Sake is an alcoholic beverage that is brewed from rice through fermentation. Sake’s alcohol content is

generally between 13-18 percent. Most premium Sake is consumed slightly chilled or at room temperature. Junmai - Natural premium Sake made only with rice, yeast, koji and water Ginjo - Premium Sake made with rice milled to 60% rice polish or less Daiginjo - Premium Sake made with rice milled to 50% rice polish or less Koji - Rice fungus used to convert the starch from the rice grain into sugar Shochu is a distilled beverage made from a variety of ingredients, from sweet potatoes to brown sugar to rice. Shochu’s alcohol content is generally between the 20-25 percent. This Japanese liquor is consumed cold, on the rocks or in a cocktail.

Umeshu is a sweet Japanese (dessert) liquor often made from unripe Ume (type of plum fruit), sugar or honey and Shochu or Sake. Umeshu is also sometimes referred as plum wine. Drink cold, on the rocks or at room temperature.

Taruzake has been matured slowly with cedar producing subtle woody aromas and flavors of cedar. This unique sake has some sweetness, white pepper notes, a little bitterness and some detectable wood.
