O
riginally the branch of a banking institution, 99 Hanover Street is an eclectic mix of inviting armchairs, flickering candles, decadent lighting, stone walls, opulent drapes and dark wood. Entertainment is provided seven nights a week, though the bar truly comes into its own as a pre-club destination, as a young and stylish clientele descends upon the venue to kick off their weekend. The bar has even had its share of celebrity clientele, with David Beckham recently stopping traffic by dropping in for a spot of filming.

Amicus Apple 17 Frederick Street Edinburgh EH2 3EY T: 0131 226 6055 www.amicusapple.com @AmicusApple ftdedin
I
t’s quite fitting that Amicus Apple’s cocktail list shares many of the features of the bar itself, being stylish, contemporary and clearly not taking itself too seriously. This isn’t intended as a slight; Amicus Apple is about as down to earth as a city centre cocktail bar can be. Famous for its cocktails, each lovingly prepared and expertly presented, the bar staff are always more than happy to mix your favourite tipple should it not be on their list. The bar has a permanent Friday night feel about it regardless of the day of the week, with the mood lighting and funky music all adding to the vivacious vibe.

ew bars are as immediately impressive as the stunning Angels Share. With cream leather banquettes and a ceiling lined with chandeliers, the visitor may feel they have been magically whisked away to a New York style bar. However, the framed photographs of famous Scots that adorn the walls help restore a sense of location. Although the bar boasts an extensive selection of whiskies, wines and beer, cocktails are its speciality; the house signature, Flower of Scotland, blends raspberry vodka, champagne and sugar syrup, elegantly decorated with a floating flower head. It also has a speakeasy style lounge which opens until 3am, in the basement.

resh from a recent refurbishment, The Basement has retained its charm and intimacy while simultaneously injecting the venue with renewed flash and vigour. As well as a series of tequila based cocktails the bar also stocks 40 different brands of Tequilas and Mezcals, each can be washed down with a shot of homemade sangrita. As you would expect the menu includes tacos, empanadas and fajitas, with guacamole freshly prepared at your table to suit your specifications.

he Bow Bar is a typical traditional pub, with a mahogany gantry loaded with more than 280 malts. The staff are enthusiastic about the whole subject of whisky and are happy to help you select a dram to suit your palate. As well as whisky, the pub also offers real ales served from a row of gleaming brass tall founts and a great selection of bottled beers too. Food, however, is limited to lunchtime pies and soup, but its friendly banter and no music policy means you hardly notice. The bar is small and can get very tight during busy periods, which given the quality of cask ales, range of whiskies and tasty, Scottish food, happens often. It is a music-free bar, but during rugby matches the TV has pride of place, with Kay’s considered one of the best bars to watch rugby in Edinburgh.

nspired by the jazz age glamour of the 1920s, The Bar is the social heart of Gleneagles Hotel. The Bar offers a selection of more than 120 single malt whiskies, vintage champagne by the glass and excellent wines. The Blue Bar sits a little further down the road in The Dormy Clubhouse, and serves as a showcase for Johnnie Walker Blue Label whisky. Should you wish, you can even buy your own bottle, which will be safely locked away until your next visit. With four, L-shaped blue leather sofas, luxurious throws and a large circular fire-pit, there’s something decidedly decadent about The Blue Bar.

escribing itself as a ‘subterranean late-night tavern’, The Tippling House has the character of a 1920s speakeasy bar and is a real gem on the Aberdeen bar scene. The chalet-esque wooden interior and low lighting lend intimacy to this small, but perfectly formed bar, and the attentive table service means that you never have to worry about leaving the comfort of your boothed seating. The cocktail menu may change with the seasons but the quality doesn’t; the drinks here wouldn’t look out of place even in the most exclusive of London style bars, being perfectly balanced and exquisitely presented.
