FROM THE EDITOR
Happy Food Issue! Ladies and Gentlemen: Please fasten your seatbelts and keep your arms and legs inside the touring vehicle at all times. This could get bumpy. We’ve risked diabetes, cholesterol, weight gain and our taste buds to bring you this issue of Destination. Our food issue is the crown jewel of this magazine, and we hope this one doesn’t disappoint. For this issue, we’ve brought you a complete rounded experience to guide you through everything; starting in your supermarket isles, to your dining room table and ending in other continents. There’s an underlying theme of movement throughout the magazine. It’s a culinary journey, if you will, and we’re going to be your guides. First up, we’re taking you on a tour of the city’s newest developments. Following our tour, we’re stopping by the supermarket to cool of with refreshments and teach you how to Outsmart Your Supermarket with some budgeting tips. Sit back and try our weird food combinations then we’re going on a road trip with Fahad Amer (aka SaudiFooodie). As always, thank you for choosing Destination Sharqiya as your guide, and see you next month!

FOOD FOR LIFE Three women with an exquisite eye for food.
By Arwa Al Mousa and Tuba Saricimen
Food Consultant
Muneera Al Mannai
I’ve loved cooking ever since I was young. Growing up, I was always with my grandmother in the kitchen. — Muneera Al Mannai
20 DESTINATION SHARQIYA AUGUST 2016
After majoring in business, Al Mannai worked at her family’s events company as an event manager. “I noticed I was more interested in the buffet area, buffet table, food and menus. That’s when I decided to study the culinary arts.” She started training at the Gulf Hotel kitchens peeling, chopping and doing the usual grunt work. She then went to Switzerland to study Culinary Management and International Cuisine. “That was the program that opened doors to consultancy. They taught us about cost control, running the kitchen, layout
and setup, purchasing, etc.” Her education lasted a year followed by a 6-month internship at a prestigious restaurant in a 5-star hotel in Zurich. Upon returning to Bahrain, Al Mannai’s consultancy work began right away and she gained momentum and recognition in the food sector, providing a range of services like recipe and menu management, culinary training, business development, computerized documentation and recipe management. Tel: +973-35113311 Email: foodtalkbahrain@gmail.com

So you want to invest in a restaurant business but you don’t know where to start. Don’t fret! That’s where Muneera Al Mannai, founder of FoodTalk Consulting, comes in. With her know-how, connections and experience, Al Mannai can plan everything for you from A to Z.
Food Photographer and Stylist
Tuba Saricimen How did you get into this field?
I always wanted to publish my mother’s recipes and I felt I could do something special with her cookbook. Besides, who best to present my mother’s food than someone with passion for it? I started a food blog knowing that it would give me a bit of experience writing and documenting recipes, photographing food and of course styling.
Did you study photography and styling? I attended workshops and courses, but I also read a lot and practiced at every opportunity. I never thought I had a creative bone in me until I undertook this career path.
Who have you worked with recently?
I’ve worked for quite a few restaurants in Bahrain. These include Isfahani, Big Smoke Burger, Millions of Milkshakes and Bluefield Burgers. And I’m also a photographer for Destination Sharqiya.
The hardest part about food photography?
The hardest part is understanding what a new client is looking for. I usually like to go to the venue to understand my restrictions and what props and items I need to bring along. Lighting is also always a challenge. Tel: +973-39789330 Email: photo@tubasaricimen.com

Food Photographer and Stylist
Amal Omar When and how did you get into this field? About two years ago. At first, I would simply use my phone camera for photography and capturing special moments. Then I started getting into styling the shots and being more precise with it and I noticed how people were amazed by how beautiful my pictures were. They couldn’t believe they were taken by a phone camera. This encouraged me to expand, buy a professional camera and do more of what I love.
Would you recommend anyone to take it up as fulltime work?
I’ve worked with Pink Box, Sala Bakery, Just Fresh Burger, AlSayyad AlBahry, Sufra and many others.
What is the hardest part about food and styling photography?
In my opinion, it would have to be coming up with unique ideas and a new concept every time.
Any tips for a better photo? There are two things to always watch out for: good lighting and good angles. Everything else becomes secondary.
What piece of advice would you give someone interested in this field?
Always keep these two words in mind: patience and confidence. Also, never listen to those who discourage you. i.amal1

3 Double Up
Tip
the Dishwashers
The dishwashers can now act as dish cabinets since you don’t have to unload it for another pile of dirty dishes. Mind blown? We KNOW.
We read this tip on a blog and we were astounded. Two is always better than one, right? And what better way to snazz up your kitchen and make your life easier all at once than making dishes twice as easy? Just make sure they match so you don’t end up with a hodge podge cooking space.
4 Get Creative with Your Outlets
Want something more minimalistic? Invest in hidden outlet solutions that neatly tuck away into your counter.
Nothing says advanced quite like flexible electric outlets. We’ve recently discovered a genius new system by a company called Eubiq. Using electric ‘tracks’ that mount on your wall; it lets you add, remove, or reposition power outlets all along the track, allowing for more movement on your kitchen counters when using appliances. We’re totally smitten with the concept!
5 Add in Automation
The age of technology is upon us all. Might as well embrace it. From appliances that tell you what groceries are missing to hands-free faucets, design is moving more and more towards making cooking as seamless as possible. Handsfree faucets in particular are useful- because who hasn’t prayed for a third hand while filling up a pot with some water or tried to avoid getting the handles dirty?

Same rule applies for plates and cutlery. Provide bowls, large plates, small plates and why not a second plate? As for cutlery, make sure there’s at least two of everything. Remember we are playing a mismatch game, so bring all the tableware out. Nothing really needs to match, so just make sure you have an overall theme. If you’re setting a Moroccan table keep it oriental; if you’re setting a French table keep it European, and so on.
Set the Table but Break the Rules A good table setting to set you apart from everyone. By Dania Shams
We are long past the age of formal table settings and the rules of tabletop perfection. To impress your guests these days, you must show them something new; remember everyone eats with their eyes first. The new rule to follow is to break all the rules! Use mismatched tableware, and in this case, more is more. Items I will always have on my table are low vases filled with seasonal flowers, fruits and vegetables. Avoid synthetic flowers at a dining table; natural will allow you and your guests to feel connected to the table you are about to eat at. Also avoid flowers with overpowering scents; this might distract form the smell of deliciousness. It is very 44 DESTINATION SHARQIYA AUGUST 2016
important to have more than one drinking glass for each diner. Even go as far as three drinking glasses per person. The reason behind this is that you can never predict what each person will want to drink, and one might like to change beverages with each dish. Give your guests the freedom to choose.
Finally, condiments and beverages. There is really no need to advertise the brands you are offering at the table, so use container holders or transfer sauces and beverages into your own containers. As for fizzy drinks, how about simply wrapping them with a napkin? Remember it is your table- you dictate what goes on it. Don’t let the brands you use guide the table you set. Final words of wisdom:
Setting a table is like telling a story, and a story well told is a story wellremembered.

Food as Destiny Meet a local famous chef with amazing talent and more than 100k followers. By @saudifooodie
I’m a person who loves cooking and learning its arts and secrets. I started off by going to the best culinary school in the world: my grandmother’s kitchen. I then self-developed my talent thru trial and error, gathering recipes and ideas from the web and books into one big information bank that I draw from in my innovating and cooking.

How do you want to introduce yourself to our readers?
My favorite kitchens are Mexican and Asian (Chinese and Indian), but I’ve recently specialized in Gulf traditional cooking.
Spanish paella.
Why did you choose to become a chef?
It wasn’t a decision as much as it being destiny. At first, it was difficult to convince society that I'm a man who loves cooking, but my persistence and passion overcame all obstacles. Another factor was my friends constantly motivated me.
What do you do when you try out a new recipe and it fails? When I try a new recipe, I never do it textbook style, so even if it fails, I’m always adding my cooking touches, innovating until it's a success.
How did you learn about food styling?
Prior to cooking, I used to dabble with furniture and color schemes as part of interior decoration work. I translated those experiences into photo coordination and, therefore, developed my own understanding of food styling.
How long does it take you to do a post? Just thinking about a recipe takes two days, preparing and cooking is two to four hours. Photography takes about an hour, and then writing and photo-editing can take another half hour.
Name three ingredients you consciously avoid or eliminate even when the recipe calls for it. I always avoid mixed spices, chicken stock cubes and Chinese salt.
If you could delete one food from the world, what would it be? Any invading dishes to our Gulf cuisine which end up defining it. A good example is Bukhari Rice which became a Saudi culinary tradition while it is Afghani in origin.
If you could have any three people in the world over for dinner, who would they be?
I would choose Chef Asma Al Bahar, Chef Manal Al Alem and Sulaiman Al Gassar.
Do you think Instagram food blogging will still be around in 2020?
Of course not. Nowadays nothing remains the same. We live in a fast-paced world where applications disappear as fast they appear, similar to the fame that comes to its user. He who doesn't use it right will see fame evaporate fast from his hand. snd1910

The Blogger
We break bread with one of our favorite foodies. By @saudifooodie
52 DESTINATION SHARQIYA AUGUST 2016
STAFF PHOTO / ALZAHRA ALDAWOOD
I have a lot of passion for food and for being creative in cooking. It just organically happened that I felt like a chef and wanted to express myself as one as much as possible.
I most admire my local traditional food such as mandi and kabsah, but my tastes are eclectic. I love Italian pizza and pasta, noodles and soups from the Chinese kitchens and the Mediterranean’s menu of fatoosh, kebbah with laban and grape leaves.
How do you want to introduce yourself to our readers?
My name is Ibrahim Saleh, I live in Khobar and I am married with one son. I currently work in Saudi Aramco and I’m a passionate food blogger and chef.
What do you do when you try out a new recipe and it fails? I keep trying, time and time again, until I master it. What’s the point of failure if you don’t learn from your mistakes?
Name three ingredients you consciously avoid? Nuts since I’m allergic, artificial spices and bacon.
Name three things you have to use in most recipes?
Salt, spices and cheese.
If you could delete one food from the world, what would it be? Indomie!
If you could have any three people (from past or present) over for dinner, who would they be?
• King Salman • Mohammed Ali • Bill Gates
How did you learn about food styling?
I used to help my mom in the kitchen as a child. Over time I’ve developed my skills more by reading, YouTubing and constantly practicing.
What’s the best and worst thing about being a food blogger?
One of the best things is the high engagement with people through my interactive blog posts. The worst thing is that
it’s costly in terms of time and money. Plus it stings sometimes getting criticized by people (each person’s tastes are different after all).
How long does it take you to do a post? It takes anywhere from ten minutes to a couple of hours, depending on the content and the idea I want to get across to my readers.
Which part of blogging excites you most: the cooking, the writing or the photography?
I’ll cheat by saying that each part is exciting in and of itself: cooking is physically fun, post writing is mentally fun and photography is a reflection of both aspects.
What do you think Instagram food blogging will look like in 2020?
Looking at our current technology, I imagine and hope that food blogging will become a virtual reality experience. ibrahim_86

What’s your strategy to keeping customers in Saudi coming in?
From the beginning, we knew we'd do our FireGrill with the very best ingredients we could source. By using only high quality healthy ingredients, organic when able, we knew Saudis would appreciate the taste. We feel confident that we "raised the bar" on fast food.
How big of a role does social media play in your marketing campaign?
Social media indeed has been a big part of FireGrill's success. Saudis love to spread the good-word on great food with their friends and family. Three years since our launch, our traffic and loyalty continues at double-digit growth.

The Fajita Chicken Rice Bowl was the biggest hit upon our opening. But today, the burrito has taken the lead. Still, our quesadilla has no peer in Saudi Arabia.
What has been the toughest thing to master in the restaurant business?
We have many years of operating restaurants in the Kingdom. Our other restaurant concepts include Steak House, Piatto, and City Fresh Kitchen. To date, securing good supply of our ingredients remains the daily challenge.
Will we be expecting new additions to the menu anytime soon? Perhaps a seasonal fresh hammour would make for great baja-style tacos, similar

SHARQIYA’S CUISINE A quick tour of what makes our food authentically Sharqawi. By Eman Bukhari
The ingredients behind a dish say a lot about the way of life of the people preparing it. Sharqiya, for example, has a coastal culture with a rich history of trade and cultural exchange from all over the world. With time, the agricultural and cultural activities have changed, and no longer are people dependent on foreign merchants to bring in new flavors to try. As the lifestyle evolved, so has the most basic aspect of the culture in Sharqiya:
HAREES
THE TRADITIONAL CUISINE.
TRADITIONAL SAUDI KABSA WITH FISH
MRUS
AL MA
56 DESTINATION SHARQIYA AUGUST 2016
AL WADMA
Our reliance on dates naturally plays heavily in our meals. One of the most popular rice dishes include muhammar (rice prepared in date molasses). As for red Hasawy bread, its name tells you that the bread is from Al Ahsa and it has a red color due to the main ingredients of dates and whole wheat. Finally, one of the most popular dishes in winter is Al Mamrus: a dish made of dates, flour, butter and different spices designed to keep you warm. Meanwhile, people have found new ways to prepare certain dishes. Harees used to require a lot of strength to prepare due to pounding of its main ingredients of wheat and meat until the mixture was porridgelike. Today, women use electric beaters instead or even outsource the pounding to local restaurants or stores.
Many traditional dishes are still served on our modern dining tables. The fishing industry played a major role in the life of residents here, therefore many of the popular dishes include fish, such as al wadmah (onions and dried fish), or fried kan'ad (mackerel). The traditional Saudi kabsa is also prepared with fish instead of meat. Food is an essential part of Saudi culture and hospitality, so it’s natural to see so much creativity explode around it as people experiment with traditional culinary concepts and modern techniques. For example, Al Ahsa is rich with its date farms, but today, those dates can be served with caramel, chocolate and tahini sauce. Naqsa, a term used to describe the sharing of the household food with the neighbors is now a brand for women who cook from home and sell through Instagram. The family naqsa is shared with everyone, not just the neighbors anymore. Social media home pages have turned into menus.
It is truly fascinating to see Saudi dishes that date back to pre-Islamic Arabia prepared, presented and consumed today in a manner that would astonish those who created them. Their essence, though, remains truly authentic.

SUGAR, EGGS AND TURKEY HAM
Ickiness
Okay, we won’t lie: this one’s from our childhood. And we love it. Honestly, there's very little that sugar can't improve. And the turkey ham sears really well. Don’t knock it till you try it, folks. But please don’t tell our mama (or yours) we gave you this recipe; somehow the extra sugar sends them into a tizzy. Shhhh.
Weird Factor Palatability
WATERMELON AND FETA CHEESE Fruits are generally known for being obliging with odd mixes. Apples and cheese, for example. But we were a bit skeptical with watermelon and feta. Watermelon is a bit watery, for one, and feta seems a bit too salty. But it was another win and happens to be a favorite of our sales manager. It’s an acquired taste but we can see why it can be refreshing. Try it and let us know what you think!

CRAVINGS EXPLAINED By knowing how intelligent our bodies are, we should also know how to listen to it and give it exactly what it needs. Even cravings are a sign of distress, and each craving signals a lack of something in the body that must be replenished.
Cravings, what they mean and how to satisfy them. By Lama Ghazzawi
So, here are some major cravings and how to satisfy them without harming your body.
OILY FOOD
SUGAR If you’re craving donuts, frosted flakes and sugar cookies, you’re probably lacking in THE TRYPTOPHAN,
SULFUR AND PHOSPHORUS DEPARTMENTS. These can be
found in cheese, cranberries, sweet potatoes and chicken.
68 DESTINATION SHARQIYA AUGUST 2016
SALTY FOOD We all love chips and French fries, but why do we crave them? THAT’S BECAUSE
CHLORIDE AND SILICON ARE MISSING FROM OUR SYSTEMS. They are luckily
available in fish, nuts and seeds.
When you’re craving a big, juicy, oily burger. IT’S TIME
TO FUEL-UP ON SOME CALCIUM. Milk, cheese and veggies are full of just that.
The biggest craving of all.
Well, maybe this one is an even bigger craving issue for a lot of people, but the main reason as to why we’re such coffee addicts is because
CHOCOLATE Who doesn’t like chocolate? Okay, I can think of a few. But eating a lot of it can be very bad for you. The next time you find yourself reaching for a chocolate bar, try having some nuts and veggies instead, because what YOUR BODY’S
TELLING YOU IS THAT IT NEEDS MAGNESIUM.
CAFFEINE
CARBS Seriously, who doesn’t like carbs? But the real reason as to why WE CRAVE IT SO MUCH
WE’RE LACKING SOME SERIOUS PHOSPHATE, SULFUR AND IRON. We can
get that easily from nuts, black cherries, onions, red peppers and garlic.
IS PROBABLY BECAUSE WE NEED A LOT MORE NITROGEN THAN WE’RE GETTING. A great source of
that is protein, fatty fish, nuts and beans.

NIDAL FARMS: RESPONSIBLE WITH YOUR SOCIETY Learn about one local farm’s mission to be different and socially responsible. By Anaa Mansouri
Nidal Farms is a sustainably responsible source of food right here in Sharqiya. As a hydroponics and aquaponics farm, they value water as a resource and attempt to conserve it, making them sustainable but not yet officially organic. They have applied for organic certification but the process needs third party supervision and takes at least two years. Here is my interview with K. Shawki, the executive manager of the farm for the past 18 months.
70 DESTINATION SHARQIYA AUGUST 2016
Why was Nidal Farms created?
It was created four years ago with the intention of its founder, Nidal Allababidi, to provide something that is clean, healthy and green to his family, friends and the local community. Originally it was a family farm, but has grown significantly and has sister farms in Al Hasa and Qasim.
What does it mean to be a hydroponics and aquaponics farm? The idea for it came from a farming engineer formerly
with the company who established these systems since they were wholly centered around conserving water, a main concern for the owner. There are a lot of factors to it, but one example is that we rely on organic waste from fish and duck manure for fertilizer.
What are your biggest challenges as a local farm? Definitely the weather. Sandstorms are a major challenge. Also, we’re still learning since we are new to agriculture. Even our packaging has changed a lot.
What else can you tell us about the farm?
It’s an amazing vision from the owner. He created the farm after witnessing a worker on another farm eating the vegetables immediately after he had sprayed the produce with pesticides. Later we found out that farms all over the world use pesticides liberally, then pick the produce quickly and turn the soil for more output. We’re concerned about our health and the environment and they only think about the quickest way to make money. So we ask ourselves these questions in Nidal Farms: How can we eliminate pesticideuse? Are we taking care of the resources and land? Nidal Farms doesn’t think of itself as a business, but more a social mission. It requires a ton of expenses and a lot of time and care, but we’re focused on providing good and healthy products while still protecting the environment.
Nidal Farms’ produce can be found in Tamimi Markets, Danube and Carrefour. They can also be reached for private home orders once a week at: +966-539411187. Just ask for Amal.

Islam is a way of life, so what does it say abou food etiquette? By Eman Bukhari
STAFF PHOTO / YASMIN OUF
Islam touches every aspect of our lives, helping us live not just an honest life, but also one that is healthy and happy. Some teachings we come across as we grow older and some we are made aware of at a very young age. One of the most common teachings in Islam is food etiquette and practices carried out by the prophet (PBUH). Some of the customs might seem basic or common sense, but they carry a great spiritual value and contribute to our overall wellbeing.
72 DESTINATION SHARQIYA AUGUST 2016
Sometimes we overindulge and overeat, and to this regard the prophet (PBUH) has said, “It is sufficient for the son of Adam to eat enough to keep him alive. But if he must do that, then one-third for his food, one-third for his drink and one-third for his air.” And finally, when we have finished, we remember to thank the one who provided us our food, “Alhamdulllah” (thank you Allah).
Simple teachings and practices as these go along way for our mind, body and soul.
It’s not only a doctor’s recommendation to wash your hands before you eat, but also an Islamic practice for the same reasons: to wash away germs. We strive to remember Allah and thank him throughout the day for his blessings, and this includes the food we are blessed with. Therefore, before we take our first bite, we remember him by saying “Bismillah” (in the name of
Allah), and if we forget we can say, “Bismillaahi awwalahu wa aakhirahu” (in the name of Allah at the beginning and at the end). It is also courteous to eat, especially when sharing food, from what is in front of you. Also, common etiquette includes not critiquing food you might not like in respect to the cook and those around you who might have a taste for the dish.

TO ALLAH Reaffirm and solidify your iman with these tips.
Have you ever felt like you've reached a low point in your faith? After being a very enthusiastic gainer of good deeds, you are becoming lenient and your enthusiasm is fading? I've felt that many times. I'm sure we all do. That's pretty common to feel that way. Iman is just like a roller coaster, sometimes it goes up making us feel content and sometimes it goes down and low, a danger zone. Yes. I call that a danger zone, and it is a must for us to take steps to come out of that perilous zone. In the hustle and bustle of life, we often forget to follow Allah's commands. We indulge in the comforts of this world, shrugging off everything related to the after-life. It is usual for us to become lackadaisical in following and abiding Allah's commands; it is human nature to sin and to err. 74 DESTINATION SHARQIYA AUGUST 2016

Explore the Top CAVES OF SAUDI ARABIA Have no fear, enter the cave.
May it be referred to spelunking or caving, this activity will allow you to witness the world of caves that are shrouded with mystery, darkness and numerous legends. Thanks to some extreme adventure lovers from the 80s, these cave systems were discovered; many unknown even to the early Bedouins. Here are some of these popularly treaded locations.
JABAL QARA
Though it may not fall in the conventional term of caving, this cave system made from sandstone, clay, marl and sedimentary rocks, is by far the most popular in the country. The auburn colored mountain contains a labyrinth of caves and caverns with little shafts on top that let light pierce 80 DESTINATION SHARQIYA AUGUST 2016

through, making the whole place look like a set of an Indiana Jones movie. Sitting around 20 kms from the city of Hofuf, it is a popular picnic spot amongst locals. Close to the very end of the narrow caverns inside, lies what locals like to call Ali Baba’s den – from the Arabian folktale of Ali Baba and the 40 thieves. What one may find surprising here, is that Jabal Qara is cool inside even when temperatures soar on the outside.
AIN HEET
Near the town of Al Kharj lie several sinkholes called dahls in Arabic, which is why this cave is referred to by locals as Dahl Heet. This particular dahl is the most famous of all dahls in the Kingdom, mostly due to its close proximity to the country’s capital. The specialty of this sinkhole is that it has water at its base, making it ideal for cave diving as well. Some geologists who have followed the waterways have even termed the water inside as the clearest and most transparent they’ve ever seen.
FATHER OF FEAR
Referred to as Abu Al Hol in Arabic, this cave is considered to be one of the deepest known caves in the country today. Sitting close to the small town of Al Majmaah, this cave drops a whopping 230 feet down from ground level. The bottom of the cave opens up to a room that measures around 330 feet in width. The base of the cave has several smaller tunnels that lead to places that remain unchartered to this day, as they are too small for humans.
DHARB AL NAJEM
Some believe that it’s a meteor site that came crashing, causing a crater measuring up to 25 meters in diameter, but some geologists oppose this and call it a natural sinkhole. Lying in the desert, east of Al Majmaah, the hole leads to a cavern around 100 meters in width. Despite being considerably deep, a shaft of light darts through during the day to the bottom chamber, illuminating it beautifully.
UPM CAVES
The cave was named after the King Fahd University of Petroleum and Minerals, as speleologists from the university along with the Austrian Academy of Sciences made the discovery. The caves have a 150 by 250 foot room at its base that contains thousands of animal and human bones. The stalactite formations are the most beguiling feature here and as opposed to other stalacalite formations this one is not fully formed and is still in its growing stages. The caves have easy access thanks to a large entrance and a pathway down that doesn’t require a ladder or rope.

HISTORIC KSA Bir Hima's Art
Bir Hima sits 30 kilometers from Najran and is dotted with ancient wells. Rock art depicting battle scenes, animals, food, human figures and the general lifestyle of the ancient times adorn its walls. Battle scenes at Bir Hima run into the hundreds and mostly depict the cavalry and infantry charging with swords or spears. A few display armored horses, which was uncommon in ancient Arabian battles. Being a source of water, the site was critical for caravans travelling on the ancient Arabian trade route passing from the north to the south of the peninsula and vice versa. As the caravan routes changed, the site was deserted. Bir Hima is also significant due to the ancient writings written in the Musnad script and the remarkable stone structures and tombs that are found in the area.
