Fill your home with the familiar aromas of Christmas.

White Chocolate Holiday Truffles

Makes 20 Truffles

Ingredients

1 cup chopped white chocolate or melts

80g butter

2 tablespoons double cream

10 drops dōTERRA Baking Spice Cuisine Blend

½ cup icing sugar

1 cup white chocolate, extra for coating

To decorate

Shredded coconut

Freeze dried fruit

Method

Place the chocolate, butter and cream in a heat proof bowl over a saucepan of boiling water and stir until almost melted.

Remove from the heat, add the dōTERRA Baking Spice Cuisine Blend and stir until smooth. Cover the bowl and refrigerate for 3 or more hours until firm.

Use a teaspoon to scoop out the mixture. Dust your hands with the icing sugar to shape into balls. Place them on a lined tray.

Refrigerate the filled tray while you prepare the coating. Melt the extra cooking chocolate over hot water as before, stirring until smooth. We used a bamboo skewer to lift and dip the truffle balls into the chocolate coating and return them to the lined tray. We sprinkled coconut and freeze dried cherries on top before the coating set.

Tip

Can use crushed nuts or grated chocolate as garnish. Substitute dōTERRA Baking Spice Cuisine Blend with dōTERRA Lemon

dōTERRA Baking Spice Blend Roasted Nuts

Ingredients

4 cups raw nuts; Brazil, cashews, almonds, pecans

½ cup pepitas

80g vegan butter or dairy butter

⅓ cup brown sugar or dark Muscovado sugar

⅓ cup maple syrup or honey

1 teaspoon salt flakes

12 drops dōTERRA Baking Spice Cuisine Blend

Method

Preheat oven to 180°C.℃

Line a baking tray and spread out the nuts and seeds in a single layer. Bake for 15 minutes or until fragrant and golden.

Heat a large frying pan over medium heat and melt the butter. Add the sugar, maple syrup, salt and dōTERRA Baking Spice Cuisine blend. Add the nuts and cook, stirring continuously until the nuts are coated.

Spread the nuts back onto the lined baking tray and allow to cool. The nuts can be broken up and served or packaged for gifting.

Tip

Substitute dōTERRA Baking Spice Cuisine Blend with dōTERRA Cinnamon Bark, Ginger or Cardamom essential oils.

White Chocolate-Dipped Brown Butter Cookies

approx. 26 cookies

Ingredients

½ cups unsalted butter

2 cups brown sugar

½ cup sugar

3 eggs

1 teaspoon vanilla

3 drops dōTERRA Baking Spice Cuisine Blend

2 teaspoons salt

1 teaspoon baking powder

3½ cups all-purpose flour

2 cups white chocolate chips

¾ cup pecans, chopped

Method

Preheat the oven to 180°C.

In a medium-sized frying pan, cook the butter on low heat, until a deep brown colour develops. Remove from heat and let cool.

Using a stand mixer with a paddle attachment or a hand mixer, cream the browned butter, sugar and brown sugar until light and fluffy. Add the eggs, mixing well after each egg is added. Stir in the vanilla and dōTERRA Baking Spice Cuisine Blend.

Fold in the flour, salt, and baking powder until just incorporated. Don’t over mix. Scoop the dough out evenly onto a lined cookie sheet.

Bake for 8–10 minutes. Remove from the oven and let cool completely. After the cookies have cooled, melt the white chocolate in a microwave-safe bowl in 20-second increments, stirring after each increment. Repeat until smooth.

Dip half of the cookie into the melted chocolate. Immediately sprinkle chopped pecans on the chocolate. Place the cookie on a piece of parchment paper and let set at room temperature.

Pear Caramel Cake

Serves 8-10

Ingredients

2 cups cake flour

1¼ teaspoons baking powder

½ teaspoon salt

½ cup unsalted butter, softened

1¼ cups brown sugar

2 large eggs, room temperature

1 cup milk, room temperature—whole milk, oat, almond, or cashew milk

1 teaspoon vanilla

5 drops dōTERRA Baking Spice Cuisine Blend

1 can pear halves, drained

Caramel

1 cup sugar

4 tablespoons unsalted butter

¼ teaspoon salt

¼ cup heavy whipping cream

Method

Preheat the oven to 180°C.

Start with the caramel. In a large frying pan, heat the sugar over a medium-low heat. Stir constantly until an amber-colour. Once the sugar is completely melted, whisk in the butter and salt until incorporated. Slowly whisk in the cream, (as the sugar mixture bubbles up) until fully incorporated. Remove from heat and set aside to cool.

Line an 18cm cake tin with baking paper and grease the sides. Pour the warm caramel into the prepared cake pan and place the pear halves on top of the caramel. Set aside. Sift the cake flour, baking powder and salt into a bowl and set aside. Cream the butter and brown sugar until light and fluffy. Add the eggs, mixing well. Stir in the vanilla and dōTERRA Baking Spice Cuisine Blend. Beat in flour mixture and milk slowly. Mix until smooth. Pour the batter into the prepared pan and bake for 45 minutes or until a toothpick inserted in the middle comes out clean.

Remove the cake from the oven. Let rest for 10–15 minutes. Cool before serving.

Spiced Apple Caramel Galette

Serves 8-10

Ingredients

Crust

1½ cups all-purpose flour

¾ cup unsalted butter, cut into medium-sized pieces

½ teaspoon salt

¼ cup cold water

3 drops dōTERRA Baking Spice Cuisine Blend

1 large egg, for wash

Caramel

1 cup sugar

4 tablespoons unsalted butter

¼ teaspoon salt ¼ cup heavy whipping cream

Filling

3 apples (any variety)

¼ cup sugar, plus more for dusting

2 drops dōTERRA Baking Spice Cuisine Blend

1 cup sugar

4 tablespoons unsalted butter

¼ teaspoon salt ¼ cup heavy whipping cream

Method

Crust

Combine the flour, dōTERRA Baking Spice Cuisine Blend, butter and salt in a large bowl. Using your hands or a pastry cutter, cut in the butter until it resembles chickpea-sized chunks. Add cold water slowly and mix until it becomes a ball. On a lightly floured surface, roll out into a disk. Cover with plastic wrap and chill for 1 hour.

Caramel sauce

In a large frying pan, heat the sugar constantly until it melts to an amber-colour, about 10–15 minutes. Once the sugar is completely melted, whisk in the butter and salt until incorporated. Slowly whisk in the cream (as the sugar mixture bubbles up) until fully incorporated. Remove from heat and set aside to cool.

Filling

Preheat the oven to 200°C.

Core and thinly slice the apples. Place the apples, sugar, lemon juice and dōTERRA Baking Spice Cuisine Blend in a medium-sized bowl and stir until the apples are covered. On a lined baking sheet, place the unwrapped dough disk. Pour the warm caramel into the centre and top with the apple mixture, leaving at least a five centimeter border. Gently fold the dough border over the apples and repeat until all sides are folded toward the apples. In a small bowl, beat the egg and 1 tbsp of cold water until incorporated to make a wash. Brush the dough generously with the wash and sprinkle with sugar. Bake for 35–45 minutes. Remove from the oven and let cool.

dōTERRA Holiday Gingerbread

Ingredients

200g butter, chopped, at room temperature

¾ cup dark muscovado sugar or brown sugar

⅔ cup molasses

10 drops dōTERRA Baking Spice Cuisine Blend

1 large egg

1 teaspoon bicarb soda

½ teaspoon salt flakes

3 ½ cups plain organic flour

Method

Preheat the oven to 180°C℃. Beat the butter until creamy using a stand or hand mixer. Add the sugar and molasses and beat again until creamy. Add the dōTERRA Baking Spice Cuisine Blend and the egg and continue beating until well combined.

In a separate bowl, whisk the bicarb soda and salt into the flour. On a low speed, mix the dry ingredients into the butter mix. The dough will be thick and sticky. Shape the dough into 2 discs for easier handling, and wrap in wax wraps or plastic wrap. Chill in the refrigerator overnight. Remove the wrapped

dough discs from the fridge. Allow them to come to room temperature. Flour your work surface and roll out the dough to 1cm thick. Use your favourite cutters to shape and place on a lined baking tray.

Bake for 8-10 minutes, depending on the size of the shapes. Allow to cool on the tray for a few minutes before transferring to a cooling rack.

Decorate as desired. These cookies can be stored at room temperature in an airtight container for one week.

Tip

A good substitute for dōTERRA Baking Spice Cuisine Blend is dōTERRA Cinnamon Bark and Ginger essential oils.

Spiced Cookie Sandwiches

approx. 19 cookie sandwiches

Ingredients

1 cup unsalted butter, softened

1 cup brown sugar

½ cup molasses

2 eggs

5 drops dōTERRA Baking Spice Cuisine Blend

1 teaspoon kosher salt

1 teaspoon baking soda

3½ cups all-purpose flour

Filling

½ cup heavy whipping cream, cold

½ cup mascarpone or cream cheese, softened

2 tablespoons powdered sugar

Method

Preheat the oven to 180°C.

Using a stand mixer with a paddle attachment or a hand mixer, cream the butter, sugar and molasses until light and fluffy. Add the eggs, mixing well.

Add the dōTERRA Baking Spice Cuisine Blend. Fold in the flour, salt, and baking soda until incorporated. Don’t overmix. Scoop the dough evenly onto lined cookie sheet. Bake for 8–10 minutes. Remove from the oven and cool completely. While the cookies are cooling, using a stand mixer with a whisk attachment or a hand mixer, whip the heavy cream and powdered sugar to stiff peaks. Then, whip in the mascarpone or cream cheese until incorporated. Transfer to a pastry bag and pipe over half of the cookies. Sandwich a second cookie on top.

Pink Pepper Parmesan Crackers

approx. 20 crackers

Ingredients

½ cup whole flaxseed

½ cup ground flaxseed

10 drops dōTERRA Pink Pepper essential oil

⅓ cup finely grated parmesan cheese ½ teaspoon salt ½ cup of water

Method

Heat oven to 200℃°C, line a large baking tray.

Mix all the ingredients together in a bowl. An easy way to achieve similar size crackers is to divide the mix into 4, and then divide each quarter into 5 pieces. Use your hands to roll each piece into a ball and flatten each cracker onto the tray.

Bake for 15-17 minutes. Allow to cool on the tray before storing in an airtight container or packaging for gifts.

Tip

dōTERRA Fennel essential oil is a delicious substitute for the dōTERRA Pink Pepper essential oil in this recipe.

Fennel and Orange Salad with Pink Pepper Dressing

Ingredients

For the dressing

2 teaspoons white wine vinegar

8 drops dōTERRA Pink Pepper essential oil

1 teaspoon salt flakes

4 tablespoons olive oil

For the salad

1 bulb fennel, thinly sliced

1 orange, peeled and sliced

½ red onion, thinly sliced

2 radishes, thinly sliced

Method

Blend all the dressing ingredients together in a small bowl.

On a serving platter, layer the fennel, orange slices, onion and radishes. Drizzle with the Pink Pepper dressing and garnish with fennel fronds.

Tip dōTERRA Wild Orange essential oil is a great substitute for a refreshing salad dressing.

Baked Lemon & Pink Pepper Snapper

Serves 4

Ingredients

Equivalent of 2 bunches of fresh herbs, can include parsley, dill, mint, coriander

2 lemons, sliced into rounds

6 drops dōTERRA Pink Pepper essential oil

1 tablespoon olive oil

1.6kg of fresh Snapper fillets

Sea salt flakes

Method

Heat oven to 180℃°C.

Line an oven proof serving dish with half of the herbs, and place half of the lemon slices on top.

Lay the fish fillets onto this fragrant ‘nest’ and sprinkle with salt flakes. Add the dōTERRA Pink Pepper essential oil to the olive oil and drizzle over the fillets.

Lay the remaining lemon slices on top of the snapper and cover with the remaining herbs. Place the dish in the oven and bake for 25 minutes. Allow the dish to cool slightly, retaining the steam, before removing the top layer of herbs to serve.

Tip

This method can also be used with a side of salmon or lamb backstraps. For a citrus burst, substitute dōTERRA Pink Pepper essential oil with dōTERRA Wild Orange and Lemon essential oils.
