A SPOTLIGHT ON SCOTLAND’S TOP SUPPLIERS

This year’s 2017 Supplier’s Guide, is the only guide of its type in Scotland. It has been designed to give you, our readers, a comprehensive guide to services to the Scottish licensed trade. Whether you are looking for a licensing lawyer or a reputable company to clean your beer lines – this guide aims to make your life easier. As well as a comprehensive list of services we also have the most definitive listing of brands available for you to stock in your pubs, clubs, restaurants and hotels, and we have endeavoured to tell you who owns them, or distributes them, too. It is difficult keeping abreast of all the changes, but we have done our very best. Last year some people told us they referred to our Supplier’s Guide every day... while others have said it is an ‘invaluable tool’. I hope the 2017 guide is just as useful. It is also available online at dramscotland.co.uk. We always welcome feedback and if there is something you would like to see included next year, let us know. Susan Young, Editor

ALES BELHAVEN Belhaven Best remains the best selling ale in Scotland. Last year saw Belhaven return to sponsor Scottish Golf. In fact, Belhaven Best has been Scottish Golf’s Official Beer Partner since 1999, making the brand one of Scotland’s longest standing golf sponsors. The ale is affectionately known as ‘The Golfer’s Pint’ by club members. As well as its flagship ale, Belhaven also supplies a range of traditionally crafted ales such as the rich, smooth 80 Shilling and fruity St Andrews ale. Belhaven’s Speciality Craft Beers range includes Twisted Thistle IPA, Speyside golden ale and Belhaven Scottish Ale, all made from 100% Scottish barley malt. In April 2016, Belhaven was also named the official beer of New York’s annual Tartan Day Parade for the second year.

MCEWANS One of Scotland’s most popular drinks brands, McEwan’s, celebrated its 160th anniversary in 2016 with number of events and promotions held throughout the year. Key among them was Party at the Palace, a music festival held in August in Linlithgow sponsored by McEwan’s which saw headliners Billy Ocean and the Proclaimers perform in front of 15,000 music fans, with 30,000 pints served over the weekend. McEwan’s brewed its very first IPA in 1857, one year after it was established in Edinburgh by William McEwan. Today, it produces a new McEwan’s IPA based on the original alongside popular lines McEwan’s Champion Ale, McEwan’s Export and McEwan’s Eighty Shilling, a heavy premium ale that follows its traditional recipe from the 1850s.

DEUCHARS IPA Edinburgh-based Caledonian Brewery is best-known for its flagship ale, the iconic Deuchars IPA. Created by Caledonian’s brewers in 1991, it remains one of Scotland’s best-loved ales. The rich, fruity and hoppy ale has won over over 40 awards, including CAMRA Supreme Champion Beer of Britain and World Champion Cask Ale. To celebrate its 25th anniversary, the brewery released Deuchars Imperial IPA in October 2016. Last year, Caledonian Brewery also unveiled the latest edition to its Seasonal Best ales, Autumn Red, which joined other seasonal varieties First Dawn, Golden XPA and Cold Comfort. The company also extended its partnership with the Edinburgh Fringe Festival for a further three years.

BOURBON BUFFALO TRACE Described as “one of the World’s great whiskies” by whiskey writer Jim Murray, Buffalo Trace is gently aged in new American oak barrels to create a perfectly balanced flavour of sweet, oak and spice, with a long, smooth finish. Recent awards include Double Gold for Best Straight Bourbon at the San Francisco World Spirits Competition and Double Gold in the Fifty Best Bourbon Whiskeys 2016. Distributor Hi-Spirits organises regular Buffalo Trace cocktail competitions, as well as a programme of tastings and masterclasses to build appreciation of the bourbon category. Hi-Spirits: www.hi-spirits.com

MAKER’S MARK Notable for its exceptional flavour and signature red wax cap, Maker’s Mark Kentucky Bourbon is one of the top five imported whiskies in the Scottish on-trade and the number two American brand sold across the UK on-trade. In 2016, UK distributor Maxxium launched Maker’s 46 in the UK. Bottled at 47% ABV - 2% higher than the original Maker’s Mark - it is made by ageing the original bourbon for several more months, adding seared French oak staves to the barrel for a bigger and bolder flavour. The name refers to the 46th recipe founder Bill Samuel’s Sr tried before finally creating the Maker’s Mark combination.

BULLIET Bulleit is one of the fastest growing premium bourbons in the US. In 2016, Bulleit Kentucky Straight Bourbon won double gold at the 16th Annual San Francisco World Spirits Competition. Diageo brought a higher 45% ABV version of Bulleit Bourbon to the UK in 2014 alongside Bulleit Rye, which is made with 95% rye versus the industry standard of 51% to create a dry and spicy finish. According to Diageo, bartenders enjoy the brand’s especially high rye content for its bold, spicy character and smooth finish, making it a good fit with cocktails.

TINCUP Tincup, a bourbon-style whiskey, was introduced to the UK on-trade in 2014 by Proximo Spirits and has become a popular back bar staple ever since. This 42% ABV whiskey comes from Colorado rather than Kentucky and blends two American whiskeys aged in charred oak barrels. “High rye” bourbon, distilled and aged in Indiana, is married with a small amount of Colorado single malt whiskey, and then cut with Rocky Mountain water. Named after a goldrush era mining town in the Colorado mountains, Tincup was created in honour of the state’s first drinkers, the miners who settled in the mountains and drank their whisky from tin cups.

THE UK’S BEST-SELLING FRUIT CIDER BRAND

CGA Packaged Cider Report, MAT to 03.09.16

CIDER KOPPARBERG Every drop of Kopparberg is imported from Kopparberg town, Sweden. Built in 1882, the Kopparbergs Bryggeri (Koppaberg Brewery) remains independent and is owned by the Bronsman family. The brewery is home to the brand’s uniquely refreshing fruit cider and fruit lager. A pioneer in premium fruit refreshment, Kopparberg was the first fruit cider in the UK and is today, Kopparberg’s Mixed Fruit and Strawberry & Lime variants remain the top two best-selling packaged ciders in the UK on-trade. In 2016, Kopparberg invested £6m in a new consumer marketing campaign. Its alcohol-free fruit ciders also continue to be popular, especially in the on-trade as more consumers require responsible alternatives on a night out. Having topped the cider industry, early 2016 also saw Kopparberg move into the beer market with the launch of its Fruit Lager. Bottled at 5% ABV, the new range was initially available in Lemon & Lime flavour.

THISTLY CROSS Thistly Cross Cider has grown from beginnings at East Lothian farmers’ markets, to national and international success, now available across the UK and in 44 US states – winning an array of awards along the way. Thistly’s craft ciders, handmade in the east of Scotland, are made from real fruit, pressed by hand and matured for upwards of six months. Their core range consists of: Original 6.2%, Traditional 4.4%, Whisky Cask, Real Strawberry, Real Ginger and Real Elderflower. Also produced on the farm is Jaggy Thistle, a Scottish Scrumpy, slow-fermented and matured in sherry casks. Ciders are available in kegs, bottles and ciderboxes.

MAGNERS Magners is the third most popular packaged cider brand in the UK. In 2016, Magners put its position as an original ‘true cider’ since 1935 at the centre of a huge packaging rebrand, backed by a multi-million pound media campaign. In May, the ‘Hold True’ campaign relaunched the Magners bottle along with new packaging across all cans, and saw Magners Golden Draught replaced across the on-trade with Magners Original draught. In April 2016, Magners also agreed a new four year extension with Celtic in a deal which will see it feature on the Glasgow side’s kits until the end of the 2019/20 season.

STRONGBOW Strongbow, the UK’s number one Cider and continues to dominate the Cider category. Recent research shows that when there is only one apple cider on the bar, Strongbow has 45% higher throughput than any of its rivals. Strongbow Dark Fruit is going from strength to strength, more than tripling its market share this year to 13.3% (vs 4.1% last year) and becoming the UK’s third most popular draught cider. As well as adding more absolute volume growth to the Draught Cider category than any other cider, 70% of Strongbow Dark Fruit sales are incremental and help grow the total Beer & Cider category in the On-Trade.

CRAFT BEER CALEDONIAN BREWERY In 2016, Caledonian Brewery released Coast to Coast, its American pale ale, and Three Hops lager in bottles. Both beers had previously been sold only on draught in the on-trade and were part of a series of four seasonal beers created in it’s pilot plant dubbed ‘Wee George’, built within the Heineken-owned brewery’s main Edinburgh site. Caledonian will launch another range of seasonal beers in 2017 and will also refresh the label design and packaging of Coast to Coast. In October 2016, Caledonian also launched its first black lager, Dark Light. Bottled at 4.7% ABV, it is inspired by Schwarzbier (black beers) originally brewed in southern Germany.

INNIS & GUNN Edinburgh-based Innis & Gunn, UK’s second-largest independent craft brewer, behind its Scottish rival BrewDog launched its most innovative beer to date, Sky PA, in 2016. The new beer was made using water harvested from the clouds above Moffat using an special airborne device. The November launch coincided with Adventure Capital, Innis & Gunn’s crowdfunding campaign that saw the company raise over £2m in equity from hundreds of backers. The funds will help the brewer roll out its popular Beer Kitchen format. Last year, Innis & Gunn opened its third Beer Kitchen in St Andrews on G1 sites. In Spring 2017, it will open its biggest bar to date in Glasgow’s Ashton Lane, complete with an on-site brewing facility.

TEMPEST - MEXICAKE Tempest have had a stand-out year winning multiple awards including sweeping the board at the Scottish Beer Awards winning five taste awards, Growth Business of the Year and Scottish Brewery of the Year. One of those taste awards - “Best Speciality Beer” – went to Mexicake, their rich and decadent cake inspired imperial stout. A careful balance of Ceylon cinnamon, fresh vanilla beans, cocoa, Mulato chillies, and Chipotle peppers mingles effortlessly with the blend of dark malts, creating a beer that’s sweet and complex with a smooth and velvety mouthfeel. This is the perfect example of Tempest’s creativity and knack for developing unique flavour profiles that won them so many awards in 2016.

CROMARTY BREWING CO Independent, Inverness-based Cromarty Brewing Co is holding its own in the competitive Scottish Craft Beer sector. In 2016, the family-run microbrewery released a number of new products including Whiteout, a hoppy 3.8%ABV session white IPA brewed with modern classic hops such as Citra, Motueka and Mosaic. To celebrate the launch, Cromarty Brewing Co ran an online competition to win weekend break in its home town of Cromarty. The company initially found success with its award-winning Happy Chappy pale ale in 2012. Its core range also includes Red Rocker red rye beer and malty porter, Ghost Town.

GIN EDINBURGH GIN Small-batch distiller and winner of multiple awards, Edinburgh Gin continues to craft the gin renaissance from Scotland’s capital. Each bottle is distilled at the Edinburgh Gin Distillery and at their recently opened second distillery, Edinburgh Gin at The Biscuit Factory, in the historic port of Leith. Edinburgh Gin is dedicated to producing quality, contemporary gin and committed to using botanicals native to Scotland in all their products. Driven by the pursuit to produce quality, innovative gins, Edinburgh Gin is dedicated to bringing the science and art of distilling to the fore. Edinburgh Gin is handcrafted in small batches with the finest Scottish juniper berries, pine, heather and nine other carefully selected botanicals. As well as the classic Edinburgh Gin, the core range also features the navy strength Cannonball Gin and Seaside Edinburgh Gin, distilled with foraged seaweed, scurvy grass and ground ivy from the Scottish coast. Perfect for shaking up some cocktails, Edinburgh Gin offers a range of fruit Gin Liqueurs which are handmade in Scotland. These include; the popular Raspberry Liqueur, a clean Elderflower Liqueur, a tangy Rhubarb & Ginger Liqueur and recently released Plum & Vanilla Gin Liqueur, perfect for the festive season. Each of the liqueurs are 20% ABV and available in 50cl and 20cl bottles.

MAKAR Makar Glasgow Gin is the award winning premium handcrafted gin produced by The Glasgow Distillery Company. Distilled in small batches in a copper pot still, named Annie, Makar is a luxuriously smooth juniper forward gin entwined with seven other botanicals to a create the perfect balance. The bright and robust flavour of Makar makes it perfect for gin-led cocktails and invigorating with a premium tonic and fine slice of fresh green chilli to garnish. Building on the success of Makar, three new brand extensions have been added to the range – Makar Old Tom and limited editions, Makar Oak Aged and Makar Mulberry Wood Aged Gin. For more information visit www.glasgowdistillery.com @MakarGlasgowGin

POETIC LICENCE Based in a bar of the same name on the North East coastline, Poetic License craft artisan spirits on 500L pot still, Gracie. Their ethos: break tradition and be bold. Additions here and omissions there transform the original you know so well into something with much more character. Their critically acclaimed Northern Dry Gin and Old Tom Gin offer unexpected, punchy flavours, while their Graceful Vodka is gloriously smooth. They also have seasonally inspired creations, which take inspiration from the time of year for their flavours, and ‘Rarities’ which are one-off batches of whatever they fancy making. Perfect for the Wild Spirits amongst you!

BROCKMANS Brockmans Gin, the ‘gin like no other’, is a super-premium 40% ABV gin distilled using quality botanicals from around the world. The top note of Bulgarian coriander has an aromatic, gingery orange flavour, which marries beautifully with the softer, more rounded harmonies of blueberries and blackberries and the bottom note created by juniper berries from Tuscany. This inspired combination, together with the dry, bitter-sweet peel of Valencian oranges, elongates the deeper tones and gives Brockmans an intensely smooth taste. Brockmans Gin is made in the heart of England and packaged in stylish and tactile black glass.

LAGER - DRAUGHT TENNENT’S 2016 was another fantastic year for Scotland’s favourite pint. We entertained the nation with our award winning digital and social campaign’s including the latest Wellpark animated series and T5’s videos. 2016 was also the year that Tennent’s “broke the internet” with our Haste Ye Back video during Euro 2016 and spoof of the John Lewis Christmas ad . This year also saw Tennent’s Lager continue our support of the on trade with engaging consumer ROS kits, the introduction of new glassware and the roll out of an innovative, unique, customisable fount which delivers brilliant stand out in outlet and is a real talking point amongst customers and drinkers. We’ve supported the Scotland National team every step of the way during the World Cup Qualifiers in 2016 and this will continue in 2017 including a historic fixture against England at Hampden in June. 2017 will also see us enhance our support of Scotland’s favourite pint with above the line, up- weighted social/ digital activity, our innovative take on 5 a sides with T5’s and in outlet programmes including improved brand visibility, staff training and the completion of the roll out of our new fount. Thank you for your custom and here’s to a successful 2017. We look forward to supporting your business and sharing the detail of our plans in the year ahead.

CARLING Carling, the UK’s largest beer brand, has risen to become the second biggest selling lager in Scotland. According to Molson Coors, the brand is proving popular with 18 to 24 year olds who “don’t aspire to drink what their dad drank”. In 2016, Carling was announced as the official beer partner of Dundee United Football Club. The deal spanning two seasons sees Carling granted exclusive pouring rights at Distanced Park and the marketing rights to promote the association to the club’s global fan-base and the brand announced its sponsorship of the Premier League in a three-year deal. Carling also partnered with Sky Sports to launch a new Friday night football show called ‘Carling In Off The Bar’.

HEINEKEN Throughout 2016, Heineken focused its marketing campaigns around the brand’s long-term commitment to encourage responsible drinking. In early 2016 it launched the ‘Moderate Drinkers Wanted’ the campaign that included a TV advert suggesting moderate drinkers are more attractive. In June 2016, Heineken also became the global partner for Formula One and celebrated the partnership with two advertising campaigns starring former racing drivers. One named ‘If You Drive, Never Drink’ echoed the message of drinking Heineken responsibly and starred Sir Jackie Stewart. Heineken rounded off 2016 with its Brewing Good Cheer ad campaign which used slam poetry to tell real life stories of publicans and highlight the role pubs play in building community spirit.

FOSTER’S Heineken’s Foster’s lager unveiled a new campaign in 2016 called ‘For the Thirsty’ which included a TV campaign. Andn in September the brand refreshed its branding at Glasgow’s SSE Hydro, which saw all of the bar kiosks rebranded. The move coincided with Heineken extending its official Partnership as supplier of beer and ciders to the Campus for a further 5 years. The SSE Hydro Partnership team pulled together a Facebook competition whereby fans were able to vote for their 8 favourite Scottish landmarks. The winners: Duke of Wellington Statue, The Kelpies, The Transport Museum, The Old Course, Edinburgh Castle, The Forth Rail Bridge, Kelvingrove Art Gallery and The Armadillo were subsequently represented on the Foster’s bar kiosks in the venue.

LICENSING

YOUR LICENCE IS YOUR LIVELIHOOD: TAKE IT SERIOUSLY It is not difficult to be completely at sea when it comes to licensing laws. With so much law being passed in a few short years, it is no embarrassment to admit hardship in keeping up to date. We now have the Licensing (Scotland) Act 2005, the Criminal Justice and Licensing (Scotland) Act 2010, the Alcohol etc (Scotland) Act 2010 and the Air Weapons and Licensing (Scotland) Act 2015, some of which was commenced in 2016 and some of which, such as the new “fit and proper” test, should be commenced in 2017. And we may see even more law further to the Government updating its 5 year policy on alcohol, such as advertising bans and separate tills in shops. Thanks to Stephen McGowan from TLT LLP, who says that if there is one rule to remember, it is take advice from a specialist licensing solicitor as your licence is your livelihood. THE BUCK STOPS WITH YOU You may not realise it but an offence committed by one of your staff could result in your own licence being placed at risk and you can also end up with a criminal record, even if you were not in the premises at the time. A licensing board can revoke or suspend a personal or premises licence following mistakes and breaches by management or staff. As an example, if one of your staff sell alcohol to someone under 18, they can be convicted, the premises manager can be convicted, and the premises licence holder can also be convicted, even if not physically present when the alcohol was sold. Make sure all staff have genuinely undertaken the mandatory 2 hours training. Do not pay lip service to this requirement. LSOs raise concerns all the time about staff training being poorly delivered, or worse, records being signed off when no real training has been delivered. Don’t risk it. All staff must have appropriate training before their first shift. At the end of the day the responsibility is at the feet of the licence holder – the buck stops with you. This includes making sure your staff understand the specific licence terms that apply to the premises they work

38

SUPPLIERS GUIDE 2017

in. Staff should know what is and is not allowed and this can vary from premises to premises. Staff should be re-trained on important items on a regular basis and this should be recorded. Fundamental points such as: . Challenge 25 . The premises licensed hours . Banned promotions . Refusing service where appropriate ie to someone who is drunk should all be known by everyone, not just management. Keeping decent records of all ongoing staff training is a must. If something goes wrong and you end up before a licensing hearing, or in a meeting with the police, then having evidence that you have taken all reasonable steps to stop problems from arising can only be a good thing. Although the law only requires a staff member to be trained once, a responsible licence holder will make sure the staff training is delivered properly on an ongoing basis and that proper records are kept. LSOs are entitled to ask for and review your staff training records and they often do. Don’t underestimate this. If your staff training records are not correct, the LSO might fairly think – “what else is wrong?” The training can be delivered by someone with a personal licence but ideally it should be someone who is not just a personal licence holder

LICENSING but who is half decent at delivering the training. The hospitality sector can have a high turnover of staff. You will take new people on all the time. Any time you take someone new on, the best bet is to retrain them with the 2 hour course before the start their first shift. Although previous training is transferrable to a new workplace, why risk it? How do you know that the training was properly delivered? You need to have confidence in your own staff because ultimately if they make mistakes then you are the one responsible and you can be convicted if an offence occurs. AGE VERIFICATION: HAVE A PROPER POLICY Most people now recognise the phrase “Challenge 25”. The legal age for consumption of alcohol is still 18 but your licence now has a condition that requires you to verify the age of anyone who looks under 25. Although there is no specific requirement to have this policy in writing, it is sensible to have it down on paper. How else can you prove that you have one? There are a number of forms of acceptable ID including a European Photo Driver’s Licence, UK Passport and Pass Card. A number of additional forms of ID are now alsoe acceptable including most EU national identity cards, biometric immigration documents, and military ID. However, whilst staff can familiarise themselves with all of these documents by looking at www.challenge25.com, in my experience it is safer to refuse a sale unless you are 100% sure that the ID is genuine, and if you don’t know what a military ID looks like how can you know it is real? Whilst refusal can be awkward and embarrassing for customers and perhaps staff, this is preferable to you ending up with a criminal record – so don’t risk it. MANAGER CHANGES? DON’T MESS AROUND Every premises has a named Designated Premises

Manager (DPM). This is the person whose name appears on the licence and is expected to be the day to day manager of that premises. A person can only be a DPM on one licence at a time. If you know the manager is to leave, for what ever reason, then you must remember to advise the licensing board within 7 days. This activates a grace period of 6 weeks for you to lodge an application naming a new manager. Remember that the new manager must hold a personal licence, and that he or she cannot be named on another licence. This is incredibly important. If you miss the 7 day notice, or separately if you miss the 6 week deadline to name the new manager, then the police can come calling and ask you to shut – it is unlawful to sell alcohol if the 7 days or 6 weeks deadlines are missed. Most local police and LSOs are pretty clued up as to who is named as a manager on which licence so don’t underestimate this point. Not only might you have to close for a short period until a new manager is named, ultimately the premises licence could be subject to a review. A DPM does not need to be on the premises at all times. There is a general expectation that the person named should have day to day control of the premises but there is no legal requirement for that person to be physically present. That being said, as the police and LSOs will expect the named manager to have control of staff it is sensible to have someone named who is genuinely on or around the premises on a frequent basis. WHAT YOU MUST DISPLAY IN YOUR PREMISES In addition to your weights and measures and smoking notices, you have a legal duty to display certain licensing notices too. The premises licence itself can be quite a large document, with the main licence encompassing the layout plan and the operating plan, and a separate licence “summary”. It is the separate, smaller summary document which has to be displayed prominently so it can be viewed by the

SUPPLIERS GUIDE 2017 39

LICENSING public – not necessarily just behind the bar if it cannot be read from there. The summary is usually one or two pages long and it is an offence not to have it displayed properly so make sure you’ve got this covered. The main licence, which is normally a document that could be 10 – 20 pages long and sometimes more, does not need to be displayed but it does need to kept on the premises in a safe place where it can be accessed by staff both for training purposes but also because a police officer or LSO are entitled to see it upon request. The main licence should either be the principal (original) copy, or a photocopy which has been certified by a solicitor as a true copy. It is good practice to keep a certified copy on the premises and the original in a safe place as it has to be returned to the board if any applications were made such as a change of manager. If the licence is lost or stolen, it should be reported to the police in order to get a reference number, and a duplicate requested from the licensing board, which normally attracts a small fee. In addition to displaying the summary of the licence, you must also display a notice referred to as the “Section 110” notice which details age related offences and confirms the position that alcohol will not be sold unless verification has occurred. In addition to this, if your premises allows under 18s, then a separate notice should also be on display indicating which parts of the premises under 18s have access to. There is no legal obligation to display notices or signs concerning Challenge 25, but it is no bad thing. In addition, you may also wish to display notices concerning the use of external areas and smoking areas asking customers to respect neighbours. ALCOHOL PROMOTIONS, ADVERTISING AND DISPLAYS – DO’s AND DON’TS Although there is nothing inherently illegal about a promotion of alcohol, the 2005 Act has created a list of types of promotions which are deemed to be irresponsible and

40

SUPPLIERS GUIDE 2017

therefore unlawful. The interpretation of these definitions can lead to local variances so that what might be considered by LSOs in one area, might not in another. Operators should always take specialist legal advice before running any promotions. . Types of banned promotions include: . Promotions likely to appeal to under 18s . Buy 1 get 1 free, and similar deals . “Upselling” of measures – for example an offer to “Make it a double” for an extra 50p . Unlimited alcohol for a fixed price . Promotions which encourage people to drink more than they had perhaps intended, eg “Buy two glasses of wine and get the rest of the bottle for £5” . Alcohol as a prize, unless in a sealed container for off consumption – so watch those pub quiz prizes: no round of drinks or bar vouchers please A separate rule, often confused with the rules on promotions, is the so-called “72 hour” rule which refers to the price of products. The price of alcohol product cannot be varied up or down within a 72 hour window. So if a pint is £3 on Monday, it must remain at £3 on Tuesday on Wednesday and can only be changed on the Thursday morning. If the price rises to £3.50 on Thursday, then it must stay at £3.50 for at least Thursday, Friday and Saturday, and so on. In shops and supermarkets, there are special rules about alcohol display areas and advertising. Most shops will have two areas: an area accessible to the public such as shelving in an aisle, and an inaccessible area such as a spirits display behind the counter. Alcohol advertising can only be located in one of these defined areas, so you should not have posters, vinyls or A-boards at a shop entrance unless it is part of the approved area. Alcohol cannot be displayed other than in one of these two defined areas. The area will be shown on the licence layout plan and cannot be changed without approval from the licensing board. There are special rules on mixing displays of alcohol and non-alcohol goods.

LICENSING Restrictions even apply outwith the premises - drinks promotions cannot be advertised within 200 metres from the boundary of the premises although this only applies to promotions “in connection” with the premises, so would not stop, for example, an advert on a bus shelter or a passing brewery van. SPECIAL EVENTS Premises can apply for one off extensions for local events. The treatment of these applications varies greatly across Scotland but the key aspect in each case is timing. Most licensing boards require applications to be lodged within a certain timescale, which can be anything from 6 weeks to 2 weeks before the event. Always check with your local board. An application for an event is likely to met with less favour if the “event” is not particularly special – asking for extra trading for Mrs McGlumpher’s 55th birthday is less likely to achieve success than, say, extra trading for a local festival or gala day. You should always check with your local board. In some areas, certain times of the year are treated as “general extensions” meaning you don’t need to apply. In most board areas this would include the festive season, although not all, and note that in most cases special wording would need to be in your main licence under “seasonal variations” to activate these hours. You can also host a licensed event on unlicensed premises by applying for an occasional licence but again the rules about the nature of the event and the timing of the application should be considered and specialist advice taken. PERSONAL LICENCES AND TRAINING Having a personal licence allows you to be named as a DPM, allows you to lodge occasional licence applications, and allows you to supervise/authorise staff making sales of alcohol and conduct the mandatory staff training. Obtaining a personal licence is relatively

straightforward following obtaining an appropriate training certificate from the BIIAB or other awarding body. The application form must be signed by the individual (not a solicitor) and lodged with certified passport photos. If the applicant is free of convictions, it is relatively assured that a licence will be issued – but note that the presence of convictions does not of itself mean a refusal. It will come to the context and detail of the convictions. A personal licence lasts for 10 years and is portable between board areas, although cannot be used in England & Wales. You should apply to the board where you live rather than where you work. There is also a requirement to undertake and pass a half day refresher course within 5 years of the anniversary of the issue of the personal licence, with the updated training certificate being presented to the licensing no later than 3 months thereafter. The refresher training requirement was missed by thousands of people across Scotland who lost their licence. Thankfully, the Scottish Government has now amended the law so that if you do lose your licence because of this, the original 5 year ban on reapplying has been removed. RELATIONS WITH POLICE AND LSOs It is incredibly important that the licensed trade work to have a positive, respectful relationship with police officers and LSOs. Remember that police and LSOs can enter and inspect your premises at any time and have the right to ask for documentation such as the premises licence or personal licences or staff, or to see staff training records. Despite recent tensions between the licensed trade and Police Scotland, my advice is always to contact the police if there has been an incident on your premises. Keep an incident book and record any issues. Co-operate with the Police and build positive relations with your local officers as well as licensing officers.

FIRE BALL Fireball was forged during one of the coldest Canadian winters on record, created by blending smooth Canadian whiskey with sweet, spicy cinnamon. One of the world’s fastest growing spirit brands, Fireball is best served straight from the freezer as a shot, delivering a taste like no other. Distributor Hi-Spirits continues to focus on Fireball’s strong links with the live music scene, with the brand sponsoring and promoting a range of gigs and events such as the 2016 Fuelling The Fire tour, headed by US band Less Than Jake, which played venues including the O2 Academy in Glasgow. SOUTHERN COMFORT A back-bar essential, Southern Comfort is the taste of whiskey made comfortable, offering a sweet, smooth and delicious gateway into American whiskey. The recipe was created in New Orleans in 1874 by M.W. Heron, a bartender who believed whiskey should be enjoyed, not endured. He took harsh whiskeys of the times and mixed them with his own blend of fruits and spices. Brand owner Sazerac will launch a new global strategy for Southern Comfort during 2017, while on-trade support from distributor Hi-Spirits includes a regularly updated range of suggested serves, along with POS and supporting activations to promote the brand at the point of purchase. Hi-Spirits: www.hi-spirits.com

ANTICA Antica Sambuca has played a major role in shifting perception of sambuca in the on-trade, making it a must-stock category for pubs and bars serving the big night out market. Produced by the Dal Toso family at the Antiche Distillery near Venice to a traditional recipe, Antica is an exceptional, award-winning sambuca. There are also nine flavoured variants, supported by a range of seasonal serves developed by distributor Hi-Spirits, moving sambuca from being seen as a night-time shot to an anytime refreshing long serve, broadening both the occasion and the consumer base. ‘Right from the start, Belhaven was keen to listen to what we had to say and really interested in our ideas.’ Roddy Jobson, who runs The Dining Room in Kirkcaldy together with Martyn Stewart

At Belhaven, we’ve been helping people run their own pub businesses for nearly 300 years. We have the best people on hand to provide you with training and support every step of the way – so you can build your business to be the best that it can be. Greene King, our group company, owns over 1,200 pubs across Scotland and England, from traditional country inns to city centre bars. We have standard Tenancy and Lease Agreements available as well as more innovative ways to run your business, including our Turnover Agreement – where you pay a fixed rent plus a fee based on percentage of turnover – and Local Hero Agreement – which is only 50% tied for cask beer. SUPPLIERS GUIDE 2017 57

RUM THE KRAKEN The Kraken is imported rum from the Caribbean blended with a secret recipe of 14 spices. Named after the legendary Sea Beast, The Kraken is bold, rich, black and smooth. It’s versatile too and tastes great as a shot, on the rocks or with a mixer. Its memorable bottle shape and branding makes it an eye-catching addition to any bar gantry too. Late 2016, saw The Kraken become an entirely different beast with the launch of a stunning, limited edition ceramic bottle. While the spirit and branding remained the same, the ceramic bottling is glossy black to show off the Kraken design and includes intricate raised and embossed details, including the beast’s tentacles wrapped around the bottle. Replicating a Victorian rum bottle, the bespoke vessel also features two handles like the original. The brand, distributed by Proximo Spirits, launched in the UK five years ago and is said to be the country’s fastest-growing spiced rum brand.

BACARDI Bacardi may have relinquished its title as the world’s number one selling rum brand to rival Havana Club after a global sales drop of 4% in 2015, but it is still immensely popular in the UK on-trade, particularly in Scotland where it is the No 1 selling rum. In 2016, Bacardi pledged to lead the “premiumisation” of rum by putting more emphasis on its premium rums, including dark rum and white rum. Bacardi also launched its biggest-ever integrated global ad campaign, aimed at the lucrative millennial drinkers market, called ‘Take Back the Night’. The 30-second ad directed by Oscar-winner Michel Gondry portrayed what Bacardi refers to as “nighttime archetypes,” representing how different people party.

SAILOR JERRY Last year proved an adventurous one for William Grant & Sons spiced rum brand, Sailor Jerry. It began with the launch of a series of collectable flash art bottle wraps featuring four designs by tattoo artist Norman ‘Sailor Jerry’ Collins. Displayed on a slick black bottle, the series included a homeward bound ship, an American eagle, a pin-up girl and a Gypsy, and were released exclusively in the UK and Australia. Summer saw Sailor Jerry hit the road again with The Ride, an epic nine-day motorbike tour across the UK that saw three biker teams on Sailor Jerry tailor-made Harley Davidsons complete the route, alongside a number of challenges including cliff jumping and waxing. Their exploits were shared on Facebook Live and YouTube.

CAPTAIN MORGAN’S Captain Morgan’s Spiced Gold retained its spot as the top golden rum in the UK on-trade in 2016, and was the second most popular rum overall. In fact, the brand has been a key player in making rum the fastest-growing category in 2016, and accounts for over half of all golden rum sales. The brand’s popularity was bolstered by a £4.2m advertising campaign called “Live Like a Captain”, which caused a certain amount of controversy which saw the Captain Morgan rum TV ad banned by the UK advertising watchdog for implying that alcohol can improve people’s confidence. Diageo defended the ad by saying it portrayed the attitude of the brand “camaraderie, enjoying time with friends, living life to the full,” but also taking charge of a night out and staying in control. The controversy didn’t hinder sales!

TEQUILA JOSE CUERVO Jose Cuervo is currently leading the highly competitive Mexican tequila market, accounting for 19% of the market, or 52 million litres in sales in 2015. Its core range includes Jose Cuervo Especial Gold, a golden-style tequila made from a blend of reposado (aged) and younger Cuervo tequilas. Jose Cuervo has been run by the Beckmann family of Mexico, direct descendants of Don Jose Antonio de Cuervo, since the 1800s. But in 2016, the company filed to publicly list its stocks in a move that could see it raise over £500m. At around 250 years old, Jose Cuervo is the longest-running Tequila producer in Mexico.

SAUZA This 150-year-old Mexican Tequila brand is the second largest in the world by volume behind rival Jose Cuervo. In 2016, Sauza Tequila’s packaging underwent a major refresh to communicate a “more premium and contemporary position” to consumers. Its cleaner bottle design focused on the cockerel or ‘gallo’ motif that has featured in the Sauza family crest since 1873, representing “courage, passion and perseverance”. The bottle itself is a squarer shape with more defined shoulders and carries a “Tequila Sauza” embossing on the side. In 2016 Beam Suntory moved the UK distribution of Sauza Tequila from Maxxium to Conviviality’s Catalyst Brands.

TAPATIO Tapatio, made in the La Alteña distillery in the tequila-producing state of Jalisco, is a quality tequila distributed in the UK by Speciality Brands. Its core range includes Tapatio Blanco, a silver tequila that is left to settle in steel tanks for one month after distillation. Tapatio Reposado is aged for four months in ex-bourbon casks, two months longer than the law dictates and is best enjoyed in a wine glass to fully bring out the honey and spicy character. ‘Tapatio’ is a Mexican word referring to a man from Guadalajara, a city in Jalisco.

EL JIMADOR El Jimador is named after the farmers or “jimadors” who grow and harvest agave plants used to make this popular tequila brand which is distributed in the UK by Bacardi Brown-Forman. el Jimador’s Blanco tequila is made with 100% hand-harvested blue Weber agave and is packed with citrus flavours. It has won more than 22 awards since 2010, including the Silver medal in San Francisco World Spirits Competition in 2013. Like most tequilas, el Jimador also produces angeo and reposado variants. The popular el Jimador Reposado is aged in virgin oak barrels for two months before bottling.

VODKA HOLY GRASS VODKA Hand-crafted in the far north of Scotland, Holy Grass Vodka was released from the multi-award winning Dunnet Bay Distillery in Caithness in November 2015. It features the unusual botanical Holy Grass, first discovered on the banks of the nearby Thurso River by Robert Dick. Holy Grass, so-called as it was once used to bring a sweet, vanilla smell to church floors, brings a wonderful and herbaceous flavour to this distinctive vodka. A celebration of local produce and ingredients, the spirit is also infused with a carefully crafted vapour of Highland apples and apple juice to complement the sweetness of the Holy Grass. The result is a delicate and fresh vodka with a creamy smooth finish. In 2016, Holy Grass received top accolades at the Great Taste Awards and IWSC Awards and also won best vodka at the Grocer Drink Awards. In 2017, Dunnet Bay Distillers plan to promote Holy Grass Vodka more heavily in the on trade, with a particular focus on cocktail bars. The distillery also aims to release a limited edition which will give the original Holy Grass Vodka a garden makeover, incorporating some of the wonderful botanicals and berries that grow in the distillery gardens.

SMIRNOFF Smirnoff Red is the top-selling vodka brand in the Scottish on-trade, and it is the UK’s number one pub spirit brand by volume. WHISKY - BLENDS WHYTE & MACKAY Founded on the docks of the Clyde in 1844, today Whyte & Mackay is the world’s fifth largest Scotch whisky manufacturer. With the blended whisky market in decline, a fresh approach has helped Whyte & Mackay Blended Whisky buck the trend, growing distribution and volume share throughout 2016. The last two years have seen Whyte & Mackay undergo a 6 figure investment in a rebrand and repackaging supported by theSurprisingly Smooth campaign, which highlights the whisky’s key USP - its smooth flavour, owed to a triple maturation process and the expertise of the whisky’s third generation master blender. Creative of a surprisingly smooth lion shot by renowned animal photographer and digital artist Tim Flach appeared in still and animated advertising formats nationwide, plus a specially-composed cinemagraph. Additionally, 2016 saw Whyte & Mackay celebrate its roots with the launch of the Stay Smooth, Glasgow campaign. Activity included an interactive “talking” mirror placed on the streets to surprise and complement passers-by with Glaswegian patter. A second phase saw portraits of real Glasgow folk, shot by award-winning local photographer David Boni, shown in an exhibition at the Govanhill Baths. 2017 promises continued plans for advertising, experiential and digital activity supporting trade customers in Glasgow.

BLACK BULL 2016 has been a stellar year for Duncan Taylor Scotch Whisky. The Huntly based spirits producer has had their best ever year with sales in the UK and across the pond. Highlights include the company’s performance in the US, which has been significant this year. They also won several global awards for their whisky blends, gin and rums. Demand was particularly high for their Black Bull Scotch Whisky portfolio. This was boosted by the fact that in spring, they created a new limited edition 40-year old Black Bull blend. Whisky experts and enthusiasts poured huge praise on the blend, which includes malts as far back as 1966, as well as a 1969 Macallan and 1968 Glenlivet.

THE FAMOUS GROUSE The Famous Grouse, distributed by Maxxium UK, is Scotland’s best selling blended whisky. Its creation is now being overseen by Kirsteen Campbell, who last year took on the role of master blender. 2016 also saw the brand’s famous icon, The Famous Grouse Bird, return in two new TV adverts which were were supported by the brands the “largest ever” Christmas campaign from distributor Maxxium UK. Valued at more than £2m, the campaign aimed to reach more than 40m adult consumers. The TV ads focussed on two key brand messages – ‘perfectly balanced’ and ‘smooth’ – and featured the The Famous Grouse Bird in his native Highlands.

BELL’S In 2016 Bell’s Original was the second top-performing blended whisky in the UK on-trade, and commands a 22.4% share of the blended Scotch whisky market, according to owner Diageo. Following a recipe dating back to the 19th century, it marries grain and fine malt whiskies from the Scottish Islands and Speyside. These are blended by its master blender at the Blair Athol distillery and matured in selected oak casks. Towards the end of 2016, Bell’s rolled out a £1.5m marketing campaign to drive consumer awareness called ‘Rings True’. WHISKY - MALTS ISLE OF ARRAN Born on the banks of the River Spey in 1897 and enthused by the optimism of the Victorian era, the Tamdhu Distillery’s founders had one single aim: to build the most remarkable distillery of its time which would produce the world’s finest single malt. An aim still sought to this day. Every drop of this malt is matured exclusively in the very best European and American sherry oak casks, many of which are first-fill: the rarest in the industry. Those in use today are of the same type insisted upon when the distillery was established, ensuring every drop is magnificent. This time honored process results in Tamdhu’s two core expressions, which are presented in hand-blown crystal decanters, inspired by the Victorian era. The classic 10 Year Old is the signature malt from Tamdhu, with a wondrous natural colour and award-winning quality. With a warmth of toffee, bursting with fruit and spice, and an aroma of sugared almonds and vanilla, this timeless expression slowly unveils the merest wisp of peat smoke on the finish. For the devoted malt lover, the outstanding Batch Strength is bottled un-chillfiltered at natural colour and high strength. The richness of the malt is rounded with spice and dried fruit before the finish matures in to biscuit, malt and marmalade with a lingering fruitiness.

BENROMACH Benromach celebrated a successful end to 2016 after winning two coveted awards – the Masters award for its Benromach 35 Years Old single malt whisky at The Spirits Design Masters. Keith Cruickshank was also crowned Distillery Manager of the Year. Its flagship single malt, Benromach 10 Years Old, was also recognised with awards from the San Francisco World Spirits Challenge and the Ultimate Spirits Challenge. 2016 saw Benromach release two special ‘wood finishes’ - Benromach Hermitage 2007 finished in ex-French wines casks and Sassicaia 2007 finished in Sassicaia wine casks from the Bolgheri wine region in Italy.

TAMDHU The Isle of Arran Distillery is currently the only distillery on the Isle of Arran on the south west coast of Scotland. If you would like to feature a full range of single malt across all the various geographical whisky locations in Scotland, this single malt is an absolute must. Double-distilled from un-peated malt, the Arran Single Malt is matured in both ex-Sherry and ex-Bourbon casks for perfect balance. The result is a fuller bodied dram with a delightful sweet-fruity character that shows maturity far beyond its years. All of their single malts are non-chillfiltered with no added colouring, which means they’re natural in pigment and exactly the way whisky should be! The core range of this forwardthinking, 100% Scottish owned independent distillery currently comprises the 10, 14 and 18 yearold single malts, plus the two peated expressions of Machrie Moor.

GLENFIDDICH While Glenfiddich’s 12 Year Old was named the UK on-trade’s second highest selling malt in William Grant & Sons’ 2016 Market Report, it was the new Glenfiddich Experimental Range was grabbing the headlines last year. The first innovative release in this series was Glenfiddich IPA Experiment, a 43% ABV single malt aged finished in IPA craft beer oak casks that imbued the spirit with “zesty citrus and tangy hops”. It claims to be aims to be the world’s first single malt whisky finished in IPA casks. The launch was supported by a global 60-second TV spot that celebrated curiosity and creativity. William Grant & Sons also unveiled another first, a virtual reality tour of the Glenfiddich Distillery in Dufftown called Journey into the Mind of the Malt Master, viewable on YouTube and Facebook.

THAT’S THE GLENGOYNE WAY. glengoyne.com

WHISKY - MALTS GLENGOYNE Glengoyne, being uncompromising in its pursuit of excellence, runs its stills slower than any other distillery in order to create the rich, fruity flavours for which its malts are known. The Glengoyne Highland Single Malt collection is matured in the finest sherry casks from within its traditional dunnage warehouses. The latest release from Glengoyne is a limited edition gift tin designed by renowned Scottish artist, John Lowrie-Morrison, or Jolomo as he is widely known. The tin was created in aid of the Glasgow School of Art Mackintosh Appeal, which was set up after a tragic fire damaged the building in 2014. The first in a series of four paintings inspired by Glengoyne Distillery in the changing seasons, ‘Autumn Moon over Glengoyne’, adorns this limited edition tin which holds a bottle of classic Glengoyne 10 Year Old. For every gift tin sold, Glengoyne will make a contribution to The Mackintosh Appeal helping contribute to the recovery of the iconic building and secure its future legacy. The tins will be available to buy online from www.glengoyne.com, the distillery shop and specialist and independent retailers.

AUCHENTOSHAN Last year, Glasgow’s Auchentoshan launched the ‘New Malt Order’, a competition to find 12 top bartenders to select casks and design the packaging for a limited edition Auchentoshan called The Bartender’s Malt, which will be released across the on-trade in 2017. The project coincided with the launch of Auchentoshan’s ‘Distilled Different’ campaign, which highlights its position as one of the few triple-distilled whiskies in Scotland. It also championed the ‘mixability’ of its single malts – including its Auchentoshan American Oak, aged in former bourbon American oak barrels and triple-distilled for a light, smooth and sweet expression.

THE MACALLAN In 2016, The Macallan expanded its core range with the new Double Cask 12 Year Old. It is matured in sherry seasoned European and American oak casks, with the combination creating a creates a sweet yet balanced honeyed character. Last year also saw the release of The Macallan Edition No. 2, a limited edition made from seven different cask types. The Macallan owner Edrington also announced plans to build additional warehouses and a new fill store to support the new £100million The Macallan distillery and visitor centre in Craigellachie. The project is due to be completed mid-2017 and the distillery will officially open in spring 2018.

HIGHLAND PARK Sales of Highland Park continued to excel in Scotland in 2016, with its 12 Year Old reported to be one to the Scottish on-trade’s top five performing malts and the fifth highest selling malt in the UK on-trade. Last year also saw Highland Park go back to the Viking roots of the brand’s Orkney Island home. The brand launched a two-part limited edition beginning with Highland Park Ice, a 17 year old released in a stunning blue bottled followed by Highland Park Fire, a 15 year old released in a red bottle. Both were inspired by the legends of Nose ice and fire gods, and were encased in striking mountain-shaped black wooden cradles.
