EDITORIAL Hope For the New Year and Possibly a New Era
One of the main missions of Destination Jeddah is to bring to our readers the best of Jeddah and all it has to offer.
However, what happened to our beloved city on November 25, 2009 is something that has left a huge scar in all of us; Jeddah with all its beauty was wounded deeply. But with every disaster comes hope; and what I have witnessed at the Jeddah Center for Forums and Exhibitions is something we have all been yearning to see for a long time. I witnessed Saudis, with their diversity, unite for one cause; a humanitarian cause to aid their brothers and sisters in need. Men and women, young and old, from different socio-economic backgrounds and ideologies, work hand in hand to save Jeddah; a scene I believe with all my heart will change many things, a scene that gives hope for the future of Jeddah and the nation at large. We can no longer hide our heads in the sand and pretend that nothing has happened since November 25th; we cannot continue to live on our unaffected side of the city, in our comfortable homes, sending our children to safe schools, shop in our luxurious malls, eat in our nice restaurants, and get treated in first rate hospitals. Even though some of us try to be compassionate by collecting donations or volunteering, at the end of the day I want you to ask yourself is this enough?

Several volunteers unload a truck with items to be seperated into smaller boxes for flood victims.
Not long ago, just a few hours of rain changed everything for Jeddah. Without missing a heartbeat, Saudis and a patchwork of other nationalities pulled Jeddah up by its bootstraps and created something Saudi had never seen before. A few days after the flood an explosion of relief work took center stage at the Jeddah Center for Forums and Exhibitions (JCFE) with the community service organization Muwatana at the helm in association with the Jeddah Chamber of Commerce (JCCI). After the rains which started on Nov. 25, Khalid Mohammed Al-Dahlawi and Rasha Hefthi, co-founders of the community service organization Muwatana and some friends decided to go and investigate the damage people were talking about. While trying to get to Guwaiza (an area rumored to be the most heavily affected), meandering streets blocked off by police forced them by accident all the way to Kilo 10 and then Kilo 14.
“We went Further East and got into Kilo 14. As soon they saw us, I heard the people screaming, ‘reporters, reporters.’ Someone approached us and started showing us around, Al-Dahlawi said. “We asked them, if anyone had come to help them and they said no we were the first people to enter the neighborhood. They took us for a tour, we found cars literally fully covered with water. We didn’t see anyone trying to help those people. From that we decided to do something because we have an obligation, we are Saudis.”

After visiting Kilo 14 Al-Dahlawi and his team were determined to visit Guwaiza. On Dec. 28 they made it to Guwaiza. “We didn’t believe the damage we saw was from rain. It looked like an earthquake (or a bomb) struck the area. The roads were ripped apart,” he said with a heavy tone. The day after , the Muatana board members met to figure how they could do something and raise awareness about Kilo 14 as well since it was not covered in the news. They started to call friends and family and explain the situation, refusing to accept money for aid. “We wanted things, food, blankets.”
Slowly the items being collected overflowed the home where they were being kept and later the JCCI provided a room inside their facility to store the items; but soon even that was too small. Eventually the JCFE was provided as a means to coordinate and send out help. The JCCI later called a committee bringing together all sorts of charity groups to organize donations. The JCFE is packed with items donated from companies but also from private donors. After that the number of volunteers swelled to 5,000. The amount of coordination and cooperation is something completely unparalleled for Saudi but the results are even more striking.

Volunteers worked tirelessly from 10AM to 10PM to get items broken down from their wholesale portions to portions appropriate for families.
“Up till now we’ve helped........,” he pauses and scratches his head. “We’ve covered over 80,000 (people).” “What we wanted to do was make this a learning experience,” he insisted. “We could have contracted companies to come and run all these things but we didn’t want to do that. We wanted young Saudis to start these things, to learn and explore themselves. To really have a chance to think out of the box.” Al-Dahlawy leans forward and a grin creeps over his face, “is there chaos here? Of course there is, but we want that organized chaos.”
Without the chaotic nature of the relief efforts, he says, the volunteers would not learn. We give them a set of rules, guidelines and instructions, and let them come up with their own system, and this is exactly what turns these volunteers into leaders. “Since these young volunteers are not forced to do things a certain way, you can see them learning, thinking. and trying to improve day after day ” He pauses. “This is the first time this kind of volunteerism has existed (in the Kingdom) in this form and this magnitude.”

Civil society is a must, and it even becomes a greater necessity when there is an emergency. When the official institutes in any country fail to do their main jobs, the civil society has no option but to stand up immediately to cover as much as possible of its ethical responsibilities, without waiting for anyone, and without waiting for any permission. I took a step back and tried to see how the volunteering situation was going on... And I felt like crying. I saw everyone in the field work: my family, friends, and classmates. I saw volunteers from all age groups, from both sexes, from different nationalities, and from different ideological backgrounds. I saw volunteers coming from Holy Makah & Medina, Taif, Albaha, Riyadh, Southern province, Eastern province, and Alqateef. I saw a whole community coming together, and I thought to myself: I saw Jeddah, I saw Islam being practiced, and I saw us. From now on, we shall never stop. Viva civil society! Ahmad Sabri

WADI
KHADRAH The Green Valley
By Turki Shoaib
Hidden in the deep gorges and lava plains off Madinah Road, lies a unique wadi like no other. A tributary of Wadi Mur and located on the historic Higrah Trail, the area is a hotbed of history, trade and natural beauty and is definitely worth a visit. 30 DESTINATION JEDDAH
Being accustomed to Saudi Arabia’s arid environment, it is always a surprise when you come face to face with an area that is abundant in standing water and lush natural vegetation. Not that Saudi lacks the natural diversity or interesting landscapes of other countries, but because it is usually so understated, or out of the way that no one actually knows it exists. Wadi Khadrah is such a place. Traveling to Rabigh’s Wadi Mur is always an enjoyable experience; exploring the deeper wadis that regular visitors don’t usually visit is a treat for anyone interested in a bit of adventure and photography. Still there is a limit to how far into the wadi you can go, even with a four-wheel drive. Although Wadi Mur stretches from the town of Rabigh on the Yanbu Road all the way to Madinah Road, it is almost impossible to cross the distance through the wadi, limiting accessibility as you get further away from Rabigh. Photos by Turki Shoaib
Describing Wadi Khadrah to someone and telling them of lush palm groves and the many springs of the area would certainly getattention; either the person will be filled with excitement or take it with a pinch of skepticism. It is hard to envision Wadi Khadrah without actually seeing it with your own eyes. For that, all one needs is an able 4x4, directions and a GPS navigation system. The route to the wadi is extremely straightforward; north on Madinah Road from Jeddah, pass Al-Abyar to the Mahd Exit (Exit 15), reach the village of Al-Akhal and follow a dirt trail parallel to the end of Wadi Mur.

The route to the wadi is extremely straightforward; north on Madinah Road from Jeddah, pass Al-Abyar to the Mahd Exit (Exit 15), reach the village of Al-Akhal and follow a dirt trail parallel to the end of Wadi Mur. The road to the wadi is not a boring driving marathon. Stopping at Al-Abyar, you can climb up to the ruins of an old fort near the highway before continuing on to the Mahd Exit. At Al-Akhal, you will need to drive to the end of the paved road and move on to a wide trail that stretches towards the southwest. The opening to Hadabah Mountain can be spotted from 10 km down the trail; a unique formation in the shape of a ring of mountains with interesting peaks. Continuing on for another 10 km, the wide trail will come to an end, leading you straight to the wadi. Like a mirage appearing out of nowhere, the greenery peeking out of the lava cliffs is mesmerizing. The opening to the valley will leave your heart beating faster as it is a sight to behold. Consisting of palm groves with a little stream running through it, the wadi is a deserted place except for ruins of old buildings, supposedly a historic market for dates and a mosque. The shade from gorge cliffs makes the heat somewhat bearable. Driving down the wadi, a water stream will greet you with its myriad of inhabitants; small fish and frogs. The stream, narrow and
rain-hungry, is surrounded by reeds and wild palms. The trail gets rougher after pressing on, with the ground littered with stones. The beauty of the valley hidden deep in Wadi Mur is enough to entice any adventurer for a return visit. Leaving the vehicle to hike deeper into the valley and then watching the sun set from a higher elevation are just some of the more interesting things to do in Wadi Khadrah; a perfect place for a day trip or camping.

From hilltops to valleys: A French photographer ‘discovers’ the Kingdom By Michael Bou Nacklie
After a long day of work/school few Jeddahwis have the urge to go out and explore the areas surrounding the city. Yann Jules Gayet is not your everyday Jeddahwi. Regularly venturing off to unknown places and meeting isolated people Gayet has built up an impressive repertoire of images of the Kingdom’s varying climates and cultures. Recently exhibited a sample his work at Pearls’ Cafe in an effort to bring a little piece of Saudi Arabia to us all. The exhibition featured 30 images on display from Nov. 19 Dec. 3, which Gayet collected over a year of traveling.
Born in Paris in 1981, he has studied Arabic in Cordoba, Paris, Damascus and Marseille and researched French translations of classical Arabic Poetry in Marseille, France. Before he arrived he said he had very little idea of what the country he was heading into was about.

“My imagination was limited to a very common stereotype. I was excited by the idea to have my own experience of this country. So many people talk about it from afar,” he said in an E-mail interview. A year later with coaxing from a friend working at the National Wildlife Research Center in Taif, he set off on his initial trips observing the varying wildlife of the Kingdom. While crossing rocky mountain roads and speeding through wadis, Gayet said his Arabic has improved and “I’ve learnt to enjoy kabsa with my fingers. People outside the cities have kept alive an amazing tradition of hospitality,” Gayet said. He started photography at 14 and even built a photo development studio in his parents bathroom. Poor ventilation in the room forced
him to give up his hobby when he was 18 after becoming sensitive to the chemicals used in developing film. He rediscovered his passion for photography in the mountainous landscape of Saudi Arabia. Hidden in the mountains Gayet said there is more than just good camping. “These mountains have many things I like: fantastic landscapes, beautiful people; proud of their land and culture and a lot of birds.” Unpacking camping benches as his bed and setting up behind his Jeep he sleeps with the stars in the “billion-star hotel,” with the mountains as his headrest. “I’m not an explorer. I just found myself more comfortable among those people, in those places, than in my apartment.”
His next step is to document more of the stories of the people he meets. “I miss taking more portraits, I want to tell stories.”

“Somehow, I feel home, there. Perhaps because it reminds me the mountains of “Haute-Provence” (south of France) where I’ve spend most of my holidays since I was born, and almost a full year before I came to Saudi Arabia.” His primary goal was to show his friends and relatives the hidden beauty Saudi Arabia has outside of the news headlines. “Even in Saudi Arabia, I’ve found out that very few people know how the country looks like,” Gayet said. “It became a delicious hobby bringing people a wider picture than the one they have in mind when they think about this region of the world. It shows me how powerful a few images can be. It’s fascinating.”

Almost: A story of
troublemakers and fun By Omar Bahabri
Getting the chance to see an independent production from Saudi is rare and rarer still as a collaboration between Saudis and Americans. The sitcom “Almost” is one of those rarities, written and co-produced by Ali Al-Kalthami, it centers on the lives of young mischievous Saudis in Riyadh. Last month during the LOL comedy tour in Riyadh the pilot episode was aired and DJ had a chance to sit down with the producers. Ali Al-Kalthami and Todd Nims, co-producers of Almost, first met when Nims was being interviewed for an earlier project (HOME - The Aramco Brats’ Story). Al-Kalthami was working as a translator for Al-Arabiya, where the two hit it off almost immediately. The two said they realized they had an opportunity to combine their two separate passions. The first being working with young

Saudis; and second using comedy to create a TV series with global appeal. The sitcom, directed by Nims, follows four young Arab boys living in Riyadh whose vivid imaginations crash after they come to terms with the harsh reality of real-life in the capital. In order to change their fortunes, one of the characters decides to enlist the help of a magic cucumber which he uses to hypnotize people while singing. The cast of Almost is made up of local residents giving it an interesting twist. All filming for the pilot took place in the Riyadh; however Nims said they have plans to film in the eastern provinces. Interestingly enough its unconventional appeal was born out of a somewhat unconventional brainstorming place. “It came up while I was driving five months ago with my co-producer Todd, and we’re still developing it until this day. There is another project but I rather to keep it to our crew, but I can tell you it is as unique and
creative as “Almost”.” Given Saudi Arabia’s reputation as a difficult place to film, Al-Kalthami said while on location there were few problems. “We didn’t have any problems but it wasn’t easy.” Al-Kalthami said. “It took a lot of work and effort to finish the first episode, bearing in mind that we shot it in seven different locations.” The next thing for the group is to find investors and get their project off on the running start they’ve built up for themselves.

Not so long ago finding a decent book was near impossible in Jeddah. In recent years libraries have been popping up across town and demand for books has steadily begun to increase. My Library is the first library in Jeddah to be opened by a group of nine working mothers. At first starting each mother brought 20 new books, the collection now ranks upwards of 10,000 books. For a minimal fee of SR500 per year, a family can get unlimited book rentals. “We wanted to make renting books as easy as possible,” said Sherry Naseef, one of the founders.

The library color scheme and design is appealing to children as well as mothers. “We chose purple for knowledge and wisdom and orange for creativity and self-

TechTamer’s Gadgets
Hi, TechThamer here. I love gadgets and new technology designed to make everything a little bit easier. From Star Wars toasters to the latest smartphones, I’m all over it. If it blinks, bleeps or whistles I’ve probably seen it and played with it a little. Here’s a small selection of stuff that’s caught my eye this month.
LZR Aquabeat 2GB Underwater MP3 Player - SR 1,200 What would fish use if they wanted to listen to their iPods? Well if they had pockets to hold them they’d probably check out the new LZR Aquabeat Underwater MP3 Player. Designed specifically with active people in mind (and fish with pockets) it’s built to be compact with a sleek and sophisticated look in LZR Racer colors. The MP3 player works safely up to 3m underwater and should you drop it by accident it’ll float to the surface. With a 2GB built in memory its simple to use and has large ergonomic buttons, which make it easy to use while swimming.

Korg Nano Digital Music Controllers– SR600 Now that the laptop has become the new desktop it’s tempting to do everything on the go. But try composing or editing music while enjoying a latte at Starbucks and you’ll find yourself seriously lacking in the tactile input department. There’s a reason why musicians generally need racks of equipment at their disposal... you just cant play music so well with a keyboard and mouse. The new Korg Nano Digital Music Controllers aim to remedy this musical dilemma by providing three different portable USB versions of common musical input devices that fit perfectly with your laptop. The nanoKEY gives you a mini velocity sensitive keyboard. The nanoPAD provides you with velocity sensitive drum-pads and a Kaossilator style x-y control pad while the nanoKONTROL gives you nine faders, nine knobs and eighteen switches for your mixing pleasure.

Samsonite Trolley Luggage with MicroScooter Whoever invented luggage really never thought how boring dragging a suitcase behind is. It’s about as fun as watching erosion (and not even good erosion). Ever thought of riding your luggage? No? Well someone at Samsonite did apparently and I want to high-five whoever that person is. Instead of being weighed down by your 50 pairs of socks and sunglasses you can now whiz by slow people with normal boring luggage. Just make sure you don’t wipe out and scatter your 50 pairs of socks across the airport. Although when folded down it looks small enough to count as carry-on. It’s still really new so I can’t tell you how much it costs or how user-friendly it is.

The awkward feeling and difficult to use Sure Press technology that had you actually pushing your screen like a keypad has been left behind thankfully giving this phone a more streamlined feel. It’s also packed with wi-fi features including a 3.2 megapixel camera, GPS and a full HTML browser.

Desert Sea Project AWARE Cleanup Day
By Hans Sjoeholm
Despite a day of rain and flooding streets participants risked flooded streets and heavy rain to lend a helping hand at cleaning up, the sea. Started 24 years ago by the Ocean Conservancy foundation and later partnering with the PADI Project AWARE foundation, the project aims to “(conserve) underwater environments through education, advocacy and action” according to projectaware.org. 56 DESTINATION JEDDAH
Every year dozens of divers flock to the Desert Sea Divers port in the early morning to help keep Jeddah’s most prized asset clean for the rest of us to enjoy. This year was no different divers from around the Gulf and the Middle-East as well as Africa, Europe, Asia and the Americas all eager to clean-up the stressed reefs around Jeddah that are suffering from our insensitive lifestyle. For 11 consecutive years DSD has taken the initiative to host this clean up campaign sparked by the exemplary leadership of Abubacker Panichal, together with his dedicated staff. Abubacker always stresses that we are fortunate to have the Red Sea as our working area and we have to take initiative to save and sustain the environment that we are making a living from. Jamjoom group was the main sponsor for the event with Husam Agha, of the perfume and luxury department on hand to provide necessary material, shades, food, beverages collection materials and extra support staff. Plastic may not be much of a bother to you and me but when Eastward winds pick up and blow, large quantities of plastic are blown into the Red Sea and the ecosystem can suffer tremendously.
DESTINATION JEDDAH 57
Damage can range from fish and other aquatic life like Sea Turtles ingesting plastic and then possibly choking to death. Floating plastic can land on coral and prevent coral from feeding on the plankton they need to survive. By bringing up plastic bags and litter out of the sea we are only attacking a small symptom of a much larger problem.
The cleanup time was cut short with the Coast Guard cautioning that severe weather was on its way again and all diving needs to be completed by noon.
The solution would be to start using reusable bags made of cloth, avoid littering the outdoors, eliminate plastics and make the general public aware of what is happening to an extremely valuable resource.
This garbage snares marine turtles, shells and even moray eels that have faced death in floating garbage.
To bring on an extra challenge and fun for the volunteers the cleanup was organized as a competition in three categories with the focus on bringing up plastics, aluminum cans and wood. The categories ranged from: most peculiar, the most collected and the biggest item. The still undefeated Mohammed Al-Laz found a toy helicopter winning the prize for the most pecular. Hiro and a team of Japanese divers found a garden set of plastic chairs and tables winning them the prize for the most items collected. Lastly, the DSD boat crew recovered a children’s slide which was floating in the Abhur creek, probably from the heavy rain. 58 DESTINATION JEDDAH
The amount of garbage collected in only a couple of hours was astounding, heaps of plastic trays, cutlery, cans, illegal fishing nets, building materials and fishing lines.
During Earth day last April, The Saudi Environmental Society hosted several educational seminars and also cleaned up the desert from plastic and trash in the North Obhur area. As part of the education campaign several schools and youth organizations as well as help centers and the Jeddah municipality joined in.

Melange: Rich with taste & design
Located on the second floor of the Food Court center at the beginning of Tahlia st. Melange is a fusion of mediterrean and european cuisine.
With a Portugese chef on hand, the menu is littered with rich Iberian dishes as well as a mix of several of other dishes. What makes Melange different is its setting. With walls that soothingly change colors and a rich interior laden with rich lattice work and lush dark furniture. The outdoor seating area is the real pleasure of Melange. Now that Jeddah’s weather is cooler for the next few months, sitting outside, smoking some sheesha and enjoying the cool breeze and a cool drink is a real treat. Melange’s menu has a little bit of everything for everyone from steaks to salads to rich deserts. The Pain Perdu is something you should try should you wander into Melange. Its rich caramel flavor and the texture of the desert is unparalleled. Location: Next to Capo Grillo on Tahlia st. Tel: +966-2-6695619

Goodies: Restaurant. Delicatessen. Market.

A longtime favorite of Jeddahwis, Goodies is the perfect place for family dining and now has a new place to enjoy its delicious menu. At the bottom of Stars Avenue facing Malek road the experience is even more enjoyable with one of the best ambiances in Jeddah, both fresh and lively in a space designed to resemble a market. Stalls fill the space with different kinds of olives, pickles, herbs, sweets, fruits and vegetables. If you want to enjoy something sweet there are several bars of fresh fruit juices, ice cream, coffee and a variety of Arabic pastries. Whatever you order, you can’t go wrong. The selection at Goodies is always fresh and delicious, added to the fact that the selection is always large and varied, you’re sure to find something to please you. One of our favorites has always been the seafood selection because of its freshness and taste. The Hamoor fillet with its several sauces makes for a superb meal as well as grilled shrimps smothered in teriyaki sauce. Finish off the meal with some pomegranate juice and some pistachio ice cream and you’re sure to be satisfied by the end of the evening. Portions at Goodies are always very generous so if you have a small appetite we recommend ordering appetizer and sharing your main meal. Great value for your money, quick service, and a very friendly staff, all in all Goodies ranks one of the top casual dining in the city. Location: Stars Avenue facing king road Tel: +966-2-2754527

Tony Roma’s:
Steaks, salads and then some
Made famous with it’s flame-grilled award-winning steaks, the American chain first made a name for itself by pioneering the concept of Baby Back Ribs. Serving a widerange of goodies from Boneless Buffalo Bites, to exotically garnished salads, to menu staples like big beefy burgers. Started in 1972 by, you guessed it, Tony Roma; the chain prides itself on its authentic and juicy grilled delicacies the branch in Mall of Arabia is faithful to its namesake. With burgers rich in taste and thick juicy steaks, Tony Roma’s is ideal for a tasty meal while on a quick break from that marathon shopping spree you got dragged into. The advantage Tony Roma’s has is its smaller location. Instead of serving 30 tables, the location has only a dozen places for customers giving waiters more time to spend with each table. Roody’s: Hefty meal on-the-go! A new take-away style Lebanese restaurant opened recently in Al-Shatee district, offering the usual affair of Lebanese appetizers of humus, stuffed grape leaves, soups and salads. In addition to appetizers the main meal is rich with grilled meats and a variety of stews. Not forgetting their shawarmas and the wide selection of sandwhiches from cheese to kebabs to liver and sausages. Befitting any place claiming to be Lebanese, large drums spin several different kinds of freshly squeezed juices. For SR28 the daily dish is a great offer, giving you a choice of a soup, an appetizer, and one main dish with a side order of rice as well as a dessert. The offer is ideal for students, singles and businessmen looking for a quick bite to eat. Roody’s offers a free delivery option. The interior has no family section but the seating area that is available is modest. Location: Across from Al-Shatee Souk Tel: +966-2-6919126 Free delivery: +8007555544 66 DESTINATION JEDDAH

Mugg Bean:
Great food, great service, great place
Why this franchise never chose to expand is beyond me. By far one of the best chains in the city, Mugg & Bean delivers on both ambiance, service and quality of food. With a broad ranging menu likened to that of a coffee shop in an early 40’s style of Americana, the place is brandished with signage and decor from another century. Although images of San Francisco and images of middle class workers dot the walls, the brand is actually South African. “It is neither fast food nor casual dining,” reads the Mugg & Bean Web Site. That much is true. While offering a range of coffee but also rich and delicious items like flapjacks (pancakes for the rest of us) Mugg & Bean is a treat for anyone. So much so that there is an actual part of the menu labeled comfort food. Its non-classifiable classification works as far as it not having a target market which helps in making it seem less pretentious than other restaurants which try and do too much too fast with making customers feel comfortable.
Located inside Serafi Megamall it provides “the perfect refuge from a busy days shopping or a quick break from the office.” While both are true, many Jeddahwis simply go out of their way to get some of their delicious breakfast platter, with rich creamy eggs and fresh Salmon to their rambunctiously delicious milkshakes. If you want good food without breaking the bank but having it at least taste like you are, check out Mugg & Bean. Location: Serafi Megamall. Ground floor, Tel: +966-2-657333 - ext 334

In our mystery diner review of Fuddruckers last month, we commented on the standards of the chain. Management at the Arabian Food Supplies objected to our review and wanted to voice their response. As part of our mission as a community service to Jeddah, the Mystery Diner section aims to make restaurants improve on the product they bring to us. Fuddruckers is one of our favorite chains since it has grown with Jeddah over the last decade as one of the best-known international chains in the Kingdom. In this issue we want to bring you their rebuttal to our comments about the quality of the food.

Beautiful packaging, delicious chocolate indulgence and a variety of flavors. Anoosh has it all. Although it functions as a dedicated chocolaterie, it has become famous for its mouth-wateringly soft chocolate chip cookies. Ashoriah
SHATER Shawarama’s for everyone Located just opposite Gold Moor Mall, Shater caters to the shawarma lovers of Jeddah by offering the usual and expected selections of falafels, shawarma and other favorites as well. It’s bright and colorful interior gives this place an advantage of looking more professional than your average corner eatery. Bright orange and cool browns fill the space with rows after rows of metal chairs for customers. The entire place is taking the idea of shawarma eatery and bringing it to another level, one thats more precise and more professional. Behind the counter up to six employees scurry around operating different stations: slicing meat, chopping up vegetables, filling sandwhichs, so you won’t be kept waiting too long for your order. English menus are obviously absent but the staff have a working knowledge of English so making an order isn’t too complicated. Overall Shater is working to make local cuisine something more than it already is, despite their food being rather slim on the taste-side it’s still a place worth visiting. A traditional dessert served for breakfast on the tenth day of first month of the Hijra calendar, Ashoriah is famous in most of the Arab world particularly Egypt, Syria and the Hijaz region.
Ingredients
1 cup whole wheat grain, washed and soaked in water over night 6 cups water ½ cup dry garbanzo beans soaked over night ½ cup dry white beans soaked over night ½ cup milk (optional) 2 tbl spoon rose water 2 tbl spoon kadi water 1 cup sugar ¼ cup pealed pistachios ¼ cup pine nuts ½ cup 2 hours soaked raisins ½ cup soaked and pealed almonds
Preparation Method: 1. Drain the whole wheat grain and place in a large pot, add water, cover and let it boil for 1 hour. 2. In another pot, boil the white beans until cooked, the same with the garbanzo beans. 3. Add washed and drained garbanzo and white beans to the wheat pot and continue cooking for another 15 minutes or until wheat and beans are fully cooked (add water if necessary). 4. Add milk, rose and kadi water to pot. 5. Add sugar and ¾ of all the remaining ingredients (pistachios, almonds, pine nuts and raisins). 6. Cook and stir for 10 minutes or until mixture is thick. 7. Pour mixture in individual serving dessert glasses or in one large bowl. 8. Add remainder of nuts on top as a garnish. Refrigerate and serve cold.
Mystery Diner Prosciutto Ravioli
By Isabella’s Ristorante Italiano Isabella’s is proud to present to you one of the
first of many authentic Italian recipes we will be presenting to you in Destination Jeddah. Our
introductory dish is a meatless ravioli recipe for
6 servings that will add a flavorful Italian taste to your dining room table. L’amore di cucinare!
Ingredients
1/15 ounce container of whole milk ricotta cheese 1/10 ounce package of frozen chopped spinach, thawed, squeezed dry 4 ounces thinly sliced prosciutto, chopped 2 large egg yolks ¾ teaspoon salt ½ teaspoon freshly ground black pepper 48 square wonton wrappers 1 stick of unsalted butter 1 ½ teaspoon dried oregano
Freshly Grated Pecorino Cheese
Whisk the ricotta, spinach, prosciutto, egg yolks, salt and pepper in a medium bowl till blended. Place 1 tablespoon of the ricotta filling in the center of a wonton wrapper. Brush the edge of the wrapper lightly with water. Fold the wrapper in half point to point, enclosing the filling completely and forming a triangle. Pinch the edges to seal. Transfer the ravioli to a baking sheet. Repeat with the remaining filling and wrappers. The ravioli can be prepared up to 2 hours ahead and refrigerated. Bring a large pot of salted water to a boil. Cook the ravioli in batches until tender, stirring it occasionally, 4 minutes per batch. Transfer the ravioli to a large bowl. Melt the butter in a skillet over medium heat. Add the oregano and stir for 1 minute. Season to your tasting with salt and pepper. Pour the oregano butter over the ravioli and toss gently to mix. Sprinkle with the Pecorino cheese and serve.
Yet again another new feeding ground for the hip and trendy has opened its doors to the public in Jeddah. The current restaurant fever in J city continues to elevate at high temperatures, implying that the economic crises has had no impact on restaurant growth in the area.
Nosh Lounge, a new restaurant on Hiraa Street, provides its goers with an interesting atmosphere encompassing warmth and impressive decorative touches. The outdoor area on the roof, a must see, boasts a Moroccan style set up with dim lighting. Very cozy. Unfortunately, Nosh has followed a trend that has been common among many newcomers in the local industry. It seems that great emphasis and energy was put into the atmosphere and decorative aspects of the restaurant with a major derail, however, from the quality food track. The restaurant has a SR 150 minimum charge for those being seated. This is understandable, but only when the quality of food has reached a certain standard. Nosh has definitely not met the SR 150 minimum charge standard when it comes to fine cuisine. The food lacked taste in most dishes, including the Jumbo Shrimps, Mixed Appetizer Platter, and Chicken Sandwich, as well as the Ravioli Dish. Considering the minimum charge, which puts Nosh in the price range of restaurants such as Toki, Bice, Bubbles, etc.. the food was average with the mixed appetizer platter ranking significantly way below average. The majority of the staff was courteous, the hosts were generaly very polite and smiling, however one individual really took the prize for obnoxiousness and outrageousness. The mentioned host was extremely rude to my guests and I when we had an unexpected addition to our table, he did not seem to like it and decided to share his grief out loud with the rest of the guests. Such a person is a major liability to any serviceoriented establishment. Overall the decor is interesting but the food needs to improve drastically. The potential is there and I am confident that the management will work out the kinks in quality, especially since excellence is what they are obviously aiming for. As of my last visit Nosh gets a 4 out of 10. DESTINATION JEDDAH 71

Hala It’s known worldwide that pronunciation is one of the most challenging steps in learning different languages. For example, Arabic has many dialogues, slangs and accents. Some of these dialogues can’t be understood by all Arabs. The most common dialogue is the Egyptian dialogue and the Lebanese dialogue. In this article we will try to show our reader some of the Traditional Saudi dialogue. To illustrate that, we added a picture of a throat to show the pronunciation of different Arabic Letters.
