A FOCUS ON SCOTLAND’S TOP SUPPLIERS

This year’s 2018 Supplier’s Guide, is the only guide of its type in Scotland. It has been designed to give you, our readers, a comprehensive guide to services to the Scottish bar, restaurant, hotel and pub industry. Whether you are looking for a licensing lawyer, upholsterer or a reputable company to clean your beer lines – this publication aims to make your life a whole lot easier. As well as a comprehensive list of services we also have the most definitive listing of brands available for you to stock in your venues and we have endeavoured to tell you who owns them, or distributes them, too. It is difficult keeping abreast of all the changes, but we have done our very best. Some licensees call this guide their very own bible, and I hope the 2018 edition lives up to its reputation. If you misplace it during the year, you can also check it out online at dramscotland.co.uk. We always welcome feedback and if there is something you would like to see included next year, let us know. ALES STRATHAVEN ALES Strathaven Ales was founded in 2005 by Allan Young and Craig and Douglas Buchanan. Over the subsequent years the trio have developed a range of traditional real ales, from its brew-house, which is situated in an old 18th century mill. Although retaining many of the original characteristics of the mill – like the 18th century, 500-gallon, stone clad brewing kettle, today the brewery offers a 36-barrel capacity. The beer list includes six regulars – Avondale, Claverhouse, Clydesale, Craigmill, Duchess Anne, Old Mortality and around a dozen specials. There’s a visitor centre, shop and tap / function room, with selected beers for sampling too.

20m

Pints of beer are enjoyed every day in Britain... that would equate to approx 2m in Scotland...

4,000 beer brands are now available in the UK

Ale is oldest style of beer in the world. In 4000 BC in the middle east people were fermenting a form of bread to make a pulp which had an intoxicating effect – a "divine drink".

BELHAVEN As Scotland’s oldest working brewery, established in 1719, the brewery is getting set to celebrate its key anniversary. It remains the brewer behind Scotland’s bestselling ale – Belhaven Best which was first brewed in 1991. The Brewer, which is now owned by Greene King, offers Belhaven Best at 3.2% strength, which makes Belhaven Best the ideal session beer. The Belhaven product portfolio consists of Belhaven Best, Belhaven Black, Belhaven IPA, 80 shilling, St Andrews Ale.

MCEWAN’S McEwan’s celebrated its 150th anniversary in 2016 but hot on the heels of the celebrations its owner Charles Wells sold the brand, and a raft of other brands, to Marstons. Now the company is planning a high-profile relaunch of the brand this year. It’s packaging is being refreshed and a whole new marketing initiative will hopefully see the brands sale rise in the Scottish on-trade.

CIDER KOPPARBERG

E

very drop of Kopparberg is imported from Kopparberg town, Sweden. Built in 1882, the Kopparbergs Bryggeri (Koppaberg Brewery) remains independent and is owned by the Bronsman family. The brewery is home to the brand’s uniquely refreshing fruit cider and fruit lager. A pioneer in premium fruit refreshment, Kopparberg was the first fruit cider in the UK and is today, Kopparberg’s Mixed Fruit and Strawberry & Lime variants remain the top two best-

selling packaged ciders in the UK ontrade. In 2016, Kopparberg invested £6m in a new consumer marketing campaign. Its alcohol-free fruit ciders also continue to be popular, especially in the on-trade as more consumers require responsible alternatives on a night out. Having topped the cider industry, early 2016 also saw Kopparberg move into the beer market with the launch of its Fruit Lager. Bottled at 5% ABV, the new range was initially available in Lemon & Lime flavour.

THISTLY CROSS Thistly Cross Cider has grown from beginnings at East Lothian farmers’ markets, to national and international success, now available across the UK and in 44 US states – winning an array of awards along the way. Thistly’s craft ciders, handmade in the east of Scotland, are made from real fruit, pressed by hand and matured for upwards of six months. Their core range consists of: Original 6.2%, Traditional 4.4%, Whisky Cask, Real Strawberry, Real Ginger and Real Elderflower. Also produced on the farm is Jaggy Thistle, a Scottish Scrumpy, slow-fermented and matured in sherry casks. Ciders are available in kegs, bottles and ciderboxes.

MAGNERS Magners is the third most popular packaged cider brand in the UK. In 2016, Magners put its position as an original ‘true cider’ since 1935 at the centre of a huge packaging rebrand, backed by a multi-million pound media campaign. In May, the ‘Hold True’ campaign relaunched the Magners bottle along with new packaging across all cans, and saw Magners Golden Draught replaced across the on-trade with Magners Original draught. In April 2016, Magners also agreed a new four year extension with Celtic in a deal which will see it feature on the Glasgow side’s kits until the end of the 2019/20 season.

STRONGBOW Strongbow, the UK’s number one Cider and continues to dominate the Cider category. Recent research shows that when there is only one apple cider on the bar, Strongbow has 45% higher throughput than any of its rivals. Strongbow Dark Fruit is going from strength to strength, more than tripling its market share this year to 13.3% (vs 4.1% last year) and becoming the UK’s third most popular draught cider. As well as adding more absolute volume growth to the Draught Cider category than any other cider, 70% of Strongbow Dark Fruit sales are incremental and help grow the total Beer & Cider category in the On-Trade.

CRAFT BEER CALEDONIAN BREWERY

I

n 2016, Caledonian Brewery released Coast to Coast, its American pale ale, and Three Hops lager in bottles. Both beers had previously been sold only on draught in the on-trade and were part of a series of four seasonal beers created in it’s pilot plant dubbed ‘Wee George’, built within the Heinekenowned brewery’s main Edinburgh site.

Caledonian will launch another range of seasonal beers in 2017 and will also refresh the label design and packaging of Coast to Coast. In October 2016, Caledonian also launched its first black lager, Dark Light. Bottled at 4.7% ABV, it is inspired by Schwarzbier (black beers) originally brewed in southern Germany.

INNIS & GUNN Edinburgh-based Innis & Gunn, UK’s second-largest independent craft brewer, behind its Scottish rival BrewDog launched its most innovative beer to date, Sky PA, in 2016. The new beer was made using water harvested from the clouds above Moffat using an special airborne device. The November launch coincided with Adventure Capital, Innis & Gunn’s crowdfunding campaign that saw the company raise over £2m in equity from hundreds of backers. The funds will help the brewer roll out its popular Beer Kitchen format. Last year, Innis & Gunn opened its third Beer Kitchen in St Andrews on G1 sites. In Spring 2017, it will open its biggest bar to date in Glasgow’s Ashton Lane, complete with an on-site brewing facility.

CROMARTY BREWING CO Independent, Inverness-based Cromarty Brewing Co is holding its own in the competitive Scottish Craft Beer sector. In 2016, the family-run microbrewery released a number of new products including Whiteout, a hoppy 3.8%ABV session white IPA brewed with modern classic hops such as Citra, Motueka and Mosaic. To celebrate the launch, Cromarty Brewing Co ran an online competition to win weekend break in its home town of Cromarty. The company initially found success with its award-winning Happy Chappy pale ale in 2012. Its core range also includes Red Rocker red rye beer and malty porter, Ghost Town.

GIN EDINBURGH GIN

S

mall-batch distiller and winner of multiple awards, Edinburgh Gin continues to craft the gin renaissance from Scotland’s capital. Each bottle is distilled at the Edinburgh Gin Distillery and at their recently opened second distillery, Edinburgh Gin at The Biscuit Factory, in the historic port of Leith. Edinburgh Gin is dedicated to producing quality, contemporary gin and committed to using botanicals native to Scotland in all their products. Driven by the pursuit to produce quality, innovative gins, Edinburgh Gin is dedicated to bringing the science and art of distilling to the fore. Edinburgh Gin is handcrafted in small batches with the finest Scottish juniper berries, pine,

heather and nine other carefully selected botanicals. As well as the classic Edinburgh Gin, the core range also features the navy strength Cannonball Gin and Seaside Edinburgh Gin, distilled with foraged seaweed, scurvy grass and ground ivy from the Scottish coast. Perfect for shaking up some cocktails, Edinburgh Gin offers a range of fruit Gin Liqueurs which are handmade in Scotland. These include; the popular Raspberry Liqueur, a clean Elderflower Liqueur, a tangy Rhubarb & Ginger Liqueur and recently released Plum & Vanilla Gin Liqueur, perfect for the festive season. Each of the liqueurs are 20% ABV and available in 50cl and 20cl bottles.

BROCKMANS Brockmans Gin, the ‘gin like no other’, is a super-premium 40% ABV gin distilled using quality botanicals from around the world. The top note of Bulgarian coriander has an aromatic, gingery orange flavour, which marries beautifully with the softer, more rounded harmonies of blueberries and blackberries and the bottom note created by juniper berries from Tuscany. This inspired combination, together with the dry, bitter-sweet peel of Valencian oranges, elongates the deeper tones and gives Brockmans an intensely smooth taste. Brockmans Gin is made in the heart of England and packaged in stylish and tactile black glass.

MAKAR Makar Glasgow Gin is the award winning premium handcrafted gin produced by The Glasgow Distillery Company. Distilled in small batches in a copper pot still, named Annie, Makar is a luxuriously smooth juniper forward gin entwined with seven other botanicals to a create the perfect balance. The bright and robust flavour of Makar makes it perfect for gin-led cocktails and invigorating with a premium tonic and fine slice of fresh green chilli to garnish. Building on the success of Makar, three new brand extensions have been added to the range – Makar Old Tom and limited editions, Makar Oak Aged and Makar Mulberry Wood Aged Gin. For more information visit www.glasgowdistillery.com @MakarGlasgowGin

ROCK ROSE GIN Rock Rose Gin gets its name from our first botanical forage along the cliffs of the Pentland Firth, where Rhodiola rosea was introduced to us by a local herbalist. A rose in the rocks! Over a thousand years ago, the Vikings would harvest wild exposed cliffs like these to gather Rhodiola rosea. This was thought to give them the extra strength to continue on their long, arduous journeys. Our gin uses this botanical and a selection of local as well as traditional botanicals to create a unique taste from the Highlands of Scotland.

GIN ORKNEY GIN Orkney Gin Company prides themselves on the high quality of their products. Their multi award-winning gins are hand-crafted in ultra-small batches using seven times distilled premium grain spirit and the finest botanicals. The rich folklore and traditions of Orkney serve as the inspiration behind Orkney Gin Company’s products. Johnsmas is midsummer, a time during which the sun rarely dips below the horizon and Johnsmas gin’s floral notes capture the long, light days of Orcadian midsummer. Mikkelmas takes inspiration from the harvest festival, a time full of celebration of a successful harvest. Made from a mixture of secret mulled spices, it’s smooth and warming. Rhubarb Old Tom, the newest release, is a celebration of rhubarb, a plant which thrives in the Orcadian climate and can be found growing in the garden of almost every old house. A full-strength gin at 43%, this lightly sweetened Old Tom has proven very popular.

POETIC LICENCE Based in a bar of the same name on the North East coastline, Poetic License craft artisan spirits on 500L pot still, Gracie. Their ethos: break tradition and be bold. Additions here and omissions there transform the original you know so well into something with much more character. Their critically acclaimed Northern Dry Gin and Old Tom Gin offer unexpected, punchy flavours, while their Graceful Vodka is gloriously smooth. They also have a range of seasonally-inspired creations, which take inspiration from the time of tear for their flavours, a Rarities range, which are one-off batches of whatever they fancy making, and a range of gin liqueurs, great for sweeter palates. chinchin@poeticlicensedistillery.co.uk • www.poeticlicensedistillery.co.uk • 0191 5103564

WILD ISLAND Launched in December 2016, Wild Island Botanic Gin scooped the Gold Medal at the International Wines and Spirits Competition (IWSC) in the 2017 ‘Contemporary Gin’ category. Presented in a beautiful bottle containing a Kiloran Bay inspired hand applied watercolour transfer, which is kiln-fired onto the glass, the gin is crafted from 100% British wheat, five times distilled on a single copper pot still at the famous 200 year old Langley Distillery and infused with hand gathered botanicals from the brand’s home – the remote Hebridean island of Colonsay. The core product style has a strong emphasis on fresh citrus at the fore, through its prominent use of wild island lemon balm and water mint. As a result, it makes for the perfect gin and tonic served with a slice of lemon and a sprig of mint. The brand’s owner, Colonsay Beverages, also owns the brewery on the island and launched a second permanent Wild Island Gin variant – Sacred Tree – a year after its first.

LAGER

L

ager sales in the Scottish on-trade account for a third of all wet sales in pubs. The market leader is Tennent’s with lager first brewed in Scotland in 1884 by Hugh Tennent, at Tennent’s Breweries in Glasgow’s Duke Street. Today with the rise of craft beer, which includes a wide range of lagers, there has never been a more interesting time to talk about lager, nor a more competitive time for the big brewers.

INNIS & GUNN LAGER Innis and Gunn set up shop in 2003 with a range of Barrel Aged beers, and in 2013 it added Innis & Gunn Lager to the equation. This lager quickly became the fastest growing in Scotland and also won Gold at the prestigious Monde Selection twice. Inn & Gunn Lager which they say is “refreshing and full flavoured”, is created by adding zesty aromatic hops and naked golden oats to the brew and it comes in at 4.6% ABV. Innis & gunn also offer Tank Beer in selected venues.

TENNENT’S LAGER Tennent’s Lager is still Scotland’s best selling lager brand – by a country mile. It accounts for nearly half of all lager sales in Scotland with sales in in excess of £300m. Over the last few years owner C&C has invested in a newTennent’s fount. More than 4,815 new founts were installed and the company also revealed that it grew the brands social media engagement by 40% last year. Over the last six months the company has also been installing Tank beer into selected establishments and it has been going down very well with customers.

CARLING Carling is the second best selling lager brand in Scotland’s on-trade but it is the biggest selling in the UK. It is the official beer of the Premier League in a deal which runs until the end of the 2018/19 season. Last year it refreshed its branding. It also currently has exclusive pouring rights at Dundee United FC Tannadice Park and the marketing rights to promote the association to the club’s global fan-base. This deal runs out at the end of this season.

LICENSING

YOUR LICENCE IS YOUR LIVELIHOOD: TAKE IT SERIOUSLY The plethora of licensing law changes has been a continuing theme. Lest we forget we had the Licensing (Scotland) Act 2005, ameded by both the Criminal Justice and Licensing (Scotland) Act 2010, the Alcohol etc (Scotland) Act 2010 and the announcing of the Air Weapons and Licensing (Scotland) Act 2015. As at 1st May we will have the introduction of the must debated Minimum Price (MUP). By any yardstick Scotland is leading the way in alcohol policy and legislation. Thankfully the (very outdated) Statutory Guidance to the Licensing Act is presently being updated and should soon take account of the legislative seachange since it was pubished in 2007! Looking ahead the government remains committed to updating its Alcohol Policy Framework in 2018 and every Licensing Board in Scotland is obliged to consult on and publish its update Licensing Policy for its local area by the end of November 2018. May we encourage anyone with an interest in the trade to look out for and respond to your local licensing board consultation underlying the important social and economic contribution the trade makes is essential. If you don’t take the time to respond then you cannot complain if the policy is changed to your detriment. With such a number of changes our thanks go to our partners at one of Scotland’s leading licensing practices TLT LLP who remind us of their golden rule always take advice from a specialist licensing solicitor because your licence is your livelihood.

TIME TO GET MUP READY s far back as 2012 the A Scottish Parliament passed a law to introduce a minimum unit price (MUP). The Scotch Whisky Association and others challenged the lawfulness of the measure on the basis of non-compliance with EU law. The appeal ran through the various domestic and European courts right up to the Supreme Court in London. The Supreme Court unanimously found in favour of the Scottish Government. As at 1 May 2018 a new mandatory condition will be applied to every licence in Scotland which will state that alcohol must not be sold at a price below a minimum price per unit of alcohol. At the time of print, the minimum price has yet to be set by Scottish Ministers. A consultation on the price will run until late January 2018 with Government set to announce the price when they publish the commencement order.

After 1 May 2018 all licensed premises will need to ensure they comply and do not sell alcohol below the permitted level. A breach could not only see the premises licence Reviewed by the licensing board but the licence holder could face prosecution. We therefore expect the sale of scientific calculators to spike in Scotland in April 2018! It is worth noting that rather unusually the legislation includes a “sunset clause”. The effect of this clause is that minimum pricing will be withdrawn unless Holyrood passes a renewal Bill within six years of the Act coming into force. This obliges the Government to assess whether it has achieved its aim of improving health. Whilst the minimum unit price only applies to Scotland, Wales have already signalled intent to follow suit and pressure is growing for England to follow.

LICENSING

THE BUCK STOPS WITH YOU You may not realise it but an offence committed by one of your staff could result in your own licence being placed at risk and you can also end up with a criminal record, even if you were not in the premises at the time. A licensing board can revoke or suspend a personal or premises licence following mistakes and breaches by management or staff. As an example, if one of your staff sell alcohol to someone under 18, they can be convicted, the premises manager

DON’T RISK IT.

All staff must have appropriate training before their first shift. At the end of the day the responsibility is at the feet of the licence holder – the buck stops with you. This includes making sure your staff understand the specific licence terms that apply to the premises they work in. Staff should know what is and is not allowed and this can vary from premises to premises. Staff should be re-trained on important items on a regular basis and this should be recorded. Fundamental points such as: n Challenge 25 n The premises licensed hours n Banned promotions nR efusing service where appropriate ie to someone who is drunk should all be known by everyone, not just management. Keeping decent records of all ongoing staff training is a must. If something goes wrong and you end up before a licensing hearing, or in a meeting with the police, then having evidence that you have taken all reasonable steps to stop problems from arising can only be a good thing. Although the law only requires a staff

38

SUPPLIERS GUIDE 2018

can be convicted, and the premises licence holder can also be convicted, even if not physically present when the alcohol was sold. Make sure all staff have genuinely undertaken the mandatory 2 hours training. Do not pay lip service to this requirement. LSOs raise concerns all the time about staff training being poorly delivered, or worse, records being signed off when no real training has been delivered.

member to be trained once, a responsible licence holder will make sure the staff training is delivered properly on an ongoing basis and that proper records are kept. LSOs are entitled to ask for and review your staff training records and they often do. Don’t underestimate this. If your staff training records are not correct, the LSO might fairly think – “what else is wrong?” The training can be delivered by someone with a personal licence but ideally it should be someone who is not just a personal licence holder but who is half decent at delivering the training. The hospitality sector can have a high turnover of staff. You will take new people on all the time. Any time you take someone new on, the best bet is to retrain them with the 2 hour course before the start their first shift. Although previous training is transferrable to a new workplace, why risk it? How do you know that the training was properly delivered? You need to have confidence in your own staff because ultimately if they make mistakes then you are the one responsible and you can be convicted if an offence occurs.

LICENSING

UPSKILL STAFF Building on the minimum staff training requirement (highlighted on page 35) and quoting from the entrepreneur Sir Richard Branson, “train people well enough so they can leave, treat them well enough, so they don’t want to”. As with all other aspects you should risk assess your business from a licensing viewpoint. How better can you serve your customers, create a safe and welcoming environment and ensure that ultimately you have all bases covered,

than by upskilling your staff. Hospitality is moving away from its erroneous image as a stopgap for a transient student workforce. Professionalism in the sector is increasing year on year. Invest in training, whether it is n Duty of care/ bystander training n Conflict management n Additional personal licence holders n Wine/ spirits excellence training it will yield rewards, protect the business and improve the bottom line.

AGE VERIFICATION: HAVE A PROPER POLICY Most people now recognise the phrase “Challenge 25”. The legal age for consumption of alcohol is still 18 but your licence now has a condition that requires you to verify the age of anyone who looks under 25. Although there is no specific requirement to have this policy in writing, it is sensible to have it down on paper. HOW ELSE CAN YOU PROVE THAT YOU HAVE ONE? There are a number of forms of acceptable ID including a European Photo Driver’s Licence, UK Passport and Pass Card. A number of additional forms of ID are now also acceptable including most EU national

identity cards, biometric immigration documents, and military ID. However, whilst staff can familiarise themselves with all of these documents by looking at www.challenge25.com, in my experience it is safer to refuse a sale unless you are 100% sure that the ID is genuine, and if you don’t know what a military ID looks like how can you know it is real? Whilst refusal can be awkward and embarrassing for customers and perhaps staff, this is preferable to you ending up with a criminal record – so don’t risk it.

LICENSING MANAGER CHANGES? DON’T MESS AROUND Every premises has a named Designated Premises Manager (DPM). This is the person whose name appears on the licence and is expected to be the day to day manager of that premises. A person can only be a DPM on one licence at a time. If you know the manager is to leave, for whatever reason, then you must remember to advise the licensing board within 7 days. This activates a grace period of 6 weeks for you to lodge an application naming a new manager. Remember that the new manager must hold a personal licence, and that he or she cannot be named on another licence. This is incredibly important. If you miss the 7 day notice, or separately if you miss the 6 week deadline to name the new manager, then the police can come calling and ask you to shut – it is unlawful

to sell alcohol if the 7 days or 6 weeks deadlines are missed. Most local police and LSOs are pretty clued up as to who is named as a manager on which licence so don’t underestimate this point. Not only might you have to close for a short period until a new manager is named, ultimately the premises licence could be subject to a review. A DPM does not need to be on the premises at all times. There is a general expectation that the person named should have day to day control of the premises but there is no legal requirement for that person to be physically present. That being said, as the police and LSOs will expect the named manager to have control of staff it is sensible to have someone named who is genuinely on or around the premises on a frequent basis.

WHAT YOU MUST DISPLAY IN YOUR PREMISES In addition to your weights and measures and smoking notices, you have a legal duty to display certain licensing notices too. The premises licence itself can be quite a large document, with the main licence encompassing the layout plan and the operating plan, and a separate licence “Summary”. It is the separate, smaller Summary document which has to be displayed prominently so it can be viewed by the public – not necessarily just behind the bar if it cannot be read from there. The Summary is usually one or two pages long and it is an offence not to have it displayed properly so make sure you’ve got this covered. The main licence, which is normally a document that could be 10 – 20 pages long and sometimes more, does not need to be displayed but it does need to kept on the premises in a safe place where it can be accessed by staff both for training purposes but also because a police officer or LSO are entitled to see it upon request. The main licence should either be the principal (original) copy, or a photocopy

40

SUPPLIERS GUIDE 2018

which has been certified by a solicitor as a true copy. It is good practice to keep a certified copy on the premises and the original in a safe place as it has to be returned to the board if any applications were made such as a change of manager. If the licence is lost or stolen, it should be reported to the police in order to get a reference number, and a duplicate requested from the licensing board, which normally attracts a small fee. In addition to displaying the summary of the licence, you must also display a notice referred to as the “Section 110” notice which details age related offences and confirms the position that alcohol will not be sold unless verification has occurred. In addition to this, if your premises allows under 18s, then a separate notice should also be on display indicating which parts of the premises under 18s have access to. There is no legal obligation to display notices or signs concerning Challenge 25, but it is no bad thing. In addition, you may also wish to display notices concerning the use of external areas and smoking areas asking customers to respect neighbours.

LICENSING ALCOHOL PROMOTIONS, ADVERTISING AND DISPLAYS – DO’s and DON’TS Although there is nothing inherently illegal about a promotion of alcohol, the 2005 Act has created a list of types of promotions which are deemed to be irresponsible and therefore unlawful. The interpretation of these definitions can lead to local variances so that what might be considered by LSOs in one area, might not in another. Operators should always take specialist legal advice before running any promotions. Types of banned promotions include: n Promotions likely to appeal to under 18s n Buy 1 get 1 free, and similar deals . “Upselling” of measures – for example an offer to “Make it a double” for an extra 50p UNLIMITED ALCOHOL FOR A FIXED PRICE Promotions which encourage people to drink more than they had perhaps intended, eg “Buy two glasses of wine and get the rest of the bottle for £5” Alcohol as a prize, unless in a sealed container for off consumption – so watch those pub quiz prizes: no round of drinks or bar vouchers please A separate rule, often confused with the rules on promotions, is the so-called “72 hour” rule which refers to the price of products. The rules are slightly different for the on and off trade. In the off-trade the price of alcohol product cannot be varied up or down within a 72 hour window. So if a bottle of Merlot is £7 on Monday, it must remain at £7 on Tuesday on Wednesday and can only be

changed on the Thursday morning. If the price rises to £7.50 on Thursday, then it must stay at £7.50 for at least Thursday, Friday and Saturday, and so on. In the on-trade if a price change is undertaken, for example the price of a pint or lager is £3 on Monday, it along with all other products on the drinks menu must remain fixed for Tuesday and Wednesday. The next change can only commence on Thursday morning. In shops and supermarkets, there are special rules about alcohol display areas and advertising. Most shops will have two areas: an area accessible to the public such as shelving in an aisle, and an inaccessible area such as a spirits display behind the counter. Alcohol advertising can only be located in one of these defined areas, so you should not have posters, vinyls or A-boards at a shop entrance unless it is part of the approved area. Alcohol cannot be displayed other than in one of these two defined areas. The area will be shown on the licence layout plan and cannot be changed without approval from the licensing board. There are special rules on mixing displays of alcohol and nonalcohol goods. Restrictions even apply outwith the premises – drinks promotions cannot be advertised within 200 metres from the boundary of the premises although this only applies to promotions “in connection” with the premises, so would not stop, for example, an advert on a bus shelter or a passing brewery van.

ATTENTION ALL PERSONAL LICENCE HOLDERS When working on licensed your personal licence in the licensing premises you must have file or safe at your place of work. Also your original personal licence remember you must update the licensing available to show to the board of changes to your personal info authorities on request. A copy technically (e.g. name change if married/ divorced or will not suffice. If your licensing board do change to address) with one month of the not issue photocard IDs consider keeping occurrence. LICENSING SPECIAL EVENTS Premises can apply for one off extensions for local events. The treatment of these applications varies greatly across Scotland but the key aspect in each case is timing. Most licensing boards require applications to be lodged within a certain timescale, which can be anything from 6 weeks to 2 weeks before the event. Always check with your local board. An application for an event is likely to met with less favour if the “event” is not particularly special – asking for extra trading for Mrs McGlumpher’s 55th birthday is less likely to achieve success than, say, extra trading for a local festival or gala day.

You should always check with your local board. In some areas, certain times of the year are treated as “general extensions” meaning you don’t need to apply. In most board areas this would include the festive season, although not all, and note that in most cases special wording would need to be in your main licence under “seasonal variations” to activate these hours. You can also host a licensed event on unlicensed premises by applying for an occasional licence but again the rules about the nature of the event and the timing of the application should be considered and specialist advice taken.

PERSONAL LICENCES AND TRAINING Having a personal licence allows you to be named as a DPM, allows you to lodge occasional licence applications, and allows you to supervise/authorise staff making sales of alcohol and conduct the mandatory staff training. Obtaining a personal licence is relatively straightforward following obtaining an appropriate training certificate from the BIIAB or other awarding body. The application form must be signed by the individual (not a solicitor) and lodged with certified passport photos. If the applicant is free of convictions, it is relatively assured that a licence will be issued – but note that the presence of convictions does not of itself mean a refusal. It will come to the context and detail of the convictions. A personal licence lasts for 10 years

and is portable between board areas, although cannot be used in England & Wales. You should apply to the board where you live rather than where you work. There is also a requirement to undertake and pass a half day refresher course within 5 years of the anniversary of the issue of the personal licence, with the updated training certificate being presented to the licensing no later than 3 months thereafter. The refresher training requirement was missed by thousands of people across Scotland who lost their licence. Thankfully, the Scottish Government has now amended the law so that if you do lose your licence because of this, the original 5 year ban on reapplying has been removed.

RELATIONS WITH POLICE AND LSOs It is incredibly important that the licensed trade work to have a positive, respectful relationship with police officers and LSOs. Remember that police and LSOs can enter and inspect your premises at any time and have the right to ask for documentation such as the premises licence or personal licences or staff, or to see staff training records. Despite recent tensions between the licensed trade and Police Scotland, my advice is always to contact the police if there has been an incident on your premises. Keep an incident book and record any issues. Co-operate with the Police and build positive relations with your local officers as well as licensing officers.

THE ORIGINAL UNIQUE SWEET & BITTER TASTE OF DISARONNO MAKES THIS FAMOUS ITALIAN LIQUER RECOGNISABLE

ENJOY RESPONSIBLY

LIQUEURS

T

he liqueurs market in the UK is the second largest in spirits, valued at £1.4 billion. Although many consumers associate liqueurs with the creamy variant, they actually only make up 6.8% of the value of the category. The lion’s share goes to non-creamy liqueurs such as Jagermeister, Disaronno and Cointreau There are around 7.3 million

liqueur drinkers in the on-trade. Cocktails’ continued growth in popularity has driven the sales of liqueurs with 47.2% of cocktails containing non-cream liqueurs. Given the digestive reputation of liqueurs, it should come as no surprise that food-led pubs and restaurants account for nearly 70% of the category’s growth.

DRAMBUIE The first thing William Grant & Sons did when it acquired Drambuie in 2014 was to bring its distribution in-house and revamp it bottle. The whisky liqueur received a new luxurious embossed label design, and a repositioning celebrating its history with music in a bid to recruit a new generation of drinkers. Instead of playing on the ‘Scottishness’ of the brand, William Grant used its reputation of being an iconic prohibition drink that led to the rise of speakeasies both here and in the US. By linking up with jazz artists such as Kamasi Washington, a younger audience was reached.

SOUTHERN COMFORT The purchase of Southern Comfort by Sazerac didn’t just mean a repositioning for the brand in 2017, it actually marked the reintroduction of whiskey into the formula. At some point previous owner Bacardi Brown Forman had reportedly phased out whiskey as a key ingredient, opting instead for a neutral spirit. Sazerac launched its new global strategy for Southern Comfort during 2017, while on-trade support from distributor Hi-Spirits includes a regularly updated range of suggested serves, along with POS and supporting activations to promote the brand at the point of purchase. Hi-Spirits: www.hi-spirits.com

DISARONNO AMARETTO Disaronno the most consumed Italian liqueur in the world has revealed it is adapting its Mixing Star cocktail contest to Innovation Hunter - a social media based “exploration” with a clear mission: identifying the most innovative trends in mixology and movers and shakers in the field, not only in the UK but around the world, filming and sharing them with the community of bartending experts. Distributed by William Grant & Sons, the brand continues to be at the forefront of cocktails though, sponsoring the Cocktail Bar of The Year at the Scottish Bar & Pub Awards in 2017.

RUM THE KRAKEN Rum sales in the UK hit £991m to September 2017, according to the WTSA and one of the fastest growing rums is certainly The Kraken, which is imported rum from the Caribbean and is named after a legendary Sea Beast The Kraken is bold, rich, black and smooth. It’s versatile too and tastes great as a shot, on the rocks or with a mixer. Its memorable bottle shape and branding makes it an eye-catching addition to any bar gantry too. The brand, distributed by Proximo Spirits, launched in the UK six years ago and is said to be the country’s fastest-growing spiced rum brand. Last year it got involved with cinema with a Kraken Rum ScreamFest in London and Leeds - where a social media campaign dictated what scary firm was shown and scary Kraken cocktails and black popcorn was served up. It also brought a Kraken Freaky Tiki bar to a selction of UK festivals. Kraken is the number two flavoured Spiced brand brand after Morgan’s Spiced, but it is arguably has a edgier following.

BACARDI Bacardi Carta Blanca is the number one selling rum in the UK on-trade, and is particularly popular in Scotland. White rum sales account for more than 40% of all rum sales, Bacardi is not to be sniffed at. The last couple of years has seen the brand move away from traditional marketing as it gone down the experiential, PR and cause route. The brand has also brought back the Bacardi Bat and it has its own snapchat filter while initiatives like the Bacardi Virtual turntable on Instagram also aims to engage with Millennials.

SAILOR JERRY Last year Sailor Jerry became a million case brand and this year Sailor Jerry kicked off 2018 with news of a major Scottish event - Jerry’s Open House - an all-in month long pop-up inspired by the legendary tattoo artist Norman ‘Sailor’ Jerry Collins. The Glasgow event runs from 15th February to 15th March in Finnieston and features a host of events throughout the month. The brand is also one of the most active on social media with 586,000 Facebook fans, and 155,000 Instagram followers in total. The brand owned by Wm Grant & Sons has got plenty more planned for 2018 we hear.

CAPTAIN MORGAN’S Spiced rum is still the fastest growing rum category and between 2016 and 2017 it add ed more than £12m in sales. It accounts for more than a third of flavoured rum sales and the leading spiced rum is Captain Morgan’s. The Diageo-owned brand rolled out a campaign featuring real ‘captain’s’ in 2017 with the likes of former Manchester United skipper Rio Ferdinand and international cricketer Eoin Morgan. The campaign continues this year. Last year the bottle was also tweaked with new embossing highlighting the Captain Morgan logo.

TEQUILA

T

equila can only be produced in five areas of Mexico: Jalisco, Nayarit, Guanajuato, Michoacan, and Tamaulipas. However 99% is made in Jalisco, home to the town Tequila. In order to be called Tequila it must be made from at least 51% Blue Weber Agave. Legislation allows for the remaining sugar to come from non- agave products, such as sugar cane which also grows in Mexico. Tequilas made with 100% Blue Weber Agave are labelled as such, those made with less than 100%

are called “mixto”. Tequila sales are worth £160m in the UK and sales are growing 3% perhaps due to a move towards more premium brands, by consumers. It seems lke pubs are catching on to tequila’s popularity – they saw a increase of 11.3% in value and 8% volume recently, however pubs only account for £35m worth of sales compared to £80million in bars and clubs. However tequila sales are not growing as quickly in the latter only up 0.8% in value and 2.4% in volume.

JOSE CUERVO 1800 Although tequila is known to have first been created in the mid 1700s, the year 1800 is generally taken when today’s tequila was born. Jose Cuervo was the first maker of tequila, and 1800 Tequila is the distillery’s 50% abv/ 100% agave tequila. 1800 Tequila is mellowed in American oak barrels for just 15 days, and is double distilled and blended with a “special selection” of the distillery’s white tequila for added complexity and smoothness. 1800 Silver has four main finished Reposado, matured in new American and French oak barrels for no less than six months; Anejo, aged in new French and American oak barrels for a minimum of 14 months; Milenio, extra-aged tequila finished in French oak Cognac barrels creating a balanced, soft and unique flavour and Coconut, infused with natural, ripe coconut flavour;

SAUZA This 150-year-old Mexican Tequila brand is the second largest in the world by volume behind rival Jose Cuervo. Now part of Beam Suntory’s stable the brand underwent a complete packaging refresh In 2016. The bottle itself was also refreshed with a squarer shape and more defined shoulders. It carries a “Tequila Sauza” embossing on the side. Conviviality’s Catalyst Brands. distribute the brand in the UK.

CASAMIGOS TEQUILA This tequila brand was brought to the market by Hollywood idol George Clooney and business partner Rande Gerber and Mike Meldman in 2013, and last year Diageo paid $1 billion for the brand. They plan to not only promote Casamigos in its key US market but internationally too. No doubt its PR will be helped by the news that the UK Brand Ambassador for the brand has just become engaged to Princess Eugenie. Her hubby to be is Jack Brooksbanks.

VODKA

V

odka is the largest spirit category accounting for 31.1% of the value of all spirit sales – a massive £1.9bn. But recent years have seen the category go into slight decline. It also has one of

the highest distribution levels of all categories with more than 97% of outlets carrying it. Nationally the best selling brands are Smirnoff, Absolut and Russian Standard but in Scotland the top three includes Glens.

HOLY GRASS VODKA Hand-crafted in the far north of Scotland, Holy Grass Vodka was released from the multi-award winning Dunnet Bay Distillery in Caithness in November 2015. It features the unusual botanical Holy Grass, first discovered on the banks of the nearby Thurso River by Robert Dick. Holy Grass, so-called as it was once used to bring a sweet, vanilla smell to church floors, brings a wonderful and herbaceous flavour to this distinctive vodka. A celebration of local produce and ingredients, the spirit is also infused with a carefully crafted vapour of Highland apples and apple juice to complement the sweetness of the Holy Grass. The result is a delicate and fresh vodka with a creamy smooth finish. In 2016, Holy Grass received top accolades at the Great Taste Awards and IWSC Awards and also won best vodka at the Grocer Drink Awards. In 2017, Dunnet Bay Distillers plan to promote Holy Grass Vodka more heavily in the on trade, with a particular focus on cocktail bars. The distillery also aims to release a limited edition which will give the original Holy Grass Vodka a garden makeover, incorporating some of the wonderful botanicals and berries that grow in the distillery gardens.

SMIRNOFF Smirnoff Red is the top-selling vodka brand in the Scottish on-trade, and it is the UK’s number one pub spirit brand by volume. At the end of 2017 it launched a new campaign to help inspire Britain’s nightlife to become more open-minded about gender, and it partnered with the LGBT Foundation to enforce “real change” with its ‘The We’re Open” campaign also includes initiatives like guidance for its bartender training programme to raise awareness of non-binary issues and build skills knowledge and confidence to ensure that bar staff are leading the way in ensuring clubs and bars remain as inclusive spaces.

STOLICHNAYA Stolichnaya, known affectionately as Stoli, changed distributor at the start of 2018. It is now a Cellar Trends brand so look out for some fresh activity. Launched in 1938, Stolichnaya’s roots are Russian and its name from ‘stolitsa’ (‘capital city’). The brand also boasts some diverse flavoured bottlings to accompany its classic Stolichnaya Red Vodka, including orange, blueberry, peach, salted caramel and chilli variants as well as a Stoli Gluten Free variant.

WHISKY COMPASS BOX WHISKY Compass Box have always been at the forefront when it comes to innovation. It’s latest Signature Range showcases a diverse and stunning spectrum of styles that can be created within the Scotch style today. Included in the range are The Spice Tree, The Peat Monster, Oak Cross, Asyla and Hedonism. From sweet and unctuous to big and peaty, it is an exploration of Compass Box’s contribution to date of pushing the category forward.

FINNIESTON DISTILLERY This Glasgow-based distillery has created a range of ready-to-drink whisky cocktails. The brightly packaged drinks range aims to bring new energy and new interest into Scotch Whisky. It’s website says, “Finnieston Distillery thrives on being progressive and innovative. We want to overthrow the traditional image, rules and behaviours that are associated with Whisky because we truly believe that people should be free to drink what they want, how they want and when they want it.”

PEATREEKERS Peatreekers is another new blended malt whisky that aims to ruffle a few traditional feathers. It has some funky packaging and is has been created to be “enjoyed when you want, however you want it.” It is based around the story of the Peatreekers who were renegades from the 18th century who created great whisky that was drunk by everyone. They were whisky rebels of the time, and Peatreeker has the same philosophy. It aims to “will walk a different path; we will stand out and be different – unashamedly unbowed, just like the peatreekers.”

WHISKY – MALTS

S

cotland accounts for a quarter of all malt whisky value sales. And certainly malt whisky has been the shining light when it comes to growth over the last few years. There is no shortage of interest in the category no doubt fuelled in part by the number of whisky festivals that now take place in Scotland. The best selling malt is Glenmorangie 10 yo,

TAMDHU Tamdhu Speyside Single Malt Scotch Whisky scooped a Gold award at the 2017 San Francisco World Spirits Competition. – one of the world’s most prestigiuous spirit competitions. Tamdhu Batch Strength II was awarded a Double Gold Medal, The Tamdhu distillery was built on the banks of the River Spey in 1897, in an era where the Victorians were very optimistic about whisky. The very best American and European sherry oak casks, either first or second fill, are used for its two core expressions, Tamdhu 10 and Batch Strength. Recently owners Ian MacLeod Distillers recently released two limited editions of its core expression Tamdhu. The first, a limited edition Tamdhu 10 Year Old Lantern Tin is reminiscent of its Victorian roots, with its design presenting the golden glow of the whisky through the lantern. The presentation tin also allows you to place a candle inside and recreate the Victorian glow like the very first Tamdhu drinkers would have done while the second Tamdhu’s anniversary Tamdhu 50 is matured in a first fill European oak sherry butt for five decades.

BENROMACH The Benromach Distillery had a first in 2017. It created a triple-distilled version of Benromach. The new whisky is distilled in a wash still once, then twice in a spirit still, before it is matured in first fill bourbon barrels. The result is a light, sweet vanilla, chocolate and lemon taste with a lingering smokiness and a light golden colour. Benromach Triple-distilled is a 2009 vintage bottled this year, and will have a limited release of approximately 1300 cases. Benromach also added to it s Wood Finish portfolio, with the Benromach Chateau Cissac Wood Finish 2009. This single malts has a unique flavour, which is down to a final finishing period in hand-selected wine casks from the French wine region of Haut-Médoc near Bordeaux. It joins the other wood finish expressions Benromach Sassicaia and Benromach Hermitage. Benromach 25 Years Old, which was launched in 2016.

ISLE OF ARRAN The Isle of Arran Distillery is currently the only distillery on the Isle of Arran on the south west coast of Scotland. If you would like to feature a full range of single malt across all the various geographical whisky locations in Scotland, this single malt is an absolute must. Double-distilled from un-peated malt, the Arran Single Malt is matured in both ex-Sherry and ex-Bourbon casks for perfect balance. The result is a fuller bodied dram with a delightful sweet-fruity character that shows maturity far beyond its years. All of their single malts are non-chillfiltered with no added colouring, which means they’re natural in pigment and exactly the way whisky should be! The core range of this forward-thinking, 100% Scottish owned independent distillery currently comprises the 10, 14 and 18 year-old single malts, plus the two peated expressions of Machrie Moor.

WHISKY – MALTS

GLENGOYNE Glengoyne Distillery’s malts’ renowned rich, bold flavours come from its stills which are run as the slowest in Scotland to build up the richness the finest oloroso sherry casks. The maturation within its traditional dunnage warehouses creates the taste excellence its Highland Malt is known for. Last year Glengoyne Highland Single Malt Scotch Whisky celebrated four top accolades at Ultimate Spirits Challenge held in New York. The Glengoyne 15 Year Old scooped the ultimate award of Chairman’s Trophy, a citation of excellence, and was awarded an outstanding 97 points. This was closely followed by the 12 Year Old and 18 Year Old expressions, also finalists, which both received an impressive 95 points. Glengoyne Cask Strength completed the victory, being awarded 94 points. The distillery has also been commended for its commitment to the environment with the Amorim Sustainability Award for Spirits in the 2017 Drinks Business Green Awards.

This unusual single malt combines the top picks of our warehouse from 20 industry experts, to create an exceptional single malt that exceeded expectations. While for its third expression in the series, the company found inspiration in the freezing vineyards of a Canadian Icewine maker, collaborating to bring together the complexity of our classic aged single malt with the unusually intense sweetness of Icewine. Meanwhile the brand But we haven’t stopped there. Over the next few years, we’ll continue to experiment and push the boundaries of what can be achieved with our single malt whisky.
