. Following post-op directions insured that extraction sites were clean, and healed in a speedy manner. Dental hygienists see their share of patients coming back to dental offices with post-op infections, but I was surprised at the lack of infections seen using these protocols. Experiencing the procedures firsthand, I understand how following vital steps can produce phenomenal healing. The opportunity as a hygienist to have so many tools to help patients manage oral health is exciting. People go into dental offices for years and are made to feel bad about their bleeding gums. When the same people come in, see pathogens in their plaque under a microscope, and find out how much plaque and bleeding are in their mouths, they’re grateful for any help given them to restore their gums to health – and it can be accomplished with essential oil medicaments, 03 therapy in some cases, and time and work by patients. The human body is an exquisitely intricate system that comes fully equipped with numerous checks and balances, designed to maintain homeostasis at all times, at all costs. Modern medicine, however, has only scraped the tip of the iceberg in understanding its functioning. Modern medicine has come a long way in “fixing� problems that manifest in the body – but it’s not very good at understanding the whys and wherefores of those problems. The danger inherent in that paradigm of treatment is the continued presence of the cause of the problem. Traditional Chinese Medicine (TCM) is more comprehensive in addressing symptoms and causes, so the cause doesn’t continue unabated while the manifestation is being “fixed.� If the cause continues, the manifestation will show itself again – and not necessarily in the same way. The ancient way is to treat the body as a whole, not simply as a tangle of parts thrown together and operating as mutually exclusive systems. The eyes, since they’re a part of the whole body, are influenced and affected by its condition – so when treating the eyes, TCM considers the health of the whole body. Meridians addressed are San Jiao, Gall Bladder, Bladder, Stomach, and Small Intestine, and organs to be nourished are liver and kidneys. (Don’t worry, there are no needles in the eyes.)
No cure? Western medicine, on the other hand, treats the eyes as entities unto themselves, trying to fix symptoms of eye disease. When vision is failing, eyeglass prescriptions get stronger and stronger, with no thought as to why it’s failing. Glaucoma is said to have no cure; patients are given eye drops and sent home – for life. Age related macular degeneration, no cure. Retinitis pigmentosa, no cure. Dry eye, floaters, myopia, cataracts – and there’s more. Scientific research available to date has shown acupuncture, along with herbal medicine, has provided significant benefits to people suffering from a variety of visual degenerative disorders. In addition, this form of medicine had been shown to be risk-free and cost effective, making treatments more accessible. The previously accepted irreversibility of certain eye disorders needs to be seriously questioned – and TCM should be a mainstream treatment offered to patients. BULKY BUT SWEET Bulking agents in Stevia products – are they known allergens? by Nerissa Oden Imagine a new sweetener whose packaging is about the size of a small pack of gum. Now imagine it next to a one-pound bag of sugar. The tiny new product would be overlooked or ignored. This is why stevia products sold on grocery aisles are mostly bulking agents, sweetened with a little stevia extract. Stevia is a plant, and its extracts are three to four hundred times sweeter than cane sugar. Makers of stevia products sold next to sugar products use bulking agents to create a texture and feel similar to sugar. That’s why most stevia products on the baking aisle list what is essentially fermented corn sugar, rice sugar, or wheat sugar as their first ingredient – ingredients such as erythritol, dextrose, isomaltulose and maltodextrin. With the exception of cane sugar, these bulking agents are generally made by combining corn, rice, or wheat with yeast, bacteria, or enzymes until a syrup is formed. Next, various refining processes are used to break down the new syrup into a bulking agent.
Just because it’s found in nature... To summarize, stevia products on the baking aisle are mostly highly refined fermented starch made from corn, rice, or wheat, sweetened with a small amount of natural stevia extracts. These bulky fermented starch ingredients actually do exist naturally in nature (somewhere) and that’s why food manufacturers are allowed to call their ingredients “natural.” Needless to say, anyone sensitive to corn, rice, wheat, and/ or fermented ingredients may want to avoid these “natural” stevia products. As an alternative, you can find stevia products in smaller packaging that use no bulking agents, or even nonallergic, minimal amounts of bulking agents like cellulose powder or inulin soluble fiber. Allergic or sensitive to corn, rice, wheat, or fermented foods? Consider avoiding the following bulk food additives: t &SZUISJUPM is a popular crystalline bulking agent made by combining yeast and corn sugar so it ferments and turns into a sugar alcohol. Erythritol is difficult to digest, and is usually absorbed into the bloodstream undigested and excreted through the urine, unchanged from its original form. Overconsumption can result in a laxative effect. It has negligible effects on blood sugar. t %FYUSPTF (also known as Glucose, D-glucose and Grape Sugar) is made from cornstarch, rice, or wheat. An enzyme found in plants, animal, bacteria, and fungi breaks the cornstarch down into glucose syrup. Next, saccharification (a hydrolysis procedure) converts the glucose syrup into a simple soluble fermentable sugar. It will increase blood sugar levels. t .BMUPEFYUSJO is made from cornstarch or wheat. It’s processed as glucose until complex glucose chains are broken down into fermentable sugars, mainly maltose. Maltodextrin is easily digestible, but takes slightly longer to digest than glucose. It will increase blood sugar levels. t *TPNBMUVMPTF is manufactured by combining bacteria and sucrose until it ferments, making a syrup similar to honey. Isomaltulose is absorbed by the small intestine just like glucose (sugar) and fructose. It produces lowglycemic and low-insulinemic results. Isomaltulose is not suitable for people with intolerances to fructose or sucrose.

Living Un-Xed by Deborah Antich What does it mean to live un-Xed? It means living uncrossed. Everyone acquires little crosses on the heart, little misunderstandings, conversations you wish you’d had, grudges you’re holding, for – well, you forget the reason – but you’re sure it’s a good one. All those small, medium, or large crosses become part of who you are.
How many crosses are on your heart? And why? Who do they serve? You? The person you’re upset with? If you think about it, no one – no one at all. But they do contribute to something. Each and every word, thought, action, and reaction you have contributes to something. Is it your happiness, or someone else’s? Or your unhappiness – or someone else’s? The point isn’t regret, it’s this – start removing crosses, start un-Xing hearts. You don’t even have to start with your own. When X = equal. How many times has someone taken something you said or did the wrong way? That’s the idea of un-Xing hearts – forgiving without having to know why. Let’s put this out there, too – forgive someone you don’t agree with. Instead of posting that negative Facebook comment, just do nothing. If you’re really up for the challenge, picture their heart with a cross on it and, in your mind, uncross it. When you un-X a heart, the X becomes an =.
