This time we have also included a couple of recipes devised by Malmaison for its autumn cocktail menu and a couple from Hickory. They look delicious. By Test the Best Cadenhead’s Old Raj Gin is distinctive in that it contains a measure of saffron, the rare and costly spice derived from the crocus flower. In addition to a slightly spicy flavour, this also imparts a pale yellow colour to Old Raj. The addition of saffron is undertaken personally by the Company master blender in order to ensure a consistency in flavour and colour each time Old Raj is bottled. Available at 46% and 55% ABV.

INGREDIENTS • 40ml Brockmans Gin • 20ml Freshly squeezed lemon juice • 15ml Sugar syrup • 15ml Creme de Mure Garnish: Fresh Blackberries

METHOD Shake the first three ingredients with ice, strain into a chilled cocktail glass. Pour over the blackberry liqueur and garnish with a couple of blackberries.

A simple cocktail that can easily be rustled up in pitchers.

INGREDIENTS • 1 part Edinburgh Gin • 2 parts Elderflower Edinburgh Gin • Cloudy apple juice • Fresh lime • Apple, to garnish • Ice

METHOD Add the Edinburgh Gin and Elderflower Edinburgh Gin to a glass (jar or pitcher!) Top up with ice and the cloudy apple juice then add a squeeze of lime to taste. Garnish with freshly sliced apple and enjoy!

Tamdhu 10 Year Old Ice Sweet vermouth Bitters Orange rind

METHOD

Pour a double measure of Tamdhu 10 Year Old in a stirring glass with ice. Add one measure of sweet vermouth, two dashes of bitters, stir and strain then garnish with an orange rind.

INGREDIENTS • 70ml Absolut Citron • 30ml Orange liqueur (Cointreau or triple sec) • 40ml Lime juice • 20ml Spiced syrup (see recipe below) • 70ml Cranberry juice For the spiced syrup (makes 100ml) • 100g caster sugar • 150ml water • 1 tsp grated Cinnamon • 1 tsp grated Nutmeg • 1 tsp grated All spice Add to a pan and reduce down to a nice thick syrup.

METHOD

Shake Absolut Citron, orange liqueur, lime juice, spiced syrup and cranberry juice in a cocktail shaker with ice. Strain into a chilled martini glass.

• 100ml Drambuie or similar • Rich honey liqueur • 50ml Orgeat syrup • 2 tbsp Quality cocoa powder • 50g Dark chocolate • 1 litre Semi-skimmed milk • Cinnamon • Marshmallows

METHOD

Mix this all together with hot milk in a large pan, whisk well and bring to a gentle simmer. Serve in a warm mug and top with marshmallows and a dusting of cinnamon. hickoryfood.co.uk/hickory-bars
