Trimmed Rack of Lamb

Cut from the prime part of the loin, our butchers trim this to avoid any waste and to maximise the visual appeal. The fat plays a crucial role in keeping it moist and succulent when cooked (we recommend browning it quickly in a pan, then roast until still just pink in the middle), and also in carrying the wonderful flavour. You will receive approx. 8 ribs.
