Inspired by the beautiful country of Greece and its ancient wonders, this Hellenic exhibition was surely one of a kind! Visitors enjoyed the Greek folklore performances, the historical stories, the various food and the fun general knowledge competitions. This was held in Al Salam Hall in Al Mubaraz from Aug. 12 - 15.
From July 26 - Aug. 11, Wannis Saifk was a special entertaining, educational and cultural festival in Khobar to gather families together through fun and innovative activities. The festival witnessed a recordbreaking number of visitors and attendees. The same festival was held in other cities like Dhahran, Jubail and Al Mubarraz.

From Aug. 10 - 12, Souq Gram took place in Al Waha Downtown to showcase some of the best home businesses in town. From jewelry and accessories to clothes and makeup, there was nothing you couldn’t find. In a special playing area, kids enjoyed painting and much more.
5. Balloonzilla Live Performances A European team specialized in live shows performed The King and the Princess, utilizing 20,000 balloons in Khobar, from Aug. 17-19. The stage was decorated with balloons (white and grey castles), along with balloon figures in the show and on-stage. An event suitable for everyone, it was fun, light and most definitely brought joy to all.

The 4th Revive Sharqiya for Fintech took place Aug. 19 at Al Turki Business Park in Khobar. A panel of entrepreneurs shared their experience in the industry, including Jassim Al Haroon, Abdallah Al Tamami, Abdulaziz Al Jouf, and Nasser Salah.

Red Scarf Play The Culture and Arts Association in Dammam is continuing to fulfil its mandate in spreading culture and the arts in the region, this time with the much anticipated play titled Red Scarf. A DREAM IS A WISH YOUR HEART MAKES On Aug. 16, Wana Girls Center hosted a workshop for girls (ages 9-12) where participants created their own magazine cover. In an attempt to encourage them, Destination Sharqiya collaborated with the center by sharing inspirational stories of

the nation’s youth to motivate them. Lastly, the center took photos of each participant and used the photos for a mockup of a Destination Sharqiya cover. Wana Girls Center is a youth development center for girls between the ages of 9 and 16, established by Rawan Al Qannas. MOVERS & SHAKERS: Transform and Be Transformed Meet Sharqiya’s most inspirational volunteer: Malika Alshareef
“It was a CSR event to help young people choose the best career path for them. I met many wonderful volunteers and found great joy in helping others. We had such a blast during our volunteering time there that we felt a strong void and emptiness inside of us shortly after it was finished.” They decided to start their own volunteering team to continue doing what they loved the most: giving back to the community. “We decided to create the best volunteering team in Khobar!” However, starting Giving Hands was not all that simple. “Volunteering was very new to the Saudi culture and people would question us: 14 DESTINATION SHARQIYA SEPTEMBER 2017

Malika Alshareef is a cofounder and director of Giving Hands, a leading volunteering team in the Eastern Province. When we asked Alshareef about her story behind Giving Hands, she said that it had all started back in 2012 when she was a student.
Today, Giving Hands comprises more than 3,000 members and has participated in more than 50 events. They organized Sharqiya’s very first Volunteering Forum in 2017.

Alshareef and her team never gave up on their dream. They wanted to make a change in the society and believed in what they were doing. So, they started small and slowly grew their circle to include friends and family. Soon enough, each person brought more people and by the end of 2013 they had about 500 members. Despite their joy in expanding their team, Alshareef and her team realized the weight of the responsibility suddenly on
their shoulders. “A team this size will definitely need serious organizational structure, divisional leadership and clear objectives,” said Alshareef. So, they developed their structure, built their website and got officially licensed by the Ministry of Social Affairs. It’s worth mentioning that Giving Hands was completely created and developed by its young and talented members. “We have never used any expertise outside of the team. For example, when we were creating our website, we benefited from our IT members’ skills. And when
we needed legal help, we took our law members’ advice.”As her parting words, Alshareef expressed her pride and honor for what she considers her second family. “I’m not exaggerating when I say that volunteering has transformed me into a completely different person. I changed from being a shy person to a leader, from being a lazy student to a graduate with honors and from being passive to proactive. LABOR OF LOVE Faisal Al Zamil crafted a legacy out of his passion. By Noura Al Joaib
There are household names that play an integral part in Sharqiya’s history. These very names became synonymous with the development of cities within our province, making them the very stepping stones to the present we live in. One of which is the Zamil family. The year was 1964, the city was Khobar; skies were bluer, life was simpler, and Faisal Al Zamil, current founder and CEO of Al Zamil Stores was a young boy, setting the foundations of a business that has captivated hearts of thousands for decades.
But what makes it this special? It is, first and foremost, merely a crafts store. But under the roof of the multi-floored structure, what you get from Al Zamil Stores is more than art supplies, stationery, and fabric. 16 DESTINATION SHARQIYA SEPTEMBER 2017

Al Zamil Stores has been in business for over 50 years, making it a rightful landmark in the city of Khobar. I remember visiting the store as a young girl, and continuing to visit it as an adult, whether or not I needed something. It had a gravitational pull that is almost unparalleled.
More often than not, one leaves inspired to create, to do, to pick up a craft, or go back to one forgotten. Especially if you were lucky enough to catch a conversation with the founder himself–who can be often found assisting a wandering new customer or engaged in banter with a regular. We were one of the extra lucky ones and got to have a one-on-one sit down with the man behind the Khobar’s favorite store. In order to delve into the history of Al Zamil Stores, Al Zamil took us back to the early ‘60s, when his mother, a seamstress in a time where there weren’t many in business, made a living sewing dresses for the women of Khobar. Hindered by the limited supplies in the area, her business stagnated. A few years later, his older brother, Abdulaziz, visited Beirut–where he stumbled upon troves of sewing supplies, the very ones their mother would need to move her business forward. Which is what happened after purchasing significant qualities of supplies. Interestingly so, a new business opportunity arose; from the remnants of supplies used after tailoring all those gowns, the young Zamil men found themselves with enough to resell in a market devoid of competition. It was then that Al Zamil Stores was born. The business rapidly grew, expanding its product line and service offerings along the years. DESTINATIONKSA.COM

With very humble beginnings operating out of a small rented showroom, Al Zamil Stores currently fills up 3,000 square meter of space. Al Zamil attributes the store’s success to hard work, determination, and his love for what he does. From the very start, he was and until recently, the store’s buyer. Anyone who has ever been to the store will marvel at the eclectic range of products that line the shelves. “I’m an artist,” he tells us, “I know how to knit. I know how to crochet. I don’t think of myself as only a buyer. I am an artist with a deep love for art and all art forms. When I buy, I don’t only buy what I know is good but also what would help the people of Khobar discover their passion, their craft.”

This explains how the business expanded to include art supplies and materials. “I began to learn more about art every time I travel. I started subscribing to art magazines and catalogs. There was no Internet back then; everything happened the hard way but it was worth it.”
Now, Al Zamil Stores is one of the largest arts and crafts specialty stores in the country, carrying world renowned brands such as Canson, Dylon and DMC – to name a few. The store is also one of the leading giants in stationery supplies, distributing to dozens of schools in the area.
“What advice can you give me and our readers?” “Do what you love. Nothing pays off like doing what you love.” Another attribute to the store’s success is the personal relationships cultivated along the years with the customer. “Know your customers”, Al Zamil tells us. When you know your customer, when you get to understand your customer, you will gain their loyalty. “Even the customers who have left the country still write to us. We get letters and emails regularly. Loyalty like that is priceless.” There is a lot to learn when taking in the story of Al Zamil Stores. It’s not an easy business. It’s not a business anyone can start. It is definitely not a business anyone can sustain. But the Zamil brothers have what it takes: passion, drive, and heart. “It’s a family business. and it went so well that they ended up expanding it to 2,400 employees. With that success, they provided the same service for the National Water Company and several governmental entities. He then received an invitation to The Entrepreneurship Challenge in Dubai, a program meant for families who wanted to explore their business ideas. 2010: A BEGINNING OF A JOURNEY
After earning a bachelor’s degree in finance from Los Angeles, California, Al Zamil came back to Khobar and attended a business simulation game. “I saw four years’ worth of finance in three days,” said Al Zamil. An idea of implementing this business idea in Saudi was forming in the back of his head. Al Zamil approached big companies in the area with the idea, but they weren’t interested. Then he had an opportunity to take a similar simulation program in Kenya about Train the Trainer, for those who were starting out their careers in the training field. The course gave him the ability to attract interested companies through presenting his simulation in a more appealing way.
THE GLASS IS HALF FULL
Unfortunately, companies started cutting down their budgets for training as the economy struggled in 2016. Undeterred, Al Zamil thought: why not implement workshops for the public? He posted a social media ad for a trial simulation program, Finance for Non-Finance: Learn Finance in Three Days. “I realized the power of social media on that day,” said Al Zamil, as many people attended the course. Better yet, companies wanted to partner up and start implementing these new training programs. Thus, he partnered up with GBNTC. He began offering courses throughout the country, and even expanded his roster of courses in partnership with a company called Know to include a barista workshop, jewelry design, styling, cake decoration, pottery making, photography and art and crafts.

With a strong passion for fashion, designer Maha Al Qassab struggled to find any training material or fashion courses in Bahrain. So, to pursue her dream she quit her job and earned a master’s degree in collection design from Florence, Italy. She currently owns a boutique in Bahrain called Maw Collection, specializing mostly in abayas and jalabiyas. After returning to Bahrain, she wanted to develop a fashion workshop. There were many designers in the area, but there was also a gap in the market. Al Qassab’s goal was to help these designers
by creating fashion courses and implementing a European process while utilizing materials that fit within the Arabian culture. Al Qassab met Al Zamil in Florence, and, to turn her dream into a reality, joined forces with him as a strategic partner. A former designer from Lanvin and a faculty member at a top fashion university in Paris taught the first fashion course in Khobar and it ended up being a huge success. “The fashion training program was an eye-opening experience for us,” said Al Qassab. “People in Saudi really wanted to learn about fashion!”
The goal of the course is to develop your creative process, create or work on your brand and follow the trends. By the end of the third day, attendees created their own portfolios and designed and made three dresses. After finishing seven fashion training courses, they can get certified as fashion designers who can give courses. THE ART OF FASHION The inspiring journey of Saudi’s premier fashion designer, Razan Alazzouni. By Dalia Darweesh
Alazzouni graduated from The School of Museum of Fine Arts in Boston, Massachusetts and earned her degree in studio art with a minor in art history. For her final dissertation, her project entailed designing a fashion clothing collection using disposable paper and documenting people’s reactions to it. Everyone was so dazzled by her creativity that she ended up selling a dress out of that collection. Thus, her fashion design career began. 24 DESTINATION SHARQIYA SEPTEMBER 2017

Saudi Fashion designer Razan Alazzouni’s love and interest in fashion, alongside her naturalborn designing skills, has made her a top-tier fashion designer. The feminine and sculptural designs that she creates are worn by many Hollywood stars, such as Elizabeth Banks and Emma Roberts.
Practically everything we see in her collections, from beading and embroidery to structure and cuts are inspired by art and sculptures. Alazzouni says that if she hadn’t pursued her passion in fashion design, she would’ve been a museum curator. What’s noteworthy about Alazzouni’s story is that her two business partners are her sisters, so each one brings with them their own unique style and personality that provides enough differing opinions to achieve a well-rounded fashion house.

That’s why the Razan Alazzouni brand has its own classy, sophisticated and whimsical style. However, they do keep up with trends and the latest fashion forecast in terms of colors and cuts. Of course, any new business has its challenges. “At first, the idea was foreign and new to everyone,” said Alazzouni. “In a country where there were no fashion houses, I was starting something new. I was exporting clothing. Why do so, when I can simply import clothing?” Well, exporting has proven lucrative after all. They are currently based in Khobar, London and planning on opening a new office in Riyadh soon. Meanwhile, they’re
now adding accessories and elegantly simple shoes to their ever-expanding fashion line. Alazzouni had parting words of advice for those who were just starting their fashion design journey. “If it’s easy, then it’s not worth it,” she said. “If you really want something, then you have to keep going no matter what until you find a solution. Have your own style that sets you apart and never imitate.”

ORIGINS OF THE BISHT
Originally, the colors of a bisht included black, brown, blonde, milky off-white and white. Light colors would be worn during the day and darker ones at night. Today, alongside Oman, UAE, Kuwait and Iraq, Al Ahsa sits on the list of locations that make the best bishts in the world. Back in the day, poetry was written about the Hasawi Bisht and it was among the main exports from the region. 26 DESTINATION SHARQIYA SEPTEMBER 2017

Originating in the Arabian Peninsula long before Islam, the bisht was historically called an aba’a. Regardless of social class, Arab men wore the bisht whenever they went out. Today, the bisht is only worn on certain occasions and is considered a much more formal and lavish piece of clothing.
LEADING FAMILIES
There were, and still are, leading families that are famous for raising the best bisht tailors in Al Ahsa, including Bu Kannan, Al Qattan, Al Baghli, Al Shawaf, Al Ghazal and Bouholaigah. Performing such an energyand time-consuming task that required a good eye for detail, bisht tailors were among the highest paid professions around. Founder of Abu Dhabi Weaving & Cloak Tailoring Factory, est. 1966, Ali Mohammed Al Eissa Bouholaigah shared a story about an employee of his great grandfather’s: “He had the ability to finish 80 bishts on the way to Hajj, which was a two-
month-trip on camel-back. His grandchildren still brag about it!” Coming from a deep-rooted family history of more than 150 years in bisht-making, Bouholaigah has taken after his ancestors in this craft. In the 1940s, he worked on the kiswah (Ka’aba covering) embroideries in Syria and eventually founded the largest bisht factory in the world and settled down in Abu Dhabi. With such a legacy, it’s no wonder that his regular customers include members of the ruling family of the UAE, a sartorial preference which all began with UAE’s founder, Sheikh Zayed Al Nahyan. Bisht trading in Al Ahsa centered around the exchange of raw materials, such as handwoven fabrics made from llama and lamb fur, as well as Zari threads which are used for embroidery and usually imported from Germany, France, India and Japan. The highest end of Zari threads can contain up to 10 grams of gold. THE CONTINUATION OF A FAMILY LEGACY
There’s a piece of clothing similar to the bisht, called a suwayeya, which was worn by the women in the Gulf area of the past. Here, this piece of clothing is rarely worn anymore. Well, Sara Buhlaiqa is reviving this trend as she launches her bisht brand for women, Desert Couture. Born in Khobar and raised in Vancouver, Canada, Buhlaiqa cites her grandfather as her inspiration for her line. “Seeing how my grandfather loved his bisht, cared for it and wore it
all the time made me think of the bisht as a very personal piece of clothing.” Spreading the idea of wearing the bisht as a abaya is not new. After

way of representing our vivid culture and introducing our part of the globe through this craft.” Her idea is to maintain the essential elements of a bisht while changing the fabrics and colors to make it more accessible for daily use, bringing back heritage in a modernized way. “My dream is to one day see the bisht design on runways, fresh from its source in Al Ahsa.” When asked about future plans, Buhlaiqa said: “We’re currently planning to launch a new collection of seasonally-limited farwa designs for the guys.” desert_couture

Traditional clothing is an important aspect of Saudi Arabia’s cultural heritage. Yet, in a drive towards modernity, this facet of our heritage is not as celebrated as it should despite its unquestionable beauty. In this issue, we pay tribute to the “Original Threads” that have been worn by women of different regions, honor their eclectic fashion sense and celebrate the beautiful diversity of the Kingdom of Saudi Arabia.
EASTERN PROVINCE SHARQIYA The thobe nashal is a familiar piece of the Eastern Province and is made up of a semitransparent material that can be used through multiple colors of base-clothing fabrics with a differentiation in metal threads and silk embroideries. The translucent style itself is typical of the hot interiors of the Gulf lands and is said to be derived from Najdi origins due to the share of the basic pattern with the age-old cotton thobe. The festive finery of the traditional garment comprises a sheer overdress accompanied by lavish sleeve openings and a head cloak. Its sequined embroidery holds representational motifs of flowers and birds and includes accent-pattern segments like panels and gussets.
SOUTHERN PROVINCE
JANOUB
The Bayt al Fakih is a southern-Arabian cottondress piece originating from Northern Yemen. It holds a societal viewpoint as one of the earliest and most authentic of pieces in Arabia. The traditional garment is seemingly distinct in design due to the astounding elements used through the application of colored braids and silver metal threads that are set to warmly complement the indigo-based cloth. Additionally, the thread used on the nomadic apparel showcases the popular form of the decorative elements used in design within the southern region of Saudi Arabia. The Najdi Bedouin women’s traditional thobe is a unique black garment tailored through the use of fine linen, soft cotton or lightweight wool. The Central Arabian attire is derived from the kaftan, a loose clothing item which holds variance to the robe and tunic, and is worn as an over-garment to one’s clothes in respect to the ruling of the Kingdom upon modest dressing standards, though it was once worn to ease the endurance towards Saudi’s heat through its flair in cool wear. Moreover, this conventional piece expresses gracefulness and comfort through the looks of its loose-fitting features and is suited to make the perfect maternity dress. 34 DESTINATION SHARQIYA SEPTEMBER 2017

NORTHERN PROVINCE
SHAMAAL The traditional thobe styles of the northern region differ from the mainstream portrayal of Bedouin dressing styles. It's fashioned by the use of hand-loomed wool needed to tailor the deep-red and, in rare occurrences, green materials. The tribal dress of the north holds the finest of subtleties in design with the use of geometrically botanical motifs and embroidery against the ruby-colored fabric.
The thobe itself is beltless and holds grand proportions to ensure loose-fitting features when in wear, similar to an abaya. No waist belts are worn to unveil one’s figures as the conditions within the region are extremely hot and such fastenings wouldn’t ensure comfort when attached. Overall, the fabrication presents the primary influences of the temperature, terrain and topography of the respective region relative to design.
This particular ensemble reigns in the region of Ha’il. The farther one goes up north, the heavier the fabric. That is due to the harsh winters of the northern region; winters that don’t compare to other regions of the Kingdom. Even the color of fabric begins to differ the farther you travel, becoming darker and more somber. 36 DESTINATION SHARQIYA SEPTEMBER 2017
WESTERN PROVINCE
HIJAZ
The Hijazi women’s traditional thobe is a semi-transparent, capacious gown made up of cotton gauze and is used in the design of multicolored fabrics. Its unique and customary style holds layered clothing items and presents beautiful embroidery components from head to toe. Though the Hijazi thobe is designed using smallscale sizing proportions, it’s cut in a similar manner to the Najdi thobe. The thobe styles of the western region design their cultural attire in an ideal manner with the intent of initiating one’s attention to the custom-made blouse. A unique addition to this is the zabun and the mudawwarah. The zabun is a traditional, princess-styled frock that is fashioned in the manner of a collar and is mainly worn by the townswomen of Hijaz. Meanwhile, the mudawwarah is a complementary headgear to the outfit with elaborate edging and a diamond brooch. Both accentuate the grace and detail of the Hijazi thobe. I’ve always believed that being an artist and an engineer are connected, and I’ve been involved with art since a very young age. I would copy things or characters even though I wasn’t very skilled at the time.
The graphics and art in video games interested me, but my father didn’t permit playing them a lot, especially during school days. So, I created my own game! I used my art skills to draw levels and monsters, and the game became very popular among my friends.

Can you describe the time when you first realized that creating was something you absolutely had to do?
It had been a while since I practiced any art, but in 2009, I participated in the National Youth Day in Scitech and got so much good feedback. People encouraged me to keep at it, so in 2010 I volunteered in a fine arts tent that Saudi Aramco was hosting, and later on I took a week-long course on “Ebru”, a form of Turkish art. Ebru takes a lot of patience and accuracy, where even the slightest mistake can ruin the entire piece. It was amazing and I found myself rekindling my love of art.
What kind of creative routines or rituals do you have?
It depends on the piece itself. If I am drawing a spiritual or calm piece, I prefer to draw at night in silence. If my topic involves people, I like doing it during my outdoor meditation, or I’ll just go to busy places like cafes. My process is to put myself in the shoes of the people passing by and just become one with the environment.
What are you trying to communicate with your art?
I want to leave my imprint on life using my art. Art
lasts more than words in my opinion, and while not everyone might read books, I feel that art is for everyone and is not specific to any certain time. My work is the legacy I want to leave behind.
What inspires you?
The weirdness of life and the variety of people’s behavior. I am inspired by the opposites that exist in life: the yin and
yang, the good the bad, the light and dark.
Your favorite artists?

SAUDI Profiling a passionate and prolific local filmmaker. By Hajer Al Alwan
Even though he originally earned a degree in computer programming, Fahmi Farahat couldn’t ignore his passion for filmmaking and production which he’s nurtured since his teens. So, in 2006 he finally earned the degree he really wanted in radio, TV and film from California State University. Having directed two awardwinning films during his time at university, he picked up right after he graduated to direct and produce his first full-length film, “Saudis in America” in 2007. 50 DESTINATION SHARQIYA SEPTEMBER 2017
A year later, Fahmi joined the crew and started working on the co-production of “A Father Taken”, a short film which received the Audience Choice Award in a film festival in California and was previously premiered in several countries. During his time in the US, Fahmi has worked on several other films including “Ahmad’s Xmas Carol”, “Lulu’s Curls”, “Eid El-Um”, and “Three Veils”. After moving back to Saudi Arabia in early 2011, Fahmi worked on several films and projects which later won awards and were screened internationally. His projects included “Winak?”, “The Corporation”, “One Man’s Tricycle” and many more.
Among his most remarkable works, Fahmi has worked on Saudi films by Al Hadaf for MBC group, including “Driving Alanoud”, which discusses the controversial subject of women’s right to drive in Saudi Arabia. And we can’t help but highlight “God’s Little Gift”, which is a film told using Arabic Sign Language. When we asked Farahat about what inspired him the most, he told us about the huge influence his father has on him. “He gave me the right tools to to be a better artist and storyteller. Back in 2003 when I wasn’t sure if I should study filmmaking or stick to a ‘real career’ such as computer programming, my father, Dr.
Farouk Farahat, inspired me and told me I should follow my heart and do what I love. He always says: “Love what you study, so that you love what you do because that’s the only way to success in your career, whatever it is.” As Farahat shared his story, he emphasized his deep admiration for Mustafa Akkad. “I always admired the late Mustafa Akkad. His epic films in the 1970’s inspired generations of Arab filmmakers. In the early 2000’s, and while studying in Southern California, I was determined to find him. With help from the Saudi consulate in Los Angeles, I had the chance to meet Mr. Akkad. He was very generous with his knowledge and inspirational stories. I met with him a few times throughout the years, until he was murdered in 2006. His mentorship and passing of knowledge was one of the greatest gifts I got as a filmmaker.” Farahat is currently a production manager in Saudi Aramco. He dreams of a Saudi cinematic movement which boosts and develops the filmmaking industry.

KILLJOYS Speaking of kickass women, this show’s lead epitomizes that to a T. A space show about bounty hunters, I’m enjoying this a lot more thanks to the sci-fi setting and the rich world-building that gets infused effortlessly into the environment, the dialogue and the action on screen. A fun show with heart and guts.

Sunroom So far, this place has one of the prettiest interiors in Sharqiya. Even though it’s not the first to have a sea view, the coziness you feel when you walk in is a good indication of careful and thorough design. Every little detail tells something and it just feels like you’re in a floating boat right in the middle of the sea. Mehraja You can tell a lot about a place just by looking at its entrance. Walking through Mehraja’s huge ornamented wooden studded gate is enrapturing. Slower changes tend to last. It’s better for you to take it step-by-step. This will help your brain accept the change and your body has time to adjust. By diminishing the amount gradually, it will be less noticeable and your cravings will lessen too. If you're used to adding two spoons of sugar to your tea or coffee, try cutting it to one spoon for a week, then keep reducing the amount to zero. Or you could use other natural sweetening alternatives such as honey, cinnamon, vanilla extract or a slice of orange for a refreshing dose of sweetness.

The three-day gastronomic adventure successfully showcased the superiority of European cream. Ten international chefs, including Chef Mayada Badr from Saudi Arabia, were challenged to present their interpretation of this year’s theme: Blanc de Blanc (white on white). White offers its own culinary range and proposes new gastronomic sensations – an invitation to the chefs to use their pure imagination. The chefs were given complete free reign to create absolute masterpieces using a combination of new and classic recipes, and traditional and contemporary baking techniques. The cream, which is the hero ingredient, remains as the integral element in each cake – discreet, glossy, unctuous, and reassuring. We witnessed in awe as the pastry chefs defined, reimagined, and ultimately

created dreamy interpretations of the theme. They hustled and bustled in a kitchen that felt like an episode from Iron Chef. Another highlight of this edition was a special workshop with one of Paris’ top pastry chefs, Nicolas Bacheyre. We were able to see how European cream is able to elevate every creation. European cream is instantly recognizable by its texture and highly developed aroma, characterized by its roundness, smoothness and a bright, fresh taste. Due to its high standards and authenticity, European cream carries strong values that reflect the professionalism of the top pastry chefs. During the workshop, we saw the difference the choice of ingredients can make especially in a delicate culinary art such as pastries.

After two days of preparations and for us, a journey of discovery, the international chefs presented their masterpieces at Forlino. Their final recipes will be published in an illustrated recipe book, which will be a training tool for students’ annual workshops. Needless to say, as much as we revelled in the stunning aesthetics, we looked forward to indulging our palettes. Indeed, they were delicious. The complex techniques achieved flavors that take you through a process; others were surprises folded under cream that rendered it simple yet elegant at the same time. The dessert of Chef Sarah Ni from China wowed us with the intricacy in her work. The five elements were aptly represented through varying layers and flavors, all coming together through the clever use of the cream. When it comes to gorgeous sweetness, Michelin-star chef Nicolas Lambert created a pavlova that was insta-ready. As always, we were left
with a better understanding of fine ingredients and what Europe has to offer. But equally important perhaps is the gastronomic diplomacy that takes place through these events. The way European cream was adapted and honed by our star chefs to complement and in ways, infuse with their respective countries’ culture and palette is quintessential. European cream and the use of quality ingredients is not a practice or preference limited by geography. Rather, it is a universally accepted fact – top pastry chefs only use the best products to create the most wonderful desserts.

We would have to say that in terms of flavor, taste, and clever use of cultural elements (a thumbs-up in our books), Chef Mayada’s Huda is unforgettable, with its ice cream infused with hints of rosewater, a gahwa and halawa core that, to this day, we’re still craving. It was a showstopper.

PURSUING EXCELLENCE AT ROSEWOOD A conversation with Luke Noble, the new Food & Beverage Director Rosewood’s premium hospitality standards are soaring to new heights under the leadership of the new Food & Beverage Director. In his 22 years of service in the hospitality industry, Luke Noble has worked at a restaurant, cafe, lounge and events management company. He worked his way through the ranks and spent the better part of the previous decade in the five-star sector. At Rosewood, Noble works closely with the managers and executive chefs to give guests the premium experience that Rosewood promises. Things look good for the Saudi hotel industry. The government is enhancing the tourism sector and it’s a successful effort. Working at Rosewood, Noble has noticed that the hotel industry is in “a stable and strong position of growth, particularly in Jeddah.” But there are always challenges in any industry. “Realistically, when you look at the scale of the market, everyone will have personal challenges. Many of them are regulars and they’re lovely. DISCOVER YOUR CREATIVE SIDE A modeling success story. By Dalia Darweesh
Pauline Castro had been raised in Khobar and lived there since she was four years old. At 16, her life changed when a photography group offered her a modeling opportunity. They sought her mother’s permission, explaining why Castro would be a perfect fit since she had all the right characteristics: she was beautiful, she knew how to pose and she had a fun character. Her mother was on board and so was Castro. Although she enjoyed modeling, the photography and directing aspects of the modeling experience were much more interesting to her. Whether it was about the equipment needed or the lighting and angles that were used, Castro knew where her true passion lay. She started taking artistic photos with her phone and digital camera, in and around Bahrain and Khobar. However, the only way for Castro to learn more about these techniques was to model, and so, she began her modeling journey. Unfortunately, opportunities were very rare in Khobar, so she started sending her portfolio to agencies in Bahrain, seeking and taking opportunities there. Her work with different photographers helped her practice her skills by creating her own poses, choosing the angles of shooting and selecting backgrounds and lighting.

Being in the industry, Castro would naturally get introduced to other models during various photoshoots on set. She’d sense when some models struggled with posing or when they felt uncomfortable, and give them advice and tips on how to loosen up – like listening to certain types of music – to get into the modeling mood. Eventually, Castro started directing photoshoots as a hobby. “With modeling, it’s not just about having a pretty face, having the right photographer or generating nice pictures. It’s also about the direction process.” She sets up the mood, directs the photographers on which angles to shoot, helps models with poses and assists them in how to move with the clothes. A modeling director’s role isn’t well-recognized in the region and therefore isn’t paid, but Pauline does it because she loves being part of something that would eventually create beauty.
It’s really important for me to get the message across that it doesn’t matter what creative filed you are in, I want people to be motivated. Keep pushing for it because, why not? Do it anyways! — Pauline Castro
Here are some tips from Castro for aspiring models: • If you’re feeling nervous and awkward, put some music in the background and shake it off, laugh, or do silly faces. Whatever it takes to get out of your shell. • For movements, keep moving without necessarily posing; it could even be a continuous dance move. Change of angle is what matters. • Don’t overthink poses; let posing come out naturally. • Models have to breathe when they pose. Right before taking a shot, you need to inhale, then exhale because it relaxes your facial muscles and cheeks and softens your eyes. It makes the picture come to life. In January of 2016, Atawi had an accident that caused her to lose her hand, but she didn’t let that stop her. On the contrary, she saw it as a challenge to overcome. She now has her own fashion line and she designs beautiful and chic dresses. So far Liganchi
has a collection called Hope, in addition to their upcoming ready-to-wear collection. Her Hope collection is a line of luxurious and elegantly designed outfits with savvy cuts, giving them just the right amount of sophistication. Atawi also collaborated with an organization to help Saudi women of low income and special status by tailoring handmade dresses at Jawaher For Mashael Alkhair Center in Khobar. As happens so often, we discovered Woodlands whilst looking for something else. In the baking furnace of midday Manama, we had hoped to come across a Gujarati vegetarian restaurant. When we found it, it was derelict and abandoned and the shutters hadn’t been opened for what could’ve been years. Woodlands is a vegetarian restaurant and, of course, we had arrived at lunch time, which can only mean one thing… thali time! Within minutes we were tucking into a small, yet deceptively filling lunch complete with steaming chapatti and an abundance of rice. I’m sure Mo was secretly delighted!
