Mary Riall, Cecilia Bufton and Richard Cutler join current trustees Nick Ashley Cooper, James Gibson Fleming, Christopher Lees and George Meyrick on the board. Giving their time for free, the seven-strong trustee board are united by their goal of helping people to transform their own lives in Dorset for the better.
Talbot Village Trust appoints three new trustees
Applicants wishing to apply for funding can visit www. talbotvillagetrust.org to find out more information about the charity and how it awards funds. Applicants can submit their applications online by January 31st or July 31st.
Nicholas Ashley-Cooper, Chairman of Talbot Village Trust, says: “We are incredibly fortunate to have a new set of such strong trustees to add to the board and I know that I am speaking on behalf of the rest of the team at the Trust when I say that too. These appointments are hugely significant to the charity and will help us to strengthen our work with our colleagues in local charities and not-for profit organisations. As an organisation, we are taking the time to review our processes, practices and approach to be sure that the funds we donate to local causes each year are true to our founding Talbot sisters’ mission and have a direct impact on local people of all ages and abilities.” Mary Riall, a former teacher, is founder of an educational charity that works to raise aspiration and achievement of all children. Through this, Mary brings a wealth of experience
With a diverse range of skills and interests, the new trustees will contribute to the charity as it continues to make a difference across south-east Dorset through grant giving and by ensuring that the financial support provided by the charity is used to best effect, ultimately supporting people to live fulfilled lives in the local community. As custodians of Talbot Village, the board is also responsible for ensuring that there are resources available to manage the land and properties within the estate.
As a charity, the trustees have an obligation to maximise the efficiency and effectiveness of the charity’s assets and investments, including from the estate, in order to enable the charity’s ability to reinvest back into the community and achieve its charitable purpose and objectives.
The new trustees will volunteer their time and work alongside the other like-minded trustees.
Benefiting the trust, Cecilia also has extensive expertise in the charity sector, holding chair of board positions at both the eye health charity Macular Society and the conservation charity Plant Heritage and through these strategic positions has knowledge of charitable governance, overseeing policy and organisational strategy.
As one of the area’s leading benefactors, Talbot Village Trust awards grants twice a year to projects promoted by a charity, church, school, college, or university.
Talbot Village Trust, a local grant giving charity that supports worthy causes across south east Dorset, has welcomed three new trustees to its board.
Bournemouth born and educated, Richard Cutler is a chartered surveyor and town planner and has been running his own property business since 2009, returning to the BCP conurbation in 2015 believing it offers unrivalled opportunities and lifestyle choices for his family. Richard, with a strong interest in design and sustainable development, and a passion and commitment for the local area, aims to help the Trust continue to make a difference locally by encouraging strong, strategic decision making on key projects.
With 30 years’ business experience, Cecilia Bufton is chair of Dorset LEP, non-executive director of Dorset NHS Integrated Care Board, and has held senior level roles in strategic marketing, sales, and business development.
childrendisadvantagedhelpingdevelop the vital life skills they need to overcome the challenges they face and to recognise and fulfil their potential. As a board member of the Ernest Cook Trust, Mary also brings valuable experience in the strategic development of a grant giving trust.

The everlasting poise and performance of Serena Williams.
While the subject of retirement for Serena Williams is always one on the lips of interviewers, it is to the 40-year-old’s unending credit that she perseveres on in a sport that has given her so much, all of which she has paid back many times over. From recurrent injuries, mental health worries, the exhaustion of over two decades on the circuit, the distractions of media work, and the small matter of a young child waiting for her at home, no-one would begrudge the Florida-born star – the greatest female tennis player to have ever lived – the decision to start a new career.

“I just always come back to that phrase, ‘you are a long time retired’, and that really speaks volumes for who I am and the love I have for this sport,” she begins. “Of course, on occasions I have grown tired of it, and certainly I value my downtime away from the court more than ever before; but if the idea of taking my racket out there, of competing, of giving it my all, still excites me, then why would I possibly want to do anything else?” Indeed, Williams’ ambitions on the court have evolved almost as much as the athlete herself. DEVELOPMENTPROGRESS
On 20th July I attended a Hampshire Genealogical Society event at the Meeting House, where one of their members gave a talk about that very subject. He first inadvertently came across the mention of Ringwood specifically within two February 1954 editions of the Times. There had been a conflict of opinion between the Government of the day and the LCC at the time, so they had pressed on with their proposals for eight projects within the Home Counties. Each of these projects would involve accommodation in blocks of flats, with associated facilities for shopping and other essential services for the residents, and absorption of the existing “village” within the complex.
Attempts to initially add Ferndown to the local plan having failed, they briefly became the next target, but that too was promptly rejected. Unfortunately, around 1960 all Ferndown’s Parish records were lost in a fire, so one has no local documentation to refer to.
Originally planned as some extracts from an old Parish Council Minutes Book, this idea was scotched as it is now going to be subjected to digitisation. This follows proposals to subject so many public records to this process, theoretically to make them more accessible to all via the internet. A brief check before its return did at least reveal the strong local rejection in March 1957 of covert plans by London and Hampshire Councils for a “New Town” (see the August 2021 edition). At that very meeting, a Major Zeigler gave a talk on Civil Defence, and he had actually been a prime mover for rejection of the plan from the outset.

Discussions between the Hampshire and London Councils about the “unproductive heaths” at Avon Castle and Matchams began at Winchester in 1953. These progressed to become relatively complete plans before involving the immediate local parish councils in their negotiations. These elements closely followed the evidence provided in the LCC copy documents I had received last year.
When Ringwood and Fordingbridge Parish Council, of which Major Zeigler was a member, met with representatives from London and Hampshire, the authorities had assumed their plans were “fait accompli”, but the decision had to be deferred whilst local residents were consulted. The ultimate decision was a firm rejection, reluctantly accepted by Hampshire, so it was back to the drawing board for the LCC. However, the speaker then followed up on this rejection by revealing the continued efforts of the London authority to achieve some success.

JOHN HAWKINS (Call me on 01202 875512) By then, a prominent design consultancy had actually provided LCC with a central area layout and proposals, with high rise modern buildings linked by walkways, and all traffic restricted to ground level. These plans were next applied to a proposal for a site centred on Hook, which was yet again rejected. The consultants then approached several authorities elsewhere with their ideas, and finally achieved success at Cumbernauld, that result remaining as evidence of what might well have appeared south of the A31 The speaker named it “Laybrook Town” “Leybrook” is of historical significance, the area of “Leybrook Manor” having been acquired in the late 16th century by a West country family named Lyne. There was never a Manor House at the time, but a Lodge appeared late 1800s The Lyne family lived in Ringwood for many years. They came from St. Ive (pronounced “eve”) in Devon, an intriguing potential origin for St. Ives, first seen on a map in 1781. Parts of “Leybrook Common” survive as pine trees visible along the edge of the Spur Road next to Avon Castle. Making the point that the new town may have proved fatal competition to Ringwood itself, he did consider a problem of rural villages was “ribbon development”, using Ferndown as an example. That involved properties extending side by side along a main road frontage, leaving large areas behind that were inaccessible.
Comparing my initial researches into this area, one could now suggest potential links with these Town plans in the 1950s. Amongst them could be purchases at auction, perhaps by speculators, on the Matchams Estate in the 1950s, despite an HCC notice that planning permission for building would not be approved. Similar restrictions were also being applied to properties on the Grange Estate. At the time, HCC had also discussed with the Forestry Commission the management of pine plantations. Who knows, but HCC’s compulsory purchase in the 1960s of all the plots between the A31 and Boundary Lane and eviction of the “squatters” and their unsightly “homes” provided a convenient result in defence of their previous hidden agenda. Development plans did not stop, one being for some 4,500 homes, others more moderate numbers, ultimately resulting in approvals for the 2017 plans for the “Victory Oak” estate now nearing completion.
Stepping further back in history, one could actually apply this view to Ringwood itself in its earliest days, with properties lining the Market Place, High Street, Christchurch Street/Road and Up Street, all with open areas behind them. In the 19th century, locally St. Ives initially develops on similar lines, with large open areas surviving into the 1950s. Mercury The innermost planet cannot be seen this month. Venus Venus is visible just before sunrise in the east, but is lost in the Sun’s glare towards the end of the month. It will reappear in our evening skies in December. Mars Mars can be seen late in the evening, rising around 10pm. It is currently located in the constellation of Taurus the Bull, and is close to the Hyades and Pleiades star clusters (see figure).
The Autumn Equinox on 23rd September marks when daylight hours equal the number of night-time hours, wherever you are on Earth. The term equinox originates from the Latin meaning ‘equal night’. The Autumn equinox marks the point at which nights start to become longer than days.

YMCA Bournemouth’s ‘Sleep Easy’ donations surpass £200,000 as communities help tackle homelessness in Dorset
YMCA Bournemouth also hosts a ‘Big Sleep Easy’ event every year, with its next scheduled for 15th October 2022 to inspire simultaneous efforts. Over the past three years, the ‘Big Sleep Easy’ has seen donations total £79,000. All funds raised are used by YMCA Bournemouth to help those in need achieve independent living and secure a safe and positive long-term future.
YMCA Bournemouth has announced its ‘Sleep Easy’ fundraising events, which encourage members of the public to adopt a homeless lifestyle for one night, have raised £211,000 since launching in 2016.
Main events sponsor, Lester Aldridge Solicitors has raised more than £15,000 over the last four years, through multiple group events and individual staff sleeping rough to contribute their support to the cause.
Mark Benham, Partner at Lester Aldridge, added: “We are extremely proud to support such a crucial charity. It is hugely important that all of us are socially responsible and contribute to the needs of our communities.
Lester Aldridge supports YMCA Bournemouth, a fantastic charity that transforms communities, providing local services that give children, young people and vulnerable individuals hope for a better future.”
The events have been so successful and valued that we’ve had people repeatedly sign up, year after year. I encourage everyone – whether an individual or an organisation – to take part in an event this year and help us change lives in Dorset for the better.”
The events see schools, groups and businesses set themselves a fundraising target, build a cardboard shelter and sleep rough for one night. Between September 2021 and March 2022 alone, 13 local schools – including Bournemouth School for Girls and The Bishop of Winchester Academy – collectively raised £56,000 through multiple events.
Sheena Dayman, Events Manager at YMCA Bournemouth commented: “By supporting us and taking part in these events, our communities are helping us to keep local people safe from homelessness in the longterm “Not only do the ‘Sleep Easy’ events raise vital funds, but they also promote team building, informal networking and demonstrate a genuine commitment to the local community.
Last year, YMCA Bournemouth housed and supported more than 170 individuals and provided more than 53,000 meals for vulnerable adults. The charity’s services have proven a lifeline for many in the county, with the Office for National Statistics recently reporting that more than 350 households in Dorset are homeless or at risk of YMCAhomelessness.Bournemouth is encouraging local communities to “Sleep rough to support those who are finding it tough!”

TIGER SHARK KING More than 20 years ago, conservationist and diver Jim Abernethy discovered the ‘affectionate’ side of large predatory sharks after removing a fishing hook from the jaws of a tiger shark. Since then he has removed thousands of hooks from sharks in the warm, clear waters off the Bahamas, and has brought divers to safely encounter these apex predators with the goal of de-stigmatising sharks as mindless killers. 1. Plastic is not fantastic We all know the issue with single-use plastics, and the damage they do to the environment. The prevalence of refillable and reusable body products – soaps, gels, moisturisers etc. – and the number of retailers wising up to this trend, has kicked off a cultural shift that is rapidly gathering pace. Not only is this tendency for refillable products a trendy revolution, even if it is akin to wartime replenishment of products, but typically those products on offer have been developed with sensitive skin or vegan elements in mind, meaning they are better not just for the environment, but ourselves too.

In this month’s column, Martin Lewis looks at how, in a time of rising costs, we can make savings in other places.
34 To advertise in this magazine, call 01202 894397
There’s so much attention at the moment on the cost of petrol, the cost of our utilities, the rise in inflation, and it all seems like bad news. Yet sometimes we are all guilty of obsessing over the negative elements whilst failing to recognise good opportunities elsewhere; and if you’re looking for one sector where costs, pretty much consistently over time, have always decreased, then reach into your pocket and take out your trusty mobile phone. Telecommunications, broadband and connected industries continue to slash prices in what is a consumerled price war, and the simple truth is many of us are still paying too much for our mobile
Money on my mind...the Martin Lewis column phone contracts. So if you’re coughing more than about a tenner a month for your mobile phone contract – and by that I mean calls, texts and data, not the device itself –you’re probably in line to save some money. It all comes down to looking for the best-priced SIM for your needs, because once you find the right deal, it’s really very easy nowadays to grab your PAC code and switch networks. Now usually when I suggest switching to a different mobile provider, people come back with concern over signal strength for, say, Lebara Mobile or PlusNet or whoever it is offering the best deal on data. The reality though is that the communications network is run by four companies and four companies only – O2, EE, Vodafone and Three. Every other provider is piggybacking off their signal, so, in effect, it’s the same signal. So by selecting one of the smaller companies all you’re doing is going with a virtual network, and everything else should remain the same. Obviously check before you sign up to see if 5G or tethering conditions are available, but beyond those things it’s the same line. It’s strange that mobile phones are such an integral part of our lives, yet many of us take for granted the competitiveness of the industry and don’t realise where we can be making savings.Inanera of prices rising inexplicably across the board in other elements of our life, the time is now to start working the equation back in our favour, so have a look at your bill, survey the competition and start the conversation! He’s the UK’s leading money saving expert - a journalist and presenter who has kept millions of pounds in people’s pockets as well as lifting the lid on the threats and dangers we need to be aware of as consumers.

2. Secure: toprotectedschemesPensionarevarying degrees, with some insured schemes offering 100% protection in the event of provider default. In addition, money held in a pension is secure and separate from your business. In the event of the failure of your business, pension savings are secure.
3. Lower Charges: Since workplace pensions were introduced, competition has increased and charges have reduced. This is great for the consumer but sadly many existing pension schemes still charge the same as they always did. It is possible to consolidate and switch pension providers to save money after full analysis to ensure valuable benefits aren’t being lost.
The role of pensions: Whilst we would all hope that the business thrives and provides the capital needed to retire, sadly this isn’t always the case. Like all things in life, it’s sensible to diversify your options and saving into a pension can be a very effective way to provide further flexible capital for retirement with many advantages.
To advertise in this magazine, call 01202 89439738
As a business owner (self-employed or limited company) you have a greater degree of flexibility over how you are remunerated but also greater responsibilities for your staff, customers and the future success of the business. What can often be missed is the responsibility to focus on your own retirement planning.
4. Inheritance Tax exempt: Under current legislation, pension savings are not included in the value of your estate for IHT purposes. The pension fund can also be passed down to nominated beneficiaries on death in a tax efficient manner (tax-free pre age 75 and taxable at the nominated beneficiaries own income tax rate post age 75). To summarise, with sensible planning it’s possible to pay less tax and keep more of your hard earned money to fund your financial future. Hopefully this means you may either retire sooner, or enjoy an improved lifestyle during retirement. If you’d like to learn more or discuss your personal situation, we would be delighted to meet for a free, no obligation initial chat.
The big picture: The first stage is to quantify what level of income you will need in retirement, and what other capital events you need to account for during your retirement (eg dream holidays, house renovations, financial support for children for house deposits & weddings etc). Once established, it’s possible to work backwards and identify how much you need to have saved to meet your retirement aspirations. We utilize market-leading cash-flow software to quantify this, taking into account inflation assumptions and projected investment returns. It’s possible to model different scenarios; for example we can run one scenario to include a business sale, and another to assume the business continues under management to continue to generate revenue for the owner.

Business Owner’s Retirement Planning
1. Tax Efficient: Pension contributions are treated as a business expense so save corporation tax for limited companies. They are a very effective way to draw excess profits from the business without the need to pay corporation tax on those profits or income tax/dividend tax if drawn personally. The self-employed qualify for taxrelief so in effect pay no tax on contributions. There are annual allowances of £40,000 to consider but it’s possible to go back up to 3 years if full contributions haven’t been made and use “carry-forward” to make higher contributions in the current tax year.

The Adventures of Daichi The Modern Magazines Camper Van Daichi loves the sea. That is why we all moved to Weymouth at the end of last year, to be as close to the beach as possible. And what a summer it has been. Glorious sunshine, glistening blue, turquoise waters, golden sand and lots of happy faces. Of course, boat trips are a must and with plenty of choice, Weymouth harbour is a delight to sail from. I may have mentioned that my Mum has dementia. It is a horrible disease that is for sure. Never predictable and always a challenge. My Dad, at age 87 still drives all the way from Hull to visit us and I absolutely take my hat off to him for persisting through the same questions on and on as he cruises down the motorway. Music works well and the sixties songs with The Supremes, Neil Diamond, Buddy Holly, Dusty Springfield and even the Rolling Stones are a blessing no one would ever realise. Singing to her hearts content, all smiles, the long journey is possible… albeit ear plugs are recommended! Dad, having been a fisherman all his life, loves the water. That is where I get my passion from, I am sure. My sister and I try and give him as much time as possible for his ultimate pleasure, pond fishing for carp, but boat trips to sea are also one of his delights. Hayden, our son of now nearly nineteen, used to go on the Yorkshire Belle with them, in Bridlington, when he visited in the summer some moons ago. So, off to sea we went. We chose a smaller, leisurely boat called Josephine so that Mum would not be alarmed. It was just gorgeous. Bobbing along on the calm waters, literally watching the world go by, looking back at the busy Esplanade with people milling around, fair rides spinning, children playing, I All aboard! Can you spot
have to say I just love it. Passing Nothe Fort, on the right, our coastal defence which was built between 1860 and 1872 by 26 Company of the Royal Engineers to protect Portland and Weymouth Harbours, makes you feel quite small sat in a tiny blue boat. It was due to this construction that Portland became an important Royal Navy base. The fort is certainly worth a visit but do be ready for the gun shots on each hour or they can be quite a shock! I nearly finished up on the top of Portland (spiritually) when I first heard it! With a prison there, I am not sure that was prosurvival… So, back on the boat, all was well. We continued across the bay towards Portland Harbour. I was amazed at the buildings jutting right out to sea. I believe they were all part of the defence which was put in place. They are pretty derelict now and would need quite some upgrade, but I am sure they would make some very unusual houses. The problem with me is that I am always looking for a project to do… it drives Stephen mad! One day I will retire… but it could be some time. We pootled into Portland Bay where there were huge cargo ships and a naval ship, but then to our utter delight two dolphins jumped out of the water in synchronised dancing. How wonderful! Back and forth they frolicked, entertaining us with lots of ooh, aahs and happy sounds. Family times are all about making memories, and although Mum will not remember, as she was ‘not there’ and will adamantly assert that, we knew she had a good time and loved every minute. So did we. Sailing back, to our astonishment there was a seal bathing on a rock, looking at us in a rather bored way while flapping its tail quietly against the stone. What an incredible day and all here in the UK. I do enjoy a trip abroad, but there are such sights, delights and moments to be enjoyed right here. Dad really wants to go reef fishing. It is on his ‘bucket’ list and with trips available here in Weymouth, I wonder if Daichi can make this go right for us all? I wonder? Let’s see in the next issue of your Local Magazine. Have a great month of September. By Debbie Corney Dolphins in Portland harbour the seal?

For what you might describe as ‘everyday cars’ –your runaround that takes you to the shops and back or drops the kids to school – the better bet is to opt for the cheaper option when you venture to the Yourpump.little set of wheels will have a standard octane rating of 95, meaning that the electronics are configured so that the vehicle will run in a satisfactory way on the regular Putfuel.another way, there’s a good chance upgrading your fuel will make little noticeable difference… except to your wallet, and we’ve all encountered enough damage to that this year!
Provoked by the conflict in Ukraine, price variances at the pumps have become a sick joke; yet perhaps the one constant we’ve come to accept is that while we seem trapped in a lack of choice, there is still one we make at the pumps – it usually falls under the guise of ‘Super,’ ‘V-Power,’ ‘Nitro+,’ or ‘Ultimate’. Whatever the buzzword, the premise is to lure you into an upgraded fuel Foroption.many of us, whether petrol or diesel, filling up is enough of a financial chore, without voluntarily spending more on jazzed up fuel. Premium fuel The truth is, if you own a highspec vehicle then filling up from the premium pump could be a sound move. The reason for this is that premium fuel’s higher-octane rating means it works better with engines of a higher compression. Designer, writer and television presenter, Kevin McCloud leapt into our consciousness with his vastly successful Grand Designs show on Channel 4. This month, the a able architectural business owner talks sustainability.about Sustainability in design is obviously a hot topic, yet it comes from a place where the reality is the housing stock in this country is actually pretty poorly constructed, and when that happens it means we are immediately on the backfoot as far as sustainability and carbon footprint goes. This comes about because of that classic play-o between the environment and the wallet – they have never been good bedfellows and never will be, so we kind of get what we expect out of the Whatequation.that means is that while our homes are typically not as sustainable or environmentally friendly as they might be, we compensate for that fact by trying to wrestle back a bit of positive contribution through our own daily lifestyle habits.

In simple terms, that means all of us can turn the thermostat down, or look towards secondary glazing windows, or put more insulation in the attic. All of us can recycle more, can waste less, can grow our own vegetables, walk more, invest in electric technology, or simply just explore the idea of sharing more with our neighbours. All of these things reduce collective carbon and environmental footprint, but most also share the idea of community and a common goal, and I think that’s just as Ofimportant.course,
I’mhave.really looking forward to a new wave of sustainability that goes right from the root, because as much as how we behave as people a ects the environment, the way our homes are built in the first place determines so many of our actions, and the extent we need to go to in order to a ect the same change.

It’s tasty, has been around for centuries and is a key ingredient in Britain’s favourite dish – chicken tikka masala –but it’s only recently that the full benefits of turmeric have come to the fore. This gorgeously golden spice gives curry its orange tinge and has long been used in India as a medicinal herb. This is all down to compounds found within the spice, the most important of which is curcumin, which has powerful antiinflammatory effects and is a very strong antioxidant. It can also be used as a lively, peppery essence in things like juices, foods and stocks. Dried turmeric, meanwhile, which is much less potent, adds colour and enhanced earthiness to preparations such as roasts, rice and scrambled eggs. Supplement that! Of course, turmeric doesn’t have to be used in its raw form of food preparation; it can also be taken as a supplement. Terminology Turmeric is a plant and it’s the roots of the plant that are used to make the spice that is used in cooking and herbal drinks. Curcumin is the naturally occurring compound within the plant’s roots that give it it’s bright yellow colour and is known as a carotenoid
From helping fight inflammation to preventing heart disease and cancer, turmeric may be the most effective nutritional supplement in existence.

Several studies suggest that curcumin leads to improvements in endothelial function, which helps regulate blood pressure, blood clotting and various other factors.
While studies in humans are still in very early stages, lab and animal studies have shown promising effects of curcumin in the fight against cancer, by interfering with several important molecular pathways involved in cancer development, growth and spread. While many of these studies are in their early stages, one thing is for sure: you no longer need to feel guilty about your weekly Indian takeaway.
BENEFITS OF TURMERIC Eases aches and pains A powerful anti-inflammatory, there is evidence to suggest a daily dose of turmeric can greatly benefit those suffering from joint problems and Thatarthritis.said, turmeric is not listed as an arthritis treatment by the NHS, and therefore is unlikely to be prescribed by your GP. Boosts moods By reducing inflammation in the brain, the curcumin element enhances the flow of neurotransmitters. Rids you of free radicals Curcumin has powerful antioxidant effects and fights those nasty cell-damaging atoms. 3. Wrap the pastry in kitchen parchment and let it rest in the fridge for 30 minutes. Set the oven at 190°C/gas mark 5. Slice off one-third of the dough and set aside. On a lightly floured board, roll out the larger piece of pastry and use it to line the tart tin. Push the dough well into the corners and trim the edges. Scatter the ground almonds over the base of the tart, then spoon in the marmalade and gently smooth the surface.

4. Roll out the reserved pastry into a disc roughly the size of the tart, then cut into 2cm wide strips. Brush lightly with a little beaten egg, then place the strips one at a time on to the surface of the tart in a lattice pattern. 5. Bake for 30 minutes until the pastry is pale biscuit-coloured and the marmalade is bubbling. Let the tart cool before easing from the tin and slicing.

Introduction
Method
1. Put the flour into the bowl of a food processor, add the butter in large pieces and process for a few seconds to the consistency of fine breadcrumbs. Add the sugar and the egg yolk and process until the mixture starts to come together to form a dough. 2. Next, pour in enough water – probably 1 or 2 tbsp – to produce a smooth, firm dough.
Ingredients (serves 4) For the pastry • 250g plain flour • 125g butter • 100g caster sugar • 2 egg yolks • 1-2 tbsp water • 1 egg, beaten for the glaze For the filling • 4 tbsp ground almonds • 500g orange marmalade You will also need a 20cm tart tin with a removable base. You can also do this by hand, rubbing the butter into the flour with your fingertips, then stirring in the sugar and eggs and a little water and bringing the dough into a ball by hand.
I think the beauty of a fruit tart is that it combines different textures and sensations with whatever you want to serve it with. Cream, ice cream, custard or even left by itself and washed down with a cup of strong tea, a tart is often as much about what accompanies it… although this one is particularly delicious. I’ve used marmalade for that extra spice, and because the pastry is deliberately sweetened to balance the citrus bitterness of the marmalade.

Top Tip Leave the tart to cool and the filling to fully set before attempting to cut into slices. 61Please mention Modern Magazines when contacting advertisers
