BROCKMANS PLUM DELICIOUS INGREDIENTS • 40ml Brockmans Gin • 25ml Calvados • 25ml Apricot Liqueur • Orange bitters • 2 Plums
METHOD Add all the ingredients and muddle with 2 fresh plums in a shaker and add a dash of orange bitters. Shake over ice, strain into a tumbler filled with a large ice ball.
GARNISH A thin slice of plum.

By Test the Best Cadenhead’s Old Raj Gin is distinctive in that it contains a measure of saffron, the rare and costly spice derived from the crocus flower. Café Courvoisier Espresso Martini INGREDIENTS • 5ml Courvoisier VSOP • 15ml coffee liqueur • 30ml cool fresh coffee • 10ml sugar syrup
METHOD Shake and fine strain into a martini glass.
GARNISH Garnish with 3 coffee beans / chocolate dusting.

INGREDIENTS • 35ml Kraken Rum • 25ml Port • 30ml Cream • 1 Egg • 20ml Simple Syrup.
METHOD Shake all ingredients hard, and strain into a chilled small wine glass.
GARNISH A little grated nutmeg.

The Laphroaig Penicillin INGREDIENTS • 50ml Laphroaig 10 Year Old • 25ml lemon juice • 15ml honey syrup • 10ml ginger syrup Ice: Cubed ice Glass: Rocks Glass
METHOD Add ingredients into a glass shaker then shake and strain into a rocks glass filled with cubed ice.
GARNISH With a lemon twist.

wild island gin and tonic INGREDIENTS • 50ml of Wild Island Botanic Gin • Lots of good cubed ice • 100ml of a clean, neutral tonic water (Fentimans or Fever Tree’s Naturally Light Tonic are very good) • Slice of fresh lemon • Twist of lemon peel • Sprig of mint
METHOD Add the ice to high ball glass followed by the gin. Add the lemon slice before pouring in the tonic and stirring gently.Finish with a twist of lemon peel and a sprig of mint for aroma. Serve and enjoy.

southside A classic early Prohibition-era cocktail named after the notorious South Side district of Chicago. More recently described as the “Gin Mojito” it requires just a few high quality ingredients and a citrus-led premium gin like Wild Island Botanic Gin is perfect.
INGREDIENTS • 50ml of Wild Island Botanic Gin • 25ml lime juice • 20ml sugar syrup • 8 mint leaves
METHOD Combine all ingredients in a shaker with plenty of ice and shake vigorously for 15 seconds. Double strain into a chilled coupe or champagne flute and garnish with a sprig of mint. Add soda to create the alternative “Southside Fizz”
