My Dining Out Experience

FIX RESTAURANT & WINE BAR

W

alk into Fix Restaurant and Wine Bar from Margaret Street, in Brisbane city and you will feel you have arrived in a bistro in downtown Manhattan, New York. The immediate feeling of clean, polished lines in a soft lit atmosphere is visually exciting. From the original Port Office hotel, which was built in the late 1880s, there are the two bars off Edward street, which accommodate casual drinks, bar meals and relaxed eating. Around the corner, entering from Margaret Street, a third bar adjacent to the restaurant, offers another more intimate informal dining area, all kept in its original style and feel from the last century. After seating our maître d’ of the evening, Marco preceded to inform us on what food delights we were going to indulge in for this evening. Also introducing us to a new companion on their wine list, a Kilikanoon ‘Prodigal’ Grenache 2012 from the Clare Valley. From the menu, the starters that were brought out for us, consisted of a braised pork belly, sweet potato and a chutney of apple and sage, and a potato gnocchi, sautéed in wild mushrooms and a gran padano of garlic and chilli. With the entrees completed and onto the mains, Marco insisted we try from the char grill section of their menu

a John Dee ‘super gold’ rib-eye fillet... and who were we to argue? This medium rare cooked fillet from the southern Darling Downs in Queensland would excite the most seasoned carnivore, and was of course excellently paired with our sensational Kilikanoon, Grenache. To accompany the mains, a plate of traditional pan seared scallops and chorizo on top of a carrot puree, sides of broccolini all joined the feast and the combined flavours where soon the talk of the table. Resting our over exuberant stomachs, it was decided the desserts for the evening was to be a lemon cheesecake, and sticky date pudding. With desserts this light, and sumptuous, there was no better way to finish the evening. With everything made fresh in the kitchen and nothing but the finest quality passing the head chef, it is no wonder that this venue is a must do for any guest to the wonderful city of Brisbane. I for one will be joining the Fix Restaurant and Wine Bar scene in this favourite amongst Brisbane locals and hope to see guests of the river city joining us.

As the weather warms up, Dining Out explores the magical relationship between rum and seasonal fresh Spring/Summer Seafood. Spring and summer brings with it the sunshine, a sense of playfulness, the balmy nights, the storms and some of the best Australian seafood all year. The sweetest prawns, the plumpest oysters, it doesn’t get much better than this! But then again it does when paired with premium rum at the Brekky Creek. Whether it’s a classic cocktail or a rum on the rocks, the warmer weather is the perfect time to expand your palate and truly appreciate the delicate flavours of seafood, enhanced by the natural citrus of a white rum. Cleanse your palate with a traditional aperitif such as the “Ti Punch” with fresh lime and sugar syrup before devouring a bucket of Mooloolaba Ocean King Prawns. A French Caribbean white rum has the perfect balance of freshness and punch to stimulate the taste buds. Mix a little Ginger beer and lime with the Angostura 1919 to enhance the clean fresh taste of the Moreton Bay bugs or W.A Rock Lobsters, a classic Brisbane favourite. Summer is all about cocktails and the substation team suggest a lime or lemon rum based cocktail is traditional with seafood but to also live dangerously and sample a “Rum Sour” with a heavier fish dish to create an explosive mouth feel that simply divine during the holiday season. LENNONS RESTAURANT

S

ituated in the top end of Queen Street mall, Lennons restaurant is part of the newly refurbished Next Hotel. Modern clean architectural designs greet you as you ascend the escalators to the mezzanine floor, where the restaurant is situated. The new spring/summer menu is what we are sampling tonight, and what Lennons restaurant has become known for, a menu sourced from local ingredients with fresh, clean tastes forefront of the chef’s mind. Starting with clean cut kingfish and tempura battered mussels, and radish to begin with, along with scallops, grilled octopus and pink grapefruit began the night with flair and certainly did not disappoint. The visual colours on the plates were stunning and the clean fresh tastes of each dish blended together in perfect harmony. Then on to the mains, in what I can only describe as a perfect dish. Spatchcock, with braised peas, pearl barley and bacon. Along with this, we were fortunate enough to sample the scotch fillet, mushrooms and parsnip crisps. Another dish cooked perfectly and full of exquisite, fresh flavours. For dessert we were presented with a chocolate caramel ganache and strawberry parfait. What more can I say? The chocolate, mixed with the salted caramel with a slight twist with liquorice ice cream, literally melted in our mouths, whilst the different textures of the fresh and dried strawberries, strawberry

ice cream, on the parfait, left the taste buds feeling satisfied. Summer fare has never looked so exciting. Using the freshest ingredients from Australia, this restaurant truly is a unique dining experience. Specials daily for lunch, dinner and even breakfast, available seven days a week, the delights to be had at Next Hotel’s Lennons restaurant are second to none. For a corporate lunch or dinner, to a night out with family and friends, or a more intimate interlude, this restaurant will not disappoint. My Dining Out Experience

Il Centro

E

stablished in the early part of the 1990s on Brisbane’s glamorous waterfront dining strip of Eagle Street Pier, IL Centro has won the hearts of lovers of modern Italian food. There is an air of sophistication, with the staff attending to everyone’s needs, and the sommelier’s wine advice from their extensive and well known wine list. With the restaurant manager, Zahir and the wonderful floor staff looking after us this evening, we were in for a treat, sampling the delights and specials that this restaurant has produced and offered for years. For starters this evening we were presented with an assortment of entrées to begin our journey, with a fresh crab and avocado salad, Insalata di Granseola, scallops with truffled potato gnocchi, Gnocchi Cape Sante, and a tasting of BBQ Octopus. All were light and full of flavours in a traditional sense, but with a modern twist, giving their own unique flavour. Such a refreshing way to start the evening. Excited by the entrées and waiting with much anticipation, the mains were brought out for us to share with a crispy skin barramundi, wagyu beef cheek ravioli and the IL Centro’s famous crab lasagne, this certainly did not disappoint. I for one had never tasted lasagne quite so velvet in texture and moorish in taste. The crustacean sauce of the lasagne, mixed to the right consistency, through to the al dente pasta of the ravioli and the freshness of the barramundi, these mains were truly divine. Just when we thought that this could not

get any better, a special surprise was brought out to the table for us to try. Another IL Centro’s signature dish, the parmesan crusted veal scaloppine. The veal was tender, the fettuccine carbonara that accompanied the veal was cooked to perfection... I really don’t need to say anymore. With desserts up next, a creamy traditional semifreddo and a soufflé completed our evening of the Italian senses. Again the flavours of these desserts were astounding and certainly ended the evening of culinary delights with a bang. This restaurant definitely does not disappoint in every sense and is truly a remarkable statement on the dining scene in Eagle Street Pier. IL Centro is a testament to the fact that if you have all of the right ingredients and produce food of the highest quality, you will have a successful restaurant which will be around for many years. With views of Brisbane’s Story Bridge, to the shores of Kangaroo Point, this is the perfect restaurant to spoil yourself. From a romantic dinner for two, to the special night out with friends, the food will take you on a sensory trip to Italy and back. You will want to come back for more, that I am sure.

WHAT separates top quality fish from the mediocre? Freshness surely, putting the whiting pulled in at the beach and in the pan an hour later somewhere near the top of the pile. And those barramundi swimming in the live tanks in the local Chinese restaurant leap from vitality to plate in a matter of minutes, so perhaps Chinatown is fish-mecca. Unfortunately things aren’t quite that simple. Life is crowded and stressful in those tanks and the water – no matter how well maintained – is a far cry from that from which the fish were plucked days, weeks, possibly months before. It’s a jail. And that line-caught whiting may have flopped around on the sand in a desperate bid to escape until dying of asphyxiation, releasing lactic acid into its blood, tearing membrane, bringing on a fast and extreme rigor-mortis and doing some serious damage to its eating quality. Even though it is less understood and documented than it is for chickens and cattle, we know that there is a significant correlation between the quality of fishmeat and the way in which the fish was caught, killed and handled. The trouble is that very few fishcatchers, mongers and restaurants recognise that difference and go to the trouble of giving the fish the sort of handling that makes for a great meal! 46

Brisbane’s Jellyfish restaurant says its kitchen team do and that’s why it has the reputation as the foremost fish restaurant in Queensland, possibly the country. Its seafood is purchased from both farms and live-catch suppliers, but both are carefully chosen and the restaurant has built strong, long-term relationships with them. Jellyfish favours smaller wild-catch fishermen. “We prefer small boats because they tend to look after the catch better and are less likely to have the fish lying under a tonne or two of others,” says Jellyfish owner, John Kilroy. “And they spend less time at sea so the catch gets to us faster and fresher.” Fish farms are a more predictable and sustainable source. “We buy from farms with impeccable practices. It can be seen in the quality of its fish.” It’s a long-winded way of explaining that Jellyfish weaves its magic long before the fresh fish enters its walls. Inside those walls it is all kid-glove treatment – wet towels, designated cool-rooms and a fishmonger on the kitchen team whose sole job is caring for the fish and ensuring that the handling, filleting and processing is top-notch.” Wild fish don’t provide a constant and predictable source, so our menu is printed after 11am daily to accommodate the morning deliveries. We buy from all over Australia and New Zealand to source what is fresh. The kitchen team treats each species differently and the front page of the Jellyfish menu is devoted to the daily catch – fried, char grilled, oven-baked … whatever method best suits. “The greatest advantage is the fact that nothing stays in the Jellyfish coolrooms for long. ituated in the South Bank precinct of Parklands, The Jetty South Bank has the perfect view looking over from the Goodwill Bridge to Brisbane city. With modern designs and semi alfresco dining at the front, this is the perfect place for experiencing the southern end of South Bank and enjoying freshly produced food that reflects river side dining at its best. We had the choice of the menu this evening and decided on sharing the entrées, consisting of marinated Gippsland pork belly and charred pineapple along with enoki mushrooms, crispy fried tofu, eggplant and ponzu sauce. The combination of flavours from each entrée blended well and was perfect for this spring evening. Moving onto mains, we made a decision of seared lamb rump, braised chickpeas, kale, tomatoes and pomegranate with a Shiraz Jus along with the fish of the day, which on this night was snapper, and a pumpkin mash with crispy seasonal vegetables. The flavours coming through with each mouthful, enhanced with sides of beetroot, chilli glaze and chevre and a rocket salad with pear, parmesan and pine nuts, made this a perfect meal. Enjoying each dish, we were more than pleased with the recommendations from the friendly staff. After a short rest, the chef’s specialty of strawberries and cream vanilla panna cotta, with a hot chocolate

sauce poured over the top at the table and the dark chocolate pudding, was presented to us. As with the mains, the desserts were eaten in good time, only taking short moments to pause and admire the view, and letting the food settle. The desserts were an excellent way to finish off a perfect spring evening in South Bank. The Jetty has been a staple in South Bank for numerous amount of years, and with a simple yet dignified menu that won’t confuse you, this is the best place for visitors to the city and locals alike. Also, this is the perfect spot to sit back and relax with a cocktail, wine or beer and watch the world go by.

THE PERFECT STEAK Did you know that Australian Beef is some of the finest in the world? We are highly adept at rearing multiple breeds and cross breeds, we have pristine pastures, organic and biodynamic farming practices, we grain and grass feed, dry age, wet age, in fact we do everything but sing to our cattle. So why do so many of us think Argentinean Beef is superior? The answer is not only in the marbling, the cut or the texture of the meat although those are all contributing factors. It’s about the cooking. Take a piece of high end wagyu, heat a barbeque grill plate, a wood fired oven, a flat grill and an open flame barbeque then cook the same piece of meat on each one for the same amount of time. The results will surprise you. Aged beef takes longer to cook and responds well to open flames. Younger grassfed beef breeds like Bos Indicus and European breeds work better on a high intensity flat grill or pan. A wood fired oven is the place to cook highly marbled cuts like wagyu and some cuts have higher sugar content which means they caramelise well when cooked on an open flame.
