HIGHLAND PARK 12 YEAR OLD

Matured predominantly in European and American sherry seasoned oak casks, our iconic 12 Year Old single malt whisky is spicy and well-rounded, packed with the flavours of sunkissed Seville oranges and rich fruitcake spiced with cinnamon, nutmeg and cloves; you’ll find molten heather honey in this whisky’s waves of heathery peat smoke.

HIGHLAND PARK 21 YEAR OLD

This latest release of our 21 Year Old opens with enticing aromas of expresso coffee, dark chocolate, marmalade on toast and crushed coriander seeds. Notes of tangy ginger and oriental spice driven by first-fill, sherry seasoned European oak hogsheads marry sweet citrus and cedar notes from ex-bourbon barrels, while refill casks diffuse any lingering oak and deliver an intriguing layer of complexity. This, and all bound in an aromatic cloud of our trademark heatherinfused peat smoke.

CASK STRENGTH RELEASE NO.4

Our 4th release has been matured in first-fill sherry seasoned European oak casks, and first-fill sherry seasoned American oak casks, a small quantity of refill casks, ex-bourbon casks and for the first time, ex-port casks too. Opening with enticing aromas of toasted coconut, along with crushed lemons and cedarwood and a delightful hint of Turkish Delight. Intriguing flavours of pink grapefruit and rose water emerge on the palate, balanced by earthier suggestions of toasted oak and heather-rich peat, while the long finish reveals exotic sun-baked spices and a ribbon of liquorice running through the final breath of floral peat smoke.

EXPERIENCE WHISKY

Having fallen in love with Whisky whilst working within Scotland’s bar scene of the early 2000’s, we were exposed to a myriad of different flavours and styles of whisky. This gave us a solid understanding of how different taste profiles worked in the creation of particular drinks.

With over 70% Malt content, and some Sherried sweetness on the palate, HOMEMADE is a nod to the Leith’s blended past, but it also sets out our vision of what blended whisky from Scotland could be.

Our home is a tiny blending studio in Leith, but our mission is global. We want to take better blends to the world, and recognise that quality whisky is now being made everywhere, and we think that’s exciting.

SUPERBLEND is a world blended whisky of multiple origins. Free from the geographical constraints that normally define whisky, it is truly versatile in its ability to work in all manner of drinks.

We’re not content with what whisky is. We want to discover just what whisky can be.

The Balvenie is a unique range of single malts created by David C. Stewart MBE,The Balvenie Malt Master. Our Core Range gains its distinctive character from maturation in two distinct cask types in succession, a proprietary process pioneered by David in 1983 with The Balvenie Classic. Each whisky has its own unique taste, but each is rich, luxuriously smooth and underpinned by the distinctively honeyed character of The Balvenie.

AGED 21YEARS

To create The Balvenie PortWood 21 year old single malt whisky, a marriage of rare Balvenie is transferred to port casks, or pipes, which have held fine port wines.

Here it is sampled regularly by The Balvenie Malt Master David C. Stewart MBE to ensure that just the right amount of character is imparted by the port casks, enhancing and developing the single malt whilst preserving its original characteristics.

Considered by many to be David’s finest creation, this whisky is one of his proudest achievements and has won an array of highly coveted industry awards since its release in 1996.

Nose:

A perfume of fruity and ripe raisin notes, backed by a nutty dryness.

THE BALVENIE DOUBLEWOOD 12 AGED 12 YEARS

DoubleWood 12 was launched in 1993, using a process designed by our Malt Master David Stewart in 1982, now commonly known as ‘wood finishing’.

To make The Balvenie DoubleWood, David C. Stewart MBE takes whisky that has spent at least 12 years in traditional whisky casks, American Oak ex-bourbon barrels and hogsheads, and moves it to Spanish oak ex-Oloroso sherry casks for an additional nine months.

The whisky is then transferred to large oak vessels called “tuns” for 3-4 months to allow the whiskies from individual casks to “marry”.

The Balvenie DoubleWood single malt whisky gains its distinctive character from being matured in two different wood types. Each stage lends different qualities to the resulting single malt whisky.

The traditional casks soften and add delicate character, the sherry wood brings depth and fullness of flavour and the final few months in our tuns allow the whiskies to marry harmoniously.

Sweet fruit and Oloroso sherry notes, layered with honey and vanilla.

THE BALVENIE CARIBBEAN CASK 14 AGED 14 YEARS

The Balvenie Caribbean Cask 14 year old single malt whisky has been matured in traditional oak whisky casks for 14 years, and then ‘finished’ in casks that previously held Caribbean rum.

To create the ideal finish Malt Master David C. Stewart MBE filled American oak casks with his own blend of select West Indian rums.

When he judged the casks to be ready, the rum was replaced with the 14 year old spirit and the wood was put to work adding the final touches.

The result is an exceptional single malt whisky with the traditional smooth, honeyed character of The Balvenie married with notes of toffee and a hint of fruit, with a warm, lingering finish.

Nose

Rich, sweet and creamy toffee on the nose combines with fresh fruit notes.

TasTe

Rounded with vanilla and sweet oak notes, with a fruity character that develops with time.

FINisH Soft and lingering.

THE BALVENIE FRENCH OAK AGED 16 YEARS

The Balvenie French Oak is a vibrant single malt finished in casks which previously held wine from the French Charentes vineyards.

Pineau des Charentes is a fortified wine made from unfermented grape juice, to which a Cognac eau-de-vie is added and then matured. Pineau is also found as a home-made product in the neighbouring Deau-Sevres and Vendee departements.

The Balvenie USA Brand Ambassador Lorne Cousin suggested Malt Master David C. Stewart MBE explore these casks after a trip to the region with his family where he fondly remembers sipping an aperitif.

This is the first of The Balvenie finishes to explore French Oak. Pineau is akin to Cognac in terms of production and flavour, allowing us to capitalise on the rise of this flavour profile and its premium credentials.

Nose

Beautifully balanced light floral notes from lotus and geranium flowers dance between hints of fresh meadow grass and peeled apple skin.

TasTe

An energising zing from tangy lemon rind and grapefruit meet the delicate subtle sweetness of glazed fruits and spice from root ginger.

Refined with remarkable character, it is creamy and silky with fruit, honey and spice notes.

TasTe: FINisH: Long, gentle, nutty.

Smooth and mellow with beautifully combined flavours ~ nutty sweetness, cinnamon spiciness and a delicately proportioned layer of sherry.

DISCARDED BANANA PEEL RUM

Rum is aged in casks to impart flavour into the wood in preparation for the final stages of malt whisky maturation. After initial use, this spirit is often sold on or even disposed of. An undiscovered treasure which has now been repurposed to form the base of Discarded’s fruity-forward spirit.

Our Discarded Banana Peel Rum is where we turn an icon of waste into an icon of taste, perfect for sustainable sipping!

It’s a fruity, sweet rum which features a base of Caribbean rum, before being blended with an extract made from banana peels. Rumour has it that it tastes like liquid banana bread, but we will let you find out for yourselves!

As an extract, banana peel provides toffee notes with a fruity balance that perfectly complements the complexity of the base rum.

Flavours of banoffee pie and sticky toffee pudding, with the deep fruity milk chocolate raisins, accompanied by a crystallised ginger finish.

Delicious served neat over ice, mixed with ginger ale, or used as the base to a Discarded Banana Peel Daiquiri.

BANANA DAIQUIRI

50ml Discarded Banana Peel Rum

25ml Citrus Cordial

12.5ml Sugar Syrup (2:1)

Shake over ice, and double strain into a chilled coupe glass.

BANANA MAI TAI

35ml Discarded Banana Peel Rum

15ml Discarded Sweet Cascara Vermouth

25ml Lime juice (or used citrus cordial)

10ml Orgeat

2 dashes orange bitter

Add all ingredients to shaker, fill with cubed ice and shake for 10-15 seconds. Strain into a chilled glass.

DISCARDED BANANA MOJITO

50ml Discarded Banana Peel Rum

25ml Lime juice

12.5ml Sugar syrup

25ml Ginger ale

2 whole mint sprigs

Add all ingredients to a glass, add crushed ice and mix. Top with ginger ale & fresh ice.
