It seems that fall has finally graced us with its presence, and following close on its heels is cold and flu season. With immuno-compromised members in my family, I’ve had to be proactive in our fight against foreign invaders that seek to break the defenses of our body’s defense system--our immune system. This fortress that God created us with is designed to ward off these enemies to our health, and He also gave us natural ways to fortify these walls. I’m here to save you the time and energy of research, and share with you tips and tricks I’ve discovered for naturally staying healthy this season. 1.) Diet Your diet plays a major role in your overall health throughout the year but its especially key to be vigilant with what you put in your body during this “sick season”. There are foods to in6

corporate, as well as foods to avoid. For instance, sugar actually hampers your immune system for hours after consumption, so each time you indulge in a sweet delight, you are weakening your defenses. There are natural sugar substitutes available if you absolutely have to fix your sweet tooth. Choose honey instead, and it will aid against allergies and alleviate the craving at the same time. Foods that are high in vitamin C and E, both of which are vital to a superpowered immune system are oranges, red bell peppers, broccoli, spinach, and almonds, to name a few. Probiotic rich foods to bombard bad bacteria with good bacteria include yogurt and homemade sauerkraut, pickles, kefir, and kombucha. Keep these on hands for yummy recipes like salsa, guacamole, and dressings so you can indulge while you defend your body against bacterial and viral infections. This “tea” recipe can be sipped on daily, or can be drank during a cold or flu: 1 Tablespoon Honey 1 Tablespoon Apple Cider Vinegar 2 Tablespoons Lemon Juice 8 oz. Hot Water 2) Supplements, Oils and Herbs To further enhance your body’s defenses on a day to day basis, invest in some quality supplements. In particular, doses of vitamin D, zinc, magne-

sium, and probiotics can be taken daily as a preventative. If you have symptoms appear, add vitamin C to the regimen. We don’t take vitamin C unless we experience symptoms, because it can cause kidney stones, but we do make sure to incorporate it naturally into our diets. Quercetin has worked absolute wonders for fall allergy symptoms for our daughters. Oregano as an essential oil or an herb is a great way to fight infection as it has high antibacterial and antiviral properties. Most essential oil brands also have blends targeted specifically to keep you healthy. My goto supplement for flu season is handsdown homemade elderberry syrup. It has been proved to be 99% effective against flu Type A, tastes great, and packs a punch to nasty germs with its antioxidant, anti-inflammatory, and immune-boosting properties, It far surpasses store bought elderberry brands because of fillers, added chemicals, and artificial sweeteners added by pharmaceutical companies. Many people in our area sell it, and is readily available. 3.) Practices Your routine and hygiene practices can help or hurt you and those around you. Make it a habit to wash your hands after using the restroom, before and after you eat, and if you’ve been tending to people who are ill. I try to keep an all-natural hand sanitizer close by to use in between washings if we are in public. Doors, shopping carts, and money are all riddled with sickness-causing

microbes, waiting to invade. Seek out a natural hand sanitizer , as one with chemicals can wreck your thyroid. Most importantly though, if you are sick--STAY HOME! If one or two people in your household are sick--STAY HOME! The cold and flu viruses are contagious, and if some in your family have it, you’ve all been exposed, and you put others at risk of contamination. Work and school can be caught up on. Take care of yourself and rest before returning. The number one place people try their hardest to not miss is church. A person could be running a fever and barely get out of bed and still try to make it to worship. While I hesitate to speak for the Almighty, Jesus understands. I’m sure He’d be alright with you staying home to convalesce

and spare those in your congregation the burden of sharing your illness. You never know when your common cold could land someone with an underlying condition or compromised immune system in the hospital--or even the morgue. I am not a doctor. I cannot replace your doctor, nor can I give medical advice. Obviously, do not do what I have recommended if you are allergic to any of the above-mentioned things, or have been instructed against them by your physician. But if you are able, try these tips to guard yourself against seasonal disease. They’ve kept our family well over the past few years, and I hope they empower you to be proactive with your health as well.

A Southeast Texas Christmas Tradition

Las Posadas is part of the Christmas celebration in the Spanish speaking countries Mexico, Guatemala and parts of the Southwestern United States. As the population of Southeast Texas continues to evolve, it is likely you’ll hear about Las Posadas more and more. The following is a brief introduction from local Christian

and neighbors dress up in period costumes symbolizing Mary, Joseph, the Devil, and inn keepers. The nine days of Los Posadas represent the nine months Mary carried the baby Jesus and posada means ‘lodging” in Spanish.

Each evening from December 16th through Christmas Eve the group gathers at a home of a different “inn keeper” as Mary and Joseph search for posada (lodging). True to the Biblical account, Mary and Joseph are denied hospitality

until the end of the singing when all the guests are then invited to share hot chocolate and cookies. This is repeated seven more consecutive nights, then on Christmas Eve when Joseph begins singing to ask for posada he is received and the crowd rejoices. The nativity is honored and prayers are said at a Holy Midnight Mass. Afterwards, a traditional Christmas dinner of tamales is shared, and children enjoy busting star shaped piñatas as another year comes to a close. Ingredients: 6 twelve ounce cans of evaporated milk 4 teaspoons ground cinnamon 1 tablespoon vanilla extract 1 teaspoon ground nutmeg 1 pinch cayenne pepper 2 twelve-ounce bags of semisweet chocolate chips Serve with a dusting of cocoa powder for flair Stovetop directions: In a large pot over medium heat whisk together milk, cinnamon, vanilla extract, and nutmeg. Add chocolate chips. Stir until chocolate is melted. Cover and reduce heat to low for five minutes. Crock Pot / Slow Cooker Instructions: In a four-quart slow cooker, whisk together milk, cinnamon, vanilla extract, and nutmeg. Add chocolate chips. Cover and cook on LOW setting for 2-3 hours. Stir ever 15-20 minutes.
