I

know I sound like a broken record (and an old woman), but – seriously – where has the year gone? I can’t believe we’re walking around shopping centres hearing Christmas jingles and asking each other what we’re doing for the holidays already. I must confess to you that I have managed to earn myself a reputation as the office Grinch. I made the mistake of uttering, under my breath, at an editorial meeting that I hated Christmas. I know: shock horror. It has earned me, deservedly so, a Christmas bauble on my desk that says ‘bah humbug’. In my defence though, I didn’t mean I hated the WHOLE of Christmas – just the traipsing around the shops part and stressing about whether I’ve bought people enough/the right thing/correct size etc. Also, because my family is in WA, we have a debate every year about who’s coming here or going there. Usually they win (and we pay a good $2,000 in airfares) because “it’s much less humid in Perth”. But this year we have managed to lure them here and I can’t wait. We’ve hired a beautiful house in Palm Cove and can even take our ‘hairy child’.

I actually do love the family part of Christmas – it’s the one time of year where you all – no matter how widely scattered the family is – make an effort to catch-up. This is the true meaning of Christmas I think – that, and taking time out for yourself and others. It’s almost like pushing the pause button in the daily rat race and sticking your head-up for a refreshing breather. And I reckon, come this time of the year, we all need a bit of that (and chocolate, mince pies and Christmas cake… for breakfast). HOT DOG Vets are reminding pet owners to be cautious as temperatures climb. “Each year we treat at least 50 pets suffering from dehydration and heat stroke. Unless treated very quickly, these animals can die,” said Dr Rod Straw, founder of animal hospital BVSC. “Clean, cool water and shade are essential. Animals need adequate shelter and water and pet owners need to watch for signs of distress.”

12 FACES OF DUO Every year DUO Magazine holds a competition where 12 local girls are chosen to grace the magazine’s cover for a month of the year. In December we introduce you to:

LIZ WRIGHT Liz Wright, 24, works at the Barrier Reef Institute of TAFE and enjoys walking, dining out, the latest movies, and spending time with friends and family. It was her mum and sister who encouraged Liz to enter the 12 Faces of DUO. Liz and husband Andrew are planning an overseas trip next year to mark their three-year anniversary.

TOUCH OF UTOPIA We wanted the hairstyle big, going with the beehive look and suiting Liz’s dress. We prepped by blow-drying the hair smooth using Cloud Nine straightening irons and Osis Flatliner. Backcombing the hair, we were able to start the shape of the style. We created a classic French roll through the back, and smoothed over the top to create the beehive effect. Keeping the fringe nice and smooth complemented the style. We finished the look by applying Osis Session Extreme Hold hairspray to keep the ‘do’ nice and firm.

MAKE-UP

TOUCH OF UTOPIA Youngblood Mineral Primer was used on the base, followed by Mineral Liquid Foundation ‘Sunkissed’. Using the Ultimate Foundation brush, ‘Honey’ Loose Mineral Powder gave a flawless even coverage. Translucent Hi-Definition Mineral Powder controlled shine. We applied Black Eyeliner to the top lid, Crushed Mineral Eyeshadow ‘Golden Beryl’ over the eyeliner and across the bottom lashes to open up the eyes, and ‘Coco’ Pressed Eyeshadow over the lid. Youngblood ‘Black Out’ Mineral Mascara lengthened the lashes. ‘Rouge’ Crushed Mineral Blush was applied lightly to the cheeks. The dramatic lips were created with ‘Truly Red’ lip pencil and ‘Kranberry’ lipstick and ‘Guava’ lip gloss gave the final touch!

HOLLY-JANE WATKINS Former radio personality and Cowboys cheerleader I remember years ago Mum thought it would be a good idea to replace the tinsel on the Christmas tree with threaded popcorn. Not an hour after we’d put the tree up, complete with threaded popcorn, our Labrador Jessie had run into the house, grabbed the popcorn and bolted outside with the entire tree dragging on the ground behind her! I’m heading home to Newcastle this year for the first Christmas with my family since 2007 – can’t wait!

get ready to COL KENNA North Queensland Sports Foundation manager Ever since my daughter was little I’ve hidden those foil-covered chocolate coins around the house on Christmas morning and Kristen wasn’t allowed to open her presents until she found them all. There were usually about 50 and sometimes it took hours… it may sound cruel but it’s toughened her up over the years! It got much easier as she got taller and could stand on a chair to see on top of the ceiling fans. Kristen’s now in her twenties and we still play that game to this day, but she’s learned to just turn the fans on full-bore and the coins all fly off.

SHARYN GHIDELLA Seven News presenter We always try to head home to North Queensland to see the family at Christmas, dividing our time between our respective relatives in Cairns and Babinda. There’s always a long lunch and an equally long dinner. I’m sure we’ll complain again this year that we ate too much and the children received too many presents! TERRI BRABON Shakespeare Under the Stars director Christmas is always a very busy time of year as we’re rehearsing for the Australian Shakespeare Company’s summer season in Melbourne. It’s hard being so far away from my own family back in Ayr and Townsville, but my partner Brendan and I spend the morning with our unconventional little family – his two daughters Caitlin and Immogen, his ex-wife Perri and her partner, Paul. And in the afternoon we head over to our boss’ house for way too much food than I can handle.

Most treasured item: This will sound so trite, but the older I get the less attachment I have to ‘stuff’. Maybe I’ve packed it all into moving boxes too many times! I’m planning my first tattoo and I think it will be my most treasured possession. You in three words: Ever-hopeful, absentminded, somewhat-hedonistic (was it cheating to use hyphens? Maybe I should add ‘verbose’!). Why you get out of bed: I LOATHE getting out of bed, but every day I need to do two things – use colour and make something. That’s my oxygen and joy in life. Most memorable moment: The night that my husband Peter and I committed to being together for the rest of our lives. That moment has influenced every aspect of my life since.

What you love about where you live: We can walk to The Strand, the city, my shop and Peter’s office. Of course, we don’t walk all that often, but we could! Favourite fictional character and why: A.A. Milne’s Winnie-the-Pooh: He judges no one, accepts with grace anything that he cannot change and sees good everywhere. Seems to me that’s a fine recipe for contentment! Why you came to Townsville: A big change in our lives made us restless. Townsville isn’t too big, isn’t too small and Peter loves the climate. I love air-conditioning. You drive: Whichever car is still in the driveway after everyone else has left. Best dish: I have favourite flavours and smells

rather than specific dishes: raspberries, cucumber, limes, pink grapefruit and mint. You wish: That the world was a gentler place than it often is, and that we could all be kinder to each other. What you’d change about yourself: I would love to be a super-organised, efficient person whose house is always tidy. But I’ve now reached the age where I know that just isn’t going to happen. How many children do you see in your visits to Castletown? On average, around 4,000 children a year. Have any adults ever sat on your knee? Over the years I’ve had ‘kids’ of all ages: grandmothers who were 82 and babies as young as two days. Teenagers have photos with Santa for their mums and soldiers send pictures to mates overseas. Santa really is timeless – there are no age restrictions when it comes to having a photo with me! What are the most popular present requests? You would not believe the number of motorbikes asked for, even from kids as young as six and seven. Children go through phases and usually want whatever they’ve seen most on TV. Then 28

there are some who have no idea: I think that’s because kids nowadays get stuff all year round. In years passed, you had to wait for birthdays or Christmas to get presents. Have any wishes surprised you? It would be hard to pick just one! I’ve had a couple of kids who didn’t want anything, or said give something to the poor children. I remember one child asking for air tickets so their family could be here with them for Christmas. Then you get sad stories like a young child wanting a new dad or baby brother. Any particularly memorable moments? One year I was making a house call and the young boy who I was visiting opened the door. He got such a fright as he didn’t expect to see Santa, and he

took off screaming. He eventually came around and we had a jolly time. Would you change anything about Christmas? I’ve often thought of changing my wardrobe and testing out a new colour for my suit: experimenting with a darker shade, and maybe even a long coat, but still keeping the white fur. As for everything else, I think Christmas is just fine. How do you stay so jolly? It takes a lot of work! I need quiet time away from the rush and stresses and my peaceful place is around the pool at my home-away-from-home here in Townsville. Relaxing in the water with a lemonade or two does the trick. SUNSHINE

T

here is quite a misconception when it comes to retirement. Observing local music group Dawn’s Sunshine Singers during their regular Wednesday rehearsal at Dawn and Des Wakelin’s Mundingburra bungalow, the myth that winding-up work marks the beginning of a long, tiring path to the finish line is completely debunked. In fact, Dawn’s Sunshine Singers are so lively and full of energy that it’s hard to believe that all 14 members are aged between 66 and 84 years old. The group – not a choir as such, but more an effervescent collection of like-minded people who love music – cram into the room lined with 13 chairs, as Dawn perches at her piano. The room’s walls are lined with teaching awards Dawn has won during her career, and seeing her in her role as musical director for her Sunshine Singers, it is obvious she takes great pride in her spry group of performers. “We do this because we love it,” tells Dawn, who inherited the Sunshine Singers from local music guru Sandy Voss more than two years ago. “Everybody loves live entertainment and we really do love to ham it up and give a good show.”

Dawn handwrites the programs, which consist of group musical performances interspersed with skits for one to three people, and assists the group with their choreography; while fellow members Louise Neal and Leonie Batt drive the costume creations. With golden oldies and all-time classics listed through their programs, it’s no wonder why the Sunshine Singers’ performances have been so well received by their audiences who are mostly residents at local nursing and retirement homes. “We also book performances outside of the senior homes,” adds Louise. “This month we will be performing at the Dutch Club, and while we do take other bookings as they arise, we don’t do this to make money – we do this because we enjoy it.” Muriel Jones, known as ‘Mooey’, is the group’s eldest member at 84-year-old and is actually older than many of her audiences. Mooey has been involved in productions and performances her whole life, and still puts on a good show. “I can dance better than I can walk!” she quips, before delivering a solo with gusto and a little cheek. Meanwhile, at 66-years-old, Gail Jenkins and Bob Coward are the “babies” of the group. “As you get older you

realise that life is in the living, and how you live each day is up to you,” shares Bob. “I get asked whether I miss the rat race, but I look outside and the sun is shining and I get to do what I want with my time now.” This bunch of busy retirees is proof that retirement is by no means slow. “My daughter needs to make an appointment to see me,” laughs sunshine singer Lucy Ward. “It’s harder to find the time now to do my housework than it was before I retired!” adds fellow member Elizabeth Arnold. “The wonderful thing about this group,” continues Elizabeth, “is that we don’t have to be amazing singers, we just need to want to have fun.”

How much of a coup was it securing Natalie Imbruglia to represent your new campaign? Natalie is one of the most gorgeous women on the planet. She has an ethereal beauty that represents us perfectly, and this emanates from deep within. When we were developing this campaign and considering the brand ambassador, we wanted to connect with our ‘Australianess’, but also have a real international flavour. We are incredibly proud that Natalie has come onboard and created this superb campaign.

What is the most defining quality of the Kailis brand? There is so much that defines us… if I was forced to make a singular statement, I would say it is the enduring beauty and the relevance of our jewellery.

You shot the new Angelic Collection at the Karma Kandara Resort in Bali – can you tell us what went on behind the scenes? I am very committed to working with people I like. As a result, there is always a lot of laughter surrounding us. On this shoot there were so many funny things that happened, and Natalie was hysterical. During one of the shots we had Natalie in an infinity pool on the edge of the cliff right at dusk. It was really important that there was no movement in the water to get a mirror reflection on the surface. The shot took a long time to set-up and, just as we were ready to shoot, these mad monkeys had a fight right above our heads, and then wanted to steal the jewellery. Needless to say there was a lot of movement VERY quickly and Natalie was stuck in the middle of the pool.

What’s the most memorable piece of jewellery you’ve crafted? Every piece of jewellery we produce is special, particularly our couture pieces, which always incorporate important stones and pearls. However, the stand out for me is our stunning superstrand ‘Zsa Zsa’. We name all of our special strands and they become entities in their own right, but Zsa Zsa is definitely the showstopper. Zsa Zsa features 56 perfectly round, mirror-finished pearls graduating from a 21mm centre to 17mm at both ends. This strand is considered the largest and most perfect in the world and is AUD$1 million. To put it into context, any pearl above 16mm is considered “important”. At 21mm you are at the extremely rare end. It has taken 25 harvests to create this strand and it’s irreplaceable. When you think that pearls are completely natural and every one of them individual, what has been created here is breathtaking.

Who are some of Kailis’ more wellknown admirers? We have been incredibly well supported nationally and internationally with celebrities wearing and loving our jewellery. A few of the names include Helena Bonham Carter, Elle McPherson, Jessica Chastain, Amanda Seyfried, and a whole lot more.

t’s nothing new for Australian models to dominate runways around the world, but among the new crop of Aussie beauties is Townsville-born and Perth-bred Caitlin Lomax. Pinned by fashion media as one to watch, this angelic beauty has that certain something that just can’t be manufactured – she has ‘it’. Most recently, Caitlin booked 20 shows across four cities in the Spring/Summer 2012 season fashion week circuit, which wrapped in October, including walks for Prada, Miu Miu, Louis Vuitton, Christopher Kane, Alberta Ferretti, Antonio Marras, Versus and Topshop, among others. She also nailed a starring role in the Prada Resort 2012 lookbook. For this girl from Bunbury, WA, modelling might not have been on her mind growing up, but it was definitely in her genes. Born in Townsville, Caitlin moved to Perth at just three years old, but like all successes, North Queensland takes no hesitation in claiming her as its own. It was Caitlin’s grandmother who introduced her to the world of modelling, enrolling Caitlin in deportment school, which lead to her being scouted by several agencies and signing with Red11 in Auckland as her mother agency. “My granny was never a model but she did get ‘discovered’, however, I’ve never known why she didn’t pursue modelling. I think she regrets that though, so I love how excited she gets when I tell her what I’ve been doing,” shares Caitlin. After a very busy year filled with runway walks and editorial shoots for magazines, Caitlin admits getting work hasn’t always been so easy. “I won’t lie and say there haven’t been a few tears to get where I am, but work is regular now and I am very happy with my career.” Importantly, Caitlin knows the opportunity she holds in her hand is more than most aspiring models will ever know. “I can see that the girls who do well in this industry are those who have amazing personalities, have stayed true to themselves and are supportive of each other,” tells Caitlin. “That’s the road I plan to take.” Based “out of a suitcase”, Caitlin has bounced between Singapore, Perth, Sydney, Auckland, Paris, New York, Milan, London, Istanbul and Korea, and that’s just in the past six months. “I need to get onto a good frequent flyer program!” she jokes. “Growing up in Bunbury, the world seemed like such a big place with most of it out of my reach,” shares Caitlin. “But now, I feel like I can take on anything. The world feels smaller, with so many more doors opened to me.” Unquestionably, it is this 20-year-old’s versatile look, strong work ethic and humility that keep her mind focused and her career burgeoning. So, what’s next for this girl with the world at her feet? “I’d love a Vogue Cover,” exclaims Caitlin. With the rapid momentum her career has gathered in the past year, that dream is certainly within reach for the ambitious blonde.

WATERTIGHT HEARING AID SOLUTIONS

UNLESS YOU HAVE A NEW WATERPROOF HEARING AID, HERE ARE SOME TIPS FOR PROTECTING YOUR DEVICES FROM SUMMER’S DAMAGING MOISTURE. With the wet season approaching and the humidity and heat creeping-up a notch, it’s a good idea to touch upon waterproof and water resistant hearing aids and preventative measures. Up until about a month ago, there were no actual waterproof hearing aids on the market and most hearing aids needed to have additional preventative measures taken to limit problems caused from the humidity in the wet season. However, a month is a long time in hearing aid technology and now there is a device available which is completely waterproof. Furthermore, there are whisperings in the industry of several other brands also releasing their own waterproof models. I think it will only be a matter of time before it will be standard for all hearing aids to be waterproof, which is great news for North Queensland. However, unless you are one of the lucky few to already secure a newly-released waterproof hearing aid, you will need to be aware of the limitations of your device. If your hearing aid is less than three years old, there is a good chance your device is moisture resistant. What this means is that both the circuitry and the outside casing are coated with

substances to repel moisture. Furthermore, the electronics of the aids themselves are sealed in casing, which makes it very hard for the moisture to enter. Most manufacturers claim that you should be able to drop a hearing aid in fresh water and it will survive. However, should the water be salty or have detergent or other corrosive properties; then the hearing aids could be damaged. This of course causes problems up here in the tropics due to perspiration during the summer months and consequent corrosion of the hearing aid circuitry. No hearing aids are immune to this as they are all designed and made in the northern hemisphere where they do not experience conditions like these. The only way to avoid corrosion and extend the life of all hearing aids is to take preventative measures to stop the moisture from spending long periods of time within the devices. This includes daily use of moisture absorbing kits. These can either be a silicon tablet, which absorbs the moisture through a silicon substance, or they can be electric devices which blow warm air. Another tool we use up here for aids that sit behind the ear is a cover called Ear Gear. This is a moisture and

grime repellent cloth matched to your hair colour, which discreetly sits over the top of the hearing aid preventing perspiration, dust and grime from entering the aid. MEANINGFUL CHRISTMAS GIFTS

WE ARE NEARLY TO THE END OF 2011. I have been visiting high schools and discussing the next year with Year 12 students. I have been telling them that life will only get better. Don’t listen to the people who tell you that Year 12 is the best year of your life. It’s not even the best year of your schooling! My daughter, Abbie, knows what I am talking about when I say that life gets better. She has just finished Year 12 at St Margaret Mary’s. I was telling the girls there how life gets better and to prove it, I asked Abbie if we could have a special father-daughter hug in front of the whole senior class. It simply does not get better than having your daughter’s whole class laugh and laugh and laugh at your daughter’s expense (Abbie, what colour is red?). I don’t know about sons, but I will let you know when Andrew is in Year 12 (that is not a threat, Andrew, that is a promise – whether I am the local member or not).

I have also counselled them on their senior formal. There is a lot of ‘pressure’ on kids in Year 12 to look the part. I have been telling them that the pressure they feel is not warranted. They will never look at their high school formal photos ever again in their lives. Take my senior formal for example. I was just about the coolest guy there in 1977. I had a light brown suit. My trousers had a 12-inch flare and 4-inch cuff. The waist of my pants came just under the solar plexus. I had a chocolate-coloured shirt with a high collar supported with a truly gargantuan tie. It had a print of a stretch Great Gatsby-style limousine and a lady standing nearby with one shoulder strap falling off to her elbow. She looked like Elle-May from the Beverley Hillbillies so, for a boy in boarding school, that tie was special, very special. My shoes, which set off my ensemble perfectly, had a 2-inch sole and a 3.5-inch heel and were dark brown with yellow inserts on either side of the laces. Talk about Stayin’ Alive! I was so cool that I was really cold. I was smoother than a gravy sandwich. Ask me, though, if I have ever seen a photo of that night. Never. My partner was a mate’s sister and there was no pash at the end and she didn’t speak to me after that evening. Heart broken, I retreated to the beer and rugby, my two great loves. Life gets better, but my secret loves are no secret, anymore… 54

IT’S DECEMBER, AND THAT MEANS CHRISTMAS IS JUST AROUND THE CORNER. Kids have already started counting the weeks to go, reminiscing about the traditions of the day: the plum pudding, gingerbread house and rum balls and, best of all, the presents. Christmas is a time of family get-togethers and the giving and sharing of gifts. Interestingly enough, my kids rate Christmas as the ‘BEST DAY OF THE YEAR’, even over their birthdays. The reason, they say, is ‘because everyone gets presents’. This tradition began with the three wise men offering precious gifts to the baby Jesus and now it happens all over the world. Gifts come in all shapes and sizes, ribbons and wrap. A lot of time and money is spent making Christmas everything it can be for the people you love. In our culture, love is often expressed with spending money, and spending money is often a reflection of love: think of the engagement ring, the graduation present, and parents who undergo many sacrifices to provide their children with better toys, clothes, education or holidays. What then makes for the best Christmas gift? Expense has nothing to do with the value of the gift: it’s how much thought you’ve put into choosing and preparing the Christmas present that makes it that much more special. This year, most of us will have less money to buy what we would like to give. However, if we rethink how and why we give gifts and do it differently, you may even be giving more this year. It is so easy to spend money on your kids’ presents. But do you really need to spend to be meaningful? Resist the urge to over indulge: the more they get, the less they appreciate and the less meaningful it is. Instead, why don’t you teach them how to give gifts to others? Gifts can have more meaning when they were given with love, but also made with love. Get them to help you bake some biscuits, draw a picture, make a handmade Christmas card, prepare the rum balls, and wrap or box a gift. Witness the joy on theirs and the lucky friends’ faces when they open the box. They will love this joy of giving and knowing that they have helped to make it possible. Stuck for ideas? Think about the people you are closest to and their hobbies, interests, stage of life, special events coming, and holidays they have planned – this can help you decide what to give them this Christmas. For example, those planning a trip may like a box with travel brochures and maps; Grandma may like her house cleaned; Dad could want a voucher for car washing; a friend’s child could need babysitting; or a family member might even appreciate an outing to their favourite place. That’s the real meaning of Christmas.

TURTLE POWER MAGNETIC ISLANDERS ARE HELPING STRANDED TURTLES BACK TO HEALTH AS REFUGES STRUGGLE TO KEEP-UP WITH THE NUMBERS IN NEED. After 12 turtles were found sick and stranded on Magnetic Island in June/July this year, the Magnetic Island Network for Turtles (MINT) was set up to help rehabilitate the marine creatures back into health and, eventually, their natural habitat. Magnetic Island vet, Dr Alison Bee, has cared for turtles before, but never in the same capacity. “I’ve worked here for the past 11 years on and off, and I’ve had the occasional turtle in, but this year it’s just been one after the next,” Dr Bee says. “And they’ve been bigger than we’ve previously seen.” Dr Bee says MINT was started out of necessity because all the other facilities were full. “The only other option for these stranded animals, if they weren’t taken into care, was euthanasia. But…that isn’t what I’m about: I’m not going to euthanise an animal just because we don’t have a pool for it.” Dr Bee says the turtles’ illnesses are similar in nature and it’s likely that the heavy storm seasons of the past few years are the cause. “Most of the sick turtles are starving and the problem is, with these sort of reptiles, they’re not starving until they haven’t eaten for a year. It takes that long for the starvation to become really apparent. “The thinking is it’s not only Cyclone Yasi, but also the last two cyclones we’ve had; even back to Larry. Plus all that extra rain and run-off from the land that’s affected general inland sea areas and seagrass.” So far MINT has released one turtle named Greenie, who was found in Ross River Creek and initially thought to be a floater (a turtle with internal problems that causes it to float). “She was actually just quite underweight,” Dr Bee tells. “She took the food quite readily and started to eat and swim really well, which are parameters to see if things are going in the right direction. We kept her until her weight was going up and then she was tagged and released.” Others have been passed on to Reef HQ or JCU for further treatment. Dr Bee says it’s important to realise that general carelessness from a small few can have profound ramifications: “It’s just getting the message out there that we need people to do simple things like take their fishing gear home and don’t leave plastic items lying around near drains or the sea.”

CHRISTMAS ROAST BANGALOW SWEET PORK LOIN WITH APPLE AND PRUNE STUFFING AND CRACKLING SERVES 10-12 Cooking time 1 hour 45 minutes (Stuff the pork the day before and let the skin dry out overnight in the refrigerator) 1 × 5kg Bangalow rolled sweet pork loin (ask the butcher to score the skin for the crackling) 250g pitted prunes 1-2 pink lady apples 1 small bunch fresh thyme 375ml Pedro Ximenez sherry Sea salt (for seasoning and crackling) Freshly ground pepper Olive oil

Stuffing. Place the prunes and Pedro Ximenez sherry in a saucepan and bring to the boil, turn the heat off and allow to soak and cool for 30 minutes. Drain the prunes (reserve liquid for jus) and roughly chop and mix along with the apple (also peeled and chopped into 1cm cubes), thyme leaves and salt and pepper. Lay the meat skin-side-down on the bench and form a log of the cool stuffing along the centre of the pork. Then tightly roll to enclose the stuffing and tie with butchers’ twine at 3-4cm intervals. Preheat the oven to 220C. Rub pork with olive oil and cover generously with sea salt flakes massaging into the skin. Place your loin in a baking dish in the middle of the oven and bake for 30 minutes at 220C, and then turn the oven down to 180C for 60 minutes. Increase the heat to 230C for the final 15 minutes or so until the crackling is crisp and the meat is cooked (juices run clear when a skewer is inserted). To finish crackling the skin, you may need to use the grill element – roll each side in sections for a minute or so under the heat to get even results. Rest for 15-20 minutes before carving. Use the pan juices deglazed with the reserved Pedro Ximenez to make a jus. Serve with roast goose fat potatoes, poached pears, glazed carrots and baby asparagus. 57

CHICKEN BREAST WITH COCONUT MILK With your girlfriend

SERVES 6 Preparation time 20 minutes Resting time 3 hours Cooking time 5 minutes over high heat 6 free-range chicken breast fillets 2 limes salt and pepper

Coconut milk marinade 50g fresh ginger 2 French shallots 2 garlic cloves 2 tbsp sunflower oil 1 tbsp sugar 350ml coconut milk 1 bunch chives

1. Slice the chicken breasts into thin strips. Juice and zest the limes, sprinkle the juice and zest over the chicken. 2. For the marinade, peel the ginger, French shallots and garlic. Chop them all up then gently sauté in the oil for 5 minutes, adding the sugar. Off the heat, pour in the coconut milk. 3. Snip the chives into 1cm (½ inch) lengths and add them to the mixture. Pour this mixture over the chicken and chill for 3 hours. 4. Cook the chicken over high heat until well browned. 5. Serve coated with the rest of the marinade. Drink with gorgeous rosé with the colour of summer sunset (slightly chilled)

Stuffing 1 French shallot 1 bunch basil 50g sundried tomatoes in oil 3 artichokes in oil 1 spring onion (scallion) 1 slice of stale sandwich bread

1. Bone the saddles of rabbit, taking care not to damage the meat. Lay the saddles out flat, season. 2. For the stuffing, peel the French shallot, slice it thickly, pick the leaves from the basil. Process all of the stuffing ingredients together to make a paste. 3. Place the stuffing between the loin and the flap of the saddle, close over the flap; roll in the caul fat. 4. Cook over gentle heat for 20 minutes turning the rabbit regularly.

1. Remove the bones from the salmon and cut it into bite-sized pieces. Combine the sesame oil with the pastis. Brush the salmon pieces with this mixture. 2. Peel the ginger and cut into thin slices. Pick the leaves from the basil. Thread onto small skewers 1 slice of ginger, 1 piece of salmon, 1 basil leaf, then ginger, salmon, basil, salmon, ginger. Roll the skewers in the sesame seeds. 3. Sear 1 minute on each side. Drink with a smooth and fruity white with stony citrus nose

Noosa National Park is a must-do on any visitor’s agenda. The park is 477 hectares of native forest, heathland and high cliffs opening out onto spectacular panoramic seascapes. The ruggedly beautiful headland is perhaps its most distinctive feature. The park offers picturesque walking trails, unspoilt flora and fauna and a string of small bays and coves on the northern coast. There is 10.5km of bush and coastal walking tracks to suit every fitness level. Expect to see koalas lazing in the forks of towering eucalyptus gums, possums, hundreds of bird species, wild flowers and large goannas scuttling up trees.

Just five minutes drive from Main Beach is the cracking Sunshine Beach – a serious wave location with an excellent surf club providing weekend jazz, inexpensive gourmet meals and a wonderful beach outlook. There are also several cafés and restaurants clustered around the Duke Street shopping centre. Take your pick from Thai, Turkish or modern Australian food. A further 10 minutes down the coast is the wide clean sweep of Peregian Beach. Calm water swimming, fishing and boating can be enjoyed on the Noosa River.
