1790 MUSCOGEE TREATY AT NMAI > A Muscogee (Creek) delegation gathered in Washington D.C. for the installation of the 1790 Treaty of the Muscogee (Creek) Nations and the United States into the “Nation to Nation” exhibition currently at the National Museum of the American Indian. ANCIENT CANOE EXHIBIT > Dugout Canoes: Paddling Through The Americas” is in the Aaittafama’ Room of the Chickasaw Cultural Center through September. This exhibit showcases canoemaking, paddles, tools, fishing equipment, model canoes, a replica canoe to climb in and several hands-on activities. Ancient canoes on display include one made from a cypress tree back in the 1500s. Don’t miss this one-ofa-kind experience.

BISON ROUNDUP
WE TALKED TO Harvey Payne, Director of the The Nature Conservancy’s Tallgrass Prairie Preserve (below right) at this year’s annual bison roundup. “The Tallgrass Prairie Preserve (TPP) is the remnant of what was probably the dominant ecosystem in North America, stretching from Canada to Mexico.” And probably the most threatened; less than 4% of the original prairie remains. “Efforts to establish a preserve in Osage County in the 1980s led to The Nature Conservancy’s purchase of a ranch that became the TPP. “We have about 2,500 animals; we perform these checkups to keep the herd healthy.” > See a video of this years’ bison roundup: www.oklavision.tv/ home/video/bison-roundup-atthe-tallgrass-prairie-preserve

THE ANNUAL meeting, conference and trade show of the National Indian Gaming Association (NIGA) is the premier indian gaming industry event of the year. Tribal leaders, gaming and facilities vendors, craftspeople and celebrities gather in San Diego, CA for commerce, culture and education. NIGA Chairman Ernie Stevens, Jr. was uncontested in his bid for an 8th consecutive term. John Eckohawk did the honors of swearing in Chairman Stevens (top left). 3-CARD POKER > > Have you ever played a game of Three-Card Poker? The game is gaining popularity across the nation. It’s different than traditional poker and depends more on luck than strategy. For starters, each player receives three instead of the traditional five cards, so there are no Royal Flushes, Four of a Kinds, Full Houses, or Two Pairs.
> There are two games in Three Card Poker: 1) Pair Plus and 2) Ante & Play. Bet on one or on both games.
you must raise by placing what is called the Play bet, equal to the Ante. Now you play–no raises. The dealer must qualify with at least a Queen. If the dealer does not qualify, you win even money on the Ante and the Play bet is returned. If the dealer qualifies, here’s how the payout works: if you have a better hand, you win even money on both the Ante and Play bets; if you tie, both the Ante and Play bets push; if the dealer beats your hand, kiss both the Ante and Play bets goodbye.

Pair Plus The Pair Plus bet is a straight payout depending on your hand. The dealer’s hand isn’t an issue. You’re dealt a good hand–you win.
> Ante and Play The Ante and Play game is you against the dealer. First you’ll make your initial bet, the Ante. You’ll be dealt three cards and can decide to either play or fold. Keep in mind that if you fold, you not only lose your Ante but also lose any Pair Plus bet you made. So think carefully. If your Pair Plus bet won anything, you shouldn’t fold. If you decide to play,

Bonus Then there’s the Bonus. If you have a Straight or higher, there is a bonus payout. This is paid whether or not the dealer qualifies. If the dealer qualifies, the play bet wins even money and the payout on the ante is based on the casino’s pay table. If the dealer does not qualify, the payout on the ante is the same as above but the play bet is returned.

GROUND CAYENNE PEPPER 4 CLOVES MINCED FRESH GARLIC 1 RED BELL PEPPER, DICED 1 GREEN BELL PEPPER, DICED 1 LARGE YELLOW ONION, CHOPPED YUKON GOLD POTATOES, CUBED JUNIPER BERRIES (IF AVAILABLE)
2C. UNBLEACHED FLOUR 1 TSP. SALT 1 STICK BUTTER 4 TBSP. CHILLED VEGETABLE SHORTENING

Trim and cut the bison into 1-2 inch cubes. Dredge in flour and brown the meat in just enough oil to keep it from sticking to a large skillet.
> Add ice water as needed to the mix until the dough can be formed into a ball.
> Cover and refrigerate until needed (it can be made several hours in advance). If a bread is desired, use the Little Big Pie dough recipe.
MAKE THE PIES

Roll out pie crust or dough on a floured surface and cut out the top and/or bottom to size.
Add onions and garlic.

Assemble the pies in individual bowls and cook at 350 for thirty minutes.
After the meat is well-browned, add bell peppers (seeded, deveined and diced) and sweat.
> Toast dry seasonings and berries in a small dry skillet and add it to the meat mixture along with the tomatoes, juice and water.
> Cook until tender and thickened, stirring often. Add potatoes during the last half hour of cooking.
> Express yourself! Garnish the top crust with rosemary, jalapenos or dough cut-outs.
> Egg wash the crust for the last ten minutes of baking. Serves 8-10.
