Ramadan for Smokers: A Trial or Blessing in Disguise? Ramadan is way past being “right around the corner” and is actually in our line of vision. The idea of the devil locked up for an entire month is building up excitement and there is already a sense of serenity in the air. Nonetheless, we’re all dreading one thing: the inevitable misery that comes with nicotine withdrawal. This Ramadan, Destination Riyadh proposes a new attitude for readers who smoke: why not treat Ramadan 2013 as an opportunity to quit for good? This month is all about spirituality, renewing ourselves and sticking to these changes once the month is over. Ramadan is actually the perfect chance for smokers to

quit. There’s no way that you’ll succumb to your nicotine cravings during the day as it will break your fast, so carry this willpower after sunset as well. Remind yourself that Ramadan is about cleansing your mind, body and soul and that you’re stronger than your cravings. Also keep in mind that while resisting your pack of cigarettes is difficult it is nowhere near impossible. After all, you did survive half the day! Take the extreme route and throw out your cigarettes on the first day of Ramadan or take it slow and cut down a few everyday. Above all, remember that you are doing great and Destination Riyadh is rooting for you!

Bunyan Charity Women’s Association for Families Development

As the burgeoning world of today gets more and more advanced, so does the gap increase between the rich and the poor, and of course Saudi Arabia is not immune to the ugly effect. Riyadh especially, as a capital, has its own share of poverty-stricken families down on their luck and living in perilous conditions. Bunyan is a no-frills charity organization run by a group of dedicated women volunteering their own time and resources. The charity focuses on sponsoring families in need and providing them with better housing, education and job opportunities. Thumbs Down to... NAS Air

One of the main reasons people choose to take the plane when traveling is to save time. We recently scheduled a trip to Jeddah via Nas Air and booked the flight with them two weeks prior to our departure. The night before we were set to leave, we were informed that our return flight to Riyadh was cancelled. Equally worrisome was that little effort was made to try and rebook the flight and the refund policy required inconvenienced passengers to wait at least 21 days. When passengers pick the dates of their travel, it’s usually not out of whim. With local airlines servicing people on Umrah, businessmen and families alike on actual itineraries, changing schedules at short notice and not being equip to offer viable solutions is just bad practice. With the summer break upon us, we do hope NAS Air can up their game and be able to support rather than stress travelers. DESTINATION RIYADH 5

1. RIYADH FESTIVAL FOR SHOPPING AND ENTERTAINMENT 1434/2013: Following it’s record breaking nine million visitors last year, the Riyadh Festival for Shopping and Entertainment is here again. The event started June 5, 2013 and will last until July 4, 2013. Shopping centers, establishments and amusement centers across the city are offering various activities and discount promotions to attract families and guests . 2. MAISON BOM OPENS THEMAR RAMADAN EXHIBIT: Through its official launch on June 12, 2013, Maison BoM’s Themar Ramadan exhibition once again showcased local talents and fashion designers from around the GCC region. A well-rounded display of creativity and artistry from home decors, gift items, artwork, kaftas, abayas and jewelry are available at the gallery until August 13, 2013.

3. RED LOBSTER IS NOW OPEN!: Bringing the sea to the desert or at least in their menu, Red Lobster, the well-known seafood restaurant franchise is now open. They serve everything from crab legs and lobsters to king prawns. The restaurant is located at Exit 8. 4. BBQ OPENS IN RIYADH: Korean franchise BBQ (Best of the Best Quality Chicken) is now open at Thalateen Street. A casual dining restaurant, their menu consists of anything from French to Jamaican chicken, spoon pizzas and more. The restaurant will be offering an iftar special for Ramadan.

FOUR SEASONS OPENS ITS PEARL FLOOR : The Four Seasons hotel launched “The Pearl Floor,” an exclusive ladies-only floor, in an effort to help women traveling to Riyadh feel more comfortable and secure. VISUALLY IMPAIRED STUDENT NAQI RIZVI TOPS ENGINEERING EXAMS AT ALFAISAL UNIVERSITY: Alfaisal University recently marked its second graduation ceremony at which students were awarded Masters and Bachelor degrees in their respective fields. Naqi Haider Rizvi, a visually impaired student, whose speech at the graduation ceremony earned a rapturous applause from the audience, was presented an engineering degree.

Born with an incurable disease which left him visually impaired, Naqi never lost his vision. Naqi bagged the highest GPA in his batch, making the university, teachers and parents proud. 7. AJVA: WORLD’S LARGEST FORD EXPEDITION DEALER: Al Jazirah Vehicles Agencies (AJVA) was recently named the world’s largest Ford Expedition dealer, having achieved record sales in 2012 with 20,000 units sold. President of AJVA, Sheik Abdullah Al Kraidees stated that the Ford Expedition is part of the Saudi culture, and is a favorite due to its capability, space, quality and safety features. 8. WAMDA HOLDS RIYADH MIX N’ MENTOR WORKSHOP: Last May, Wamda held a Mix N’ Mentor workshop that aimed to empower local entrepreneurs and start-ups by connecting them with mentors and industry experts. Useful Information Settling In

RAMADAN IN A NUTSHELL

The holy and beautiful month of Ramadan is filled with much loved traditions. Here at DR we don’t want anyone to feel left out, so to give you a heads up on what to expect, we listed some survival tips for newcomers and also explanations for some of the smaller traditions. We found that there is a lot to learn for everyone including people who already live here.

IN THE OFFICE:

Avoid eating in front of colleagues who are fasting: While most adults have more self-control than you would expect, a whiff of cheesy pepperoni pizza is more than likely to unleash angry growls in your colleague’s empty stomach. Besides, a little respect and consideration goes a long way. Don’t play music loudly: Ramadan is all about getting in touch with your spirituality. Blasting Justin Bieber on full volume might just disrupt the connection between your colleague and enlightenment. Be patient: An empty stomach (and not to forget nicotine withdrawal for those who smoke) brings out the cranky side of all of us. Try not to argue with a fasting person and if they are heating up, gently remind them they are fasting.

ON THE ROAD:

Driving: An hour before sunset, the roads will be jam-packed with people rushing back home or to a restaurant for iftar, so plan your trips accordingly. In fact, if you can wait till after the Maghrib prayer has been called, you’ll be driving on virtually empty roads.

SHOPPING:

Hours: Most shops will stay open till the wee hours of the night as excited shoppers flock to the malls after taraweeh prayers to prepare for Eid. Promotions and Sales: Ramadan is usually the time of the year when shopping centers are brimming with exciting promotions and great sales. Take advantage of that!

GET IN THE SPIRIT AND CONNECT WITH THE CULTURAL SCENE:

Exchange Ramadan Greetings: Say Ramadan Kareem or Ramadan Mubarak to your colleagues and even random strangers you pass on the street. Accept Invitations: Attend any iftar and sohour gatherings that you’re invited to and bring a little something for the host or a dish to add to the table! Ask questions and don’t feel sorry for us: Curiousity is good! If questions pop up, ask away. And don’t forget that despite the miserable expression of a person craving their daily smoke and latte, Muslims fast voluntarily and wait for Ramadan all year round, so don’t feel bad! Host an iftar: Throw an iftar party for your Muslim friends, order traditional iftar food from a restaurant or home-based caterer (page 56), or try out some recipes in your own kitchen (page 50) and don’t forget the dates and coffee! Fast for a day: But don’t think of it as starving yourself. Get in touch with your spirituality and share your experience with others. Charity: Ramadan is about giving, so donate your old clothes to a charity or help the needy by giving out food, water and dates at iftar time.

TRAVELING:

Booking: Ramadan is a busy period with people leaving to spend Eid in their homelands or those coming to the Kingdom to visit the Holy Mosques. Book your tickets as early as possible to avoid last minute hassles and expensive tickets.

PAPER WORK AND TRAVELING:

Official Documents: Government offices close early during Ramadan, so any renewal of documents can get delayed. Make sure you’re aware of the expiry dates of the most important documents you will need for traveling or other purposes.

SAMBOOSA: The samboosa arrived in the Arabian Peninsula in the 13th and 14th centuries by Indian traders. They are small pastries filled most commonly with ground beef. Lean meats are great for breaking fasts and gradually reintroducing one’s body back to eating mode.

‘FUL’ (MASHED FAVA BEANS): Ful is generally a breakfast dish, so it makes sense that we would have it as our first meal during Ramadan. Ful is also a dish that is available to everyone and comes at a low price. By having the same meal and experience, Muslims relate to each other without a high cost. Beans are also easily digestible and recommended when breaking fast. SOUP: It’s a tradition to break the fast with soup due to the fact that a liquid dish prepares the stomach for more food and is easier to digest, making the transition back to food gradual.

VIMTO: The British company found a great market in the Middle East during Ramadan for their sugary raspberry soft drink. It has been stated that the drink worked so well because it gives a sweet rush of energy to drinkers after a long day of fasting. Saudi Arabian Vimto is manufactured by the Aujan Industrial Company and heavily advertises during Ramadan. SHOPPING AND BAZAARS: Just as the holy month of Ramadan is about counting ones blessings and eliminating excess, Eid is about appreciating what we do have. Perhaps sometimes shopping can become too extravagant during Ramadan, but it’s a time for appreciation and renewal and buying gifts to connect with our loved ones.

With the world’s population a little over seven billion, one billion of them still live on $1.25 a day according to the World Bank. These extreme inequalities have encouraged the concept of social entrepreneurship among individuals who start a business. The goal is not only to make a profit but also to solve a core social problem and initiate change.

The definition of a social enterprise is a company with a core purpose directly associated with positive social change and solving pressing social problems by using innovative entrepreneurial ideas. Social entrepreneurs are always looking for new solutions for how things could be better and think of solutions 10-20 years into the future. Muhammad Yunus is a notable social entrepreneur who won the Noble Peace Prize in 2006 for his work at Grameen Bank. The company was established in 1983 as a bank for the less fortunate. The bank lent a minimum of $30 to each individual and 97% of the time the money was paid back. Revenue for the bank in 2010 exceeded $176 million. Mr. Yunus dreams of a world with no poverty and believes that lending to the poor empowers them to get an education, start their own businesses, own their homes and eventually become self-sufficient.


Another example of a successful social business is Khan Academy. The mission of Salman Khan, an MIT and Harvard Business School graduate, is to provide high quality education for anyone, anywhere. This concept is changing the classical education model and allowing anyone access to a free education. Multinational and private sector companies seem to be jumping on the social enterprise bandwagon as well. For example Coca-Cola is subsidizing solar power to thousands of grocery kiosks in Kenya. These kiosks were previously not connected to the power grid system, and Coca-Cola hopes this initiative will allow them to stay open longer, sell more products and create more revenue. The private sector, NGOs, foundations and the government can all play a role in promoting the concept of social entrepreneurship. In Saudi Arabia this seems to be the trend, with many different social enterprises being established. Two of the most urgent issues they tackle are female employment and global warming. These social enterprises include:

All employees have extensive training in computer software and design, embroidery machine operation, sewing and garment alteration and machine maintenance. __ NAQAA SUSTAINABILITY SOLUTIONS provides environmental sustainability consulting for established businesses in Saudi Arabia in waste and resource management, indoor air quality management, energy efficiency management and water conservation. The company hopes to implement green solutions for the Saudi private sector.

ABU PRODUCTIVE MOHAMMED FARIS We’ve all seen the animated orange stick guy on YouTube. He’s an early bird, he exercises, prays on time and focuses on his goals. He is a reminder and a role model; he is Productive Muslim. Dressed in an orange tie and armed with an eccentric orange laptop, the mind behind this inspiring series, cleverly dubbed Abu Productive, visits us to answer some questions. Productive Muslim is quickly gaining popularity. Can you give us a background on how and when it started? Productive Muslim started in 2007. I was studying in the UK and everyone would ask how I balanced my studies, my social life, two jobs and running the Islamic Society. I was very keen on productivity and while researching, I realized that Islam teaches a lot about it. I started a personal blog sharing ideas on productivity and spirituality. Eventually, it became more of a training and consultancy organization. Five years on we 20 DESTINATION RIYADH

have developed into a full-fledged service for Muslims with workshops, seminars, articles, animations, doodles and iPhone applications. Can you elaborate on the newsletters, seminars and courses? We send a weekly newsletter called e-PRO which is a personal message from me to subscribers. From there, I decided I wanted to meet people in person. We started working with host organizations on a twoday seminar called “Leading Productive Lives: Spiritually, Physically, Socially.”


Three thousand students have already gone through this course. Right now Ramadan is coming up so we’re doing a special online course. Once you register, you have access to videos and forums. What’s the story behind your logo?

Back when I had about two readers a month, one random reader offered to design a logo for me. The logo was a stick man drinking coffee and relaxing. I thought it was really cool. When I was re-launching the website a year later, I spoke to a top UK branding agency and went through so many ideas but still thought the stick man with the coffee was perfect. I asked them to make it 3D and more colorful, hence the orange logo. Once I saw the logo, I wanted animations based on it, and the character came to life. We want

to make our brand fun. We don’t want to be preachy so we use the concept of funny guy animations to convey serious messages. How can we make this Ramadan a productive one? First of all, visit Productive Muslim. Have sincere intentions and work hard. My favorite quote from Finding Nemo is “Just keep swimming,” because that’s how you get to your destination. Life is short so if you drop dead half way through at least you were moving in the right direction. Try to go through a technology fast during Ramadan, at least during fasting hours.

It took Raha two months to reach the summit of Mt. Everest, seven other mountains around the world to prepare herself, and just over one year to accomplish it all. She stood at the top of the highest mountain on Earth, in a very small space among her 20 fellow climbers and surrounded by countless world flags. “You did it! You did it!” screamed her friends - she looked at her feet and could not believe it. We had the opportunity to have a conversation with Raha to ask her about her incredibleh whirlwind of an adventure. Raha Moharrak, 27, was born and raised right here in Jeddah and graduated high school from My Little House School. She pursued a major in visual communications at the American University of Sharjah and now works as a freelance art director. Growing up, Raha dreamed for an exciting adventure, a real one that pushed her limits. She always heard about climbers breaking records and reaching the highest points in the world, and it struck her as the perfect adventure. She personally shares that it was a deep and unstoppable yearning that she couldn’t avoid. It was a feeling that finally convinced her father. Raha says one has to fight for their journey and to have conviction and great determination. With the blessing of her family, she began her journey that would take her all over the world. 22 DESTINATION RIYADH


and the method to climbing these mountains is unique. They would move up to a certain level and then let their bodies get used to the altitude and temperature and then come back down to regain their strength, then continue the same process but gradually making their way up. When it was time to sleep, their assistants would help pitch the tents, but there were so many levels of comfort throughout the climb. She would sleep on a blow up mattress and in two sleeping bags. Discomfort however was the least of her troubles; there were other dreadful challenges along the way. Raha says she saw the corpses of failed climbers along the way, and that she got a fever. The weather was also exhausting; it was raining, snowing, sunny and cloudy all in one day. When Raha first applied to climb Mt. Everest, she was rejected for not having enough experience. Thus started the training process that lasted about a year. First off was going to Tanzania to climb Mt. Kilimanjaro. This was one of Raha’s favorite climbs because it was her first. Raha suffered from hypothermia and was in an awful state, but thankfully she recovered and reached the summit. Astoundingly, her next climbs were Kala Patthar, Pico De Orizaba and Iztaccihuatl in Mexico, Aconcagua in Argentina, Elbrus in Russia, and Vinson Massif in Antarctica. Raha climbed the mountains of Antarctica with a sled to give herself a cold shock before Mt. Everest. One of Raha’s favorite aspects of this whole journey was that she met many people from different cultures. In the end, Raha turned out to be a special case. It only took her about one year to prepare to climb Mt. Everest, while it took some others, like those who were with her, more than a decade. The moment to climb Everest finally came, and it was going to be a long and rigorous process. With four bags of gear, Raha and her team went off. The temperature at the mountain reaches to about -45 or -50 degrees Celsius; climbing it takes a toll on the body and one needs to acclimatize to be prepared. Mt. Everest is divided into four base camps

She said that many people have asked if she reached a point where she felt like giving up. Never at all, she answered. However she did think at times “What am I doing here?!” Her father and family believed in her dreams and supported her throughout the whole process, and there was no turning back. One night, when it was snowy and sunny at the same time, they finally made it. She couldn’t believe it. She was literally on top of the world. Everyone was screaming, and she could barely hear anything. One of her fellow climbers was Sheikh Mohammad al Qassimi of the UAE, who was raising funds for the education of Nepalese children. Raha took it as a chance to also bring attention to the cause. Raha states that she wishes the younger generation of Saudi courage and hopes that they can overcome their fears and fight for what they want and believe in. After this incredible journey, Raha feels that she has paid her dues to herself and that she can now move on to her next big adventure.

Twenty-two Saudi high school students from all over the Kingdom participated in the annual Intel International Science and Engineering Fair (Intel ISEF) that took place between May 12-17, 2013 in Phoenix, Arizona. Intel ISEF is the world’s biggest international pre-college science competition in which around 1,600 students from 70 different countries participate. Saudi Arabia has been competing in this competition for seven consecutive years now and has been improving year after year and currently ranks third globally (based on the total number of awards) behind Canada and the United States. The Saudi government supported the participating students by granting them access to the King Abdullah University of Science and Technology (KAUST) laboratories. The Saudi students participated in 18 innovative studies ranging from medicine and health sciences to plant sciences, and brought home eight awards from different fields. ALLAAAAAAAAHU AKBAR ALLAAAAAAHU AKBAR... It’s the Maghrib athan, the mosques are calling. But it isn’t any normal sunset. Everywhere is quiet and families are gathered around the dining table. In my house, my grandfather is reading the Quran. My uncle is waiting near the door to catch the first sounds of the prayer call and my mother is performing dua’a, her body towards the Qiblah. My grandmother is in the kitchen putting the final touches on the legaymat (fried balls of dough covered in honey or syrup). The children are surprisingly still for once. It’s the first day of Ramadan after all, and they are waiting too.

Ramadan is easily the most important month in the Hijri calendar, along with the Hajj season. Thirty days of fasting followed by the Muslim holiday of Eid. A complete set of traditions have been built around the holy month over the centuries. When one factors in that Muslims are, by nature, family-oriented people and food is an important part of our culture, it’s no wonder that the mere act of breaking fast has turned into a colorful feast with the whole family (extended included) taking part. It is also no wonder that with the large area Saudi Arabia covers, Saudi traditions themselves would have their own subtleties and differences between each area and the other, a mire of old routines, preferences, joy, and familial relations. In Najd, the difference begins with the way iftar is presented. In some families or formal feasts, only the dates, gahwa (Arabic coffee), and in some occasions, legaymat are set on the table when the Maghrib athan is called. Then after the men come back from the mosque, the rest of the food is served. In other families, the habit is to serve the entire iftar in one go, right when the Maghrib athan is called and the meal is finished before the men go to the mosque. The sort of food itself differs between one area and another. With some families, jareesh, rice and meat are a necessary staple, while other families prefer lighter meals with only soup, samboosa and salads. Most families make legeymat, jubniya, or tawah for afterwards. Vimto is a perennial favorite (although personally I prefer fresh juices to the sugar-blasted berry drink. But sshhh,

don’t tell anyone). The TV would be on; first on a channel carrying Makkah’s Maghrib athan, and then most likely to a favorite show. As for the typical Najdi wardrobe, most women would be in colorful modern or traditional jalabiyat, in accordance to the spirit of the month. There’s just something about wearing a jalabiyah that fits in with everything else. Then it’s time for taraweeh, after isha prayer. Everyone troops out to the nearest masjid (mosque), and some even go to a distant mosque if they like its imam’s tarteel, the intonation of his voice as he reads Quran. The taraweeh prayer might span 30 to 60 minutes and is a beautifully spiritual prayer, a perfect ending to a day filled with fasting, du’a, giving, charity, and family. After taraweeh people usually leave to their individual houses to relax after the hectic iftar, and sleep before suhour, then prepare for another day. Lately, however, a lot of people have been spending all night awake until fajr and sleeping through the morning. Then there’s gargai’aan, a tradition borrowed from the Eastern Province. 16th day of the month, a party is thrown for children to mark the middle of the month and to celebrate their piousness in the past days and encourage it in the following two weeks. In older days children would walk around the neighborhood in traditional jalabiyat and thobes, singing and knocking on neighbors’ doors who would then give them a special mix of nuts, sweets and candies as a reward for their fasting. Nowadays, families gather together in a house or istraha and throw a party with a bouncy castle and treat bags filled with chocolate and more modern candy. Although children don’t get to celebrate throughout the neighborhood, the spirit is still there. For some, like the Zubara of Sudair, traditions begin early on before Ramadan even begins, with graish, a lunch held a day or two before Ramadan as a farewell for the month of Sha’aban. Each family brings a dish or two and sits down together to usher in the holy month. No matter where you come from or where you spend your Ramadan, charity, selflessness, family and affection will be at the heart of it. The food and varying traditions are simply reflections of our own histories and local culture.

Ramadan Fun for the Whole Family

This Ramadan happens to fall right in the middle of summer vacation. In order to help you make the most of it, we’ve prepared a list of 30 things you can do with your family.

1. Donate to charities or buy an iftar sa’im voucher that will provide iftar for one person all through Ramadan. (Check page 30) 2. Play Ramadan trivia!

Come up with fun questions and find out who knows the most about the holy month.

3. Celebrate Ramadan by decorating your house with lanterns, lights and banners kids can make.

Makkah is known as a mountainous region, with many mountains holding in their nooks memories of historical events that have since shaped our history. One of these crevices of history is Ghar Thawr (Bull Cave), which is where the Prophet (may peace be upon him) and his companion Abu Bakr (may Allah be pleased with him) spent three days and nights hiding from Quraish on their journey from Makkah to Madinah.

LOCATION The cave is located in Jabal Thawr (Bull Mountain), which was previously known as Jabal At’hal. The mountain was renamed after Thawr bin Manaf after he had resided in the mountain; it is also said to look like a bull when facing the east. The mountain is located several kilometers south of Makkah, perched between Sahl Wadi Al-Mafjar on the east and Bat’haa’a Quraish District on the west and looks over Al-Hijra District. INFORMATION Jabal Thawr is 728 meters high and 760 meters above sea level, making it one of the highest mountains in the area. It stretches for 4,123 meters from north to south and around 4,000 meters from east to west. It is also very hilly and full of caves. HISTORY The renowned cave, Ghar Thawr, is a hollow rock 1.25 meters high. It has two entrances: one on the western side, which is the one Prophet Mohammed (PBUH) used and another located on the eastern side. Since the cave’s history holds a special place in Muslims’ hearts, it has attracted countless Muslims from all around the world. Hundreds left their names marked on rocks in different languages to mark their journey to the cave. Over the years, people have paved the path that leads to the cave, and made some stairs to aid the visitors in their climb. Not only that, but there are a couple of stops along the way and on the top in which climbers can rest, drink water, and buy trinkets and souvenirs. DIRECTION It takes around an hour to reach the cave, but it has been described by many as a hard climb - even with all the aid that was meant to ease the journey. We can only imagine how it was for the Prophet (PBUH) and Abu Bakr Al-Siddiq, who had to undertake this journey in much harder circumstances, all for the sake of spreading the message of Islam.

OF ABAYAS If I mentioned the word abaya today, what would pop into your mind?
Would you imagine a shapeless black cloak only meant to cover you up and make you look frumpy? Or would you visualize an elegant and structured robe embellished with sequins, lace, colorful patterns and details, tastefully tailored to resemble one’s sense of beauty and style? My bet is you’re thinking of the latter. Thankfully, gone are the days when abayas looked like dull and boring traditional outer garment and at times misconstrued to be a symbol oppression and concealment that women were forced to wear. Nowadays Saudi females have embraced this cultural tradition, which is technically the law. This proudly reflects their religious integrity and national entity while enjoying the individuality and modernization that comes along with wearing it. Over the years, the abaya has evolved and transformed through many faces and purposeful phases. Originally, Bedouin women wore abayas on their heads to protect themselves from harsh weather conditions in the desert. It is also said that the black abaya came from Turkey and Iraq more than 80 years ago, consisting of a bottom “skirt” part and a top “scarf” part which covered the head and torso. Eventually, the abaya became a religious symbol of conservatism and modesty in many Middle Eastern and Muslim countries. In 1955, the abaya became mandatory for

Abaya designers have completely gone out-of-the-box and elevated it to new levels transforming it to a stylish fashion statement that can reflect a female’s personality, while being practical and overall, stylish. People are coming up with innovative ideas like slip on, zipper fastening, with pockets or belts. A lot of abayas these days are artistically decorated with unusual materials like studs, spikes and cuffs, or integrated with dynamic elements such as florals, silk, tricot, embroidery patches and patterns leading all the way up to the uncustomary and funky step-into-pants abaya. girls beginning from middle school after educational opportunities for girls became more available in the Kingdom.
During the seventies, ladies threw the abayas (which looked more like a cape with small slits for the hands and made of feather-weight silk) over their shoulders and wrapped the bottom part of it around their arms, making it technically at hip level (of course, they wore long dresses or maxi skirts underneath). Alternatively they would wear it at full length if they had pants on. In 1980, the abaya underwent a serious transformation as the Commission for the Promotion of Virtue and the Prevention of Vice started enforcing strict laws regarding the shape of the abaya and the way it was to be worn; plain black material that covered you loosely from head to toe. Not until the late nineties was the abaya given a bit of a break, giving meaning and reason to its main purpose, which is to decently conceal a woman’s figure in public. Recent developments in the world of abayasthe most daring to date- are influenced by numerous trends from practical and seasonal styles to architectural elements, western couture and international fashion. All these factors have been embodied in the abaya, making it range in quality, price (which can sometimes reach thousands of Riyals), and most recently, in color as well.

Seasonal and special occasion abayas such as Ramadan, Eid, bridal abayas, lightweight cotton summer abayas and even thick velvet and knit abayas for the cold winters are also a continuously evolving trend. While some might argue the abaya has lost its integrity with some wild and unconventional alterations, others justify the change by the evolving times, trends and styles around us. With the abaya rising as an element of high fashion, and abaya businesses in full boom all over the Gulf, one can only anticipate what modern day creations are still to come. In addition, when you consider abayas are being sent down catwalks, star-featured in special exhibits and bazaars, and are available for sale or special orders on websites, you can truly understand the affect of globalization on the abaya, and subsequently, the impact of the abaya on women, designers, buyers and people in general all around the world. Ultimately, your abaya says a lot about you. So whether you find yourself wearing it willingly, as your faithful belief of religious dress standards, by choice as a cultural, or fashionable identity, or if you’re stuck somewhere in between, try to imagine what Miranda Priestly from The Devil Wears Prada would hypothetically say if she saw you: “This Abaya has EVERYTHING to

The holy month of Ramadan is full of many different traditions in every house. However, the one tradition that we all have in common is the samboosa mania that takes over the month – but it seems like each family makes it awesomely different. We at Destination Riyadh have gathered some of the most common and popular samboosa recipes so we can all get in on the delicious action and try something new!

BASIC

Samboosa

BOUF WITH CHEESE / MINCED BEEF Ingredients: 2 cups flour

¼ cup vegetable oil 1 glass warm water salt to taste

Stuffing: White Hungary cheese or minced beef with 1 medium onion finely chopped

Preparing Bouf Dough: • Mix the oil, flower and salt in a bowl until the oil disappears. Then gradually add the warm water to the mix until the dough is created. • Form dough balls in the size of your choice then place them in a tray.

• Cover the tray with a plastic wrap and leave for two hours.

Preparing Minced Beef: • Take your minced beef out of the freezer the night before to defrost gradually. Place the beef in a pan with 1 medium sized chopped onion, sprinkle some salt to taste and fry it on medium heat until brown and onions are translucent. Then store it to the side until ready to stuff.

Directions: • Spread each dough ball using a dough roller, place about a teaspoon of stuffing, whether it’s simply cheese or minced beef in the middle of the dough as your stuffing. • Once you stuff each samboosa, seal it into the shape desired using a little bit of flour to stick the ends well together. • Fry each samboosa with some vegetable oil until golden yellow. Samboosa Ingredients: Pastry: Ready made samboosa sheets (about 50 pcs)

½ cup water or 125 ml, cold 2 tbsp corn flour

1 cup vegetable oil

Stuffing: 2 medium potatoes or 400 g 1 tablespoon vegetable oil 500g minced beef

2 medium onions or 250 g, finely chopped

1 cup flat leaf fresh parsley or 75 g, finely chopped 2 cubes Maggi Chicken Bouillon or 20 g

½ cup water or 125 ml, hot 1 teaspoon ground black pepper

CHEESE AN BUTTER

Samboosa Ingredients: Dough: 3 cups flour

Preparing the Potatoe Stuffing:

• Peel and cut potatoes to 1cm cubes and set aside.

• In a deep pan, heat vegetable oil, add potato cubes and fry until golden, then remove and set aside.

• In the same pan brown minced meat, add chopped onions and fry until onions are translucent.

• Add chopped parsley and the Maggi Chicken Bouillon and water and simmer for five minutes until liquid is absorbed. • Stir in previously fried potatoes and remove the filling from heat, cover and then cool down to room temperature. • Dissolve corn flour and cold water until smooth and milky.

1 teaspoon baking powder

Stuffing: A mix of white French cheese and white Hungary cheese.

• Place about a tablespoon of the filling on the samboosa pastry and roll to desired shape, making sure the filling is completely covered. Brush with the cornstarch mixture to seal the ends of the pastry. • Pan fry rolled samboosa in hot vegetable oil and place on kitchen paper to drain excess grease. Serve warm with a side of chili sauce.

Directions:

Preparing the Dough: • Mix the ingredients in a bowl until made into dough. • Create balls of dough and leave to breathe for about 15 minutes.

Directions: • Flatten each ball, and stuff it with the cheese mix. • Moisten the edges, fold each ball into a half moon shape and press together to seal tight. • Place on a greased baking sheet.

• Bake until lightly browned. Serve warm!


SPINACH

Samboosa Ingredients: Dough: 200g butter

100g olive oil

1 kg white flour 20g salt

200ml water

Stuffing: 6oo g spinach

50 ml virgin olive oil

1 onion finely chopped Juice of 3 lemons 1 tbsp sumac

½ teaspoon minced garlic 50 g toasted pine nuts ½ teaspoon salt

Dash of black pepper

1 cup pomegranate seeds

Preparing the Dough: • Mix the flour, butter, oil and salt in a bowl, then add water.

• Mix the ingredients well until strong dough is formed. Cover and leave for an hour to rest. • Shape the dough into small balls.

Preparing the Spinach Stuffing: • Chop the spinach to medium sized pieces.

• Pour the water into a pan and boil it, then add spinach and a dash of salt. Boil the spinach for four minutes then rinse it immediately using a strainer and place it in a bowl with ice water to preserve it’s color. Then rinse the spinach well of the water.

• Pour the oil in the frying pan, add the onion and a dash of salt, stir the onions on low heat until they become transparent. Then add the garlic and spinach and cook all together. Season with the mix of salt and pepper. • Leave the spinach mix to cool down.

• Mix in the lemon juice with the sumac to add flavor then the toasted pine nuts are added. Directions: • Flatten each ball,

• Cut each piece of dough using a circular template, and place one teaspoon of stuffing inside each circle. Then fold into a pyramid shape and seal well.

• Cover the dough and leave to breathe in the fridge, then it’s ready to fry. • To serve, fry the samboosa in hot oil and serve immediately. The samboosa can be frozen for later use

WITH CHICKEN AND SUMAC

Ingredients: Dough: 3 cups flour

Seasoning: 3 onions finely sliced into long pieces 3 tbsp olive oil Salt to taste

Pepper to taste Cumin

1 teaspoon ginger powder

½ lemon or a whole lemon

½ cup vegetable oil

Chicken broth

1 tbsp sugar

Finely chopped green pepper (optional)

½ teaspoon salt

Preparing the chicken: • Boil the chicken • Add the ingredients one by one. • Prepare the seasoning in the meantime. • Quickly roast the onions in a pan with the olive oil. • Don’t over roast it. • Add the chicken slices. • Start seasoning with the salt, pepper, cumin, ginger, lemon and green pepper. • Add the chicken broth after well seasoned. • Add the sumac at the very end. • Leave to cool down in another pot for about half an hour.

Preparing the Dough: • Mix all the ingredients • Form small dough balls • Place in a tray and cover • Leave to rest for half an hour. Directions: • Pre-heat the oven to 180 degrees. • Flatten the dough balls and stuff each one with the chicken mix, then fold and seal into the desired shape. Moisten the edges to seal well. • Place all the samboosa in a tray. • Mix of 1 egg yolk, 1 tbsp milk and 1 tbsp vegetable oil and spread on top of each samboosa to give it something extra. • Place in the oven for about 20 minutes; check on it every few minutes until golden brown. Serve warm!

Samboosa Ingredients: Pastry: Ready made samboosa sheets (about 50 pcs)

Directions: • Defrost the samboosa sheets the night before.

TIP:

• Take out one by one and stuff with one cheese square per sheet.

Stuffing: 1 big box of Kiri cheese squares

• Fold into a samboosa triangle.

Vegetable oil

• Fry all the sealed samboosa's in a pan with deep hot vegetable oil until golden yellow.

Mix of flour and water Sugar syrup

Sesame (optional)

• Seal using the help of the flour and water mix.

SPRINKLE SOME SESAME SEEDS ON THE TOP FOR DECORATION • Using a strainer, drip out the water from the samboosa.

• Dip each one into a bowl of sugar syrup. * You can find this at any local grocery store Serve warm or cool.

MORE STUFFING YOU MIGHT LIKE... Ground beef sauteed with onion and parsley, add cumin, cardamom, salt, pepper, cinnamon and dill.

Mix sauteed ground beef with onions, 1 can of Kraft shredded cheddar cheese, add spices.

• NIYYA Establish your intention. • TAKE IT EASY Don’t overwhelm yourself. You know yourself and your capabilities, so set realistic goals.

• MAKE A SCHEDULE AND STICK TO IT! Specify a number of pages to read for each day. Reading after prayers can be helpful, and before going to sleep as well. NOTE: The Qur’an is around 600 pages long. Ramadan is upon us once again. As a Fitness Professional working in Riyadh, I have experienced three Ramadans. I want to share my tips to staying in shape during this time and answer some of the questions that I am often asked. During this time of the year, your life will turn 180 degrees. Sleeping, eating and exercise habits will change. Many people believe that it is inevitable that they will gain weight and lose fitness; however, this should not be the case if you can commit to doing things correctly. Fasting in general should be a time to flush out toxins and impurities. If the body is exposed to poor lifestyle and eating habits for a long period of time, it tends to become very toxic. Fasting can help eliminate these toxins and impurities from the system. So why not seize this opportunity to actually lose weight and feel better?


A BIT ABOUT FASTING Depending on the length of the fast certain things happen in the body. When the body is in a fasted state, we no longer have a surplus of nutrients to absorb. As a result it will utilize other energy reserves such as glucose in the liver, muscles and fat to support bodily functions and energy to move.

Now that you’ve learned the advantages of fasting, let’s move on to the Ramadan Fitness FAQs (Frequently Asked Questions). Hopefully, you will get the answers you need and hush out wellness concerns you may have during the holy month.

SHOULD I EXERCISE IN A FASTED STATE, AND IF SO, WHAT TYPE IS BEST? This is a tricky question because not only are you not eating but you are also not drinking water. If you choose to exercise before iftar I recommend avoiding situations where your workout heavily taxes your body. For example exercises such as intense aerobic work or other situations where you will sweat a lot. I also recommend that if you choose to exercise in a fasted state, you do so close to the time of breaking your fast so you do not have a long period of time before refueling your body.

WHAT KINDS OF EXERCISES SHOULD I BE DOING DURING RAMADAN? In my opinion, Ramadan should be a month where you look at maintaining your fitness levels and cleansing the body. Based on my experience, the intensity that I train clients reduces ever so slightly as the body is undergoing a lot of change and stress. Too much stress can have an adverse effect on health.

I STRONGLY ENCOURAGE PHYSICAL ACTIVITY DURING THIS MONTH TO MAINTAIN A HIGH FITNESS LEVEL. HERE ARE MY SUGGESTIONS:

CARDIO WORKOUT Before Iftar There are opinions that cardiovascular work in a fasted state encourages fat burning as the body has used all other fuel sources. That said, it can be difficult, and some people do not respond well to this and may feel dizzy, sick and lack energy throughout the rest of the day. However others adapt well, and I suggest that if you do opt for training before breaking the fast then you do so the hour before. This will enable you to refuel immediately after. My advice is trial and error. Give it a go! However, I would stress that if you feel dizzy or lightheaded then stop immediately.

After Iftar

Cardio work can be done after iftar as normal. Remember to allow food to digest. As a general rule, two hours after a main meal should suffice.

RESISTANCE WORK Before iftar I would not recommend lifting weights in a fasted state. Ideally train with weights after breaking the fast. Weight training in a fasted state will further deplete the muscles and you do not want to lose lean muscle tissue. 68 DESTINATION RIYADH

Ideas of suitable training while fasting may include: low impact training such as swimming, gentle cardio, yoga and Pilates. My advice is to listen to your body.

HEALTHY EATING TIPS FOR RAMADAN Enjoy this spiritual month with friends and family. Ramadan is a month not to worry too much about your food; however, take this with a pinch of salt- it is also not the time to binge and gorge on anything you can get your hands on.

It can be a very cleansing time if done correctly and some clients actually find that they lose a little weight during this time. Ideally your diet should not differ very much from your normal food and should be as simple and as healthy as possible. Your diet should be such that you maintain your normal weight. In view of the long hours of fasting, slow digesting foods including fiber- containing foods should be consumed rather than fastdigesting foods.


FIBER-CONTAINING FOODS ARE STARCHY VEGETABLES, VEGETABLES LIKE GREEN BEANS, PEAS, MARROW, SPINACH, AND BEETROOT, FRUIT WITH SKIN, WHOLE GRAINS, NUTS AND SEEDS. THE FOODS EATEN SHOULD BE WELL-BALANCED CONTAINING THOSE FROM EACH FOOD GROUP — FRUIT, VEGETABLES, MEAT/CHICKEN/FISH, GRAINS AND DAIRY PRODUCTS. FRIED FOODS ARE UNHEALTHY AND SHOULD BE LIMITED. THEY CAUSE INDIGESTION, HEARTBURN AND WEIGHT PROBLEMS.

I often get asked by clients what they should eat during Ramadan, so to guide you better, below is a sample of what a balanced meal plan looks like: MEAL 1 (Iftar)

• Large glass of water with dates (practice moderation) • Scrambled eggs and salmon • Optional brown whole wheat bread • Small fruit salad with seeds • Optional low fat yogurt

MEAL 2 (after Eisha) - largest meal

• Water • Lean steak or chicken breast or turkey fillet or fillet white fish • Starchy vegetable such as sweet potato or if you eat grain, whole meal rice or pasta • Loads of vegetables or a large salad

MEAL 3 (Sohour)

• A smaller version of Meal Two and omit the rice or sweet potato.

Suitable SNACK throughout

• Unsalted nuts • Sliced vegetables with almond or peanut butter dip • Fruit in moderation, opt for berries

TRY TO AVOID Anything hot, spicy or salty. Too much salty food will make your body retain water and give you the feeling of being bloated, while spicy foods induce thirst. Sweets, pastries and sugary foods. These are fast burning and will cause a rapid rise and drop in blood sugar levels. Drinking tea at Sohour should be limited as it makes you pass more urine, therefore taking with it valuable mineral salts that your body will need during the day. Avoid fruit before commencing your fast. It will cause blood sugar and insulin levels to rise, which may leave you feeling hungrier sooner than you want.
