Preface Like most things Verden did throughout her life, she was able to master it with little ease. Like she said many times, "there is an art to doing anything." Cooking was one of her passions and making any dish tasty was her art. The ability to guesstimate the quantities of all the ingredients in a recipe with a dash, pinch, shake and even an imaginary scale is the basis for this recipe book. 1 GROUNDNUT SUGAR CAKE RECIPE .C
INGREDIENTS: 1 lb Unsalted Roasted Peanuts 2 oz fresh Ginger 1 lb Brown Sugar 1 cup Water DIRECTIONS: Boil water, ginger and sugar stirring periodically. Reduce and test check mixture. Mixture is ready when it is threadlike if dropped from a spoon. Once it is ready, add nuts and mix together. Drop to desired size.

2 COCONUT TART (FILING) .C
INGREDIENTS: 1 freshly grated Coconut ¾ lb Brown Sugar Grated Lime Peel Grated Fresh Ginger Essence of Vanilla ½ tsp Salt DIRECTIONS: Mix all ingredients together and set aside. Use this filing in a homemade dough to create coconut tart. Place filling in the dough. Fold dough over filing. Pinch close. Use a fork to decorate the edge.

3 HOMEMADE BREAD/BAKES INGREDIENTS: Flour, Yeast, Sugar, Salt, Shortening DIRECTIONS: Add yeast to warm water and ½ tsp sugar and set to rise. Combine flour, shortening and salt in the yeast mixture. Add water and mix well to form a soft dough. Set dough aside for approximately 30 minutes. Knead dough then set aside again for approximately 20 minutes. Form loaves (decorate if desired using the fork). Bake on 350° for approx. 45 minutes.

4 BUNS (SWEET BREAD) INGREDIENTS: 2 ½ lb Flour 1 lb Brown Sugar 2 tbsp Baking Powder 1 tsp Cinnamon 1/3 Grated Lime Peel 1 stick Butter ½ can Evaporated Milk Vanilla Extract ½ tsp Salt 2 tbsp Vegetable Oil 1 Egg Grated Ginger (for taste) Grated Nutmeg (for taste) YIELDS: 6 balls

DIRECTIONS: Mix all ingredients together adding water as needed. Shape into balls. Score the top of each ball. Place on greased baking sheet. Bake at 350° until golden brown.

5 BANANA BREAD INGREDIENTS: 1 stick Butter ¾ cup Sugar 2 Eggs 1 cup All Purpose Flour 1 tsp Baking Soda 1 cup Whole Wheat Flour 3 large Bananas Mashed 1 tsp Vanilla Extract ½ cup coarsely chopped Walnuts ½ tsp Salt YIELDS: 1 loaf

DIRECTIONS: Preheat oven to 350°. Grease loaf pan. Cream butter and sugar until light and fluffy. Add eggs one at a time beating well after each addition. Sift flour, baking soda and salt together. Stir in whole wheat flour and add to creamed mixture mixing well. Fold in bananas, vanilla and walnuts. Pour mixture into greased pan. Bake for 50-60 minutes.

6 SWEET POTATO PUDDING INGREDIENTS: 1 freshly Grated Coconut 2 tbsp Flour Butter Grated Sweet Potato Brown Sugar Ginger Lime Peel Cinnamon Salt Vanilla Extract Tania Black Pepper Evaporated Milk Ground Nutmeg

DIRECTIONS: Mix all ingredients together. Do a taste test for preference of spices and sweetness. Grease pans with oil. Pour batter into oiled pans adding ½ tsp butter on top of each. Bake in oven at 350° until done (the liquid will be reduced and the sides will be cooked to a dark brown color).

7 BLACK CAKE
(CARIBBEAN FRUIT CAKE)
INGREDIENTS: 1 ½ lbs each Currants, Raisins and Prunes 8 oz Mixed Peel 8 oz Cherries 3 sticks Unsalted Butter 3 sticks margarine 1 dozen Eggs 1 lb Brown Sugar 1 lb Cake Flour 2 tbsp Baking Powder 2 tbsp Cinnamon 1 Grapefruit 2 tbsp Molasses Grated Nutmeg (for taste)

DIRECTIONS: Grind all fruits except cherries and place in container with wine, whiskey or strong rum. Cream butter and sugar until smooth. Add fruits and mix in all spices, grapefruit juice, wines, and vanilla. (Can be done in an electric mixer). Pour mixture into large bowl. Stir in cherries and flour. Cream eggs with lime peel. Fold egg mixture into batter by hand. Add baking powder and molasses. Grease and flour baking pans. Pour mixture into pans. Bake at 350° for approx. 1½ hours (test for readiness by inserting toothpick). Red wine can be poured over cooked cake while still in pans. Cool then wrap and store.

8 SEMI-FRUIT CAKE INGREDIENTS: 1 lb Butter 1 lb Sugar 1 1/4 lbs Flour 1 cup Ground Fruits 1 tbsp Vanilla Extract 1 tbsp Cinnamon ¼ tsp Ground Nutmeg 8 Eggs 1 tbsp Baking Powder YIELDS: 2 using a 9" pans

DIRECTIONS: Cream butter and sugar until smooth. Add fruits and spices. Slowly fold in flour and eggs alternating. Pour mixture into greased and floured pans. Bake at 350° until done; Keep the oven door closed until you can see the cake leaving the sides of the pan (test for readiness by inserting toothpick).

9 PLAIN CAKE (CARIBBEAN CAKE)
DIRECTIONS: Make as semi fruit cake omitting fruits. The juice of ½ lemon or orange can be substituted for vanilla extract.

10 PUNCH-A-CREMA INGREDIENTS: 3 cans Sweetened Condensed Milk 3 cans Evaporated Milk 2 Lime Peels Grated Nutmeg 12 Eggs YIELDS: 3 bottles DIRECTIONS: Mix milk in large pot. Add lime peel. Blend eggs until foamy. Combine egg mixture with milk . Add ½ tsp nutmeg and stir.

11 ROTI DOUGH INGREDIENTS: Dough 1 lb Flour 2 tbsp Shortening ½ pk. dry Yeast 1 tsp Salt Peas Filling ½ lb Yellow Split Peas Cumin All Spices YIELDS: 1 lb of flour = 8 roti

DIRECTIONS: Make Peas Filling ½ lb yellow split peas cooked firm. Ground and seasoned with peas with cumin and all spices. Set aside. Make Dough Mix all the ingrediants to make a very soft dough (not sticky). Let it rest then section out to 8 balls. Make Roti Stuff the balls with peas filing and leave to rest. Roll out the balls to create a large circle. Cook with oil on both sides on a hot griddle.

12 SALTED COD FISH CAKES INGREDIENTS: Salted Cod Fish Grated Onion Fresh Thyme Pepper ½ tsp Sugar Mayonnaise (or substitute with 1 Egg) Oil Flour

DIRECTIONS: Boil salted cod fish. Shred the cod fish. Add grated onion, fresh thyme, pepper, ½ tsp sugar, mayonnaise, oil and flour. Mix to form fairly loose batter (do the spoon test to verify that batter is the right consistency). Heat oil in pan. Drop a spoonful of batter into the pan. Fry the batter turning once until golden brown.

INGREDIENTS: 1 Grated Coconut 1 Peeled Onion Curry Powder Garlic Black Pepper Season All Thyme Green Onions Sazon (goya product con azatran – ½ pack) 1 fresh Breadfruit Plantain Green Banana Dumplings Callalloo Grated Coconut

INGREDIENTS (cont.): Choice of Meats (chicken, pig tail, etc.) All seasoning Sugar Tumeric (saffron) if available DIRECTIONS: Add a couple tsp Sugar. Extract milk from grated coconut. Add all seasonings to milk liquid. Place breadfruit around the bottom of iron pot. Add all other items including meat to the middle. Place callalloo at top. Cover with aluminum foil. Boil until all liquid is gone.

14 SOURDOUGH PANCAKE (ALLY IN TORONTO)
INGREDIENTS: 3 Eggs 1 cup All Purpose Flour 2/3 cup Plain Yogurt 1 cup Milk 2 tsp Granulated Sugar 1 tsp Salt 2 tsp Baking Powder 4 tbsp Melted Butter YIELDS: Makes enough for 4 servings DIRECTIONS: Beat eggs. Add flour, yogurt and milk. Beat until smooth then add remaining ingredients. Allow to stand for approx. 10 minutes.

INGREDIENTS: 6 cups Flour 1½ cups Sugar 2 sticks Butter 6 tsp Baking Powder 1 tbsp Ground Cinnamon Grated Rind of 1 Lime ½ tsp Grated Nutmeg 4 Eggs Raisins Cherries Dash of Angostura Bitters Milk

DIRECTIONS: Cut butter into flour and sugar. Beat eggs adding a little milk and remaining ingredients. Sprinkle sugar on top. Place in loaf pans. Bake at 350° until golden.
