Temperatures are falling, the days grow shorter, perhaps a flurry or two of snow is in our near future, and so our thoughts turn to friends, family, and great food as we prepare for the holidays. It’s a busy time of year, to be sure, but also a time to reflect on all that we are grateful for—and Concord and our many friends here are at the tops of our list, for sure. As you stroll through Concord Center, West Concord Junction, and Thoreau Depot, you will undoubtedly notice the charm, character, and friendly vibe of our many shops and restaurants. This time of year is fun, festive, and filled with holiday magic. That makes shopping locally a true pleasure. We hope this Guide to Holiday Gift Giving will inspire you to start your holiday shopping right at home. Supporting our local shopkeepers, restauranteurs, artisans, and other small businesses ensures a dynamic and fun place to gather for years to come. Concord is buzzing this winter, and the fun is calling! Turn to p. 14 for “Holiday Celebrations Around Town.” The festivities start in November (no, it’s definitely not too early to start your holiday shopping), and the coming months will include events sure to get you in the holiday mood. Enjoy the beautiful shop window decorations, the warm and hearty dishes being served up in local restaurants, the enticing holiday strolls, parades, and both a menorah lighting and a tree lighting ceremony. It’s a giving time of year – and this also includes giving back to the non-profit organizations that preserve our historic and cultural heritage, educate adults and children, support mental health, feed hungry families, and do so many other good works. Holiday Recipe Traditions

Sharing meals with family and friends is one of the true joys of the holiday season. We all have our favorite dishes, from Grandma’s secret recipe for the perfect turkey stuffing to Uncle David’s apple pie. This year, our friends at two of Concord’s most beloved places, Debra’s Natural Gourmet and Verrill Farm, are sharing recipes that are sure to become perennial favorites. © Verrill Farm

Verrill Farm Butternut Squash Lasagna Makes 8 to 10 servings

6 pounds butternut squash, peeled, seeded, and cubed 2 cups onions, sliced 4 cups mushrooms, sliced

season with ½ teaspoon kosher salt, and ¼ teaspoon ground black pepper. In a separate bowl, mix ricotta cheese, ½ cup Parmesan cheese, and the eggs.

½ cup olive oil, divided ¼ teaspoon dried thyme

In a shallow pan, heat ¼ cup olive oil over medium-high heat. Add the onions, begin to brown (approximately 5 minutes). Add mushrooms and cook an additional 5 minutes.

1 teaspoon kosher salt ½ teaspoon ground black pepper 2 pounds ricotta cheese 2 large eggs

Add mushrooms and onions to the ricotta cheese mixture and mix to combine.

¾ cup grated Parmesan cheese 3 cups shredded mozzarella cheese 1 9-ounce package no-boil pasta sheets 1 tablespoon fresh sage, chopped Preheat oven to 350 F and set aside a 9x13” pan. Toss half the butternut squash in a bowl with ¼ cup olive oil, ½ teaspoon salt, ¼ teaspoon thyme, and ¼ teaspoon ground black pepper. Place on a baking sheet and roast until tender and edges brown, about 30 minutes. Place the remaining half of butternut squash in a pot, cover with water and boil until fork tender. Drain, puree or mash until smooth and

Spread 1 ½ cups of butternut puree in the bottom of the pan. Cover with 3 pasta sheets, followed by 1/3 of the ricotta mushroom mixture, then 1 cup of the shredded mozzarella cheese. Top with 3 pasta sheets, 1 ½ cups puree, 1/3 ricotta mushroom filling then 1 cup shredded mozzarella. For the final layer, place four sheets of pasta, remaining puree, remaining ricotta mushroom mixture and 1 cup shredded mozzarella. Sprinkle with diced roasted butternut, chopped sage, and remaining grated Parmesan. Bake lasagna for 35-40 minutes on middle oven rack until the dish reaches an internal temperature of 140 F and cheese is golden. Visit Verrillfarm.com for more recipes.

Black Cherry Freezer Tart with a Hazelnut-Chocolate Crust Makes one 14-inch round tart or two 10-inch tarts CRUST 2 cups of hazelnut meal ½ cup raw nut butter (I use Brazil Nut butter) ½ cup maple syrup ¾ cup raw cacao powder A generous pinch of salt

FILLING 10 ounces of pitted cherries (frozen is fine) ¾ cup coconut manna ½ cup orange marmalade ½ Tbsp vanilla extract Optional: pomegranate molasses

Line your tart dish(es) with parchment paper to help remove the tart intact. In a bowl, combine crust ingredients with your hands. Using your fingers and palms, press crust into your tart dish making the outer ridges about a quarter-inch high. Puree the filling. The filling is thick, so you want a strong blender, and you want your ingredients close to room temp, so they don’t thicken up too much. If you want more tartness and oomph, add pomegranate molasses to taste. Spread filling into the crust with a spatula. Freeze. Serve frozen, or very slightly thawed. If desired, garnish with thinly sliced stone fruit, crystallized ginger, chopped nuts, cacao nibs, or edible flowers. Visit Debrasnaturalgourmet.com for more recipes. 36

GO TAKE A HIKE! Concord is surrounded by nature, and winter is a beautiful time to explore. Your senses are in for a treat with a walk (or snowshoe excursion) in the woods, along the Battle Road, or following the Bruce Freeman Rail Trail. Stop and listen to the orchestra of winter birds. Look carefully at the fallen snow, and you may see deer tracks or other signs of local wildlife in the area. Freshly fallen snow reflects the light and can cheer a winter day. A moonlight stroll is magical with sparkling snow under moonlight. And the haunting call of owls stirs a sense of magic and mystery. On a clear night, the stars are crisp and bright – you might even see a shooting star! Looking for a great place to get started? If you prefer to venture out on your own, there is so much to see and explore. Stroll the grounds of Minute Man National Historical Park, Walden Pond State Reservation, Sleepy Hollow Cemetery, Old Hill Burying Ground, or South Burying Ground and learn about the early chapters of Concord. All are open until sunset and are lovely on a winter’s day. See the map of Historic Concord on p. 32. WINTER FUN FOR THE WHOLE FAMILY From snowshoeing to cross country skiing, ice skating, and, of course, the classic sledding, families have fun all winter long in the many outdoor spaces in and around Concord. The trail list at the QR code to the left provides great spots for snowshoeing and

cross-country skiing. Ice skating favorites include Walden Pond, Macones Pond (Lowell Road, near Barnes Hill Road), and Kennedys Pond (off Old Mill Road in the Old Rifle Range). Safety is important when skating, so please remember to never skate alone – and always be sure that the ice layer is at least 6” thick before lacing up those skates. Sledding is good fun for all ages. The hill at Concord-Carlisle High School has easy access and good parking. Those seeking the thrill of a steep incline should head to Punkatasset Hill off Monument Street or to the big hill on Nawshawtuc Road, near Willard Common. There’s so much to do in Concord this winter – so get out there and have fun! Don’t forget your mittens…

1. He may have been involved in the Boston Tea Party. As English subjects, American colonists were expected to follow English laws and pay taxes imposed by the King and Parliament. Boston lawyer James Otis summed up the colonists’ discontent writing that “no part of His Majesty’s dominions [should] be taxed without their consent,” i.e., “no taxation without representation.” The Tea Act passed by Parliament in May 1773, steeped many colonist objections to a boiling point, and on the night of December 16, 1773, led by the Sons of Liberty, colonists dressed in disguises headed to Boston Harbor where they boarded three ships loaded with tea owned by the English East India Company.
