Many types of animals and pets can be incorporated into a wedding ceremony, but the most frequent four-legged attendant is a dog. Special tuxes, suits, tutus, dresses ,etc. are all readily available online for your precious pooch so they can match the rest of the wedding party. Often used as a ring bearer, your family pet can also be a flower girl, a bridesmaid or groomsman, or escorted down the aisle as another member of the family. Remember your pet in your planning – are they scared by loud noises or music? Are they friendly and calm? Or will they howl or bark during the ceremony? Perhaps most importantly, to keep everyone and everything calm and organized, you should consider hiring a “minder” to ensure that all is well throughout the ceremony. It’s probably not fair to ask a family member or friend to take on this task, but there are

others who would happily escort your pooch down the aisle and keep a calm hand on the leash to prevent any accidents and keep your pet, and your guests, safe.

additional tips: 1. Have a backup plan just in case your pet gets stage fright. 2. Keep your pets away from the people food, especially chocolate. 3. Make sure that once the ceremony is over, your pet has a place to go. 4. Discuss your plans with your wedding coordinator, caterer, florist and officiant. 5. Paul Rutigliano shudders when he thinks back just a few decades. The founder of Key West Cakes, 1014 White St., recalls seeing slices of white wedding cake sitting untouched at every seat as guests chose dancing over dessert. Wedding cakes were frothy towers of white icing and underneath, the bland cake – also white – had as much flavor as the tablecloth beneath it. “Remember those days? It was horrible,” Rutigliano said, his Staten Island accent emphasizing the “o” in horrible. “But that was back when people had their receptions at a banquet hall, and the banquet hall made the wedding cakes.” But not anymore. “There really aren’t any rules anymore,” said Lauren Salter, wedding consultant at Key West Cakes. “But our focus is always on making the cake taste as good as it looks.”

Rutigliano launched Key West Cakes in his own kitchen in 2001, eventually moving to a production facility in New Town. In 2011, he and his business partner Steven Sassano moved into their charming – and delicious – retail storefront on White Street. “I hadn’t planned on making wedding cakes,” Rutigliano said. “I went to the Culinary Institute of America. I cooked; I didn’t bake. At least, I didn’t think I did.” Rutigliano was working as a cook in a downtown Key West resort when he was regularly asked by his bosses to bake and decorate wedding cakes for the weddings held on site. “Finally, I was doing so much wedding stuff, I figured I’d do it for myself instead of someone else,” he said, shrugging and looking around the sweet empire he and Sassano have created. Key West Cakes has been honored by The Knot wedding planning website and has won multiple awards, locally and internationally. “My first wedding cake, I was so terrified it would fall over in the car,” Rutigliano said, laughing. “It made it just fine.” But that hasn’t always been the case. “I knocked three of them over at one time in the car once,” he said, shaking his head at the chaos that ensued to repair or replace the cakes in time. “Luckily I’d been ahead of schedule, so I still got them to the reception on time.” Alex Shvalov, one of the lead cake designers at Key West Cakes, smiled knowingly and pulled up a picture on his phone. “See this cake?” he asked, showing the intricate white lace made from frosting. “This one went into the fountain at the Hemingway House before they cut it. One of the catering servers tried to move it after we had delivered it. That didn’t go well.”

Salter, who works with hundreds of brides, grooms, couples and mothers-in-law every year, said that nine out of 10 people are easygoing and so appreciative of everything the staff at Key West Cakes does to provide an unforgettable – and photo worthy – wedding cake. Although, the term “wedding cake” is no longer always accurate, as Key West Cakes often bakes, decorates and stacks towers of cupcakes into a decadent and delicious pyramid. And the all-white cake, inside and out, is no longer a requirement. Key West Cakes has designed wedding cakes to match the bride’s theme colors. “Fresh flowers in the same colors as the bride’s bouquet always look really nice when we add those to the cake,” Rutigliano said, thumbing through a photo album of astounding creations, with one cake more beautiful than the next. And of course, every handcrafted detail, every lacy swirl, is edible, Shvalov said.

A native of Ukraine, Shvalov has been designing cakes for about two years and can turn any idea into a cake. “We’ve done cakes in the shape of sailfish, cigar boxes, liquor bottles, sports teams’ mascots, you name it,” Salter said. “Sometimes couples want a colorful, non-traditional wedding cake for their reception, but often the specialty cakes are used as a groom’s cake, or for a birthday or any other celebration.” Salter typically suggests couples schedule a complimentary tasting when they’re in town planning their destination wedding. “Usually, the couple will come to town about six months in advance to meet with their vendors, visit their venue and check things out in person,” Salter said, adding that the majority of their weddings are destination weddings, meaning the couple and their guests don’t live here, “although we do plenty of local weddings, there are definitely more destination weddings.” And for people thrilled to be escaping a northern

winter, seashells, sand dollars, starfish and other beach-themed accessories are always popular as cake toppers. “Nobody does the plastic bride/groom – or groom/groom – figurines on top of their cakes anymore,” Rutigliano said. “Now they’ll go with two starfish holding hands or a couple of shells.” Naked cakes are another popular trend these days, said Shvalov. “It’s nothing naughty,” he quickly assured any clients within earshot. “It just means there’s only a very, very thin layer of frosting, so some of the cake underneath is visible.” Couples often embellish those cakes with bamboo accessories, fresh flowers or palm leaves. “It’s a bit more rustic,” Salter said. “That’s become really popular in the past year or so.” Choosing a cake flavor can be a daunting task. Couples have to narrow down their cake flavor from options that include key lime, lemon, coconut, vanilla, red velvet, chocolate, carrot, hazelnut, spice and marble. Samples of each are provided

during the couple’s scheduled tasting. Then they can choose a filling such as chocolate buttercream, Bavarian cream, coconut cream, peanut butter mousse, strawberries and cream, mango, guava or key lime mousse. Once those difficult, but delicious decisions are made, the couple can start designing the look of their cake. “Some people come in knowing exactly what they want, and we just have to make sure it’s possible,” Salter said. “Others have a vague idea, and will start thumbing through our photos, and we’ll work together to come up with something they love that tastes as good as it looks.” When the cake comes from Key West Cakes, no one skips dessert. *

Rice has traditionally been thrown at weddings as a symbol of fertility and prosperity - as the rice would grow and flourish so too would the couple’s wealth and family. The practice dates back centuries in one form or another, but is simply a way of sending the newly-wed couple on their new life with one last blessing for their future. Although rice is not generally poisonous or otherwise harmful to birds or the environment, it has fallen out of favor. Today’s couples are eschewing traditions in favor of creating new and interesting ways for their guests to participate in this classic ritual. E C O - F R I E N D LY W E D D I N G C O N F E T T I

Good news for those who want to be traditional and environmentally sensitive – wedding confetti that is biodegradable. Readily available from several sources online, the confetti is water soluble. It will dissolve with the first rain or you can simply turn a host to the area and it will dissolve immediately. Available in multiple colors, it comes in various shapes as well. BIRD SEED

Bird seed as an alternative to rise has gained favor in

recent years. It’s safe for birds and the environment, but not recommended unless used in a grassy area. BUBBLES

Blowing bubbles at the couple as they leave can be a cute send-off, especially if your guest list includes a number of children. It’s a relatively harmless way to keep them occupied and doesn’t require cleanup. S PA R K L E R S

For evening weddings, sparklers are a terrific way to form a bower for the couple to walk through. Not recommended for small children, and timing is everything, but if done well, they can lead to beautiful photos. F LO W E R P E TA L S

Biodegradable, beautiful, sweet smelling, a little expensive perhaps, but nonetheless a gorgeous send-off to the couple. Again, however, there may need to be some sweeping after they are used. FRESH HERBS

Rosemary and lavender have also been used for centuries in some cultures, along with other fresh herbs. Lavender historically symbolizes love and purity, while rosemary is a symbol of remembrance and good health. *

For those not looking for a beach backdrop, they can consider adding a little adventure into their special day by incorporating an activity they love. Underwater weddings are common, as are weddings on board one of the many delightful sailing vessels docked in the Keys. With everyone’s time at a premium these days, not every couple has the time to spend on every little detail – they’d much rather come to the Keys for a wedding vacation and enjoy their time snorkeling, fishing, sightseeing, and playing. Many resorts offer full pre-planned wedding packages, complete with professional staff, who will take care of the ceremony, the rooms, the guests, and any other need a couple might express.

Beachy Keen! Beaches offer a natural ambience for a wedding ceremony, from the sea to the sand to the sun. Every photo is picture perfect for the happy day, and fortunately, there are many options for happy couples. In Key West, there are several public beaches, including Smathers Beach, the public park at Fort Zachary Taylor, and Higgs Beach. Other popular public beaches in the middle and upper Keys include Bahia Honda, John Pennekamp State Park, and Long Key State Park. Each offers its own unique view of the water and areas can be reserved easily through a wedding coordinator, as can any of the private beaches attached to the many resorts. There are some important tips to remember to carry off a successful beach wedding, including making sure your guests know so they can dress appropriately, consider a simpler gown with no veil, and watch the weather forecast just in case!

Your Adventure Awaits! For the more adventurous couple, the Keys are the place to come! You can get married on an historic sailing vessel or venue, scuba dive down to the Christ of the Abyss underwater statue off Key Largo, or incorporate anything from butterflies to dolphins in your ceremony. In the lower Keys, locations include the Key West Tropical Forest & Botanical Garden, the Key West Butterfly & Nature Conservancy, the Civil War era forts of East or West Martello, Fort Zachary Taylor or Fort Jefferson in the Dry Tortugas. Would you like an underwater wedding? Consider heading to John Pennekamp State Park area in Key Largo for the many diving venues, including the 9-foot tall Christ of the Abyss statue in the Marine Sanctuary. Those who want to marry on the water have choices in any marina up and down the Keys. THE 2017 TRENDS FROM BRIDAL FASHION WEEK

T

oday’s bride has more than ever when choosing a gown. Although many brides still prefer to wear white, there are many shades of white to choose from, and blush colors as well as pink hues have risen in popularity. For brides coming to the Keys to say their vows, depending on the type of ceremony chosen, everything from a crop top, twopiece wedding ensemble to a simple silk sheath is chic and appropriate for a beach or outdoor venue, while those choosing one of the resort areas for their ceremony can go a bit more traditional, with ball gowns and trains. The hottest decorative elements this season include feathers, bows, florals, and lace with back-and-shoulder baring styles very popular. Today’s grooms have more choices than ever- especially in the Keys. Traditional tuxes are of course still very fashionable, and grooms can add their own style with colored ties and pocket squares, varying the color of the jacket and pants, or even having one custom made. Tuxes need not be black anymore either – slate and charcoal gray are “in” as are dark blue and white coats. And of course, for an outdoor wedding, many grooms prefer to go the very non-traditional route, with a more relaxed linen trouser and shirt, a colorful shirt with white slacks, or a traditional look with white and beige shades for the shirt and pants. You even see a number of grooms with hats for their sunny outdoor ceremony, and bare feet is not taboo on a beach! Once you have picked the perfect wedding gown, it’s time to consider what goes underneath. You want to be comfortable yet sexy, supportive yet sleek as you march down the aisle, smile for wedding photos and dance the night away with your betrothed. Today’s trendy wedding gowns tend to show more skin, making selection of undergarments even more critical. While A-line and ball gowns can be forgiving, increasingly popular strapless, halter, backless and lowback dresses require greater care in selecting intimate apparel. Mermaid, trumpet and sheath dresses necessitate seamless undergarments and, possibly, shapewear to ensure a smooth look.

Convertible bras accommodate a variety of wedding gown styles, while bustiers and corsets offer more support when the bodice of the dress allows for them. With more revealing designs, brides may choose to go braless, wear pasties or try an adhesive bra with cups that stick at the sides. The large skirt of a princess-style ball gown affords great flexibility in underwear. Boy shorts, full coverage panties and sexy thongs all work. What to wear on your wedding night depends primarily on personality – yours and your mate’s. Will it be a deep-plunged nightgown, lace-fringed baby doll or a playful, peek-a-boo teddy? Most brides still opt for traditional white and elegant ivory in wedding-night lingerie. Pink and rose add enticing shades while classic black remains the sassy option. Silk bows and pearl buttons accent delicate laces, sheer fabrics and flowing styles. Compared to revealing G-strings, high-waisted panties lend a vintage air as a tantalizing concealment. A chiffon robe, that fits like a men’s dress shirt, presents a simple, yet sensual cover-up. Options abound for making that first impression on your wedding night.

A marriage license is required for your marriage to be legally recognized. In Monroe County, the Clerk of Circuit Court is the issuing agent of marriage licenses for the State of Florida. You can register for a marriage license during regular business hours at the courthouse in Key West, Marathon or Plantation Key. Regulations vary from state to state. In Florida, applicants must be 18 years old to obtain a marriage license. Younger applicants require parental consent, and in certain instances, the consent of a county judge. No matter what your age, both applicants must appear in person when applying for a marriage license. A picturetype ID, including date of birth, is required. If either party has been previously married, the exact date of the death, divorce or annulment must be provided. Bring a copy of your divorce decree with you at the time of application. The state of Florida began to recognize same-sex marriages early last year, and in June 2015, the U.S. Supreme Court assured federal recognition of same-sex marriage throughout the country. The process of completing marriage license paperwork takes about 15 minutes. There is no waiting period for out-of-state residents, or for Florida residents who provide proof of completing an approved premarital

class. A marriage license costs $93.50 – and there is a discount for Florida residents, who provide proof of completing a premarital class ($61.00). A marriage license must be used within 60 days. Authorized staff in the Clerk’s office are happy to solemnize your marriage (perform a brief wedding ceremony) on the spot – for an additional $30.00. There is a small ‘counseling room’ in Key West, where marriages can be performed if the celebrants prefer privacy to the hustle and bustle of the Clerk’s front counter. There is often a surge in marriage license applications during festival weeks in the Florida Keys. You may encounter a bride and groom in biker leather in the Clerk’s office during Poker Run. During Fantasy Fest, costumed weddings become more common.
