Young and brave entrepreneurs in gastronomy with something to say Croatia can do it and it desperately needs it! Our tourism is becoming better in quality, and truly there are many wonderful examples of serious and sincere entrepreneurship as part of it. These include smaller entities, but also corporate investments that are well and properly managed. Gastronomy is the second most important tourist motivator, and it should be taken more seriously. I sincerely believe that in the future, this country will be a modern and just country of happy people.

Boškinac is more than just a hotel, food and wine, Boškinac is a story embraced in Pag's magic. You put it together nicely on your official website, but what is that makes Boškinac really special and unique? Boškinac is a reflex of dedication to the island and an imprint of our desire for excellence. People who work and create there, their energies and passion for the job, which constantly takes them towards new challenges, are what makes Boškinac special and unique. Maybe we are also different because we never give up in the constant desire to improve and mend, innovate, find better and more exciting solutions. The tradition of the Šuljiæ Boškinac family is based on winemaking. When did the idea for a boutique hotel, restaurant, and the entire story that has lasted for 20 years arise? My family has always been involved in winemaking and farming. From an early age, I was surrounded by the scents of taverns and wine, which later formed me as a young entrepreneur. The hotel, winery, and restaurant are reflection of my and my wife Mirela's wish to engage in this business on a higher level, calmly and with quality. The idea itself has fermented for some time, to express myself in an oenological way, and it matured in 2000. Then we started the project of planting vineyards, and building a hotel and winery. 21

You have recently received your first Michelin star. It's a big deal. How did you experience it personally, and then your team led by chef Matija Bregeš? We were truly pleased with the news. It is a great recognition for our work and persistence in nurturing high standards in gastronomy. I received the news when I was in the middle of a business meeting in Zadar, which ended a little earlier than planned. Matija was full of joy upon my return to Boškinac. Since the restaurant was open for business, there wasn't much time to celebrate. We opened a champagne and continued with work. The entire team is extremely proud. It really is a great international recognition. Moreover, we are aware that it was not easy to achieve it under the island's conditions, with poor logistics and infrastructure in high gastronomy and with a difficult access to the higher category of the labor market.


In the last few years, Croatian restaurants have shown that they belong among the best, precisely by getting awarded Michelin stars or recommendations for them. Do you think that the Croatian gastro tourism should head in that direction? Do we have enough knowledge and courage? I don't think all restaurants have to belong to this class, nor that it is the only possible and correct path. On the contrary, a real gastro scene or gastro destination must consist of different styles and concepts. What is perhaps most important, and where we may not be good enough and not courageous enough, is honesty and excellence in cooking at all levels. Personally, I equally appreciate any true cooking in a tavern, bistro, seafood restaurant, or fine dining. It is always recognized when something is truly cooked and presented, and when there are no tourist traps, so to speak, that our coast unfortunately abounds with. There is a lot of room for improvement for new generations of brave young entrepreneurs with something to say and show in all styles of gastronomy.

gastronomy. Croatia can do it and it desperately needs it! Gastronomy is the second most important tourist motivator and this should be taken more seriously. In April, BoĹĄkinac changed its menu. Until now, the menu included, for example, BuĹĄa cow from Lika, but now you have opted for ingredients exclusively from Pag. How long does it take in a top restaurant like yours to develop new dishes? We change the menu every year. Sometimes there are minor changes, and sometimes we change everything, as we did this year. Pag is a complete micro-location source for all the main ingredients on our menu. That is our obligation and mission. We understand and respect the obligation to encourage others as well, so that they can dedicate themselves to the ingredients we are surrounded by with more courage. It takes us about two months to create a completely new menu. We start with conceptual sketches and ingredients, followed by the ideas for the dish designed by Matija. Next comes cooking and working in the kitchen, and at the very end a dish design and fine tuning occur including a few of us from the closest team. Corrections and combining of the tiniest details take place in each of these phases.


You have proved that you are a visionary and that Croatian tourism can be far more than just mass tourism. Can you predict what awaits Croatia in the future when it comes to tourism, and what we must or musn't do in order to continue to be recognized as a desirable destination? I will correct you, I am not a visionary, I do not have that power. But an entrepreneurial turmoil within me is constantly trying to pave new paths. I have my own character that I am trying to cope with and that I accept more or less successfully. I've always wanted to fix things, that's my way of changing. I am not a revolutionary, but more a reconstructor. I have made many mistakes in the last thirty years, and what is even worse, a man tends to repeat those same mistakes. Still, as an entrepreneur I am ultimately an optimist. Although I will not experience it, one day a modern, just, and rich country of happy people will be here.

The boutique hotel BoĹĄkinac also looks authentic from Pag - stone, wooden shutters, horticulture adorned with Mediterranean vegetation and plants. As far the architecture and interior design go, have you stayed true to tradition here as well? Yes, in architectural terms we have remained faithful to the traditional materials and proportions determined by the Mediterranean and the measure that has shaped it throughout history as the cradle of civilization. However, it is important not to exaggerate with it, like with anything else. I would like to emphasize how important it also is to leave a trace of the time in which something is created. We tried not to fall into the ethno trap with the interior design, so the entire interior is modern, but subtle in a Mediterranean way. This is one fine measure of Mediterranean warmth and harmony. That was our goal, and I hope we achieved it.

Guests at the Michelin-starred hotel and restaurant expect only the best. How big of a professional and emotional pressure is it, and how do you deal with it all together? We have never been deprived of high expectations, nor do we ask for it. In fact, BoĹĄkinac and its team set high standards for themselves. I have to point out that we have never felt that kind of pressure because of recognition or awards. We feel a great responsibility due to the expectations of our dear guests and their desire for an unforgettable experience which brings them to BoĹĄkinac. It is our everyday life and our life. In this business one has to have passion, toughness, and a strong character. Dedication and passion that drive you into something like this must take you to some goals. The more realistic they are, easier it will be to deal with possible failures. On the other hand, these goals alone cannot be a fuel for great achievements, because without passion and dedication in difficult moments you will not have anything to reach for and to keep you from superficiality and hitting the bottom, from devaluation and fall.

Our tourism is becoming better in quality, and it truly has many wonderful examples of serious and sincere entrepreneurship as part of it. These include smaller entities, but also corporate investments that are well and properly managed. What is disturbing is the destruction of nature, poor spatial planning, corruption and clientelism that sponsor all this. These are our brakes. More markets and less regulations with zero tolerance for corruption and clientelism would quickly revive this country and restore optimism in citizens. I am confident that it will come sooner or later. It also depends on the citizens' awareness to oppose all the bad phenomena that burden our society.

A grandiose building, for many architects too much to handle, was even a bigger challenge for the artist Saša Ivanoviæ, who completed the amazing Diamond Villa on Korèula. This is a story of Rudi Petrinac's vision, who granted the Croatian coast a phenomenal luxury villa for the richest people. For those who do not hesitate to order a private helicopter, order a bottle of 50,000 kunas, or feed a dog -with a lobster.

Magical, fantastic, amazing… continue the series. The Diamond Villa is everything but an ordinary villa. It is one of the most luxurious villas on the Adriatic in general. We asked the owner Rudi Petrinac: how did the idea for such a luxury property come about, where did you draw inspiration from, and how long did it take from an idea to its realization? To begin with, thank you for your kind words. The idea has come about gradually, more precisely step by step. My better half and I visited a lot of destinations and before we engaged in such a challenging project, we studied, absorbed, researched, monitored what other world-famous holiday destinations, especially hotels and villas were

doing, and with all this knowledge decided to take upon this project. Since its completion, at the beginning of the summer of 2019, it has not ceased to provoke reactions from the media and the public, both domestically and abroad. We are where we are thanks to investing in ourselves and daring to be different and better. Realistically, the Diamond Villa could have been just another in a row of luxury vacation homes without standing out from the crowd in any way. I don't think that is bad, but in the long run we didn't see a challenge in a story like that. Precisely because we dared to "think out of the box," we managed to get the property that we are proud to present today.


The Diamond is truly an architectural marvel, one you would not be ashamed of even in the Hollywood Hills. It is known that a famous academic artist Saša Ivanoviæ is responsible for the architecture. How was your cooperation, and why didn't you, for example, opt for a "coastal" version of the villa that includes the well-known Dalmatian stone?

We love the traditional Dalmatian architecture, but so far we have not really seen a single project where a new building has managed to copy the charm and atmosphere of the centuriesold buildings. In my opinion, new stone beauties cannot and should not compete with the old stone constructions. That's why I decided to build an original.

The Diamond Villa's appearance is ultimately a credit of the whole team of people. Initially, we gave our trust to a young architect who had not designed any buildings until then, but had the patience to spend hours and hours with me in drawing and designing. And yes, unlike myself as a co-author of the project, he had a seal. We all know how important the seal is in our country. Saša Ivanoviæ is not an architect, but he is an exceptional artist and one of the most talented creatives with whom I have had an opportunity to collaborate with on the previous projects. Unfortunately, he only joined the project in its final phase when many designers got scared of the size of the project and simply stopped responding. The Diamond Villa was already "in concrete" in that stage, and Saša gave it the final character-this impressive polygonal facade that completely defined Villa Diamond. Just when it was finished and went viral (photos were shared on different accounts with a total of more than 230 million followers worldwide), all designers started to reappear, claiming that they were the authors, trying to grab some media attention.

Considering the exterior which is really amazing, what kind of interior is conceived in the Diamond Villa and how is it done? I was guided by the idea of a maximum use of space, so there are no hallways in the entire building. The ground floor of the Diamond Villa can function as a separate unit with an open space living room and kitchen, two spacious bedrooms with a bathroom, a separate guest toilet and a wine cellar. The second floor is also designed as an open space, with a living room and kitchen, three bedrooms with bathrooms and an additional guest toilet. From each room, you can see the Peljesac Peninsula through large glass walls built from the floor to the ceiling. Designing of the interior also carries an interesting story because we decided to leave ourselves in the hands of an interior designer and give him our complete trust. In this case, we quickly realized how things worked, and after one of our ideas was not accepted, the fiancée and I took matters into our own hands and became the main creators of the interior.


Apart from its unique architecture, the villa is adorned with not one, but even two infinity pools? In the world of luxury editions, this is something completely normal. Guests who are willing to pay for high class services and accommodation must have absolutely everything. Having an infinity pool nowadays is something like having a bedroom. You just can't afford not to have it. As I pointed out, the most important and basic condition of the project task was to provide absolute intimacy to the guests in both units, even though the facility is rented in its entirety. Just like you mentioned, specificity of the Diamond Villa is in the fact that people can stay there without being seen at all, which raises the level of privacy to a new level. That's right. I personally like to travel in company, but I still like to have time for myself. This configuration of the space in the Diamond Villa offers a possibility to accommodate, for example, different generations of one family who can spend time together, but at the same time have privacy.

The Villa Diamond was created for a clientele that has a specific lifestyle. What is at their disposal and have you faced impossible demands in the Hollywood stars style? I think we are one of the few facilities in general that offers guests a 24/7 concierge service. We are able to hire from private chefs with knowledge of traditional cuisine, all the way to experts with experience from the overseas restaurants rewarded by Michelin's stars. It is not uncommon for our guests to request a booking of yachts, helicopters or private flights. Our rule is that impossible requirements do not exist. So far, we've been lucky that most demands were within the boundaries of common sense and included things that these guests were mostly used to. Although we are bound by the strict contracts, we can tell you a a little secret that there were demands for bottles of up to 50,000 kunas, as well as guests who wanted to treat their pets with a lobster. Said- done!



DIAMOND VILLA LUXURY RESIDENCES


There is a famous saying, luxury will always find its buyers. What would you say to anyone looking to invest in a luxury real estate, either as an investor or as a buyer? The most important thing is that investors first get acquainted with the trends and the market. I would not advise locally, and I would not advise architects who do not have specific references. Give your trust to the companies that work globally and that know exactly how things work. Sometimes (good) desire is not enough. That's why there are people with experience. Learn from my example. In the end, in your opinion, what must Croatia do more of to be able to compete with other Mediterranean countries in terms of luxury offer, accommodation, gastronomy or other external offers? Honestly, and in short - to change the entire mindset which is now present at their disposal. Although excellent tourism products can be found, they are regularly the product of individual entrepreneurs and caterers, by no means a master plan or a coordinated strategy. Croatia, as a destination, is not ready at all for the richest clientele, and is also very far, far from it.
