THOUGHTS TO
D PON
ER
Cut the Traffic! For as long as we can remember, one of the main issues we face in Jeddah is traffic congestion. At some point, although it was an inconvenience, it was somewhat bearable. Now however, it has become an intolerable situation and has also become the reason many people avoid going out to begin with! There are many reasons behind the traffic congestion in Jeddah’s streets, two of which are slow accident response from the police, and what seems like never-ending construction. Some possible solutions that will definitely decrease the number of cars on the road are safe and reliable forms of public transportation, and carpooling. If people were guaranteed a secure bus
journey from point A to B, you would be surprised at how much the number of cars on the streets will decrease. Using buses as a source of transportation will also save people time and money. If you still don’t like the idea of sending your children off on a bus with strangers, then consider carpooling. If you and a group of friends have your children enrolled at the same school, rather than sending them off in five separate cars, make a schedule and decide on who takes all of them together on specific days. By doing so, you will help decrease traffic congestion, and your children will enjoy the ride to and from school with their friends. If you think about it, it really is a win-win situation!
Thumbs Up to... Safe with Saher
Since the implementation of Saher in 2010, Jeddah’s streets have been more stress-free and pleasant. As a traffic control system, they have indeed fulfilled their objectives, which were aimed at improving and promoting safety on the streets by ensuring that the general public is following the traffic rules and regulations. They did so by installing radar and surveillance cameras throughout Jeddah’s many streets. Recently, cameras have been installed at each traffic light in addition to the main roads, in order to capture those who run red lights and as a result cause a threat in the overall security of people on the streets. We hope Saher continues to successfully minimize the number of accidents, and keep our streets safe.
Thumbs Down to...
Trucks Driving Like They Own the Streets
To add to the overwhelming traffic situation in Jeddah, trucks and water/sewage tanks don’t seem to have any kind of organized schedule, or at least certain hours per day in which they can get their jobs done instead of adding to the already existing traffic by taking up big spaces on the road during the peaks of rush hours. In addition, their existence on the roads is worrying! Due to their reckless driving, drivers have to be extra careful on the streets to avoid accidents and injuries. If you want to complain and make a difference, please do not hesitate to call Road Security (996).

Getting Behind the Wheel! Men! As soon as you decide to move to Jeddah, start thinking about the process of getting behind the wheel, which consists of a driving test, acquiring a license, looking at different cars, and much more! We decided to break it down for you into simple steps so it’s not too complicated. To begin with, you need to go to either Dallah or Mahjar with your ID, legal documents, and personal photographs in hand (tip: be there as early as you can to avoid crowds). Once you are there, you will have a learning test, in which you will be examined on your knowledge of road signs and signals. Then you will take a driving test which will determine your knowledge regarding driving. The results will be in the form of letters A, B, and C; letter A meaning you are qualified to go ahead and directly take the driving test, and letter C meaning you have to take more oral and practical driving lessons. Based upon your entry test result, you will be given certain classes in specific areas you need more development in. Also depending on the letter result, the classes you must take will either take a longer or shorter period of time. Once you are finished with the required number of classes, you will then have to schedule an exam date to take a driving test, both practical and oral, which will then determine whether you can or cannot attain your license. Assuming you pass the test, you will finally get your drivers license! 26 DESTINATION JEDDAH
Now that you have your license, you are halfway through, and after just a couple more steps, you’ll be on the road! When you think about owning a car, you have to consider factors such as the following: insurance, loans, income statements, modification shops, vehicle registration and ownership, and show rooms for pre-owned or new cars, among other things. Firstly, you must decide on your budget and payment method; will you buy a pre-owned car or a new car? Will you take a loan or pay for it yourself? If you are planning on getting a loan from the bank, you will need a quotation from the car company, and an income statement from your employer.
Now, if you want to purchase a pre-owned car, you can find the best deals at Al Haraaj, and other places to consider as well are preowned cars showrooms. An important tip to keep in mind when it comes to purchasing a pre-owned car is to make an advanced payment (regardless of the amount), and take the car to an authorized workshop and get it checked. Before you purchase any car, whether it is new or pre-owned, make sure you check the prices in the market in order to make an informed decision with no regrets. Also, check the status of the car thoroughly, both internally and externally. A final tip would be to try to negotiate with the dealer; you never know, maybe you can get a car for the price you want!

USEFUL ARABIC words
of a Domestic Beginner By Jawahir Al Faiz
Raising kids can make a parent feel dumber by the day. They’re smart…really smart and challenge rules with questions. While this drives me nuts, I’m secretly happy as I strive to raise thinkers, not followers. In the old days, children would happily obey with a skip in their step, but today kids want answers! Why is it wrong to eat sugar at night? (My midnight Hobnob ritual being exempt). Although I wish they’d pull up their frilly socks and comply in a Downton Abbey-esque “yes Mamma,” I like that they expect me to ask not tell. To borrow a term from a fave celeb Giuliana Rancic, my kids are “amazeballs,” but they aren’t special for being so inquisitive. Most kids of this generation demand reasons behind rules. I try to calmly discuss things with them, but sometimes I yell…and I’m a yeller; can yell louder than an Itti and Juve fan combined. But I’ve quickly realised it only creates short-lived fear, followed by indifference. My new ‘maidless’ status has thankfully shown me that giving them chores builds their independence. By doing everything for them, I’m enabling them to be disabled in the future. My inspiring mother tirelessly did all she could for her 6 kids, and it’s her strength I hope to inherit. Kids today, especially boys, should learn simple home keeping skills. Not only if they attend university abroad, but when married why is it normal to automatically have a maid move into a newlyweds haven?! I want to raise my daughter to be tough while preserving her femininity, and my son to be strong but having respect for women. At first, and being a boy, my son was not at all into doing his chores and prefers to play with the ‘toy’ of the generation, the iPad, while his sister brings him his snacks. He has, quite cleverly, created a game in which she’s a waitress and writes down then delivers his orders. (He did, however, conveniently exclude the notion of a bill). 28 DESTINATION JEDDAH

JEDDAH WHO’S WHO
Malak Mohamed Mahmoud Baissa By Yousra Elwi
Surprisingly, Jeddah has some astounding historical districts that haven’t got their fair share of attention or prominence; these districts hold substantial heritage and timeless authenticity that qualify them to be top touristic sites in the country, if not in the entire region.

Profile:
Who: Mayor of Al Sham Wal Mazloom District Age: 48 years old Family: Married and is blessed with nine children One of the most valuable districts in Old Jeddah is Al Sham Wal Mazloom; an area populated with around 40,000 persons, facing several infrastructure issues and has hidden treasures waiting to be revealed. District Mayor, Malak Baissa, talks to us about the challenges, plans and hopes; and from what says, we’ll make sure we keep our eyes open for this upcoming hot spot in the old town!
3. From your experience with the private sector, how much do you believe they can influence national development? Their involvement can help significantly! As with the dialysis for example, without these supporters it would have been very difficult to get this service for those who need it. Our projects have also been supported by Dalla, in providing healthy meals to residents, as well as Zamzam Association. Supporting residents is definitely needed and is highly appreciated, however we also need some support from the private sector when it comes to improving the infrastructure.
4. What are the key issues in Al Sham Wal Mazloom district? Lighting in the historical area is one of the most critical issues, however we are in the process of resolving it. Greening the area is also on my priority list, and maintaining this greenery for the 1. How long have you been the mayor of long term. Another initiative that I am very keen on executing is the Jeddah historical library we need to compile all the information and history we have in one place. I am also planning to launch an informative website to be a useful guide to the district’s visitors. 6. What are your residential plans? As mentioned before, getting rid of the illegals is a priority. I am also highly focusing on the infrastructure repair, like lighting, asphalting, drainage and general hygiene. We’ve actually run awareness campaigns for children in the district on hygiene and protecting public property. It has been ongoing since the past year, working with 400 children to raise their awareness on these issues; Lomar has sponsored this initiative, and some residents actually supported it, contributed and executed. 7. What are the key challenges you face when trying to achieve these plans? Bureaucracy is definitely a key challenge, as some projects are extensively prolonged due to the official routine and approvals. However, it is worth noting that the Jeddah Municipality is highly supportive and constantly works towards efficiently facilitating our initiatives. Another challenge is the maintenance and continuity of the projects; in other words, we may launch a great new project yet over time it gets neglected and is left without follow up, thus becoming an unfortunate waste. This is seen now with the renovated Corniche, it was executed beautifully, however there is no tourism police or any other official entity to overlook the place and ensure its protection. The last major challenge is the general awareness of the residents in issues like hygiene and communal development; however as previously mentioned, we are working on this by launching public social awareness campaigns. 32 DESTINATION JEDDAH

Riyali The Saudi Economic and Development Company (SEDCO) is a wealth management organization that is known for running its business based on Shari’ah (Islamic) law. The businesses they manage range from real estate and equities investment among others, both locally and internationally. SEDCO’s Financial Literacy Program “Riyali” aims to promote financial awareness among the population, by educating Saudis in terms of the necessary personal financial skills that will allow them to manage their finances and live comfortably at the same time. In order to ensure that this highly beneficial program will reach the majority of the population, in their first phase, Riyali targeted university students. The program was implemented at colleges and universities in the form of interactive workshops in the hopes of achieving their initial aim of reaching out to 15,000 students throughout phase one of the course. Statistics reveal that the program was highly successful and has positively affected Saudi youth’s behavior towards managing their finances. In fact, more than 80% of students stated that the Riyali workshops not only helped them change their perspective on saving, investment, and budgeting, but also improved their knowledge of investment by 20%, and of Zakat by 35%. It has been apparent that society lacks knowledge in the field of financial awareness; aspects such as budgeting, planning and management require more 38 DESTINATION JEDDAH

Research shows that before Riyali, only 11% of Saudi youth kept track of their expenses, 45% had not yet begun to save money, and most importantly, 90% of the youth were very eager to participate in programs that will increase their financial awareness and knowledge. Notably, after the Riyali workshops, student’s confidence level regarding becoming financially independent increased from 28% to 62%. Riyali proudly state that they have conducted their awareness workshops in leading educational institutes within Jeddah such as King AbdulAziz University, Effat University, Dar Al Hekma College, and the College of Business Administration. Historical District The Jewel of Jeddah By Mohammed Mirza
For a history aficionado, a trip towards the southern end of Madinah Road will prove to be an eye opening trip down memory lane. The Historical District, also known as Al Mantaga Al Tariqiya, is a historic gem amidst the modern metropolis of Jeddah. The whole area gives visitors a glimpse of the glorious past and the unique heritage of a city that is rich with tradition, history, and culture. Wandering around the district’s distinctive and tight-knit alleyways, which have been trodden by travelers and traders for centuries provides a memorable experience for visitors. Every turn, every passage in the maze-like district tells a riveting story. 40 DESTINATION JEDDAH
The area is almost like an open air museum as it has so much to offer to visitors. It carries a unique urban style reflecting Andalusia and Ottoman art, whilst preserving Arabic designs, especially in the architectural and decorative forms in mosques and residences.
Rawasheen
Most buildings in the district were constructed using coral limestone and adorned with intricately remarkable wooden facades known as Rawasheen. They are truly an architectural wonder; they were made in accordance with the climatic conditions of Jeddah as they were designed not only to break up the sun’s glare, but also to take advantage of the cool sea breeze when the inner windows were opened. A visitor may also find it intriguing that many of the buildings lean at quite worrying angles, appearing to be on the verge of collapse, but somehow they are quite stable, which only adds to the character and atmosphere of the place. The whole district gives a great experience of what it would have been like to live in those bygone times. The people in the area are really friendly, not only willing to help you with anything you may need, but also an open book of interesting tales about the old town that they share so passionately with outsiders. One of the tales is of an area in the Historical District called Hara Al Mazloom (Locality of the Oppressed) which supposedly got that name, as there was an Islamic scholar of Madinah who was oppressed and killed by the Ottoman ruler of his time. DESTINATION JEDDAH 41
A stunning building amidst the Historical District is the Bait Al Naseef (Al Naseef House). It bears traces of the rich past of Old Jeddah and currently serves as a museum. Bait Al Naseef is famous for being the residence of the founder of Saudi Arabia, King Abdul Aziz for a few years. Another spectacular structure located a stone’s throw from Bait Al Naseef is the Sharbatly House. It used to be the residence of a wealthy merchant and is famous for the elaborate artwork on its facade.

Visitors may also find it fascinating to visit the old mosques in the district, some being over 100 years old. The most outstanding ones amongst them are the Al-Shafei Mosque and Othman bin Affan Mosque; though rather modest in their architecture, they are still worth visiting. Another interesting place located near the district is the old Jeddah cemetery where it is believed that Al Hawwa (Adam’s spouse Eve) is buried.
Old Gate which marks the beginning of the District
The Historical District has been on the tentative list on UNESCO’s World Heritage landmarks, so for Jeddahwis to have such a significant place in their backyard is a treat. There are already two registered sites of Saudi Arabia on the UNESCO’s World Heritage list, they are the ancient Nabataean ruins of Madain Salih and Al-Diriyah the capital of the first Saudi Dynasty. However, the fact that many Jeddahwis have lived here for years and have not visited these unique places is surprising.
Abu Inabah Street
Although nowadays one can enjoy all the commodities of modern life, it is still an exciting experience to visit the Historical District to admire its houses, the ornate rawasheen, and wander through its narrow streets. DESTINATION JEDDAH 43

Athr Gallery By Halah Gandeel
With their 5th year with Art Dubai around the corner, and a currently successful solo exhibition of Manal Al Dowayan, Athr Gallery has come a long way since their beginning a few years ago. We sat down with Hamza Serafi, one of the founders, and got to know just how they do it. 1. When did you establish Athr gallery? what encouraged you to open an art gallery in Jeddah? Athr gallery was established 4 years ago, it feels like a lifetime already. It is not an encouragement; it is an inspiration. I have been involved with the art movement since the mid 80s, what inspired me was seeing the way the contemporary art movement was happening in the international art world. My first trip to Art Dubai I noticed there were no Saudis exhibiting there and when I compared notes with my current partner, Mohammed Hafiz, we thought that we should show the artists that we have here. We were aware that there were talented artists in Saudi Arabia. 2. What difficulties did you face in the process of creating such a place? We had normal challenges any new gallery faces. In our case being the first contemporary art gallery in Jeddah/Saudi we had to set a model. We had to learn from successful international level galleries and adapt their models of structure to our local boundaries and culture. I would consider finding that balance one of the hardest challenges. 48 DESTINATION JEDDAH
3. What’s your process of signing artists for your gallery exhibitions? Our relationship with our artist is more of a sponsoring and nurturing relationship- Not really bounded by a contract. Thank goodness in this part of the world we still believe in the power of the trust and promise. So our relationship is really based on these two things more than any signed contract. Although we make it clear to our artists their responsibilities and the gallery’s responsibilities, and as long as the dynamic of this relation keeps happening then the relationship falls to place automatically and harmoniously. 4. What are the standards that YOU THINK your chosen artists need to meet? There are two types of standards. Standard on art is a very surreal word in the art world. Opinions on art can be very subjective, it is personal, just because I like something does not mean everyone will like it. There are also the standards that we insist on, we make sure that the artists do the right amount of research necessary to create their work and also put in the effort to ensure the quality of production and creativity is always at its best.
5. DO YOU SUPPORT NEW, EMERGING ARTISTS AS WELL? IF NOT, WHY? Our main goal is not only promoting established artists; we have a yearly program “Young Saudi Artists” where we search and introduce new artists to the art scene. We currently have an artist open call for the 3rd annual YSA this April. 6. How does the gallery make profit? Do you charge the artists for exhibiting? Yes we are a commercial gallery, and we are proud of being the first gallery to give Saudi artists the ability to practice their profession as artists. However, we also have social programs where we work on developing the art movement further. 7. How do you fund your exhibitions? We fund exhibitions from the budget we allocate for each event and also sometimes from art supporters and through the corporate network.
8. In your opinion, what was the most influential and successful exhibition yet? I believe each exhibition has its elements of success. Honestly, I take pride in the entire exhibition. 9. What are your views on Jeddah’s art scene? It's happening! 10. What is your future expansion plan? Are you planning to open a branch in Riyadh? We are very focused on our current state and we are expanding from different methods of participating in different art fair and exhibitions around the world. We have future plans to expand locally, in the gulf area, and internationally. We will announce those plans at a later time. "Society chews on itself; burpingly" - By Y.A 50 DESTINATION JEDDAH
1. TELL US A BIT ABOUT YOURSELF. I am a Saudi artist/maker/tinkerer, which means I get to spend a lot of time combining blotches of ink under a microscope, misplacing pixels, drawing lines that are somewhat parallel, tinkering with bits and bobs, feeding cats, writing silly programs that do silly things, wiring together transistors, collecting curiosities, and breaking things. In addition, I am running NBA, an architectural consultancy firm based in Riyadh. I am also the co-founder of Onqoud, a physical and online hub for local creative talents to learn, work, and share! 2. WHEN DID YOUR PASSION FOR ART BEGIN? Let me put it this way, my passion for creating things began as a child when I started creating maps for games like Wolfenstein 3D, Doom, and Quake. I really enjoyed building worlds and unleashing the AI characters, and then watching them interact with it. This was also the period I started to teach myself programming for the sake of modifying the way these games worked. Later on towards high school and college I really got into experimenting with photography, digital, and traditional media. I think it was around the time I started taking apart my cameras and modifying them to create results I wasn't used to seeing, that I realized might be on to something special that was worth investing lots of time in. In 2010 I was invited to exhibit as part of the Edge of Arabia collection in Istanbul, a great experience that made me realize that: a) people notice when you're really passionate about what you do, and b) the local scene was full of inspiring talents waiting to be supported! You just need to dig a few inches below the surface to find them. 3. YOU ARE AN EXPERIMENTAL ARTIST; YOU USE MANY DIFFERENT MATERIALS. WHAT ARE YOUR FAVOURITE MATERIALS TO WORK WITH AND WHY? Ah! Having favorites would defy the purpose! What I tend to do to be fair though
is focus on two to three mediums at a time and try to squeeze as much content out of them as possible. Currently the mediums I am focusing on are self-made painting apps, photography, and illustration. 4. DID YOU STUDY ART OR ARE YOU SELF-TAUGHT? I am self-taught. I did study architecture however, and that does overlap in some areas with art. 5. WHAT IS YOUR SOURCE OF INSPIRATION? I am fascinated equally by my surroundings, both physical and conceptual: human constructs, literature, programming, art, sociology, astrophysics, mathematics, technology, culture, music, AI, optics, architecture, physiology, antiquity, philosophy, small things, big things, furry things, shiny things, and just about everything in between. 6. HOW WAS YOUR EXPERIENCE WITH ATHR GALLERY’S EXHIBITION? In 2011, I exhibited as part of the "Young Saudi Artists" exhibition, an installation of five miniature canvases sized 5.5cm x 5.5cm. The visitors would approach the canvases; pickup magnifier loupes that were hanging from the ceiling and proceed to move forward with the magnifier on one eye until their noses touched the canvas. They would linger there for a while and then repeat the process on the next piece. To me the experience was exhilarating; kind of like a theatre performance where the audience is actually performing without their knowledge. 7. WHAT KIND OF AUDIENCE DO YOU ENVISION YOUR FANS TO BE? They are a highly motivating bunch of people mostly in their 20-30’s with either a background or an interest in art and design. Thank you all for your support; every bit of awesomeness counts!
DESTINATION JEDDAH 51
8. HOW DO YOU SEE THE SAUDI COMMUNITY’S SUPPORT FOR YOUR ART? DID YOU GET ANY SUPPORT FROM YOUR FAMILY? Instead of asking what the community can do for me I like to think of what I can do for the community. I tend to really enjoy supporting and promoting as many local creators as I can. I started doing this in a structured way through my side project YAAPIAC (You Are A Pixel In A Cineplex), which is an online aggregated gallery of inspiring artists with a focus on local and MENA artists. Later on I joined forces with Soraya Darwish, Mariam Abbas, and Mozn Hamidaddin as a co-founder of Onqoud, which is all about supporting and promoting local creators through providing them with the platform and tools they need to learn, create, and share their works! We just launched our first two events this week: a #CasualArtTalk in Riyadh, and a #DesignYourStamp workshop in Jeddah. As for my family, I owe the whole spark of curiosity I got as a child to them! Everything from getting really excited at a very young age about computers, programming, and making electronics, to being fascinated with design, the visual arts, and writing, can be traced directly back to my family introducing me to and encouraging me to learn as much as I could about these things.
online open courseware (e.g. MIT), online stores (e.g. Amazon), and open source software (e.g. Processing). After evolving by focusing a bit on self development, I would encourage them to INSPIRE others, both directly by starting collaborations, sending them emails, featuring them on their blogs, etc., and indirectly by being helpful and sharing as much of their knowledge and experience with the local scene as they can. There is none greater than an inspiring artist who happily pushes others to be better than him!

9. WE SEE THAT YOU ARE A WRITER AS WELL; DOES YOUR WRITING SUPPORT YOUR ARTISTIC WORK? My writing is an integral part of who I am. A lot of my visual pieces revolve around a specific verbal phrasing that I have in mind. Other pieces are directly influenced by poetry I previously wrote. 10. DO YOU HAVE ANY ADVICE FOR YOUNG SAUDI ARTISTS WHO ARE JUST BEGINNING TO GO INTO THAT FIELD?
I would tell them to EVOLVE! It has never been as easy to learn and experiment as it is today, with the advent of things like 52 DESTINATION JEDDAH

Men! listen carefully!
We all agree on the fact that Valentine’s Day is indeed a sweet day for lovebirds; however, love should not be declared and celebrated only once every 365 days! Below are some tips and pieces of advice on how you can show your love and care on a daily basis, with simple yet thoughtful gestures.

Tips:
Reenact Your First Outing as a Couple: Take her out to the same restaurant or coffee shop you went to for the first time as a couple. Go down memory lane with her, let her know that you remember the little details from when you first met. Plan a Weekend Away: Whether it is spontaneous or planned, go away together for a weekend. If you can't leave the city for whatever reason, stay at a hotel for a couple of days. Ironically, life can sometimes stop you from living your life; work and your busy schedules can slowly create a gap between you and your partner. Do something about it! Most hotels in Jeddah offer romantic packages; we know for a fact that Rosewood and Park Hyatt have some great deals. Jewelry! Men, loosen up your purse strings and surprise your sweetheart with a set of diamond earrings. Some would say it's a cliche, but it works! It wouldn't hurt to be creative and hide them under her pillow, or present them to her after a candlelit dinner. Japanese Fusion
In 2005, two brilliant future partners met as students in an engineering college in Boston; Hassan Khashoggi from Saudi Arabia, and Marco Antonio Perez from Mexico. Five years after graduation, in 2010, Hassan and Marco reconnected and after catching up with each other, Hassan proposed a business arrangement. Shortly after their talk, Marco was on a plane to Jeddah, and approximately two years later, in October 2012, after extensive market research and thorough planning, Jeddah witnessed the opening of a unique Japanese restaurant with a Mexican and Middle Eastern twist in its cuisine, Mizo. Mizo opened its doors to Jeddah’s citizens and tourists on October 16, 2012. This distinctive restaurant stands in a category on its own due to the chef’s culinary skills and creativity. Marco, the proud owner of four Japanese restaurants in

Mexico, has always had a passion for perfecting the art of Japanese cuisine, and therefore decided to add a bit of his Mexican culture in the mix and create something new. With Hassan came the addition of a new culture to the mix, resulting in a delicious fusion of Mexican, Japanese, and Middle Eastern dishes. Upon entering Mizo, which is located conveniently on the popular Tahliya Street, you will be impressed with the elegant simplicity of the decor, and you will be overcome with a sense of relaxation from the calm beige and brown interior, which was exclusively designed in Mexico and made right here in Saudi. Marco and Hassan strongly believe that quality must remain a top priority, whether it is in regards to culinary equipment, which has all been imported from Japan, or their seafood supply, which is freshly imported on a weekly basis. The restaurant occupies a spacious two floors, seating
approximately 100 guests, and has been designed in a way that allows all guests to dine comfortably while enjoying the outdoor view through the long and wide glass entrance. In addition to the Japanese traditional favorites sushi, nigiris, and sashimis, Chuy (Sushi Chef), Checo (Kitchen Chef), and Marco took the time to diversify their menu and add fusion dishes and sushi rolls in order to adapt to local taste. They did so by offering dishes such as Duck Crepes, which are crepes filled with seasoned duck meat served with tamarind sauce. Their ingenuity and passion led to the creation of dishes such as the Tuna “Zatar” Tataki, which is cooked with local spices, and topped with jalapeno and garlic chips. A recommended and unique appetizer Mizo offers is the Almond Pistachio Shrimps, which are fresh jumbo sized shrimps covered with almonds and pistachios and sweet chili sauce. Simply heavenly! Mizo also perfectly adapts to local taste when it comes to dessert. Their ice cream Tempura with Nutella and Halawa crumbs will literally be the sweetest way to end your meal. A recommended signature dessert is their “Anna’s Cake,” which is simply a delightful vanilla sponge cake soaked in three different kinds of milk; it is guaranteed to let you walk out feeling satisfied and already planning your next visit back! BBQ The Art of
By Angelic Salha
“It is better to have burnt and lost, than never to have barbecued at all.” -William Shakespeare
To Jeddahwis this is the best time of the year where we get to enjoy Jeddah’s amazing weather. This time of the year is perfect for family and friends gatherings, picnics and most of all BBQs, so read ahead for the ultimate BBQ guide.
The basics The Fire
To have the perfect fire, you need to master the technique of starting the fire. Start preparing for the BBQ a few hours early by pre-soaking the charcoal (starter type charcoals or regular will do) with the lighter fluid in a throwaway container. Then put the soaked charcoal in the middle and layer the charcoal around and on top, light it up and let it burn. After all the fluid burns off, the fire might appear to be dying due to lack of oxygen, but just fan the fire slightly and it will light up again. Keep in mind that the two major components to have a fire are: Fuel and Oxygen- you have to have both of them to have a successfully burning fire.
The Grill
There are two types of grills; Gas Charcoal, and Electric Grill. The gas grill is the most popular because it heats up fast, it’s convenient, and it’s guaranteed to cook your food as desired. It is fueled by a propane tank or accessible gas line. If you prefer your food with a rich smoky flavor, then the charcoal grill is the grill for you. It uses charcoal bricks, but food takes much longer to cook. Electric Grill is best for indoors. It heats up and cools down fast, and its non-stick griddle rack makes it easy to clean. The size of the grill depends on the number of guests you are cooking for and the space you have – trying to BBQ for 50 people on a tiny balcony is just not possible. Ensure that you allow free access and flow of air around your grill for safety. BBQ grills can be found in different types of materials such as aluminum and cast iron, however it is best to look for stainless steel frames, fireboxes, and lids because these materials last longer. Stainless steel or porcelain-coated burners retain heat well.

The Meat
Picking the meat you want to grill isn’t difficult if you know what you’re looking for. All you need to do is ask yourself these simple questions and you’ll be good to go. How can I pick the best BBQ meat? Where can I get my meat? How can I perfect my grilling?
DESTINATION JEDDAH 67
Picking the Beef
Here are some easy tips for you to pick the perfect meat: For the best BBQ meat you need to buy the prime grade meat, it’s the most expensive, but great for grilling. Buy fresh meat from a meat market or a butcher; it’s always better than frozen. Choose the meat with the finest texture and firmness. It should be a light cherry red color, not deep red, and look for the marbling which is the thin threads of fat running through the meat that gives it an incredible flavor when grilled. When choosing the meat make sure it’s of an even thickness. Meat that is thicker on one side more than the other can be tricky to cook evenly. The best cut of meat for grilling is rib-eye and porterhouse steaks, as well as the classic T-bone and strip steaks. Meat cut from the tenderloin, such as filet mignon, is the most tender, but also the most expensive.
68 DESTINATION JEDDAH
Picking the Chicken
Grilling chicken is considered one of the classics when it comes to BBQ’ing, yet also the hardest. Cut the chicken into pieces because it’s much easier to grill thoroughly than single, large pieces of chicken. Trim off the large, visible clumps of fat and unnecessary pieces of skin to avoid the risk of flare-ups on the grill. Prick the chicken pieces with a sharp knife to check that the fluid which runs out is clear, not bloody.
Mastering THE GRILL Steak
Season your meat six to eight hours before you grill, the longer it’s marinated, the better. After heating the BBQ grill, brush the meat with olive oil to prevent it from sticking. Grill the meat using long-handled tongs to flip the meat. Turn the meat once during grilling to avoid dryness. Avoid piercing it with a fork as the tasty juices will run out into the fire. Grill the meat to your liking, just keep in mind that thick meat takes time. Here are some tips to know if your meat is done: For steak 1.5cm-thick: Rare - 1 1/2 minutes each side Medium - 2-3 minutes each side Well done - 3-4 minutes each side For steak 2-3cm-thick: Rare - 2-3 minutes each side Medium - 4-5 minutes each side Well done - 5-6 minutes each side

Medium

Hotdogs
Fire up the grill and wait 20 to 30 minutes for it to heat up before you start BBQ’ing the hotdogs. Lay the hotdogs on the grill and make sure’ to leave space between them so you can roll them easily. Roll the hotdogs every 2 to 3 minutes about a quarter turn so they can cook evenly and keep in mind that thicker hotdogs take longer to cook. When the hotdog’s skin turns a deep, reddish brown color, you know that they are ready to serve.
DESTINATION JEDDAH 69
Kofta
After mixing your ingredients for the kofta and seasoning it to your liking, refrigerate it for at least an hour. Then divide the mixture into 12 round pieces. Heat up the grill about 10 minutes before you start grilling. Place the pieces on the grill and leave enough space between each one. Flip the kofta every 2-3 minutes until they are dark brown; just be careful not to overcook them.
CHICKEN
Wash and pat dry the chicken pieces before you season them. Set the coals of the grill on one side so that you can have a cool spot. Chicken takes longer to cook because of the low temperature, so make sure of the temperature and be patient because it usually takes about an hour to cook, unless you use small, boneless chicken pieces on a skewer. Place the chicken pieces on the top rack of the grill away from the heat or, if you have a gas grill, just turn the heat to low.
Fish
Make sure that your grill is clean to prevent the fish from sticking on the grill. After heating the grill, oil the fish with high-temperature oil such as peanut or plain olive oil. Start by cooking the non-skin side first to give you a delicious crusted outcome, then grill the skin side because the skin helps keep the fish together while turning. Grill for about 10 minutes until it’s cooked and still moist - about 3 minutes on each side should be perfect. Try avoiding sugary or glaze marinades, especially with thick fish, because sugar can easily burn the fish before it’s fully cooked. To make sure your fish is cooked, check that it will start flaking, and that is when you know it’s done and ready to serve. Tuna, salmon, swordfish, halibut, and sea bass are some of the best fish to grill.
Vegetables
Grilling vegetables is quick and easy, just skewer pieces and rub with olive oil, or place whole vegetables like onions, corn on the cob, and peppers directly onto the grill. BBQ attachments like slotted metal colanders or racks can also allow you to grill multiple vegetables safely without losing them into the flames. Simple seasonings work best so that the true flavor of the vegetable shines through. 70 DESTINATION JEDDAH

Guvek Peynili (Oven casserole)
Sometimes we do crave some authentic food with out any kind of creative addition to it. Well here at DJ we searched and looked for an authentic restaurant that will take us back to its own home town, and successfully we found it. Al-Fairouz Res is the place for real Turkish food with out any added ingredients that would change the way they do it in Turkey. For so many people who like stews we do recommend the Oven chicken casserole with cheese and vegetables (Guvek Peynili)- this special dish can be served with chicken, beef or the two together. The chicken is cooked with vegetables and covered with cheese in a special clay pot. What makes this Turkish restaurant stand out is its authenticity in their ingredients, they use organic products, their décor is classy and finally their amazing friendly staff. Al-Fairouz Res has a huge variety to choose from and you can always mix and match with the things you add to your meal. Al-Fairouz is an enjoyable experience that is so affordable. Their food is fulfilling and will leave you wanting more. They have several branches around town. “Isabella’s” At work, my colleagues and I always seem to order sandwiches for lunch. One day we decided on Italian for a change. In the spirit of trying something new we decided to try Isabella’s. Since we heard good things about their dishes in general especially their pizzas, we decided to order a Margarita pizza, two Caesar salads, two Caprese salads and two orders of the sundried tomatoes. While I was ordering our food on the phone, I’ve noticed that the total amount due was much more than what we calculated prior from their menu, it turns out that they have “increased” all their prices by almost 50%. I’ve noticed most restaurants have done that after they banned the service charge, which actually made it worse. Accepting the ridiculous over pricing we then waited for our order, and we waited and we waited. It finally arrived an hour late than promised. Starting with the salads, the Caprese salad my colleague and I ordered was a disappointment at the first look since it was basically three pieces of cut French bread with cheese,
tomato and a small basil leaf on the top, not a salad at all really. The Caesar salad was also another surprising disappointment since it did not taste like one; it had a completely different dressing than expected for that type of salad. As you can now tell, the sundried tomatoes were unfortunately a disaster as well! You can barley taste any tomatoes from the amount of oil that was poured into it, as if it was flowing in grease. However, when it came to the pizza we sighed of relief that it was actually good. Other than the pizza, I don’t think my colleagues and I will ever order anything else from there again, especially that it is not worth the expense or the wait! Although it’s not a new restaurant and the reviews were fairly great however what we read and what we experienced is the complete opposite. Location: Amir Sultan St. Tel: +966-542559277, 920028892

The Holy Prophet’s Methods of Treatment By Angelic Salha
Do not be people without minds of your own, saying that if others treat you well you will treat them well, and that if they do wrong you will do wrong. Instead, accustom yourselves to do good if people do good and not to do wrong if they do evil. -The Holy Prophet Mohammed
The Prophet Muhammed (PBUH) remains a role model for Muslims for his exemplary behavior to all people. He treated princes and paupers alike with respect and consideration. His kindness even extended to animals. The above hadith reflects his attitude towards both friends and enemies…a high standard of behavior which today’s Muslims strive to emulate.
Treating servants well…
Prophet Muhammed (PBUH) also said: “Allah has made some of your brothers as slaves under your care. So whoever has his brother under his care, then let him feed him from his food, and let him clothe him from his clothes. And do not give him a duty he cannot bear, and if you give him a duty he cannot bear, then assist him with it.” [Jami at-Tirmithi]
Explanation:
IIslam asks of Muslims to treat all people equally, from servants to CEOs. Mutual respect and dignity are required in every human interaction. Practicing ‘The Golden Rule’ of treating others like one would wish to be treated is of paramount importance in the Quran. Prophet Muhammad (PBUH) exemplified honor and kindness in his every word and act; Muslims who follow in his footsteps strive to live up to his example. 76 DESTINATION JEDDAH
ICONIC FIGURES Abu Bakir Al-Seddiq By Angelic Salha
Abdullah Ibn Abi Quhafa, known as Abu Bakir Al-Seddiq, was born in Makkah and he was the first man to convert to Islam. He was called “Al-Siddiq” which translates to “The Truthful” because he had a sincere heart and never doubted the Prophet Mohammed (PBUH) when he first spoke to people about Islam. Abu Bakir’s faith was too strong to be shaken by anything or anyone. Abu Bakir supported the Prophet Mohammed (PBUH) with every decision he took without ever questioning or doubting him. Of all the companions that the Prophet had, Abu Bakir stood by him on the critical days of the Prophet’s life. One of the major incidents was when the Prophet migrated to Madinah and Abu Bakir was selected to accompany him. In addition, Abu Bakir’s wealth was very useful for the early Muslims; it helped release many Muslim slaves from their masters. Bilal Ibn Rabah Al-Habashi was a slave who was being tortured because he would not renounce Islam. A heavy boulder was placed upon his chest, yet he refused to utter any words against the Prophet or Islam. Abu Bakir was passing by when he witnessed this scene; he immediately paid for Bilal’s release. Bilal went on to become the first muezzin for the Muslim community. After the Prophet Mohammed died (May God rest his soul in peace) Abu Bakir became the first Muslim caliph “Khalifat Al-Rasool” which translates to Rightful Successor of the Messenger of Allah. Abu Bakir was Caliph for only two years, he soon fell ill and did not recover because of his old age.

Beauty Tricks Men Should Learn from Women! By Nilo Haq
1. Use a Facial Cleanser Most men use regular soap to wash their faces. Though it is easier to use an all-inone product, using regular soap can take a toll on the skin. Soap can dry out your skin and with regular use the dryness can cause irritation. With so many great men’s skincare ranges available on the market – choose a gentle facial cleanser designed for men that your skin will love. 2. Protect your SKIN! Generally women use a moisturizer or foundation that has SPF which gives their skin the sun protection it needs. Wearing sunscreen daily reduces the risk of developing fine lines and wrinkles as well as protecting yourself from skin cancers which are caused by the harsh rays of the sun. Especially since we live in Jeddah, we cannot escape the sun. So pick up a men’s moisturizer that has SPF, that way your skin will not only get the sun protection it needs, it won’t be dry and flaky either. 3. Use Conditioner Women use conditioner to help the hair feel soft and look shiny. If your hair is longer then 2 inches don’t skip the conditioner after your shampoo. You can also get yourself a leave-in conditioner spray, which will help the hair feel soft and look shiny as well as 80 DESTINATION JEDDAH
help the hair color from not fading in the sun. 4. Wash up Before Bed It’s a ritual for women to wash their faces before bed to remove makeup and excess oils that have built up on the face over the day. For men, consider washing your hair gel out with water before hitting the sack. Men’s hair gels and pastes can lead to breakouts on the forehead and face. 5. Exfoliate Exfoliating is one of the most important skincare steps for women and MEN! Exfoliating the skin not only removes dead skin cells that end up looking like flakes on the skin but also stimulates cell turnover, which helps the skin look younger and fresher! To save time, get a facial cleanser that has a built in exfoliator. 6. Maintain your Nails Women spend time on their nails by getting manicures and pedicures regularly. You don’t need to run to the men’s salon to get a manicure pedicure treatment regularly. Simply keeping your nails clean, cut and filed can make all the difference in the world. Get yourself cuticle oil and massage it into the cuticles and nails to get rid of dry skin around the nail.

MEN’S HEALTH
A Proactive Approach By Peter N. Martin
“I’ll be fine – most things get better on their own….Unless I’m really sick, no need for me to undergo a medical checkup.” This is men’s risky thinking when it comes to health. It’s true that waiting it out can take care of some mild ailments such as the common cold; however, time does not heal all wounds. Many conditions require medical treatment to go away and could be deadly if left alone. Regularly scheduled medical care is a BIG part of preventing cancer, high blood pressure, heart disease and diabetes. Feeling healthy is not necessarily indicative of BEING healthy. High cholesterol and blood pressure don’t have any obvious symptoms but could put you at risk for a heart attack. And many cancers don’t present with telltale signs until they’ve progressed to later stages and are harderto treat.
The following are the most common cancer risks in men:
• Prostate cancer is the No. 1 cancer risk for men (160 out of 100,000), as well as the No. 2 cancer killer behind lung cancer. • Lung cancer strikes about 81 of every 100,000 men, but remains men's No. 1 cause of cancer deaths. • Colorectal cancer is the third most common cancer in men (53 out of 100,000). Virtual colonoscopy is one way of detecting it early. Other cancer risks for men include bladder cancer and skin cancer.
Real men out there! Set a better example for real boys… Seek preventive health care and take a proactive approach to your health! 84 DESTINATION JEDDAH

60 Min, 5 days, 6 weeks workout routinE To get fit By Mohammed Al Dakhil
Guys, if you’re training at the gym, and are frustrated with the lack of noticeable results, then perhaps you need to go back and revisit your goals and plan of attack. For the sake of keeping this topic straight to the point I will only concentrate on the working out part of the plan. One of the biggest mistakes guys make is not having a clear road map of what it is they exactly want to achieve whether it’s losing weight, gaining mass, or getting leaner and more shredded. You see, there are many ways to challenge your body, but providing the right challenge will reap the results of a super fit you. The following routine is simple enough to get you comfortable and familiarized with all the equipment, yet challenge you into pushing your own limits. 60-90 min/ 5 days routine.
