Dear Westbourne! Welcome to your June / July issue of The Westbourne Directory. We have lots of news for you this month, with a variety of articles that we hope you find useful. Don’t forget it is the Westbourne Food and Drink Week, the second week in June. Westbourne Business Association has teamed up with partners, Heart FM, who will be hosting a competition offering entrants the opportunity to win an amazing food lovers prize package with meals, vouchers and cooking experiences to be included! Good luck with that one. The Westbourne Library also has a lot to offer, so please take a look and see if they can help you. Nellie took us to The Wheels Festival and what fun we had. You can read all about that and see some great photos that Stephen took on pages 24 and 25. Dorset Directories would love to hear of any other events occurring in the Westbourne or Bournemouth area. We publish your little local magazine every three months, so please let us know of anything happening in September onwards, or even for Christmas (dare I say that) as there will be a December issue! Please do use the index at the back, as this gives you all there is to find inside. Always mention The Westbourne Directory in any calls or bookings that you make as we love to know that the advertisers are hearing from you. If you have a business in or around Westbourne and could benefit from some local advertising, then please let me know. We have excellent rates. The lucky winner of the picnic bench from Reformed Plastics was Maxine Almond! She was picked out of over 600 entries. This month you could win a Bio-box from us at www.greenlife.world. Best of luck! Wishing you a great month of June and July,
Debbie & Stephen Corney

‘Foodie Heaven’ is funded by the Westbourne Coastal BID businesses and is a result of market research carried out last year by the Bournemouth Coastal BID which found that 23% of visitors came to Westbourne for Grocery and 13 % for eating and drinking. This thriving urban village is proud to boast nearly 50 venues where visitors can dine, snack or drink. An increasingly popular hub for diners during the day and evening, Westbourne’s unique appeal has attracted an ever growing and varied number of restaurants, bars, delicatessens, off licences, cafés and food stores. During the week participating businesses will be enticing new and existing customers with special taster menus, tasting sessions, exclusive offers, cooking demonstrations and menus that have been created specifically for this exciting week. The competition will be running for two weeks prior to and during the food week.
Westbourne Business Association Chairman, Steve Taylor, enthused, “Westbourne’s food and drink sector is continually developing and we have a superb reputation as a relaxed evening destination which attracts a mix of visitors including both locals and tourists. And watch out for the new Three days of fantastic jazz from Friday 19th June to Sunday 21st June, with 40 singers and bands playing popular jazz music at over 30 different venues across Bournemouth, from Southbourne in the east to Sandbanks in the west. On the opening night, there will be 14 live events, ranging from 18 piece Jazz orchestras playing from 7.30 pm on the Town Centre stage as part of the Food and Drink festival and at an opening night gala concert at 8 pm at the Riviera Hotel with the Swing Unlimited Big Band. Local singer, Tony Adams will be paying a tribute to Frank Sinatra’s Jazz music at the Cottonwood Hotel and there will be special dinner jazz evenings at the Sandbanks Hotel and the Hallmark Hotel. In addition numerous jazz events have been scheduled at bars, cafes and restaurants around town. The ever popular, Harry Ramsden’s restaurant leads the way by offering old fashioned Trad jazz music to entertain diners and the public from the terrace on the sea front. On Saturday, there will be a number of free concerts and events in town. Starting at 11 am on the Bournemouth Triangle Piazza outside the town library and on the lower gardens Bandstand and the new Pier Approach. Later on, the Bournemouth University Big Band will be playing on the Food & Drink festival stage from 7.30 and the local Swing Big Band, In the Pink, will be playing on the Bandstand. For true jazz connoisseurs, The Miramar Hotel is hosting a Jazz & Gin event at 5pm with the Ian Ellis quartet and jazz singer Zoe Schwarz with guitarist, Rob Koral will be playing Tea and Jazz at the East Cliff. More than a dozen jazz events take place on the Saturday evening, including a jazz trio playing in Bournemouth’s newest Hotel, Hampton by Hilton and a latin jazz sextet, fronted by international singer, Veronique Joly at the Hallmark Hotel. Other events include Musique a Trois at West Beach, Michelle Wright at La Piazza and the FB pocket Orchestra at Cuccinis. On Sunday 21st June, the focus is on Father’s Day, with hotels and pubs offering a variety of jazz brunch sessions, including The Plantation Pub, Harbour Heights Hotel, and the Cottonwood, East Cliff and Hallmark Hotels. In addition, there will be special lunchtime jazz music at the Jazz Café in Sandbanks, Café Rouge, Plates & Co in Westbourne and afternoon tea & jazz in the gardens of the Russell-Cotes Museum. Local car dealer, Horizon Honda is supporting the festival and will be sponsoring a competition to promote their new Honda Jazz. Winners will have the use of a
Jazz Festival tee shirt, based on a cool quirky design combining all the elements of sun, sea and jazz by talented local artist and illustrator, Mary Allen who also created the eye catching poster. Gerry Clarke, Festival organizer, says: “I am delighted with the way Bournemouth’s first Jazz Festival has caught the imagination of our local musicians and hotels, bars and restaurants. We set out to make music accessible to everyone, to families and people of all ages and we want everyone to come, listen and appreciate jazz music. Music plays a big role in our lives, with the music industry offering plenty of career opportunities and one of the aims of our festival is to give young people positive encouragement to learn to play a musical instrument and we’re organizing special workshops to encourage young musicians to learn to play jazz instruments such as the saxophone, trumpet, clarinet etc. This is our first year and I’m really looking forward to making this a truly memorable occasion. I hope everyone will enjoy a weekend of sea, sunshine and smooth Jazz!”

Talking about Wildlife...
Marvellous Meadows Rolling meadows with their rainbow colours and sounds of wildlife bring out the romantics and poets in many of us. Few relaxation techniques can compete with a stroll along a meadow, in a light summer breeze, with the sounds of insects humming, birds singing and small mammals scampering away. Meadows are quintessentially British, and an essential part of our landscape, but sadly their numbers have been reduced greatly in the last half century. Meadows may look wild, but in fact these open areas of grassland are man-made havens for wildlife. Over hundreds of years meadows have been carefully managed with traditional means of alternating cattle grazing in the winter with hay cutting in the summer, when meadows are closed for cattle. They support a complex and intricate ecosystem with hundreds of species of flora and fauna, and are of great ecological importance. One of the most important functions of todays’ meadows is supporting pollinators; bees, butterflies, moths and hoverflies. Common pollinator species inhabiting and buzzing around meadows are orange-tip, common blue and skipper butterflies, and bumble bees. A great part of the ecosystem depends on pollinators, and many plants and crops rely on them for their reproduction. Following the intensification of farming and development that took place after the war, pollinators have also decreased in numbers due to increasing popularity of pesticides and loss of many natural habitats. Meadows typically support dozens of species of various grasses and flowers, and the flora vary according to local climate and soil conditions. The varieties of grasses include quaking, sweet vernal-grass and crested dog’s-tail, and the species of flowers vary from snake’shead fritillary, devil’s-bit scabious and pepper saxifrage to various orchids, and many more.
In damp meadows, cuckooflower, ragged-robin and yellow iris can also be found. The multitude of grasses and flowers provide the pollinators with the vital nectar and pollen, and the insects in turn end up on the menu for birds, frogs and bats. Badgers, hares and rare farmland birds such as skylark all inhabit meadows, making them one of the most fascinating landscapes we have. Whilst meadows have been reduced drastically, there is good news as well; some have been protected as nature reserves, and meadow creation schemes such as ‘Coronation Meadows’ are creating new, “unimproved” meadows without the use of fertilisers. You can help us keep the magic of British of meadows intact for future generations and in ensuring that pollinators continue to thrive in this invaluable environment. Volunteering with your local Wildlife Trust and buying produce from local, traditionally managed farms are steps that take us closer to ensuring the future of our meadows. Dorset Wildlife Trust supports meadows preservation and will run the Kingcombe Meadows Reserve Wildflower Week Event on Wednesday 27 May 2015 10:30. This includes a walk through the reserve, looking at the flowers, folklore & history. Donation £2 to Dorset Flora Group welcome. By Niina Silvennoinen

Music and fireworks festival to celebrate surviving cancer A breast cancer survivor is organising a music and fireworks event to raise money for three causes including Bournemouth Hospital Charity. Karen Pitt, who is a member of Swing Unlimited Big Band, was diagnosed with breast cancer in November 2013. After two operations and a course of chemotherapy, she was given the all clear in May 2014, and says it was her friends and family that got her through. Karen said: “I found a lump before I was due on stage so I had to keep it to myself until after the gig. I was already booked to see my doctor for something else the next day so everything happened fairly swiftly for me.
evening’s entertainment. A hog roast and bar will also be open during the evening. Music will feature songs from Frank Sinatra, Ella Fitzgerald and some of Swing Unlimited Big Band’s favourite and more unusual numbers. The evening will finish with a spectacular firework display while the band continues to play. Money raised from the event will be split between Bournemouth Hospital Charity - for the Jigsaw Building and medical equipment - Poole Hospital Radiotherapy and The Poole and District Children’s Cancer Fund
“My Swing Unlimited Big Band friends were amazing. They sent me flowers, texts and emails to cheer me up and this really helped me stay positive. I went to as many band practices as I could when I felt well enough and they always made me laugh. “The treatment I received was fantastic – it’s the reason I’m here today. I wanted to give something back and help others and that’s why I’m organising the Swing Unlimited Big Band Fireworks Spectacular. ” The event will take place at 7pm on 25 July at St Peter’s School in Southbourne. Tickets are available on the gate for £5 (under 10’s are free) and access to the field is from Broadway, Southbourne BH6 4EE and not via the school. Coral Interiors - Adding Value to Your Home We all know that first impressions are everything when it comes to selling a property. Yet it’s almost impossible to view our own homes with fresh eyes or impartiality, in fact, the longer we live somewhere the less likely we are to notice the minor cosmetic problems that may well put buyers off. Since you certainly can’t change your home’s location or its size quickly or easily, the one thing that you do have control over is the presentation. Home Staging is the art of dressing or ‘staging’ a home to appeal to the maximum number of potential buyers – in the most cost effective way. The more buyers who fall in love with your home, the more likely you are to meet or even exceed your asking price, and achieve a quick sale. Home Staging is the answer, and with costs that are easily recouped (and certainly much better for the bank balance when compared to the cost of
accepting a low offer!) provides a simple solution to achieving a hassle-free sale. A professional home stager will create that elusive wow factor, putting you streets ahead of any competition. Remember the best time to stage is before you go on the market so talk to us first – because you only get one chance to make a first impression! Call Helen at Coral Interiors on 01202 798837 or 07784 469334 to find out more, or to book your Home Review.

Money Saving Tips

LEWIS Overdrafts Overdrafts are a debt like any other, if you don’t manage it, it will spiral out of control. While there are methods to cut the cost, they’re often far less talked about than the common techniques for cutting credit card bills – but are just as important. In a nutshell your aim should be to cut the cost and repay what you owe. Here’s my tips on how…
Organise incoming cash and move it into bill pots at the start of the month so you're not tempted to spend unnecessarily, it’s called piggybanking. Use this technique to make payments - eg, £100 a month - to your overdraft, treating it like any other bill. Use my free automated budget planner to help at www.budgetbrain.com.
Get paid £100 to take a free overdraft. There are two big players who offer decent deals for those with overdrafts who switch account. Though you’ll need to pass their credit score. Move to www.firstdirect.com, which is the no. 1 rated bank for customer service (92% of my web users rated it ‘great’) and you get an ongoing £250 overdraft. Crucially it also gives you £100 sign up bonus, which you should put straight towards your debt. To get it you’ll need to pay in your salary or income, which must be at least £1,000 a month. Alternatively for a potentially larger 0% overdraft there’s the www.nationwide.co.uk FlexDirect account. Yet it only gives you this overdraft for the first year, so ensure you use that time to clear the debt or afterwards it’s 50p a day.
Use savings (if you've any). Having overdrafts and savings isn't sensible. Think about it: a £1,000 overdraft at £20 a month equals £240 a year, but the same in easy access savings, after tax, earns a paltry £13 at best. So repay debt with savings and you're £229 per £1,000 up each year. Once the overdraft's paid off, you can save more freely. You may think: "But I'll have no savings if the boiler packs up or the roof falls in." True, but in an emergency, access the overdraft you’ve paid off again and you'll be no worse off. To beat the fear of being without savings, read www.mse.me/repaydebts.
Shift your overdraft to a 31 month 0% card. While you may have heard of credit card debt shifting deals called balance transfers, a few cards also offer a ‘money transfer’ where it simply pays cash into your bank account, so you can then pay off your overdraft, meaning you then owe it instead. This is a good option if you’ve a bigger overdraft and will need more than a year to repay it. My top pick card right now is www.mbna.co.uk, which lets accepted customers do it at 0% for 31 months for a one-off 4% fee (it’s just 2.88% for normal balance transfers). However, it’s credit score dependent, so use the www.mse.me/eligibility tool which will show you which money transfer cards you’ve the best chance of getting. If you are doing a money transfer do follow these golden rules: a) Don’t assume all cards do this, most charge a fortune. b) Always repay the monthly minimum or you'll lose the 0% deal. c) Plan to clear by the end of the 0% period or it jumps to the full rate - with MBNA that's 22.9% rep APR. d) If you’re unsure of what you’re doing use the step-by-step help in www.mse.me/moneytransfers. Manage your way back into credit. Cutting the cost of your overdraft isn’t the end game, you should aim to always be in credit (or at least always within your overdraft when there’s no cost). To help do ask companies you pay to shift direct debits to near the end of your working month. If paid on the 25th, aim for the 20th. This artificially boosts your balance so you're in the red less - but don't spend the cash. Moving bill dates cuts fees, but won't tackle the overdraft. So sit down and do a budget to find out where you can cut back.
Poor credit? Get 0% respite from bank charges. The options above won't help if your score's poor, but there is one card that offers 0% on spending until October even for those with a poor credit history. The www.luma.co.uk card accepts some with CCJs or defaults over a year old to get it. Now as this isn’t a debt shifting card, you have to play clever and be disciplined to take advantage of it for reducing overdrafts. The technique is you do your normal, budgeted, day-to-day spending on the card up to the credit limit, instead of from your bank account. This builds up the debt on the card, but allows your overdraft to be repaid by your income. Do ensure you can make monthly repayments to clear the card before the 0% ends though or the rate jumps to 34.9% representative APR. "I got £1,560 in unfair bank charges back." If you have an overdraft the nightmare scenario is exceeding your limits and getting stung with bank charges – these transaction fees can be £6 per day or up to £25 per transaction. Get it wrong and they can add up to £100s or £1,000s a year. Do everything you can to avoid them and communicate with the bank if there’s no solution. However, if you are or have been hit, do remember reports of the death of unfair bank charges reclaiming have been exaggerated. Admittedly now it's mainly for those where charges put you into financial hardship, yet some do get money back, Alice emailed me to say: "I sent your template... a day later the bank refunded £1,560. Thanks." For full help and template letters on how to reclaim bank charges for free see www.mse.me/bankcharges. In dire straits? If the debts are all too much for you, it’s worth considering non-profit debt help from agencies like www.stepchange.org, www.citizensadvice.org.uk, and www.nationaldebtline.org. Don’t be scared to speak them, they’re there to help not to judge.

The Adventures of Nellie The Dorset Directories Camper Van Nellie loves this time of year…the time of Shows! We have so many different types of exhibitions, festivals and fairs that we really are very spoiled. From the Great Dorset Steam Fair and the Dorset Show in September, the Bournemouth Air Festival in August and the wonderful New Forest Show in July, to name but a few. Well this one was totally up Nellie’s street… The Wheels Festival in Bournemouth! Nellie was rather excited to be going out. She had had ‘bronchitis’ and had been suffering for weeks, making a rather loud growling sound as she spluttered along. We were waiting for her new part to arrive all the way from Japan, so if anyone heard her, and to be honest she would have given the Formula One Racers a run for their money with all the noise she was making… we do apologise! So now with a new tube and a revived Nellie, off we went to the Wheels Festival. It was “Mayhem” in Zone 3! What a truck that was. This was a chance to have a ride on a huge truck, be thrown around and bounce up and down on the sand at speed. What fun.
Moving along to zone 2 there were Monster Trucks. OMG as the youngsters would say. Big Pete is massive. Nellie looks decidedly slim, yes slim, next to this beast of a machine. In fact Big Pete Ltd is the UK’s No1 most successful Monster Truck Team and has the ONLY female monster truck driver in Europe! Nellie was very impressed with her. You can check out their website at www.bigpete.org. Big Pete and Grim Reaper pulled a car apart in a tug of war, as if it was made of paper! They also climbed over a hill of sand, with two very squashed cars on top, as if kicking a plastic bottle out of the way. Easy. We also learned that ONE

25 new tyre costs £3000 and an extra £750 for the wheel, so we are rather pleased that Nellie doesn’t need shoes quite so big or expensive! Then, further along the populated promenade, well… oh… was Nellie’s dream. A red Lotus Esprit. Oh how she would love to look like a red Lotus Esprit. I am sure when she looks in the mirror, instead of seeing huge thighs and a big grin, she sees sleek, smooth, elegant lines. Probable much like I see Claudia Schiffer in the early 1990’s! Or is that Steve? Anyway… gorgeous, glistening and glamorous cars lined the street looking into the sunshine. Mmmmm…
Nellie dreams in the mirror...
Walking back up to the top, to the Overcliff were the famous Formula One Racers. Now if Nellie raced along at that speed (if only she could…) I am sure she would have been severely reprimanded - if they could have caught her of course! Today was a special day and the Overcliff had become an exhilarating race track. I do hope there
was noone staying in one of the hotels, hoping for a quiet romantic weekend, as they would have been rudely disappointed. The noise was amazing. The roars and the revving, incredibly powerful engines were invigorating. What a sight and sound. These cars are something else and driving one, so close to the ground at that speed, and let’s face it, this was probably slow in comparison to what they can do, must be a total trip. Incredible. There were lots of other events on different days at different times. Bournemouth was alive with go-go-go, roaring machines, yells of excitement, family and fun. Well done Bournemouth! Nellie had great fun and is definitely looking forward to more Shows. Where will Nellie go next…? By Debbie Corney

IT’S ALL CHILDS PLAY
Putting the fun into Father’s Day By Sue Gascoyne
With Father’s Day just around the corner, children in nurseries and schools around the globe will be lovingly making cards and gifts to let their dad’s know just how special they are. Wonderful as these glued and crafted creations are, as adults we all know that you can’t beat the warm glow that you get from spending quality family time together. This got me thinking about Father’s Day a few years ago when my husband, two children and I took a trip to the beach. “It’s like being a child again” said a granddad to me. Three generations of a family (women and all) had gathered by an inland boating lake, with their model boats proudly lined up in a row. The men cradled, cleaned and caressed their boats, an ocean liner, tug boat, yacht and speedboat, before lining them up, side by side on the verdant grass, waiting for their turn on the water. The women had come prepared with chairs, flasks, sandwiches and lots of patience and good humour. Although they feigned boredom they were clearly almost as hooked as the men, enjoying the playful camaraderie of the occasion. It being nearly lunchtime, my children sat on a grassy bank, sandwich in hand, captivated as they watched the spectacle unfolded. As each vessel was carefully lifted onto the lapping water the suspense (of whether it would sink) was palpable as each child (and adult) perhaps imagined himself the captain of a ship, travelling to some distant shore. With concentration interspersed with laughter and frivolity, the men proceeded to take it in turns ‘sailing’ their boats. It was in one such bout of laughter, creased over like a child with the ’full-bodied’ experience, that
the granddad of the family explained to me how playing with toys made him feel. You could see it in his wide grin and eyes glinting with playfulness. The huge flashy speedboat (one of his son’s) had just had to be rescued by a tug (another son’s) in a dramatic manoeuvre, which clearly had tickled the father as well as the heckling women onlookers. Meanwhile my then five and eight year old (not to mention their Dad) sat watching mesmerised, drifting in distant shores judging by their glazed expressions. From doodling to sailing grown-up toy boats, even adults enjoy playing. Sat watching the adults and my children that day, it was difficult to tell the children and adults’ responses apart. It could so easily have been a game of conkers in the playground, the children carefully lining up their proud finds before making a selection and preparing for the ‘battle’. Play is all about the process and on that sunny day by the sea the process of play was apparent, as was the satisfaction, excitement and allure of distant shores. Whatever your plans this Father’s Day, make sure you make time for Dad’s to play. Sue is a published author, trainer, educational consultant and therapeutic play practitioner. Want to live the good life? Try living in a green life world!
The Great Pacific Rubbish Patch There is a floating island of plastic rubbish, twice the size of Texas, caught in a current gyro between USA and Hawaii. The area is filled with plastic but doesn’t show up on satellite. While predicted in the mid 80s it was discovered in 1999 by Charles J Moore who sailed into it by mistake as he was returning from a yacht race. This problem is not unique to the Pacific. There are a few oceanic garbage patches throughout the world, including one on our doorstep in the North Atlantic. In a recent National Geographic article it was estimated that worldwide there are 5.25 trillion pieces of plastic debris in the ocean. Of that mass, 269,000 tons float on the surface, while some 4 billion plastic microfibers per square kilometre litter the deep sea.
Product of the month
Bio-degradable Bags from £1.99 per pack!
The knock on effect is a catastrophic loss of marine habitat and marine life as well as other wildlife and birds in particular. Small islands, already being swallowed up by the rubbish patches, become uninhabitable and an increasing amount of rubbish is being swept up on our coastlines. Furthermore, it means changes in tidal and wave patterns the impact of which we may not understand for 100s of years. And if we do nothing... who knows where it stops. We have a responsibility to stop this. We caused it! So always remember the 4 ‘R’s - Reduce, Reuse, Recycle and Recover. And we can reduce the amount of plastic floating around in the world by choosing biodegradable options whenever we can. So check out our website and decide to live in a “green life” world. Traditional plastic bags take between 100 and 400 years to degrade and even then small particles will likely linger in the environment for 1000s of years. Our bags degrade fully within 12 to 18 months. We stock a full range of bags from large refuse sacks for rubbish and wheelie bins to smaller nappy sacks and dog waste bags. We also carry freezer bags (medium and large) and food waste caddy bags (in 3 sizes) which are even compostable!

Gardening Tips
on your
PLOT
Expand your horizons
Summer, sunshine and strawberries, June is a truly wonderful month! In this time of plentiful growth we take a look at making the most of your waste clippings by turning them into lovely rich compost to use next year, and also how to make the most of every inch of your space. Jobs for June:Take off the side shoots from tomato plants to avoid them becoming too bushy and overburdened with fruit. Water regularly. Garlic that was planted in the Autumn should be maturing now. Lift when the leaves start to shrivel and leave to dry in a warm spot. Keep planting - the moist soil, higher temperatures and long days are ideal growing conditions. French beans, courgettes and salad crops can all be sown now. Watch out for pests! Think about protecting brassicas before caterpillars start to become a problem.
Every year it amazes me how the plants respond so dramatically to the arrival of the warm weather. Anything sown or planted out in May seems to positively leap out of the ground and shoot skywards, in many cases quickly catching up with earlier sowings! Of course the lawn is no exception and if you don’t already have a composting system in place then why not set one up now and make use of some of those endless grass clippings? Ideally you want to have two (or even three) compost bins so that when one is ready to use for the garden you have another filling up and rotting down. You can buy allsorts of nifty looking, ready made, compost bins some even have clever devices that make it easy to turn the whole bin to help the waste break down - but you don’t need anything fancy. You can just start a compost heap in an out of the way corner, enclosing it with old pallets, or wire mesh wrapped around four stakes if you want to keep it looking a little neater. So what should you compost? Well any dead organic matter will decompose naturally but you should aim for a good mix of ‘green’ and ‘brown’ ingredients. Lawn trimmings, veg leaves and peelings provide the green element and you should add a reasonable balance of brown items such as shredded paper, straw, eggshells and even the contents of your vacuum cleaner bag. Turning the heap occasionally will accelerate the breakdown and covering with an old
carpet when it is full will also help. Leave for several months and you should have some great compost! June is also the time of year when it is easy to start to run out of space on your plot. Everything puts on amazing growth spurts and you are suddenly left wondering where you are going to plant out those tomatoes that you’ve been nurturing in the greenhouse, or finding you’ve no room for the cabbages that you’d like to be eating later in the year. Time to expand your horizons and make full use of containers and of your borders. Look at the different varieties of lettuce and salad crops many of these, along with cabbages, can add a splash of decorative, coloured foliage to your borders (and be eaten too!!!). Grow bags are wonderful for crops such as tomatoes, cucumbers and peppers. They’ll be happy in a sunny spot on your patio but do remember to water and feed regularly. Larger pots can house courgettes and pumpkins, with the exotic looking flowers adding a bright splash of colour. Even hanging baskets can get in on the grow your own act! Look for suitable strawberries or tomatoes and you could be treated to a bumper crop of luscious fruit tumbling down from above.

Naturally good... This is similar to the classic cauliflower cheese but has the added kick of wholegrain mustard which pairs really well with the mature cheddar cheese. The recipe uses a small amount of corn starch/corn flour to thicken the sauce rather than using a traditional roux, this reduces the carbohydrate levels while still making a smooth creamy sauce.
MUSTARD & CHEDDAR BROCCOLI BAKE Ingredients for 4 servings: 1 large head of broccoli 4oz (120ml) heavy cream (double cream) 3 oz (85 g) mature cheddar cheese (extra sharp cheddar cheese) 3 tbsp parmesan cheese (shredded) 1 tsp wholegrain mustard 1 tsp corn starch (corn flour) dissolved in 1 tbsp water Sea salt and freshly ground black pepper to taste
Method: Preheat the oven to 200°c

florets. Bring a large pan of salted water to the boil and add the broccoli. Cook for approximately 3 minutes to slightly soften the broccoli, but not cook it through. Drain and rinse under cold running water to cool. Set to one side while you make the cheese sauce. To make the sauce, place the cream and mustard into a saucepan on a medium low heat, heat the mixture and once it comes to a simmer add the cheddar cheese and stir through until melted. While stirring add the corn starch mixture and continue to cook for a further minute or so until the sauce thickens, add salt and pepper to taste. Make sure that the broccoli is well drained - pat the broccoli dry with paper towels to remove any excess water. Place the broccoli into a baking dish and spoon over the cheese sauce; make sure the broccoli is well covered. Sprinkle over the parmesan cheese and a pinch of paprika if you wish. Place into the oven and bake for approximately 20 minutes until golden brown and bubbling.
