Taking the plunge — literally
To commemorate his New Year’s Eve wedding to Sarah Hodges, Eddy Labin and friends started the day with a plunge into an icy lake By Vicki Gerdes When most soon-to-be-married couples talk about “taking the plunge” into married life, they’re speaking metaphorically. But when Eddy Labin and Sarah Hodges began planning their New Year’s Eve wedding, Eddy decided to kick it up a notch and take a literal plunge into a freezing cold Minnesota lake. “I was looking for a way to really lean into the winter in Minnesota and take advantage of everything that we 4 | YOUR PERFECT WEDDING 2023
can do here,” Eddy said. So on the morning of Dec. 31, 2022, he and a bunch of friends and wedding guests punched a hole into the ice of a small private lake just outside Minneapolis, then jumped in — but not without doing their research first. “I had heard about this Dutch extreme athlete, Wim Hof, that was doing this (i.e., jumping into freezing cold water) all the time and reporting all of these incredible health benefits,” he said. “So I thought, ‘wow.’ And I
wanted to know if anybody was doing it around here.” His research led him to two Minnesota-based groups, the Night Water Butterflies and Twin Cities Cold Thermogenesis, who both helped him plan the event. He also consulted with Detroit Lakes’ own Gary Thompson, the owner-proprietor of Tri-State Diving, who has assisted with “polar plunges” of varying size and scope all over the region.
“He gave me some great tips,” Labin said of Thompson. When asked if his assistance had ever been requested for a “wedding plunge” like Labin’s, Thompson said it was a first for him. “We had a good conversation,” Thompson said, adding that Labin “listened to what I had to say, and set it up so it was safe.” Ensuring a “safe plunge” is more difficult than most people might realize, Thompson said. “He (Labin) had no clue how to do it, so I went through the procedure with him.” Some of the main precautions, he added, include making sure the hole is only about four feet deep, and there’s a ladder for people to get out that doesn’t have any metal on it — so their wet skin won’t stick to it as they climb out, Thompson said. In addition, those taking the plunge should always “pre-heat” in a sauna or similar place, “so you don’t get that shock factor,” Thompson said, adding that part of his job in overseeing events like Detroit Lakes’ Polar Fest Plunge is “making sure everybody is healthy and being careful.” Thompson and his Tri-State Diving crew will be back on the ice of Little Detroit Lake for the 27th Annual Polar Fest Plunge, which takes place on Feb. 25 this year. Though Labin was able to persuade about a dozen of his friends and family to take the plunge with him, his fiancee was not among them. “We’ve been together a long time,” said Sarah, “and Eddy has a lot of passion projects; this was just another one of those. I’m just glad I didn’t have to be involved in it.” Sarah was very much involved in the wedding ceremony that followed the plunge, however. The couple chose to be married at The Depot Minneapolis (thedepotminneapolis.com), which is just a short walk away from their apartment. “We’ve lived in Minneapolis for a long time, and we’re excited that we get to share the city we love with our friends,” she said a few days before the event. They chose New Year’s Eve for the event because, Sarah added, “We’ve always loved New Year’s Eve and getting together to celebrate it has always been very special for us.” “And it had this symbolic kind of aspect,” Eddy added, noting, “It’s a transition between years (2022 and 2023) and between being single and married.” The traditional Jewish ceremony (Eddy is Jewish, though Sarah is not) was everything the couple could have wished for, and more. “Eddy’s sister was the officiant — along with a rabbi — and we wrote our own vows, so the whole ceremony felt deeply personal and intimate,” Sarah said. 6 | YOUR PERFECT WEDDING 2023
“We asked several family members and close friends to do readings during the ceremony that were very personal to us, and it ended up being a really beautiful way of honoring those who love us most,” Eddy added. Their dog, Hank, even served as the ring-bearer. “He was a very good boy,” Eddy said. “We’ve been together for a really long time, but it still feels like we did something important,” said Sarah and Eddy, speaking together via an emailed response to the question, “How does it feel to be newlyweds? “Engaging in perhaps the oldest human tradition while declaring our love for each other in front of friends and family is pretty special,” they added. After the ceremony, their parents, Sarah’s three co-maids of honor, and Eddy’s brother/best man “gave very funny and heartfelt speeches,” Sarah said. “We then had a live band and counted down to the new year with all of our closest friends and family. It felt like a dream.” After ringing in the year 2023 with their family and friends, the newlyweds “escaped the cold and snowstorms” by jetting off to the island of St. John (in the U.S. Virgin Islands) for their honeymoon — which “was pretty much the opposite of a polar plunge,” Eddy joked. Now that they’re married, the couple plans to continue making Minneapolis their home. “We’re actively setting down roots,” Sarah said, adding that she went the traditional route of taking her husband’s name, because, “We are
planning on starting a family, and we want our family unit to be as cohesive as possible.” Sarah, an educational psychologist at Lucy Craft Laney elementary school (“the same one featured in the ‘Love Them First’ documentary,” she said), and Eddy, a neurologist at Hennepin County Medical Center, have been together for about seven years. They met through the online dating service OK Cupid. The COVID-19 pandemic hit during their first year of officially living together. “It was very interesting to figure out our work schedules in a virtual environment,” Sarah said. “Then Eddy moved to California, in June 2020.” Sarah was able to join him there, because the school where she worked used distance learning for most of that school year. “It was nice to be someplace warm,” said Sarah, noting that they spent the year in San Diego. “You can’t really beat the views.” It wasn’t long before they both found themselves missing Minnesota, however — and marriage plans began not too long after they moved back to the Twin Cities.
“COVID kind of sealed the deal for us,” said Eddy, adding that they both realized, “If we can get along when we’re the only people that we talk to during the day, then I think we can make it as a married couple.”

Historic Holmes Theatre ballroom transformed into premiere wedding venue By Barbie Porter
The lakes area has many venues to make a memorable day unique. The Historic Holmes Theatre ballroom and theatre have always been on the short list. After completing renovations two years in the making, the venue may have entered frontrunner status. Staff, board members and event hosts met with an architect to reinvision the ballroom and several areas that go along with the rental. Grace Davidson-Thooft, operations manager, said the group’s first task was to create a memorable first impression by installing a grand staircase at the main entrance. “The staircase has become a focal point for wedding photographers,” she said, adding the facility also has an elevator. The stairs lead to the upstairs where the newly named Midwest Bank Ballroom is located. Peter Jacobson, chief executive officer at the Holmes Theatre, explained the old ballroom was once a gym with cement bleachers built into the ground on the 8 | YOUR PERFECT WEDDING 2023
lower level. Removing the bleachers was an extensive process. When the dust cleared and original wood floors were refurbished, a 5,700-square-foot ballroom emerged. To further change the aesthetics of the space, it was painted and acoustic panels were intermittently installed along with dimmable decorative lighting. “We also added a state-of-the-art projector and sound system,” Jacobson said. While the renovated ballroom and its perks are enticing to some nuptials, Davidson-Thooft explained the option to design a floor plan is a big draw. “We have floor plan examples, so they can see how it would look, but they can design it to whatever fits their needs,” she said, adding the space can easily fit seating for 400 people and still have a dance floor. The ballroom rental comes with tables, chairs, linens and a two-tier stage area that is often used for the bridal party. “Our goal is to offer a special and
unique experience for those using the space,” Jacboson said. “One of our wow factors is our versatility.” Receptions require food, and comments from caterers were taken to heart during the renovation process. The new kitchen space includes a prep area, commercial refrigerator, mobile warming cart, ice bin, prep table and commercial dishwasher. There is also a seperate entrance into the ballroom for servers. “Before, they had to load the dishes and bring them downstairs,” Jacobson explained. Those touring the Midwest Bank Ballroom will learn there are many more spaces that come with the rental package, including a meeting room and lounge area. “The meeting room area can be opened up and has been used as a kids’ play area,” Davidson-Thooft said. “Others have used it as a dressing room.” The open space near the meeting room is the newly renovated Foltz Trucking
Lounge. Davidson-Thooft said the location is used as a bar and offers some seating. The theater is a separate rental option. Davidson-Thooft pointed out the theater entrance is across the hall from the ballroom, making the area a prime location for both the big event and the party afterwards. She explained the stadium seating chairs are split by red carpet for the bridal party to walk down and onto the stage. In addition to the venue, Davidson-Thooft said the theater rental includes use of the backstage room, where the stars prepare for a show, and an in-house technician to operate the lights and sound. “We also provide a rehersal before the wedding,” she said. Plan Ahead ENGAGEMENT Announce engagement. Engagement photo. This can be used with engagement or wedding announcement for your local newspaper. Set the date and choose a location for the wedding. Create a budget. Choose attendants. Start shopping for your gown and bridesmaids' dresses. If you wish to, hire a wedding coordinator. 6 TO 9 MONTHS Start compiling a list of guests. Ask your mother and the groom's mother to do the same. Book the photographer, band/D.J., caterers, florist, videographer, caterer, etc. Begin a list of favorite music and requested songs to give to the band or D.J. Choose an officient. Go with the groom to a formalwear store or tailor. After the groom's attire has been chosen, the ushers and groomsmen should go in and get fitted as soon as possible. 4 TO 6 MONTHS Order invitations, napkins, programs and anything else that requires a certain amount of time for printing. Choose your wedding bands. The mother of the bride should shop for her dress. When she has chosen what to wear the groom's mother should do the same. Discuss whether you should reserve hotel rooms for out-of-town guests with your parents. Set a time for the wedding rehearsal. Plan rehearsal dinner. Plan honeymoon. If traveling, meet with a travel agent. Book accomodations for wedding-night. 2 TO 4 MONTHS Finish up with alterations and try it on with all of the accessories to make sure everything looks good. Book a final fitting and start breaking in your shoes. Final alterations on bridesmaids' dresses. Confirm contracts with florist, photographer, D.J., caterer, videographer, etc. Make sure all is in order. Set up appointments for hair, manicure, make-up. It might be a good idea to set up a pre-wedding appointment to make sure you are satisfied with the style and it works with the dress.

Shop for bridesmaids' gifts and groomsmen's gifts. Register for wedding gifts. Start addressing invitations. Ensure proper postage by bringing one to the post office and have it weighed. Take a day off from all the wedding planning to pamper yourself. This is a day just for you to relax, have a massage, take a day off of work. 6 TO 8 MONTHS Mail invitations. Go over rehearsal dinner details and finalize them. Confirm reservations at hotels for out-of-town guests and also your reservations for your wedding-night. Confirm travel plans for your honeymoon. Ask the Maid of Honor and your attendants for help with small tasks. Pick up wedding rings. Have your gown pressed and make arrangements for pick-up date and time. Marriage license. 3 TO 6 MONTHS Plan seating arrangements. Start packing for the honeymoon. Meet with the D.J./Band and go over any special music requests. Meet with the coordinator at the reception site to go over all details, such as the time when the cake and flowers can be delivered and where on the day of the wedding. Set up time for pictures with the photographer. Make sure all parties who need to be there know this information ahead of time ... don't forget to tell grandma and grandpa, brothers and sisters in case you are having family pictures at this time. Check over all contracts thoroughly. When they need to be paid and if all requirements are met. Take some time for the two of you ... it's good to get away from all the stress of planning for awhile. 2 WEEKS Call the newspaper for information on placing a wedding announcement in the paper. Take care of life insurance beneficiary, health insurance plans that best suit both of you. If you are changing your name contact the DMV, bank, credit cards and Social Security. If possible, start writing checks for those needing to be paid. The officient, photographer, videographer, DJ/band, etc.
Assign some friends or family to be responsible for getting gifts to reception and transporting them at the end of the evening. 1 WEEK Contact the caterer with the final guest count. Take care of any last minute details with florist, musicians, etc. Write a note to your parents and his parents for their love and support. Put together a bag of everything you will need for the wedding day. Things to include... jewelry, extra pair of pantyhose, aspirin, bobby pins, safety pins, mints, undergarments. And don't forget something old, new, borrowed and blue! 3 DAYS Talk to the head usher about special seating arrangements or guests with special needs. Don't forget the marriage license. You may want to give it to the Maid of Honor or Best Man to bring to the ceremony. Notify attendants and parents on when they should arrive at the rehearsal. Give bridesmaids and groomsmen their gifts at the rehearsal dinner. Get plenty of rest and eat right and drink your water. THE WEDDING DAY Eat a sensible breakfast. Give the maid of honor the groom's ring. Drink plenty of water. Get your hair and make-up done. Don't forget your "everything you need" bag. Get to the location on time. Relax and enjoy your day!
