Award-winning Chef Vincenzo Di Tuoro has become a revered Italian chef globally. With an impressive background of culinary training and a sophisticated palette he is a chef who continues to prove his talents, passions and food skills worldwide. Born in Naples, Italy, the city traditionally credited for the birth of the pizza, Vincenzo grew up in a family that lived, ate, and breathed food, for their lineage was steeped in more than three generations of food experts, food artisans, and chefs. As a child, his playground was in one of the oldest pastry shops in Naples, his father’s kitchen. Here he began his quest for knowledge and passion for food. After achieving a degree in Hotel Management, he placed his sights on London. His drive, skills and talents captured the attention of the famous celebrity chef, Gordon Ramsey. Chef Ramsey recruited Vincenzo to help launch and build the renowned Gordon Ramsey Restaurant at Claridges Hotel in London. During his two years with Chef Gordon Ramsey, he helped in attaining the restaurant’s first Michelin Star. His determination for spreading good food pushed him to help in launching yet another acclaimed restaurant in central London which is run by the famous and revered Chef Maurizio Morelli. Here he spent another two years sharing his exquisite traditional pastas and breads with Londoners. From India to Switzerland with the Hassler Hotels, to the Spanish Steps in Rome, and finally to Tokyo, Chef Vincenzo has been leaving his mark and awarding many fine dining restaurants with accolades and acclaim. His journey brings him to this part of the world. In early 2013, Vincenzo received a call from a man who is synonymous with hospitality, luxury and fine dining, Mr. Hani Al Attas, Owner and President of Leylaty Group. With this collaboration of Leylaty’s unique level of excellence and Chef Vincenzo Di Tuoro’s passion for Italian food came the birth of Il Limone, an authentically Italian restaurant unique in its cuisines.

THOUGHTS TO Fresh Juices!

While we appreciate the wide variety of juices available at grocery stores, we know that despite what the labels say they are not completely healthy. We wish fresh juices were available just as easily as they aid digestion, boost the immune system and energize, while boxed juices are full of artificial flavors and preservatives. Many people have reported that their juices have grown mold or fermented! This is because even a tiny bit of air through a needle-sized hole in the box can ferment the (truckload

of) sugar, turning the juice into a form of alcohol! Secondly, while many grocery stores and restaurants do serve fresh and healthy juices, they still add in a lot of sugar. So if you’re looking for 100% fruit juice, you’ll have to request that they don’t add anything. The difference can be tasted right away! Visit places such as Juice World, follow local juicers such as Quench-Me on Instagram for healthy fresh drinks. Let’s hope for more healthy juice providers around town.

Thumbs Up to... Enwani and EasyGet

Services provided by organizations such as Enwani and EasyGet are increasing in popularity within the city. Follow easygetjed on Instagram, or call them on 920009997 if you’re not bothered to go out but you need groceries or anything picked up from certain places. They’ll go do your shopping at Danube, get you a bite to eat from any restaurant of your choice, or even pick up your laundry. Enwani is a service (and a smartphone application) in which your mobile number is your address. Register and experience home deliveries made easy! Services such as these two make life easier for citizens, especially ladies who don’t have drivers.

Thumbs Down to... No Men After 7 p.m.?

When darkness falls in Jeddah, the security guards at some malls and restaurants start filtering out their shoppers and guests. Here’s who’s not allowed after 7 p.m. (or 8 p.m. in some places) on weekends: a single man and single men in groups. We’ve even heard of incidents where the ladies head inside first while the man parks the car but when he gets to the entrance, he’s stopped on account of being alone! So if a few guys decide to get together for a fun dinner on the weekends, some restaurants won’t even let them inside! Restaurants that employ this policy include the Courtyard as well as malls such as Red Sea Mall. Speaking for all the men in Jeddah: we hope this won’t last too long! Exception: for business meetings on weekends, a group of single men should call restaurant managers and schedule.

AN EXPLANATION

Many newcomers are taken by surprise on the day of Eid when the sounds of animals echo on the streets that are splattered with the blood of cows, goats, sheep and even camels. From that perspective, the day of Eid is a vegetarian’s nightmare. After hearing the many unsettling stories of newcomers, Destination decided to clarify the misconceptions of Eid Al-Adha. You might even be comforted in knowing that residents who are born and raised in KSA are sometimes just as surprised.

Muslims celebrate two Eids a year. The first is Eid Al-Fitr, which comes after the month of Ramadan and the second is Eid Al-Adha which is celebrated after the yearly pilgrimage to Makkah called Hajj.

When It Began

The Prophet Ibrahim was given the ultimate test: he was ordered by God to sacrifice his beloved son. His son, the Prophet Ismail, made his task easier by being patient and readily agreeing to his own death. However, at the last minute the angel of God stops Ibrahim, telling him that he had passed his test and rewarded him with a sheep to sacrifice instead and enjoy. So every year on the occasion of Eid Al-Adha, we commemorate his strength, loyalty and faith.


EID STORIES... Anousha Vakani: Only during Eid will you see farm animals roaming the streets so freely. A few years ago, the day before Eid, I was crossing the street as a dog came running towards me because a goat was chasing him. The dog and I collided, I fell down and broke a tooth and the dog came tumbling after. We all know what happened to that goat the next day. The animals that are sacrificed must be healthy and must meet certain age and quality standards. The sacrifice must be as swift and as painless as possible and one animal should be kept from witnessing the sacrifice of another as that puts them in a panic.

Hana Jazzar: Ask any family about Eid Al Adha and you'll surely find a few "horror" stories. This is how it went with me over 20 years ago. A few days before Eid, my cousins and I went over to my grandfather's house and found an exciting surprise; Grandpa had gotten us a "pet" goat, HORRAY! Little Lambi was treated like a king: groomed and petted, fed and showered. Fast forward to Eid morning, we go over to grandpa’s for a lavish Eid breakfast then off to the garden to play with Lambi but he was nowhere to be found. We thought he ran away. The week went on to more "Meat Feasts" with all the famous lamb dishes: moqalqal, mandi, mabshoor, etc. It was all about MEAT! It was only when the week ended that we were confronted with the horrific truth; we ate Lambi! Shocked and disgusted, we swore never to eat lamb again! As time passed, some of us got over it and went back to eating and enjoying meat. Others, not so fortunate, have been scarred for life and truly never ate lamb again. Once children get the gist of Eid Al-Adha, they actually enjoy it. The animals are brought to the house weeks before Eid, and the children feed and play with them, and are accepting of their fate as sacrificial meat.

Walaa Al-Attas: When my brother was six years old we got a sheep a couple of weeks before Eid Al Adha. At that time, he didn't understand the connection between Eid Al Adha and sheep, so he was thrilled about our new “pet.” He would pet it and play with it everyday. On the morning of Eid when the sheep was going to be sacrificed, he was very excited until he realized what was happening. Today my brother is 30 years old and up until a couple of years ago, he wouldn’t eat meat because of that incident! The meat is divided into three portions: one for the poor and hungry, one for relatives and neighbors and the last for oneself. An essential part of the sacrifice is to share and to distribute the meat ensuring that the less fortunate do not go hungry.

What is your signature dish? I don’t believe in having a signature dish as it limits your creativity - your best dish today should be different next week. You should constantly push the envelope and look for new recipes.

What challenges did you face as a Saudi chef? Honestly, I haven’t faced any challenges as a Saudi chef apart from a lack of a few high quality ingredients that we have to import from Europe. I have also faced challenges in opening a business, but that's another story.

What are Pink Camel’s plans for the future? We are focusing on perfecting the workflow and coming up with new pastries every month. We aim to expand to Riyadh by next year, insha’Allah.

What are your favorite dishes to cook and eat? As much as I love desserts I also love to cook savory food. My husband and I love hosting dinners; we create new menus depending on what influenced us from our recent travels so our favorite dishes are constantly changing. There are many dishes I love and even more that I can't wait to try.

What are your everyday duties at Pink Camel? As a chef I have to keep track of quality control and regularly come up with new pastry and macaron flavors. I also look for unique products that revolve around the pastry theme for our store. Tell us about your journey into the culinary world. I have always loved food and found myself heading to the kitchen after a stressful day in the office. I used to work in media buying and planning in Dubai but after three years, I quit my job and decided to go to culinary school (Le Cordon Blue in Paris). CHEF MAJDI SAADOUN Executive Chef / Rio de Janeiro What is your signature dish? One of my signature dishes is a dish I call RDJ. It consists of boiled potatoes stuffed with cheese; it is fried and then barbecued to perfection. RDJ is one of the reasons I decided to open my own restaurant. What are you doing at present and what are your plans for the future? I am now the chef at my own restaurant, Rio de Janeiro. I am also studying business management at King Abdul-Aziz University in Jeddah. Hopefully, within the next two years I will continue my studies and obtain my MSc degree and PhD from the United States. In regards to my career, I hope to open the biggest chain of restaurants in the Kingdom. What inspired you to become a chef? Tell us about your journey. In addition to the fact that I love food and the kitchen, my passion for cooking has been ongoing and growing for over 13 years. To me cooking is a form of art, a world of constant creativity.

What challenges did you face as a Saudi chef? I’ve been a professional chef for three years, specifically since the opening of my restaurant. I’ve faced a lot of challenges, but the main difficulty was getting society to accept that a Saudi can be a chef. For a long time I was receiving shocked expressions when I told people I’m a chef. When customers visit the restaurant and see me cooking in front of them they also reacted with disbelief. Simply stated, maybe they lack trust and confidence in Saudi chefs. But times have changed and society is thankfully beginning to accept it. What are your favorite dishes to cook and eat? Hmm… To be honest, lately I haven’t been eating much, not even at my restaurant. You can say I’ve been feeling full from the smell of food. So for the time being, I’ve been living on salads. What would you tell an aspiring chef? Most importantly, you need to have great passion for cooking, because you’ll have to jump through lots of hoops for it to become a success here. If you love it wholeheartedly, you’ll make it happen!

What are your everyday duties at Sweet and Savory? As the Executive Chef, I ensure everything in the kitchen goes the right way and I maintain the quality of our daily products and orders. Fish Fillet with Lemon Butter Banana and Sautéed Purslane Ingredients:

• 4 pcs. banana (thick slices) • 150 g square piece of halibut, or any type of fish fillet • 150 g purslane (reg'lah) • 1 tbsp. olive oil • 4 tbsp. butter • Juice of one lemon • ½ tbsp. lemon zest • ½ tsp. cinnamon • 4 tbsp. of breadcrumbs • 1 tsp. cardamom (powder) • ½ tbsp. salt • 6 pcs fried mint leaves • ½ onion (fried slices)

What is your signature dish? Asado Beef BBQ with red grape juice and Dell.

Method:

What is your favorite dish to cook and eat? Red okra with meat and white rice with garlic.

• Dip the banana pieces into the mixture, arrange in a tray and place in the oven at 180 degrees for 10 minutes.

What are your everyday duties at Rio de Janeiro? At the moment, I supervise the operations of the restaurant, while my partner Chef Majdi Saadoun has taken full control of the restaurant and keeps the base Brazilian flavor intact. What inspired you to become a chef? First of all, I don’t really like routine but I love art and creativity, so different flavors attract me. To be a chef everyday is like a dream that I don’t want to wake up from. Secondly, my inspiration is Chef Jamie Oliver and I have learnt a lot from him. Why Brazilian Cuisine? It started with my wife, Chef Vivian Dasilva Vieira, as she is a professional cooking instructor, and adding to that were my visits to Brazil and my experiences with their food. • Add two tablespoons of butter, cinnamon and a pinch of salt to the lemon juice and whisk until well combined.

• Mix the breadcrumbs, cardamom and lemon zest together.

• Cover the top of the fish fillet with the breadcrumbs mixture.

• Add one tablespoon of butter in a warm skillet, roast the fillet on one side until the breadcrumbs are golden - about five minutes and add a pinch of salt on top.

• Place the skillet in the oven on 220 degrees for two minutes and bake the other side for no more than one minute. • On a hot pan add olive oil, purslane, a pinch of salt and black pepper for seasoning. Mix for a few seconds and take off the heat.

Serving:

On a flat dish, arrange the ingredients in layers. Starting with the banana, then the purslane and then the fish. Garnish with fried mint leaves and fried onions.

Social media is massively popular in Saudi Arabia. This fact is well known and established. There is nothing revolutionary about that declaration anymore, and yet the impact of social media still holds surprises despite its strong footing. Enter Faris Al Torki, entrepreneur and social media wizard in every sense of the word. He is at the forefront of utilizing ‘social business.’

Al Torki’s ability to manipulate, operate, and create an entire brand through various social media avenues should be a case study for public relations firms who are still confused about the full utility of social media. Al Torki is the founder and owner of #f6or_faris, a breakfast restaurant in Jeddah, whose existence has been the culmination of a series of unexpected flukes and social media ingenuity. “Many organizations have social media presence just because they feel that they ‘have to’ or its trendy, but very few have truly grasped the essence of social media in business, or what is referred to as social business,” said Bilal Hallab, founder and head social business strategist at The Social Clinic, a social media agency and consultancy based in Jeddah. Al Torki’s entire business model relies on grasping the nuance of the impact of social media.

“My idea of breakfast has always been a cup of tea or coffee,” states Al Torki, “until I collapsed after I started training regularly for the Jeddah marathon a while ago.” The fall landed him in the hospital when he was dispended with the advice to eat healthier or else suffer more dire physical consequences. Taking a page from today’s plugged in society, Al Torki decided to post a picture of his breakfast daily as he embarked on discovering this previously ignored meal. Besides breakfast, Al Torki seems to also have discovered the Holy Grail. Although social media helps with creating and establishing a brand, Al Torki explains, “#f6or_faris, the brand, was created even before the concept of the restaurant. The loyal and immense sense of belonging by our followers to the establishment is due to that branding.”

Relating to customers is a simple enough task, but actively engaging with followers in the virtual world is how loyal customers in the real world are created. Hallab agrees with the level of involvement required to establish a genuine rapport with consumers. “When an organization involves itself in social media, it is committing to a social relationship with its consumers online,” explains Hallab, “it is promising to listen to them, co-create its future products and activities with its online community, and above all yield the brand reputation to online followers.”

There is a level of commitment required to maintain an online presence that is dynamic. “The feedback from followers of #f6or_faris was immense! On the days I forgot to post a picture of my breakfast, I’d get demands,” Al Torki said. “I started to use the hashtag because some of my followers were from different time zones and requested the hashtag to facilitate their browsing.” Al Torki then decided to separate his personal account and created an account dedicated specifically to his exploration with breakfast, hence the hash tag, and eventually the restaurant name. The response he saw from that separate account was overwhelming. Followers asked for advice on what and where to eat, replied to his images with images of their own, and started requesting the address of the #f6or_faris eatery. Al Torki had to explain repeatedly that no such place existed, before eventually succumbing to the public’s demands. The DESTINATION JEDDAH 41


#f6or_faris capitalized on the clamoring loyal following and opened up the restaurant four months ago. Everything in the restaurant is a validation of social media. There is a television screen above the cash register broadcasting recent tweets, retweets, mentions, and hashtags. “In social media, there is ‘social’ and ‘media.’ It is a two-way communication channel to get close to and build brands with customers- something many organizations are not doing,” stated Hallab. The lively exchange between #f6or_faris and its customers guarantees that the restaurant remains relevant and the established relationship is kept animated. Technological advancement has made it extremely easy for people to express themselves, especially in a society like Saudi Arabia where for a long time platforms for expression for average citizens simply did not exist.

“In 2012, Riyadh ranked tenth city worldwide in number of tweets per month, more than 50 million on average,” explains Hallab. “Twitter growth penetration skyrocketed in the same period of time at 600% versus 300% global growth rate.” The high number of Twitter users in Saudi Arabia make perfect sense. “Social media is massive because we’ve been listening for a long time, and now we finally have an opportunity to speak,” said Al Torki. Not only is the restaurant’s inception abnormal, but the idea of a breakfast place in Saudi Arabia is still novel. “People initially were laughing because I only wanted to serve breakfast- Saudi society usually eats pretty late,” said Al Torki. The lack of empty tables on a Saturday morning indicate that there are more than a couple of people in Jeddah who don’t mind waking up early for breakfast, just search the #f6or_faris hashtag on both Twitter and Instagram.

Avery has been living in Jeddah for the past five years with her husband and two teenage daughters. When she moved here, she realized how much spare time she had and decided to use this time wisely by creating her Cooking Exchange Program. Avery was always busy while she was living abroad, whether it was with driving her children to and from school, grocery shopping or just running errands. Due to lack of free time, Avery did not have time to cook regularly and therefore she and her family became accustomed to easy microwavable meals. When she moved to Jeddah five years ago things were different- she lived in a compound where everything she needed was nearby and her daughters began taking buses to and from school, therefore leaving Avery with plenty of free time. With this spare time on her hands, Avery began experimenting in the kitchen. Pleased with the results, she decided to share and exchange recipes with other housewives in her compound. Women from different cultures and backgrounds would visit Avery in her kitchen to learn a certain dish, and in return they would teach Avery a certain dish as well. With that, her Cooking Exchange Program was created. Once both parties have agreed on what recipe and dish to exchange, they go grocery shopping together in order to make sure all the required ingredients are available at a local supermarket.

A Beirut-native living in Dubai, Nadine Kanso studied Communication Arts and Advertising Design at the Lebanese American University. Nadine nurtured her visual artistry and developed her lifestyle brand Nadine K, which features home accessories, apparel and art works. Her new jewelry line, ‘Bil Arabi,’ is considered a work of art and was displayed at Athr Art Gallery in Jeddah. We had a chance to meet Nadine and ask about her beautifully golden and calligraphic jewelry line.

JEWELRY DESIGN IS AN ART AND WHEN PEOPLE COME INTO THE GALLERY IT FEELS EVEN MORE INTERESTING AND THEY SEE THINGS DIFFERENTLY.

What is the process of making these wonderful pieces? I design the collections and do the calligraphy myself, but when it comes to production I have a team at the workshop who actually do it for me. I give them the design and they apply it. The pieces we produce are hand-made which makes the brand more attractive to a lot of people. I have always said that I am not a jewelry designer. I studied Graphic Design and Communication Arts back in Beirut, which I guess was a good base to be a designer in general. I think if you like to design and you are inspired and creative you can use this tool to design many things. How do you see ‘Bil Arabi’ being worn? What is your line’s style sensibility? Bil Arabi has a strong identity. To start, it’s about the name I chose; it has a story and a passion for our culture and language. The Bil Arabi pieces of jewelry can be worn by any woman or man who has a certain pride in our identity and also a certain love for the beauty, shape and form of Arabic calligraphy. I have pieces that I wear through out the day all the way to the evening. These pieces are bold yet subtle.

What are some interesting facts about jewelry-making that you learned that aren’t well known? It is a learning process. I have been doing it for the past seven years and I’m still learning what can be achieved and produced and what cannot be. I have learned that all stones are delicate, including diamonds. Being shown in a gallery is a unique thing for a jeweler. What are the benefits (or drawbacks)? Being shown at an art gallery in my opinion is always a plus. At the end of the day, jewelry design is an art and when people come into the gallery it feels even more interesting and they see things differently. They appreciate the handwork and how the pieces were made, not only designed. What, in your opinion, are other good jewelry brands? I am a big fan of Cartier and Bulgari; they are amazing jewelry houses that have been here for ages and their designs are timeless. The evolution as well is absolutely brilliant. Triple Layer GODIVA Dream Cheesecake By Abeer El Sayed

So you want to make your friends a dessert they won’t forget? Maybe a cake they won’t believe is homemade? Then you should definitely try baking the triple layer Dream Cheesecake. This cake is time consuming, but once it’s done, you’ll know it’s worth it!

You’ll need.. 9” spring form pan 2 cups crushed chocolate 3/4 cup white sugar 1/4 cup plus 1 tablespoon butter, melted 16 ounces cream cheese, softened 3 eggs 1 teaspoon vanilla extract 3 ounces Dark Melting Chocolate (from Godiva) 1 1/3 cups sour cream 1/3 dark brown sugar, firmly packed 1 tablespoon all-purpose flour 1/4 finely chopped pecans 1/4 teaspoon almond extract 5 ounces cream cheese, softened 74 DESTINATION JEDDAH


DIRECTIONS: 1- Preheat the oven to 325° F. 2- For the bottom crust of the cake: Combine ¼ cup white sugar with the butter and crushed chocolates. Place them in the pan and press firmly on the bottom and the sides. 3- For the first layer: Mix eight ounces cream cheese and ¼ cup sugar with a mixer. In a separate bowl, beat one egg, ¼ teaspoon vanilla, melted dark chocolate and 1/3 cup of sour cream. Mix these two bowls together then spoon them over the crust in the pan.

4- For the second layer: Beat eight-ounce cream cheese, brown sugar and flour together until fluffy. In a separate bowl, mix one egg, ½ tablespoon vanilla and the pecans. Mix these two bowls together then spoon them over the previous layer in the pan. 5- For the final layer: Beat five ounces cream cheese with ¼ cup sugar. Add one egg to the mixture then beat again. Mix those with one-cup sour cream, ¼ teaspoon vanilla and the almond extract. 6- Place it in the oven for one hour then let it cool for another hour.

For the frosting: Combine six ounces of melted dark chocolates with butter until smooth. Then mix thoroughly with ¾ cup powdered sugar, two tablespoons water and a teaspoon vanilla extract. Leave it to cool then spread the warm chocolate over the cheesecake.

LOCAL STARS ALONG JEDDAH’S CORNICHE There’s something about that neon glow by the beach at nighttime that looks like something out of a fairytale, and if you’ve never had a steaming bowl of baleela or a vanilla and chocolate swirl ice cream from these neon kiosks, you’re missing out on a local legend. These kiosks are spread out all over Corniche and are noticeable from miles away with their neon lights, colorful toys and other beach related things. While there are other options available such as Barnies and Hot & Crispy, the traditional kiosks will always be a favorite.

Baleela is a traditional chickpea dish that is slightly tangy and slightly sour but extremely delicious. It is served in a plastic bowl and ranges from 3 to 10 riyals depending on where you’re buying it from and the quantity you ask for. It is piping hot and perfect for a bit of comfort on the mild winter evenings of Jeddah, and even for a little taste of home on sweltering summery nights. The chickpeas are soaked, washed and boiled until soft. While you can choose what toppings you want, most often it is mixed in vinegar, lots of different spices and a mixture of cucumbers that are pickled and reddened in lemon juice, salt and sumac. Baleela is the perfect comfort food, and will always keep you coming back for more.
