Cris Bezdek, Matt Lutz, and Lou Oliva are creating quite the buzz (pun intended) in Warrenton. More than two years since the three founded Wort Hog Brewing Company, the 3,000 square-foot brewpub officially opened its doors on January 21, 2017. Formerly an outdated garage, the building at 41 Beckham

Street is now a modern multitiered structure optimized for enjoying brews both indoors and outdoors. Wort Hog boasts an expansive rear patio and a rooftop bar which is currently winterized for cold-weather carousing. For the Grand Opening, Wort Hog served four of the ten brews listed on its website: Game Day Session IPA, Whoopin’ Sticke Altbier, Rye Not? Helles, and Warrenton’s Great American Ale. Despite the limited selection, customers seemed to unanimously enjoy a signature smoothness unifying the four beverages. I tasted them all for myself, preferring the classic, light simplicity of the drinkable Rye Not? and the balanced flavor of the Game Day IPA. Wort Hog is now serving more of the initially planned beverages including Knuckle

Jeremy Hunt, Warthog Brewmaster Sammich IPA, St. Anthony’s Stout, and most recently Cap’n Brunch, a coffee and cream brown ale released just in time for the Super Bowl. Wort Hog brewmaster Jeremy Hunt is a highly regarded industry veteran with over thirteen years of professional brewing experience, most notably as brewmaster at Deep Ellum Brewing Company in Dallas and as Head Brewer at Dogfish Head. In addition to brews, Wort Hog has partnered with Black Bear Bistro on Main Street to offer refrigerated food on location and order-in for hot menu items. Chef Todd Eisenhauer of Black Bear Bistro recalls that “when [Bezdek, Lutz, and Oliva] were building the brewery, they would come up here for lunch.” Apparently the three enjoyed Black Bear’s food, because they

asked Chef Todd and his general manager to offer a selection at Wort Hog. For customers at Wort Hog, Chef Todd has created a mouth-watering menu of beer food: cocktail shrimp, bratwurst, chicken and pork barbeque, hot dogs, vegetarian sloppy joes, beer cheese dip, and salsa with tortilla chips. As of now, the chef himself or one of the servers will walk food orders from Black Bear to Wort Hog, but Chef Todd shares exciting news: “The whole plan

is to build a kitchen at Wort Hog to host a satellite location of Black Bear Bistro.” When this happens, Chef Todd plans to create dishes to pair with brewmaster Hunt’s craft brews. Bezdek, Lutz, and Oliva have already invested approximately $2.4 million to bring this idea to fruition. Through Virginia’s Industrial Revitalization Fund, Wort Hog also benefited from a $600,000 low-cost loan. Warrenton contributed as well, with a $79,530 reimbursement for upgrades to the water and sewer

infrastructure. Local businesses seem to be benefiting from the newest edition to Old Town, especially the restaurants. Chef Todd elaborates, “What I’ve found is that folks will go down for a beer or two and then walk up into town to check out the local shops and grab a bite to eat on Main Street.” 41 Beckham St., Warrenton / 540-300-2739 / warthogbreweryllc.com

Step into Another World: The Lakota Ranch Farm Store

By Stella Veraduccia crest-hill@hotmail.com You walk up to the bright red cabin with the Farm Store sign, across from the barn and next to the goat pen, and shoo away the free-roaming turkey, rooster and chickens before opening the unlocked door. You step inside and call out to announce your presence but you hear no answer, just the music from the local country radio station. You step up to the untended counter and read the sign describing the honor-system payment policy, just above the bucket of fresh brown eggs with feathers still attached. As you survey the surprisingly wide array of goods available in this charm-

ing small shop, you realize that, despite being only a few miles and minutes from suburban Warrenton and Culpeper, you’ve stepped into another world. The Lakota Ranch Farm Store is located just outside Remington, about five miles off Route 29 and Freemans Ford Road. The little shop was built recently on a 700-acre working farm that is also home to gorgeous Lakota Red Devon cattle, producing premium grass-fed beef; the Lakota Hunt Club, holding guided hunts of deer, turkey and wild fowl; and the Lakota Kennels, offering doggy daycare, boarding, grooming, training, and special events. All of these enterprises are operated

by the Engh family, recognized as superior breeders of Devon cattle and proponents of the locally sourced farm-to-table and pasture-to-plate food movement. The products for sale in the store, made by Lakota Ranch or other local purveyors, reflect that commitment. For starters, there’s the freezer case in the middle of the store containing Lakota Certified Devon beef steaks, roasts, ground beef, and specialty cuts; if you’re using the honor system, there’s a helpful price list on top of the case (they also offer quarter, half and whole animal pricing). A second freezer case contains their farm-raised pork products, including bacon, chops, ribs,

I followed an idea for an owl but decided on different colors and a different style, whereas my sister took inspiration from one of the paintings from a past class and painted a lighthouse sunset scene. We both went into this with open minds and left with

a renewed and revived sense of creativity. They sort the fragrances according to categories – Fresh, Sweet, Citrus, Spicy, Fruity, Beachy, Undefinable, Floral, Smoky, Oud and Woods – and help customers determine which to try based upon scents they already like or how they see themselves. I asked Arielle to suggest a few fragrances based on someone’s nose

preference. For a woodsy scent she suggested Cadimere. It has sandalwood, rosewood and vanilla, and wraps around you like a cozy hug. More of a fan of fruity scents? With these nutritious twists on St Patrick’s Day favorites, you can stay healthy and still enjoy the holiday!

Irish Stew with Beef and Guinness St. Patrick’s Day wouldn’t be the same without a beef stew cooked with Guinness. In this recipe, whole-grain barley cuts down on calories and fat but keeps it hearty.

Ingredients:

3 tbps. canola oil 1 lb. lean beef stew meat 1 tsp. fine sea salt ½ tsp. finely ground fresh pepper pepper ½ cup pearl barley 28 fl. oz. water 12 fl. oz. Guinness ¾ lb. carrots ½ lb. yellow onion 1 tsp. dried thyme 2 tbps. Inglehoffer Extra Hot Horseradish

Directions:

of onion skin and mince. On medium high heat, in a cast iron or enameled Dutch oven, sauté the beef in the canola oil. Add the onion and sauté until caramelized. Add the water, 6 ounces of Guinness, and the barley. Cover the pot with baking parchment and place the lid over the parchment to seal. Bring to a boil then reduce the heat to medium low. Cook for half an hour. Remove the parchment and lid. Add the carrots, remaining 6 ounces of Guinness and replace the lid. Cook for an additional 15 minutes on low heat. Return the stew to a rapid boil and add the thyme and horseradish. Stir thoroughly. Serves: 8 / Prep time: 30 minutes / Cook time: 55 minutes Per one cup serving: Calories: 200 / Fat: 8g / Saturated fat: 2g / Sodium: 270mg / Sugar: 4g / Protein: 11g

Trim all outer fat and cut the beef into ½-inch cubes. Season beef with salt & pepper. Rinse barley in cold water and strain. Wash carrots in cold water and cut into 1-inch lengths. Remove the outer layer

St. Patrick’s Day Cupcakes Satisfy your craving for something sweet with festive St. Patty’s Day cupcakes topped with Greek Yogurt icing. Simply make a box of vanilla cupcakes and top with this delicious, festive frosting packed with protein.

Ingredients:

2 cups plain low fat Greek yogurt yogurt 2 teaspoons pure vanilla extract extract 1 cup powdered sugar Green food coloring (optional) (optional) Gold sugar sprinkles (optional) (optional)

Directions:

Place a fine-mesh strainer over a small bowl. Place yogurt in the strainer. Wrap with plastic wrap and place in the fridge to drain for at least two hours. Note: For best results, let drain overnight. Use an electric mixer on medium speed to beat together the strained yogurt, vanilla and powdered sugar until the frosting thickens, about two minutes. Add the optional food coloring for a more festive result. Cover and place in fridge for 30 minutes. Once the cupcakes have cooled, frost carefully. To frost cupcakes, place the frosting in a quartsized ziploc bag, snip off the bottom corner, and squeeze the bag. For an extra St. Patrick’s Day touch, add gold sprinkles on top.

Mad for Med: Cava Grill

By Laura Clark laura.g.clark@gmail.com On a recent afternoon, Gainesville’s Cava Grill was brimming with customers. Tables were hot commodities as the fast-moving line snaked around the perimeter, nearly to the door. Some particularly hurried folks used the restaurant’s app or ordered online, darting in to pick up food on the fly. Other seated diners enjoyed a more relaxed meal, savoring every delicious Mediterranean bite. This scene would come as no surprise to the multiple investment groups that fueled Cava’s growth with $61 million in 2016. What started in 2006 as a single traditional restaurant owned by three childhood friends has evolved into one of the country’s top chains. The founders, all children of Greek immigrants, tell the story of starting their first restaurant with no computer, no dishwasher, and no staff. Their ordering system was based entirely on Post-Its. Flash forward to 2017, and Cava has 24 locations spanning VA, MD, DC, LA, and NY. The brand is used to being called the Chipotle of Mediterranean cuisine, but seeing Cava from that perspective doesn’t do it justice. The menu is a much-needed departure from the fast food norm. Diners start with bowls or pitas and fill them with

a diverse and generous offering of nutrition-packed greens, grains, dips, spreads, meat or vegetable proteins, toppings, and dressings. Health and freshness are front and center, and taste reigns supreme. The food is so tasty, in fact, that Cava’s hummus, harissa, tzatziki, and “Crazy Feta” have made their way into Whole Foods and other grocery stores. For a refreshing twist on a quick meal, Cava sources locally when possible. The DC region locations work with 10 east coast farms. The restaurant also provides a nutrition calculator as well as allergen data on its website. In the dietary information section of the site, each menu item is specified as gluten free, dairy free, vegetarian, vegan, or soy free. While carnivores will be quite at home with options of lamb, beef, or chicken, those following meat-free diets will rejoice at the dizzying array of plant-based possibilities. It’s worth noting that Cava is building a distinctly positive brand beyond the kitchen. It has three charitable partners who are committed to promoting gardening, sustainability, and health (City Blossoms, Garden School Foundation, and Grow to Learn). Grand openings feature a traditional free community lunch. Last summer, Cava raised starting pay from $10.50 to $13 per hour and began offering hourly employees paid sick and parental leave. Cava is walking the talk of caring about the community and team members, as well as customers.

Enjoying delicious meals at Cava won’t break the bank. Prices are extremely affordable, with overflowing bowls and pitas coming in under $10.00. Soups, juices, and sides can land the bill a bit higher, but the value is consistent. Healthy, innovative, easy on the budget fast food is no longer on the horizon. It’s here. Escape into the world of independent films during the Film Festival at Little Washington (FFLW), a non-profit program of the Rappahannock Association for Arts & Community. Nestled in the foothills of the Blue Ridge Mountains, this festival in whimsical Little Washington supports independent filmmakers through industry collaboration and provides a venue for students from local schools such as Highland and Rappahannock as well as students from our state’s universities. The thirteen-person viewing panel of the FFLW is currently sorting through submissions from filmmakers domestic and international. Of the event’s programming, Festival Director Theresa Wood says that the selection

panel will choose films that elicit strong and varied responses from viewers - films that will spark debate and perhaps controversy, as good art often does. To the filmmakers whose works are selected, the FFLW provides unparalleled small-town hospitality. The FFLW arranges local hosts and subsidizes travel for each of the participating filmmakers, services that lessen the financial burden often imposed on those in the festival circuit.

Once in Little Washington, filmmakers enjoy an environment geared toward collaboration - resulting from the contributions of local volun-

teers and notable film pros alike including Paul Wagner (Academy-award winner), Ron Maxwell (Copperhead, Gods and Generals, Gettysburg, and more), and Rick Davis (dean of the GMU Film and Video Studies Program). Q&A sessions, workshops, and roundtable discussions connect independent filmmakers to their audiences and to industry leaders. Wood says that this year, workshops will explore the creative process and financial distribution (a necessity in the film industry). Filmmakers will also have the opportunity to share their works-in-progress for constructive feedback from professionals. This year, the festival begins with an Opening Night Reception at Tula’s in Little Washington on Friday, April 7th. For $30 admission, guests enjoy delicious food from Tula’s and wines from DuCard Vineyards. After the reception, enjoy the FFLW feature film at the Little Washington Theater, followed by a Q&A and night of continuing festivity in town. On Saturday and Sunday, the FFLW will show films all day. Guests can pay $12 per film or purchase a weekend pass. Tickets go on sale February 25th through Eventbrite.com. All proceeds from the festival go back into the community through the Claudia Mitchell Fund which has awarded $110,000 to 42 community artists and organizations since 2012. As soon as the festival programming is available, guests will find it posted at TheFilmFestivalatLittleWashington.com. This remarkable festival runs by volunteer power.
