“Only a few of the very best make it to the pro level,” says Nick Stamper, partner and operator of Solus Performance Training. “We are here to educate anyone regardless of age or fitness level.” This mission statement for Solus Performance Training has struck a chord with clients of all ages and sizes, universities, schools and club teams in West Tennessee. Chattanooga native Stamper attended and played football at the University of Tennessee at Martin, before transferring to Lambuth University and graduated in 2002 with a Bachelor of Science of Sports Management and a minor in Health and Human Performance and Psychology. Stamper knows what it takes to get to the top level. He spent years in professional football spending time with the NFL’s Baltimore Ravens, in the Canadian Football League and winning a National Championship in the Arena Football League. Then Stamper saw an opportunity to give back what he’s learned throughout his career. “My chances of getting back into the

NFL were slim, so I started working on my business career,” he says. “I was working with Wellworks Sports Complex in Memphis and as a Recreational Therapist and the adolescent intervention center. I was working those two jobs and I enjoyed it.” He began to develop a name for himself by training professional athletes. Word spread about Stamper’s success, and his hard work once again paid off. “My former team doctor at (University of Tennessee at) Martin: Dr. Keith Nord, along with Dr. Bradford Wright, Dr. John Masterson and Dr. David Yakin, were all interested in starting a performance center.” Opening in 2007, the Solus Performance Training facility opened on Vann Drive, providing a wide range of classes for all ages. Because Stamper serves as an assistant to the Seattle Mariners as a Performance Specialist through his work with the Jackson Generals, his team training classes have seen marked success. Local teams include the Jackson Generals, Union University, Freed Hardeman, Lambuth College, Lane College, championship-winning University School of Jackson’s baseball team and

Trinity Christian Academy’s softball team all having trained at the facility. Stamper has designed a class schedule for all types, regardless of age, shape and size. With five great performance coaches on staff, the

LOCAL FAVORITES // Reggi’s BBQ & Wings Longtime Pit Master Serves Up Award-Winning BBQ in Jackson by Tracie Simer

Eugene Pickett, owner of Reggi’s BBQ & Wings, got his first taste for barbecue–at least for cooking barbecue–watching his father prepare large meals for family gatherings. “Watching him cook for big families and our family reunions, he did all the cooking,” he says. “He operated a grocery by day, but loved to cook when he could.” Eugene’s watchful eye (and family recipes) led to Reggi’s BBQ & Wings, where for the past 27 years, Pickett and his wife Samantha, have been serving up their own brand of barbecue goodness.

Located at 292 Parkstone Place in Jackson, this family-owned establishment is an inviting destination for both weary I-40 travelers and locals alike. The Pickett’s award-winning barbecue process begins with the raw product–a healthy St. Louis cut rib, then applied with a delicious secret Reggi’s rub. But that’s only the beginning. “The key is consistency when it comes to cooking good barbecue,” he says. “Consistency with heat; consistency with timing. You can’t say, ‘Okay it’ll cook for five hours, I’ll be back in five hours.’ No. You have to check it every hour.” Pickett applies a slightly different method to his beef brisket, a favorite among his best guests. To settle and maintain the juices, he lets the juices rest before it’s cut and served. The rest period all depends on the size of the meat. While Eugene and Samantha have perfected their cooking method, they’re

now focusing their efforts on their popular sauces and meat rubs. They now have seven sauces and two rubs. “We have bottling rights on the sauce,” he says. “We’re now not only a restaurant; we have a manufacturer’s license, so we can bottle and sell our sauces from here.

LOCAL FAVORITES // Tulum Fresh Mexican Grill Bringing a Taste of California Back Home by Suzanne Fletcher

ake a step inside Daryl Fortner’s Tulum Fresh Mexican Grill and you immediately sense something is different about this local favorite: Colorful décor; Jimmy Buffet jamming on the radio; and the aromas of fresh, authentic Californiastyle Mexican food all make for a relaxing, vacation-style vibe. Born in Dyersburg, Tennessee, owner Daryl Fortner was inspired to

The completely made-from-scratch, never frozen food keeps customers coming back for more. Every dish incorporates fresh and healthy ingredients–no

menu to suit a more local palate, such as using flour tortillas rather than corn tortillas which are used in California.” The most popular dish continues to be the Tulum Fish Tacos, made with fresh beer-battered tilapia, “secret sauce,” cabbage and house-made pico de gallo. The award-winning Cabo Catoche Chimichangas are also a hit, made with fresh grilled meat, Mexican cheese,

chipotle adobo sauce and cilantro. Every entrée is served with rice, beans, chips and salsa–five to be exact, all made fresh each day. Tulum also offers incredible desserts including Deep Fried Ice Cream, Sopapillas, Churros and fresh-made Key Lime Pie and cookies. Fortner’s passion is to create a relaxing and fun environment. “People eat at restaurants for how it makes them feel,” he says. “More than good food, more than good service, and we strive to encompass all of that.” The restaurant features an exciting and welcoming atmosphere with its bright colors, exotic flowers, up-beat Hispanic music, straw huts and inviting patio area. Fortner says, “A lot of people come in here because it makes them feel like they’re in Florida for a while, especially during the winter.” Fortner surveyed a cross-section of his customers and learned that most prefer the fast, casual style of ordering food at the counter rather than being waited on at a table. Tulum also offers take-out, delivery, catering and a drive-thru. He takes pride in the fact that his employees are friendly, helpful and knowledgeable. Thanks to Tulum’s extreme popularity, expansion is definitely in Fortner’s plans for the future. In doing this, Fortner’s mission is to continually perfect the

It took a frequent guest, Dr. Harry Baddour, to convince him otherwise. “He expressed an interest in going into the restaurant business together,” Salter says. “It took me by surprise, but ultimately we ended up working out a

As a result, he’s committed to maintaining a fresh range of options on his menu. Every Wednesday, he features a fresh fish shipped overnight from Hawaii. Selections have included Seabass, Barramundi and Walu, all prepared uniquely to compliment the flavors of the fresh catch. Classic Italian dishes also dot the menu, including Bruschetta made with toasted slices of ciabatta bread topped with tomatoes, red onion, basil, and feta cheese drizzled with a delicious creamy balsamic dressing; and a Baked Ricotta Florentine made with penne pasta, Alfredo sauce, spinach, ricotta and mozzarella.

The restaurant’s bar features a variety of beers–craft, draft and bottled–as well as a variety of wines and a popular house-made Sangria. “We do our best to create a relaxing atmosphere,” Salter says. “Many of our guests like to unwind after work, either in the bar area or outside on the patio.” For Salter, it’s simple: “I’m living a dream come true,” he says. “Jackson has been really great for me, my wife Lindsay and two sons. I love to be able to come to work, spend time with guests and make their dining experience one-of-akind. I’m truly fortunate.”
