Homemade burgers so nice, they say it twice By Megan Willome

t’s lunchtime. Do you want a teeny tiny bargain burger? Or do you want a burger burger — prepared by a chef’s own hands? Everything at BurgerBurger is handmade. The buns are handbaked. The fries are hand-cut. The pickles are hand-pickled. Not one sauce comes from a bottle. The creative force behind the menu is chef Matt Cavin. “I’m the one to blame,” he said. “My dad has a lot to do with the food I cook. He wants value for his dollar.” Cavin began cooking in the military, and he’s worked in restaurants from New York City to San Antonio. He met Eric and Jennifer Bryla, who were looking for a new dining concept. The Brylas had been restaurant owners for 11 years. “There’s nothing else like it in Ǥ ơ Ǥ It allows us to be focused and specialized. We have something for everyone,” Jennifer Bryla said. She credits the restaurant’s

success to Cavin’s vision. “Having Matt on board was the key to it, what he brings. That makes it work,” she said. The menu is the same for lunch and dinner. BurgerBurger ơ quarter-pound or half-pound burgers. Cavin says the most popular is the Old Fashioned, with lettuce, tomato, pickle and onion, but the Chophouse Burger is another favorite. “It’s a prime rib burger,” Bryla Ǥ Dz ƪ Ƥ ǡ it’s the most interesting one to me.” Ƥ beef, and there is a grass-fed beef option. Patrons can BYOB, Build Your Own Burger, selecting from varied toppings, including roasted jalapeño peppers and chili — homemade, of course. “It’s a burger experience,” Bryla said. One thing that sets the burgers apart is the fresh-baked buns. Cavin bakes three different types of brioche plus a gluten-free bun. Salads are also available,

along with the Henny, a chicken burger, and a house-made veggie burger. On warm days customers can sit outside under the shade of the latticework and misters and order from the full bar while enjoying a pound of handprepared wings or a variety of munchies. ơ beer as well as cocktails, including frozen sangria. Some evenings feature live music. What’s the best drink to go with a burger? A milkshake, of course. The ice cream comes from another local restaurant, Clear River Pecan Company, ƪ combinations. Add a shot of vodka-infused whipped cream — not out of a can — for an

extra kick. “You can get really good fresh food really quickly and get on with your day, whether that’s the wineries or Enchanted Rock or shopping or whatever,” Bryla said. BurgerBurger is located at 209 East Main Street in the heart of Fredericksburg. Crossroads

Local eatery heats up the nightlife and the grille By Valerie Menard

W

hile Fredericksburg attracts tourists with wine tours, tastings and shopping on Main Street, seven years ago, it lacked a true steakhouse. At least that’s what Maggie and Gary Klenzing surmised when they set about opening the Crossroads Saloon and Steakhouse. They initially bought the property at 305 West Main Street with the intention of opening a bar to enhance the local nightlife, but the Texas Alcoholic Beverage Commission (TABC) forced them to think big. “In order to get a liquor license from TABC to open a bar with a live music venue, we needed to have some food, so we built a small kitchen,” said Gary. “The consultants we hired suggested a steakhouse and we agreed that Fredericksburg needed one, so it grew from there.” As the restaurant’s name implies, the Klenzings were at a Ƥ in 2004 at Halloween night festivities on Lincoln Street. Maggie (Scripps at the time), was packed and ready to move to La Jolla, California, while Gary, a California native, was working for a telecommunications company in town.

Two Tons of Steel, a local favorite plays their rockabilly songs to a packed house, May 16 at Crossroads Saloon & Steakhouse. — Standard-Radio Post/Joshua McKinney They were introduced by friends and immediately struck up a conversation. “We’ve been joined at the hip ever since,” said Gary. ǯ Ƥ venture, Maggie previously owned a bistro in town. “I have worked with restaurants in the past and I wanted to open one here. I kept passing the building [on West Main) for a long time and once I saw a ‘for sale’ sign, we bought it,” she said.

Built in 1913, the building began as a general store. The restaurant opened in 2010. Through one front door, folks can enter the saloon and immediately time travel to the old west. The expansive space with a 14-foot ceiling includes a bar that faces the stage where bands perform on Friday and Saturday evenings. As an added touch, the chandeliers are constructed out of spurs and revolvers. A second, more discrete

side entrance, leads to the restaurant, where the western theme continues, albeit a bit more upscale, with deer antler chandeliers and a wine cellar set against a mural depicting Old Fredericksburg, including St. Mary’s Catholic Church and Marktplatz. On the menu, the steaks, all natural Angus beef from the Niman Ranch, beckon, from ͜ Ǥ Ƥ ͕͚ Ǥ ǡ signature dishes according to Chef Mensah Thompson.

Eric Martinez and friends heard the call, traveling from Baytown to Fredericksburg for the weekend to taste wine, shop and enjoy a steak dinner. “We saw the steaks online and they looked good, so we decided to try it,� Martinez said. The menu adds diversity with seafood, chicken and pork options, as well as sandwiches, including build-your-

own burgers. Hired three months ago, Thompson said he would like to add items featuring locally grown products, as well as more vegetarian dishes.
