ABOUT ME I’m Lindsay CampbellCrafts, 35, a freelance marketing consultant, and I live with my husband, Nicholas, 35, an assistant school principal, and daughters Luella, three, and Lorea, one. OUR HOME A brand-new off-plan three bedroom semi in Addlestone, Surrey. WHEN WE BOUGHT IT Although we’d had some say over the kitchen and flooring, the house was very neutral and lacking in character. AND NOW We’ve added colour and personality with retro pieces and Americana, along with contemporary buys and original artwork, to make it feel like ours. T

he previous house we lived in was a 1960s Span house, designed by architect Eric Lyons,’ says Lindsay. ‘He had a particular vision of communal living and set his houses on small estates, with plenty of trees, in attractive areas. We were thrilled to live in one as they don’t come up often, and it worked well when our daughter Luella was little. We renovated it from top to bottom, but it was quite small, only 782 square metres in total. As soon as I became pregnant with Lorea, we could see it would be a tight fit, so we looked for something bigger, where we could spread out and zone the spaces.

Making plans The house that caught our eye was something we hadn’t really considered before: an off-plan new build on a small estate. It offered us a lot more space and versatility, with another bathroom, a separate playroom, a garage, a bigger garden and three good-sized bedrooms. So we jumped at it. We moved here in May 2018, before Lorea was born in the October. We were able to choose the kitchen, the bathrooms and the flooring, and selected a plain white kitchen, grey distressed flooring and white bathroom suites with wood-effect vanity units. We already had a lot of retro pieces of furniture and knew we could add to them gradually with more modern pieces.

Sorting the basics We thought a lot about the layout of the property and how it would work for us, and the open-plan feel of the downstairs was perfect. The kitchen is in the middle of the house, and we liked the idea of having two seating areas, one either side of it. There is a huge comfy contemporary grey linen sofa and television in one area where we all cosy up together. I chose a large black and white rug, and added

The other sitting area, which has a grown-up feel and where we like to have drinks with guests, has a retro look. Our G Plan suite by Hemingway Design, which we brought with us from the old house, sits alongside other special pieces, such as a Jessica Rabbit statue and the Coca Cola sign that we found in America and which we managed to bring back with us – and have never regretted it.

Attention to detail The vintage brown ceramic lamp bases didn’t have shades when I bought them, but I found a company online called Retrashade, which makes up authenticstyle shades, so now they look whole again. We decided to put the dining table and benches in the middle of the open-plan area close to the kitchen and looking out onto the garden.

Choosing a palette We knew we were going to be bring in more retro furniture and colourful

So we went for the soft neutral Chalky Downs 5 by Dulux throughout, adding the odd feature wall of wallpaper and using accessories to bring in splashes of colour here and there.

Window treatments

We don’t like fussy design, so curtains in the house were a no-no. We’ve gone for white Venetian blinds at every window instead to create a uniform feel. They’re really

versatile and allow us to let in as much or as little light as we want.

Bedroom decisions

Upstairs, our bedroom has a small en suite and plenty of wardrobe space. I have worked as a fashion stylist, and I’ve also run my own vintage clothing company, so I have a lot of clothes and space to store them was essential. A banana leaf wallpaper design creates a feature wall in the bedroom for some wow factor. In the girls’ bedrooms, we were able to keep Luella’s old cot for Lorea, which pleases me as I like

OPEN-PLAN LIVING TIPS Paint the walls with a light or soft-white shade throughout to create a neutral backdrop for your furniture and accessories. Use large pieces of furniture to help to zone the different areas within the space. For example, an open-shelving unit or the back or side of a sofa can act as a neat room divider. Maintain a flow by keeping the same flooring throughout. Lighter colours will create the illusion of even more space. If you do want to introduce a different type of flooring, the best place to switch styles is between the kitchen and dining area. Add mood lighting, such as table and floor lamps, or hang low pendant lights over a dining table to create a cosy atmosphere.

I spend a lot of time researching the pieces that we want, and have often got things much cheaper by waiting for specific deals or promotions,

or hunting on eBay for items that I thought I would never be able to afford.

We have a downstairs cloakroom – a huge relief when you have children, as you don’t have to rush upstairs the minute you get through the front door. We’ve added

Finishing touches

We love Ercol furniture, and we’ve built up quite a collection, buying from eBay or at antiques fairs. Our collection of original artwork – with slogans or simple designs, such as a piece of fruit – was the last thing to go up. We also have a great Elvis print that we’re looking after for a friend. I’ve been documenting the transformation on my Instagram account @loveinahome, and now we’ve got the house just as we want it, we absolutely love it!

HANG A COTTON RUG

Measure the width of the rug, add 4cm and use this measurement to cut a length of wooden dowel (at least 23mm in diameter) to size. Lay the rug flat, with the back facing up, and place the dowel just below the top edge. Fold the top edge over the dowel and sew in place using an upholstery needle and heavy cotton thread. Go over it a couple of times to make sure it is secure. Tie a length of heavy twine around each protruding end of the dowel, then hang at the centre of the twine from a nail or hook on the wall.

ABOUT ME I’m Kate Lovejoy, an interior designer. I live with my children, Nancy, 16 and James, 14. OUR HOME A four-bedroom detached house built in the 1970s in Maidenhead, Berkshire. We moved here in July 2004. WHEN WE MOVED IN It was dull, uninspiring and functional, but that was fine by me. At that point, it was never meant to be a forever house. AND NOW After two fairly radical extension projects, the house has matured with the family. It suits us down to the ground. STYLE TIP Don’t forget your ceilings: either paint them the same colour as the walls to create the illusion that the ceilings are higher. Or use a striking wallpaper on the ceiling to create a real statement.

ROOM TO GROW’ Using clever, budget-conscious upcycling tricks and a fresh glamorous style, Kate breathed colourful new life into her 1970s home

T

his house was meant to be a stop gap,’ says Kate Lovejoy. ‘Our daughter Nancy was coming up to one and I was pregnant with James, when my soon-to-be-husband Christian and I began to think about moving from our London flat to a larger family home. The idea was to find a modest house with a garden, near the city. We’d originally planned to stay there for about four years and then move on to something more substantial.

Imagining the future I soon realised that the areas I liked were pretty expensive so we’d be looking at small, modern homes. And this house, situated on an estate near Maidenhead, struck a chord with me. As a child, I’d grown up in a gorgeous old Victorian schoolhouse with half an acre of garden, but I spent all my time roller-skating with my friends on the new estate on the other side of the village. I remember viewing this house, looking out of the kitchen window and imagining our own children playing with the kids next door. So even though this was meant to be a short-term plan, I was already imagining them growing up here. But I certainly didn’t think, “wow, this is my dream home”.

Plans in place The house came with planning permission to build an extension at the front of the property and this was another plus point. As Christian and I intended to do the house up and hopefully sell it on at a profit, the fact that it didn’t have much in the way of distinguishing features wasn’t an issue for us. The rooms were light and a good size, but they hadn’t been redecorated since the 1980s. The kitchen had wall-to-wall floral tiles and there

was even the quintessential avocado bathroom suite. The property was bland, tired and felt like a project, but it wasn’t going to push us financially and anyway, we didn’t intend to live here for long.

Change of heart

The extension at the front proved to be the turning point. The kitchen is south facing and always felt light and airy; extending it would capitalise on this, while giving us a larger kitchen and dining area, plus a bigger bedroom upstairs. We could also expand the hallway, creating extra storage space and turn the downstairs cloakroom into a wet room. It all looked great on paper but completing the work took far longer than we expected. We went away on holiday, thinking the worst would be over by the time we returned but it wasn’t the case. In the end we had to get a new builder, move in with friends over the road and go over in the evenings to get the work finished. We’re very hands on when it comes to decorating, but we never thought it would take seven months to complete the build. Despite this setback, once the extension was finished I began to see the house in a new light. Before

we had the children, I’d worked in film and theatre set design. Having just completed a diploma in interior design at KLC School of Design, my newly renovated home became the perfect blank canvas for me to experiment on.

Capitalising on space The extension effectively gave the ground floor a more open-plan, Scandinavian feel, enhanced by the wonderful discovery of the original parquet flooring beneath old fitted carpets. To further open up the space we removed some of the downstairs interior doors, and I scoured eBay and junk shops for things that would stamp personality on our home. I’ve always loved making my own curtains, cushions and upholstering bargain buys; I love to personalise my home while keeping the costs down.

Versatile living Then, ten years later, with my interior design business taking off and single parenthood on the horizon, it seemed sensible to embark on another extension, this time utilising the garage and side return to create my new studio. I also

Measure out the colour block area that you want to create and carefully apply decorator’s tape around the edges. Paint within the tape and repeat with a second coat, if needed. Once the paint is fully dry, remove the tape. Paint your shelves and brackets in the same shade. When dry, fix to the wall inside your colour block. Cut shapes out of scrap wallpaper – you could cut around a flower design, or go for simple shapes such as triangles or hexagons. Set out the shapes around the edge of your block, using Blu-Tack or masking tape to get your arrangement right. Apply wallpaper adhesive generously to the back of the paper shapes, then stick to the wall, pressing into place. Leave to dry.

CREATIVE OUTLET’ On the hunt for a project, Lara took a chance on a run-down Victorian terrace to create her one-of-a-kind home

A

fter renovating our previous home and learning lots of skills and lessons along the way, my husband Stuart and I wanted another challenge,’ says Lara. ‘We came across this property – an unloved, Victorian end-of-terrace in really sad shape – and, in spite of its condition, we could see endless potential. The mortgage company, however, didn’t have quite the same vision that we did. It was a real battle securing the money to proceed with the house, as it had so many structural issues to sort out. It needed support work, a new roof and a damp proof course. Having, eventually, completed the external work and satisfied the mortgage company that the house wouldn’t likely be falling to the ground anytime soon, we were finally able to begin updating the interior.

Every inch of the interior needed attention. I remember a friend popping by on moving day, and being stunned by the amount of work we had to do. Honestly, I think we were shocked too – the task seemed even bigger, and more daunting than it had before. It was dark and gloomy throughout, with an unsightly mix of orange, yellow and dark wood all over the place. There were dark green and blue carpets in every room, and net curtains at every window. It was a 1970s time-warp with ’90s accents thrown in for good measure. All the original features had either been covered up or removed altogether and, most unusually, there was a large shower cubicle in the main bedroom. Somewhere along the line it had lost its identity, but we had big ideas to restore it to its former glory.

‘DON’T FALL FOR “FASHIONABLE” INTERIOR TRENDS. CHOOSE PIECES YOU LOVE AND YOUR HOME WILL ALWAYS MAKE YOU HAPPY’ to begin with, we didn’t have a generous budget to play with. When it came to renovating the interior, we took on many of the jobs ourselves, only hiring professionals for tasks we didn’t have the skill set for (and couldn’t easily learn), such as plumbing, plastering and electrics. This meant that Stuart and I spent hours stripping multiple layers of paper and paint off walls and ceilings (the toughest and most boring job, in my book), chipping off old tiles and plaster to expose brick, and sanding ancient floorboards into shape. We did, however, uncover an old open fireplace in the living room with a beautiful, original surround. We also learnt new skills, some of which (the gilding in particular) have become little side hustle businesses.

Ditching the dark

Our top priorities when renovating were to brighten the house and rid it of its

gloomy nature; restore, where possible, and replace original features to give the place its character back, and of course make it liveable for us. Tearing down the wall between the kitchen and diner to create one spacious room, which is now double the size the kitchen was when we moved in, helped us on our way to ticking those boxes. We also removed the dark, drab furnishings which were casting a shadow over the entire property, making do with barely functional living conditions (including a two-ring, plug-in hob to cook on, and the aforementioned main bedroom shower) for the six or so months it took to turn the core rooms around, but it was well worth the discomfort. We lightened rooms by incorporating pastel hues into our schemes and using reflective surfaces, without compromising on or sacrificing the dark decor I love. We fitted coving, skirting and ceiling roses to restore its

‘THERE HAVE BEEN MORE CHALLENGES THAN I COULD COUNT, BUT WITH SPIRIT AND DETERMINATION, WE ALWAYS FOUND A WAY THROUGH’ Victorian past, and when we couldn t source an item – doors being a great example, as standard measurements didn’t fit our Victorian doorways – we’d find a solution by creating something ourselves. For example, on the dining room door (which looked very plain for a period property), we added panelling to age it a little and give it some character.

Second-hand solutions

Our modest budget meant we had to think creatively when it came to decorating and styling. Often we couldn’t afford the exact furnishings or finishes we really wanted, so we had to think of alternative options. The majority of our furniture is second-hand, purchased on eBay, or from car boot and garage sales. I’ve scored many a bargain shopping this way, and have created a one-of-akind home with tons of stories to tell through its interior. I find much of my decor inspiration in magazines and by visiting historical

Decide what height you’d like the panels to reach – halfway, three quarters or floor to ceiling. Create panels by using MDF strips, which can be cut to size at a DIY store, with the depth no greater than your skirting board (either remove your skirting, or sit the MDF on top). Use these strips to create your chosen panel shape – you can also adjust the panels to go around features like windows. Secure the boards to the wall with strong glue and panel pins. Ensure there are no pipes or electrics behind when pinning. Finish the top panel edge with wooden beading, then paint the MDF and wall in the same colour to look like panelling.

Creative satisfaction

It has taken a fair while to transform this place into the home we wanted, but I couldn’t be more proud of the outcome, and all that Stuart and I achieved to make it happen. My family and friends love it, although I get the occasional funny look when I divulge that I’m about to do something unusual, such as put a tree in the middle of the dining room! They think I’m crazy for decorating and painting over and over again. There aren’t any major upheavals on the cards just yet, however I have a few small updates on my list of things to do. What can I say? My home is my creative outlet, my passion.’

Using a paintbrush, apply metal leaf adhesive to your chosen surface (we suggest starting with something flat and smooth if you’re new to the game) in the areas you wish to gild. Leave the adhesive to get tacky, then gently apply the gold leaf sheets (you may wish to use tweezers to make it easier). Once finished, use a gilding brush to buff the gilding in small, gentle circular motions to remove excess gold leaf. You can collect and store what’s left for future projects.

By stealing space from the side return, Philippa has opened up and transformed this once dark and dated galley kitchen

W

hen we first viewed the house it was like walking into a time warp,’ says Philippa. ‘It had last been sold in 1929 and all the rooms looked like they hadn’t been touched since then, particularly the kitchen, with its old fashioned scullery, Belfast sink and cast iron stove built into the chimney breast. We were thrilled to discover such a unique find and moved into a caravan on my parents’ land while it was being renovated. The old kitchen consisted of a series of dark rooms that looked out onto a side return. There was a stench of mould, the plaster was falling off the walls and it was an unusable space. The plan was to create a large open-plan kitchen with space for a seating area looking out over the garden. We started by gutting the whole interior and removing the old chimney breast to turn the separate rooms into one big space. Sadly, the old cast iron stove literally disintegrated as we attempted to move it.

Our builders installed support beams and opened up the side return completely to create space for a floor-to-ceiling glazed window. We had considered a full side return extension, but went for the large pane of glass that extended the area slightly, as it didn’t require planning permission and gave us extra space. While the renovation work was going on, we spent time considering the best layout for the new long, narrow kitchen space. We wanted to avoid a galley-style layout which can feel a bit ‘corridor’-like and we hoped that we might be able to include an island, although quite a few kitchen companies we approached said we didn’t have the space. We found DIY Kitchens online and they were the first company who said that we actually did

have the space. The glazed extension gave us an extra 700mm, which was just enough for us to have the island we had always wanted.

Styling it out

When it came to kitchen cabinets, we didn’t want to go too traditional and we also had to be mindful of our budget. We went for a classic Shaker style, initially in a soft sage green, but we then changed our minds, choosing dark blue instead to give a more dramatic look. The white quartz worktops provide a contrast to the blue. We did look at cheaper alternatives, but you touch surfaces every day so it was worth the investment. We saved thousands by sourcing all our appliances during Black Friday or January sales when manufacturers offer deals and made our budget go further by buying appliances over a period of time and storing them until they were needed. We also fitted the kitchen ourselves to cut costs. With work complete, we’re proud of what we’ve achieved. We were a little scared we might lose the original charm when we’d renovated the kitchen, but we’ve created a space that’s sympathetic to the house. Plus, it includes the island and a cosy seating area where we can relax and enjoy the garden views.’

Ambient lighting should be your main source along with the kitchen’s natural light, and can be a mix of recessed ceiling lights and overhead pendants. For task-orientated islands used for food preparation or cooking, try a mix of recessed downlighters and pendants focused on work areas. If it’s an island used as a breakfast bar, choose non-glare pendants positioned so they don’t block the eye line. Accentuate favourite elements of your kitchen with wellpositioned lighting, such as in-cabinet lighting or plinth and under-cabinet strips.

SIDE-RETURN EXTENSION Love Philippa’s side-return extension, but unsure about planning permission? Here’s what you need to know

Do I need planning permission? Since permitted development (PD) allows a single-storey structure up to 4m high, with a width of up to half the original house, many side-return extensions won’t require planning permission. However, if the extension is within 2m of the boundary, the eaves height will need to be under 3m. Even if PD does apply, it’s sensible to apply for a Lawful Development Certificate.

planning permission. You should also check if your local authority has made an article 4 direction, which limits the scope of permitted development in specific areas.

Can it be two storeys? You’ll normally need planning permission for this. Most local authorities will want to maintain a gap of at least 1m between properties at first-floor level, and your design shouldn’t impact negatively on your neighbour in terms of light and overshadowing. If side space is tight and too close to your neighbour, a wrap around single-storey side and rear extension may be a better option.

Can I build up to my neighbour’s wall? If you’re creating a new shared boundary wall or excavating within 3m of your neighbour’s house, you’ll need to send them a Party Wall Notice. efore I moved from Nottingham to Plymouth, I’d already found a house in a lovely area but ended up in a long chain and had to pull out,’ says Leanne. ‘I knew I wanted a period property and this house is on the same street as the one I’d made an offer on, which was a happy coincidence.

As soon as I moved in I ripped everything out and had the whole house rewired and replastered. This took six months and luckily I was able to stay with friends while this was going on. However, I do wish I hadn’t done everything at once, because I rushed too often into making decisions and I feel like I’m still patching up bits and pieces now.

Rejigging the space I was originally going to leave the bathroom as it was, as I couldn’t afford to tackle it. The room was quite plain; there was an electric shower and a bath, plus the loo and basin. But because I was getting a new boiler, which would free up the huge cupboard space next to the bathroom, I thought why not rip out the cupboard and the wall and make the room bigger? My plasterer agreed it was a good idea, which gave me the confidence to go ahead. The new layout meant I was able to have the basin against the wall rather than under the window, so I could hang a cupboard with a mirror above it. To save money, I ordered things online, but I did end up buying three loos and two basins before I found the right ones!

Decorating style And I was really undecided when it came to the decor. I would have loved marble flooring, but the cost of the tiles themselves, plus the fitting, was far too expensive. Then one day I saw the

Gaining skills I reached a point where I’d had people working on the house for a long while, and so many things had gone wrong that I became a bit despondent. Truth be told, when I moved in I rushed to hire tradespeople that I probably wasn’t entirely comfortable with. Perhaps I should have waited and then maybe a more experienced plumber wouldn’t have put the pipes for the radiator and bath in the wrong place! So I took on some simpler jobs myself including painting the furniture pink, starting with the cupboard. I liked how it turned out and got more confident with my skills. The ladder shelf and linen chest followed. Next on the list is painting the skirting boards grey.

Happy coincidence When I ordered it, I thought the loo seat was a darker colour to link with the black flooring pattern, but it’s a much lighter grey and actually matches the radiator. This was a happy accident as I ordered the wrong radiator! I decided to paint the inside of the door the same colour and they all go together. Now when people come to stay they’ll say: “Oh, we’re just going to take a selfie in your bathroom” so I guess it’s been a success!’

CHOOSE LAMINATE FLOORING Laminate is practical and good value with a wealth of designs that look like wood, stone or tiled floors. Cheaper, flat-edged laminates give an impressively smooth finish. Groove-edged laminates cost more but look closer to the real thing, and may be textured to mimic stone or wood grain. Prices vary from £10sq m to £40sq m; a pricier laminate will be thicker. Check if it has a warranty. Look for high durability ratings for busy rooms such as halls and kitchens. For a bathroom, choose a product with a waterproof core. Make the bath the star of your scheme by choosing a stand-out style

Built-in or free-standing – what’s the difference? Baths described as built-in are fitted against the wall (usually in a corner) with side and end panels added to hide pipework; they’re neat and easy to clean. Freestanding baths can be positioned in the centre of the room to create a focal point. Plus they come in a wider range of styles, shapes and sizes.

Do I need a large room? If space is tight, a built-in model is more practical, as freestanding baths are larger and designed to have space all around to set off their statement shape. But compact free-standing tubs are available (measuring less than the standard

What about modern designs? Contemporary baths tend to sit flush to the floor; many are sleek, curvaceous and oval shaped. They can be single-ended (with taps at one end, so great for small spaces); double-ended (with taps in the centre, best in bigger rooms); or slipper baths (sloped at one or both ends). Most modern baths are made using durable twin-skinned acrylic which stays warmer for longer and is cheaper than steel or composite baths.

How about a roll-top? Classic roll-tops are ideal in a more traditional setting. Usually twin-skinned acrylic or cast iron, they are raised off the floor on decorative ball or claw feet, or elevated on a plinth. Roll-tops also come in single and double-ended versions or deeper slipper and bateau bath options.

Which taps to choose? It depends on bath position and available space. Floor-standing taps complement a statement tub, although installation may require lifting the floor. For deck-mounted taps you need a bath with pre-drilled holes. Wall-mounted fillers are an option for baths close to a wall.

Preheat the oven to 140C/ Gas 1. Line a baking tray with greaseproof paper and mark a 30cm circle on it. In a large bowl, whisk the egg whites until stiff. Add the sugar 1tbsp at a time, whisking well after each addition. Once the mixture is thick and glossy, fold in the cornflour

and vinegar. Spoon the mixture on to the prepared baking tray and spread to fill the circle. Bake for 1hr, then turn off the oven and leave the meringue inside to cool. Whip the cream with the icing sugar until thick. Spread over the top of the meringue. Decorate with the chopped fruit and pomegranate.

PREPARE THE FENCE Give your fence a few coats of fresh garden paint in a light shade, such as Cuprinol Dusky Gem, and allow to dry completely. Then screw four wooden pegs into your fence to create a square the same size as your sheet. Add a further two pegs either side for hanging lanterns. CREATE A SCREEN Take a clean white sheet, or any white fabric will do, then punch metal eyelets into each corner. Use string to tie the corners of the sheet to the wooden pegs. MAKE IT COSY Lay out a selection of blankets and throws on the ground, along with comfy garden seating. Add cushions and more blankets if it gets chilly. ADD LIGHTING Hang garden lanterns from the pegs either side of the screen and fill with candles. For added romance, hang strings of festoon lights overhead. Fill a table with plenty of drinks, snacks and more lanterns. START THE FUN Set up a portable projector on the opposite side of the garden, so that it casts your favourite movies onto the sheet. Turn up the volume, although remember not to disturb the neighbours if they aren’t invited. Get comfy and enjoy!

Fry the onions in oil for 10 mins until lightly browned. Grill the hot dogs for 10 mins, turning often, until evenly golden. Combine the cabbage, carrots, salad cream and cider vinegar for the coleslaw. Mix together the mayonnaise and mustard. Spoon the coleslaw into the pitta, top with the hotdogs and onions, and serve with the mustard mayonnaise and salad.

PILCHARD FISH CAKES TAKES 30 MINS SERVES 4 450g potatoes, peeled and cut 400g can pilchards into chunks in tomato sauce, reserve sauce for Zest and juice of one the dip lemon, plus lemon wedges to serve ½ bunch parsley, chopped 1 1 bunch chives, finely chopped small onion, finely chopped 1 egg, beaten 60g panko Oil, for frying breadcrumbs 45g FOR THE DIPPING SAUCE 45g mayonnaise crème fraiche

Steam potatoes for 15 mins or until cooked through. In a large bowl, roughly mash with a fork. Drain the pilchards, reserving 3tbsp of the tomato sauce for the dipping sauce, then mix the fish into mashed potato with lemon zest and juice, herbs and onion, and stir until well combined. Form mixture into 4 fishcakes. Dip in beaten egg, then in breadcrumbs, to coat. Heat oil in a frying pan and fry the fishcakes for 3-4 mins on either side, until golden. To make the sauce, combine all ingredients. Serve with the hot fish cakes and the lemon wedges.

TAKES 15 MINS SERVES 4 400g penne pasta 150g frozen 150g broad beans 100g baby peas Zest and juice of 1 lemon leaf spinach 2tbsp olive oil Handful of mint 200g feta, crumbed leaves, picked

Bring a pan of salted water to the boil and add the pasta. Cook until just tender, about 10 mins, then add the peas and broad beans and boil for 4 mins more. Put the spinach in a colander and pour over the hot pasta and pasta water. Return the pasta, peas, beans and spinach to the pan and stir through the lemon juice, olive oil, three-quarters of the mint leaves and the feta. Top with the lemon zest and extra mint leaves to serve.

350g baby new potatoes, halved 2tbsp black olive tapenade 4 focaccia rolls 4tbsp fresh pesto 30g fresh rocket 2tbsp capers, roughly chopped 2 large tomatoes, sliced 185g tin tuna chunks in olive oil, drained, but reserve a little of the oil 3 hard-boiled eggs, sliced

Bring a large pan of water to the boil, add the potatoes and cook until tender. Drain, then mix with the tapenade and set aside. Halve the rolls and place the bottoms on a breadboard, cut-side up, and spread with half the pesto. Sprinkle over the rocket, capers, tomatoes and tuna. Drizzle with a little of the reserved tuna oil, then top with slices of egg. Spread the underside of the focaccia tops with pesto and place on top of the filling, securing each one with a cocktail stick. Serve with potatoes alongside.

Preheat the oven to 180C/Gas 4. In a shallow gratin or casserole dish, heat the sunflower oil. Season the chicken thighs with salt and pepper and brown on both sides in the casserole. Remove the chicken from the casserole and set aside, add the onions to the pan and fry gently for a couple of minutes to colour slightly. Place the chicken back in the pan and add the uncooked basmati rice, 4tbsp water and the biryani sauce. Bring to a simmer, then cover and cook in the middle of the oven for 35 to 40 mins, until the rice is cooked and the sauce is bubbling and aromatic. Sprinkle coriander over the top and serve with poppadoms.

SPICED LAMB WRAP TAKES 15 MINS SERVES 4 4 x 100g pieces lamb neck 2tbsp olive oil 100g fillet 4tbsp baby spinach leaves 1 small pomegranate seeds 4 bunch of mint, leaves only 2tsp sumac Juice flatbreads of 1 lemon 1 garlic clove, 200g peeled and crushed tub tzatziki

Trim any excess fat from the lamb and season. Brush a griddle pan with 1tbsp oil and heat to high. Add the lamb and cook for 5 mins each side until brown on the outside and pink in the middle. Transfer to a plate, cover with foil and leave to rest for 5 mins. While the lamb is resting combine the spinach,

pomegranate seeds and mint. Warm the flatbreads in the microwave for 1 min. Mix the sumac, 1tbsp olive oil, lemon juice and garlic. Thickly slice the lamb and toss through the sumac mixture before serving on the flatbreads with the salad and tzatziki on the side.

GOAT’S CHEESE, RED PEPPER TART TAKES 35 MINS SERVES 6 320g pack ready-rolled puff pastry 227g tin tomatoes 2 garlic cloves, crushed 1 red pepper, deseeded and sliced 150g mild soft goat’s cheese 1 courgette, grated 12 cherry tomatoes, halved Small bunch of basil 2tbsp olive oil

Preheat oven to 200C/Gas 6. Line a large baking tray with baking parchment and unroll the pastry onto this. Score a 1cm border and prick several times with a fork in the centre. Bake for 15 mins until the pastry is a pale golden colour. Spoon the tin tomatoes over the pastry with the garlic.

Arrange the peppers, goat’s cheese, courgettes and cherry tomatoes over the top. Finish with several basil leaves sprinkled over. Season generously and drizzle with the olive oil. Bake for 10-15 mins, until the cheese is just melted and the pastry is golden brown. Top with more basil leaves to serve.

GLAZED CHICKEN STIR-FRY TAKES 15 MINS SERVES 4 4tbsp dark soy sauce 4tbsp runny honey 2tbsp sherry vinegar 400g mini chicken fillets 1tbsp sesame oil 400g pack stir-fry vegetables 2x 300g packs cooked Thai jasmine rice 1tbsp thickening granules

Pour the soy sauce, honey and sherry vinegar into a bowl. Add the chicken fillets and stir to coat. Heat the oil in a wok or large frying pan and add the chicken fillets (reserving some of the marinade). Stir-fry the chicken for 5 mins until cooked through. Add the vegetables to the pan and stir-fry for 2 mins. Meanwhile, microwave the rice according to pack instructions. Pour the reserved soy sauce mixture over the chicken and vegetables with the thickening granules and stir-fry for 1-2 mins until the sauce is thickened and everything is well coated in the sauce and cooked through. Serve the stir-fried chicken and vegetables on top of the warm rice.

Preheat the oven to 220C/Gas 7. Mix the flour, polenta, baking powder and 3tbsp of the sugar. Rub in the butter until it forms fine crumbs. Stir in the beaten egg and cream, and mix it to form a dough. Roll out to 2cm thick, then stamp out circles with a cutter. Repeat until you have 10-12 circles. Put the dough circles on an oiled baking tray. Brush with egg white, top with the remaining sugar and bake for 10 mins until golden. Cool on a wire rack. Whip the cream until it forms soft peaks. Halve the shortcakes, spread jam on the base, then top with strawberries, cream and the lid.
