Meet the Chef Michael Selser of White Dog Cafe

E

xecutive Chef for White Dog Cafe, Haverford, will take the role of Executive Chef of White Dog Glen Mills when it opens in late spring 2020. He has been in the culinary industry for 23 years, serving early on in his career as a cook at Green Valley Country Club and at Passerelle and then as a chef at Du Jour which later changed to White Dog Cafe, Haverford. He attended the prestigious Restaurant School at Walnut Hill College and said his cooking style is a take on classic dishes and that he prefers to create delicious, simple food using local ingredients. He uses a classic combination of flavors when he cooks and said his favorite dish to prepare is French Toast,

“it seems simple but actually requires proper techniques to create the perfect dish.” The kitchen has always provided the focus for him he said, “I enjoy the high-energy, the passion and the teamwork of the kitchen.” When offering advice to aspiring chefs he said, “taste everything, as a chef we pull from those flavor “memories” when cooking also read every cookbook you can,” he added. The White Dog Cafes are true farm to table and the majority of the ingredients used at the restaurants are purchased from local farms, located no more than 50 miles from the restaurants. They offer seasonal menus and incorporate organic items when possible. A fan of using sustainable and local products, he added, “Price will always be a factor in where the public eats, but I would like to see a balance between the use of local ingredients, more eco-conscious food and price point so that everyone can have the access to more sustainable way of eating.”

White Dog Cafe will open its fourth location in spring 2020 at the Shoppes at Brinton Lake, located in the heart of Concord Township in Delaware County Pennsylvania. Known for warm hospitality and creative, inspiring cuisine, White Dog Cafe Glen Mills will serve the Chadds Ford, Glen Mills, and surrounding neighborhoods, continuing their long history and business practices of using environmentally sustainable, humanely raised animals and local foods from farms within 50 miles. White Dog Cafe Glen Mills will offer four distinct dining rooms, outdoor dining, and an energetic bar. They will be open for weekend brunch and for lunch, happy hour and dinner. White Dog Cafe Glen Mills is offering the public the opportunity to immortalize their favorite pup with a personalized painting that will hang in the restaurant. Artist Jay McClellan is offering 37 custom paintings, with a portion of the proceeds to benefit both Brandywine Valley SPCA and Alpha Bravo Canine, which provides service dogs free of charge to former military with PTSD.

McClellan’s sentimental and decorative works cover the walls at White Dog Cafe Haverford and at White Dog University City. His paintings juxtapose bold colors with graphic patterns and unique designs. In addition to the custom painting that will hang at White Dog Glen Mills, McClellan will give those that purchase the paintings the original drawing of the painting (a $250 value) and a small brass plate with the dog’s name and hometown will hang on the wall beside each commissioned work. McClellan is donating half the fee of each of the paintings to Brandywine Valley SPCA and Alpha Bravo Canine. White Dog Cafe, part of Fearless Restaurants, currently has locations in Haverford, Wayne and in University City. The White Dog Cafe features local, seasonal, organic, sustainable menus. Each location features warm and welcoming dog-inspired décor. White Dog Cafe founded in 1983 was a pioneer in the farm to table movement and continues to provide their local neighborhoods, and guests a unique dining experience

Around Town Kennett Square

T

here’s lots to discover throughout the year in Kennett Square. This vibrant, walkable,and historic small town, home of the world-famous Longwood Gardens, offers award-winning shopping and dining and fun experiences for the whole family. The key to making the most of your visit to this single square mile in the heart of the Brandywine Valley is to explore all of its growing neighborhoods. The State Street business district, which locals call “uptown,” boasts a diverse collection of independently owned small shops and restaurants. Independent-minded shoppers will find everything from award-winning jewelry to new and vintage clothing and accessories, gourmet treats, unique gifts, outdoor gear, and fantastically fun and kid-tested toys and games. Square Pear Gallery hosts a new show every month featuring local and regional artists. “Art shouldn’t be intimidating,” says owner Corien Siepelinga. makers and communities around the world at Clean Slate Goods, and shop for the perfect outfit or gift at one of the town’s unique boutiques. “Kennett Square is filled with entrepreneurs who have true vision and intent,” says Chris Thompson, owner of Philter Coffee. Thompson enjoys the sense of community he finds in Kennett Square and appreciates that Philter is a place people go to make friends as well as to drink great coffee. State Street is also home to the award-winning Nomadic Pies as well as Talula’s Table, which serves coffee, sandwiches, baked goods, and market fare by day and their acclaimed farm table dinners by night. The Kennett Square Farmers Market celebrated its 20th anniversary season in 2019 and is a great place to meet and support local farmers, growers, and artisans on Friday afternoons. A few steps down South Union Street, there’s still more to explore. Kennett Classic is a vintage computer gallery and gift shop, and book lovers will find a wide-ranging selection of new,used, and rare books at the newly reopened Macaluso Books and the Kennett Resale BookShoppe. From dishes featuring locally-sourced ingredients to a variety of international flavors, Kennett Square’s exciting and diverse restaurants offer a range of dining experiences from fine dining to casual family fare. The Market at Liberty Place, which has been called “a mini Reading Terminal Market,”

a week, and the Kennett Flash hosts an exciting calendar of concerts. Adaptive reuse is the byword in Kennett Square’s Birch Street neighborhood. Braeloch Brewing and The Creamery (which is also home to the Chop Shop axe-throwing range) have repurposed historic buildings to be family-friendly venues with games and live music as well as craft beer and food. And the reimagined garage at worKS brings 25 vendors of artisan, designer, handcrafted, vintage, and one-of-a-kind goods under one roof. In the growing Cannery Row neighborhood at the west end of Kennett Square, visitors will find Café de Thai, La Peña Mexicana, and Victory Brewing. Evergreen Café, which features handcrafted baked goods and Colombian coffee, is neighbor to TEXTILE, a women’s clothing boutique featuring vintage styles as well as contemporary designers. Kennett Square is also host to a great variety of events and festivals throughout the year. These include outdoor dining and live music on Third Thursdays through the summer months, one of the region’s premier Cinco de Mayo festivals, the Kennett Run in May and the Mushroom Cap Half Marathon in November, the area’s largest Memorial Day Parade, Restaurant Week, the annual Mushroom

Festival in September, a Holiday Village Market, a plein air painting event, two brewfests, Clover Market, a “Haunted History Tour” and a “Murder Mystery Art Stroll,” and a New Year’s Eve celebration complete with a giant illuminated mushroom drop. A Reimagined Garage in Kennett Square Brings 25 Vendors under One Roof

T

here’s nothing Tara Dugan loves more than the challenge of reimagining a dilapidated old building for adaptive reuse—although seeing what the passionate and talented worKS vendors come up with might be a close second. “It’s their story,” Dugan says as she surveys the transformed 1950s-era garage that holds the collective creativity of over two dozen local artisans and purveyors. The worKS concept is to provide space and a business model that free makers to create more and grow their own brands. And it’s evolved and taken on a life of its own since the garage doors first rolled up three years ago. Dugan takes an almost maternal pride in the fact that several worKS vendors have since established their own shops. While this kind of entrepreneurial

altruism might seem counterintuitive, Dugan has seen how innovative, organic growth benefits everyone. It’s evident in microcosm in the vendor spaces at worKS, where there are lots of one type of thing. “People spend time in each space,” Dugan says. “By design, we started with one jeweler, and now we have four different jewelers and also vintage jewelry. People love fun, affordable, well-crafted jewelry. These different vendors don’t compete with each other— they enhance one another.” The kitchen shop, the newest addition to worKS, is another example of grouping makers by category. “Everything at worKS is by design,” Dugan says, including the weekend-only hours. “Like the Brooklyn Flea, it’s a hybrid of an event with a brick-andmortar shop. It’s about funneling shoppers onto the weekend to explore, to come to something with multiple vendors that feels like an event.” worKS also holds lots of special events—from artist receptions to worKShops and charity events. Customers love these events, which also cultivate community. “You can’t find these experiences on Amazon,” Dugan says. “You can’t taste local honey or try on vintage clothing or meet the artist who made the earrings you’re admiring.”

Customers always find something different at worKS because vendors come in during the week to refresh and restock their spaces. “So worKS is literally new and different every weekend,” Dugan says.

Mara Tyler of The Farm at Oxford shares tips on sprucing up your home with greenery this spring

T

wo years ago, when opening up the littlest plant shop (a mere 5x10' space inside of worKS Kennett Square), I got a crash course in caring for an array of houseplants. Before this, my talents mostly laid outside, on our Chesco cut flower farm, with the occasional foray into indoor greens. Our plant shop is only open on weekends, so our plants need to be easy to care for. If you’re looking to bring some green leaves inside, here is my tried & true easy favorites list—with care tips for your own home. Philodendrons: The popular Monstera is what most people know, but the Philo species is vast. There are very unique varieties: red/silver leafed, as well as the famous cutout trailing adonsonii, but the classic Heart Leaf is one of my favorites. Bright light, regular watering. Pothos’: Pearls & Jade and Golden are some more common varieties, but I love the silvery leafed Satin, and variegated N’Joy. They love to trail & hang, and are excellent for air cleaning. Bright OR dimmer light (office ok), let dry out slightly, then water. Sanseverias aka Snake Plants: The easiest of indoor plants. Sans add great textural interest with stiff fronds in a variety of colors. I love Sayuri with silvery white leaves, and Mikado with a spray of thin, lance shaped dark green leaves. All light levels, infrequent watering. Ficus: Audrey is a beauty that is much easier to care for than her Lyrata Fiddle cousin. As a bonus, leaves appear brushed with velvet. Thrives on regular deep watering, needs VERY bright indirect light or light sunlight.

Dressing

Mixed greens 1 oz carrots sliced thin 1 T shredded zucchini 1 T shredded yellow squash 6 medley cherry tomatoes cut in half 2 T sprouts 1 radish cut in wedges 2 T spring peas 1 T spring onions 1/4 cup roasted beets diced Fennel frawns

3 TB grated fresh ginger 1/4 cup orange juice 1/4 cup lemon juice 1/4 cup lime juice 1/4 cup champagne vinegar 2 TB agave nectar 1 cup orange marmalade 2 TB dijon mustard 1 1/2 TB salt 3 ts black pepper 1 cup olive oil 1 cup canola oil

Method Put all ingredients EXCEPT oils into blender Blend on high 1 min or until all ingredients incorporated Turn blender to Medium and drizzle oils in slowly until completely emulsified Store in refrigerator up 2 weeks


Cucumber & Avocado Gazpacho CHEF DEANNE BOUCHER OF SORELLE CUCINA Ingredients 1/2 English Seedless Cucumber 1/2 Avocado 4 Basil Leaves 1 Cup Watercress 1 Celery Stalk Garlic Clove Tablespoons Rice Wine Vinegar 1 Teaspoon Honey or Agave 1/2 Cubanelle Pepper 1/2 Lemon Juice & Zest 2 Ice Cubes Water, to thin out soup if needed Suggested Toppings: Roasted Chickpeas Chopped Tomato Fresh Ribbons of Basil Drizzle of Olive Oil Instructions Prep all your veggies: • • • • • •

Peel and cube the cucumber If your cucumber has seeds, remove them Cut the avocado into chunks Cut the celery up into bite size pieces Seed and cut the Cubanelle pepper Mince or finely chop the Garlic

**Having all your veggies cut into smaller pieces helps to get the Gazpacho smoother.

Place all ingredients (except for the water) into a food processor or blender. Puree until nice and smooth. Drizzle in the water very slowly, if needed, to thin it out. You can add as much or as little water as you like (depends on how thick/ thin you like your Gazpacho). Pour into bowls. Top each soup with your favorite toppings. We added some chopped tomato, roasted chickpeas, basil and home made Avocado Cilantro Sauce. That is it! This is a super easy, very healthy & light meal. The roasted chickpeas give it a great little flavorful crunch. Mangia! Enjoy! If you are making this ahead, place the blender/ processor bowl (with the Gazpacho) into the fridge to keep it cool. You may need to mix it again before serving. If you like your Gazpacho a little spicier, you can substitute a Jalapeño pepper for the Cubanelle. I would recommend starting with 1/2 of a Jalapeño and then add more if you like it really spicy! www.sorellecucina.com


Oriental Shrimp Salad CHEF DARRYL BUTTS OF THE GABLES AT CHADDS FORD Ingredients 2oz Bok Choy 2oz Romaine 2oz Spring Mix 1 oz Red Pepper (Match Stick Size) 5 Piece Belgium Endive 1/2 oz Shredded Carrots 6 Pieces of Mandarine Oranges 1/2 oz Sliced Green Onions (1/8th of an inch) 5 Cilantro leaves 1/2 oz sliced cashews 4 piece grilled shrimp (Size 16-20) 1oz crisp Wontons 1/2 teaspoon of Black and white sesame seeds Oriental Bread Sticks 8 Cherry tomato halves Dressing: 3 tablespoons of honey 1/2 tablespoon of soy sauce

1/4 cup mayo 1 teaspoon of sesame oil 1 tablespoon rice wine vinegar 1/2 teaspoon of minced ginger Steps 1. In a large salad bowl arrange the Endive around the bowl pointing upward 2. In a mixing bowl combine Bok Choy, Chopped Romaine, Spring Mix, Almonds, Shredded Carrots, Red Peppers, Cashews, tomatoes and Green Onions 3. In a separate bowl add all the ingredients of the dressing and mix well 4. Add the dressing to the mixing bowl with the Bok Choy and the rest of the ingredients. 6. Kurtz Collection shares tips to refresh your home this spring

T

he change of season often inspires us to bring change in our homes. As Spring begins to stir, so does our desire to bring a fresh new look to the rooms where we have been hibernating for so many weeks. For those struggling with how to get started, Josephine Kurtz of Kurtz Collection Rug and Home has put together some tips and ideas.

1ST * DECLUTTER As the Winter wears on, most people tend to accumulate books and magazines, blankets, pillows and everyday clutter in general. It feels cozy and inviting as we ease into the season, but as we prepare to open our homes to the sunshine and fresh air, these items tend to feel heavy and overwhelming. Take stock of your space and decide which pieces should be packed away until the Fall. Organize the books on your shelves and donate the unwanted ones to local libraries or charities. Recycle or donate magazines. If the project seems overwhelming, try setting a timer for 30-60 minutes and resolve to tackle just one room at a time. Whatever you can accomplish will be a great start!

2ND * TAKE STOCK How are your rugs and furniture standing up to their daily wear and tear? Are there items that need to be cleaned or repaired? Spring is the perfect time to take care of home maintenance and that includes caring for your home furnishings. Not sure whether a piece is worth fixing or if it’s time to replace it? Ask yourself whether the piece has value and meaning for you. If it is truly special to you, then it’s often most wise to repair and refresh. If the piece is merely functional or has lost its luster, then consider it time to send it on to its next home. Allow yourself to pick new pieces that fit your current lifestyle and needs. I

ndustrial Designer Bri Brant uses her intuition and understanding of historic local materials to build functional art. Her work is a blend of industrial + craft-based design, informed by natural materials. Bri was trained in Industrial Design at Philadelphia College of Textiles and Science. Afterward she apprenticed with local artists, experimenting with natural mediums: porcelain, plant dye, beeswax, and textiles. As a designer-maker, she takes a product from inspiration to production—creating each piece with her own hands. The beauty of each piece exists in the materials themselves. Building on a foundation of meaningful materials and craftsman-like processes, each Arden + James bag is a classic—season after season and year after year. All bags are made by hand in Bri’s home workshop in her hometown of Chadds Ford, Pennsylvania. By encouraging customers to choose their own custom options (bag size, color, strap type, decorative detail) the bag becomes something they love and will use forever.
