R
ecently promoted to the role of Corporate Pastry Chef on June 21, 2019, Chef Cher Harris is responsible for developing the strategy and vision for pastry operations throughout Hershey Entertainment & Resorts Company (HE&R). As Corporate Pastry Chef, Harris is playing an important role in the development of the forthcoming confectionary scratch kitchen, ice cream parlor and largest full-service themed restaurant in

Hershey, all located in Hershey’s Chocolatetown at Hersheypark, which is currently under construction and opening in summer 2020. Harris brings more than 20 years of experience to her new role. Prior to her promotion, she served for 10 years as Executive Pastry Chef at The Hotel Hershey, overseeing a team of dedicated pastry professionals that provide unique desserts and chocolate creations to all hotel outlets, including the award-winning hotel restaurant, The Circular. The pastry team’s desserts are also featured throughout all banquets spaces, the daily Spa buffet, Trevi 5, Harvest, Cocoa Beanery coffeehouse, Sweets shop and more. “Chef Cher has been an integral part of the spe-

An internationally renowned chef, Harris has earned a number of awards and accolades throughout her career, including the Global Chef Challenge Semi Finals for the Americas in 2017. In 2016 she was named “Pastry Chef of the Year” by the American Culinary Federation (ACF). In 2014 she was crowned “The Pastry Queen” at The Ladies’ World Pastry Championship in Rimini, Italy. Also in 2014 Harris was recognized by Dessert Professional Magazine as
one of the Top Ten Pastry Chefs in America and was selected as a presenter and featured chef at the Powerful Women in Culinary Event in Beijing, China. Harris has also been honored through ACF competition with three gold and two bronze medals. Prior to joining HE&R, Harris held positions as Executive Pastry Chef and as part of the opening management team at Hollywood Casino at Penn National Race Course, Pastry Arts Instructor at Harrisburg Area Community College (HACC) and Assistant Pastry Chef at Bent Creek Country Club. She is a graduate of HACC’s Culinary Arts & Hospitality Management program. She loves that working with chocolate is like pairing fine wines with food, in that the different cocoa contents and regions create many flavor depths and compositions with chosen paired ingredients. When she’s not working in the pastry kitchen, Harris loves to spend time outdoors gardening, camping, kayaking or just sitting under the stars with a glass of wine.

Chinese Tea Parties BY YIN NA
C
hina is a country with many customs and dialects, but one thing most Chinese people share in common is our love for tea. Generally speaking, when we gather for a party focused on tea, there are four different ways. The most common way is simply to taste different kinds of new and quality tea. This kind of tea party requires a very standardized tea-making process and a ritualized tea ceremony. A second type of tea party is based on the 24 different solar terms in the Chinese traditional lunar calendar. Different teas, environments, music, poetry, etc., are chosen to reflect each season. In the third way, people gather for a specific theme, including dress, interior decoration, music, snacks, and so on. For example, in a “Tea Party of

Song Dynasty”, the atmosphere is designed to reproduce how people in the Song Dynasty (960-1279 A.D.) gathered for tea. Another special theme is “Tea Without Self” which has recent origins in Taiwan. In this party everyone brings their own tea, and silently serves their neighbors in a circle. The fourth type is the special place tea party. This removes the limitation of an indoor tea space. Tea friends meet to climb mountains, enjoy flowers, or gather by the lake to taste tea together.

Tea snacks should be in harmony with the quality and flavor of tea. There is an old Chinese saying about the secret of tea snacks: “Sweet with green, sour with red, melon seeds with oolong.” “Sweet with green” means that sweets are served with green tea, such as sweet cakes and tarts. “Sour with red” means that slightly sour foods are served with black tea (called “red tea” in China), such as fruits and preserves. “Melon seeds with oolong” means that salty foods are served with oolong teas, such as melon seeds, salt beans, etc. Tea snacks are generally small in shape and weight, but elegant and tasteful. A good Chinese tea party will give you energy through self-reflection and inner peace.

Host a Tradtional China Tea Party
S
tart the tea party in any quiet and clean place indoors or outdoors. For indoor tea parties, a simple teapot, a fair cup and some matching cups are good. Teapots and cups can make almost all kinds of Chinese tea. We can start with a simple green tea party, such as the famous West Lake green tea. The tea cakes served with green tea are sweet desserts. Here is a Chinese tea cake, Osmanthus fragrance cake and recipe.
Osmanthus fragrance cake recipe Osmanthus fragrance cake is a very famous tea cake in China. Glutinous rice flour, sugar and osmanthus are the raw materials. It is delicious and beautiful. You may need to look for some of the ingreedence in supermarkets that specialize in products from Asia. ▶▶ Glutinous or sticky rice 500g White sugar 200g ▶▶ Sesame 110g ▶▶ Sweet osmanthus 20g Sesame oil 20g Peanut oil 60g 1. Wash the glutinous rice clean, soak it in water for 4 hours orso, and steam it with a cloth for 1 hour until soft.

2. Pour the rice into a bowl and add peanut oil, sweet-scented osmanthus and sugar. Mash, stir and turn it repeatedly with arough rolling stick to make it sticktogether. 3. Clean the sesame seeds, put them in a pot, bake them onlow heat, and then grind them into powder in abowl. 4. Spread half of the cooked sesame powder evenly on a board, press the glutinous rice flat on the sesame powder, then sprinkle a layer of sesame powder evenly on the glutinous rice, and roll it with a rolling stick to avoid the sesame falling off. Place it in a glass or porcelain dish with a thickness of about 2-3 centimeters. Chill inthe refrigerator, remove and cut into rectangular, diamond, or heart- shaped pieces.

hen Barbara Weisberger founded Pennsylvania Ballet in 1963, it was her dream, fostered and encouraged by the great George Balanchine, to not only bring the best in dance to Pennsylvania but to find local talent and develop those artists into world-class performers. Pennsylvania Ballet is one of the nation’s premier ballet companies and one of Philadelphia’s cultural treasures. Internationally renowned dancer Angel Corella took the reigns as Artistic Director at the start of the 2014/2015 season, bringing the company to a new level of excellence with 46 diverse dancers from around the world and an ever-changing repertoire of works. Originally founded in 1963 by Balanchine student and protégée Barbara Weisberger and now under the guidance of Corella, Pennsylvania Ballet continues to reach unprecedented heights. Opera Philadelphia’s Festival O19 SEPTEMBER 18–29, 2019

xperience operas both classic and new this September at Opera Philadelphia’s third annual Festival O, the critically-acclaimed celebration of opera hailed as “a hotbed of operatic innovation” by the New York Times. Whether you are an opera aficionado or a first-timer, Festival O’s blend of performances and events all around the city offers something for you. The company premiere of The Love for Three Oranges at the Academy of Music brings Sergei Prokofiev’s rarely-performed comic opera to Philadelphia 100 years after it was composed. Part fairy tale, part satire, the opera follows a melancholic prince on his quest to find true love, hidden inside three giant oranges, in a striking production from Italy by director Alessandro Talevi. The opera is a longtime favorite of Opera Philadelphia’s Music Director Corrado Rovaris, who is celebrating his 20th anniversary with the company, and is a showcase for the Opera Philadelphia Orchestra and Chorus. Handel’s Semele also makes its company premiere at the Perelman Theater. Derived from Ovid’s Metamorphoses, the opera tells the story of Semele,

a mortal swept away by her love, the god Jupiter, to the celestial realm before she meets her fiery end. James Darrah directs the innovative production, combining dance and opera for a modern take on the age-old tale. Further down Broad Street, at the Suzanne Roberts Theatre, is the world premiere of Denis & Katya, telling the true story of two Russian teens who, in the midst of a standoff with Russian Special Forces, live-streamed their last hours on social media, creating a real-time voyeuristic spectacle and leaving behind a trail of devastating video footage. Composer Philip Venables and librettist/director Ted Huffman explore the response to these events and what that reveals about our digital-obsessed society. Opera Philadelphia also partners with FringeArts to present the world premiere of Let Me Die, a collage of operatic deaths from performance artist Joseph Keckler. Inspired by a death song from Monteverdi’s lost opera, Keckler and his ensemble explore the idea “what if all the operas were lost, but all the deaths survived?” The festival also features several special events and recitals including the Curtis in Concert weekend recital series at the Curtis Institute of Music, next door to beautiful Rittenhouse Square, and the Bearded Ladies Cabaret’s Late Night Snacks series after the operas end. As the Washington Post observes: “Opera in Philadelphia really can claim to offer something for everyone.”

ampbell studied and graduated from the prestigious Peabody Conservatory of Music at the Johns Hopkins University where she earned her Bachelor’s and Master’s Degrees in Piano Performance and Composition. At age 16 Jennifer had her original compositions performed by members of the Philadelphia Orchestra. She has performed at notable halls including the Lincoln Center, the Academy of Music in Philadelphia, the Grand Opera House in Delaware, and the Musikhauset Aarhus in Denmark among others. Her extensive repertoire ranges from works of J.S. Bach to Israeli-American composer Avner Dorman.

A Graphic Designer by trade, this former ballet dancer trusts her keen visual sensibility whether she’s constructing a bracelet for her jewelry line, sketching out an interior floor plan for a home renovation, or working as Director of Floor Choreography and Music for AJS Pancott Gymnasts in West Chester. Denise’s design process is guided by her attention to detail in the way surface patterns and textures play off one another. Case in point is the recent renovation project at her and her husband George’s North Wilmington, DE home. The makeover was sparked by a desire to create a feature-wall focal point that would also add storage in her living room. Two built-in white cabinets, with black granite tops in a leather finish, now flank the fireplace. One accommodates audio/visual equipment, while the

other keeps barware, cocktail glasses, wine, and spirits neatly arranged and at the ready. Glare-free, large-format matte marble tiles with nearly invisible grout lines visually enlarge the space while showcasing the fireplace and the flatscreen television mounted above it. Denise chose a silver-backed glass backsplash that reminds her of imported Murano beads like those she incorporates into her jewelry designs. The glass’s crackle finish further indulges her fondness for a multiplicity of textures. One of the first spaces seen upon entering Denise’s home is the show-stopping dining room. Inspired by her love of container gardening and the stunning collection of pots and plants clustered around her patio, Denise chose a dramatic yet soothing hunter green velvet for upholstered chairs that surround an antiqued-white circular table. Set off by dark gray walls and a textural organic rug by New Moon at Kurtz Collection, the impression is that of a sparkling gem nestled in a jewel box. Eastcote Lane rejuvenated an antique buffet with a sumptuous waxed-black finish, a color that marries
the two renovated spaces. Crown molding in crisp white conjures a feeling of intimacy. For both rooms, Denise worked with contractor, A.W. Viohl. An Eye For Design PARTNERING WITH BENTLEY HOMES
T
om Bentley built his first house in a tree when he was 11. Today, he still believes that it’s best to keep the trees and let in lots of light, and I couldn’t agree more. Over four decades later, Tom is still building in his backyard. His company, award-winning Bentley Homes, is one of the last remaining truly local builders in Chester, Delaware and Montgomery Counties. Tom gravitated to the small-town charm of Kennett Square and surrounding abundance of preserved land. In the past 12 years, Bentley has created four distinctive and intimate communities in the beautiful natural landscape surrounding the town. Each community has

been designed for the modern, sophisticated lifestyle, while maintaining the aesthetic characteristic of the area, like the brownstone facades that pay homage to the local farmhouses. Living spaces are open plan for ease of entertaining with architectural details like soaring ceilings and oversized windows, and high-quality finishes are found throughout. Features include kitchen islands, spa-like bathrooms, walk-in closets, decks and garages. Communities are located in close proximity to downtown Kennett Square and all that it offers. The most recent project, Stonehouse, built in a carriage-house style, complements the original house that anchors the property. Further to Bentley’s mission, homes have views of mature trees and are open to walking trails. Tom invited me to partner with Bentley Homes to showcase the Charleston model. I started with art and antique rugs to style
the first floor and demonstrate to prospective buyers the potential for decorating the base model. I curated home décor and furnishings from my lifestyle boutique, Marche. Featured artwork includes abstract landscapes from Ellen Catanzaro of Chadds Ford and ceramics by Dana Bechert of Nottingham, as well as paintings from internationally renowned contemporary painter Kelly O’Neal of Dallas and
Santa Fe-based artist Kader Boly. O’Neal’s use of color and modern sensibility provide the perfect juxtaposition to Boly’s work with natural pigments on mud cloth, inspired from his native Burkina Faso. This contrast reflects my style of mixing the old with the new, heirloom pieces with up and coming artists, local and global, which is perfectly showcased in Bentley’s new homes. www.bentleyhomes.com
