On Sept. 20, Athr Gallery featured an exhibition that is also a participatory social experiment by artist, designer and architect Abdulrahman Gazzaz. SAUDI PRIDE AT ROSEWOOD JEDDAH The luxury hotel’s National Day celebrations topped all. The 87th Saudi National Day witnessed a grand celebration at Rosewood, Jeddah’s leading sea-view luxury hotel. The National Day is the perfect day to deck up in green and celebrate national pride, and Rosewood’s festive arrangement was no exception. National pride and patriotic
fervor preceded everything else at the hotel; the colors of the national flag were the theme of the celebration.

Opening The Red Sea to The World Inspired by the Maldives, Crown Prince Mohammed bin Salman released a plan to develop touristic venues along the Kingdom’s coast. Completion of an airport, a port, hotels, transportation
services and much more are expected by the year 2022. Seeking to attract tourists across the globe – one million per year – most nationalities will not require a visit visa. Leveraging on the riches of the Red Sea, the project will spread out over almost 50 natural islands, covering 34,000 km, and includes the restoration of nearby historic sites.

PEPSICO HELPS LIBYA
To help alleviate food insecurity in Libya, PepsiCo and African Bottling Operations have made a financial donation to the United Nations World Food Programme amounting to SR 93,000. Food items – like rice, wheat flour, chickpeas, and tomato paste – were delivered
to more than 17,000 people, providing families of five months’ worth of supplies. PepsiCo’s Performance and Purpose initiative aims to deliver sustainable growth for a better society and environment – in this case, disaster relief – in Middle Eastern areas.
The Ministry of Culture and Information has recently launched a service that allows Saudi writers to publish their books. Thanks to an efficient online procedure, 52% of submitted books were given publication permission in less than a week. At the moment, gaining permission to publish takes about a week. In Saudi, there are 2,400 registered authors and more than 1,000 registered publishers that have online procedures.

HEROES DONATE BLOOD In cooperation with King Abdulaziz University Hospital, Crowne Plaza Jeddah organized a blood donation campaign for its employees and guests. As part of their CSR efforts, the Intercontinental Hotels Group aims to spread awareness on the benefits of donating blood for both donors and recipients. We attended Michael Grinder’s workshop on understanding teenager interaction on a deep level; there was so much to learn. Grinder, an international expert on practical and insightful non-verbal communication, provided participants with practical tools that could
be put to use immediately. For example, through role plays, parents learned how to find effective solutions their children face. This way, they learn to become proactive, instead of reactive, all the while building a trust-based relationship with their children. His primary purpose for the workshop was to stimulate safe independence and maintain open communications with youth, in a world that is increasingly hyper-connected and media-saturated. This contributes to the achievement of one of Dar Al Hekma’s many objectives – to graduate accomplished women, leaders and entrepreneurs. A MODERN DAY DYNASTY A sit-down with Al Othman Holding’s CEO, Abdulmohsen Al Othman By Dalia Darweesh
Al Othman’s dynasty began when Sheikh Mohammed Abdulla Al Othman founded a Trading and Contracting Establishment in 1967. This establishment specifically focused on finding the most talented contractors in the area to work with. During the late 20 DESTINATION JEDDAH OCTOBER 2017
‘60s, there was an upwarddownward cycle within the contracting business, that lead to having many contractors leave the industry and head to other fields outside of the contracting business such as the manufacturing sector within the dairy industry, amongst others.
Sheikh Al Othman has then decided to shift their focus to target new industries to diversify and expand within different sectors. In 1982, Nada, the Agricultural Production & Processing Company, was established with 1,000 Friesian cows and 4 trucks, to become one of the largest, leading producers, manufacturers and distributors of fresh dairy product, fresh juice, and long life milk suppliers in the region, until our current day and time. Nada products are also exported to Bahrain, UAE and Kuwait.

With “every sip counts” as their motto, it’s no wonder Nada has rapidly grown into success. Throughout the years, Nada has managed to produce the best dairy products that are made with 100% fresh milk. With Al Othman’s plans of diversifying and expanding, the second generation of Al Othman’s journey began when there was an industrial expansion within the company. which included the several businesses that Al Othman Company owns, under one umbrella. Consequently, Al Othman has turned into this well-established dynasty that we know of today. We had the pleasure of sitting with Mr. Abdulmohsen, and asking him how his day, as a CEO, looks like. “I start really early in the morning. I am normally at the office around 6:30 or 7 am.” He starts his day with reading the latest news then moves on to checking his emails. “It is best to start work early in the morning, to start fresh” From 9 am onwards, he begins his meetings internally, and later takes a small half an hour break for lunch. When the workday is over, he heads back home to spend time with family “and I try to do some sports.” Occasionally, he would go out for social or business dinners. Finally, “I watch the news first, then sleep as early as possible if I can.” Additionally, Mr. Abdulmohsen shared with us important information regarding stepping into a business within the food industry. He applauds the younger generation for becoming very enthusiastic about operating businesses within the food industry. However, being enthusiastic about a business idea is not enough to achieve a successful business model.
“My first advice is to ensure that you pay attention and carefully study every move you make before starting a business.” It may take longer than a year to execute a business idea if an individual doesn’t do enough research. Consequently, his second advice was to spend the right amount of time with collecting all the necessary information through research. “The area and location of the business, in addition to knowing the current market’s needs, are essential factors when going into the food business industry. And finally, move smart.” Each person deals with their work life and the pressures that they face daily, differently. “Challenges are always my motivation. The more I am faced with challenges or difficulties within the work place, the more it is exciting for me to tackle on more tasks”. Mr. Abdulmohsen explained. From a strategic point of view, they are currently in the process of grouping these many businesses under subumbrellas (anchors), and food is one of them, in addition to the oil and gas industry. Starting one’s own restaurant is the dream of many, but it’s a sensitive business. In Saudi Arabia alone, only 20% of all restaurants that open succeed, states Omar Ajam, founder of Toasted. Having a clear plan will make
your life a lot easier. So we talked to Ajam, and Nazmi Durdunji, founder of Ful21, for a glimpse of what’s awaiting you. So, you’ve got a great idea and saved a good amount of money, what do you do next?

Find a chef – even if you’re going to be the head chef, you’ll need a team. 4.c. Find a central location that is easily accessible to your target audience. 4.d. Find your staff. 4.e. Find a good, reputed construction agency that will build your concept. 4.f. Develop your menu and your recipes based on your tasting sessions, with precise measurements along with operation details.
5.a. Hire an advertising agency. They’ll create your logo, brand and marketing strategies.
Every owner has a different sequence to implementing their plan. You can do what works best for you. 4.g. Price your menu. Calculate direct costs (costs of raw materials per burger) and indirect costs (operational costs per burger). It’s a good idea to ask friends for their opinions on the costs you will incur. 4.h. Once your location is 90% ready and the kitchen is wellequipped, continue your application on mci.gov.sa.
Government employees will verify whether your restaurant fits the standards. 4.i. Test and improve your staff and processes by inviting your friends, relatives and colleagues (or Destination Jeddah!).
5.b. Announce on social media the date of opening. It’s usually better to make a small, soft opening. 5.c. Make the opening. 5.d. Actively seek feedback from clients. If you hear the same comment multiple times, that’s a red flag. Make adjustments accordingly. Note: You will be dealing with unreasonable clients. Always remember to remain professional and solve it effectively. 5.e. Good job! You’re now ready for the grand opening.

Mayada Badr is a pastry chef and the founder of Pink Camel, a pastry boutique. She explains, “They say you eat with your eyes first. Especially when you’re selling pastries, people can’t try it before they buy it so they have to like what they’re looking at.”

When styling pastries, Badr pays attention to various factors like texture, colors, height and seasonal flavors. Creating a pastry and presenting it is like a symphony; every component should work together to give a refined experience. Whether it’s styled with flowers or berries, the pastry chef believes in quality over quantity. According to Badr, when you want to indulge in something, a smaller, satisfying pastry is better than a large cake that tastes average.

Badr gave us an example, “I dyed some macarons orange and people thought the dark chocolate inside actually had orange in it. But your eyes just play a trick on you and make you assume what an orange macaron would taste like.” pinkcamelksa
YOUR MEAL IS A STORY Nouf Masoud takes the idea of food presentation a step further with her latest venture. Masoud created Debyazah, a catering service, from a managerial perspective, but soon discovered her talent for food and hospitality styling. So she set up her namesake brand that offers artistic dinner services, with food supply from Debyazah. She incorporates a storytelling aspect that makes it unique. She explains, “I like to style dinners that speak to the guest. Everything has its own story. My approach is fun, fancy and creative and providing a memorable hospitality experience.” For our meeting, Masoud created a customized sevencourse meal inspired by Little Red Riding Hood. Creatively

developed, the dinner began with a forest-themed salad to represent the character’s walk through the woods, and eventually incorporated deep red colors and various elements to represent the themes of the fable story. Masoud believes that the plate is her canvas, “I like elevating the experience
– the element of surprise, bringing the unexpected to the table is my signature style.” Her take on food presentation is an immersive and interactive experience, highlighting that your dinner can be more than just a meal. noufamasoud

Badr Fayez is a restaurateur trained in the culinary arts and a Chairman at Midwam, a virtual reality edutainment company. Fayez introduced us to food painting, “It’s a bigger canvas to work on. It’s not reinventing the wheel, but it’s fun because you get to play around.” As a chef, Fayez thinks about presentation before the cooking process, “I do keep a vision of how I will plate it, but it doesn’t always work. Raneen Joudah is the local food photography queen of Instagram. Named Raneen’s Table, her Instagram is a stunning collage of food photography and excellent healthy recipes. She also works as a consultant for recipe
development and food styling. Until very recently, Joudah was working a full-time job while trying to balance it with her blogging work. In order to keep her followers engaged with new recipes and content, Joudah works in the silence of late nights, “It’s very relaxing. I like playing music and getting engrossed in the cooking process and styling. I can’t have distractions, it calms me after a long day.” Joudah’s
The food blogger knows what her dish will look like the minute she picks what she wants to cook, “If it’s a comfort food I make the set-up very cozy, if it’s a sophisticated dish then I select elegant ingredients.” But certain dishes are harder to style and present than others, “Big dishes are more challenging because smaller dishes are easier to control. Anything like stews can also be a little harder to style.” Joudah uses various tools to add texture and highlights to her dishes, but she likes to keep the styling as natural as possible. “I don’t like to play around with food that much. I want people to eat the food they see. I prefer it really natural, no editing and very minimal retouching while I’m finalizing the look.” raneens.table

Everyone thinks about food, and as individuals and family units, we think and talk a lot about food. But I think it’s time to take that conversation deeper so we can become more conscious and responsible individuals and communities. When I visit restaurants, I always notice this tendency to order a lot of food, whether it’s my own group or the next table over (because who does not spy on their neighbor?). Over the years, I’ve developed the conscious habit to get my leftovers packed. But this isn’t a common habit. So, I want you to think, how often do you get your leftovers packed? When you dine at a restaurant, the food belongs to you (as you paid for it). But many people actually feel embarrassed to ask for the leftovers to be packed. Other tricks that work for Al Moannar is to keep a small menu so she can focus on the flavors and keep things simple. Unlike high-end fancy restaurants, Al Moannar avoids wasting vegetables for the sake of intricate presentation.
Behind the Scene at Restaurants Restaurants often end up with huge quantities of food that is wasted. While exploring this issue, I wondered whether any local restaurants have a notable approach to prevent this. I met Noura Al Moannar, Head Chef and Partner at DOA Eatery. Al Moannar believes many locals are conscious about food waste because we realize the deeper responsibility as Muslims to respect this blessing. She also believes throwing food out is “throwing money out.” Al Moannar supposes chefs and restaurants should strategize the quantity of food they cook. “Chefs know
how much food they need to make depending on the day of the week. At DOA we cook the amount we know will sell out before we have to close, and that’s how we promise our clients and guests fresh food.” If you visit DOA eatery in the evening around 8 p.m. you will discover some of the day’s specials have finished, but you’ll always find other varieties that you can enjoy. This smart approach to cooking for consumers works really well in terms of limiting food wastage, providing freshly cooked meals and ensuring a happy clientele and conscience.
But there’s one thing in particular that makes Al Moannar’s approach stand out. “We do our best to make sure guests take their leftovers with them.” So when you finish your dinner at DOA Eatery, your significant leftovers will be packed up for you to take home with you. If more restaurants adopt this strategy, there will be a lesser amount of food wasted.

Take it to the Fridge To be fair, there are campaigns in place to reduce the wastage of food. If you’ve been to Mall of Arabia or Red Sea Mall’s food court, you’ll have noticed several fridges set up around the seating arrangements. Becoming a Local with a Conscience As locals of Jeddah, we need to rethink our own approach to food waste. Madiha Khayat wanted some positive activity to balance her life as a busy mom, so she followed up on her love for gardening and started composting. Now, Khayat uses kitchen scraps, some leftovers and brown waste like recyclable paper and egg trays for her homemade compost. She explains, “By balancing the amount of food waste you create in your home, you can make actual use of it rather than throwing it away. When you put that compost in your soil, sick plants increase their growth rate.” Khayat has also noticed a positive effect on her children who have become respectful towards life and nature, “They observe nature and they think trees and plants are really cool.” If more people start composting, even if it’s as small as a 1 kg yogurt bucket, there will be better
attentiveness to the organic waste that we create in our life. Khayat even conserves her ablution water by collecting it in a bucket and watering her plants, “Some days, I end up with 20 liters of water that were otherwise being taken for granted.” She also saves the water that is spent on rinsing and cleaning fruits and vegetables.

Destination attended a Yalla Cook session recently that made us realize how conscious eating deeply affects our health, and that also introduced us to an empowering lifestyle that begins with the shopping and the cooking process.

Yalla Cook is a program with a simple approach to healthy cooking, devised by fitness expert and health enthusiast Jon Dean. Each course is a series of cooking classes that educates individuals on the best ways to shop and eat healthy in Jeddah. What would appeal to busy individuals

to bring back the enjoyment of cooking. Every meal has to produce a positive effect on the body, so every bite counts,” explains Dean. At our Yalla Cook session, Dean expertly combined nutritional instruction with a hands-on cooking experience. In a typical session, you will learn the best products to use for your cooking, how they contribute to your health and where you can get them in Jeddah. You will even learn tips and tricks to develop better eating habits. “It’s about understanding how you can craft your diet to suit your needs. As you progress in the course you will understand your activity levels, the amount of stress in your life, and what your body needs.” We began our session by making natural almond flour. Dean explained that sprinkling almond flour on top of salads or dishes adds a nutty flavor and enhances the nutritional aspect. Fresh almond flour should be consumed within
three days because the oil that is released damages it with time. There are six main dishes learned during the six sessions of the Yalla Cook course for beginners, however individuals learn two more variations (using the same ingredients) for each recipe. We cooked a simple salmon and zoodles recipe. Zoodles is spiralized zucchini, which is perfect as a pasta replacement. Dean’s recipe includes medicinal herbs like ginger, garlic and coriander, which make the immune system stronger during flu season. This recipe was actually very simple to make, and so delicious! Dean’s understanding of food and nutrition goes back to his growing up around his family’s restaurant business. His interest in food makes him seek out healthy recipes online or on cooking shows, but he often finds dishes that may include ingredients that are more for flavor than nutritional benefit. “Once I find a recipe that could

difficult teaching them knife skills, so we simplify the process. According to the American Cancer Society, being overweight or obese after menopause increases breast cancer risk. There’s no sure way to prevent breast cancer, but there are things you can do that might lower your risk. While you can’t change some risk factors such as family history/genetics and aging, there are lifestyle factors you can control. Breast cancer is known to be more common in women, typically after menopause, but there is a very rare, less than 2% chance of men being diagnosed with the disease.

2017’s Most Exciting Thriller Readers are either loving or hating “Into the Water”. By Sumaiyya Naseem
“The Girl on the Train” was a thriller sensation a couple of years ago, and with a movie starring Emily Blunt talk of Paula Hawkins’ debut did not die down for a long time. Hawkins’ next book “Into the Water” was a highly anticipated release this year. I loved her debut when I read it back in 2015 because it helped me get out of a massive reading slump. Since then I’ve read plenty of crime fiction 64 DESTINATION JEDDAH OCTOBER 2017
and thriller novels to know that “The Girl on the Train” was an exciting read but not a personal favorite. So I approached “Into the Water” gingerly, unsure of whether I’d love it or hate it. It didn’t help that there were so many mixed reviews online. “Into the Water” is a literary thriller and it’s a slow burner. The novel follows several characters that live in a small town with a river running through it. The river is a source of great intrigue and mystery in this story because it’s where witches were persecuted centuries ago and several “troublesome”
women drowned. The main protagonist is Jules Abbot who has returned to the small town after the apparent suicide of her sister Nel Abbott whose daughter she now has to take care of. The sisters had a faling out in their teenage years and a large chunk of the novel follows Jules’ anguish over not being able to reconcile their difference before Nel’s death. Although I’m a little tired of the troubled women trope in crime fiction, my interest was piqued by the mystery surrounding the Drowning Pool and the women who died there, and I give credit

to Hawkins’ writing for that. What was the story of the women who died? What about the people they left behind? A version of what happened to them is explored in an alternate narrative within “Into the Water”. These are sections from Nel Abbott’s controversial project on the Drowning Pool that had managed to stir hostility in the community. But was it the reason she died? As I waded deeper into the novel the murky and sinister undercurrents of the story gripped me. Hawkins’ atmospheric writing deserves a lot of credit for the experience of reading this thriller; it’s smooth and saturated with haunting descriptions and details. Perhaps one thing readers should be wary of is the cast of characters; there are too many perspectives in the book and it can get confusing. None of the characters are people you would like, but yet I felt eager to see the stories intersect. Overall, “Into the Water” is a quiet thriller with an anticlimactic ending that will not make your heart race, but it will make you weigh in on human nature. Suspense-lovers might want to skip this one, but if you’re appreciative of literary thrillers then this will be a satisfying read.

Mix three Aspirins with two tablespoons of warm water until you have a paste-like liquid. You can use Panadol pills, which can be found at any pharmacy for SR 9. A 3-day hill climb in Al Baha’s Khaira Forest saw 18 eager contestants from around the Middle East race against each other for prizes that amount to a total of SR 36,000. Divided into 3 categories, the participants had FWDs (FrontWheel Drive), RWDs (RearWheel Drive), and AWDs (All-Wheel Drive) riding and tearing up the Arabian asphalt as they tackled sharp, adrenaline-pumping corners along a tough and tricky 2.8km-elevated forest route.

Crowds roared at the sidelines throughout the duration of the event, cheering on the winners – first-place and gold medalist Fadi Hamada from Syria, silver medalist Majed Al Ghamdi, and bronze medalist Ahmed Binkhenin – as they were handed their awards by Al Baha’s Prince
Some self-modified cars were allowed in the race, but under certain restrictions, such as limiting the turbo inlet valve size for single turbos, giving hardcore enthusiasts the green light to take their tuned monsters and run them to their full potential. All in all, It was a beautiful scene to watch.
Only drivers with a valid ASN FIA license and capable of the safe operation of the race vehicles – which must meet all the safety criteria – were eligible to participate.

FEASTING ON FISH Warm your seafood heart at Dahban.

Let’s plan a trip to Dahban! This is a common suggestion when discussing weekend and holiday outings. Dahban is a popular destination for seafood lovers, and it’s only about an hour’s drive north of Jeddah. It’s no surprise that at the coast of the Red Sea, there’s a little town – an area really – that’s dedicated to fish. Home to several Arabian-themed fish restaurant-resorts, for years Dahban has been an essential experience for locals and visitors in the city. We recently went on an afternoon trip to Dahban’s Al Sharah Resort. I’m mild towards fish, and I’d been hearing about seafood feasts at Dahban for years and recently some friends piqued my 82 DESTINATION JEDDAH OCTOBER 2017
curiosity until I decided it was finally time to dip into the full seafood experience. Once we arrived at Sharah, our first step was looking for our room, and lucky for us, we had a special room already booked. There are several options at the resort – rooms with traditional floor seating, dining table set-ups and larger rooms with comfortable sofas to lounge on. Depending on your budget and style, you can pick what suits you best. Move a little deeper into Sharah and you’ll find rows of little oneor two-room houses, the lanes lined with fragrant flowers and the greenery of plants. It’s a relaxing space if you’d like to take a walk after your meal; a separate play area for kids is also available.

The real action – the fun part – at the resort happens at the main center, where the day’s fresh catch is laid out in basins of ice. You’ll be given a bucket to pick and choose from a wide range: lobster, squid, jumbo shrimps, crab, jobfish, hamour, emperor fish, fillet and more. One of the most popular – and
Once you’ve selected your fish you can choose how you want it to be cooked, along with the side dishes and salads. We ate fried fish, shrimps, jumbo prawn along with a variety of flavored rice and pita bread. The Lebanese hummus, tahini, chili sauce and salads were great flavor enhancers. The smell of fish was entirely gone, and that made the meal even more appealing to me. The cooked white flesh was soft and delightful with rice. Having fish at Dahban might have managed to turn me into a bit of a seafood lover! During our visit, locals were coming to dine at Dahban as early as the afternoon – on a weekday! The drive to Dahban is about 40 minutes to an hour depending on the traffic and where you live in Jeddah. On the drive over, make sure to have a playlist of songs, especially old favorites, to get everyone in the mood to have a splendid time. The privacy offered at the resorts at Dahban is probably a major contributor to the locals’ preference to dine seafood here. Once the food
has been delivered, you can rest assured that no one will come knocking and interrupt the feast. Relax and enjoy, there will be enough fish for everybody!
