The peanut base smeared with spicy Thecha or chutney with a touch of grated coconut as dressing, amps up tang & heat that is absorbed by the glazed prawns in its entirety. It’s simple but the textures are varied, play well with each other and releases juices that make every mouthful a wonderful burst of sea flavours.

The saffron smeared Kashmiri Naan Kebab is feast for the Nawabs! The flaky naan bread is so huge that it snuggly houses an equally impressive 25 to 30 cm Mutton Seekh Kebab along with a salad dressing!! The flavourful kebab is so succulent that the different personality traits of its coated masalas all sing in unison. However, the creamy and reviving Doon Chetin or the walnut chutney is the game changer that actually smoothens out the rough edges. The pre-opening of any restaurant is an exciting phase! There is a lot of planning, co-ordination, trials, training and so much more. In the last 14 years, Imran Khan has been a part of the pre-opening of 14 restaurants and bars! Currently, the Food & Beverages Manager of Welcomhotel By ITC Hotels, Kences Palm Beach, he share his journey and love for the city, over a cup of tea.

How is life at the resort?

This is a new experience for me. In the city, the days sparks at 7:00 pm. At the resort, everything quietens. After 6 pm, everyone wants to just relax, chat and watch the sun set. Setting up of the ‘Namma Shack’ restaurant...

We had a lot of ideas, and finally we decided to serve local flavours. Like Namma Chennai, we named this restaurant, ‘Namma Shack’.

What must we try at Namma Shack?

Try the thanni charu this season. Also, the Sarakku Sankara, a red snapper! Well, all the cocktails have received raving reviews.

Your take on East Coast Road?

Take a drive down ECR, there are so many interesting places to dine at. When you are coming with family, just ensure it’s a safe property to spend time at.

What is your personal favourite hangout place in Chennai?

Marina Beach. I go with my family aft 9:00 pm!

What is your favourite Cuisine ?

Definitely Chettinad cuisine. It’s been incorporated in the Namma Shack menu.

What’s your favourite restaurant?

For non-veg food Ponnusamy, for vegetarian, it’s Saravana Bhavan Finally, what come to mind when you say Chennai?
