Ramadan Kareem! The smell of burning incense and the sight of do-gooders giving away care packages at stoplights can only mean one thing: The Holy Month is here. The world, and the region more specifically, has taken a few hits in the past year. But with the arrival of Ramadan, we all need to be reminded of our humanity. Ramadan is all about unity and solidarity, so this issue focuses on connecting with the world in a positive way. This month, we’re bringing you inspiring stories of Muslims from around the world. Uplifting stories about social entrepreneurs, heroes and everyday people who will hopefully push some of us to make a conscious decision to be kind to the world and to each other. The article Muslim Heroes is very close to our hearts. With all the negative press surrounding Muslims, we wanted to take back the narrative and show what Islam is all about. The people mentioned in the article have all fundamentally impacted the lives of the people around them with their acts of courage or ingenuity. When you put down our magazine this month, we hope you feel a little more connected, because that is the greatest thing humans do. We connect with each other.

The Saudi National Arabian Horse Championship Show is a competition for purebred Arabian horses, showcasing their beauty and agility. The show included about 300 horses that came from different regions in the Kingdom. It was held April 27-30 in Prince Faisal Bin Fahad Sport Complex in Al Ahsa.

Pop-Up Al Gosaibi One of the coolest events of May was the opening of a pop-up shop in Al Gosaibi Village. The concept is part of Al Gosaibi’s social responsibility program which aims to support local entrepreneurs by offering them a shop space where they can test consumer demand before committing to a long-term lease. A.H. Al Gosaibi teamed up with Desert Designs who have offered their expertise to assist each tenant in designing their space.

Ramadan Tents The Islamic Cultural Center in Dammam is hosting iftar tents throughout Ramadan which will regularly serve more than 5,000 people per day. It’s not just a meal though as there will also be Islamic lessons in multiple languages, teaching everything from interpreting and memorizing the Qur’an to all the best habits and actions that a Muslim embodies in his day to day life. ENABLING CHANGE The story of one group’s passion to help their community. By Anousha Vakani
The founders of this institution wanted a name that summarized their vision, “to empower orphans to achieve a happy and successful life through support, education and practical skills,” in a single word, hence, Tamkiin was born. 12 DESTINATION SHARQIYA JUNE 2016
Earlier this year, Tamkiin took it a step further by organizing a women’s committee (currently seven members strong) with the aim of increasing their support for female orphans. Their most recent initiative was a women-only event held at Holiday Inn entitled Bugsha. Lamya Samra came up with the idea for this event that would integrate fashion with art. A fashion design graduate and owner of LAS Boutique in Khobar, Samra worked with the other members of the committee to organize an event that was unparalleled in its elegance – flowing white

In 2012, a group of businessmen from the Eastern Province came together to form an institution dedicated to orphans and their wellbeing. They organize exhibitions and events to support orphans by funding their education and housing and by finding them jobs.

All proceeds from the rents of the booths and tickets that were sold, were gifted from the community to orphans. The board managed to get some of the best designers in the region to showcase their fashion collections, but even after the success of Bugsha, the women say that this is only “step zero” in their journey to empowering orphans and encouraging the community to do its part. • Determine your learning objective. Is it basic or business communication skills; academic certification; research writing or other? • Check the specialty and strength areas of your learning institute before signing up. Some centers focus on conversational English (or other languages) while others focus on grammar and writing. • Check the credentials of the instructors and the teaching staff. If the desired language is not the mother tongue of the instructor, do check their background and years in training.
The growing demand for training courses and certification probably reflects a growth in awareness and interest in self and career development. In general, education has gone through several phases of change in format. With the advent in Internet infrastructure and mobile landscape, the search for and acquisition of information and knowledge soared. A true revolution has ensued. training saw unprecedented growth especially with the commencement of scholarship programs in 2010. The cost of such training is often high (sometimes north of SR 4,000 per month) but the quality of the outcome does not always match the price. I personally recommend that no training should be attempted without discussing the objectives and course methods first. Many students pay large fees expecting quick results. When it does not work, all they remember is the financial cost.
• Do not assume that the promised course duration will deliver best results. Learning varies across students and so does the effort and level of persistence. • A certificate is worth nothing if it is not coupled with real learning. Learn about the Al Shiha family business - keeping customers happy since 1979. By Anousha Vakani
Founded in 1979 by Abdulaziz Al Shiha, Hospitality Development Group (HDG) began with Al Hamra Hotel in Dammam. Through their signature commitment and attention to detail, HDG grew into one of the most prominent hospitality firms in the Kingdom, providing a wide variety of services. 16 DESTINATION SHARQIYA JUNE 2016
We spoke to Mohammad Al Shiha, CFO of the company, to find out more about where HDG stands today and what they have in store for the future. A graduate of Dhahran Ahliyya Schools, he went on to obtain a Bachelor of Business Administration in Finance from the American University of Sharjah. After working at the Saudi Hollandi Bank for three years, Al Shiha became the CFO of his family business with his brother Naji Al Shiha leading it as CEO.
We asked him about the most challenging aspect of his work. “Keeping consistency,” he answered instantly. He stressed on the importance of maintaining the high quality of his products or services. He added, proudly, that the communication between the departments at HDG has been
very smooth. “We invested in people. We believe that hiring people of high caliber will give your services a higher quality and that is the secret to success.” He divulges another secret later: HDG does not accept errors in service. Customer satisfaction is extremely important to them and they will even reduce margins just to ensure that they are providing the highest quality of services. HDG has quite a few brand names in the food industry: Al Yacht, Red Dragon and their newest and most successful experiment to date, Lebanese fusion restaurant Beit Misk. There is currently one branch of the restaurant in Dammam and two under construction in Khobar and Al Ahsa. HDG aims to be a leader in the food industry in the Middle East. They plan to go international and even provide franchising for their brands.

They currently have eight hotels throughout the Kingdom and more in the planning and construction stages with the goal of having 25 hotels in the next two years. Al Shiha explains that they are currently targeting more remote areas such as Al Qaseem, Baha, Turaif as well as the more central Jeddah and Riyadh. He says it’s important to look for the demand, not the trend, and follow it, thus creating the trend. Their most recent milestone has been a joint venture with Swiss International Hotels and Resorts. HDG will now be able to incorporate Swiss values and international quality to their services while retaining their signature style that cherishes culture and tradition. What advice would you give to someone who wants to start a business?

We provide a lot more services. We engage with the client in their day to day business activities. We pay attention to smaller markets because we believe in growing with small businesses. This does mean more overheads and more stress, but it’s working very well for us.

MUSLIM HEROES No, we don’t mean Marvel characters. This is a round up of real people worth looking up to. By Areeb Al Shathri
She is the winner of the Human Defenders Award, the U.S. State Department’s International Women of Courage Award, as well as the Nelson Mandela Award in 2016. At 13, she was a child bride and endured physical abuse for 20 years. After attending a women’s empowerment program, the mother of four set out on a mission to empower her gender. Upon being rejected by the all-male jirga (an informal judicial council) she started her own. She later became the country’s first woman to serve in a male judicial council and spearheaded the country’s successful campaign to abolish child marriages.

Over the course of nine months, Haidara and his team scoured Timbuktu and collected 350,000 manuscripts from 45 libraries. At the time, militants were destroying historically and culturally important books claiming they violate Islam. In medicine, time is often of the essence. This fact spurred the then 29 year-old microbiologist to develop a diagnostics tool to speedily identify infections. With fast diagnostics, patients’ survival rates can increase and the chances of it spreading can decrease. For his efforts, Zowawi received Rolex’s 2014 Young Laureate award.

Along with a team of four other MBA students from McGill University, Ashour won the Hult Prize for young social entrepreneurs. They used the money accompanying the prize to start Aspire FG. It aims to address food security in the world’s urban slums. This earned Ashour a place on Forbes’ 30 under 30 list.

MOHAMMED ASHOUR Bassam Tariq who traveled across America to break their fast at a different mosque every day during Ramadan a few years ago, he decided to pray taraweeh in 30 mosques over the 30 days, in 2013. He did that to promote solidarity amongst Muslims and immerse himself in the calmness of taraweeh prayers. On Jan. 9, while stacking shelves at a grocery store in Paris, Bathily heard gunshots. He quickly ushered a dozen shoppers into a walk-in fridge in the basement, and shut off the exhaust fan to reduce noise. As he was comforting panicked customers, an armed terrorist took hostages in the grocery store above and opened fire killing four people. Despite being left out of the Legion of Honor ceremony for heroes of the terror attacks in Paris, Bathily became a full French citizen and currently works at the mayor’s office. DESTINATIONKSA.COM

Jeddah’s floods were an unfortunate event that took away the lives of people along with their homes and cars. Farman Ali, former martial arts champ, showed extraordinary courage when he saved 14 people trapped in flashfloods. He received an award posthumously from Pakistan and The World Assembly of Muslim Youth, WAMY, had announced it would sponsor the widow and his daughters.

On Nov. 6, Albayrak defended two girls who were being harassed by a group of men. Unfortunately, one of the men delivered a single blow to her head after an exchange of words, causing her to fall unconscious. Albayrak was pronounced brain dead on Nov. 26 and was taken off life support two days later.

An Islamic scholar and role model, Sheikh Al Sumait helped build 5,700 mosques, four universities, 860 school and 9,500 wells in Africa. That is just the tip of the iceberg. He decided to leave behind his profession as a medical practitioner and head to Africa in order to dedicate his time, energy and money to the less fortunate. he helped establish the Africa Muslims Agency, later named Direct-Aid. Even as a highschool student he was always kindhearted, he had helped collect provisions for poor drivers and drove them to their workplace everyday. He lived a life of gracious giving and passed away leaving a legacy of prosperity and wellbeing. He is an inspiration to all.
During his commute to work, Al Shabab militants ambushed Farah’s bus. The terrorists asked commuters to separate according to religion. Farah knew doing so would surely lead to the deaths of all the Christians so he refused, because he knew it was his duty to help save those around him no matter what religion they follow. In turn, the militant shot him and two other passengers before abandoning the bus. He sadly died in the hospital a month later.

There was an old British Muslim man in our institute, who was overjoyed with our presence and he’d join us for iftar at times. Inspired by Humans of New York, Humans of Ramadan was initiated by Usama Malik last year. Malik traveled to different Texan state cities to visit several mosques and asked people about their backgrounds and experiences, hoping to shed light on the time when Muslims are closest to their faith and to show their diversity, beauty and wisdom. How does waiting to listen to the maghrib adhan make that first sip of water taste a whole lot better than if you were just looking at the clock? Why do you always make special room for the dish your neighbor sends over for iftar, even though you don’t like their cooking? In Sharqiya, there’s an indescribable feeling that yearns for those annual traditions of the past during those 30 days.
Before Ramadan even begins, friends and family take part in greish, a dinner gathering that welcomes the new month and symbolizes the last regular meal with leftovers or dishes not served during Ramadan. Before Maghrib, volunteers flock the streets handing out iftar goody-bags or driving iftar delivery trucks to those in need. There is a visible passion among the people for charity work that is matched by a humbling reverence. Mosques become the heart of communities, pumping energy among everyone going to taraweeh and qiyam. Mosque competitions and programs include Qur’an recitation and halagas where people sit together in a circle to discuss inspiring stories. The citizens take part in ghabqa, a late evening social meal shared
among friends. Its origin is ghaboq - the drinking of camel milk in the evening. Today, these private gatherings are also where fashion statements are made. Traditional jalabiyas are fused with the latest modern styles. The neighbor’s interior design also changes with traditional ornaments in contemporary living rooms. The gargay’an jingle performed by children on your doorstep, asking for sweets with sacks around their necks, reminds you that you are halfway through the month. Some communities choose to mark the occasion indoors, giving away the goodies in creative packaging.

The Calligrapher
Calligraphy not as an art form, but as performance art. By Anousha Vakani
It all started with calligraphy classes in the fourth grade, almost 30 years ago. “You can learn anything you want, but talent gives you the passion to do it. And you don’t realize that you’ve got the talent until people acknowledge it,” he said. His friends and teachers began to ask him to write their names, so he created art for events at his school and soon earned the title,
“The Calligrapher.”
Al Jalaud enjoys writing people’s names the most, although, he admits that the feeling he gets now is not even 28 DESTINATION SHARQIYA JUNE 2016
half of the pride he used to feel back at school. “I firmly believe that this is the fruit of the seeds that were planted in me back then.” Fast forward to university in the USA, where Al Jalaud began to miss the attention and the motivation to create art. He then turned to a random classmates and asked to write his name for him. It didn’t take long for the reputation to return. He started performing at events and festivals at his university. “People prefer the performance. They don’t even look at the paper, they look at your face – they want to know how you do it.” Since he never studied calligraphy officially, Al Jalaud still prefers to use the tools he started with back in fourth grade. “That’s why I can perform anywhere because I can use any tools and any kind of paper.”

THE SHADOW
ARCHITECT Where light and shadow meet art and architecture. By Anousha Vakani
Abdullah Al Hussain is one of Sharqiya’s most promising emerging artists. He talks about his work with passion, but what sets him apart is his obsession with precision. This is a result of his educational background; an architecture graduate of King Saud University with a Master’s in Construction Management from San Francisco, Al Hussain's art is a blend of architectural accuracy with a cultural touch. True to his architectural side, 30 DESTINATION SHARQIYA JUNE 2016
Al Hussain designed a piece that he uses as the foundation for all his artwork. Inspired by the branch of a tree, the piece that he calls his “alphabet” is made up of complex but balanced lines. He wanted something flexible, signature and organic that could be used as the base for all his artwork.
Al Hussain wanted to create something interactive without using technology. After brainstorming for months, he tried out a technique that cuts space out of a thick canvas. He tested the piece out in his apartment for two months, monitoring the effects of light and shadow. Entwined with his simple, signature work that uses no colors whatsoever, the overall effect is bound to leave its marks on the Kingdom’s art history for its cultural representation with a modern twist.

To truly understand his work and its value, it’s crucial to go and see the artwork yourself, currently displayed in Desert Designs Art Gallery. Hearing Al Hussain narrate the stories of his canvas will add to the experience. A former gallery manager at Desert Designs, Al Hussain admits that he owes a lot to this place: “I love working with the Bukhari family. They gave me the stage to implement my vision as an artist in the Kingdom.”
His graduation project and most-prized design was a children’s hospital focused on recreational activities.
He left the gallery to start working at a construction company where he could give time to his true passion, which is architecture.
Al Hussain designed it to be built with Lego-shaped bricks, equipped with an outdoor playground and linked to a nearby park. His teachers even

Tell us about the femi9 brand revamp. Why and how?

How did the idea of femi9 first spark?
I was 25 years old, finished with my college degree in Switzerland, back in Saudi Arabia and driven to launch my own fashion business; and so I did, but that was not femi9. I launched another fashion brand that lived for only 8 months – tried and missed. I did not succeed in exploring the psychology of my target market and understand its needs. That was the time when I had a serious reality check, where I assessed my experience and derived learnings which set me to create femi9 with more confidence and experience.
We rebranded femi9 in 2012, introducing the market to a clearer brand identity and an enhanced shopping experience. It was a key milestone that we had to undertake; the market is evolving, we understand our customer better, and femi9 was ready to go to the next level. The new logo merges between English and Arabic, communicating that the brand comes from an Arabian origin and operates with international standards. The stores and all other brand
touchpoints were refreshed to convey the brand feel and serve our customers better.
Tell us about your experience in Tedx Jeddah. A lot of the achievements I work towards are inspired by my family, Tedx was one of them. My eldest daughter, Tala, was looking forward to my Tedx talk; knowing that, I was eager to truly deliver – to Tala and to the audience attending. The topic I addressed was titled ‘Decoding Your Fears’; fear holds us back and limits us. My talk focused on how you can decipher your fears and eliminate them, in order to achieve your vision and reach your potential.
Your vision for femi9 by 2020 We plan to have reached 100 branches; femi9 will be available with 72 stores by 2017 and we are working on mega-expansion projects.

Can you tell us a little about yourself? I’m a Saudi businessman and a proud father of five daughters. I graduated from Ain Shams University in Cairo, Egypt with a business administration degree, but my main interests have been tourism and catering.

When did you start Al Quds and how was the process of establishing a restaurant? I started my business in 1998. It all began with an idea that I was able to follow through with and create, thanks to the help and encouragement I received from my friends.

What are the struggles of running a restaurant? The main struggle was finding the perfect Palestinian dishes that would meet the standards and liking of the Saudi community. We also spent a lot of time searching for the right team of staff and now we have some of the bestexperienced chefs in the area. Can you tell us a little more about why you decided to establish Al Quds restaurant? I decided to establish Al Quds because of my friends, who encouraged me since they missed the original taste of Palestinian food. I wanted Palestinians to feel at home, and from the feedback we get from our customers, I would say we’ve done that. What do people love most about Al Quds? What is your best quality? The atmosphere created by our amazing Palestinian staff gives off a cozy vibe. I believe our best quality is that we choose the best sources and suppliers
for our ingredients and try to stick to the original recipes as much as possible. Your favorite dish from Al Quds? I love everything we serve at the restaurant. For the moment, it's mansaf and masakhan for lunch, hummus and falafel for breakfast and dinner. What is your secret ingredient? The secret behind our dishes is the old authentic taste,

2 Families can set up zakat boxes at home and children can encourage family and friends that visit and donate items in the box. At the end of the month, when parents give away their own zakat, children can give away the content of the box as zakat as well. 3 In the days leading up to Ramadan, children can take part in arts and craft activities, such as making and decorating fawanees (lanterns) or hilals (crescent moons), with different materials or colors, to be hung around the house.

I’TIKAF DURING RAMADAN The last 10 days brought alive with stronger faith, prayers and du’aas. By Sahrish Ali
I’tikaf is the Prophet’s sunnah; the profound spiritual practice of secluding oneself during the last 10 days of Ramadan for meditation and prayers. Prophet Mohammed PBUH would stay in the mosque away from his family and friends during the entire last 10 days. Meditation during i’tikaf gives your mind calm and focus; instead of becoming preoccupied with your life and external world, we focus on our iman (faith) and inner spiritual world. Conditions of I’tikaf: Similar to other manasek (rituals), you should be a capable and sane Muslim, with the correct intentions, in addition to staying at the mosque - for men only. Fasting is an obvious prerequisite. Once your intention is set, i’tikaf can be done in any mosque.

• Take care of your health by eating and sleeping well. • Recite Qur’an and supplications and avoid disturbing others. • Remember to pack smart with all your essentials; necessary medication and a first aid kit, along with clean clothes and sanitation supplies. • Be considerate of others at all times; the Prophet (PBUH) advised his companions to not eat strong-scented food to avoid disturbing others during prayers.

THE HOLY MONTH During the holy month, over the course of years, several significant fetes in Islamic history took place. By Nafeesa McDowell
THE FIRST REVELATION OF THE QUR’AN The Prophet (PBUH) was known to find solace and refuge in Heraa’ cave and on one blessed night, one of the odd nights within the last ten days of Ramadan, Angel Jibril descended to reveal the first ayahs of the Qur’an: Surat Al Al A’laq. Laylat Al Qadr, the revelation night, is more rewarding than 1000 months.“Indeed, We sent it down during a blessed night. Indeed, We were to warn [mankind].” (Surah 44: Ayah 3)
THE BATTLE OF BADR On Ramadan 10, the Muslims embarked on the battle of
Badr, named after the well it took place next to. The small number of Muslims, in comparison to the larger forces of Quraysh and their allies, caused Muslims to doubt and fear for their lives. Badr was a lesson for all Muslims on yakeen; conviction in Allah and tawakkul; reliance on Allah. Allah gave the Muslims victory on Ramadan 17, with the help of a thousand angels. “[Remember] when you asked help of your Lord, and He answered you, "Indeed, I will reinforce you with a thousand from the angels, following one another." (Surah 8: ayah 9)

One of the specialties of Coral Island is that visitors can enjoy a relaxed outing at any time of day or night. White sand, green meadows and a cool breeze welcome you away from the hustle and bustle of city life. All it takes is a 15-minute boat ride from Dammam’s corniche to reach the secluded Marjan Island, also known as Coral Island, popular for picnics, fishing, boating and visiting its lighthouse as well as the Dolphin Village.
And there is no better place to enjoy those sights than from atop the island’s lighthouse, Fanar Tower. It’s a bit windy at the top, but makes for an excellent spot for photography. Word of warning though: the poorly maintained bathrooms there may lead to a less than ideal aromatic experience. Back on the ground, there are huts made for families who prefer having a laidback and quiet time. You can destress gazing at the sea while enjoying the cool breeze or watching the children play in the sand. My favorite activity there is taking a leisurely walk along the shores.
Another attraction is the boat trip, with ferries going to and fro between the island and the corniche. It’s a great way to see the coast, enjoy panoramic views of the city and even have a bite to eat at the restaurant onboard. Care for a selfie with a dolphin? The island’s amusement park, Dolphin Village, is located near the entrance and houses a small zoo, including monkeys, ostriches, rabbits, sea lions, dolphins and a modest aquarium. The theme park offers daily dolphin and sea lion shows, exciting rides for children of all ages and
much more. The entry fee is SR 10 per person and SR 30 for the half-hour dolphin show. There’s an additional cost for taking pictures with the dolphins. If you are planning to head to this idyllic oasis in the city, come early to grab the best spots (and easy parking) and stay late for the best views. As with most picnic spots in the region, make sure to bring your own food and refreshments. So grand it is, in every sense of the word that it can easily boast a similar grandeur to that of national mosques of other Arabian countries; the likes of Al Fatah mosque in Bahrain or the Sultan Qaboos mosque in Oman. I came across this huge mosque that was gleaming under the noon sun. It was spellbinding, with its lofty minarets, sprawling courtyard and lucent white stone with grey lines running across it. I could imagine multiple football fields being able to fit in the entire complex including its vast parking area. The mosque sits on the intersection of the 3rd Ring Road and Prince Sultan Street. A huge residential project is being undertaken right next to
it, considering its size it can easily accommodate all the eventual dwellers. After parking in the tree-lined parking area, we climbed a set of stairs to reach the courtyard. There is even parking space in the basement, normally in use during Ramadan and Eid occasions when the mosque sees thousands of worshippers gathering at it. The grand mosque seemed to dwarf other things around it. Transfixed by its beauty and sheer size, we just stood there staring at it for a while. It shone brightly under the sun and is illuminated beautifully at night. Two towering minarets measuring 71 meters flank its main entrance.
The mosque was built by prominent Saudi businessman Sulaiman Al Rajhi and was inaugurated fairly recently in 2013. Having a capacity to accommodate up to 47,000 worshippers, it is the 2nd largest mosque in Makkah and amongst the largest in the Middle East. The mosque features elevators, escalators and a conference hall. There is even a functioning water treatment plant on site and efficient lighting systems that seek to reduce its carbon footprint.

After crisscrossing the wide courtyard we reached the main door of the mosque. Above the door is a towering arch that has a beautifully crafted latticed window at its center. Inside we noticed that the mosque is extremely wide. The high ceiling just adds to its opulence. The dome in the center is rather small, compared to the mosque’s large size. An ornate chandelier hangs from it. The overall style of the mosque is contemporary Islamic and the aesthetics ooze of tranquility. For a mosque of such opulence, the mimbar (prayer niche) is very simple with its marble and minimalistic designs.

Alongside the mosque runs a portico with carved arches. After passing through the arches, we reached the mosque’s library. It houses a decent collection of Islamic books. The mosque is popular amongst locals of Makkah, but remains relatively unknown to visitors of the city because it is overshadowed by Al Masjid Al Haram. Had it been in any other city, it would have been a tourist magnet. In all aspects, it is worthy of becoming a popular tourist site and a place that umrah and Hajj tour groups definitely need to add to their itinerary. COORDINATES 21.382050, 39.873909

Before the introduction of postage stamps and the railway, the limited amounts of mail that was sent traveled mainly by camel.
In Riyadh, shop owners volunteered to complete mail services by gathering at Safa Square, putting sacks of cloth labeled by city or village.
The senders would then put their letters in the respective sacks, which would be sent along with caravans or travelers going to that particular city.

The Hijaz in the early 20th century had developed postage stamps, postal services and operations on a small scale; they even sent mail internationally.
Recognizing the importance of postal services, King Abdul Aziz set up the Posts, Telegraphs and Telephones (PTT) Directorate in 1926.
In the same year, King Abdul Aziz issued stamps, featuring the King’s tugra, the ruler’s signature and emblem.
After the country’s unification, the first stamps marking Saudi Arabia were issued in 1934.

Post-1969, Saudi Post witnessed many developments, most importantly, an independent budget being announced for Saudi postal services.

Today, Saudi Post has a postal network that covers all locations of The Kingdom, with over 475 main branches and 180 post offices.

Eid Delights Lip-smacking desserts to end a perfect day. By Tuba Saricimen
Seeing your loved ones, eating great food and making the little ones happy are the highlights of any Eid party. But figuring out what to take with you can be a nuisance. Fear not. Just make these pistachio bars; they (and you) will be the stars of the party. Light yet loaded with fragrant pistachios, you’ll have everyone asking for the recipe.
PISTACHIO BARS Yields about 20 5-centimeter square bars.
Ingredients
• For the bars: 1 large can (397 grams) sweetened condensed milk 1 large package (250 ml) thick cream 1 cup ground pistachios • For decoration: 3 tbsp sifted powdered sugar (optional) 2 tbsp ground pistachios (optional) 84 DESTINATION SHARQIYA JUNE 2016

• For the base: 200 grams biscuits, ground to crumbs 100 grams unsalted butter, melted
DIRECTIONS
• Preheat oven to 350F. • Grease the sides of a 30 x 20 cm pan.
• In a medium-sized bowl, combine biscuit crumbs and melted butter and mix until well combined. • Press biscuits evenly onto bottom of pan. • In another medium-sized bowl, combine thick cream and sweetened condensed milk. Whisk until smooth and well combined.
• Add the pistachios and mix well with a spatula. • Pour mixture onto the biscuits.
• Bake for 20 – 25 minutes.
• Remove from oven and cool to room temperature on top of the counter then chill in the refrigerator for two hours. • Slice into 5 cm squares, dust with powdered sugar and decorate with ground pistachios.
