Cherry Bread Pudding Pairs with Mirassou Sunset Red Servings: 8 to 10 Prep time: 20 minutes Stand time: 2 to 8 hours Cook time: 30 to 35 minutes 3 1/3 cups half and half 1 cup sugar 1 teaspoon vanilla extract 1 teaspoon almond extract 4 eggs 8 cups (1-inch cubes) Challah or other sweet, eggy bread, lightly toasted 1 can (15 ounces) pitted sweet cherries, well drained 3 to 4 tablespoons coarse sugar Whisk together half and half, sugar, extracts and eggs until well mixed. Place in a 13 x 9-inch baking dish and add bread cubes. Stir lightly and push cubes down to coat completely with mixture; cover and refrigerate for 2 to 8 hours. Preheat oven to 325°F and lightly butter 8 to 10 small (about 1 cup) ramekins. Fold cherries into bread mixture and spoon into ramekins; sprinkle with coarse sugar. Place on a baking sheet and cook for 30 to 35 minutes or until puffed and golden brown.

Sunset Sliders Pairs with Mirassou Sunset Red Servings: 8 Prep time: 20 minutes Cook time: 6 to 8 minutes 1 pound lean ground beef (preferably grass fed) 1/2 cup finely chopped baby portabella mushrooms 1/4 cup minced shallots or red onion 1/4 cup Mirassou Sunset Red 1 tablespoon minced fresh rosemary 2 teaspoons Dijon mustard 1/2 teaspoon sea salt Freshly ground pepper to taste 1/2 cup shredded aged Gouda cheese

8 brioche, ciabatta, or other small slider rolls 8 thin Roma tomato slices 4 strips cooked cherry wood or apple wood smoked bacon, broken in quarters 5 to 6 baby arugula leaves Using your hands, mix beef, mushrooms, shallots, wine, rosemary, Dijon, salt and pepper in a medium bowl. Shape into 8 very flat patties. Grill, broil or pan fry for 3 minutes. Turn and top with cheese; cook for 2 minutes more. Serve on lightly toasted rolls with tomato, bacon and arugula. Recipe Tip: Dress arugula with a bit of olive oil and balsamic for extra flavor.

Sweet Potato Fries with Spiced Aioli Pairs with Mirassou Sunset Red Servings: 8 to 10 Prep time: 20 minutes Cook time: 25 minutes Spice Mix: 2 teaspoons garam masala 1 teaspoon ground coriander 1 teaspoon curry 1/2 teaspoon ground ginger 1/2 teaspoon turmeric 1/2 teaspoon granulated garlic Aioli: 3 to 4 cloves garlic 2 egg yolks 2 tablespoons fresh lemon juice 1 cup extra virgin olive oil 1/2 teaspoon sea salt Freshly ground pepper to taste Fries: 2 pounds sweet potatoes 2 pounds yams Vegetable oil for frying 1 teaspoon sea salt

Stir together all spice mix ingredients in a small bowl; set aside. Drop garlic cloves into a blender or food processor with the motor running. Add egg yolks and lemon juice and process briefly. Add oil in a slow, steady stream until mixture becomes thick and creamy. Stir in 2 teaspoons of spice mix and season with salt and pepper. Cover and refrigerate until ready to serve. To prepare fries, peel potatoes and cut into long 1/4- to 1/2-inchthick strips; place in a large bowl of ice water to keep from browning. Remove a handful at a time and pat very dry between paper towels. Drop into 1 inch of hot oil (oil is hot enough when a few drops of water added start to pop) and cook for 5 to 7 minutes or until lightly browned, stirring occasionally. Drain well on paper towels and repeat with remaining potatoes. (Keep warm in a 300°F oven.) Place in a large bowl and toss with remaining sea salt and spice mixture. Serve immediately with aioli.

Giese Co.: Defining Customer Satisfaction for 90 Years The importance of some events in history stand the test of time and reach far into the future. Such is the case with the Giese Companies’ founding in Dubuque in 1923. It was a big year. On the international scene, the King Tutankhamun burial chamber was opened, the first baseball game was played at the new Yankee Stadium, closer to home the current Dubuque Senior High School building was completed, and the Giese Companies were launched. Like many family businesses, the enterprise that would become the Giese Companies was started by Edwin Giese out of a house, located on an alley off Rhomberg Avenue. Edwin capitalized on his dreams, aspirations, determination, and devotion to his family to form a budding company that today employs 150 people and gives new meaning to the term customer satisfaction. After all these years, the customer is still at the heart of the Giese Companies’ core values. The current owners of the Giese Companies are Tom and Charlie Giese. They are also responsible in part for the more recent growth of the company. In 1997, they bought out a small engineering firm from Clinton, Iowa. This became Giese Manufacturing. Using Edwin’s business model, the company started out slowly and relatively small, ultimately becoming one of the largest in Dubuque. With the purchase, Giese now has three

locations in Dubuque. The manufacturing division at 7025 Chavenelle Road has just undergone a 10,000-square-foot addition, which should allow the newly formed lighting division the space to continue to grow; Giese has occupied the location at 2125 Kerper Boulevard since 1965; 2820 Elm Street is home to Giese Roofing. The companies are involved in everything from residential and commercial heating and cooling to roofing, manufacturing, sheet metal, and electrical work. You’ve probably seen the craftsmanship of their custom railings on Wahlert High School’s Tennis Courts or at the entrance to America’s River Project. While some may know the company for its custom metal work, its electrical division has contributed — in a less visible way — to such projects as Houlihan’s Restaurant, the University of Dubuque residence dorms and the remodeling of several Target stores. Giese has also worked on several foundry projects over the years, some located as far away as Ohio and Pennsylvania. With the expansion of ethanol plants Giese has evolved to meet the challenges of those projects as well. As the company continues to take on challenging projects and expand its offerings, the customer remains at the heart of why Giese Companies are in business. A case in point is the heating and air conditioning division, which remains an important part of the business. When your air conditioner or furnace takes an unexpected turn for the worse, Giese has repair personnel on standby — ready 24 hours a day, seven days a week — for emergency service and repair. The company is committed to getting your equipment back up and running as soon as possible.

Giese Companies also specialize in exterior sheet metal and commercial roofing. They work with Firestone UNACLAD metal, of which the company stocks over 30 different colors. Practically any color is available without any wait time, so while other companies are waiting for their metal to ship, Giese can already be installing a project. Giese has tackled such big Dubuque projects as the Mystique Casino, the Loras College Athletic Wellness Center, and McGraw-Hill. It’s hard to say what the future has in store for the Giese Companies.
