SURFBOARDS CASK MAGIC

S

urfing fans look out for the latest innovation from Glenmorangie. The brand has taken to the waves in partnership with Grain Surfboards of Maine, New England USA, as part of its Beyond the Cask creative collaborations, which will see oak casks used to age Glenmorangie remodelled into hand-built wooden surfboards. These casks are only used once and the craftspeople at Grain Surfboards have built a series of exclusive limited-edition Glenmorangie Original wooden surfboards using reclaimed staves from the Glenmorangie barrels. As Dr Bill Lumsden, Glenmorangie’s Director of Distilling, Whisky Creation & Whisky Stocks, explains, “People often ask us what happens to

those casks after their whisky-making life is over. Whisky specialists Gordon & MacPhail have released two very special decanters as part of its ‘Private Collection’, which have been personally selected by members of the family that owns the company. Sold as a pair, only 97 sets of twin decanters are available worldwide but you will have to dig deep because the recommended selling price is £30K. The ‘twin’ whiskies were selected for bottling by identical twin brothers Stuart and Richard Urquhart, and contain the oldest Longmorn single malts ever released, originally laid down to mature by the

To mark the launch, Professor David Purdie, a fellow of the Royal College of Physicians, has worked with Gordon & MacPhail to uncover what shapes character in twins – the effect of heritage, environment, and location. In two three-minute ‘twin’ films, Professor Purdie meets Gordon & MacPhail’s Director of Prestige, Stephen Rankin, to explore the subject and reveal how this parallel could be applied to twin whiskies.

SUSAN BECOMES A KEEPER Susan Colville, Benromach’s brand home manager has become a Keeper of the Quaich at an exclusive ceremony at Blair Castle in Perthshire. Susan Colville was invited to join the international and select society which recognises those who have shown outstanding commitment to the Scotch whisky industry. She leads a dedicated team of guides at the distillery who deliver a highly personal and up-close experience to thousands of visitors from all over the world each year. Throughout 2018, as Benromach celebrates its 20th anniversary since production restarted, Susan has been driving an exciting programme of activity. She began by leading the team that staged the Spirit of Speyside Whisky Festival opening gala dinner in May and is helping to host colleague and trade events throughout the year. Susan was thrilled to be honoured by the Keepers of the Quaich She said: “This has been an incredible year at the distillery, and to receive this accolade during our 20th anniversary is particularly special for me. Last month, Benromach Distillery, which attracts more than 13,000 visitors per year achieved its Five Star Visitor Attraction status from VisitScotland’s Quality Assurance scheme.

AILSA BAY GETS A REFRESH AND A MODIFIED LIQUID

REBRAND FOR GRANT’S Grant’s Scotch whisky has a new look and is heading in a new direction. It has new packaging and its signature blend will now be known as Grant’s Triple Wood. The changes also mean the brand will now have a refined core range -an Ale Cask, Rum Cask and 8 year old Sherry Cask Editions. Philip Gladman, Grant’s Chief Marketing Office comments, “While

other blended whiskies are declining, Grant’s continues to go from strength to strength, leapfrogging others to become the world’s number three Scotch whisky. STILLS ARRIVE ON ARRAN

If you were heading to Arran recently you may have noticed some unusual activity on the ferry... Isle of Arran’s new custom-made copper pot stills arrived on the island, having made a ferry ride from Ardrossan to Brodick and then transported road to the Lagg Distillery! Master Distiller James MacTaggart, along with Graham Omand, the newly appointed Lagg Distillery Manager, and Faye Waterlow, the Lagg Visitor Centre Manager, were on site to welcome the copper pot stills to their new home, where they will begin the production of the signature Lagg Single Malt in early 2019. 8

The copper pot stills were manufactured by renowned still-maker, Forsyths. They have been specifically tailored to create a heavily-peated (50ppm) earthy spirit that will become the flagship Lagg Single Malt. It is expected that this spirit, despite being very different in nature, will retain many of the characteristics that are the staple flavours of the celebrated Arran Malt. Speaking about the arrival of the stills, James MacTaggart said, “Now the stills are here, it truly feels like the start of an exciting new chapter, not just in the story of whisky production on Arran, but for the island as a whole.”

Mackmyra a Swedish craft single malt whisky has launched in the UK. Magnus Dandanell, Director of Mackmyra Swedish Whisky Ltd comments, “It’s going to be fascinating to follow progress in the UK now that we’ve finally been able to launch sales here. We’re seeing considerable demand among UK consumers, but frustratingly it’s been difficult to offer Mackmyra’s entire product range via British importers without it being far too expensive and complicated for the consumer. That’s now changing.” It’s core whiskies are Mack by Mackmyra, Svensk Rök, Svensk Ek and Brukswhisky.

FUNNY AS FOLK ... THE BEST QUIPPY ONE-LINERS Whyte & Mackay is distributing 120,000 limited edition glasses with quirky one-liners on them when they buy a bottle of Whyte & Mackay. The glasses tie-in with the brands Funny as Folk campaign. EDEN MILL TO OPEN BAREATERY AND BLENDWORKS EXPERIENCE IN GLASGOW’S PRINCES SQUARE

GLENFIDDICH FIRE & CANE HAS ARRIVED Glenfiddich has launched the fourth concept in its Experimental Series with Glenfiddich Fire & Cane, a smoky whisky finished in sweet rum casks. Fire & Cane is inspired by the early innovation of Glenfiddich Malt Master Brian Kinsman, who in 2003, first ran peated spirit through the Glenfiddich stills, birthing the concept. Fire & Cane marries smoky whisky with non-peated malts that had been maturing side-by-side in bourbon casks, highlighting Glenfiddich’s sweet and fruity signature style. The whisky is finished off in Latin rum casks to produce an overlay of flavours with added caramel toffee sweetness. Said Brian Kinsman, “This new single malt truly encapsulates the spirit of experimentation. We started with a question - what would happen if we did something with peat that we had not done before? The answer is an unconventional and unexpected whisky, one that is truly surprising,” Other releases in the series include the Glenfiddich IPA Experiment, Glenfiddich Project XX and Glenfiddich Winter Storm. 12

Eden Mill is to open its first venue outside St Andrews in Glasgow’s Princes Square at the end of October. The new bar-eatery called Jax will include the company’s Blendworks experience which sees Eden Mill’s tutors lift the curtain on the gin making process, bringing the historic setting of St Andrews to Glasgow. Blendworks gives visitors the chance to create their very own gin by choosing their own ingredients and determining their own flavour profile. The bar will feature cocktails designed by Eden Mill’s distillers, DJ’s and of course good food. Paul Miller, director at Eden Mill, says “We are delighted that our second Eden Mill venue will be at Princes Square and we are confident that its quality and fun delivery will add to the exciting range of bespoke experiences visitors can enjoy.”

here’s a new single malt, Aerstone. The makers Wm Grant & Sons, say the new malt will help new single malt drinkers navigate malt whisky flavours. The new 10-year-old single malt focusses on the impact of maturation and malting on flavour and is available in two expressions – Sea Cask 10-Year-Old and Land Cask 10-Year-Old. Sean Wiemann, Global Innovation Brand Manager at William Grant & Sons comments, “We wanted to create a brand that would allow consumers to make a confident choice and offer a great everyday single malt to complement the rest of our premium portfolio. Tatsuya Minagawa Tatsuya Minagawa, 48, co-owns Craigellachie’s Highlander Inn. Jason Caddy met with Tatsuya to talk whisky – and have a gander at his claim to fame!

Could you start by telling us about your whisky claim to fame. “As far as I know I have the largest collection of Japanese whisky in Scotland. Our guests are global, attracted by our well-chosen, interesting whisky selection. People will travel for quality. We now have about 300 whiskies but when we started, we only had about 50, like any pub in Elgin or Aberdeen, for example. “Just before I left Japan there was a downturn in whisky consumption after the peak in ‘81 and ‘82 and Scotch whisky wasn’t popular. It was all bourbon. But that certainly isn’t the case today.” 17


So how did you wind up in a small village in Scotland, some 5,662 miles from your native Japan? “I’m from a small city in Japan called Yamagata that’s about half the size of Edinburgh. I moved to Edinburgh 20 years ago when I was in my early 20s and I have always been into whisky and so I wanted to go to the whisky country. I planned to stay here for a year and I thought, wow, this is alright. A nice country.” “The Craigellachie Hotel was looking for someone to run the hotel’s whisky bar with accommodation thrown in. (It’s just over the road from The Highlander.) This was 2003. As I was based in Edinburgh and loving it at the time working at M’s on King’s Stables Road, and as I’d been up here one or two times, I thought ‘no chance, too remote’. But they managed to twist my arm and, surprisingly, it was far far better than I thought. Two years later I moved to The Craigellachie where I was offered a director’s position shortly afterwards.” Is hospitality in your blood? 18

“My late father was a sushi chef, and my mother, who’s still alive, also worked in the restaurant.” What’s the key to running a successful whisky bar? “Ten years ago people’s expectations were ‘no expectations’, but today they have grown and so has our whisky offering. Speyside is booming and of course we benefit from this. We are lucky to be surrounded by 50 great distilleries, fishing, and The Speyside Way. The Macallan has just opened a brand new distillery and all of this brings a ton of people flocking to this small village. It’s all good. This business is successful because, as well as my ideas, I have heart, knowledge, passion, personality. And a lot of luck!” What was it that first switched you on to whisky? “I took on a bar apprenticeship in Japan aged 18 and my father also did an apprenticeship in cheffing when he was that age. In Japan, the hospitality industry is taken far more seriously than it is here. I think things are changing in the UK

though – albeit very slowly, but they’re changing nonetheless. The majority of people still mistakenly believe that two people making G&Ts will do it in exactly the same way or that there is zero art or flair to it. “I pride myself on the fact that many of the more professional bartenders use both Japanese techniques as well as Japanese tools behind the bar, and Japan remains one of the best places in the world to kick-start a career in this industry because of a wide availability of apprenticeships. The same can be said of Hong Kong and Singapore.” What’s a typical day involve for you? “I tend to work in the office by day and in the whisky bar at night. I love talking to customers. I work five days until 6pm and I have my head buried in spreadsheets in the daytime, but I much prefer to be behind the whisky bar, serving and chatting to all the customers from the Netherlands, Germany, South Africa – all over the world. Sometimes I wish that I could be like a flamingo and be able to shut off one side of my brain because there’s always

something to think about when you run a business and employ people.“ We hear that The Highlander is a bit of a family affair. Is that right? “That’s right. My wife works in housekeeping and also looks after the décor. I have a son of nine who loves football but has no interest whatsoever in following in my footsteps!” What do you do away from the job? “I run six miles four times a week, but no marathons and no competitions these days. I get my best business ideas when I’m running and what a terrific backdrop Speyside is for it.” Are you planning to repeat your winning formula with a Highlander Number 2? “I don’t feel the need to open ‘Highlander 2’. We are doing well and I want to build on the success of what we’ve achieved so far.” n 19

BLENDED LIKE BECKHAM I

f I were to ask you what your favourite whisky was the chances are that you would mention a malt whisky, and certainly, malt whisky marketers have done an excellent job of bringing their various expressions and flavour profiles to the attention of the whisky-loving fraternity. However, it is blended whisky which is really the lifeblood 20

of the industry. There is not the same value in blended whisky but the volumes are far greater. In fact, 9 out of 10 bottles sold are blends. In the UK, sales of blended whisky are worth double what sales of malt whisky are worth and in the US blended whisky outsells its malt cousin by 4 to 1. But despite that, over the last decade sales

of blended whisky have steadily declined. So maybe this is time to get blended whisky back on the right foot. Last year for the first time in a decade sales in the US rose. But in the UK drinkers have been slower to re-discover blends – volume sales of whisky dropped – more than 400,000 fewer bottles were sold. Much of the

blame of this dip is to do with the performance of standard blends. So whisky marketers are beginning to sit and take notice of the current trend. The people behind the brands are beginning to reinvest in blended whisky and the UK is now beginning to get a taste of what the rest of the world has benefitted from, and that is some creative marketing. Over the last 20 years, you can count on one hand the marketing campaigns for blended whisky that have been activated in the UK. Perhaps I should re-state that – it’s been a while since blended whisky got some modern marketing! That’s allowed American brand Jack Daniel’s to grow its share of sales to in excess of £400m, that’s more than our home-grown blended whisky. And if Jack Daniel’s can make itself relevant to a younger audience – why can’t blended whisky? In Europe and in the US blended whisky marketing has generally been upbeat and attentiongrabbing – here in the UK it has been much more restrained, and it tends only to surface at Christmas. Blended whisky has also not benefitted from the fact that its traditional drinkers are dying off, the other negative is that it’s not considered premium, and with the current move to premiumisation brands are having to come up with a premium version or give the brand premium credentials. Research shows that malts, imported whiskey and premium blend sales are up by more than 3%. Our traditional blended brands are re-creating themselves and becoming more relevant as they are sponsoring events linked to comedy and such like and introducing the brand to younger audiences, and repackaging and re-engineering has also made

some brands more palatable, also consumers are now being encouraged to mix whisky and create long drinks. Haig Club, the blend backed by David Beckham, has a new vibrant advertising campaign which has just appeared. In it he appears to challenge traditional whisky rules and dares people to try Haig in cocktails and with mixers. During the summer, our most modern blended whisky, Monkey Shoulder went on tour with a giant cement mixer – and it churned out Monkey Shoulder cocktails. Attention-grabbing? Certainly! And Johnnie Walker unveiled its new White Walker by Johnnie Walker to coincide with the new Game of Thrones series. The brand collaborated with HBO and created a limited-edition whisky designed to be best served directly from the freezer. The bottles have icy white and blue design along with the iconic Johnnie Walker Striding Man now fashioned in armour to fit in among the ranks of the Night King’s forces. The clever clogs in marketing have also created a cool, temperature-sensitive ink technology. An unexpected graphic icy will only be revealed on the bottle when it is frozen.” The other good news is that bars are increased their blended offerings. Last year Gleneagles added more than 20 labels to its blended range. Tom Jolly, of Gleneagles, told Marketwatch Magazine, “Blended whisky is becoming popular again. I see it in what my customers, many of whom hadn’t tried blended Scotch in a long while, are ordering here. They’re sipping blends, they’re drinking them in highballs with soda and they’re asking us for new cocktail recipes. Blended Scotch is on the rise. There’s a movement going on.” We really hope so. n 21

And especially all those of you with dogs. They get an equally as warm welcome. There’s over 300 whiskies to choose from, plus this bar also goes a bundle on traditional live music. It may be wee, but it holds its own in the sea of Finnieston’s hipster haunts and trendy eateries that have sprung up all around it in recent years.

The Station Hotel 51 New Street, Rothes, Moray AB38 7BJ The Station Hotel shines bright like your eyes after a few malts – and is right at the very heart of Scotland’s whisky country. There are actually 60 distilleries within a 50-mile radius of this beacon of boutique style that’s also really warm and welcoming, so it’s a great vantage point from which to explore Speyside, for the hotel guests and non-guests alike.

We bet that you’ll also leave with more friends than you had when you went in, it’s that friendly. The Swan Inn tends to attract people from farther afield than the village alone, such is its far-flung reputation. It defies the traditional template of a village pub with the likes of whisky cocktails, quiz nights and themed evenings, like steak and cocktail nights.

Whiski Rooms 4-7 N Bank Street, Edinburgh EH1 2LP Situated on the Mound and a stone’s throw from the Royal Mile, Whiski Rooms is a whisky bar with a difference. Not only is it a whisky bar, it also houses a specialist whisky shop and tasting rooms, and you can even try in the bar before you buy in the shop. Tasting sessions are also on offer. As well as the whiskies, you might also find yourself agonising over its wide spirits/beer selection.

The Taybridge Bar 129 Perth Road, Dundee DD1 4JD Dundee’s Taybridge Bar was established in 1876 so this Dundee stalwart has kept its customers happy over many many winters. The busy west end bar won BNN Community Bar of the Year three years in a row, and as well as whisky, there are also local craft beers and gins on offer in what is one large space when three separate areas were knocked into one. And if you’re a sports fan you’ll also find yourself in clover with four large screen TVs to distract yourself from the wintry weather.

Bag O’Nails 165 Dumbarton Road, Glasgow G11 6AA A star could be born beneath the twinkly lights at The Bag O’ Nails while you’re enjoying one of its 50 whiskies because this Partick favourite also hosts open mic events. A fairly sizeable bar with a cosy edge, it’s ideal for a few winter warmers in small or large groups. There are separate rooms, a restaurant and a bar with a stage for the local talent. Exposed stone walls give it a stylish edge, plus there’s as few hearty dishes on the menu. As well as whisky you’ll also find a very respectable craft beer selection.

The Port Charlotte Hotel Isle of Islay PA48 7TU The Port Charlotte Hotel and Bar has the most perfect beach-side location overlooking Loch Indaal and the bar is great too. After a walk oin the beach there is nothing better than sitting down with a warming dram and there is certainly plenty to choose from. The bar plays host to nearly 150 Islay malts including rare ones and local ales too. The Port Charlotte Hotel is open all year round and between October and March has an excellent dinner, bed and breakfast rate. So no need to hurry your visit.

This bar really is one place that attracts such a lot of characters, and good banter and something different is always welcome for beating those winter blues.

The Bow Bar 80 West Bow, Victoria Street, Edinburgh EH1 2HH This gem of a traditional whisky bar has been a stalwart on Edinburgh’s barscape for years. Bow Bar’s solid mahogany gantry is sturdy enough to bear the weight of some 400 whiskies – plus there’s also a good selection of independent bottlings nestled among big-gun whisky brands. The friendly staff are always happy to help and advise, and if it’s a warming bite of lunch you’re after, Bow Bar does a mean selection of hot pies.

The Lismore 206 Dumbarton Road, Glasgow G11 6UN The Lismore’s stylish with a traditional touch thanks to exposed stone walls, stained glass windows depicting the highland clearances. There are lots of quirky design features in what is essentially two bars, one larger, one smaller. The atmosphere’s charged in this place, helped along by frequent live music spots, but there are a few quiet nooks and crannies if a quiet drink’s more your bag, and all in a warm, friendly winterbusting environment.

Ballygrant Inn Ballygrant, Isle of Islay PA45 7QR The Ballygrant Inn has a cracking wee whisky bar, voted Whisky Bar of the Year at 2015’s Scottish Bar and Pub Awards, and known locally as Robolls Bar. GLENFIDDICH FESTIVAL EXPERIMENT #2

The Glenfiddich Festival Experiment returned for round two in September. The festival acted as a well-deserved break for 700 bartenders from across Scotland as they gathered on the distillery grounds in Dufftown to enjoy a special thank you from Glenfiddich for their continued support.The weekend of non-stop entertaintment featured comedians, distillery tours and on-site massage chairs. The main stage was graced by the legendary Razorlight and Scotland’s Twin Atlantic. Not to mention, Glenfiddich’s own DJ Paradice who flew in from the states to make a late night appearance on the Forrest stage. It was a great turnout for an awesome event.
