ANCIENT CANOE EXHIBIT > “Dugout Canoes: Paddling Through The Americas” is in the Aaittafama’ Room of the Chickasaw Cultural Center through May 6. This exhibit showcases canoemaking, paddles, tools, fishing equipment, model canoes, a replica canoe to climb in and several hands-on activities.

Ancient canoes on display include one made from a cypress tree back in the 1500s. Don’t miss this one-ofa-kind experience.

BISON ROUNDUP

Every Fall at the Tallgrass Prairie Preserve in Osage County, the Nature Conservancy holds a bison roundup.

Attendance to this spectacular event is by invitation only; Conservancy members are invited on a rotating basis.

> The Nature Conservancy has reintroduced bison at the Tallgrass Prairie Preserve as a critical part of the restoration of the tallgrass prairie ecosystem. The bison at the Tallgrass Prairie Preserve have about 25,000 acres in which to roam freely. The purpose of the roundup is to count, weigh, inoculate and generally check on the health of the herd.

> Guests are given lunch while Conservancy staff and others talk about various aspects of the operation. On this day, Osage elder Ed Red Eagle, Jr. (right) gave a blessing and the Osage perspective on the prairie and efforts to save it. Visitors are awed by the power of these animals that once dominated this land.

> Glen Wiggy was born in Midwest City, the son of the golf pro and seasoned gambler. He graduated from the United States Air Force Academy and had a twentyyear career as an Air Force officer including duties as an Assistant Professor of Mathematics and a Scientific Analyst. He has a BS in mathematics from the Air Force Academy, an MBA from Boston University, and an MS in mathematics from the University of Arizona. His approach is that of a statistician; the book won’t teach you how to “kill” the dealer or make a living playing the game. You will learn basic strategy and introductory card-counting skills that give you enough confidence to approach the table with a positive attitude and reasonable expectation of winning.

3-CARD POKER > > Have you ever played a game of Three-Card Poker? The game is gaining popularity across the nation. It’s different than traditional poker and depends more on luck than strategy. For starters, each player receives three instead of the traditional five cards, so there are no Royal Flushes, Four of a Kinds, Full Houses, or Two Pairs.

> There are two games in Three Card Poker: 1) Pair Plus and 2) Ante & Play.

Bet on one or on both games.

you must raise by placing what is called the Play bet, equal to the Ante. Now you play–no raises.

The dealer must qualify with at least a Queen.

If the dealer does not qualify, you win even money on the Ante and the Play bet is returned. If the dealer qualifies, here’s how the payout works: if you have a better hand, you win even money on both the Ante and Play bets; if you tie, both the Ante and Play bets push; if the dealer beats your hand, kiss both the Ante and Play bets goodbye.

Pair Plus The Pair Plus bet is a straight payout depending on your hand. The dealer’s hand isn’t an issue. You’re dealt a good hand–you win.

> Ante and Play The Ante and Play game is you against the dealer.

First you’ll make your initial bet, the Ante. You’ll be dealt three cards and can decide to either play or fold. Keep in mind that if you fold, you not only lose your Ante but also lose any Pair Plus bet you made. So think carefully. If your Pair Plus bet won anything, you shouldn’t fold. Trim and cut the bison into 1-2 inch cubes. Dredge in flour and brown the meat in just enough oil to keep it from sticking to a large skillet.

> Add ice water as needed to the mix until the dough can be formed into a ball.

> Cover and refrigerate until needed (it can be made several hours in advance). If a bread is desired, use the Little Big Pie dough recipe.

MAKE THE PIES

Roll out pie crust or dough on a floured surface and cut out the top and/or bottom to size.

Add onions and garlic.

Assemble the pies in individual bowls and cook at 350 for thirty minutes.

After the meat is well-browned, add bell peppers (seeded, deveined and diced) and sweat.

> Toast dry seasonings and berries in a small dry skillet and add it to the meat mixture along with the tomatoes, juice and water.

> Cook until tender and thickened, stirring often.

Add potatoes during the last half hour of cooking.

> Express yourself! Garnish the top crust with rosemary, jalapenos or dough cut-outs.

> Egg wash the crust for the last ten minutes of baking.
