Hays City Store Hays City Store first opened in the early ’80’s as a gas station and convenience store at the intersection that was at one time the town of Hays City (1908). The store was a blessing to area residents who were grateful to not have to drive to neighboring towns for gas and household essentials. A café was added in the 90’s and folks loved their breakfast and lunch counter. Fast forward to March 2015 – a propitious chain of events, hard work, fate and good luck… Hays City Store re-opened as a fullservice restaurant and bar featuring scratch made Texas comfort food, hand crafted cocktails, and local – beers, spirits and wine. The decision to keep the name “Hays City Store” was not difficult, as it had been known so for over 30 years. Hays City Store underwent another

transformation in October 2017 and this time the name DID change a little – now to Hays City Store and Icehouse. Owners Tamra and Travis Tindol had a good problem on their hands – the need for more space. So, The Icehouse was added to the property and with it more bar and cocktail seating, a draft beer system with 40 taps, 5 TVs for sports enthusiasts and a wood fire pizza oven. A stage was built near the outdoor oak shaded beer garden and live music can be enjoyed several nights a week. Hays City Store and Icehouse has something for everyone. Hays City Store is located at the intersection of FM 150 and FM 3237 between Kyle and Wimberley and is a short drive from San Marcos, Dripping Springs, Buda and South Austin. Open 7 days a week. Westcave cellars The Westcave Cellars story is the great love story of Texas Hill Country Wineries. It is the embodiment of the love of two people who share an appreciation of hard work and an enjoyment of fine wine. It is also a space to share with the community the love of viticulture. Westcave Cellars Winery and vineyard is an invitation to share in the experience and the love, one taste at a time. Texas Wine, Texas Hospitality, Texas Hill Country From the very beginning of their marriage, Margaret and Allan Fetty took pleasure in tending their garden together and sharing the fruits of their labor with each other, as well as with their friends

Once they felt confident in their growing methods, and their ability to optimize the potential of the land, they began searching the winding roads of the Texas Hill Country for the perfect site to grow their vines. In 1997, they found the ideal location to realize their dream, just a stone’s throw from Westcave Preserve and Hamilton Pool Preserve, and in 1999 they planted their first 3 acres of Cabernet Sauvignon vines. made in the old-world style and strongly influenced by the French traditions. The vineyard has expanded to 9 acres of matured vines, lovingly tended to by hand. These 8,000 vines include 9 different varieties of grapes, including Cabernet Sauvignon, Petite Sirah, Tannat, Malbec, Vermentino, and Viognier. The Westcave Cellars Winery opened its doors in 2011, creating a community space to soothe the soul and engage the senses. Tillie’s When the idea of creating an upscale dining restaurant at the Camp Lucy resort in Dripping Springs first came to owners Kim and Whit Hanks, the couple knew what kind of menu they wanted. They aspired to create something that would resonate with the local communities of Hays County while also enhancing the traditional dining experience with a combination of international flavors and cooking techniques. When they discovered Chef Brandon Martin, they knew they found a man who execute that vision of taking what was familiar on a culinary adventure at Tillie’s in Dripping Springs. In less than a year since it opened, Chef Martin and his kitchen team have delivered, creating one of the area’s grandest dining experiences. Chef Martin, who had spent close to 20 years working in some of best restaurants in Austin and West Texas before arriving at Tillie’s, has built a menu that appeals to both traditionalists and more adventurous diners.

7 Myths about Grilling & BBQ Grillmasters and pitmasters develop secret recipes, rubs, sauces, and cooking techniques, that become BBQ folklore. Certain myths about grilling and barbecuing have prevailed through the years. Let’s set the record straight about some common grilling myths.

Myth #1:

Hosting a barbecue is the same as cooking barbecue.

You can tell the temperature of the grill by placing your hand over the grates.

Grilled chicken is done when the juices run clear.

Fact: Barbecue is the process of cooking foods slowly with low heat, typically in a smoker. Having a barbecue is an informal backyard party where foods cooked over a grill are served.

Fact: Everyone reacts differently to heat, so the best way to gauge temperature is by using a thermometer.

Fact: Even well-done chicken can form juices that are pink-hued. It’s from a protein called myoglobin, according to the book “Meathead: The Science of Great Barbecue and Grilling.” Use a cooking thermometer to learn when poultry is safe to eat, typically at 160 to 165 F.

Fact: It seems that marinades really do not penetrate much beyond the surface of the meat and can keep the outer surface of the food wet, preventing searing and browning. Rubs and salts can be more effective at adding flavor. Serve a dipping sauce for additional flavor if people desire.

Fact: Temperature control is a key component of effective grilling and barbecuing. Having two temperature zones — direct, radiant heat for searing, and an indirect zone for grilling meat evenly and preventing burning — can make food more tasty.

Fact: When cooking, faint wisps of blue smoke are better because blue smoke is made of tiny invisible particles and gases created by small, hot, fast-burning fires. White smoke generally comes from smoldering wood that is starved for oxygen, states the cooking site Food52. All of that white smoke can affect the flavor of the food.

Myth #7: Oil the grates to prevent food from sticking. Fact: This may or may not work, depending on the temperature of the grates when the oil is applied. pIg Pen BBQ Our passion for creating delectable traditional southern barbecue started with cooking for friends and family. We were encouraged with each party or event to explore barbecuing and catering professionally. We always assumed people were just being polite by saying, “your barbecue is the best I’ve ever had,” until our friend and Hutto Centennial producer, asked us to cook for that event as a food vendor. The success and response at that event inspired us to start this venture. It has taken us 20-plus years to perfect our seasoning and hone our barbecuing technique to produce the ultimate taste sensation. We are extremely passionate about pleasing all who eat at Pig Pen with our “real” Texas BBQ! We get so much joy in making people happy through our barbecue.

Middleton Brewing Middleton Brewing (MBTX) is a brewery located between San Marcos and Wimberley off Ranch Road 12. Our brewery is nestled at the foot of the Texas hill-country. Our brewing system allows us to brew enough beer to support our 17 taps in the pub and have over 80 local retailers who sell our product in stores, restaurants, and bars in South Austin, Buda, Dripping Springs, Wimberley, San Marcos, New Braunfels and Schertz. Lori Warren is our Distribution Manager and is directly responsible for getting our beer in the marketplace.

Calvin Kouba is our Master Brewer assisted by Franklin Murrah. They are adventurous and not afraid to try something new. Of course, you can find our core beers anytime, but you will also find new and fun handcrafted brews. We like to think of Calvin and Franklin as our Rembrandts; they produce works of art that can be enjoyed while they are coming up with the next creation. Our pub is a quaint local establishment with a farmhouse feel. We strive to create a relaxed atmosphere where our guests can come

and enjoy some welldeserved time to recharge. Destiny Setzer is the Tap Room Manager who works hard to ensure all guests enjoy their time with us. She coordinates our events and makes sure our guests are served by only the most talented bartenders available. Come by and meet Destiny and her staff Jimmy, Charlie, Zac, Chelsea, Josh and Bruffy. Music is a big part of our business. Tom Taylor is our live music coordinator and works hard to make sure we have live music on Mondays, Fridays, Saturdays and Sundays. Tom is a master sound engineer, so you are always treated to the best sounding music in the area. Last, but certainly not least, we provide great food for our guests. Evan Alexander owns the Slinging Slider truck and provides wonderful sliders and chips. We are considered experts in food and beer paring. Roughhouse Brewing Roughhouse Brewing is the newest addition to the craft beer scene in the San Marcos/ Wimberley area, celebrating their grand opening in January 2019. The brewery serves American farmhouse beer that is dry, crisp and refreshing— complementing the Texas backdrop. Their variety of yeast-centric ales undergo 100-percent of their fermentation in American White Oak foeders (large wooden barrels) using a house, mixed culture, which includes yeast harvested from the Pasternak family Ranch. The brewery’s water is supplied by an on-site well tapping into the Cow Creek section of the Trinity aquifer— providing some of the highest quality water in Central Texas. The family-run establishment is located

on 5 acres of the Pasternak Ranch just 10 miles west of San Marcos. The brewery and taproom are housed in a wooden barn with a welcoming, homey aesthetic, offering a range of beer as well as guest wine and cider. Grillin Tips

Tips for grilling the perfect burger Hamburgers are a staple at backyard barbecues. Though burgers are a relatively simple food, mastering the technique to grill burgers is no small feat, as there is more to great grilled burgers than simply firing up the grill and dropping down a patty.

C Co • Choose fresh ground beef that has a decent percentage of fat. The fat-to-lean meat ratio should be around 20 percent fat to 80 percent meat. Spend a little more to get freshly ground meat that has not been previously frozen. • Don’t overwork the burgers with a lot of handling. This will warm up the fat in the burger, which causes it to emulsify and could make the meat rubbery.

• Reconsider adding a lot of herbs, spices or add-ins to the burgers, as such items can detract from the flavor of the meat. Extra herbs and spices also may require extra mixing, which can lead over-handling. • Push a dimple into the top of the burger, this helps prevent the burger from expanding upward and out while cooking and rounding out in the process. The dimple will keep the top of the burger flat, which facilitates easy topping.

• Make sure the grill is hot. Burgers do well with high heat and will cook relatively quickly. • Resist the urge to push down on the patty with your spatula. This will cause the juices to spill out and may result in a dry, tough burger. • Let burgers rest before serving. This lets the juices redistribute throughout and makes for a moist and tasty first bite.

Creekside Cookers BBQ WE RESPECT THE HERITAGE OF TEXAS BBQ Creekside Cookers BBQ was started in 2010 by Kelly Evers. Kelly was a middle school social studies teacher who got hooked on competing in BBQ competitions. After a few years of competing and winning, he decided to begin catering. Eventually, Kelly along with his wife Melody began selling BBQ on Saturdays out of a food trailer in Wimberley, Texas. In 2016, Kelly quit his 20-year teaching career to pursue his love of BBQ and open Creekside full-time. Today, Creekside Cookers BBQ is open Wednesday through Saturday from 11 a.m. until sold out.

Grins Grins Restaurant opened its doors on Valentine’s Day 1975. Over the past 40 years Grins has become a local hotspot and staple in the San Marcos community. Grins Restaurant is owned and operated by two Texas State graduates – Paul Sutphen and Johnny Ferrell. Paul was the first cook to work at Grins and shortly after graduation bought out one of the founding owners. Johnny also cooked at Grins during college and bought into Grins in 1978. In 1975, the Lightfoot house was converted into a restaurant. Grins served nachos, two styles of burgers and draft beer. The restaurant could hold up to 60 customers and hosted live music with the likes of Lyle Lovett, Robert Earl Keen, and the Beacon City Band. Grins Restaurant has now been expanded three times: once in 1983, again in 1987 to include a deck, and in 1996 the original deck was enclosed, and Grins’ final deck was built. Today Grins can accommodate up to

250 customers and has an extensive menu to choose from. Grins world famous hamburgers and Texas sized onion rings are favorites among San Marcos residents, as well as their awardwinning salsa that is made fresh daily. Some other menu favorites include Grins Shiner Bock beer battered chicken fried steak, sizzling fajitas, and homemade dessert. To top off the great food being served, Grins has also been voted best Happy Hour five years in a row. Over the years Grins has seen many changes and improvements, but the foundation of the restaurant has not changed. Grins fun and exciting atmosphere combined with great customer service and award winning food has been the key to Grins success for the past 40 years. Grins hope is to carry on its tradition as a unique, local restaurant and continue to serve the residents of San Marcos and the students at Texas State.
