‘We were very lucky to inherit modern kitchen that didn’t need much money spent on it. It was a bit unexciting — just plain white units and pale grey walls but that meant it was easy to refresh and update. was keen to paint the walls dark and used Farrow & Ball’s Down Pipe, which think has worked well, as it’s bold and makes the units stand out. My story... We loved our two-bedroom maisonette in north London, but by the time our second little boy, Sonny, was born we were running out of space. My husband Rich and agreed we wanted a family house with period details and plenty of character, and we knew we'd have to move further out for an affordable property that we loved. With young children, a big renovation project wasn't in an option, so this house was perfect. The interior was — good shape the original features such as the ceiling mouldings and fireplaces were intact, and loved the beautiful old stained glass in the French doors. Some things, like the neutral bathroom and dark laminate flooring weren't to my taste, but overall it was a blank canvas where we could make our own mark. Over the last five years we've decorated right through, adding dramatic colour, pops of pattern and extra furniture as and when we've needed it. I've inherited an eclectic style from my parents, who were both artists, and love combining old and new. Rich and have various pieces of art that we treasure, and other than that, just go for things like, without worrying about any particular colour palette or theme. I'm also very much a make-do-and-mend person, so I'll always try to |

‘Although the dining zone is part of the open-plan area, wanted it to feel distinct from the kitchen and snug. The off-white walls and tall cabinets in the alcoves were already here, and like the airy, bright feel, so rather than extending the dark grey, we've kept the same light palette. The room gets a lot of family use, but there’s nothing too precious here. furniture Upcycling stretches your budget, gets you something unique and saves usable items @ Second-hand shops, house clearances and car boot sales are great places to source furniture. Auctions are another option and you don't have to be there to bid. If you do attend the sale, be firm and stick to your budget. @ Repurpose salvaged furniture. Remove cabinet doors to create open storage or lift drawers out to leave shelves. Make a coffee table by cutting down or replacing the legs ona full-height table.

@ Painting is the most obvious tool for upcycling old furniture, and it’s also quick and effective. Specialist products such as Annie Sloan's Chalk Paint are easy to use, and work on many different surfaces. Apply a coloured wax afterwards for a characterful, aged effect. Also look at adding or upgrading fixings such as handles, hinges and legs, all of which will alter the piece’s look. @ Découpage is a brilliant way to introduce decorative patterns. Gift wrap, paper napkins, wallpaper or images cut from magazines are all suitable for flat surfaces such as a box or tabletop. Once in position, seal
your paper pieces with a découpage or PVA glue, followed by a few layers of varnish.

We simplified the heavy, oldfashioned pelmet, which was dominating the room and blocking light, and now dont really notice them at all’ |

actually one of my favourites, because it has so much character. There's a step down into it and it’s got a quaint, little fireplace and a gorgeous window. It was very plain before, with the same dark-brown floor as the sitting room, so we've restored the original boards, which makes it feel much brighter. To create a focal point and add colour, hung a big Frida Kahlo poster, which will be easy to change when Bowe starts getting his own decorating ideas. upcycled the fitted wardrobe myself. What I learned... @ Charity shops are a useful place to look for everyday crockery and glassware. often find smaller accessories there too, such as vases, planters, picture frames and mirrors, and it’s guilt-free shopping as you don’t pay much. |
@ Original art doesn’t need to be expensive. Look in antique shops and art fairs for well-priced items. Sites like Etsy and Artfinder offer affordable, original works, or look online for artists willing to work to commission within a budget. @ You can pep up a room quickly simply by moving things. We sometimes rearrange furniture, change the artwork around or swap rugs, plants, mirrors and bits and pieces from one room to another. Add a new lampshade or a couple of cushions for a budget-friendly refresh.

beading string and tie a 6mm bead to one end. Thread another two 6mm beads, followed by three of each size of bead: 8mm, 10mm, 12mm, 14mm, 16mm and 20mm, to make one strand. Repeat this step to make 50 strands of beads. Make 15 more strands as before, but this time without the 20mm beads. Begin attaching the longer strands of beads around the top of the wire basket, triple knotting to secure each tightly in place. Attach the shorter lengths around the bottom ring of the basket. Carefully trim any excess string with scissors.

Snug â&#x20AC;&#x2DC;Before we moved in, knew wanted to use the snug as the TV room, and was desperate to create a separate lounge that felt special. also wanted a grown-up room where we could sit, chat and relax, with lots of favourite books and pretty things around us. This room was quite tricky to paint as it has original brickwork, parquet flooring and low-beamed ceilings. Originally, went for an emerald green in here and it was a huge mistake! It's now Setting Plaster by Farrow & Ball, which I've used before in our previous house, love how calm it feelsâ&#x20AC;&#x2122; |

My story... When we first viewed this house, we instantly said no. It felt like it needed an overwhelming amount of work and we were worried we didn't have the budget to make the changes. The garden is over an acre, but it was waist-high with weeds and felt so daunting. The kitchen was very dated and the bathroom was from the 1980s. We were worried we'd be taking on too much as it was a big project. But was also paying for office space for my business at the time and when we went away and did the sums, we realised that this move would allow me to run my business from home, which made it possible financially. So, we returned to the house and put our highest offer — in, which was despite being less than the asking price |

thankfully accepted. From then on, it was a whirl of hands-on renovating. Using Pinterest, we planned the rooms and worked out what we needed. Luckily, Paul is very handy, so we could do a lot of it ourselves, including painting, plastering and tiling. Doing it on such a tight budget has been an amazing learning curve. We've managed to redecorate room by room and have created a beautiful, calm space that works for our grown-up family and my work needs. We've only been here 18 months and I'm definitely still in the honeymoon period. love every room, but all for very different reasons. Essentially, love the potential this house has given us as a family and as a business. |

Dining room ‘We wanted the dining room to be a light, bright space where we could share extended family meals. also use this space for our Southwood Hub communal meet-ups, so the room is a sacial space that can hold up to 20 people. The wood-burning stove was already here and is a lovely little feature, making the room feel cosy and snug. You will need * Cane webbing * Old lampshade * Sandpaper * Glue gun * Scissors * Natural raffia ribbon der
First, measure the diameter and height of the old lampshade and cut a piece of cane webbing to
size, allowing for a small amount of overlap.
Place some weighted objects on the cane to flatten it for couple of hours. Meanwhile, carefully strip the fabric from the old lampshade and remove any hardened glue with a piece of sandpaper. Start sticking the webbing to the first lampshade ring with the glue gun, working around the ring a few centimetres at a time. Repeat at the other end with the second ring. Once the glue has dried and hardened, carefully trim the excess cane at the top and bottom of the shade with scissors. Weave the natural raffla ribbon around the top and bottom of the shade to create a neat finish.

‘Originally the kitchen was used as the main living §pace with magnolia walls and old beige carpet. It was a very long, empty room that lacked heart or soul says Shrez.When we plastered the wall, it was one the turning points in our build. It felt of like the end was near and fell in love with the texture, colour and feeling that fresh plaster gave me. It didn't feel right to cover it with paint, so we left it unpainted as part of our design and saved money on paint as a result! ‘The couple installed a large window at the rear of the property to allow daylight to flood the room. They bought IKEA base units, but got their unusual door fronts from Plykea. ‘We kept our original floorboards, but replaced any that were damaged with ones from upstairs; explains Shrez.

‘We replaced the old uPVC windows with new sash-style ones. They block out sound from the street and keep the house warm in the winter months, says Shrez. On the wall, the couple hung a row of IKEA Ivar units, which they painted in Nancy's Blushes by Farrow & Ball. handy made-to-measure window seat decorated with cushions by Bluebellgray and John Lewis & Partners makes the perfect spot to watch the world go by. My story... After four years of living in a 1.5-bed flat, we wanted a bigger home. We couldn't afford to stay in Woolwich, so
looked nearby at Plumstead, which was much more affordable. We fell in love with the area as it was an
altogether greener part of south-east London with lots of great spots for dog walks. The house was in need ofa complete renovation and the layout of the rooms was crazy! You had to walk into the garden to access the kitchen and the main bathroom led off from a bedroom. the original We kept footprint of the house, but changed the layout. In May 2018, our builders stripped the entire house back to bare brick. The kitchen was ripped out and walls were put in to divide up two bedrooms to make way for two new bathrooms. We also swapped the living room and kitchen to make better use ofthe space. Our new home was a building site, so we continued to live in our flat up the road. At 6am every morning, Id visit the site to answer the builders’ questions and drop by again in the evenings to check on the work. By October 2018, we were finally able to move in. The downstairs was finished, but we still had to do the upstairs rooms. We taught ourselves DIY skills by watching YouTube videos and learnt how to put up coving and fit skirting. Weekends and evenings were spent up ladders painting. Although we've made some ofthe bedrooms smaller, our home works for us now. It’s such an incredible feeling to have built somewhere like this that we enjoy living in so much. 40 yourhomestyle.uk

What I learned... ® Think about how your family will use the space and what sorts of layouts and colours will make you happy. Don't choose the things that other people will like you'll be miserable and you'll end up changing it to what you wanted in the first place. ® If you have an idea and you know how to make it work, persevere with it. Just because it hasn’t been done before, or it might not be easy, doesn’t make it impossible. Work through it with your builders, create detailed drawings and share inspo images to show them how it could work. ® It’s easy to get disheartened by looking at all the things left to do. It's more rewarding and motivating to look back at how much you've done.

We bought a beautiful but tired three-storey, double-fronted Victorian semi in 2018. Originally this room was a creepy attic space with a small roof window and the electrics running up the woodchip walls. We knew there was unused space in the roof eaves that we could use to extend the room and add storage. So the wall came down, we added another roof window and got plastering!

Phil and had just recently got engaged and were I
planning to move back to our hometown of Leeds when we saw this house. It was within walking distance from parks and the city centre, and we got a good feeling about it from the moment we walked in. We loved that it had potential and we knew we could put our own signature on it. Id definitely recommend going with your gut feeling when looking for your future home. We had seen so many places that just didn't feel right and I'm glad we didn't rush into anything.
The first thing we did was to change the magnolia walls and carpets to a more muted palette, and we also reconfigured the loft room to create a larger en suite bathroom and master bedroom. We left the kitchen area we wanted to live in the house for a while before

making the big changes to make sure we got them right. We spent six months drawing up plans and a further year getting the permissions that we needed. The building work to create the new open-plan kitchen-diner, utility area and garages took another six months. We mostly went for neutral colours, but then there are some really strong shades throughout the scheme too. For inspiration, looked to Pinterest and magazines, |
and also developed a bit of an addiction to Instagram! Through doing this project I've definitely developed a love for interiors and, left to my own devices and with an unlimited budget, I'd probably start refreshing all the rooms. We do love the house and are so happy here, but in the future our dream would be to buy a piece of land and build from scratch. Style up your sofa with a whole cloud family made up of different-sized cushions in a mix of pastel shades.
You will need * Cloud template * Half a metre of pastel pink fabric * Pencil * Scissors * Tape * Black wool * Embroidery needle * Pink pencil * Pins * Needle and thread * Stuffing Go to yourhomestyle.uk and enlarge the cloud template then and print it on two pieces of A4 paper. Stick them together with tape and cut it out. Fold the length of fabric in half and place the cloud template on top. Draw around the cloud and cut out two clouds. Take one of the cloud fabric pieces and draw two eyes with eyelashes and a small mouth in the middle with a pencil. Thread the embroidery needle with black wool and stitch the eyes and mouth. Lightly draw two circles for cheeks with a pink pencil and colour them in. Pin the cloud pieces together with the embroidered face inside and then sew around the edge, leaving a small opening at the bottom. Turn the cloud cushion cover right-side out and fill with stuffing. Neatly stitch up the opening of the cushion with a needle and thread.

A MOODBOARD ?
Moodboards take your ideas and make them tangible. You might have an inkling that blue velvet will look great with mustard walls, but seeing fabric samples and paint swatches together on a moodboard will let you know for sure. It‘ll also help you to share your vision with the other people in your home and the contractors you need to bring your project to life. Collecting samples for your moodboard is great way ofdiscovering what's out there. You might find a paint supplier you didn't know about, which might lead you to a new fabric you love. When you go down these rabbit holes, moodboard will help to keep you on the straight and narrow. It’s also a good way to keep track of your budget. Note down how many square metres offlooring or rolls of wallpaper you'll need and recalculate costs when you add new samples to the board. A few pence difference between tiles may feel small when youre looking at individual tiles, but over a whole floor it'll quickly add up. A moodboard will give you an idea of how well elements match and whether the cost difference really Y is worth it. You can paint your board with your base colour or, cover it with a plain fabric you want to use. But skip this step if you don't feel ready to make those decisions yet. If your room has items you can't change, or want to keep, take photos of them and add them to the moodboard first. It can help to cut them out if you can see a lot of the room's original decoration around them. Don't worry about making the board look pretty. Perfect composition isn’t important and trying to achieve it can knock your confidence. Your moodboard is a tool, rather than a presentation. It’s the recipe, not the cake! It can be handy to have a couple of images of perfectly styled rooms on the board for inspiration, but don't rely on them too much. As you work on the moodboard you'll begin to learn more about your own colour preferences and stylistic choices, and its these instincts that you want to develop. The clearer your vision of your future room is now, the closer to it the end result will be. Its best to work on your moodboard in in the room you plan to decorate. The light the room will affect how the samples look and you'll see the colours change slightly during the day. If it’s not practical to work in the room, place your board in the room and go in to take a look at intervals.

The colour wheel
is the designer's secret weapon for creating beautiful schemes. The three primary colours (red, blue and yellow) are equally spaced around the wheel, with blended hues in between. The top half of the wheel can loosely be called ‘warm’ and the bottom half‘cool’ Red is the warmest colour and blue the coolest, so you can work out a colour’s ‘temperature’ by how close it is to them on the wheel. When you have a rough idea of the colours you want, use them to guide your sample choices. If you didn’t paint or cover your moodboard with your base colour or fabric at the start, do so before you begin looking for samples. Collect paint sample charts in your preferred colour scheme. Cards that show gradations of tone are helpful at these early stages. A graduated chart will show you the lightest and darkest tones of chosen colour and as you start to build up samples you can match patterns to these tones to create a cohesive look. If you can't find a graduated chart for a colour you want to a
use, find a large sample and cover parts of it with layers of white tissue paper. This will give you an idea of paler versions you might want to match to. These pale tones will be useful when you're looking for paint for woodwork or coving. Once you've chosen your base colour, it’s time to think about patterns, accent colours and ways to add texture to the look. Start with large textiles, such as curtains or blinds. My experience... 10 years ago, we chose a white and stainless-steel kitchen, but it never really suited my personality as love colour and would call myself a maximalist. The kitchen was in good working order,

though and we couldn't justify ripping it out just because fancied a change. I'd seen images on social media of people replacing their existing cabinet doors as budget makeover, so we decided to explore this. Unfortunately, over the years IKEA had changed its cupboard sizes so we couldn't just replace the doors with like-for-like ones, but we also couldn't afford to install whole new kitchen. stumbled across Matt Antrobus's work on Instagram. loved the fact that he could make bespoke doors to our sizes without having to replace the whole unit. It saved us a fortune. wanted something classic that could last another 10 years, so we finally chose this gorgeous blue. also painted the back wall a soft grey to replace the stark white and mirror the colour of the Victorian dresser and the dining table, which Matt also made for us. Then we had all the doors stripped to add warmth to the look. decided to add even more colour by painting some |

My experience...
We removed the dated floral wallpaper and ugly brown carpet in the bedroom when we moved in, but other than painting the room we hadn't got a lot further with it. We bought a new bed, but our furniture was an eclectic mix and nothing about the room felt relaxing. wanted it to be a cosy and soothing space, but it wasn’t until saw the mural wallpaper, in its soft nude shade, that decided to go for this colour palette. The mural went on the wall behind the bed and picked out a similar colour paint for the other walls, which gave the room a warmer feel. spotted that IKEA sells bamboo-effect panels for its wardrobes. As we had an old Pax design from IKEA, with black glass-panelled doors, we could replace the glass panels with the bamboo ones to give the wardrobe a new look without replacing the whole thing. also found some bedside tables from Wayfair that have a black frame to match our bed, and an armchair from Dwell with black metal legs it’s those details that tie the scheme together. Then it was on to the fun part: choosing accessories! love natural textures and think some of the bits I've chosen — such as the fringed wall hanging, woven baskets and macramé plant hangers add a relaxed boho touch. I'm so happy with how it’s turned out and can't quite believe it’s the same room! |

My experience... While renovating the house, we removed a chimney breast that came up through the bathroom from the kitchen below. This meant the bathroom gained about two square metres, leaving us enough room to install a separate shower. Previously there was just a freestanding bath, which was a pain because guests always wanted to use the shower in our en suite, so we never had any privacy. With the extra space, we moved the bath under the window and installed a shower where
the bath had been.
Moving the bath under the window immediately gave the room balance and symmetry. We also drilled holes in the bath so that taps could be fitted at its edge, with pipes running straight down and under the floorboards out of sight. The shower tray was fitted where the bath had been and a shower screen was added. The finishing touch was the gorgeous Dandelion floor tiles. love the bathroom now especially the shower because it’s so spacious, but also like looking out over the garden while I’m in the bath. It’s a lovely room to relax in but, best ofall, we no longer have guests knocking on our door to use the en suite shower!

Method For the dressing, halve the lemongrass stalks widthways, bash the thicker ends and finely
chop the thinner ends. Place both in a small pan with the fish sauce, sugar, ginger, chilli and 5 tbsp water. Bring to the boil, simmer for 3-4 minutes then set aside to cool. Heat a frying pan over a high heat. Loosely wrap the chicken in cling film and flatten with a rolling pin until 1cm thick. Brush with % tbsp sesame oil and griddle for 4 minutes on each side until cooked through, then slice into thin strips. Put the noodles in a large bowl and cover with just-boiled water. Leave for 10 minutes, drain and toss with % tbsp sesame oil. Divide between 4 plates with the vegetables and chicken. Remove the thick lemongrass stalks from the dressing, stir in the lime zest and juice, and spoon over the noodle salad. Garnish with Thai basil and fried onions. 112 yourhomestyle.uk
Cook the beans in a pan of boiling water for 3 minutes. Remove with a slotted spoon, rinse under cold water and pat dry. Add the spinach to the boiling water and cook for 30 seconds until wilted. Drain, rinse under cold water, then squeeze out the excess water and chop finely. Crack the eggs into a jug, season well and whisk lightly to combine. Preheat the grill to high. In 24cm nor-stick, ovenproof frying pan, heat 1% tbsp oil over alow-medium heat. Pour in the egg, scatter over the beans, spinach, tuna and potatoes, and half the tomatoes, olives and red onion. Cook for 15 minutes until the edges and base are almost set, then transfer to the grill for 5-6 minutes until the top is set and golden. Leave the frittata to rest in the pan for 5 minutes. Whisk the remaining oil in a bowl with the sugar, lemon zest and juice. Add the remaining tomatoes, olives and onion. Tear over the basil leaves, season with pepper and toss to combine. Slide the frittata onto a board, spoon over the salsa and slice it into wedges to serve.

Chicken Breast Fillets, cut into 4cm pieces * 2 tbsp olive oil * 1 tbsp fresh thyme leaves * 1 tsp dried oregano * 1 tsp ground cumin * 1 tsp hot smoked paprika * 1 lemon, thinly sliced * 200g couscous * Grated zest and juice of 1 orange * 210g pack Waitrose Pomegranate Seeds * 25g pack fresh flat leaf parsley (or mint or 28g pack fresh coriander), roughly chopped * rocket salad and natural yogurt, to serve
Method Place the chicken pieces and tbsp olive oil ina large bowl, toss gently then sprinkle over the thyme, oregano, cumin and paprika and mix until evenly coated. If time allows, leave to marinate for up to hour. Preheat the grill to medium. Thread the marinated chicken and the lemon slices alternately onto 8 skewers (see cook's tip below). Cook under the grill for 12-15 minutes, turning occasionally, until the chicken is nicely browned and cooked through with no pink meat. 1

Meanwhile, place the couscous ina heatproof bowl and pour over 250m of boiling water. Set aside for 5 minutes. Fluff up the couscous with a fork then stir in the orange zest and juice, the remaining tbsp oil, the pomegranate seeds and herbs then divide between 4 plates. Top with the chicken skewers and serve with rocket and a spoonful of 1
natural yogurt.
Cook's tip: If you're using bamboo skewers, soak them in hot water for 30 minutes before you use them to help prevent them burning.

Method
Ina large pan heat 1tbsp ofthe oil and fry the onion for 10 minutes, until softened. Add the remaining oil and the mushrooms, fry for minutes, until the mushrooms are turning golden. Remove a spoonful of mushrooms to garnish the risotto later. Stir in the garlic, rice and Savoury Umami salt, cook for minute. Pour in the wine and boil for minutes. Add the stock, one ladleful at atime and stir continuously until all the stock has been absorbed, before adding another ladleful. Continue until the rice is cooked and the risotto is creamy; it should take about 20 minutes. Stir in the spinach and allow it to wilt before stirring though the butter. Season with a generous sprinkling of the Savoury Umami salt, Parmesan cheese and garnish with the reserved mushrooms. Serve immediately. 5

Healthy potato skin soup Prep and cook time 30-40 MINS

Ingredients
* 400g of leftover potato peel, washed * 20g of melted butter * 2 onions ¥ 1 Itr whole milk * 1ltr chicken stock * 2 bay leaves * salt and pepper * pancetta * Parma ham, grilled * 2 poached eggs
Method Melt the butter in a large pan, add the onions and brown. Then add the potato peel and sauté for 10 minutes. Add the milk and the stock to the pan, along with the seasoning and the bay leaves. Bring the mixture to the boil. Reduce the heat and place a lid on the pan and leave it to simmer for a further 15 minutes, until the potato peel is soft. Take the soup off the heat and purée with a stick blender. Heat the soup up 5 minutes before you wish to serve. Boil some water on the hob and add a splash of cider vinegar. Once it’s boiling, take it off the heat and gently add the eggs. Keep the pan off the heat and place a lid on it for a further 4 minutes or until the eggs are poached. Remove the eggs from the water with a slotted spoon and dry them on some kitchen roll. To serve, add an egg and some diced pancetta into each bow of soup, then place the grilled Parma ham on top.

Method To make the salad: place a large pan of cold water on high heat and add the lentils, 2 sprigs of parsley, thyme, garlic and the bay leaf. Bring to the boil, the heat, and cook the lentils for 20-25 minutes, until al dente. Stir occasionally with wooden spoon. To make the dressing: in a small bowl, beat the vinegar, mustard and salt with a fork. Add the oil drop by drop, and beat until the dressing comes together. Add water if the dressing is too thick. Drain the lentils, remove the herbs and let the lentils cool. Mix in the a
dressing.
Add the mackerel, red onion and peppers. Mix everything well and season with salt and pepper. Drizzle with lemon juice and scatter the parsley and basil leaves on top. Serve immediately.

* 2 x 400g tin white beans, such as butter, cannellini or haricot, drained * 1 tsp paprika * 2 small cloves garlic, peeled and crushed * juice of 1/2 lemon 6 tbsp extra virgin olive oil * 4 handfuls kale leaves * 4or 8 slices (depending on size) ciabatta, bloomer or
sourdough bread * 20 halves of cherry tomatoes, semidried tomatoes or sun-dried tomatoes * 2 tbsp pumpkin seeds, lightly toasted * flaked sea salt and freshly ground black pepper
Method Put the beans in a bowl and roughly mash with the paprika, garlic, half the lemon juice, 2 tablespoons of olive oil and some salt and pepper. Tear the kale into small bite-size pieces, throwing out any tough stalks. Put in a bowl and add the remaining lemon juice,
tablespoon of olive oil, some salt and pepper, and rub them all together, breaking down the kale slightly. Toast the bread on both sides until slightly golden. Creamy bean and lemon spaghetti Prep and cook time 20 Mins Serves 4 Ingredients
* 400g spaghetti * 400g tin cannellini beans, drained * 1 garlic clove, roughly chopped * 1 vegetable stock cube, made up to 150ml * 1 lemon, zested and juiced * 250g green beans, cut into 3cm lengths * 200g fresh or frozen spinach * small handful basil leaves, to serve (optional) and rinsed
Method Cook the spaghetti in
a
large pan of boiling water for
6 mins.
Meanwhile, put the cannellini beans, garlic, stock and half the lemon zest and juice into a food processor (or use a stick blender) and blitz them together until they're smooth. Taste and add more lemon juice for a stronger flavour, if needed. After 6 mins, add the green beans to the spaghetti and cook for another 3 mins until both the pasta and beans are just cooked. Drain, reserving a few tbsp of the cooking water, and return both to the pan. Stir the spinach through the hot spaghetti with 1-2 tbsp of the reserved cooking water and allow it to wilt for min before mixing in the lemony bean sauce. Serve the spaghetti topped with the remaining lemon zest and a few basil leaves, if you like. 1

Tuna fritters with tzatziki Prep and cook time 30 MINS
Serves 4 Ingredients
For the fritters
* 2 medium potatoes, peeled * 1 courgette * 2 x 160g tins of tuna in water, drained * 300g canned sweetcorn, drained * parsley leaves, finely chopped * 100g flour * 2 eggs * 1% tbsp chilli flakes * Tabasco sauce * salt and pepper * 2 lemons * sunflower oil
For the tzatziki *

cucumber, peeled * 250g full-fat Greek yoghurt * zest and juice 1 large garlic clove, crushed * salt and pepper
of 2 lemons *
Method To make the fritters: grate the potato and courgette and combine in a bowl. Add the tuna, corn and parsley and mix thoroughly, then add the flour and eggs. Season with the chilli flakes, Tabasco, salt and pepper. To make the tzatziki: cut the cucumber in half lengthwise and deseed. Grate the flesh and put it in a sieve. Using the rounded side a spoon, press out as much liquid as possible and then combine the cucumber flesh in a bowl with the yogurt, lemon zest and juice, and garlic. Season with salt and pepper. Heat a generous splash of sunflower oil in a thick-bottomed frying pan over medium-high heat. Once the oil is hot enough, spoon two portions of the fritter mixture into the pan. Cook the fritters for 3-4 minutes until each one is golden brown, then flip them and cook for another 3-4 minutes, until each one is crispy and done. Lift them out and drain on kitchen paper. Repeat this step until the mixture has been used up. Serve the fritters with the two lemons cut into wedges and the tzatziki in separate bowl. a

We talk to the brand director of paint and colour experts Fenwick & Tilbrook
How did it all begin?
Fenwick & Tilbrook was created by accident when one of the founders, Simon Tilobrook, was splitting business assets for a client following the insolvency ofa brand with a‘paint arm’to its business. Simon saw promise and a gap in the market for a premium paint brand offering truly high-quality, pigmentrich paint and so Simon and his wife Clare (my mother) went through the process of rebranding and reformulating a gorgeous range of colours under their own brand name. I've been involved with the business since its creation in 2016. The three of us work closely together on all areas of the business — it truly is a family-run business!

Describe your typical day
days are very fast paced and disappear in the blink of an eye! As asmall family business, we all muck in — Clare and can often be seen creating bespoke colours or working on colour suggestions for customers who want a bit of help with their colour scheme. But equally we could be processing orders, making paint or packing boxes. |
