The same can be said about the hops and grain that go into brewing beer. “We are always picky about where we select our hops from. With our IPAs, we choose them from the Australian/ New Zealand region as they usually hold up better over time in beer. ?hk hnk \h__^^ [^^kl p^ nl^ ^Zkmar% ÜhkZe% Zg] lib\b^k ahil% such as Challenger hops from England, or Nugget which is grown in America,” said Tim Castaneda of Black Laboratory Brewing.

A big part of what this comes down to is seasons. Some ingredients can only be produced during certain parts of the year, which is why seasonal beers are such a big part of the industry. If you are a craft beer veteran you may know that coffee stouts are brewed around the fall and winter, but did you know that more than just stouts work well with the beautiful caffeinated brown stuff? An increasing number of breweries are infusing coffee into the brewing process year-round – using ^Zlr ]kbgdbg` [^^kl ebd^ iZe^ Ze^ bg ma^ likbg` Zg] [bmm^k% ÜhkZe IPAs in the summer. Co Owner Pedro Longoria pitched the idea to his business partners, his brother Beto Longoria and their friend Joseph Valenzuela that they could be responsible for “paving the way for craft beer” in the city. “The Hoppy Monk started out as a business and has evolved into more of a philosophy. We believe that this is our one life and we have this one life to do what is right and positively impact as many people as possible.” said Longoria

The Hoppy Monk opened in December 2014 and is located at 1010 N Ehhi */)- >' ;kbg`bg` together like-minded people was essentially the idea, to cultivate deep, real conversations in an unpretentious atmosphere. Few things have a way of bringing people together like beer, and The Hoppy Monk celebrates that with a large patio featuring a draft handle fountain and plenty of cozy indoor seating. “It is interesting how craft beer somehow draws you into this vicious and joyful cycle where beer allows you to be more diverse and open to new experiences such as traveling, meeting strangers, getting lost and doing things rhn hma^kpbl^ \hne] ghm Ûg] the courage to do,” Longoria said.

I could not talk about spring styles without mentioning the style that is literally named after the beautiful springtime month of May. Maibock can be described as either a pale version of a traditional bock, or a Munich Helles (a lighter, malty German lager) brewed to bock strength. Unlike the previous entries, this style originates in Germany, is brewed exclusively as a lager, and has high alcoholic strength. Unlike other “winter” bocks, maibock is pale in color and usually has a simple grain bill of pilsner and generous helpings of Vienna or Munich malts. This style is also usually hoppier than a standard bock, with traditional Bavarian hop varietals usually nl^]' Bm l Z _Zbker g^p Z]]bmbhg mh ma^ [h\d _Zfber% i^kaZil designed to compete with other pale lagers as they grew in popularity in the 19th and 20th centuries. When drinking a maibock, look for a strong malt aroma with light toast and bread crust. Some alcohol may be noticeable in the style, but never solventy or unpleasant. European malt kb\ag^ll ]hfbgZm^l bg ÜZohk Zl p^ee% pbma lhf^ fbe] lib\bg^ll from the hops present to balance. Maibock typically feels both rich and mild, and both strong and easy to drink. Q: When and why did you start home brewing? A: After meeting a homebrewer, a father of a friend, and witnessing how passionate he was about it, I decided to give bm Z lahm' B [k^p^] fr Ûklm batch in 1985. A decade later, I opened a craft beer/homebrew shop in Downey, California.

Q: What do you currently brew on? A: B f \nkk^gmer nlbg` ma^ Grainfather Rims System, which I believe is the best available system a homebrewer can use. Q: Do you brew for your yourself or to share with friends? What is your batch size?

Q: If you had to guess, how many different beers have you brewed? A: B o^ [k^p^] ho^k +)) different beers, each one has three versions: extract, mini mash and all grain. The recipes are kept the old fashioned way, handwritten on paper. Q: PaZm l rhnk _Zohkbm^ [^^k rhn o^ \k^Zm^]8 A: My favorite was a spiced beer made with non-traditional spices. Q: Do you enter homebrew competitions? Have you won any awards? A: I have won a little over a dozen awards, though B ]hg m nlnZeer \hfi^m^ as I am not brewing for recognition. I once won a competition where the reward was a short course in fermentation science through UC Davis !eZm^ 2) l"'

Q: Do you name your beers? A: Typically, no, I do not. However, I am fond of a double chocolate stout which was named Lazy Boy Double Chocolate Stout that won an award. Q: Does running the largest beer department in San Antonio provide any insight into what trends or styles may be unique to the city? A: Absolutely, IPAs are king! It has been this way for some time, however, sours and farmhouse ales are gaining popularity. Cans also sell better than bottles and have been gaining traction. Q: Rhn o^ f^m jnbm^ Z few brewers, some even considered “Rockstar Brewers,” who left the biggest impression? Who would you like to meet? A: I recently met Jeppe Jarnit-Bjergsø, of Evil Twin Brewing, who was a real

Q: Are you happy home brewing, or would you like to open a production brewery?
