RECIPE TREASURES

Carol’s Holiday Favorites Biscotti-Crusted Pumpkin Pie CRUST: 5-6 Chocolate-dipped biscotti, broken into pieces 2-3 tablespoons butter, melted ¼ cup chopped pecans (optional) Place biscotti, butter and nuts in food processor and pulse until mixture is moistened and comes together. It will be chocolate in color. Press firmly in bottom of pie dish and bake at 350 degrees F for 10 minutes. Let cool. FILLING: 15 ounce can of pumpkin ¼ cup honey 1¼ cup non-fat milk 1 tablespoon orange zest 2 eggs, slightly beaten

1 teaspoon cinnamon 2 tablespoons butter, melted ½ teaspoon ground ginger ½ cup sugar ½ teaspoon ground nutmeg

Mix all ingredients together and pour into cooled crust. Bake at 350 degrees F 45-50 minutes until knife inserted in center is clean. (If desired, top with a dollop of whipped cream.) Cool and enjoy!

Cheese & Olive Balls 16 ounce jar of medium-sized pimentostuffed Spanish olives, drained 2 cups shredded “extra sharp” cheddar cheese (not pre-packaged) 1¼ cups flour 12 cups butter, at room temperature Mix cheese, flour and butter. Work into a dough (may use food processor on pulse until the dough comes together). Take a generous tablespoon and roll into a ball, flatten with palms of hand and roll around an olive (like a little meatball). Makes about 40. Chill for at least an hour. Place on an ungreased cookie sheet about 2 inches apart. Bake at 400 degrees F for 10-15 minutes, just until bottoms are browned. Serve warm with a glass of wine or a cocktail. Delish!!

The current designs, materials and creative water features are making them

more of a show piece and a standard in high-end properties, to the point that luxury homes that do not have one are now seemingly at a disadvantage. Additionally, even my non-pool buyers don’t mind having them if they are done in such a way that they create an inviting outdoor space to enjoy. There are several new homes being built in Talega, and existing homeowners who are also considering changes to their yard. I felt this information would be helpful and relevant when homeowners are considering their yard options and how it may relate to resale value. Wrist circles are an easy, yet effective, exercise drill you can do to help improve the suppleness of your wrists. Sit or stand in an upright position, with your upper arms close to the body. Bend your elbows until your forearms are parallel to the floor and hold your hands palms down with a loose fist. Circle your wrists clockwise five times and then circle your wrists five times counterclockwise. Do this drill 2-3 times as a part of your warm up routine prior to beginning your weight-bearing exercises. For health reasons, I need to eliminate all dairy food from my diet. I am concerned that I will not be able to consume the daily calcium requirements. Leafy greens are known to be a good source of calcium, but can you provide me with other foods that are dairy-free AND calcium rich?

have had many discussions as of late regarding the value of a pool in Talega on higher-end properties. I know from my own transactions that the highest price per square foot (PPSF) in sales are coming from the type of properties that agents consider to be a “trophy property.” A trophy property is one that has nice views, is located on a culde-sac or low-traffic street, has a pool, and is professionally landscaped and decorated like a model. Considering all of those combined features, these properties should get the highest price, but not every property has that combination so we can look at the averages in Talega to get a general idea. I broke down Talega sales for 2014 into a few categories to see some basic averages. Properties that are over 4,000 sf in Talega averaged $331 PPSF with a pool and $283 PPSF without a pool. On average, that is $48 more per square foot for pool homes, which is significant considering the size of the homes. On homes between 3,500-4,500 sf in Talega, the average PPSF with a pool was $323 while the non-pool homes were $289. On homes under 3,500 square feet, the pool homes averaged $325 PPSF where the non-pool homes averaged $314 PPSF, leaving only an $11 difference between the two. Looking further

When buying kale, look for firm and deep-colored leaves. Store kale in a plastic storage bag or container and remove as much air from the bag as possible. Kale can be stored in the refrigerator for up to 5 days.

Debunking a Few Popular Retirement Myths Certain misconceptions ignore the realities of retirement. Generalizations about money and retirement linger. Some have been around for decades, and some new clichés have recently joined their ranks. Let’s examine a few. “My taxes will be lower when I retire.” You may earn less, and that could put you in a lower tax bracket. On the other hand, you may end up waving goodbye to some of the deductions and exemptions you enjoyed while working, and state and local taxes will almost certainly rise with time. So while your earned income may decrease, you may end up losing a comparatively larger percentage of it to taxes after you retire. “I started saving too late, I have no hope of retiring—I’ll have to work until I’m 85.” If your nest egg is less than six figures, working longer may be the best thing you can do. You will have fewer years of retirement to plan for, so you can keep earning a salary, and your savings can compound longer. Don’t lose hope; remember that you can make larger, catchup contributions to IRA’s after 50. If you are 50 or older this year, you can put as much as $23,000 into a 401(k) plan. Some participants in 403(b) or 457(b) plans are also allowed that privilege. You can downsize and reduce debts and expenses

to effectively give you more retirement money. “I’ll live on less when I’m retired.” We all have the cliché in our minds of a retired couple in their seventies or eighties living modestly, hardly eating out and asking about senior discounts. In the later phase of retirement, couples often choose to live on less, sometimes out of necessity. The initial phase of retirement may be a different story. For many, the first few years of retirement mean traveling, new adventures and “living it up” a little—all of which may mean new retirees may actually “live on more” out of the retirement gate. “No one really retires anymore.” It is true that many baby boomers will probably keep working to some degree. Some people love to work and want to work as long as they can. What if you can’t, though? What if your employer shocks you and suddenly lets you go? What if your health won’t let you work forty hours or even ten hours a week? You could retire more abruptly than you believe you will. This is why even workaholics need a solid retirement plan. T

he minute you meet Carol and Ron Gillespie, you can’t help but notice their incredible zest for life and feel the warmth of their welcome. Ron’s family is from the small town of West Warwick, Rhode Island. Since his grandfather was the Chief of Police, his family was well known in the community. Carol ultimately settled there as well. Carol and Ron both attended John F. Deering High School, becoming proverbial high school sweethearts after a bumpy start. Ron was a senior and Carol was a sophomore. Since Carol was the Chairman of the Social Committee, she was a bit disconcerted about not having a date for the big fall dance. One of her best girlfriend’s was dating a nice young man and offered to find one of his friends that would fit the bill. With Carol’s dad out of the picture and her mom’s recent passing, she was living with a very strict aunt. Ron called and asked her to be his date. Carol said “yes” but neglected to get his last name. So, her aunt emphatically said she wouldn’t be allowed to go with someone that she clearly didn’t know well enough to even know his complete name. Carol said, “Ron was pretty miffed about that and took another girl.” Going alone to the dance, Carol went up to him and tried to apologize but he didn’t really believe her story. She said, “But I DON’T know your last name!” He curtly replied, “Gillespie.” By the time of the Christmas dance, Ron

decided to try again. She knew his full name now and was allowed to go. After graduation, Ron joined the Air Force and Carol finished school. They wrote to each other, breaking up a couple of times, but finally getting back together after his return from overseas. They were married on November 25, 1961 – the official beginning of their life together. Ron’s time in the Air Force took him to the U.S. Air Base in Thule, Greenland – located 600 miles from the North Pole – as one of a small crew responsible for radar maintenance. Ron says, “You never go outside. I got a lot of studying done to get ready for college.” Carol smiled, “Along with a lot of letter writing to me.” During his sojourn in this remote location, he completed several United States Armed Forces Institute (USAFI) classes administered by the University of Maryland. Ron went on to obtain a technical degree from the University of Rhode Island in Radio and Electronics. In those days, the aerospace industry was booming. In a flash, Ron had three excellent job offers and chose to join Garret Air Research. They lived in Redondo Beach, then bought a house in Torrance and eventually decided on a move to the fledging Orange County city of Laguna Hills. Ron commuted for a couple of years, but decided to accept a position at Ford Aerospace (owned by Ford Motor Company) in Newport Beach to be closer to home. Needing a larger

place, they started to build a new home in the San Juan Hills community of Stoneridge. However, corporate turbulence was ahead. Loral bought Ford Aerospace. Lockheed bought Loral and decided to shut down the Newport facility. Lockheed offered to relocate the family to Orlando and they took a trip to explore the city. According to Carol, “we were wined and dined” but still weren’t convinced it was the right path. Coming full circle, Ron approached his former company. (After his departure, Garrett became Allied Signal and then Honeywell.) Literally down to the wire before they had to sign a contract accepting the terms of the move, Honeywell made an amazing offer, including the bridging of his benefits to make a financially secure retirement even more feasible. The Gillespie family happily moved to San Juan Capistrano, the kids stayed with their schools and Carol was able to stay at the job she loved as an Ultrasound Specialist. During his tenure at Honeywell, Ron worked on the Apollo 13 project team chartered with building the Environmental Control System for the Command Module. In fact, he was in the room the moment the phone call was received that the Apollo 13 spacecraft was in trouble. It turns out that the Command Module canisters were square and the lunar module canisters (built by Grumman) were round. This nearly catastrophic dilemma is immortalized in the movie with Tom Hanks. Ron also worked on the Mercury and Gemini projects as well as on the F18 fighter plane for the Navy. He retired in 2005.

Living with her aunt’s family and without a mom or dad, college was out of the question for Carol. She became a successful hair stylist. After eight years, she decided to follow her heart’s desire to do something in medicine. Carol completed the X-ray Technician coursework at Daniel Freeman Hospital School of Radiology (Inglewood, California). After her interview and acceptance into the school, she was so ecstatic that she jumped up and clicked her heels together! After having this prerequisite under her belt, she was accepted into the Ultrasound Technician Program through UCLA. Following graduation in 1979, she worked as an Ultrasound Technician at Mission Hospital for 16 years. Carol then left to spend two years at Scripps in La Jolla, completing specialized training

in fertility and vascular techniques. She returned to Mission Hospital, staying another 14 years until her retirement seven years ago. Carol also ran her own freelance ultrasound business for over 25 years – meaning eight hours at the hospital and another eight hours on her own going from doctor’s office to doctor’s office – a long 16 hour day before getting home to take care of the kids! She says, “It was a busy, busy time in our lives. But we put three kids through college, lived in beautiful homes and enjoyed great vacations.” That being said, she explains, “It was a wonderful job. I was so happy that I didn’t want to retire and lamented as the time came near.” Finally, she made the commitment to a retirement date. On her last day, she once again clicked her heels together. Carol explained, “I wanted to end the same way I started!” With the same enthusiasm that Carol and Ron approached their careers, they have approached a life of retirement full of delightful activities. Ron says with a grin, “We are doing so many things, I don’t know how we ever had time to work!” Carol adds, “We put in long hours and suffered ups and downs like anyone else but we wouldn’t change a thing. It was worth it because we are having so much fun now. My advice to the young – work your heart out and save for retirement because that’s when you get to play!” Carol explains, “These days Ron has 18 meetings, three times a week on the golf course”. On Wednesday, he plays as a member of the Lienzo Duffers. (Check out www.lienzoduffers.com and join them for round or two.) Carol and Ron also golf together most Fridays. For pure entertainment, they love the movies and the game show Jeopardy. Both are self-proclaimed addicts of the Big Bang Theory. At the invitation of a friend, they met one of the writers. The writer and Carol became close friends. They watched the taping of an episode, meeting the producers and cast. Carol also attends two different book clubs – one in the Gallery and another in San Juan Capistrano. Carol describes food as “my thing.” (Check out two of her favorite recipes in this issue.) She is the co-chef for the Gallery Wine Club (started only a year ago) with 70 members. Meeting every 4-6 weeks, a committee selects wines from regions around the world. The two chefs develop a menu of items to pair with three white and three red wines

• Stephen, their first son, is a Senior Project Manager. He lives in New Jersey with his wife, Becky. His son, Adam (A.J.), and his wife, Mary, celebrated their wedding at the Gallery Club House. They currently live in the San Fernando Valley, working as freelance 2-D & 3-D animators in the movie and commercial industry. Steve’s daughter, Dawn, also lives in New Jersey and works as a legal aide in a large law firm. She has made Carol and Ron the proud great-grandparents of Athena, a lovely 8 year old girl. • Michael, their second son, is an Electrical Engineer/ District of Sales. He lives in Oregon with his wife, Alice, and their three daughters. Alice has a degree in Chemical Engineering and is working on her Master’s Degree at Oregon State. Kaylyn is a senior in college and will be entering Veterinary School. (When Kaylyn declared her decision to become a veterinarian, Michael sold their house and built a beautiful farm. They had goats, horses, chickens, ducks, pheasants, horse, cats and dogs. After she went to college, the animals have dwindled little by little.) Jesslyn is a junior in college and about to leave for a semester in England to study writing. Madelyn is a senior in high school and is looking forward to entering college after graduation. along with a dessert wine. Quite an undertaking! In addition, Carol is the founder and president of the Talega Garden Club. About 12 years ago, the Talega Homeowners’ Association approached her after being given her name by the garden club in San Juan Capistrano. Early on, there was a conscious decision not to be registered so the focus would be on having fun and being social. With members from all over San Clemente, you don’t have to have a green thumb but just enjoy the beauty of gardens. The group also takes frequent field trips (spouses included) to special places like Santa Barbara and Paso Robles. • Ron and Carol’s daughter is Lynn Kristen. She lives in Alexandria, Virginia. She just married her husband, Tom in August of this year. Lynn is a middle school math teacher.

Tom is a Culinary French Chef graduate who has worked as a chef, manager and now bartender in the food industry for many years. Since his father is a retired Army officer, they had the honor of having their wedding at the historic Old Fort Chapel on the Fort Myer Army Base, immediately adjacent to Arlington National Cemetery. Carol and Ron went all out to make this a perfect event, taking Arthur Murray dancing lessons so Ron would be prepared for the father-daughter dance. Ron said, “I’ve never been so nervous, with beads of sweat pouring down my face” before class. After hours of rehearsal to the selected song (“My Girl”), Ron forgot everything other than enjoying “lovely conversation with his girl!” Carol and Ron moved into their Gallery home, as original owners, two days before their anniversary in 2001. Carol summed up their feelings. “We feel very, very lucky to be living in San Clemente and specifically in Talega for our retirement. Our world has gotten so diversified and our life is very full.” From Ron’s perspective, “We have become friends with the most wonderful people and have become very active in the community. We can’t believe our good fortune to have this ideal climate to live in, the amazing golf course and all the amenities living in Talega has to offer.” If you haven’t met them already, there is no doubt that you will see Carol and Ron soon at one of their many adventures around the community. ovember is upon us! We have a time change and all the big holidays are creeping (or should I say galloping) our way. Thanksgiving is a favorite time for my family. There is limited pressure and maximum enjoyment. Whether we plan a large meal or do a potluck or go out to dinner (my favorite these days), we are able to enjoy each other. For those of us with dogs at home for the big Thanksgiving meal, or going to a home with dogs, there important things to know. Some foods can potentially cause severe consequences to a pet’s health. • High fat foods (such as turkey skin with marinades, oils and spices) can be hazardous. These foods may lead to pancreatitis. The symptoms are abdominal pain, vomiting and lethargy. • Cooked bones can splinter inside the digestive track and can mean a costly trip to veterinary emergency hospital. • Even cooked, onions and garlic are toxic and can lead to anemia. • Alcohol (especially the hops in beer) is toxic and should not be shared with your dogs. • Nuts (particularly macadamias and walnuts) are toxic and can cause elevated heart rate, inability to stand, tremors, vomiting and fever. • If ingested, dough can rise in your pet’s stomach and cause bloat – a potentially deadly situation. My dogs are not allowed in the kitchen when I am in there, no matter what I am doing. I am always working on boundary training. There is a fixed line in the tile that they are not allowed to cross. The potential for them to scarf up something, or even get physically hurt by me dropping something boiling hot that I am cooking, is a situation I am not willing to chance. Hopefully, these thoughts will help keep your animals safe during the holidays! Lucky is a 2 1/2 year old female German Shepard mix. Her "dad" was in heart failure and had to relinquish her to our shelter. She would love to
