Christmas can often feel quite stressful if you are cooking for a group of family or friends, this year I have created some delicious recipes, using my cookware range and Simply Better ingredients, that are easy to follow.
My recipes include a Buttermilk Brined Turkey Crown, one of my favourite Christmas recipes that I cook for my family every year.
I have included a selection of recipes that are ideal if you are entertaining at home including my Sticky Cocktail Sausages and Sweet Chilli Sausage Rolls along with some very simple canapés that are bound to impress.
I have also included some delicious recipes for making the most of your leftovers during those days in between Christmas and New Year. My Christmas Dinner Pie is surprisingly easy to make and my Sweet & Sour Turkey is a favourite in our house.

RECIPE
Mini Sweet Chilli Sausage Rolls
Ingredients (Makes 24)
- 1 Packet Simply Better Irish Pork Sausage Meat
- 2 Tbsp Simply Better Irish Made Sweet Chilli Sauce
- 2 Tbsp Simply Better Italian Basil Pesto
- 3 Simply Better Free Range Corn Fed Large Eggs
- 1 Packet Simply Better All Butter Puff Pastry, thawed
- Plain Flour, for dusting
- 1 Tbsp Simply Better Irish Jersey Milk
- 2 Tsp Sesame Seeds
- Simply Better Oriel Salt & Freshly Ground Pepper
Method
1. Preheat the oven to 200°C (400°F/ Gas Mark 6). Line 2 baking sheets with parchment paper.
2. To make the filling, put the sausage meat in a food processor with the sweet chilli sauce, pesto, two of the eggs, then season with salt and pepper and blitz to combine. Transfer to a piping bag.
3. Roll out the pastry on a lightly floured work surface to make a 40cm x 30cm rectangle, then cut the pastry in half again lengthways. Pipe half of the sausage meat filling into a long log shape that will run the whole length of the pastry making sure it’s approximately 5mm from the edge. Make an egg wash with the remaining egg and the milk.
4. Brush the sides of the pastry with the egg wash, then fold the pastry over to enclose the filling and press down well with a fork to seal the edges. Repeat with the rest of the pastry and filling.
5. Cut each long sausage roll into 12 bite sized pieces. Glaze the sausage rolls with the rest of the egg wash, then sprinkle each one lightly with sesame seeds and arrange on the lined baking sheets. Bake in the oven for about 15 minutes, until cooked through and lightly golden.
Mini Savoury Tarts
Ingredients (Makes 24)
- 1 Packet Simply Better All Butter Shortcrust Pastry, thawed
- Plain Flour, for dusting
- 3 Tbsp Simply Better Calabrian Chilli Paste
- 1 Jar Simply Better Italian Artichoke Hearts, drained & quartered
Method
- 1 Jar Simply Better Italian Grilled Peppers, drained & thinly sliced
- 2 Simply Better Free Range Corn Fed Large Eggs
- 200ml Simply Better Single Source Irish Jersey Cream
- Freshly Ground Pepper
- Fresh Herb Sprigs, to garnish (optional)
1. Preheat the oven to 200°C (400°F/ Gas Mark 6). Roll out the pastry on a lightly floured work surface to make a large rectangle, then stamp out 24 x 6cm discs (with a cutter or use a glass) and place in greased muffins tins (of course you can do this in batches).
2. Add a small dollop of the Calabrian chilli paste to the bottom of half of the tarts and top them with a piece of artichoke. Fill the others with the peppers. Beat together the egg, cream and pepper and carefully pour into the cases, it is a good idea to pop the mixture into a jug for this. Bake for 12-14 minutes until the filling is just set and the pastry is golden. Serve warm or cold and garnish with fresh herbs, if liked.

- 4 Tbsp Simply Better Irish Made Hoisin Sauce
- 1 Tbsp Sesame Seeds
1. Heat 1 tbsp of oil in a non-stick frying pan over a medium heat. Add the sausages to the pan and cook for 5-6 minutes until light and golden in colour.
2. Mix together the hoisin sauce, soy sauce, sweet chilli sauce, honey and 2 tsp of cold water in a bowl. Drain off any excess fat from the sausages then pour over the glaze and sesame seeds, turning to coat.
3. Cook the sausages for another 3-4 minutes until golden and sticky.
4. To serve, arrange on a warmed plate skewered with cocktail sticks

Pil Pil with Chorizo
Ingredients (Serves 4)
- 2 Packs Simply Better Single Origin Black Tiger Prawns
- 2 Tsp Simply Better Italian Chilli Extra Virgin Olive Oil
Pat the prawns dry with kitchen paper. Place a non-stick frying pan over a medium heat and add the oil. Stir-fry the chorizo for a couple of minutes until sizzling. Then tip in the garlic and sauté until it has started to sizzle, then add the prawns. Sauté for 2 minutes until the prawns turn pink and start to curl. Add the butter and sliced chilli and toss until the butter has melted. Squeeze over some lemon juice and scatter over the parsley to serve.

This is also delicious folded into freshly cooked pasta for a speedy supper over the festive period.

Method
Melt the butter in a non-stick frying pan over a medium heat. Stir in the garlic and cook until sizzling, then toss in the crab claws and allow to warm through for a few minutes. Add a squeeze of lemon and the parsley, then toss to coat and serve while still sizzling.

Bubbling Crab Gratin
Ingredients (Serves 4)
- 2 Tbsp Simply Better Italian Extra Virgin Olive Oil
- 2 Shallots, finely chopped
- ½ Pack Simply Better Baby Fennel, finely chopped
- Simply Better Oriel Sea Salt & Freshly Ground Pepper
1. Preheat the grill to high. Heat half the oil in a non-stick frying pan add the shallots, fennel, garlic and chilli flakes. Sauté for a couple of minutes until translucent, then pour in the wine, stock and grate in the lemon rind and allow to bubble down for a minute. Add the crab and season generously, then transfer to individual ovenproof ramekins.
2. Mix the breadcrumbs, Parmesan and rest of the oil, then season and scatter over the crab mix. Grill for 5 minutes until bubbling. Meanwhile, slowly mix the cream with a squeeze of lemon juice and season. Remove the gratin from the grill, dollop the lemon cream into the middle, sprinkle with the parsley to serve.

1. Preheat the oven to 180°C (350°F/Gas Mark 4). Pour the ham glaze into a shallow bowl. Dip in the bacon and arrange on a baking sheet lined with parchment. Cook for 20 minutes until the bacon is caramelised. Transfer to a wire rack to crisp up.
2. Melt the butter in a sauté pan over a medium to high heat. When it foams, add the sprouts and toss to coat. Add the stock, cover and cook over a high heat for 4-5 minutes, tossing regularly. Season generously. The sprouts should still be fresh and green.
3. Snip the bacon with a scissors. Add most of the candied bacon to the sprouts, tossing to combine. Tip into a warmed dish and sprinkle over the remaining candied bacon with the hazelnuts to serve.
Neven’s Top Tip
The sprouts can be shredded up to 2 days in advance and kept in a Zip-lock bag in the fridge. The bacon can be cooked a few hours in advance so that it keeps its crispness.
Cracked Garlic Roasted Potatoes
Ingredients (Serves 4-6)
- 1 Pack Simply Better
Irish Charlotte Potatoes
- 6 Tbsp Simply Better Italian Roast Garlic Extra Virgin Olive Oil
- 25g Butter
Method
- 1 Pack Fresh Rosemary or Thyme
- Simply Better Oriel Sea Salt and Freshly Ground Pepper
1. Preheat the oven to 200°C (400°F/ Gas Mark 6). Put the potatoes in a large pan with cold salted water. Bring to the boil and cook for 15 minutes until tender. Drain and leave to steam dry for a few minutes.
2. Arrange the potatoes in a large shallow baking tin, leaving enough space between each one so they have room to spread out a little. Using the back of a large spoon or potato masher, push down on each of the potatoes to make them crack open, then season.
3. Heat the oil and butter in a small saucepan, toss in the rosemary or thyme to coat and pour it over the potatoes. Roast for 1 hour, turning once and removing the rosemary or thyme, until the potatoes are crisp and golden. Pile into a warmed dish to serve.
Neven’s Top Tip
To get ahead boil the potatoes the day before and have cracked on a baking sheet ready to go into the oven.

Mushroom Strudel
Ingredients (Serves 4-6)
- 2 Tbsp Simply Better Italian Extra Virgin Olive Oil
- 1 Jar Simply Better Italian Mushroom & Truffle Sauce
- Plain Flour, for dusting
- 1 Simply Better Free Range Corn Fed Egg, beaten with 1 Tbsp Milk
- Simply Better Oriel Sea Salt & Freshly Ground Pepper
1. Heat the oil in a non-stick frying pan and sauté the garlic for 1 minute. Add the mushrooms, then season and sauté for another 3-4 minutes until all the liquid has evaporated. Add the butter beans and toss to combine. Pour in half the jar of the mushroom & truffle sauce and cook, stirring until warmed through. Season to taste and leave to cool and then break in lumps of the goat’s cheese. Cover with clingfilm and chill. This can be made up to 2 days in advance.
2. When ready to cook preheat the oven to 200°C (400°F/Gas Mark 6). Cut the pastry in half then roll out each piece onto a lightly floured board into large rectangles – one 30cm x 18cm and the other 30cm x 20cm. Put the smaller rectangle on a baking sheet lined with parchment and then spoon on the mushroom mixture and brush the edges with egg wash. Carefully fold the other piece in half and make cuts into the pastry to form a pattern, then use to cover the mushroom mixture. Secure the edges with a fork and brush with the egg wash. Bake for 1 hour until golden brown. Transfer to a carving board and cut into slices to serve with the rest of the mushroom & truffle sauce that you’ve warmed through and poured into a small jug.

Ingredients (Serves 6-8)
- Knob of Butter
- 2 Tbsp Plain Flour
- 3 Tbsp Simply Better Nai E Senora Albarino

- 1 Pack Simply Better Irish Made Beef Gravy

1. Melt the butter in a pan and stir in the flour, then cook for another minute, stirring until golden. Pour in the wine, stirring to combine, then gradually add the stock, stirring until smooth after each addition. Bring to the boil then stir in the poultry and beef gravy and let it bubble for about 10 minutes until reduced and thickened, stirring occasionally. Whisk in the Cumberland sauce until combined.
2. Pour the gravy into a jug and leave to cool. This can be covered with cling film and chilled for up to 3 days in the fridge or frozen for up to 1 month. To serve, pour back into a saucepan along with any skimmed juices from the roasted turkey. Bring to a simmer for 3-4 minutes to warm through, then pour into a warmed gravy boat to serve.
Neven’s Top Tip
Of course you could roast off a packet of Simply Better Corn Fed Chicken Wings with some vegetables to make the base of a delicious gravy but I like to save time using the chicken stock which has done all the work for you.
- 1 Packet Simply Better All Butter Irish Puff Pastry
- Plain Flour, for dusting
- 1 Simply Better Corn Fed Free Range Egg, beaten with 1 Tbsp Water
- Simply Better Oriel Sea Salt & Freshly Ground Pepper
1. Preheat the oven to 200°C (400°F/Gas Mark 6). Pulse the brioche in a food processor for chunky crumbs or you can do this by hand.
2. Mix the sausage meat, stuffing and parsley in a bowl and then season. Gently fold in the brioche with a spatula for a lighter buttery crumb. Using your hands, shape into a large roll about 21cm long and wrap in clingfilm making sure not to press it too much so the stuffing stays nice and crumbly. Chill for at least 1 hour or up to 2 days is fine.
3. Cut off one third of the pastry and roll out on a lightly floured board into a rectangle large enough to take the sausage roll. Brush with the egg wash and then roll out the rest of the pastry to cover. Use a fork to secure the edges and prick the top with a toothpick. Brush again with egg wash and bake for 30 minutes, then reduce the temperature to 170°C (325°F/Gas Mark 3) and cook for another 15 minutes or until cooked through and golden brown. Carve into slices on a platter to serve.

Spiced Mango Glazed Ham
Ingredients (Serves 8-10)
- 2kg Simply Better West Cork
Unsmoked Gammon Joint
- 1 Onion, sliced
- 2 Celery Sticks, roughly chopped
- 1 Tbsp Black Peppercorns
- 30 Whole Cloves
- 3 Tbsp Simply Better Irish
Wholegrain Mustard
- 2 Tbsp Balsamic Vinegar
- 1 Jar Simply Better Handmade
Spiced Mango Chutney
Method
1. Rinse the ham with fresh water and put in a pan of boiling water. Add the onion, celery and peppercorns. Bring to a simmer over a low heat and cook for 2 hours. Leave to cool in the liquid.
2. Preheat the oven to 200°C (400°F/Gas Mark 6). Remove the ham from the pan and place in a baking tin. Using a sharp knife, cut off the skin, leaving the fat on top and score diagonally into a diamond pattern. Pour around 500ml of the cooking liquid which will help to keep the joint moist.
3. Press the cloves into the ham and then combine the mustard, balsamic vinegar and chutney in a bowl. Spread over the ham and roast for 30 minutes, basting regularly, until cooked through and nicely glazed.
4. Remove from the oven and leave to rest for at least 15 minutes or up to 1 hour, covered loosely with tin foil before slicing and serving.

1. Preheat the oven to 190°C (375°F/Gas Mark 5). Season the turkey inside and out with salt, then sit on the trivet of the roasting tin. Pare the rind from the lemons, cut them in half and put both in the cavity with the sage, reserving a handful of leaves. Tie (Truss) the legs, if liked.
2. Pour the wine into the base of the tin and rub the turkey all over with the oil, then cover everything tightly with a single layer of tin foil. Calculate the cooking time according to packet instructions and roast until cooked through with no pink meat and the juices run clear. Or if you have a meat thermometer insert it into the thickest part of the leg it should read 75°C.
3. Turn the heat up to 220°C (450°F/Gas Mark 7). Pick the reserved sage leaves and mix in a small bowl with the remaining oil. Remove the turkey from the oven and pour over the sage mixture and roast for a final 10 minutes until crisp and golden brown. Cover with two clean tea towels and leave to rest for at least 20 minutes and up to 1 hour.
4. Char some extra lemons in a hot frying pan with a splash of oil to garnish and transfer to a warm platter.
5. Remove any excess fat from the cooking juices left in the tin with kitchen paper and then place directly on the hob and whisk in the gravy. Heat for 2-3 minutes until bubbling and thickened.
6. To carve, remove the legs and wings, dividing the legs into drumsticks and thighs, then cut off each whole breast. Cut into slices and arrange on a large platter.
1. Strip the leaves from the thyme and finely chop one tablespoon. Grate the rind from one of the lemons and mix into the butter in a small bowl with the chopped herbs and one of the garlic cloves, mashing up with a fork until evenly combined. Cover with clingfilm and put in the fridge until needed, then leave at room temperature to soften up again before using.
2. Put the buttermilk into a turkey roasting bag with the salt, pepper and remaining garlic. Thinly slice the lemons and add with the rest of the packet of thyme, stalks and all. Mix all the ingredients together and add the turkey crown. Remove any excess air to make sure the turkey is fully immersed, then tie the bag securely and place in the salad drawer at the bottom of the fridge for up to 2 days is best but at least 24 hours.
3. When ready to cook preheat the oven to 190ºC (375ºF/Gas Mark 5). Remove the crown from the brine and drain off any excess liquid, then pat the skin dry with kitchen paper. Gently loosen the neck flap away from the breast – a scissors can help with this, pack the flavoured butter right under the skin, this is best done using disposable gloves on your hands, rub into the flesh of the turkey as well, then recover with skin and secure with a few toothpicks or sew with fine twine, then cover the top with the rashers.
4. Place the prepared turkey crown in the oven and calculate your time, 20 minutes per 450g plus 20 minutes. This size will take approximately 1 ½ hours so it cooks much quicker than a regular turkey. Make sure to keep basting and cover with foil if it’s browning too quickly or remove the bacon for the last half an hour if you like crispy skin. When cooked, cover with foil and leave to rest for at least 20 minutes. Drain away the cooking juices and add to your gravy. To serve, carve the turkey crown into slices and arrange on warmed plates with a selection of your favourite accompaniments.

- 1 Carton Simply Better Handmade Belgian Chocolate Sauce
Method
1. Remove the ice cream from the freezer and leave to soften for 10 minutes until it is easy to spread with a spatula. Grease a 23cm springform tin with butter and line with parchment paper.
- 1 Pack Simply Better Belgian Chocolate Cookies, finely chopped
2. Scatter the cookies on the bottom of the tin. Spread a carton of ice cream on top, pressing it into the cookies. Then scatter over half of the hazelnut & almond tiffins, again pressing them into the ice cream. Drizzle with half of the chocolate and caramel sauces. Repeat the layers, finishing up with a layer of the ice cream, then swirl the top with a knife to fluff it up.
3. Freeze the chocolate ice cream cake for at least 12 hours or up to 1 month. When ready to serve, remove the cake from the tin, then put on a cake stand and peel off the paper. Decorate with some more chocolate and toffee sauce and some salted caramel truffles and cut into wedges to serve.
Great for using up any leftover Christmas Panettone!

Panettone & Chocolate Pudding
Ingredients (Serves 4-6)
- 1 Muzzi Panettone Classico (750g)
- 30g Butter, softened, plus extra for greasing
- 1 Pack Simply Better Colombian Dark Chocolate, finely chopped
- 2 Tbsp Caster Sugar
- 1 Tsp Ground Cinnamon
- 1 Carton Simply Better Single Source Irish Jersey Cream
- 250ml Simply Better Irish Jersey Whole Milk
- 3 Simply Better Free Range Irish Corn Fed Eggs
- Icing Sugar, to dust
Method
1. Preheat the oven to 180°C (350°F/Gas Mark 4). Using a serrated knife cut the Panettone into 9 slices, discarding the ends. Spread with the butter and then cut each slice into two triangles.
2. Lay half of the Panettone triangles over the base of a buttered baking dish. Sprinkle over half of the chocolate, then cover with the rest of the triangles, spread-side up, in a slightly overlapping layer. Scatter over the rest of the chocolate.
3. Whisk the sugar and cinnamon into the cream in a bowl and then whisk in the milk and eggs. Pour it over the Panettone and gently push down the top layer into the liquid so it soaks up all the eggy mixture. Leave for about 5 minutes to settle for up to 2 days is fine covered with cling film in the fridge.
4. Put the dish in a small deep roasting tin and pour enough just boiled water into the tin to come halfway up the side of the dish. Bake for 30 minutes until puffed up and golden. Remove from the oven and leave to rest for a few minutes, then serve warm dusted with the icing sugar.

Ingredients (Serves 6-8)
- 450ml Espresso made with Simply Better Coffee (freshly brewed & left to go cold)
- 2 Cartons Simply Better Single Source Irish Jersey Cream
- 2 Tbsp Cocoa Powder
- 1 Bar Simply Better Venezuelan Milk Chocolate, finely chopped
1. Mix the espresso, caster sugar and amaretto, to taste in a shallow dish.
2. Beat together the mascarpone and custard into a separate bowl. Whip the cream and then using a spatula fold half into the mascarpone mix. The remainder will be used to decorate.
3. Soak pieces of the Pandoro into the coffee mixture and use to line a trifle bowl. Spread half the mascarpone mixture on top. Repeat these layers and finish with a layer of the Pandoro. Dollop the rest of the cream on top and then dust with the cocoa powder. Chill for at least 2 hours and up to 2 days is fine. Scatter over the Venezuelan chocolate to serve.

- ½ Fresh Pineapple, peeled, cored and cut into cubes
- 3 Tbsp Chopped Fresh Basil
- 400-600g Cooked
Roast Turkey, cut into bite-sized pieces
- Simply Better Oriel Sea Salt & Freshly Ground Pepper
- Steamed Simply Better Organic Basmati Rice, to serve
1. Heat a large non-stick frying pan over a high heat. Add the oil and swirl it around, then add the onion, peppers and garlic. Cook for 2-3 minutes while continuously stirring. Add in the tomato puree, sugar, vinegar and soy & ginger sauce. Mix well to combine and then add in the tomatoes.
2. Fill the empty tin from the tomatoes with water and add that too, then bring the sauce to the boil and add the cornflour mixture. Stir well over a low heat until the sauce has thickened. Add the pineapple and cook for 3-4 minutes, stirring occasionally.
3. When ready to serve, stir in the chopped basil and season with salt and pepper to taste, then fold in the roast turkey. Adjust if needed with balsamic vinegar or sugar depending on how sweet or sour you like your sauce. Serve straight to the table with a bowl of basmati rice.
Bang Bang Turkey Salad
Ingredients (Serves 4-6)
- 1 Chinese Lettuce, shredded
- 1 Carrot, pared into ribbons
- 1 Courgette, pared into ribbons
- 1 Packet Radishes, trimmed & thinly sliced
- 2 Tbsp Simply Better Italian Extra Virgin Olive Oil
- Juice of 1 Lime
- 400-600g Cooked Roast Turkey, cut into slices

For the Satay Sauce
- 1 Can of Simply Better Thai Coconut Milk
- 120ml Simply Better Irish Made Soy & Ginger Sauce
- 200g Crunchy Peanut Butter
- 2 Tbsp Simply Better Irish Made Sweet Chilli Sauce
- 3 Cubes Simply Better Thai Palm Sugar
- Juice of 1 Lime
- 4 Tbsp Chopped Fresh Coriander
1. To make the satay sauce, heat the coconut milk in a small pan with the soy & ginger sauce, peanut butter, sweet chilli sauce, lime and palm sugar over a low heat until smooth. Stir in the coriander, then pour into a jug and leave to cool. This can be covered with cling film and kept in the fridge for up to 3 days.
2. To assemble the salad, arrange all the vegetables on a large serving platter and toss in the oil and lime juice. Put the slices of turkey on top and drizzle over some of the satay sauce. The remainder of the sauce can be served at the table so everyone can help themselves.

Christmas Dinner Pie
Method
1. Preheat the oven to 180ºC (350ºF/Gas Mark 4). Roll out two-thirds of the packet of pastry on a lightly floured board and use to line a 23cm spring-form tin with a little overhang at the top. Mix the stuffing with the sausage meat and press half into the bottom of the pastry lined tin. Cover with a few small dollops of the cranberry sauce and then add a layer of the turkey. Press over the rest of the stuffing and cover with a layer of the ham.
2. Roll out the rest of the pastry to make a lid. Brush the overhanging edges with egg wash. Top with the lid, pinching the edges to seal and then trim off the excess. Use the trimmings to decorate, sticking them on with egg wash. Give the pie top another layer of egg wash and put the tin on a baking tray. Bake for 1 hour until the pastry is golden brown. Leave to cool in the tin for 15 minutes before carefully removing from the tin and leave to cool completely. This can be chilled and cut into slices to serve or it is also good reheated. The remaining cranberry sauce can be served alongside. Neven’s Top Tip
This is perfect if you are planning a buffet or would like to make something on St. Stephen's Day morning with your leftovers so you can relax for the day. I like to serve it with a nice fresh salad, chutney and some extra cranberry sauce.
