Preparing My Own Lunchbox With Celebrity Chef Khalid Arif
“Preparing My Own Lunchbox” was an event aimed at raising diabetes awareness. It took place at the International Diabetes Care Center (IDCC) on Oct. 17, and was focused on children with diabetes preparing their own school lunch boxes in a healthy way and learning how to count the carbohydrates in their meals.
Chef Khalid Arif talked to the children about the importance of healthy eating and how to prepare food for a diabetic diet. IDCC’s goal is to have patients feel in control of their diabetes and feel more positive about it.

The Visual and Digital Production section at Effat University won the Encouragement Award at the National Indian Animation Movie Festival, Chitrakatha, for its movie Tita P. by third year student, Bushra Al Andijani. Effat University was the only representative of KSA and the Arab world and participated with two movies.
You were the first to start a football club in Jeddah. What made you believe it would work? I was never allowed to join the local professional clubs when I was growing up so I always felt that it was the reason I never realized my dream of being a football player. I just wanted to give young players the chance to enhance their skills without the need to join a professional club and more importantly enjoy themselves in a safe, positive and supportive atmosphere.
What's your favorite part about the job and what difficulties did you face reaching this point? I initially started the club with four boys and it stayed like that for about a month but the numbers started to increase. Just when my club was gaining momentum I hurt my ankle. The doctor put me in a cast and crutches that I needed to wear

for six weeks. I had to continue so I removed the cast, strapped the ankle and continued to coach. I was just afraid that if parents saw me on crutches and a cast, it would have alarmed them and they may have stopped sending their children. The club was just starting to pick up steam so I did not want that. I feel that moment was pivotal and it could have ended there. EVENTS & HAPPENINGS 1. Jeddah’s Pink Zumba Party This annual event is held in honor of breast cancer survivors and their supporters. It took place for the first time in Jeddah on Oct. 14 at Al Basateen compound. Zumba Warriors Nouf Khayyat, Christen Mallouk, Hana Saban and Nour Jabri planned this event to raise money for breast cancer treatments. The event
was a huge success and raised a lot of money to pay for mammograms and chemotherapy medications distributed at KAU hospital. The event featured Zumba exercises and a short lecture by Samia Al Amoudi, one of the strongest 10 women in the field of breast cancer, who showed a video on the cause as well.
2. Galderma Launches Restylane
Galderma launched the Restylane Proof in Real Life campaign this October for the very first time in Dubai. The event was exclusive, held at the &Lounge at the Address Dubai Marina Hotel. The purpose of the event was to demonstrate the natural-looking results of its aesthetic treatments. Celebrity star twins Kelly and Stacy Franklin attended this event in Dubai to share their experience using Restylane. Why is cancer treatment so expensive?
The diagnosis and treatment process is costly. It involves hospital visits, tests, surgery, hospitalization, radiation and chemotherapy. Also, the high cost of medication is due to the R&D involved in developing the drugs. Luckily, cancer treatment in KSA is generally covered by insurance providers and may be offered for free in public hospitals.
What types of cancer should women in KSA be wary of? As an ambassador of 10KSA, I wrote last month about cancer. Contrary to common belief, cancer is no longer a death sentence. In many cases it is, but progress in the field has been immense and is often lost between professional publishing, popular science and mainstream interpretation. This week, I managed to steal a few minutes from a cancer geneticist with remarkable contributions in her field. Her name is Dr. Malak Abed, a young Saudi doctor who specializes in molecular genetics pathology. She studied and worked in the U.S. since 2005 and her journey was full of sweat and motivation. Starting with education, Dr. Abed earned an M.D. from King Abdulaziz University. She became a resident in pathology at Georgetown University Hospital, then went on as a fellow at UCSF and Harvard Medical School. Pioneering the third wave specialty coffee movement in Jeddah, the recently opened Medd Café and Roastery has become an instant favorite amongst artisan coffee lovers. Medd Café is a place where one can see the world’s much loved beverage prepared with astonishing level of intricacy and care. In the multi-storied coffee shop, one can’t help but notice the rustic look of the place. The place looks like a mini industrial factory that’s been converted into a coffee shop. Obviously, it was done purposely; the minimalistic décor gives the café a much needed incongruent look from the rest. On the ground floor the brew station stands, where all visitors can watch their coffee being made in front of them. On the upper floor that has a larger sitting area is where one can catch beautiful vistas of the Red Sea through the glassed wall.

THE COFFEE
Preparing good coffee is like a salutary ritual here. The coffee connoisseurs can be seen at the brew station or roaster tweaking with copper kettles and adjusting the sophisticated coffee apparatus. The peculiar looking coffee apparatus – some of which are not found in any other coffee shop in the city, sit on the brew station. From narrow funnels and vacuum coffee makers to the AeroPress, one could mistake the space for a chemistry lab.

Medd Café and Roastery also focuses on the environmental footprint. At the café, all types of paper they use are either recycled or upcycled, even the coffee bags.
The business is setup on a cooperative business model. The five partners, Ali Alghazzawi, Aisha Wazne, Salem Bajnaid, Sultan Alsawaf and Mai Julaidan, are all Saudis and work full time at the café. They share a love for coffee and are connoisseurs specializing in various aspects of coffee making. All partners have invested the same amount of capital in the business and each one of them possesses one vote. This was purposely done so that every partner has equal rights and sharing of profits. Instead of the conventional vertical hierarchy model used in other places, Medd Café has the organization chart vertically organized.
We source our coffee beans from organic farms that are involved in the fair trade and are on high altitudes. The higher the altitude the better the coffee. — Salem Bajnaid
Medd Café and Roastery even sells coffee beans to customers and other businesses. While a good portion of the quality of the coffee is dependent upon the farm that it’s sourced from, it is also equally, if not more dependent, upon the roaster and the barista preparing the coffee. It’s safe to conclude that the fad of coffee drinking isn’t going to die anytime soon. What remains to be seen is if Jeddah is ready for the third wave specialty coffee movement. So it is no longer a hassle to locate or buy organic foods. Don’t slack off! Organica established its name in the world of organic farming and pesticide free produce. Located in Yanbu Al Nakheel, the farm produces a wide variety of vegetables, dates, free-range eggs and lamb meat.

Sahal and Saud Numan purchased the farm in the early 90’s and years later, Asaad Numan, Sahal’s son, took it to the next level. He started the e-commerce delivery platform through the Organica website. Numan explains, “Organic farming is a technique involving the cultivation of plants and the rearing of animals in natural ways. This process involves the use of biological materials and avoids synthetic substances to maintain

soil fertility and ecological balance. Organic farming makes use of pesticides and fertilizers if they are considered natural.” Numan believes that the organic food movement is paramount to the Saudi society. “The movement in KSA will definitely pick up and with the encouragement of the Ministry of Agriculture – we will see more Saudi farms that will convert to organic farming and supply more organic food to the people.”
In early 2011, the Saudi National Organic Logo was created. This seal is only allowed on foods that contain at least 95 percent organic ingredients. The term,
“made with organic ingredients,” means the product contains at least of
70

What are Chakras and what do they do? Chakra literally translates to wheel or disk. In yoga, Ayurveda is a term that refers to wheels of energy throughout the body. There are seven main chakras which align the spine, starting from the base of the spine through to the crown of the head. To visualize a chakra in the body, imagine a swirling wheel of energy where matter and consciousness meet. Awareness to which of your chakras are out of balance is key to aligning them. Tell us about what you do. I’m a graphic designer and an illustrator. I studied graphic design at Dar Al Hekma, but my illustration history dates back to early childhood.
What is the inspiration behind your illustrations?
I don’t really know. I think it is self-discovery. Most of the time, I draw my feelings in an attempt to find my true self, uncover my real identity and explore what it means to be authentic. Sometimes I use my imagination as a source of inspiration too. Other times, there’s no inspiration really; it’s just the need to get the heaviness of feelings off of my chest.
So far, I’ve recreated the sketchbooks and made wooden bookmarks, tote bags, handmade necklaces and canvas prints. They’re all inspired from my drawings and I’ve distributed them around different retail stores here in Jeddah.
What would be your favorite illustration and why?
Every time I think about this question, I get a different answer because I’m emotionally connected to all of my illustrations. But I think my favorite illustration is “Wounded Dream.” I find it hard to explain in words, but I love it because of its contradictions. There’s some kind of bitter sweetness in it. It’s sad but also beautiful.
What are Imagine Studio and Studio Al Marsam and how did they come about? Imagine Studio is just a fancy name for the freelance work I do as a graphic designer, whereas in Al Marsam, I create reproductions of my illustrations in different forms. The idea of Al Marsam began last year. It’s simple: I love drawing and I have an obsession with sketchbooks. So, I started off by making pocket size sketchbooks, but I didn’t like them and I ended up keeping them in my room. A few months later, I was inspired to grow Al Marsam as a brand and continue my pursuit of what I love.
What do you aim to achieve with your artwork?
I want to leave a legacy, and I want to create an identity for myself; one that’s beyond name, gender nationality and culture. DESTINATIONJEDDAH.COM 41
What would your dream project be?
Turning one of my illustrations into a book and a short film.
What’s the best piece of advice you’ve been given in relation to art and design?
I read once a quote somewhere by the notable graphic designer Milton Glaser. It said, “Tell the truth.” I think this piece of advice perfectly resonates with art and design. It’s not always easy to be truthful when it comes to art and design, as sometimes you risk falling in the trap of pretentiousness and selling the product or pleasing the client. But if you break the fear and try to be authentic in your work, it’ll stand out and you’ll have a unique style of work with a personality.
What do you think about the art scene in Jeddah and what do you think it lacks?
Honestly, sometimes I get angry over “trends” taking place in our local art scene and the lack of individuality they cause, but then I remember that art is dangerously subjective. Needless to say, we have some great artists and they’re definitely making a difference in the local art scene. Tell us a bit about yourself.
I’m an 18-year-old Jeddahwi studying Digital Cultural in King’s College London. I am a firm believer in taking advantage of each opportunity in life, and I aspire to influence society through knowledge and art.

Tell us about your journey to becoming a pianist?
I first took piano lessons when I was 7 in Canada. When I returned to Saudi, my parents experienced difficulties finding a stable piano teacher for my siblings and I, which led us to face all kinds of bad experiences. Initially, at that young age I considered abandoning pursuing what I once perceived as a passion. But then I reconsidered cultivating my love for piano, but this time I decided to do it myself. At the age of 12, the love of producing music inspired me to self-teach my way by learning new challenging pieces by ear, sheet music and composing original ones. Excelling at piano has given me enough self-confidence to widen my horizons in other fields such as acting, MC-ing in major events and playing in sports teams at national and regional competitions.
Who are your biggest inspirations?
Anyone who uses media for motivational and positive purposes whether it is through documentaries or social media. For example, Ahmad Al Shugairi, Michael Moore and Hamza Yusuf. I believe media nowadays is a powerful outlet for influencing others, which relates to the career path I am currently pursuing.

What has been one of the most memorable performances for you?
I participated in many significant events such as gala dinners and graduation ceremonies when I was at the American International School of Jeddah. But to this day, my most memorable performance was a piano concert I participated in at the age of 7 for an audience of around 400 people.
What do you aim to achieve with your music?
My ideal goal is to combine my original piano pieces with my career path in Digital Culture. In other words, whatever project I produce, I aim to utilize the piano to further deliver my message by giving it a stronger, more passionate meaning.
What’s next for you?
In all honesty, I’m not sure, but as long as I have a strong influence and serve as a role model in what I do, whether it is through playing the piano or other pursuits. I also aim to act as a positive example to inspire others.
What advice would you give to upcoming pianists and musicians?
Identify your talents and cultivate them. Self-teaching your way through a talent or skill is never impossible, and don’t waste any opportunity that comes your way because you never know what doors it may open.
What do you think about the music scene in Jeddah and what do you think it lacks?

Mussab Hariri, co-owner and head chef at Crave restaurant, speaks to us about the origins of the meaty goodness. The actual idea behind Crave started three years ago as a private cooking station. Hariri explains how he and Ahmad Al Amodi, catering chef, began it all, “We started cooking only for our families and relatives, then this expanded into friends. Live cooking was a new idea; back then there was no such thing as preparing burgers for people in their homes. We were called Gourmet Sandwiches back in the day.” The business took a commercial turn almost
two years ago when Saad Julaidan, who is now the owner and general manager of Crave, met with the team in a party they catered. He encouraged them to take the business to the next level. Being such a success, Gourmet Sandwiches was able to turn the moving working station into the actual restaurant, Crave, on Ramadan 11, 1436. Regarding the menu, Hariri reveals, “The first dishes we started with were burgers and chicken wraps in the catering service. Then the catering menu increased to include those along with hot dogs and slider burgers. In the restaurant here however, we are only focusing on serving burgers.”

• Don’t start your meal with appetizers and ask your waiter not to bring you the complementary bread basket. These little nibbles can add up to your total calorie intake and add unneeded amounts of fat, carbs and sugar.

Order a garden salad as a starter with a vinaigrette on the side or just drink some water while you wait for your meal. It will help quench your hunger and keep you hydrated. • Salads are your best friend but can be your health’s worst enemy when coupled with fatty dressings. Avoid mayo based sauces like thousand island, cocktail, caesar and anything creamy. Stick to vinaigrettes, pesto, mustard and olive oil. Same goes for sandwich spreads.

Always ask for the dressing on the side and just dip your fork in the dressing. This will help you with portion controlling and how much you consume.

How did you get interested in preaching Islam?
My journey into da’wah is an unusual one. I used to hang out on the streets in New York like most teenagers. At one point, I became a rapper going by the name Malevolent. I moved back to Jeddah when I was 20, but I was still distant from Islam. I was afflicted with dengue fever in Ramadan 2011, and was almost on my deathbed. That’s when I realized it was a wake-up call from Allah, and so as soon as I regained my strength, I began my new journey.

I delved into books, reading day and night, studying and learning about the deen of Allah. I founded the Assalamu Alaykum Team with the intent of conveying Islam and
became intensely involved in da’wah work. Later on I sent my publication to Saheeh International who gladly accepted my work and reviewed it for me. Recently I have taken up a position as the Head of the Expatriate Division at the Islamic Education Foundation.
Tell us about the importance of da’wah?
Da’wah work is the inheritance of the Prophets, it was their mission, and it is now a responsibility that we bear. Indeed the Prophet (PBUH) advised Ali that if one were to accept Islam through you, then it would better for you than a whole lot of red camels (red camels were the most prized possession at the time). Allah honored us through our da’wah when He said in the Qur’an,
“You are the best nation produced [as an example] for mankind. You enjoin what is right and forbid what is wrong and believe in Allah.” (Surah Al Imran 03:110) To further support this, is the famous hadith of our beloved Prophet Muhammad (PBUH) which is collected in Bukhari, in which he said, “convey from me, even if one verse.”
You have recently started an online college, Himmah. Can you tell us about it?
Himmah College was founded to provide an online platform to instruct Muslims in the art of da’wah by teaching the core of Islam. We offer courses in Aqeedah, Tafseer, Hadith, Fiqh and of course da’wah itself, which are designed to give the best insight and knowledge in field of da’wah. At Himmah, I hope to culture a community of eager and engaging da’ees, keen on achieving success in this world and the hereafter.
Do you think preaching Islam now is easier than before?
Technology has made spreading Islam much easier; we are able to reach a wider, more varied audience. With the click of a button your message can reach the other side of the globe in a matter of seconds. Globalization created more awareness, and people have become more open-minded and willing to search and verify the truth.
What advice do you have for our readers? Whenever you are successful, remember Allah and thank Him.
When you are wounded remember our dear Prophet Muhammad (PBUH) and the pains he went through to convey the same message and that will give you reasons for you to proceed and never stop.
Keep your intentions pure, that you are doing this to please Allah, not for any worldly gain. Try to engage in da’wah whenever you can, with your peers, colleagues, family, those close to you and those you do not know. It may be that perhaps Allah may guide someone at your hands. An advocate for fitness and health, the Prophet (PBUH) was a keen athlete who enjoyed playing certain sports that helped with his physical, social and spiritual wellbeing.
Let’s have a look at a few of Prophet’s favorite games and their advantages. Archery
The Prophet (PBUH) once passed by some people of the tribe of Bani Aslam who were practicing archery. The Prophet (PBUH) said:“O Bani Isma`il! Practice archery as your father Isma`il was a great archer. Keep on throwing arrows and I am with Bani so-and-so.” [Bukhari]
Archery is basically the use of bows to propel arrows at a certain speed to a specific target. It’s a great way to gain mental focus and detail eye hand coordination. One of the biggest advantages is the development of upper body strength as the archer is required to hold the arrow at a certain angle on the bow to be able to hit the target on point. 90 DESTINATION JEDDAH NOVEMBER 2015
Swimming
It is reported that the Prophet (PBUH) used to swim as a child when his mother visited his maternal uncles in Madinah. It is also reported that the Prophet (PBUH) swam in the well of Bani ‘Ady ibn Al Najjar. He also once swam with some of his Companions in a stream. Swimming is one of those sports that helps with the growth and fitness of the entire body. It strengthens the body and helps with cardiorespiratory (heart and lungs) fitness as well as building good muscle mass.
Horseback Riding
“And [He created] the horses, mules and donkeys for you to ride and [as] adornment. And He creates that which you do not know.” [Qur’an: Chapter 16, Verse 8]
The Prophet (PBUH) said, “Everything with which a man amuses himself is vain except three (things): a man’s training of his horse, his playing with his wife and his shooting with his bow and arrow.” [Abu Dawud]
Both the Qur’an and Sunnah have many mentions of horses and the purpose for which they have been created.
Used as a means of transport during battle in the past, horseback riding has been known to positively affect the physical, mental, emotional and spiritual wellbeing of a person. This hadith alludes to the idea of using oil to prevent grey hairs being visible, highlighting that the sunnah of the Prophet (PBUH) encompasses every aspect of life.

The Prophet (PBUH) said: “He who believes in Allah and the Hereafter, if he witnesses any matter he should talk in good terms about it or keep quiet.” [Muslim]

Although Ubud has a reputation as a place of relaxation, there are actually a number of activities on offer for thrill seekers. I was on a business trip in the small city of Sakaka in the northern part of the country. I was eagerly waiting to get some free time from my schedule to explore. On one of the days I managed to get some hours off, right before sunset.

trees on my travels around the Kingdom that for once didn’t happen to be palm trees. When we were close to the site we noticed that the trees abruptly ended. Following which was an open pan of desert encircled by mountains and trees, in the center of which stood this semi-sedentary site. These huge stone stelae were erected for cultural purposes and are believed to represent the deceased, however no burials are found at this site. Rajajeel is an important ceremonial site with about 50 groups of vertical standing
stone columns some of which are up to 3.5 meters high and are believed by some to be around 6,000 years old. At the site, groups of four or five stone pillars stand on precise distances forming a semicircle. What we found interesting was that one set of stone columns wasn’t in the semicircle. That particular set of pillars stood solitary a few meters away, almost as if it overlooks the others from afar. We drove around the ruins; ours was the only car there at that time. Even the museum adjacent to the historical site was closed by then.
A colleague of mine suggested we go see Rajajeel, some 10 kilometers out of the city. Once on the road to Rajajeel we were flanked on both sides by towering coniferous trees. I was actually surprised by their sheer size, it was the first time I saw such soaring DESTINATIONJEDDAH.COM 99
It was then that another group of tourists came and together we pushed the car with all our strength that we managed to slowly guide the car out of the soft sand portion. We looked back and saw the giant hole the car created; as its tires kept on sinking in the more we tried to accelerate them out of it. We then finally went inside the enclosure and saw the

stone columns up close. It was an amazing sight as it was close to sunset and the last rays of the sun were piercing through the openings between the columns. We noticed that some of them carried primitive rock art on them. Many pillars were leaning at horrifying angles instead of the upright positions they were originally meant to stand at. Some groups of pillars however, were broken. Whether it was due to weathering or human vandalism, we couldn’t tell. Even when they stood together they were not all of the same height.
But the question that I was left with after visiting the place was how were these pillars made? They obviously were cut from rock, but what were the tools they used and how were they transported here?

Beit Al Refai Farasan’s Masterpiece Built by a pearl dealer, Ahmed Munawar Refai, the house is a major attraction on the tourist circuit in Farasan Islands. By Mohammed Mirza
Refai was one of the most well known traders of the Farasan Islands. The house highlights the unique architecture of the region. It’s a masterpiece of architecture owing to its unique design and inscriptions. Beit Al Refai sits on an elevated platform encircled by a wall presumably made of coral. The main entrance of the house is through an arched gateway that hasornate designs on it. Instead of plain painted

walls like other houses on Farasan, Beit Al Refai has intricate designs crafted on its entire exterior. Most notably the windows, which have triple arches. The upper part of the wall has a wide frieze running through. Today it stands as a testimony to the wealth of the residents of the archipelago during times of the flourishing pearl trade. A replica of the building can be seen in the Janadariyyah festival in Riyadh.
