It’s a joint DCM with our sister division the Huskies! It’ll be a fun way to end the 2022 year with a BANG. During the last month of 2022, Key Club was working hard to put together their last event before Winter Break. Redlands Key Club was invited to walk at the annual Christmas Parade to promote and show off their bison spirit! The Key Club members had a memorable time waving their posters and handing out candy to the crowds! This was a memorable and fun event for Key Club before break.

REDLANDS NOTES OF ENCOURAGEMENT & UPCOMING EVENTS

HIGLIGHT

This month the RHS Key Club had service meeting, where the key club members would write notes of encouragement on sheets of paper to hand out during finals week. We hope the notes gave students the motivation to not give up during the stress of finals week.

Upcoming Events: This month Key Club also has a Christmas party on December 20th with Redlands East Valley and Citrus Valley Key Clubs. The year of 2022 has been such a memorable year for the Redlands Key Club as we saw many improvements in our club. We hope that 2023 will continue to be a great year for us!

BIBINGKA RECIPE

Celebrate Christmas this year with the Philippines. Try this traditional Filipino rice cake, often found at street vendors. Enjoy this rice cake with hot drinks, like coffee or chocolate. All you need is rice flour, cake pans, and an oven!

Ingredients

1 cup rice flour

1/8 teaspoon salt

2 1/2 teaspoon baking powder

3 tablespoons butter

1/2 cup granulated sugar

1 cup coconut milk

1/4 cup fresh milk

1 piece salted duck egg sliced

1/2 cup grated cheese

3 pieces raw eggs

1/4 cup grated coconut

Pre-cut banana leaf

Directions

Preheat oven to 375 degrees Fahrenheit.

Combine rice flour, baking powder, & salt then mix well. Set aside. Cream butter then gradually put-in sugar while whisking. Add the eggs then whisk until every ingredient is well incorporated. Gradually add the rice flour, salt, and baking powder mixture & mix

Pour-in coconut & fresh milk, whisk for 1 to 2 minutes.

Arrange the pre-cut banana leaf on a cake or baking pan & pour Bake for 15 minutes.

Remove from the oven, top with sliced salted egg & grated cheese (do not turn the oven off).

Put back in the oven & bake for 15 to 20 minutes (top turn medium brown)

Remove from the oven & let cool. Brush with butter & top with grated coconut. Serve. Share and enjoy!
