ABOUT ME I’m Sophie Claire, 35 and I work in finance in the City of London. MY HOME A two-bedroom flat near Tower Bridge in London, which was built in 1989. WHEN I MOVED IN The flat was a plain white box. There was no structural work to do, but it was in serious need of some character. AND NOW I like to think I’ve created a home that shows my personality. It’s now a space full of things I love that give it a unique style. HAPPY COLOUR’ Sophie Claire transformed her bland, and a tad soulless, London apartment with an injection of style bursting with character and colour

S

ophie Claire had one requirement when searching for her new home in 2011 – she needed it to be a short walk to work in the City of London. ‘I drew a circle around London Bridge that marked a seven-minute walk from the station, and told the estate agents that I only wanted to live within that area. An easy commute makes a huge difference to your working day, so location was really important.’

Double vision Despite the number of new developments in the area I was searching in, I didn’t find anything I liked until the estate agent showed me a flat with a rather unusual shape. It was in this 1980s block on the fourth floor and every room was double height with a mezzanine level. I knew straight away it was the one.

Taking my time With no structural work to be done, and all the walls painted white by the previous owners, I set about turning the flat into my home. The very first thing I did was buy the dining table. I’d seen it in Muji about three years before and it had been on my wish list ever since! Then I waited a year before I started decorating. I knew I wanted to use a lot of colour, so I took my time working out what shades I wanted.

Getting it right was still a challenge. I painted my bedroom first, in navy blue and fuchsia pink – but I decided to change it after a year. In fact, many of the striking colour combinations in the flat have been a result of trial and error. I had to paint the kitchen three times before

I found a colour I was happy with. At first, I fought the fact that the room had no natural light by using light, bright colours, but I just wasn’t happy with any of them. In the end, I decided to try black and pink, and it was the best thing I did.

DIY diva Rather than relying on decorators, I decided to roll up my sleeves and do the painting myself. I really enjoy painting, it’s peaceful and satisfying and I like to spend my time on it. The striking, diagonal lines throughout the flat were born of necessity rather than design. When I was painting the living room I didn’t have a stepladder, so I couldn’t reach the top of the ceiling. I was standing on a bench on the table! As a quick fix I decided to paint the wall diagonally, going lower, with the aim of finishing it when I got a ladder. But

Do it! A SMALL DINING SPACE Pick furniture that can be wall hung or folded away when not in use. Drop leaf or extending tables are ideal too. If you have a corner area, built-in benches will seat more people and can double up as extra storage for cushions and table linen. Pick round or compact sets where the seats tuck under or sit flush with the table edge. A free-standing piece of furniture or butcher’s block can double up as a breakfast bar.

Do it! COLOUR BLOCKING Use the colour wheel. Shades that sit diagonally on the wheel combine for a bold contrast, colours that sit next to each other still have impact but work as a softer combination. Use paint charts to help you pair colours that are of a similar depth, like mid-toned pastels. By looking across each line of the paint chart, you will see colours that will sit together harmoniously. White is often a useful base to tie varied colours together. Saturated, vivid shades will make a stronger impact alongside white backgrounds, making the room feel airier and allowing colours to pop. As general rule, three key colours are an ideal mix, but you can bring in softer shades of one of your chosen colours for variety. For full, impactful coverage on a wall, consider painting woodwork, shelving or even a radiator for a seamless finish.

Carefully considered I’d describe my style as eclectic. I love a whole mix of things, the furniture and accessories in the flat are a mix of some modern items I fell in love with and some older items that have a real sense of history. I’ve used space-saving ideas that mean there are no forgotten corners – every single nook and cranny has been carefully thought out and put to use. Bedside tables are wall mounted to maximise space, while the spaces under the staircases have been thoughtfully filled with cosy chairs, bureaus, rugs and lamps. The kitchen table doubles as a wine storage rack and benches stow away

under the dining table so there is plenty of space to move around it. The gallery of film posters also helped reshape the flat from a plain white box to a colourful, original living space that’s finally got character. I did a degree in film, and I really like minimalist movie posters, so I sourced these prints based on their colours and images.

In the zone The features I love the most are the unusual mezzanine levels. The mezzanines in every room essentially double the space, and have allowed me to create different zones in each one. They give the flat character. In the bedrooms, the beds are upstairs which leaves the downstairs free for a sofa, desk or dressing area. I

Finding my style I’m a avid fan of Instagram, which has been an interiors inspiration. You can see my journey @sophiecsophiedo. It’s a platform that is full of amazing ideas and it gave me the confidence to do things myself, rather than pay for someone else to do them. I don’t believe anyone does as good a job as you can do yourself – after all, it’s your home! It also really helped me find my interior style. I realised I was drawn to so many different looks and I couldn’t decide if I liked minimalist or maximalist, bright colours or dark… in the end, I decided that if I just bought things that I loved, and put them in a space together, the look would all tie together in the end – and it did!’

OUR HOME A three-bedroom, late 1930s semi in Bridgend, South Wales, bought in January 2016. WHEN WE MOVED IN The downstairs was immaculate, but wasn’t our style. It felt small and impractical for a young family. The bathroom needed replacing and every room required modernising. AND NOW We’ve knocked through downstairs, have updated and reconfigured the kitchen units, and have replaced the bathroom. A

lthough our previous house was spacious, it was on a busy main road and after the arrival of Esme in 2014, we were keen to move to the more family friendly area of Bridgend,’ says Tahnee. ‘This house was owned by a friend who was selling at the same time we were looking to buy. Matthew and I had viewed a couple of similar properties, but we knew this house and the area, and despite having one less bedroom than our existing property, we could see its potential. The house is on a quiet cul-de-sac and has a drive, a large garden and views across the Vale of Glamorgan – there are fields and farmland as far as the eye can see. There was scope to convert the loft too, so it felt like the perfect move for us.

New house, new style

Although not to our taste, the house was immaculate and structurally sound. It had some lovely original features, such as the parquet flooring and picture rails, but the galley kitchen, true to the era of the house, was small and impractical for our young family. The dining room was cut off from the kitchen and the conservatory, an addition built ten years previously, didn’t fit with our plans. At some point we’d like to replace the conservatory with a single-storey extension to create a modern, open-plan space with a new kitchen, but that’s a pipe dream for now. Instead, we started to look at other ways to make the spaces work best for us. We decided to knock the three rooms through, turning them into one big, open-plan living area.

DIY paid off Matthew is an electrician and builder by trade, which saved us a fortune as he did most of the work himself. The most logical and cost-effective way to make

‘DISPLAY ALCOHOL AND GLASSWARE UP HIGH FOR A HAPPY BALANCE BETWEEN RELAXED STYLE AND CHILD–FRIENDLY LIVING’ the knock-through work was to remove the wall between the kitchen and the conservatory, adding a concrete lintel and keeping the large pillar of the supporting wall for the new living area in place. It wasn’t ideal, but it did mean no major structural changes were required. It was a messy job though – the dust it generated was awful and keeping a curious toddler away from the work was a challenge at times. Matthew made sure we weren’t without essentials (like an oven) for long, only removing them when their replacements were ready.

Restore and repair We blocked up the back door, which meant we could add almost double

the cupboard space, and with the dividing wall gone, we reconfigured the kitchen around a new range cooker and butler sink. We painted the kitchen cabinets, changed the handles, replaced the laminate worktop with solid oak and substituted the old tiles for new white, crackle-glaze metro tiles. The conservatory became our new dining area, and we restored the original parquet flooring in the living area, which had taken quite a pounding during all the work. The new log burner is Matthew’s pride and joy!

Bathroom magic The next thing for Matthew to tackle was the family bathroom. He removed the old-fashioned suite, dated green

He then panelled the bottom half of the room and painted the rest, including the ceiling, in a luscious dark blue, giving the small bathroom plenty of character. With both sets of parents nearby we were able to use their bathrooms while he finished the work. A claw-foot, free-standing bath that we found on eBay and restored ourselves takes pride of place.

Changing things up Over time, we have replastered and redecorated the front living room and the whole of the upstairs, one room at a time. We ripped up the carpet,

restored the floorboards and painted them white. Initially my style was very shabby chic – we had lots of distressed French-style furniture and everything was decorated white or grey – but by the time our son Jude was born in 2018 that simply wasn’t me anymore. I spent much of my maternity leave with a paintbrush in hand and Jude in his bouncer, redecorating most of the rooms and bringing in fab mid-century-style pieces. I adore the results and we now have neutrally painted rooms with fun splashes of colour.

Cut a piece of plywood to size (you could fix it to a simple headboard frame). Lay cotton batting over the wood surface, then cut to size, leaving 10cm excess all around. Fix the batting to the plywood using spray mount, turn the board over, fold over the edges of the batting, pull taut and staple in place. Cut out the excess batting before fixing the corners to keep them smooth. Trim excess. Turn the board over, lay the velvet over the surface (plush side up), trim to size, leaving 10cm excess all the way around. Turn the board over, fold in the edges (pull taut) and staple the fabric in place starting in the middle at the top and working out from there. Cut out excess fabric in the corners before folding neatly and stapling in place.

Matthew has put so much work and effort into the house, skilfully (and patiently!) turning our ideas into reality. We’ve ended up with a spacious, bright and welcoming family home, which reflects all of our personalities and gives our young family room to grow.’

Lucy combined a passion for DIY with her flair for finding thrifty buys to create a home filled with imagination

M

oving house wasn’t our plan,’ says Lucy. ‘We moved to the area 12 years ago and loved the location, but our house was getting to be a bit small for us – we were fast running out of space. Then this house came up for sale just round the corner from us. It’s in such a lovely road, had lots more room, a bigger garden and it was in budget, so it all just fell into place and we ended up buying it.

Good bare bones The house was pretty run down and neglected, with old-fashioned swirly carpets and textured walls and ceilings – there was even an old stair lift. But the good outweighed the bad. For all of its decor downfalls, the house had lots of character and original features, and a lovely light, bright reception room at the front that I knew would make a great studio. Although the house needed a lot of work, Tiff and I had tackled renovation projects before, so we knew we’d be able to make the property how we wanted it – it would just need a bit of hard work and creativity.

To keep the project on budget, everything we could do ourselves, we did – such as ripping up carpets, sanding floors, painting and wallpapering. We knew that the kitchen and bathroom would need a bit of extra work and would cost more to complete, so we left them until last so that we could plan and save up for them. I grew up with my mum and dad always doing things themselves while I was young. They bought a wreck and did it up around us, so I’ve never been fazed by hard work. It’s partly a financial thing, never having had tons of money, but there’s also a practical element, too. I always say that if you think

you can do it yourself, then you have nothing to lose by giving it a go.

Experimenting The living room was the first room that we tackled. It’s at the back of the house with doors that lead out to the garden and makes a great family room. The floorboards are the originals and were in pretty good condition, so we sanded and refinished them, and I’m pleased with how they turned out. The wooden plank-effect wallpaper is a favourite. I’d seen a similar design online, but it was

really pricey so I hunted down this lookalike on eBay – it was a steal. The living room fireplace was originally a dark red brick, so I tried painting it white and then repainted it black, for a lovely contrast against the wallpaper. I’m always painting things. My family joke that if it doesn’t move, I’ll paint it!

Do it! PAINT DIAGONAL STRIPES To make it easier, paint the entire wall in a pale base colour first. Starting at the left of the wall and working your way towards the right, measure along the bottom edge of your wall the width of one stripe and mark with a small pencil dot, continuing along the whole area that you want to paint. Repeat the process at the top edge of the wall. Use an angle ruler set to 45 degrees on your wall and position it at each dot. Mark short diagonal

pencil lines as reference points. Use low-tack masking tape to give your stripes a crisp edge. Apply masking tape diagonally to the wall, starting at the bottom, (using the diagonal lines as a guide) until you reach a pencil dot at the top of the wall. Continue along. Apply your second colour to the wall – on every other masked area – creating your stripes. Leave to dry and apply a second coat. Carefully remove all of the tape once the paint is fully dry.

It’s a much nicer, brighter space and we can see straight out into the garden, which is lovely. I went for simple white walls, units and tiles in the kitchen. It’s good to have some calm in busier spaces and it’s easy to add pops of colour with furniture and painted pieces. The dresser is an original that I painted dark grey – it’s brilliant for storage. And I painted the fireplace a cheery sunshine yellow. The colourful leaves around the arch were painted free-hand on a whim.

Hands-on approach In between all the work that was going on at home, I applied to take part in the 2016 series of the BBC’s The Great Interior

Design Challenge and made it through to the final. My friends had seen previous series and said I should apply because I’ve always made everything and decorated the house myself. I applied the night before the deadline and the producers rang me back the next morning. I didn’t really have time to think about it, I just threw myself into it. I put so much of myself into the show, it was brilliant but exhausting. I’d always thought that I would quite like to be an interior designer, but actually, I discovered that I much preferred the painting and the making side of interior design.

Turn the seat upside down and push out the old seat pad. Remove the cover using pliers to take out tacks or staples. Use the old cover as a template and cut a piece of new fabric to size, then place it face down on a flat surface. Position the seat pad in the middle on top. Fold over opposite sides, pull tight and staple in place. Pleat the corners and repeat with the other two sides. Pop back in place.

Project potential When it comes to furniture and bits and pieces around the house, I’m a bit of a magpie. I’ve always collected things, whether it’s from junk shops, car boot sales, or eBay. I’ve even been known to pick things up from the side of the road! A lot of our furniture has been handed down or are cast-offs from my sisters. I’m quite happy to try my hand at upcycling anything. My philosophy has always been if I want something and I can’t afford it, I’ll have a go at doing it myself. I’ve always got a project on the go, I never have time to get bored.’

SPACE AND LIGHT’ Knocking two rooms into one and rejigging the layout has given Zoe a bright kitchen-diner with lots of storage

B

uying a 1970s house wasn’t really on my wish list, but that was before a spell living in Australia made me and my husband Tom have a major rethink,’ says Zoe. ‘We were out there for eight years and it made us look at houses very differently when we returned to the UK.

Changing priorities We came back when I was pregnant with Leo, and we had already decided to settle in the Hampton area, where Tom was brought up. It has great transport links, plenty of green spaces and good schools, which was important with two young children. We needed somewhere urgently, so initially we bought a new build terrace that needed nothing doing to it. But as Leo got older, and then Zac came along, we realised we would need more room. Space and light had become even more important to us after living on the other side of the world, and whereas before we’d have been keener on an older property, the number of rooms and having a larger garden had whizzed up the list.

Our estate agent asked us to consider a house that was new to the market. It was built in 1979, and the same people had lived in it ever since. Everything was done to a high standard, but it was dated and not quite to our taste. But we could see it had enormous potential; the rooms were large and light, and it had a stunning central hallway. Once we’d moved in, we quickly realised that it would be relatively simple to create a spacious kitchen-diner by knocking two rooms into one. It was too cramped in the kitchen, and there was a large rectangular table in there, which was taking up far too much space. The old

wooden units made the room seem darker, along with the dark wood windows.

Down to work With our builder in place, taking the wall down that separated the kitchen and the old dining room brought in lots of light. We replaced the old French doors and the window with more practical white versions. We’d pushed ourselves budgetwise buying the house and wanted to keep costs down, so we found some great units at Ikea which fitted the bill. We did invest in the Cristallo solid surface worktop from Maia, which cost more than the units, but any little scratch or stain can be rubbed away, it’s amazing. The U-shape of the units left the back wall free for a stunning freestanding unit on metal legs where we keep everything for dining as it’s near the table. And having a round table made space for a floor-to-ceiling unit in the corner to hide all the cleaning stuff.

Finishing touches To save money, we used outlet stores where we could and got some great deals, such as our Smeg appliances. Although the items didn’t have packaging and we had to take them away there and then ourselves, it worked out much cheaper. The build took eight weeks and we’re so pleased with how it’s turned out, it feels so light and spacious, and there is plenty of extra storage. The result is much better than we’d ever have hoped for – it gives me a lift every morning.’

Consider how much looking after and maintenance the material you choose will need. If you have young children, then materials that mark easily may not be ideal. Keen chef? If so, a heat-resistant material, such as granite or concrete, is a savvy choice. Stainless steel acts as an antibacterial surface, but it will gather scratches over time. Hard wood or sealed concrete is a good choice for food preparation areas or around sinks. Woods such as teak often have a high oil content and are naturally water resistant. Laminate worktops are now available in convincing granite, slate, wood and even marble effects. They are low maintenance and can be fitted by a DIY enthusiast.

Any downsides? The expense – pitched at a similar price point to quartz, expect to pay from £300-£450sq m. Complex curves and integral sinks etc can bump the final price much higher.

Are all solid surfaces the same? Maia is just one manufacturer; other popular brands include Corian, HI-MACS by LG Hausys and Minerva. However, while most solid surfaces are the same material right through to the core, Maia is made from a 3mm-thick layer of solid surface bonded onto particleboard. This makes installation more DIY-friendly – it can be cut with regular woodworking tools.

ABOUT ME I’m Lauren Benincasa, 30. I work in financial services and live with my husband Andrea, 31, who works in IT, in a three-bed Victorian semi-detached house in Bristol. We bought this property in September 2017. MY CHALLENGE This house was damp, run down, and definitely a ‘doer-upper’. The main bathroom was worn out and old-fashioned, and it was off the kitchen rather than upstairs, which I knew I wanted to change around. very room in this house needed work, and our first project was a new kitchen,’ says Lauren. ‘We thought we’d renovate the existing bathroom, which was off the kitchen, next, but after months of walking past the oven and fridge to get to it, I knew the ground floor layout wasn’t working. ‘We decided to make it a utility room instead, and turn one of the upstairs bedrooms into a brand-new bathroom.

First steps We chose the smallest bedroom, which we never used. It’s above the kitchen, which would make the plumbing simpler. There was nothing to rip out apart from an old carpet, so we had the classic “blank canvas”. I knew the elements I wanted to include, and to help us work out where everything should go, I found free online design software. It was useful as we could try different options, and it stopped me placing the radiator next to the basin, where the door would have knocked it!

Top of my wish list was a large statement bath. As I’m quite tall, it was important to find one I could comfortably relax in. I thought I’d prefer a period-style roll-top, but looking online, I realised I liked simpler contemporary shapes. We settled on a smart black-and-white theme. I love patterned floors and white wall tiles with contrasting dark grout. The shower enclosure had to be spacious, with a large drenching head. To give a wet room feel, I picked a low-profile black shower tray and a shower screen with black fittings, plus black taps and accessories, too.

buy stuff without actually seeing it, so I searched online for the best deals. We found the key pieces at Soak, and saved money by buying at sale time. I was going to get a smaller-sized bath, which was cheaper, but when I realised the bigger one would actually fit, we agreed to go for it. It takes a long time to fill, but it’s worth it to have such a lovely soak. There were masses of monochrome floor tiles to choose from, so I looked for the best value. Although we couldn’t afford underfloor heating, I found a modern matt black radiator, and the room is never cold.

We asked the plumber who’d fitted our kitchen to work on the bathroom, too, and I sourced a good electrician and tiler through a nifty app that gives feedback on local tradespeople. Luckily, we could still use the old ground-floor bathroom, because the installation took about three months. It was tricky organising when the different trades should come, and we sometimes had to get time off work to be here. In hindsight, it would have been easier to have a single company handling everything.

Last word Although we’ve lost a bedroom, we’re hoping to convert the loft to add another one. Our new bathroom is so clean and comfortable, and using it feels like a treat. We’re thrilled with what we’ve achieved.

Why is it called a walk-in? A walk-in shower has no door but does include at least one shower screen. Walk-ins come in two main styles. The single entry, like Lauren’s, has access at one end, which is great for installing in a corner or alcove. However, taking the tray route means you’ll swerve the hassle and expense of tanking (a labour-intensive, messy process), which is why we vote tray every time. Slimline trays are a compromise solution and they come in depths ranging from 2.5cm-3.7cm so the step ‘up’ into your shower is negligible.

Where can I buy a walk-in shower? The easiest route is to source a complete walk-in shower package, which will take the guesswork out of matching up components and calculating budgets. They are widely available and come with the tray, screen and all the waste fittings in one. If you are tanking the floor, you will need specialist membrane materials and a wet room drain that can cope with the flow rate of your shower – check with your plumber if you’re unsure.

What size and shape should I choose? This is dictated by the space available but ideally go for at least 100x80cm – the bigger the better. Walk-in showers tend to be rectangular so that they can be used as two zones – one end for showering and the other for drying off. You can also buy screens that curve outwards in the main showering area to provide more elbow space.

ABOUT ME I’m Nora Jury, 44, and I live here with my husband Lee, 48, and our son Zachary, three. The house is in Chiswick, west London. MY CHALLENGE The garden was well established but had become quite wild and out of control, so we weren’t quite sure what to do with it. There was also an old pond that needed removing as it was important for us to make the space as child-friendly as possible. MY WISH LIST We love to entertain so we wanted the garden to have a relaxed and sociable feel with somewhere to barbecue. We wanted a simple planting scheme that would give us year-round colour, but wouldn’t require too much looking after.

nheriting a garden full of plants was lovely,’ says Nora. ‘When we moved here there were so many different types, as well as a pond. Unfortunately, neither myself or my husband Lee were particularly knowledgeable about many of the plants, and it got rather wild and out of control, not to mention full of spiders, which was a bit off-putting.

First steps In the spring of 2017, our son Zachary was born, so we thought it was time that we got the garden into a more child-friendly condition, but we needed expert help. A friend recommended James Walsh (livingcolourgardens.co.uk). Our brief was for James to design a child-friendly garden, with soft, lowmaintenance planting, as well as a dedicated space to relax and entertain.

The new planting scheme was kept fairly simple, with whites and some hot pink for a bit of drama, plus lots of evergreens to provide year-round interest. We also installed an artificial lawn. However, the real focal point of the space is a large acer, the only plant kept from the original garden. At first we wanted it taken out, but James convinced us to keep it. Incorporating the acer into the design presented a challenge, but a neat solution was found with a cedar bench built around the trunk, with additional space left to allow for continual growth. We’re so glad we kept it now, as it has proved to be an invaluable part of the garden.

Setting the style We prefer a simple, contemporary style, so we used as few materials as we could. Cedar was used for the decking, panelling and the L-shaped bench. Mirrors were

Keeping the barbecue adjacent to the main seating area means that whoever is cooking can

still join in the conversation. Lee insisted on a traditional barbecue rather than a modern gas one and it was built from scratch using reclaimed bricks.

Family-friendly space We really enjoy the garden now, both for everyday use and socially. The garden is east-facing so it’s particularly lovely in the summer and gives some welcome shade in the afternoon and evening. We can eat dinner outside and chat after work. And it’s also really safe for Zachary to play in as we can watch him from the kitchen window. The garden is just perfect for our needs, it gets lots of compliments and it’s been a really good investment – we really feel like we have gained an extra room.’

FILO APPLE AND BLACKBERRY PIE TAKES 1 HR 20 MINS SERVES 8 300g frozen or fresh blackberries 1½tbsp cornflour, mixed with 2tbsp water 1kg apples, peeled, cored and cut into wedges ½tsp vanilla extract ½tsp ground cinnamon Juice ½ lemon 40g caster sugar 30g unsalted butter, melted and left to cool 2 egg yolks 175g filo pastry Cream, to serve

Preheat the oven to 180C/Gas 6. Put 3tbsp blackberries in a pan and mash roughly. Add 1tbsp water along with the cornflour mixture and heat gently until it starts to thicken. Add the apple, remaining berries, vanilla, cinnamon, lemon juice and sugar, mix well and heat for a few mins. Scrape the mixture into a large pie dish or shallow casserole dish.

Mix the butter with the yolks until smooth. Take 2 sheets of filo, brush the top half with the egg mixture, fold over the other side, then scrunch up. Place on top of the filling. Repeat with the rest of the filo. Brush the top with the egg mixture. Bake for 40 mins to 1 hr until golden. Serve the filo apple and blackberry pie warm with cream.

Terrazzo prints have been top of the interior trend list for a while now, so why not grab a paintbrush and set about livening up a set of plain planters using Rust-Oleum paints? Simply pick colours to match your garden scheme then protect from the elements by adding a coat of clear varnish. YOU WILL NEED

Once dry, place a large dust sheet or some old newspapers in a well-ventilated area. PRIME THE SURFACE Spray the pots with Rust-Oleum surface primer and leave to dry. Apply a thin coat of Chalky Finish furniture paint and allow to dry, before applying a second. CREATE A SPECKLED BASE Dip the tip of a dry, stiff-bristled paintbrush into a pot of Rust-Oleum Painter’s Touch. Use your finger to flick small specks of paint all over the planters. Allow to dry completely. PAINT YOUR TERRAZZO PATTERN Use a small, clean paintbrush and several different shades of Painter’s Touch to add a variety of coloured blobs in different shapes and sizes to form a terrazzo design. The more random the pattern, the better! PROTECT YOUR PLANTERS Finish your pots by applying two light coats of Rust-Oleum Crystal Clear protective coat spray to protect your planters. Leave to dry between each coat. Plant your finished pots with succulents and place in a sunny spot to admire.

SPANISH CHICKEN BAKE TAKES 1 HR 30 MINS SERVES 4 250g cherry tomatoes 2 shallots, sliced into wedges 2 red peppers, roughly chopped 8 chicken thighs 1 small bunch each of thyme and oregano, chopped 2tbsp sweet smoked paprika 4tbsp olive oil 1 glass of white wine 6 garlic cloves, not peeled 100g green olives Crusty white bread and salad, to serve

Preheat the oven to 180C/Gas 4. Toss the tomatoes, shallots, red peppers, chicken, thyme and oregano with the paprika and olive oil in a large roasting tin. Pour over the wine and bake for 45 mins. Add the garlic and cook for another 30 mins until the chicken is cooked through. Top with olives and serve with crusty bread and salad.

ITALIAN SAUSAGE AND COURGETTE FLATBREADS TAKES 20 MINS SERVES 4 2 courgettes, cut into ribbons 8 chipolata sausages 1tsp dried chilli flakes 1tsp dried mixed herbs 100g natural yogurt 1 garlic clove, crushed Squeeze lemon juice 4 flatbreads 2tbsp pesto Fresh basil leaves, to serve

Place a piece of parchment paper over a hot griddle pan, quickly put the courgette ribbons on top and cook until charred. Meanwhile remove the sausage meat from the skins, and break it apart. Fry the meat in a frying pan with the chilli flakes and dried mixed herbs until golden. Mix the natural yogurt with the garlic, lemon juice and a little seasoning, and spread on top of each flatbread. Drizzle over a little pesto, top with the courgette and sausage meat, and sprinkle over some fresh basil leaves to serve.

MEXICAN CORN ON THE COB TAKES 20 MINS SERVES 4 4 large corn on the cob, halved FOR THE SAUCE Zest and juice of 2 limes 4tbsp creme fraiche 20g Grana Padano, finely grated plus extra to serve ½tsp smoked paprika ½tsp chilli flakes

Grill the corn on a medium-heat barbecue or griddle pan for 15-20 mins, turning every 5 mins, until it is both cooked through and charred. To make the sauce, mix together the lime juice and zest, creme fraiche, cheese, paprika and chilli flakes. Spoon this over the warm corn cobs and top with a little extra cheese to serve.

MISO AUBERGINE WITH GRAIN SALAD TAKES 45 MINS SERVES 2

ASIAN INSPIRED

1 aubergine, halved 1tbsp miso paste ½tbsp honey ½tbsp sesame oil ½tbsp soy sauce 1 garlic clove, crushed 2 spring onions, sliced 1 red chilli, finely 250g sliced FOR THE SALAD microwave pack mixed grains 100g frozen edamame beans ½ bunch coriander, plus extra to serve FOR THE DRESSING 1tbsp soy sauce 1tsp sesame oil 1tsp honey Juice of 1 lime

Preheat oven to 180C/Gas 4. Score the aubergine in a diagonal checkerboard style. Combine the miso, honey, sesame oil, soy sauce and garlic and brush over the aubergine. Roast for 30 mins until golden. Meanwhile, microwave the grains for 2 mins and cook the edamame for 5 mins in a pan of simmering water. When cooked, combine the grains, edamame and coriander in a bowl. Mix together the dressing ingredients and stir through. Season well to taste. Divide the salad between two plates and top each with an aubergine half, plus spring onion, coriander and chilli.

ASPARAGUS AND CHEESE TART TAKES 45 MINS SERVES 4 650g asparagus spears, hard ends removed Squeeze of lemon juice 150g mascarpone 320g sheet ready-rolled puff pastry 25g mature Cheddar cheese, finely grated

Preheat the oven to 220C/Gas 7. Blanch the asparagus for 3 mins then cool under cold running water. Cut the spears to around 16cm. Roughly chop the trimmings and blitz in a food processor with the lemon juice and 1tbsp of the mascarpone. Season well, stir in the remaining mascarpone until smooth. Unroll the pastry on to a lined baking sheet. Mark out a 2cm border around the edge. Spread the mascarpone mix within the border. Put the asparagus spears on top, sprinkle over the cheese and bake for 20 to 25 mins until golden.

GRILLED CABBAGE TAKES 15 MINS SERVES 4 AS A SIDE 1 sweetheart cabbage, sliced into quarters FOR THE DRESSING 3tbsp tahini Juice of 1 lemon 1tbsp white wine vinegar 1tbsp maple syrup TO SERVE 30g toasted flaked almonds 2tbsp pomegranate seeds, optional

Place the wedges of cabbage on a medium-heat barbecue or griddle pan, cook for 6 mins on each side

until blackened and wilting and set aside while you make the dressing. To make the tahini dressing, mix together the ingredients until a thick paste forms, then thin carefully with 3-4tbsp of cold water until the dressing is smooth and runny. Season with sea salt and pepper, then drizzle over the charred cabbage. To serve, top the cabbage with the almonds and pomegranate seeds.

PORTUGUESE-STYLE BEEF SKEWERS 1.2kg rump or top rump FOR THE MARINADE 2tbsp smoked paprika 1tsp cayenne pepper 1tbsp cumin 1tbsp dried oregano 2tbsp olive oil 3tbsp red wine vinegar 3tbsp brown sugar FOR THE SAUCE 6tbsp flatleaf parsley 2tbsp fresh oregano 4tbsp extra virgin olive oil Juice of 1 lemon FOR THE BEANS 300g French beans, trimmed

TAKES 30 MINS, PLUS MARINATING SERVES 6

1tbsp Dijon mustard 2tbsp red wine vinegar 100ml extra virgin olive oil

Cut the beef into large chunks, trimming off any sinew. Mix the marinade ingredients together and then add the beef. Leave to marinate in the fridge for at least 3 hours (or overnight). Thread the beef onto metal skewers.

For the sauce, whizz the ingredients together in a food processor and set aside. Cook the beans until tender, then drain. Whisk the mustard and vinegar together, then gradually whisk in the olive oil. Toss the warm beans in the vinaigrette. Grill the skewers under a grill or on the barbecue for 10-12 mins. Serve with the beans and the sauce.

CHERRY BAKEWELL PUDDINGS TAKES 1 HR, PLUS CHILLING SERVES 4 320g pack ready-rolled puff pastry 165g unsalted butter, plus extra for greasing 165g caster sugar 1 egg and 4 egg yolks 1tsp vanilla extract 50g ground almonds 4tbsp cherry jam 100g fresh cherries or cherries in syrup, drained 30g flaked almonds Vanilla ice cream, to serve YOU WILL NEED 4 x 10cm skillet baking pans or tart tins, greased

Preheat the oven to 180C/Gas 4. Unroll the puff pastry and cut into four squares, using each to line the tart tins, and trim away any excess. Prick the bases all over with a fork and chill in the fridge for 30 mins. Meanwhile, melt the butter with the sugar in a bowl over a pan of simmering water, whisk in the egg, egg yolks, vanilla and ground almonds, and mix until smooth. Remove the pastry from the fridge, spread 1tbsp jam into each pastry case, add the cherries and pour the egg mixture over. Top with flaked almonds and bake in the oven for 45 mins until golden. Serve hot with a scoop of vanilla ice cream.

Hull the strawberries then whizz to a puree. Stir in the lemon juice. Put the evaporated milk into a large bowl and whisk with the sugar on high speed for about 10 mins until the whisk leaves a trail. Stir through the strawberry puree and freeze until solid. Leave at room temperature for 10 mins before serving.
