Celebrations! On September 23rd, Jeddah celebrated National Day with typical Saudi spirit! Tens of thousands of young people took to the streets, faces painted in green and white, waving flags and celebrating to the music blasting out of their cars, policemen gave away roses, and street vendors sold flags on streetcorners, fireworks and cultural activities took place around the city all through the weekend, and the shopping malls were jammed. Celebrations creates awareness and it was apparent that our youngsters now have a deeper appreciation of their culture and heritage which created a sense of pride and unity. Let us carry on the celebration to October, but this month we want to create awareness about the serious disease of breast cancer. Year after year we witness efforts to bring this issue to attention. This year’s inspirational event is being organized by HRH Princess Reema bint Bandar, the Al Bidayah Breast Feeding Resource, and the Zahra Breast Cancer Association. On October 28th they are planning to break the Guinness World Record for the largest human formation, and we at Destination Jeddah would like to take this chance to encourage everyone, men and women, to support this initiative. Join this human formation and wear a pink item on that day...but if you can’t attend the event, why not come up with your own creative way to show your support for this worthy cause by passing out pink ribbons at intersections (like passing out dates during Ramadan or flags during National Day). Retailers can decorate their shops in pink and have donation boxes, or give discounts on pink items like some stores did during National Day, restaurants can donate a percentage on that day, bakeries can give away a pink cupcakes with purchase, etc. The ideas are unlimited... let us join together, be creative and do something positive to showcase Jeddah spirit! Touched By Cancer
We asked our readers to share the lessons learnt from their cancer experiences. Two of my aunts, my mother-in-law & my sister-in-law are all breast cancer survivors! I think a positive attitude played a huge role in their success story - you have to have hope & believe that you can fight cancer. Then you have to aggressively search for the best treatment appropriate for your cancer. The whole family has to be positive! Nahid M.
My mother & my sister have battled breast cancer. Their example has inspired me to support cancer awareness. It’s so important to get our governments to fund cancer research & early detection programs, especially in rural areas. Hamid H.
Sadly, I’ve had two cancer cases in my family - my aunt & my cousin. While my aunt was able to beat the cancer because she caught it early on, my cousin wasn’t as successful because the treatment was left until the last stages. It’s important to get regular check ups, because catching it in the early stages is the best thing you can do for yourself and your family. Lina A.

Avon & Zahra Breast Cancer Association “You Are Beautiful” program
“Be beautiful” is the message from Avon and the Zahra Breast Cancer Association to breast cancer survivors. These two organizations held the first ever “You Are Beautiful” training program recently in Riyadh for breast cancer survivors during and after their chemotherapy. The program teaches these women how to take care of their delicate skin and how to use cosmetic products to enhance their natural beauty. Avon sponsored the program by giving out free Avon cosmetic products to all the patients! Avon hopes that many other Saudi cities will follow Riyadh’s lead and start a “You Are Beautiful” program, too.

STC’s persistent billing errors...again!
Sorry STC, but we have to draw attention to the multiple billing mistakes and deplorable customer service so many people suffered from over the past 4 months. Even after informing the service department of their travel plans and requesting a turn-off of service, even after removing their SIM cards, even after physically turning off their phones…people still received astronomical bills! Please resolve this issue so that future travelers don’t have to waste hours with customer service trying to sort out their bills – we thank you. Otherwise, hello Mobily!

Smart Answers to Stupid Questions (AKA Everything You Always Wanted to Know About Jeddah But Were Too Embarrassed To Ask…)

Whether you’re a seasoned local, experienced business traveler, or first-time visitor… there are probably some questions which have been lurking at the back of your mind, but which you’ve been too embarrassed to ask. Well, wonder no longer – we’ve taken the plunge for you and tracked down the vital answers to those niggling questions. As the saying goes, “There’s no such thing as a stupid question.” (Even if your friends would definitely have rolled on the floor laughing if you had ever dared to ask these.)
•Why do my sunglasses fog up every time I step outside? • Going from the arctic air-conditioned interior to the moist humid outdoors causes rapid condensation on your cool glasses. We suggest the simple, cheap home remedy of washing your sunglass lenses (both sides) with soapy water. Allow to dry, then gently buff off the excess soap scum. Your glasses will appear slightly dirty…but this will successfully prevent the ‘fogged-up sunglass syndrome’. We’ve heard that rubbing on the starch from a freshly cut potato also works. Or buy 2 pairs of glasses – leave 1 in your car for outside use and carry a 2nd pair for cool, inside usage. • Help! I’ve been trapped on a roundabout for the past 2 hours…how do I get off? (Sent from my Blackberry) • We sympathize with you. Be bold, don’t hesitate, and most important, never show fear – just forge your path through the traffic as if you were wearing blinders. This is one time where it’s an advantage to be a woman…they are chauffeur-driven everywhere! 8

• Can I drink the tap water? • 9 out of 10 Jeddahwis do not drink the tap water. Use bottled water for drinking, cooking water for cooking, and tap water for everything else. Of course you’re welcome to try the tap water…let us know how you feel next month, ok? • Is it safe to use a local taxi? • Of course it’s safe to use the local taxis! They’re cheap and numerous – usually driven by Pakistanis or Bangladeshis, most of them do speak a little English or Arabic. But try to
master a few basic words of Arabic to smooth the channels of communication. • Do they keep pigs & alcohol in the AlHaram Center? • No! The Al-Haram Center is a shopping mall, not a place where forbidden (haraam) items are gathered together. • Can I go swimming in the Red Sea? Where? • Taking a dip is usually done in Obhur/North Jeddah. Try to get invited to a private beach resort. But there are public beaches dotting the coastline. The water’s lovely – jump in!
• Does anyone use street addresses? • Jeddah is a visual city – keep your eyes open for landmarks and roundabouts in order to master the art of getting where you need to go. “Turn right at Al-Baik” is one of the most frequently heard phrases when giving directions is concerned. • Just a comment – not a question. I think it’s such a thoughtful gesture that bathrooms come supplied with individual drinking fountains…those spray nozzles are so easy & refreshing to use – thank you!
• Why do the stores close whenever I want to go shopping? • Umm, you are in a Muslim country where the stores observe the 5 daily prayers…that’s why they close for prayer breaks at noon, mid-afternoon, sunset, and evening. Check the DJ website or the daily paper for prayer times & plan your shopping accordingly, or do as most smart shoppers do – shop between 9-11pm. • When do I use the ‘0’ in phone numbers? • Ok – we don’t blame you for being confused by the phone system. All cell phone numbers begin with ‘05’ – but you do not use the ‘0’ if calling from outside Saudi Arabia (the ‘966’ country code replaces the ‘0’.) Otherwise all calls to cell phones require the ‘05’. Landline to landline calls do not need either the ‘05’ or ‘02’, but all mobile to landlines calls require an ‘02’ prior to dialing the 7-digit phone number.
• AAAHHHH – STOP!! DO NOT use the bathroom sprayer (also known as a ‘Muslim bidet’) to drink from – it’s meant for something else entirely. Umm, think of personal hygiene and keep it pointed downward. Yuck – you’ve made us cringe in disbelief – you haven’t really been drinking from it, have you? Do you know where it’s been?? In Islam, washing with water after using the bathroom is required.

Happenings KAIA HOLDS YOUNG PROFESSIONALS PROGRAM : King Abdul-Aziz International Airport in Jeddah has begun a number of training initiatives in cooperation with GACA and Fraport as part of a training and capabilities development program. One of these initiatives is the Young Professionals Program, which trains talented staff members to occupy leading positions at the airport. As part of the program, they are sent to Fraport headquarters in Frankfurt Airport in Germany for three to six months to work on individual projects and to receive general management training. DAIHATSU CONDUCTS FIRST SPORTS POLL : Daihatsu declared the results of their 6,000 person questionnaire on the popularity of football clubs in KSA at a grand ceremony hosted by the famous journalist Batal Al-Quos. Stars of the top six clubs also attended this event, including Mansour Al-Ahmed from Al-Hilal, Ahmed Jameel from Al-Ittihad, Fahad Al-Hiraifi from Al-Nasir, Ameen Dabu from Al-Ahli, Hatim Khaimi from Al-Wihda, and Saeed Al-Owairan from Al-Shabab. Daihatsu Exec. Dir., Eng. Adel Ezzat, said that the aim of the questionnaire was to support sports by providing accurate statistical information for companies interested in investing in the Saudi football scene. ORPHAN’S IFTAR AT HILTON : The Jeddah Hilton Hotel hosted over 40 orphans from the AlBhir & the Dar Al-Zahra Charity Organizations to a children’s dream iftar at Al-Safina restaurant. The children enjoyed the specially tailored menu of mini-shawarmas, hamburgers, pizza, and chicken nuggets followed by a ‘make-yourown ice-cream sundae’ station. The Hilton undertakes this annual event as part of its social responsibility and community outreach program – well done!

WALEED ATTALLAH DESIGNS NOW IN JEDDAH : World-class fashion designer Waleed Attallah recently opened a fashion house in Jeddah under the sponsorship of HRH Prince Fahd Bin Miqran Bin Abdul-Aziz Al-Saud as part of the Radar Group and the AMH Collection. The opening ceremony was attended
by Abdullah Hazimah, the president of the group, ministers, ambassadors, businessmen, and the press. HRH Prince Fahd expressed his admiration for the designer’s work which embodies the magic of the East and the modernity of the West.
THE TEA GATHERING : Salma Redwan, upcoming Saudi designer, realized her dreams of fashion after a successful trip to Turkey where she discovered new fashion garment production factories. OIC GOING GREEN WITH NAQA’A: A Memorandum of Understanding between the Organization of The Islamic Conference and Naqa’a Environmental Enterprise was signed for a new project called “OIC Going Green”. According to this agreement, Naqa’a will implement green practices in the OIC, beginning with recycling paper waste and incorporating future green practices. Naqa’a
is a start up social enterprise established by distinguished Dar Al-Hekma College graduates Mona Othman, Norah Magraby, and Muna Alamer. Besides providing smart waste management solutions, implementing recycling programs in organizations, and raising environmental awareness, Naqa’a also introduces innovative green products to encourage a green society.
CELEBRATING COMEDY IN THE KINGDOM : Rowad Media and Cast & Crew Café sponsored the First International Comedy Award Ceremony - a follow-up event to the actual comedy festival which was held in Abha. Organizer Mamdouh Salim thanked his fellow planners who all pledge to expand this event in order to continue to attract the best comedians from across the Arab world. Video highlights of the festival ensured that the audience could experience the talents of the various groups who performed at the Abha event. The ‘Muftah’ (Key) award remains the coveted accolade for aspiring comedians. BRIGHT AND SPIRITUAL EXHIBIT: Talented Riyadh artist Nina Amin had an exhibition of exquisite oil paintings titled ‘Bright & Spiritual’ at the Elegant Home Showroom on Rawdah St. Her elegant calligraphy combined vibrant colors and circle/sun motifs to create a visually stunning collection. The bold color palette of deep reds and blues contrasted nicely with the gleaming gold images and artistic calligraphy. A portion of the proceeds was donated to the Pakistan Relief Fund to assist victims of the recent floods.

The day is September 23. The color du jour is green. The occasion? Saudi National Day! September 23 marks the unification of the Kingdom by King Abdul Aziz in 1932. It was officially recognized as a national holiday in 2005 and has been celebrated with great enthusiasm ever since.
It was amazing to see the outpouring of patriotism that Saudi National Day inspired in Jeddah residents this year. Driving down Tahlia Street or the Corniche, it was clear to see a whole new level of ‘Going Green’. Young Jeddahwis donned green wigs, painted their faces green, used the Saudi flag as a cape, and hung halfway out of their cars singing the national anthem for all to hear! Not to be left out of the fun, young Saudi women’s subtle accessories were also on display; a green bracelet here, the Saudi emblem there – it was all part of the September 23rd celebration. It was clear to see all the expressions, both big and small, of the many ways that Saudis love their great country.

Saudi Arabia... really? This was the first thought I had in the spring of 2009 when my husband told me about a job offer he’d recently received. A recruiter from King Abdullah University of Science and Technology (KAUST) had contacted him, and asked him to apply for a position in the Visualization Lab. The next thoughts I had: won’t it be too hot? Will I have to cover myself from head to toe? Will I make friends? Will I be safe? Will I find my favorite clothing stores? Will I find food I am used to? Will I be able to drive? Where on earth is Jeddah? What is this KAUST place all about? Commence the Google search. I desperately poured through every ounce of information I could squeeze out of resources like Wikipedia, blogs from those who were living in Jeddah already, and books like “Lonely Planet.” It wasn’t long before I realized that moving to Saudi Arabia would be an incredibly interesting and unique experience. To be sure, Saudi Arabia is veeeery different from the United States, but this promised to be an experience that I simply could not pass up. Fast-forward one year... my own oneyear anniversary and the official one-year anniversary of the opening of KAUST are quickly approaching. My husband and I have just returned home from a trip to see family in the US. Did you catch that? Sometime during the past year (I don’t remember when) I began referring to KAUST as home. We’ve settled in to our new surroundings nicely. My husband likes his job, and I’ve found interesting work as the Administrative Assistant for International School Services at our KAUST School. We’ve made many new friends and continue to make new friends from all around the world as more people join our beautiful seaside community. And we’ll be making our own little addition to the KAUST population when our first baby is born in November!
I’ve recently been reflecting on my prior concerns about moving here and see that many of my fears were unfounded. It is pretty hot, but you get used to it... arctic temperatures inside offset the sticky inferno outside. I do have to wear the abaya off the compound, but it’s great for hiding the weight I’ve put on during my pregnancy. Do I feel safe? Yes, very safe, unless I’m riding in a car off our compound! You really take your life into your own hands when driving here. Actually, since I’m a woman and am not allowed to drive in Saudi, my life is in the hands of the male behind the wheel! Luckily, shopping is one of the favorite past-times here, and I’ve been impressed with the great assortment of stores, although one blaring inconvenience is not being able to try things on. (I’ve made many a trip to mall bathrooms to try on my purchases... balancing delicately in tiny stalls trying to keep the clothing from touching the wet floor, hoping desperately that the clothing will fit so I don’t have to do this again. But on the positive side – my balance has improved & I’ve developed a level of grace I’ve never known before!) There are some excellent restaurants in Jeddah, although as a former New Yorker, I can’t find any pizza that compares to the delectable slices you find on the streets of New York. Finally, I’ve learned that you’re only as bored as you let yourself be – the definition of ‘fun’ may be different here in Saudi, but a little creativity can go a long way. The people are warm & hospitable, even with the language barrier. I feel lucky and proud to be a founding member of KAUST and have enjoyed watching our community grow and mature. With double the number of enrolled students in just one year, I continue to be in awe of the success of this massive experiment. I’m very happy we took the plunge and moved halfway around the world to Saudi Arabia...really! DESTINATION JEDDAH 25

The Adventure Continues‌

Om Jersan Cave is the largest lava tube cave in the Middle East. Located in the Harrat Khybar Lava Field 204 kilometers northeast of Medinah, these caves were formed approximately 3-5 million years ago. The vertical openings, which allow access to the underground tubes, were created by earthquakes. The height of the caves ranges between 2½-11 meters and the width can be as much as 40 meters. 26 DESTINATION JEDDAH

Mahmoud Al Shanti is the offical cave guy, so he led the whole adventure since it was the first time for the rest of the team. Our intrepid group included Amir Habeeb Al Nashmi, Anwar Al Shanti Junior, Saleh Abbas, Jose Ortiz (our great friend and amazing cameraman), and myself, Ahmed Sahab. After a grueling 8-hour drive (including 6 hours of off-roading – ouch!) to the lava tube cave complex known as ‘Om Jersan’, we finally arrived at the magical midnight hour. Luckily our headlights alerted us to our destination as it’s basically a huge gaping hole in the lava-formed ground…I could imagine a sleepy driver simply disappearing over the edge! We immediately set up camp and tried to get a good night’s sleep before braving the cave depths the next morning.
With thoughts of all the possible mishaps which could surprise us (collapsing rock walls, getting disoriented and lost underground, and meeting wild animals such as wolves, hyenas, foxes, and bats), we sallied forth. The crude stone stairs we discovered on the side of the main opening were proof that humans must have inhabited these caves in a long-ag--o era – we also found evidence of rock carvings/engravings as well as rudimentary stone tools formed from the indigenous basalt. Mahmoud told us he had come across a human skull which was carbon-dated as 900 years old on an earlier visit! 28 DESTINATION JEDDAH
The longest tube cave is over 960 meters in length; the daylight quickly faded only 50 meters inside and we switched on our powerful torches. We came across amazing rock formations and a pile of bones from cows, camels, gazelles, donkeys, and sheep – all evidence that predators had dragged their victims into the security of the cave for feeding purposes. The most magical part of the adventure was when we switched off our torches and experienced the absolute darkness…just imagining how the early inhabitants endured these primitive conditions made us marvel at their courage! After 2 hours of exploring, we emerged from a small opening at the other side of the lava tube. We were grateful for the warmth of the sun on our faces after the chilly interior of the cave where the temperature averaged between 20-23C. This was definitely one of the most thrilling trips I’ve ever experienced – it’s a long journey, but well worth the time in order to discover its hidden treasures.

Global leader, popular media personality, lecturer, UN Goodwill Ambassador, businesswoman, mother… Muna AbuSulayman is truly a multifaceted woman. Adding yet another feather to her cap, she has, recently launched a fashion line of luxurious apparel called the ‘Muna AbuSulayman 2010 collection’. Destination Jeddah caught up with the Saudi style icon herself as she discusses her fashion vision. DJ: How would you describe your collection? Muna: My 2010 collection is for the elegant, trendy, cosmopolitan Arab woman. Think Queen Rania! Currently, we have about 50 different styles that were carefully designed and selected to allow for sophisticated variety in my client’s wardrobe. It is one collection per year in limited numbers. This ensures that the woman wearing Muna AbuSulayman will feel unique. DJ: You are known as one of the most popular hijab style icons and your collection makes hijab a more attractive option for Muslim women. In what way do you think your clothes will help dispel the myth that Muslim women live covered in layers and layers of cloth?

Muna: Many women want to be fashionable and trendy but can not spend hours shopping to find the right outfit and scarf combination. I want to make their search easier and more pleasant. DJ: What is your inspiration behind the designs? Muna: The inspiration behind many of the designs is modernity. I wanted to have clothes that would suit any sophisticated woman walking in downtown Milan, New York, or Jeddah. I also wanted to provide shawls and scarves for her, in case she covers her hair. It is not so much a hijab collection as a modesty and elegance collection. DJ: What are the highlights of the collection? Muna: I have worked very hard on creating an all-in-one concept cozy which has a shawl attached to work as a cover up when needed…it has many versions and uses, especially for the events that you want to be able to choose between covering up and not covering. With one flick of your wrist the scarf falls and becomes part of the shawl. Another is a special jacket that creates a very beautiful silhouette that is charming and slimming. As for the scarves, I have worked hard to source material that is cool and flexible, wearable, yet elegant. I have developed a special weave scarf/tarha for women that not only drapes gorgeously around the face to create an amazing frame, but that is also non-slip.
DJ: Your prices range from SR 2,600 – SR 7,500, can we expect anything in a lower price range? Muna: The Muna AbuSulayman collection is for the woman who loves fashion and wants quality clothes in her closet. I hope I can do another collection that is also quite sophisticated but not as expensive to give many of my fans a chance to purchase quality clothes at more affordable prices. DJ: Women here are impatiently waiting for your collection to hit Jeddah. Where can they see your designs? This fin is normally in the down position, retracted into a groove in the head, but can be raised to deter predators. They use this spine, along with the ventral spine, to lock themselves into coral heads or rock crevices when threatened, and once they do they are immovable! The colorful and varied appearance of the many different species of Triggerfish is a delight to observe. The Orange Tooth Triggerfish is a dark blue with a wide crescent tail and orange teeth. The Picasso Triggerfish looks like it escaped from one of Pablo’s cubist era paintings. The Titan Triggerfish has a bright yellow, crosshatched body, and a smattering of different colors, spots and wild designs around its lips, eyes and tail. have a distinct swimming style. They rarely use their tails to swim and instead rely on balistiform locomotion, keeping their body straight while undulating their dorsal and anal fins. They cruise around like a hovercraft rather than moving by contorting their bodies from side to side for propulsion. The Titan Triggerfish (Balistoides viridescens) is a courageous and bold denizen of the reef. Many brave and sensible men have avoided approaching the large fearless Titan Triggerfish, especially when Picasso Triggerfish Rhinecanthus assasi with an erect dorsalfin - endemic to the red Sea and the Gulf of Aden

it is nesting. Titan Triggerfish dig a cone shaped crater in the sand and line it with bits of stone and dead coral. After the female lays her eggs in the nest, the male tends to it diligently. He will fan the eggs by blowing a soft jet of water over them and stand guard like a pit-bull. The entire cylindrical area from the sandy cone to the surface of the water is considered the area of the nest. The Titan shows absolutely no fear when guarding its eggs and can attack seemingly unprovoked by biting or ramming fish, snorkelers or divers entering the nest area. Titan Triggerfish can accelerate for short distances at a fairly surprising speed, and its body is rock hard. Their protruding chisellike teeth, which are strong enough to crush shells or snip off pieces of coral, would make short order of tender ears or soft flesh. Keep a
safe distance from a Titan Triggerfish nest as a bite or bump may require medical attention. Threat postures include the Triggerfish facing the intruder while holding its first dorsal spine erect. The Titan Triggerfish will not always bite, but can swim at snorkelers and divers to escort them out of their territory. Other times you may find this creature trying to bring you away from the nest area by swimming in huge circles up to fifteen meters in diameter to attract you away from its nest. Making a horizontal swim away from the nest area is the best escape route. Swimming vertically will mean that you might still be in the nest zone. This courageous fish rightfully protects its nest by reacting to what it perceives as a threat to its nesting grounds - definitely a lesson for divers to respect the habitats of all fish.

Lovely seaside location makes this restaurant the ideal spot when you’re in the mood for casual al fresco dining. Dinner during the Eid rush was handled capably and professionally with plenty of courteous staff on hand to ensure that food was served promptly. Grilled shrimp and assorted mixed grill were especially delicious, but the outdoor atmosphere is the real star of the show.
Goodies Showing some heat
Still an all-time favorite, Goodies didn’t disappoint us over the Eid holiday. While some of the dishes didn’t live up to their usual high standards…the staff were quick to correct any errors and the overall experience left us feeling that the customer will always be satisfied after a visit to this restaurant. The open plan seating lends a social feeling while still affording diners privacy – kudos to the interior designers for taking a bold approach to family dining, Saudi-style.

Their excellent salads and seafood were especially welcome after the Ramadan feasting, perfect for a deliciously flavorful light meal. The overall experience was one of impeccable service, outstanding food, and great ambience, thanks to a recent interior redesign.

With the reputation as the most expensive Chinese restaurant in town, Toki sadly didn’t live up to its position. While the food retained its overall high-quality, the service and staff crumbled under the pressure of a packed dining room for Eid dinner. Reservations were mishandled, orders were fumbled, and the overall experience didn’t live up to the astronomical bill.

While their beautiful interior and elegant ambience endures during the rush of the Eid season, their food and service did not survive the crowds. Given the high prices, we expected a much higher quality dining experience with attentive waiters, prompt food service, and a higher level of customer satisfaction. Jean, the charming waiter, redeemed the evening for us with his personality which allowed us to overlook our culinary disappointment, however Melange needs to brush up on their ability to handle the high-season rush.

New York Cab Pizza When you’re craving pizza which is both amazingly delicious as well as surprisingly nutritious, then track down the New York Pizza Cab Co. in Mohammadiyah Dist. It may be off the beaten track, but luckily they are known for their speedy delivery service to all parts of Jeddah. They have the largest pizza I’ve ever seen in Jeddah – 45cm for only SR45 – enough for an average family of 4 or 2 extremely hungry young men. Since they only have pizza on the menu, it’s a good thing that their specialization has paid off. The pizza is available with the standard toppings – we tried the vegetarian option and it was excellent. The crust was perfect, neither too crispy nor too chewy, but just right. The toppings were fresh and tasty – overall, the pizza made me feel as if I was eating a healthy meal since it wasn’t too oily or greasy either. The New York Pizza Cab Co. may not be part of a huge franchise or a household name…yet, but for overall pizza satisfaction, it hits the spot!

She’airaeyah is a quick and easy dessert which often graces Ramadan tables, but it’s so delicious that many Jeddahwis enjoy it year-round. Believed to be a traditional Hijjazi dish, variations on this sweet vermicelli recipe can be found across the Middle East and Asia. Young and old adore this flavorful creation - it can even be topped with slivered almonds and raisins for a festive twist.
Ingredients
2 1/2 cups vermicelli 1/4 cup vegetable oil 2 tsps cardamom powder 1/2 cup sugar 2 cups water
Preparation Method: Dissolve the sugar in the water over medium heat. Separately, heat the oil and add the vermicelli. Keep stirring until it becomes golden brown, and then add the cardamom powder and the sugar water until it fully absorbs the water.

Seafood Bisque in Bread Bowl Ingredients Bread Bowl: Bake from scratch or hollow out purchased round loaf of bread. Seafood Bisque: 500grms mixed seafood (diced, sautéd / blanched) - reserve 2ltrs clear fish stock 100 grms leek & celery, diced 100 grms garlic, smashed 200 grms flour 5 grms dill leaves chopped 200 grms tomato paste 200 grms butter 4 bay leaves 1 cup fresh cream salt & pepper to taste
Preparation Method: Sauté vegetables and garlic in a large open pan with butter till golden brown, then add flour and sauté for further 5 minutes. Add tomato paste and sauté for a further 5 minutes prior to adding fish stock and bay leaves. Simmer for 1 hour and strain using a fine strainer. Now pour the soup in to the bread bowl, add the diced seafood, fresh cream, and chopped dill leaves. Your seafood bisque soup is now ready to be served with garlic toast!
Treat your sweet tooth this month to some rich, creamy, chocolaty… everything! At the Chocolate Bar, you’re spoilt for choice on how you want your chocolate: brownies, cake, truffles, milkshakes – they have the works! This café/restaurant has a full menu, but most people gather here for the sinful chocolate desserts in the stylish and trendy interior. A popular spot located in Rawdah Star, it’s easy to pop in for a sweet ending to your evening. The Chocolate Bar has a friendly buzz to it, and the service is very welcoming. Even though the place was pretty busy, the staff seated us promptly & our food arrived pronto. We began with the Chicken Alfredo and the Tuna Sandwich, which were both pretty good. Well, the Chicken Sandwich not so much – it was on the bland side and would have benefited from a jazzier sauce/spread. As for the cafe’s namesake dishes, we ordered the Chocolate Milk Soufflé and the Chocolate Brownie Lovers - both were just delicious! All in all, a great place to go to get more of what the doctor didn’t order.

The Exciting New Fast Food Joint Remember the stories of huge lines outside the first McDonald’s in Jeddah? You had to wait for hours to get your food. There was quite a buzz around the city that this gigantic international brand had arrived.
Well, a similar thing took place recently: Jollibee, a well-known name from the Philippines, opened a store in Jeddah International Market. Thousands went in the restaurant’s first few weeks of business. One thing was certain – they LOVED this place. Kids and families were taking photos with Jollibee’s iconic mascot: a big red and white smiling bee named Jollibee wearing a blazer and a chef’s hat. People were talking about it on their blogs and to everyone around them - they simply loved this place! So what’s the fuss about? Well, it all started with ice cream… in 1975, a young man by the name of Tony Tan and his
family opened a small ice cream parlor in the old streets of Cubao, Philippines. Sometime in 1978, Tan and his family engaged the services of a management consultant, named Manuel C. Lumba, who convinced them to shift their business focus from ice cream to burgers. Fast-forward three and a half decades, and now Jollibee is an American-style fast-food restaurant with close to 700 outlets in the Philippines alone! Jollibee has also gone global, opening up stores in several countries, including the U.S. So how did Jollibee beat the Americans at their own game? I’m sure the taste had something to do with it…

The
History of Hajj

Performing Hajj is a must for all financially and physically capable Muslims. The Prophet Muhammed (PBUH) first performed Hajj in the year 10 H/632 AD, but many of the acts performed in the pilgrimage come from Prophet Abraham’s (PBUH) time and are based on occurrences related to his and his family’s lives. For example, on the third day of Hajj, pilgrims throw stones at three designated pillars that embody the temptations of Satan. The throwing of the pebbles at the pillars comes from the story of Satan’s attempt to dissuade Abraham and his family from following God’s orders to sacrifice his son. The first pillar represents Satan telling Abraham not to kill his firstborn son, Ishmael. Abraham refused Satan and maintained that he will follow God’s orders. He then threw rocks to send Satan away. Then Satan went to Hagar, Abraham’s wife and Ishmael’s mother. He told her of Abraham’s plan to sacrifice their son, but when she learned that it was the order of God, Hagar complied with God’s wish, and she too threw rocks where the second pillar now stands at Satan to keep him away. Satan then went to Ishmael, trying to stir up thoughts of fear and hesitation. Ishmael, though, knew that the sacrifice was a divine order, and he threw rocks at Satan to send him away at what is the third designated 74 DESTINATION JEDDAH
pillar. When Abraham prepared to sacrifice Ishmael, God replaced Ishmael with a sheep for Abraham to slaughter instead. Another example is the traditions associated with Al-Safa and Al-Marwa. Prophet Abraham was commanded by God to leave Hagar and baby Ishmael in the desert area now known as Makkah. As time passed, Ishmael got thirsty, but Hagar was without provisions. In a desperate search for water for herself and her son, Hagar walked back and forth between the two hills, Al-Safa and Al-Marwa seven times. After her seventh trip, water surfaced from an underground spring now known as Zamzam. These stories tie present-day Muslims to a long, rich history of Islam which is alive and well in the current Hajj rituals. Learning more about the reasons behind the rituals will make the Hajj experience a thoroughly spiritual and educational experience.

Treatment
Millions of people die of cancer each year‌ yet many cancers have a 90% survival rate if detected early enough! A late diagnosis can reduce the survival rate down to a scary 10%, especially for lung cancer, ovarian cancer, and breast cancer. According to a 2006 study conducted by the Saudi Cancer Registry, there is a rising incidence of ALL types of cancer in KSA. Over 11,000 cases were reported in 2006 – this number is predicted to rise to over 30,000 in the next 15 years.
The most common treatments for cancer include surgery, chemotherapy, and radiation therapy. Newer, less physically invasive alternatives are under development, especially in cases where the side effects are often worse than the cancer itself. Targeted therapy, immunotherapy, and bone marrow transplants are just some of the avenues under exploration.

Everyone knows the shock of receiving an outrageously high electricity bill, but did you realize that the hidden costs are far worse than a drain on your budget? Although life without A/C can’t be seriously contemplated these days, Planet Earth and its inhabitants would all benefit from turning off the A/C on those days when the temperatures dip into a comfortable zone.
The worst side effect of over usage of A/Cs on the environment is from the release of hydro fluorocarbons – an essential component of most air conditioner units. A/Cs depend upon electricity to operate, and most electric plants burn fossil fuels – a major destroyer of the ozone layer along with hydro fluorocarbons, which in turn exacerbates the heat of the sun’s rays which reach Earth. So this selfdestructive cycle is actually worsened by the use of A/C, especially in hot climates which will eventually suffer even more with rising temperatures.
A common side effect of living with A/C is an increase in upper respiratory infections, especially amongst the very young and the very old. Health problems are actually exacerbated by abrupt temperature changes, yet we all move from A/C homes to hot exteriors to A/C cars to hot exteriors to A/C offices and shopping malls. Transitioning slowly between extremes is recommended. Finally, the impact of A/C on society cannot be understated – it has created a culture of isolation where people live behind closed doors and windows rather than freely sharing communal life on the street or through open windows.
