I don’t play any sports because I’m very uncoordinated! What have you got going on at the moment? My partner and I are in the process of organising a year overseas next year. We’ve booked flights to spend New Year’s Eve in Paris, then we’ll go to the UK to work for about six or seven months. After that we’d like to go to Brazil for the Olympics. What would surprise people to know about you? I’ve travelled to 16 different countries, including twice to Europe, Japan and Fiji. Anything else you’d like to add? WELCOME

HOME IS WHERE THE HEART IS It was a surprise to me when people started sending me ‘congratulations’ messages this month because I didn’t know what they were for. We hadn’t won Gold Lotto, had a child or won (another) award. It turned out that my Linkedin page showed that I‘ve been in business in Townsville for 31 years! Even more amazing is that 24 of those have been (enjoyed) working with my wife, Stacey. That’s a huge number of ads, logos, scripts, commercials, thrills and dramas. And it all started with one full page newspaper advertisement for 4TO. I was 27 and had just arrived back in Townsville. (I was actually born here so I’m as local as you can get). I’d been in agencies in Brisbane then worked with a band that came through here on a tour. Looking around, I realised Townsville in the 80’s offered me more opportunities than anywhere else especially as local business owners were becoming more professional and competitive. I turned out to be the right person in the right place at the right time (a line I’ve also used in ads over the years). And I owe it all to being in Townsville. I truly appreciate that Townsville is still the place with the most to offer if you want to be in business, raise a family or just enjoy a uniquely safe and healthy lifestyle. It’s one of the reasons why we started DUO Magazine. We want to always be the positive voice for our city and our community. I hope, when you read DUO, that there are stories about people that surprise you, inform you and most of all, move you to appreciate just how lucky we are to live in such a fantastic, diverse, beautiful and inspiring place. Which leads me into introducing our exciting new project. It’s something we’ve been working towards for some time. Our small team of four local ladies and I wanted to do something to raise awareness and create a campaign to highlight how great Townsville is. We had a BIG IDEA which we hope you will pick up and take further. We’ve called it TOWNSVILLE PROUD and you can read all about it on page 17. We hope you join the campaign and we can get Townsville moving! This month is also full of locals including 25 good sports in our special 16 page feature. You’ll love their stories. This allows patients to make the most of allied health services including a podiatrist, dietitian and mental health consultant.

“We’ve been out to the Men’s Shed with our dietitian and exercise physiologist to perform checks and chat about healthy living.” Another community cause the practices support is Will Keep Moving, a charity that works towards improving the lives of those with Duchenne muscular dystrophy (DMD). As for the future of the practices, there are some exciting developments in the pipeline. “We’re looking into injectable cosmetics and introducing a wellness clinic with a holistic approach,” Charmaine says. “These are goals that would be hard to achieve on our own but we have fantastic relationships with so many providers in the healthcare industry. Tired of struggling to hear the TV? Making some simple changes could solve the problem.

When designing your new home, or renovating your old one, give some thought to the acoustics of your entertainment room where you’ll be watching television. The acoustics of a room are a very important factor of being able to hear the TV clearly whether you have normal hearing, a hearing loss, or wear hearing devices. When you have high ceilings, tiles, concrete or polished wooden floors this creates a very echoic environment. The more echo there is in a room, the more degraded an acoustic signal becomes between the sound source (the television) and the ear. The extent that the sound signal can be degraded by an echoic room is such that you can have completely normal hearing and still have trouble understanding the speech on a TV. Further exasperating this is the default frequency attenuation of new LCD or plasma flat-screen televisions and the additional surround sound systems through which we run the TV audio. Whether you have a surround sound system or not, the default sound settings on new televisions are designed to provide a surround sound experience similar to a movie cinema. To do this the frequency attenuation,

or graphic equaliser as it’s commonly known, of the sound is set up to emphasise the bass frequencies. These are the pitches where all the music and the exciting background noises such as explosions, car engines, trains et cetera are. Most speech sounds sit in the mid and high frequency areas, which are not overly attenuated by the surround sound systems. There are several problems with this in relation to both the acoustics of the room and the general sound quality of the speech sounds. The frequencies that are most susceptible to echoing are the mid and high frequencies. High-pitched sounds rebound off objects, whereas low frequency sounds pass through objects. This means that, when watching the television, the music and the background noises sound great because the low-frequency signal reaching the ear is quite pure, but the mid and high-pitched speech sounds are degraded because they have bounced off the floor, ceiling, walls and any other hard objects between the TV and the ear. On top of this, the general mix of the surround sound is making the bass sounds louder than the speech. All this added together makes it quite difficult to hear speech even with normal hearing. Add a hearing loss on top

of this and it may be almost impossible to watch a movie. There are several things that can be done to help with television clarity. Firstly, changing the acoustics of the room will make a big difference. Having carpeted floors, soft furnishings or even hanging a rug on the wall will soak up sound and stop the high frequencies from rebounding and degrading the signal. If you do have hard floors, lay a rug between the television set and the viewing chair to stop the echo off the floor. Secondly, change the sound settings on the TV or surround sound system. By reducing the bass and increasing the treble you’ll decrease the background noise and music and increase the volume of speech.

SWEAT FREE IN THE NORTH QUEENSLAND HEAT

Do you suffer from excessive sweating? You may be surprised to find there are now injectable treatments available. We all sweat for the purposes of thermoregulation (temperature control). Too much of a good thing can be problematic. Excessive sweating, in amounts greater than physiologically needed for thermoregulation is called hyperhidrosis. Hyperhidrosis is a common condition affecting between 1 and 3% of the population. It is typically a primary condition (idiopathic) without underlying cause although these should be excluded. Idiopathic hyperhidrosis is localised to certain areas of ones body and can affect ones axillae (underarms), palms, soles or a combination of these areas. Commonly present from adolescence or childhood, and persisting throughout life hyperhidrosis becomes an issue with serious social, emotional and professional consequences. Depression and mood affects are known to occur. Sufferers can develop fears or anxiety to simple social customs such as shaking hands.

Excess sweating, an issue with serious social, emotional and professional consequences can now be treated with injectable therapy.

Focal visible excessive sweating of a minimum of six months duration without apparent cause is the main identifying complaint of primary hyperhidrosis. In addition the sweating usually affects both sides evenly, worsens during stress, ceases during sleep, and impairs daily activities. Hyperhidrosis can be misdiagnosed as a

psychological disorder due to it worsening with emotional stimuli. Although no specific gene has been identified, a family history of hyperhidrosis is often present. Treatments have included topical (aluminium chloride sprays), pharmacological (tablets), electrical water currents (iontophoresis) and surgery. Now injectable treatments including antiwrinkle injections to the affected areas can provide significant reduction in and even freedom from sweating for 5-7 months. Whilst topical treatments are preferred initial therapy they are typically only successful in people with very mild symptoms. Higher concentration prescription antiperspirants are available but their use is often limited by skin irritation. Systemic pharmacological agents can also be successful but potential side effects limit their use. Surgery was previously a more commonly used option, but can result in high rates of compensatory excessive sweating on other areas of the body including the torso. For those who fail to control their symptoms, or who can’t tolerate the side effects of topical or systemic agents, injectable anti wrinkle therapies are now available and have been shown to have greater than 90% response

rates sustained for 16 weeks or longer in people with axillary hyperhidrosis (1). High response rates are also shown in palmar hyperhidrosis. These injectable treatments prevent release of the neurotransmitter (chemical messenger) that causes sweating. Benefits of the injection are usually seen within 3-4 days of treatment. The treatments can be provided with minimal discomfort including local anaesthetic where appropriate. These injectable treatments provide a safe, available and most importantly effective therapeutic option for people with hyperhidrosis, restoring their confidence in previously embarrassing social and professional interactions. Medicare rebates are accessible for injection therapy of underarm hyperhidrosis when performed by a certified specialist.

MEET MITCHELL SERI Mitchell Seri is an Ingham local who graduated in 2008 from James Cook University with a Bachelor of Physiotherapy. How did you get started in your sport? Mum and Dad were looking for something we could all do as a family. We found a small, friendly club at the Upper Ross PCYC and wanted to go and watch, but they told us to start right away and “Just give it a try!”. What’s been your greatest success so far? We’ve won silver medals in the Cairns Kendo Cup and North Queensland Games and we’ve passed grading examinations but probably the greatest achievement was when we travelled to Kyoto and trained in a Japanese club. It was tough and a bit like being in a samurai movie. What are you looking forward to with your sport? Travelling to compete – when we travel for kendo, we do other tourist things as well. When we’re old enough, we’ll go for our first dan grading. One day we also want to beat Dad in a match, preferably at the nationals, and beat Hotaka (a friend from Cairns who is the fastest in our age group).

How did you get started in your sport? At two years of age when my parents bought me my first pony for Christmas and I’ve never looked back. Over the years I just rode at home with Dad and the family and began competing at the local horse sport events and club nights at Bartlett Park when I was around 10. At 13 I competed in my first rodeo, at the local Black River Rodeo on my white pony called 2E, and I was hooked. Before long my family and I were travelling to compete in the North Queensland ABCRA Rodeo Circuit. What’s been your greatest success so far? When I won the NQ Rookie Ladies Barrel Racing title, Runner up 14-18 Junior Barrel Racing Champion as well as travelling down to Tamworth to compete in the National Australian Finals. I brought home the National Rookie Barrel Racing title as well as the National Rookie Allround Cowgirl Title on my horse Slider, who I trained myself. Slider was my one in a million horse that set the standard high for all the other horses I compete on. What are you looking forward to? Rodeo is a great sport and to me everyone is like one big family, always helping and looking out for each other. This year I am excited to compete on my Barrel racing horse Dodge as we have finally found our groove and hopefully take home some wins. This year I’m hoping to be a great contender for the open titles (Barrel Race, Steer Undecorating and Breakaway Roping). My Partner is beginning to participate in the rodeo scene as well so I’m really looking forward to a lot of travelling and competing in the sport that I LOVE and hopefully Robert takes to it like I did. www.bartlettpark.com.au

How did you get started in your sport? I started playing basketball when I was eight years old at the Townsville Basketball Stadium (Murray Sports Complex). I’ve played basketball for nine years this year and it’s something I really enjoy. What’s been your greatest success so far? I’ve represented Townsville, North Queensland and Town High Tropics at national and state levels. I’ve also had the pleasure of being involved with the Fire Academy Program (Townsville Fire Basketball) this year. My greatest success so far, though, is making the U18 Queensland team (North) that will go to the 2015 Australian Under 18 Junior Championships in Ballarat soon. I’m proud of my achievement in being named as one of the many players in my age group to represent Queensland. What are you looking forward to with your sport? I hope to one day play for the WNBL or go to college over in America. How did you get started in your sport? I started out climbing indoors at PCYC Rasmussen about four years ago. After a while climbing indoors I found someone to teach me the ropes and started climbing outdoors. I’d heard of the JCU Climbing Club and assumed it was only for uni students but you don’t have to be a student to join and people of all ages and experience levels are welcome. The guy who taught me moved away from Townsville for work and left me without a climbing partner so naturally I found my way into the club and this year I’ve become the vice president. What’s been your greatest success so far? The most difficult climb I’ve done was graded as a 23. I’ve made progress on climbs much harder than that but I haven’t been able to get them clean. Climbing is a unique experience for each person. What one person finds easy another might find quite challenging. I’ve also been part of the team in setting new routes so when we finally develop the area enough my name will be in a guide book somewhere. What are you looking forward to with your sport? I really want to travel the world rock climbing. Every country has some great mountains with beautiful views. There are so many places yet to be discovered. Competition-wise climbing comps are held indoors to have a controlled environment and give everyone a fair chance. The climbs created are unique for that event so no-one gets to practice on them beforehand. Climbing indoors doesn’t hold the same appeal for me so I don’t really see myself doing comps. How did you get started in your sport? I started at the Velodrome in 2012 because one of my Dad’s work mates suggested it as a safe cycling environment. What’s been your greatest success so far? Making it into the Queensland state team for the National Junior Track Cycling Championships that were held in Melbourne in late February. I won a national silver medal in the team sprint with my team mate Lara Tucker. I finished in the top eight in every event I was entered into in my first year as an under 17. What are you looking forward to with your sport? Getting stronger and faster on the track with the help of my coach Danny Ormond, who puts in so much time with not only myself but with all of the kids at Townsville Velodrome. I’m sure I’ll be able to achieve this with the extra support I receive from my sponsor, Top Brand Cycles, and my parents (Briony and James) who give me the opportunities to race in other states and towns to get more race experience. I’d just moved to Townsville and had missed the registrations for all the other sports when my friend ask me to come and fill in for his indoor cricket team – I haven’t stopped playing since. I’ve also recently started playing outdoor cricket after my coach from indoor asked me to join his team. What’s been your greatest success so far? Making the Under 18 Queensland Outdoor Cricket team as well as winning three world cups playing indoor cricket in 2011, 2012 and 2014. What are you looking forward to with your sport? Continuing my outdoor career and hopefully one day making the Queensland Fire team, which may involve me moving to Brisbane. How did you get started in your sport? With the Arcadian SLSC when I was five as a fluro. Before this I’d always go with my two older brothers, Mitch and Nic, to nippers and training every week at Alma Bay. My mum is the coach so I’d tag along. What’s been your greatest success so far? The Queensland State Titles is the biggest event for all competitive surf lifesaving members in the state. This is where the best competitors from U/11 and up come together. Last year was the first time I could compete as an U/11 and I had a very successful year winning the Iron Woman, Surf Teams, 1km Beach Run and placing third in the Beach Sprint. What are you looking forward to with your sport? Short-term is to bring home some medals again at the 2015 Queensland State Championships. I love everything about the game, from coaching and refereeing to being the venue coordinator here in Townsville. How did you get started in your sport? I had always been interested in the idea of karate and one day representatives came door-knocking and I took the opportunity. It wasn’t until I came to Kumiai Ryu that I found exactly how martial arts can change a person for the better and become a way of life. What’s been your greatest success so far? Achieving my first-degree black belt was one of the hardest things I’ve ever done and one of the most rewarding. This, however, is just the start of the martial arts journey. I’ve since achieved my third degree. What are you looking forward to with your sport? I’m working towards establishing a full-time centre that allows me to share the benefits of my sport with others. How did you get started in your sport? I started skiing at the age of four in the Ross River on double skis and knee boards. By five or six, I was single skiing and developed a passion for tournament slalom skiing. What’s been your greatest success so far? Representing Queensland in slalom in the Under 14 age group at two national tournament championships. I now compete in the Under 17’s. I’ve qualified to represent each year since 2007. Recently I was awarded the NQ Champion Skier award, which goes to the most improved skier of the year across our eight regional tournaments. What are you looking forward to with your sport? Continuing to improve in slalom and the other disciplines of trick and jump skiing. How did you get started in your sport? I started in 2010 when the club began. I’ve stuck with fencing ever since and enjoy every minute of it. What’s been your greatest success so far? Representing Australia at the Under 23 Asia Championships in Manila last year as well as many junior competitions. I’ve represented James Cook University for fencing at the Australian Uni Games in 2013 and 2014 as well the Open Australian Championships in Canberra in 2012, 2013 and 2014. What are you looking forward to with your sport? I’ve been selected to represent Australia in the Challenge Monal, a world cup event in Paris, a satellite event in Croatia and the Hampshire Open Men’s Epee in England, which are all happening in May. How did you get started in your sport? I’m from a cattle property southwest of Winton. Growing up, my grandfather encouraged me to play sport. Dad was a really good rugby league player and coached my sister, brother and me. I played for the Winton Devils. In Grade 7 I went to boarding school at Blackheath and Thornbrough College in Charters Towers. My brother had been there already and joined the local rugby union team The Bulls. I followed in his footsteps and fell in love with the game. Since graduating in 2014 I’ve worked as a development officer with Townsville and Districts Rugby Union Inc. What’s been your greatest success so far? Winning a grand final in 2014 and being picked in the Queensland Country team. What are you looking forward to with your sport? How did you get started in your sport? I started two years ago with almost no idea of the game and without any skating experience whatsoever. That’s how I inherited my name BAM-Bee, a play on Bambi. I think the ‘walking on ice’ scene gave a pretty clear picture of how I skated. What’s been your greatest success so far? I’ve travelled away with my

How did you get started in your sport? I started ballet at TAPA when I was three years old. With the support of my family and teachers, I was able to continue my passion for dancing across all genres. I always aspire to improve and I follow my favourite quote, “Work until your idols become your rivals”. What’s been your greatest success so far? Being accepted into the Australian Ballet School Interstate Training Program in 2014. I was also fortunate to travel to Montenegro in Europe with a TAPA dance troupe where we won the Dance Festival. What are you looking forward to with your sport? The many opportunities that TAPA has in place including tours and workshops. In the past, I’ve had success at various dance competitions, so I hope to continue striving for these achievements. How did you get started in your sport? One week in my last year of school the maths teacher arrived with packs of cards, wrote a bidding system all over the blackboard, taught bridge all week and started many of us on a lifelong addiction. What’s been your greatest success so far? Two years ago my husband, Hugh, and I came second in the Queensland Open Pairs. What are you looking forward to with your sport? Bridge provides the ongoing intellectual challenge of a game that one can never master. How did you get started in your sport? I grew up in the small town of Cobden in south-west Victoria. The football club was the town, and the majority of my family and relatives were part of the Cobden Football Netball Club. What’s been your greatest success so far? Winning back-to-back premierships in 2013-2014 with the Thuringowa Bulldogs. In 2009 I represented Victoria Country in the National Championships, and in 2012 I represented Queensland Country in the same carnival. I’m proud of both of those achievements. What are you looking forward to? Hopefully a third premiership with the Bulldogs in 2015. Away from playing, I’m working with the Gold Coast Suns Academy as their Development Coach for the Townsville region. How did you get started in your sport? I started playing football when I was five years old with Annandale Falcons FC. My uncle, who was a keen soccer player when he was younger, had me kicking a ball literally as soon as I could walk and he’s helped guide me throughout my years of football. What’s been your greatest success so far? Last year I represented Queensland in the National Schoolboys Competition. During the season, because of injuries within the team, coach Ian Ferguson called me up to his NPL team and I played the rest of the season. What are you looking forward to with your sport? I’m in the 2015 NPL squad but I’ve been sidelined with a pre-season injury. I’m playing in the U18 Northern Fury team, gaining some game time and improving my fitness. How did you get started in your sport? I started tennis at 12 years old in Grade 7 in Mackay. I had a break from tennis at 31, when I started our business, then got back into it at 47. For the last four years I’ve been loving it even more. What’s been your greatest success so far? I was ranked seventh in Queensland in my age group when I was 17 years old but my wife, Kaye, says my greatest success was meeting her at the Home Hill Open 25 years ago. More recently the fact I’m back playing competitive tennis in the singles events in the open tournaments around North Queensland is an achievement. What are you looking forward to with your sport? I’m enjoying playing three or four times a week and training with the McGrath Tennis Townsville Thunder. I’m 51 years old now so hopefully, if I keep playing long enough, I might again be No 7 in my age group one day. www.tennistownsville.org

I realized I was out of my depth. Linda talked me into coming to this water aerobics class and here I was, the only male, a grey-haired geriatric male in a class of nineteen females. A score of females, if you count the instructor. The only bigger bellies were on the very pregnant. The exercises were at a frantic pace, starting with fast walking. Ever tried walking in water? And when the call came to walk in the opposite direction, the current created by the massed walkers is against you and you go backwards. Very disconcerting. Like swimming against the tide. Linda reminded me, yet again, to tighten my stomach muscles. I’m convinced she believes that if everyone tightened their stomach muscles, all the world’s problems would be solved. Something about strengthening your pelvic floor muscles. I keep up as best I can for a while and then find an inconspicuous, dimly-lit corner of the pool where I do some gentle exercises for my arthritic knees. The instructor calls a “wee-wee” break, largely for the pregnant women, and follows this with “no bubbles behind”. As you see, a sensitive old-age guy like me had to put up with a lot! Then, near the end of the session the instructor says, “put your finger in your belly-button and gyrate your hips”. Apparently this is like belly-dancing, a great exercise for pregnant women. Someone asks, “any particular finger?” I can’t resist my only chance to contribute to the class and call out from the gloom, “any particular belly-button?” It’s time I moved on.

ABOUT ME: I am originally from Newcastle, NSW. I came to Townsville when I was 18 for a holiday with a friend and loved it here so much that I decided not to go home. I originally studied at James Cook University to be a Marine Biologist and Zoologist, dabbled in Medicine, but am now a personal trainer, a remedial massage therapist and almost a nutritionist. I own my own business called Wehll, which I operate through Snap Fitness Townsville CBD and from my home-based clinic. I am a mummy of a 6-year-old girl, a step mummy of an 18-year-old girl and I have a wonderfully supportive husband who currently works in PNG every second month. My life is hectic and pretty wild! when these new ones came in to the gym I thought I’d hit the jackpot! SPORT SHOES I always have two pairs of shoes so my good, supportive runners don’t get worn out too soon and stay nice and comfy. BOXING GLOVES Boxing is one of my all-time favourite cardio exercises. WATER BOTTLE Because hydration is important. I try to keep a water bottle in my bag all the time and fill it up at the gym. I bring enough to keep her busy while I get my workout done. iPHONE I also use it for music, which is my number one motivational tool and I use apps like Map My Run and also a boxing/ interval timer.

I BOUGHT A BIKE I was on a plane recently, talking to the bloke next to me. We were talking golf. He said he joined a Brisbane club and reviewed it after a full year of membership. He realised that he paid about $700 per game of golf that year. It just wasn’t worth it. He now just plays whichever course he likes and pays the money. It is cheaper and his wife doesn’t hate him as much. Oh, how we laughed.

I HAVE ALWAYS RIDDEN A BIKE. IT IS JUST THAT I DON’T LOOK AS GOOD ON IT NOW AS I DID 30 YEARS AGO. I WENT INTO THE SHOP PROMISING MYSELF THAT I WAS SERIOUS THIS TIME.

Later that evening, I thought about my pushbike. Now, before you start laughing, I have always ridden a bike. It is just that I don’t look as good on it now as I did 30 years ago. I went into the shop promising myself that I was serious this time. I was going to get all spandexed up and get a helmet with a long tail and tri-bars, graphite, 300 gears, the lot. Thankfully, the sales guy didn’t smirk as he said, “how about we start off with a bike you can just ride? Then we can see about it being expensive down the track.” I didn’t agree instantly. I mean, how much could a good bike cost these days? $200? I came around to find the sales guy propping my head up and people saying things like “give him some air.” So, I bought a bike. I spent $650 on the thing and I ride it every chance I get. When I say ‘every chance I get’, I am now under $100 per ride. I thought I was getting good and

my pace was improving until I was overtaken by a 90 year old on a zimmer frame. I was also attacked by a magpie on my last ride. I was going so slow it kept swooping me until it literally ran out of breath. It skipped along the ground beside me with a look in his eyes saying “Come on mate, get past my territory.” To be active is to be alive. My wife, Linda, has found the trick for her, it is competing with herself. She just can’t lie to herself. “It’s easy” I tell her! I have tried to explain to her how it is done and its benefits, but she just doesn’t get it. Truth be told, we all know what we want to do. I always liked the line from John Lennon’s Beautiful Boy “Life is what happens while you’re busy making other plans.” My older brother always says that the hardest part of doing exercise is to put on your shoes and get out the door. I have taken him at his word and not gone there… Still, jokes aside, I have a plan and I am committed to it. In the movie, Dodgeball, Vince Vaughn ends the film by saying what we should all know about ourselves, that we are good people who need to be active. What happens after that is completely up to us. So long as we are happy and we are moving in a positive direction, we will be OK.

BY GIVING YOUR CHILDREN EXERCISE YOU ARE GIVING THEM A GIFT TO LAST A LIFETIME.

One of my favourite parts of my week is to walk the Strand. Often, when I am walking, I have a child or two for company. It always strikes me how very few adults have their children in tow. I know they’re slow, so I’ve tried to find ways to speed them up. The best so far is for them to scooter while I walk, though the rip stik involves a bit of stopping and starting. Parents tend to exercise separately to their children, yet when it comes to exercise, like adults, kids need it too. No matter their age, kids need at least an hour of physical activity every day. This is just a minimum and is the recommendation from a host of organisations and research from psychiatry and psychology to heart and sleep experts. So how do we get our kids moving? In a world that’s embracing technology, this means hours spent sitting. The more hours sitting the less spent running and playing. Firstly you need to limit the TV-videos and take back those precious hours. Life is actually outside the door, not watching it on the screen. And like all things parenting, set a good example yourself. It doesn’t work if they don’t see you exercise or that you don’t do it together at times. Exercising together can be fun for everyone, so build in some family activities around it.

Next time you walk ‘the Hill’ do it as a family. Don’t take no for an answer, just make it happen. Before you know it the complaints will have turned into compliance and then enjoyment. Need some more motivation to stop making excuses as to why you can’t do it? Then think about this: By giving your children exercise you are giving them a gift to last a lifetime. Did you know: physical inactivity is a major risk factor for your child to develop heart disease as an adult? It also increases their risk of stroke, obesity, blood pressure and diabetes as an adult. No parent wants a future for their child that includes such health problems. The seeds are sown now in childhood and there is plenty of research to show us that if you set the pattern of exercise as being part of their day as children, they will continue this into their adult lives. The opposite is also true, inactive children become inactive adults. Once you start to include exercise in your day it only takes a couple of weeks to see the benefits. Your child will feel less stressed, will feel better about themselves, be more ready to learn in school, build healthy bones, muscles and joints, sleep better all by just one hour of exercise a day.

THE BENEFITS OF BEING ACTIVE TOGETHER

It is really healthy to share interests and activities with your partner. The benefits assist the individual but also the couple.

The benefits of a couple exercising or being active together are endless but my column this month will attempt to discuss the top five and provide some food for thought for everyone in a relationship. Firstly, exercise and being physically active makes us feel good. We are all currently aware that leading a sedentary lifestyle affects our physical health in many negative ways. Therefore it is physically beneficial to make sure we are exercising at least 3-4 times a week, particularly if we work at a desk most of the day. Such physical activities also set off the happy hormones in our body which improves our mood and wellbeing. Therefore mentally we are feeling great and physically speaking we are moving our body, lifting our heart rate and being fit and healthy.

Exercising or engaging in physical activities together is a great opportunity for couple time.

Secondly, physical activity is an effective way to regulate our stress levels. Exercise and other enjoyable activities are a good way to relieve that stress that has built up during the day or stress caused by a particular event or issue in our life. Often people do not realise that enjoyable activities such as

walking, swimming, reading books, listening to music or painting are the ways in which we regulate our stress levels. We also don’t realise that stress can be compounded when we stop or reduce these activities if we are feeling tired, overwhelmed or rundown. I can think of numerous times that I felt too tired or stressed to go for a walk but it was the exact thing that I needed. Thirdly, exercising or engaging in physical activities together is a great opportunity for couple time. Couples can enjoy each other’s company and connect with each other while physically and mentally helping themselves as well. It may only be a 40 minute walk or bike ride together but it is still a worthwhile opportunity for togetherness. In our busy lifestyles it is important to utilize all opportunities to spend some quality time together. This opportunity for couple time is also an opportunity for open communication. When I work with couples in counselling they will often say that life is too busy to talk to each other. The walk or bike ride together is a time to talk about the day, share any great news and discuss issues or concerns.

Fourthly, it is healthy in a relationship to have different interests but just as healthy to share some common interests. Shared exercise or physical activities can be seen as common interests and because of the commonality for the couple that strengthens the relationship. This common interest is also an opportunity to support each other in achieving goals or improving performance within the activity. Finally, exercise or physical activity is a time to view the world around us. We are able to look at the beauty of the world around us but also to see that sometimes other people are dealing with far bigger issues than we are. It can help us to put our lives into perspective. With our relationships it is imperative that we use every opportunity to connect, engage in couple time and increase our levels of communication. Doing all of these things whilst improving our physical and mental health through physical activities is a great bonus.

FIGHTING FIT FOR RUN TOWNSVILLE RUN TOWNSVILLE IS BACK! Once again we are calling on the people of Townsville and surrounding communities to support the children by participating in this year’s Run Townsville, which will start and finish at the beautiful Jezzine Barracks precinct on Sunday 31 May 2015. 100 per cent of every registration fee will go towards the redevelopment of the Children’s Ward at Townsville Hospital and organisers have gone to every length to ensure the event caters to people of all ages and abilities. Whether you prefer to walk or run, it doesn’t matter, being involved in something so vital for the community is what the whole event is about. Run Townsville is also thrilled to announce its 2015 child ambassadors – Abi Chase and Marley Maurice, who are two amazing examples of children that will greatly benefit from the Children’s Ward redevelopment. The Townsville Hospital Children’s Ward has been pivotal in their recovery, with the two young girls receiving regular treatment for chronic, lifethreatening conditions. At just six weeks of age, Abi was diagnosed with cystic fibrosis (CF), a genetic condition which causes the production of abnormally thick mucus, leading to the blockage of the pancreatic ducts, intestines and bronchi and often resulting in respiratory infections. Now 15, Abi spends two weeks every three months in the Children’s Ward at Townsville Hospital, where she receives intravenous antibiotics as a preventative measure against respiratory infections. Abi also has twice daily intensive physiotherapy to help clear mucus build up from the small airways in her lungs. While the Children’s Ward does everything it can to make Abi’s stay as enjoyable as possible, her condition means she is unable to attend school or interact with other patients due to the risk of infection during her treatment, which can make the two week stay in hospital feel long and somewhat lonely.

For our other ambassador, four-year-old Marley, the Townsville Hospital Children’s Ward is familiar territory, with the youngster undergoing seven major surgeries as a result of Congenital Diaphragmatic Hernia (CDH). In 2010, Marley was born without a diaphragm from the middle of her chest right down to her hip which saw her intestinal organs move up into her chest cavity, resulting in the collapse of her left lung and due to the pressure, moved and created 10 holes in her heart. As Marley continues to grow, she will have to undergo further surgeries, and while it takes a toll physically and emotionally, her mother Mikayla says Marley never complains or feels sorry for herself – she just keeps on smiling. Abi and Marley have been chosen by the Townsville Hospital Children’s Ward and Townsville Hospital Foundation as the child ambassadors for this year’s Run Townsville. As a teenager, Abi has been encouraged by hospital staff to put forward her recommendations for a Youth Ward, which will be built as part of the Children’s Ward redevelopment, making her an ideal advocate of Run Townsville. In 2014, young Marley participated in the inaugural Run Townsville with her parents, Jeff and Mikayla, who are big supporters of the cause and are actively involved in raising money for the Townsville Hospital Children’s Ward. “The Townsville Hospital Children’s Ward has been pivotal in Marley’s recovery and ultimately saved her life. CREATIVITY MATTERS

ACCORDING TO ALBERT EINSTEIN, INSANITY IS DOING THE SAME THING OVER AND OVER AGAIN AND EXPECTING DIFFERENT RESULTS. THIS SIMPLE, BUT PROFOUND, OBSERVATION HAS UNFORTUNATELY BEEN LOST ON MANY FOLK IN THE NORTH WHO ARE, SO IT SEEMS, STILL DENYING THE PASSING OF THE ROARING NOUGHTIES. AS GRIEF IS A COMPLEX PROCESS, IT IS UNDERSTANDABLE THAT MANY ARE FINDING IT HARD TO NAVIGATE OUT OF THE MALAISE THAT IS 2015 ECONOMIC REALITY. BY WARWICK POWELL

Overcoming grief, and coming to accept the new reality, is necessary if we are to grasp new opportunities and create a vibrant, prosperous and resilient future. Accepting that “business as usual” is no longer viable, and that longstanding institutions and habits of thought aren’t helping, is the first step in this challenging journey. There’s every reason why we can be confident that North Queensland can emerge from this current funk. A new imagination and an ambitious business model are required, to build a new chapter in Northern Australian economic and social development and resilience. OLD INSTITUTIONS ARE OUT OF PUFF

There is a crisis in the regional economic development model. The model of advocacy-based pleadings for grants and project funding is out of steam; that train has left the station. Deteriorating fiscal conditions nationally and at state level (real or imagined) are placing increasing pressure on regional economies to find alternate funding models. The well-worn paths to State Capitals and Canberra are well and truly depleted, and a wish list of projects is not enough (if it ever was). The vicissitudes of the political cycle and electoral calculus can be periodically exploited, but never represents a sustainable and robust model of regional capital finance. This doesn’t mean a regional community and economy can do without a voice. It does. But advocacy can no longer be the bedrock of a region’s future economic prosperity and social resilience. We need to provide more solid foundations for future advocacy, not the other way around. The challenges of regional Australia and North Queensland as its epicentre, need a new imagination of what is thinkable and what is doable. Regional and local initiatives are needed because economic renewal and resilience won’t come from the State or Commonwealth alone.

A REVITALISED PUBLIC CULTURE OF INNOVATION AND CREATIVITY ARE CENTRAL TO FUTURE PROSPERITY.

There is strong international evidence that places which engender a public culture that values creativity are more likely to be dynamic, confident communities in which economic prosperity emerges. While a great deal of this creativity emerges from what we can call “civil society”, there is a strong case for public investment in institutions that are open to a culture of creativity. These institutions set the scene for a community that is hospitable to those that challenge the old ways and the vest interests that these ways support. THE CULTURAL ECONOMIC MATTERS

Truth be known, Townsville has an incredibly vibrant cultural life. This vibrancy also has real economic resonance, so don’t start thinking that the “world of culture” is distinct from the “world of economics”. The hard evidence of this conclusion, locally, can be found in a report called “Culture Matters”, which was produced by Townsville City Council’s Gallery Services. This report “identifies clearly that Townsville’s true social and economic growth market is cultural tourism and its cultural and creative industries” (p. 6) and supports this claim with the following evidence: 8 In 2013/14 more people visited Townsville’s public galleries than any other attraction in the region. 8 In that period 283,161 persons visited Perc Tucker Gallery and Pinnacles Gallery, of which 73,623 (26%) were interstate visitors and 16,989 (6%) came from overseas. 8 Similarly, in 2013/14 over 630,000 visitors attended the Museum of Tropical Queensland, Reef HQ, the Galleries, Townsville Civic Theatre and the Cultural Festival. This congrats to the nearly 420,000 attendees of NQ Cowboys, AFL, Townsville Crocs, Townsville Fire and V8 Supercars. Fact is “art exhibitions draw bigger crowds than the footy.” (their words … p. 16)

8Specifically in 2013/14 by far the largest single attraction in North Queensland with 281,161 visitors was the galleries, seconded by the Cowboys with 197,828. 8Cultural activity injects $86.8b into the Australian economy each year (whereas sporting activities contribute $24.9b). 8 The “Brick by Brick” exhibition attracted 102,320 visitors of which a staggering 31,719 were interstate and international visitors. 8 Visiting museums and art galleries is the most popular cultural activity in Australia’s tourism industry: • Of Australia’s international cultural and heritage visitors 57% had visited art galleries. Cultural activities account for 51% of international tourism to Australia. • Visiting museums or art galleries was the most popular activity for both overnight and day visitors with attendance of 43% and 36% respectively of all domestic tourists. • Domestic cultural tourists spend nearly double per overnight stay than non-cultural tourists. • Tourists don’t travel to see sporting stadiums, but 51% of international tourists are “cultural tourists” visiting galleries and museums. The report makes a compelling evidence-driven case for cultural facilities and institutions. It’s worth noting that the report also has something to say about stadiums: “Few fields of empirical economic research offer virtual unanimity of findings. Yet, independent work on the economic impact of stadiums and arenas has uniformly found that there is no statistically significant positive correlation between sports facility construction and economic development.” (p. 23) The report surveys some studies on the supposed economic merits of stadiums and concludes that “there is virtually no evidence of any perceptible economic development benefits from sports teams or stadiums.” (p. 24)

The logical conclusion that is drawn is that the:

“benefits of cultural and creative infrastructure are many and demonstrably surpass the limited benefits afforded through costly stadium developments.” (p. 25) HERE’S THE RUB

These words are devastating stuff. So, here’s the rub. Old institutions, old models and old vested interests have put their hands out for a massive dose of public funding for what local economist Col Dwyer describes as an economically questionable Colosseum.

As the State Government commits resources to a further round of “master planning”, it’s time we showed the world that we can think outside the box and put forward a real vision for a multifunctional Creativity and Innovation Precinct, in which a swanky new sporting arena is just one part. GET S.I.C.K.

Yet, there’s clear-cut evidence that a much bigger bang for buck would be achieved if the focus on investment and development was on cultural infrastructure.(There’s a story in there about how vested interests distort good public investment, but we can leave that for another day.)

We can rethink the stadium through different lenses. When I curated the Townsville2070 Urbanscape Imaginations (www.townsville2070. com) we provocatively asked whether the “stadium” was a “stadium or a massive solar base load power station”.

If the stadium horse has already bolted, then the creative challenge is to turn a sow’s ear into a purse (or to put some lipstick on the pig). What is it that we can do to transform a mono-dimensional “vision” into a multi-faceted facility that can further enhance the region’s cultural reputation, generate much-needed culture-based tourism growth, and showcase the region’s know-how, creativity and innovative flair?

Truth be known, any future standalone stadium is likely to be a cost burden on the community at large (if it wasn’t, then I’m sure the full business case would have been released to the public by now). But integrated with a cultural precinct that showcases our artistic, technological and innovative capacities, we’d have a chance that the overall precinct would pay its own way. What I’m getting at here is a NQ Sporting, Innovation, Creativity and Knowledge (S.I.C.K.) hub. As a community, I’m sure we can rise to the challenge. Sadly, however, what we know is this: same old, same old hasn’t cut it. Einstein had something to say about that.

Sure clients are friendly enough, but it is also human nature not to be confrontational if it is not necessary. Your clients might like the work you do, but could they LOVE it? Do they actively refer new business to you, based on how happy they are? What actions do you need to undertake to make this a reality? Hint: Ask them.

GET ACTIVE IN SUPER INVESTMENT STRATEGIES

The Australian Taxation Office is the regulator of Self-managed super funds and part of their role includes obtaining statistical data, which I find of interest.

Much of this data is collected from the SMSF’s annual returns that are lodged with the Australian Taxation Office, whom then releases quarterly statistics on what has occurred that year. These statistics include how many funds have been set up in that year, information on where the money is invested, age ranges of members, average balances etc. For example, this information includes how much is invested in different asset types such as fixed interest, shares (both national and international), and property. The ATO also notes how many funds have been shut down, sometimes due to inactivity. According to the Business Review Weekly (BRW) in 2013 around 30,000 SMSF’s were created, however the ATO shut down 10,000 inactive funds. It’s fine to have a self-managed superannuation fund, but it’s the maintenance of the fund where trustees/members need to be actively engaged. The ATO has cracked down on those funds that have not lodged annual tax returns and looking at closing those funds that are inactive. That could be a costly exercise for members. The number of people who are members of a SMSF were close to one million in 2013, and the ATO is concerned that trustees/

members don’t fully understand their responsibilities and obligations including actively investing for the member’s ultimate retirement benefit. By examining both small and larger funds, it is found that the larger funds tend to be more active – generally because the trustees/ members know they need to be more active in investment choices the more you have in super the more it can potentially grow – hence why financial advisers are engaged and accountants are also actively involved in monitoring the fund. Many of the smaller funds are the inactive funds where balances are sitting in cash with little to no activity. With any type of investment activity though, a strategy must come first. One of the key points is that the ATO wants trustees to be active by stipulating the investment strategy rule that they must have a strategy in place and that it must be reviewed regularly. Why go to the trouble to set up a fund, rollover benefits and then not consider all your investment goals and opportunities for the fund? The investment strategy rules were tightened for SMSFs in 2012, and a breach of this rule could result in an Auditor Contravention Report. Contravention reports

can ultimately lead to the process of winding up of an SMSF. Previous to 2012, the investment strategy review (and or replacement) tended to be more on an ad hoc basis. Often, the review occurred when the year end financial statements were being reviewed (i.e. after the fact). The rule of thumb is to prepare a strategy before placing money into investments. This process involves the trustee’s determination of the fund investment objectives, and methods to achieve these objectives, based on the following principles: • To maximise the return to members, taking into account the risks associated with the holding of different types of investments; • To consider the benefits of diversifying the investments of the fund; • To ensure the fund has sufficient cash liquidity at any given time to pay member benefits and other costs incurred, as they become payable; and • To consider whether the fund should hold insurance cover for members. To protect your Self-Managed Super Fund, get active in your investment strategy, know your responsibilities, lodge your returns on time, and keep up to date.

FOUR KEY ACTIONS THAT APPLY EQUALLY TO BUSINESS IN CHALLENGING TIMES AS THEY DO IN DISASTER AND CRISIS AREAS

In times of crisis and disaster true leaders are identified not by the position or title they hold but by their actions and reactions. Those on the ground in Vanuatu dealing with the aftermath of Cyclone Pam and the destruction and devastation that has been left behind want leadership. Where it comes from will depend upon who steps up and acts with clarity and certainty and takes control. Leading in times of crisis and disaster you won’t have all the answers, you won’t even know what the questions are going to be, but with action comes clarity. In the aftermath of the South East Asian tsunami there was somewhere between 250,000 and 300,000 people who would lose their lives across several countries. Most of those who lost their life were in Banda Ache, Indonesia. In Thailand 5395 bodies were recovered following the same disaster and an identification effort, the size of which had never been seen before was undertaken by forensic practitioners from 36 different countries who arrived to help. There was over 400 forensic staff that all descended from across the globe to assist in the efforts of returning those loved ones to their families. Approximately half of those who lost their life were Thai nationals. One of the biggest challenges facing the teams that arrived was that what they were about to do was unprecedented in terms of size and co-ordination. There was no international org chart that provided for a leadership structure, there was no road map to follow or precedent which had been set. What defined the leaders was the actions and reactions that they took. In business the challenges might not be as sudden or on the scale that occurred in the aftermath of the tsunami. The challenges to business may not be on the back of a crisis or disaster the challenge to leadership might be the result of unprecedented growth. Importantly it’s what we do and the decisions that are made which really defines true leaders. Working in Thailand for several months as part of the Australian leadership team deployed following the South East Asian tsunami I witnessed the acts of leaders that defined them far greater than any position or

title they might have held. Similar acts of leadership were on show as I travelled through the prefectures of Japan in the days and weeks after the 2011 earthquake and tsunami that again defined true leaders. Conversely working in Saudi Arabia following the floods in the city of Jeddah 2009, it was the absence of some of these leadership qualities that resulted in the unnecessary loss of life. In Thailand there were actions taken by those who led without authority that defined them and built a following from the 400 forensic staff that would be part of the humanitarian response. There were four key repeatable actions the leaders took that apply equally to business in challenging times of growth as they do in disaster and crisis areas: Speed – Those who first arrived on the ground in Thailand did not possess a greater level of experience or expertise than many of their international colleagues. The Australian leaders did not loose more nationals to the disaster than other countries that would warrant them leading, but they took action. It wasn’t complex, it was action. When there is a gap in the market place, when an opportunity presents, so often it is the first to move that will hold that position of leadership. If you wait until you have all of the answers to all of the possible questions, someone will beat you to it. The fact the Australian leaders acted decisively and took action put them into positions of leadership and others followed. Sensitivity – When we implement change it upsets people as there is variance to their routine and often change is met with resistance. There is comfort in the familiar. If we accept that change is met with resistance what do we do to address those areas of resistance prior to implementing change. This was the second thing the Australian leaders did well in Thailand after the tsunami and equally as well when working in Bali after the 2002 bombings with the Indonesian Government. There was significant change required to process and procedure which had been adopted by the local authorities following both incidents. The Australian leaders were able to bring about the significant change that was required by addressing the issues of resistance prior to seeking to implement the change program.

Structure – Arriving at a temple in Thailand to find 3500 decomposing bodies on the ground with forensic practitioners arriving from across the globe to assist, there needs to be a structure in place. You can’t just make it up as you go. But we tend to impose to much structure to the process we have in place which in turn kills our creativity. You can’t have an organisation that is innovative and one that is mistake free. You get to choose one – not both. Overlaying our teams with policy and procedure every step of the way takes away the ability to make decisions and lead with innovation and creative thought. Simplicity – Following on from the third point of structure is simplicity. We need our leaders to make decisions and at times they need to make decisions without deliberation. If our leaders act with good integrity, good intent and consult where they can and then make a decision and get it wrong, they will be forgiven. If our leaders fail to make decisions for fear of making the wrong decision they won’t be forgiven. It is better to make a wrong decision than lack the courage to make any decision at all. It was these four leadership qualities of acting with speed, sensitivity, structure and simplicity that I witnessed whilst on the ground in response to the disasters in Bali, Thailand and Japan. Working in Saudi Arabia and reviewing the response to the 2009 floods in the city of Jeddah at the request of the government, it was interesting to note that in my opinion numerous lives were lost unnecessarily because of the lack of speed and structure from their response. Our business lives are not filled with responses to natural and criminal acts that claim the lives of thousands of people at a time. But we don’t have to have a crisis or disaster on this scale to apply simple leadership qualities that will separate you and your organisation from those you are competing for share of market with. It’s what you do and how you act that is more important than the title on your business card when the pressure is on.

REGIONAL COMPETITION RAISES STAKES IN ARTS AWARDS

THE 2015 NQ ARTS AWARDS WILL SHOWCASE THE BEST OF THE REGION WITH MORE THAN 200 NOMINATIONS RECEIVED ACROSS CHARTERS TOWERS, THE BURDEKIN, HINCHINBROOK AND TOWNSVILLE, SPANNING THE PERFORMING, VISUAL AND LITERARY ARTS. The 2015 NQ Arts Awards is the region’s pinnacle arts and cultural event recognising and showcasing the artistic talents of groups and individuals. Community and Culture Committee chair Cr Sue Blom said there had been some high calibre nominations this year. “Nominations have been received across a range of art forms including exhibitions, theatre shows, arts events, literary publications as well as individuals in the arts community that have made outstanding contributions,” Cr Blom said. “This year we have expanded the nomination catchment across the region and improved the nomination process which has definitely resulted in more entries.” This year’s awards will include 13 award categories with individuals, groups and organisations able to nominate in the areas of Dance, Music, Writing and publishing, production, events/festivals and visual arts. The winners of the NQ Arts Awards will be announced at a gala event showcasing local artists, dance groups and theatre performers at Townsville Civic Theatre on Friday 8 May 2015, with tickets going on sale from www.ticketshop.com.au soon. FROM SOLO ACOUSTIC ARTIST TO FULLY FLEDGED BAND FRONTMAN, TOWNSVILLE SINGER-SONGWRITER JACOB LONG HAS BEEN CONFIDENTLY CARVING HIS NAME INTO THE LOCAL SOUNDSCAPE. DRAWING INSPIRATION from the likes of Ed Sheeran, Kings of Leon, The Script and The Fray, Jacob Long’s catchy brand of alterna-pop will get under your skin (and stuck in your head). “I describe alternative pop as pop music that blends contrasting musical styles. My music definitely has typical pop elements in its melodies but my arrangements tend to be a little obscure to the mainstream,” says the 24-year-old Pimlico resident. “I grew up listening to an eclectic collection of musical artists and that has trickled through into my writing.” His 2013 debut single Lost My Phone was a clear introduction to Jacob’s colourful sound and quirky lyricism. Jacob followed with the release of his self-titled EP in 2014 and has toured with Aussie legends Ian Moss and James Reyne. “Touring with Ian Moss was completely different to being on the road with James Reyne. Ian Moss was doing an acoustic tour and James Reyne was with his full band. It was awesome to see

the difference first-hand,” Jacob says. “As soon as I walked into the venue in Emerald I saw him (Ian Moss) and was invited to sit down for dinner. “It was a weird feeling, one of Australia’s biggest rock legends inviting me to have dinner with him. He came in and sat in on one of my sound checks and said I was ‘pretty good’. A ‘pretty good’ from the mouth of Ian Moss — I’m happy with that!” Jacob is excited to be working on his second EP, the lead single of which, Won’t Hide It, is available now on iTunes. “I wrote Won’t Hide It when I was in Sri Lanka on mission with my church. The inspiration behind it was being away from my girlfriend Jessica (who later became my wife). It was the first time we’d been that far away from each other and I tried to capture that emotion,” Jacob says. Jacob makes regular appearances at Burnda Street Unplugged, an all-age acoustic event created to support the Townsville community, promote opportunity and foster culture among local musicians.

“I love playing there because it invites a very supportive crowd, and the quality of sound and performers are awesome,” Jacob says. “Other than that, I play at James Cook University off and on, and play with my band whenever we get the chance. The guys I play with (Matt Marano on bass, Matt Chandler on drums and Joel Stevens on lead guitar) are great friends and excellent musicians.” Hopeful for a North Queensland tour of his own one day, Jacob asks the Townsville community to: “Continue to support the local guy and make every effort you can to get to a show.”

More than 200 chefs, producers, winemakers and media will descend on the village of Noosa to join foodies from all over the world at the Noosa International Food & Wine Festival (NIFW), Thursday 14 to Sunday 17 May. Among them will be our Townsville’s own Matt Merrin, who heads up chefhatted restaurant JAM. “It’s a very exciting opportunity to cross-promote Townsville and Noosa as great dining destinations,” says Matt, who is on a roll after JAM was named 2014 North Queensland Restaurant of the Year at the Restaurant & Caterers Savour Awards. “We also picked up a Gourmet Traveller Wine List award, which was a huge boost for us and Townsville, and we started 2015 with our third year in a row receiving a Chef Hat from the Australian Good Food Guide. At the Noosa International Food & Wine Festival, Matt will be using some sensational local produce in his cooking demonstration as he continues to promote how much Townsville is evolving.

After living in Melbourne and working in some cutting-edge restaurants for seven years, Matt and his partner Paul decided they needed to spend more time around family. “Melbourne was a great place to expand my career and enjoy the culture the city has to offer after completing my apprenticeship in Perth,” Matt says. “A career highlight was cooking at Donavan’s Restaurant St Kilda alongside Robert Castellani.”

“I’ll be involved in a number of events, including a Guest Chef Degustation dinner at Ricky’s River Bar & Restaurant on the Noosa River,” Matt says.

Before realising his dream and opening JAM, Matt created a fresh culinary experience for Townsville as Executive Chef at the Watermark. With Matt at the helm, Watermark was the first restaurant in Townsville to receive a Star rating in the Courier Mail Good Food Guide.

Matt will be one of four presenting chefs with each cooking a course. The other guest chefs are Javier from Moda Brisbane, Ben from The Rees Hotel NZ and Brandon, head chef at Ricky’s.

“I fell in love with food in my teens. My mum will tell you I was ‘fussy’,” Matt laughs. “One memory is asking mum to re-plate one of my dinners. I may have gotten a clip over the ear for that one…

On the Saturday, Matt will assist food critic Elizabeth Merment in a cook-off against other food critics including Matt Preston.

“My back-up plan as a kid was to become an accountant, a subject I enjoyed at school, but I couldn’t sit still behind a desk all day. So instead of being an accountant I’m about to marry one this August after nearly 14 years together.”

RICE PAPER ROLL INGREDIENTS 2 Vietnamese rice paper sheets pan of warm water 1 soft shell crab 1 sprig Thai basil 1 sprig lemon basil 1 sprig mint 2 red shiso leaves 1 pinch somen noodles 1 small cucumber, cut into 10cm batons 4 butter lettuce leaves 1/2 carrot, julienned 1/2 cup Japanese panko breadcrumbs 1 egg red nahm jihm mayonnaise nuoc cham condiment herb plate for presentation PREPARATION Bring a pot of water to the boil and blanch the somen noodles for no longer than a minute. Refresh immediately in ice cold water. Do not let the noodles sit in the water as they will absorb liquid quickly, so remove quickly and twist into small piles on a side tray. Cover with cling film and leave to rest at room temperature. Take the flour, egg and breadcrumbs and place on three separate trays. Cut the soft shell crab into quarters and roll in the flour, transfer to the egg wash then the breadcrumbs, making sure that you have a thin crust of breadcrumbs (rather than clumps as this will make the crab very difficult to roll). Shallow fry until golden. Take a damp kitchen towel and lay it out on a chopping board. Then take one of the Vietnamese rice paper sheets and dip into the warm water for just 20 seconds: you will need the rice paper roll to still hold its shape. Lay out the sheet on the damp cloth and cut each end of the rice paper circle to make a rectangular shape. You will find the rice paper naturally starts to become softer on the damp cloth as it absorbs moisture.

Add the butter leaf lettuce on top of the rice sheet and start to layer the ingredients. First place a shiso leaf followed by the somen noodles, deep-fried soft shell crab, cucumber, carrot and add a small drizzle of mayonnaise along the centre of your roll. Place a layer of Thai basil, lemon basil and mint on top and start to roll the rice sheet tightly, taking care not to tear the sheet. The rice paper will stick naturally. You’ll end up with a roll approximately 8-10cm in length. To finish, slice it in half on a diagonal slant. Pull out some of the crab from inside the rolls for presentation purposes and transfer to a serving plate. Serve with side dishes of red nahm jihm mayonnaise and nuoc cham to finish. Sarong twist If you’re looking for a vegetarian option, just remove the crab and add in golden fried tofu. Recipe continued over>

TOM YUM STEAMBOAT

Red Nahm Jihm Mayonnaise (Thai) INGREDIENTS 3 coriander root stems, white and green parts 3 cloves garlic, peeled 1 small bird’s eye chilli, seeds in 3 large red chillies, deseeded 1 small bunch fresh coriander 2 tablespoons fish sauce 3 tablespoons lime juice 1 egg yolk 5 grams salt 200ml of good quality salad oil METHOD Blend all ingredients together (apart from the egg and oil) first. When finely blended, add the egg yolk then gradually start adding the oil, in a slow but steady stream, while continuing to blend on a low setting. You will see the mixture emulsify as the mayonnaise start to form. For greater control over the process, this stage can also be done in a mixing bowl with an electric whisk.

Nuoc Cham Dressing (Vietnamese) INGREDIENTS 4 large red chillies, deseeded 8 cloves garlic, peeled 1 cup fish sauce 2 cups Heinz white vinegar 1 cup white sugar 1 cup water pinch salt METHOD Julienne then finely chop chillies and garlic and set to one side in a bowl. Combine vinegar and sugar together in a bowl and stir until the sugar is dissolved. Add the fish sauce and a pinch of salt then pour over the chillies and garlic. Mix gently and store in an airtight container in the fridge. In Vietnam there is often a chilli garlic vinegar mix to hand in the kitchen at all times. The chef will then add fish sauce and sugar to the base mix as required. Pre-soaking the garlic and chillies in vinegar lends a deeper infusion of flavours and colour.

INGREDIENTS 700ml chicken stock 1 pinch salt 7 tablespoons fish sauce 4 limes, juiced 7 tablespoons chilli jam 2 small knobs galangal, peeled and sliced 5 coriander roots 3 small red chillies 8 shallots, halved 4 stalks lemongrass 7 large mussels 5 king prawns 150 grams snapper fillet, cut into 5 pieces 2 cups oyster mushrooms 1/2 cup flat leaf coriander, roughly chopped 8 cherry tomatoes, halved 6 kaffir lime leaves, torn Oyster sauce (optional) PREPARATION Place chicken stock and a pinch of salt in a large pot and bring to the boil. Bruise the lemongrass, lime leaves, galangal and coriander root in a mortar and pestle. Roughly chop the shallots, chillies and galangal to release their flavours, then place in the boiling stock. Stir in the chilli jam and bring to the boil once again, before adding in the fish sauce and lime juice. Reduce from a boil to a low simmer. Whilst the stock is simmering, slice the oyster mushrooms and set aside together with the cherry tomatoes and coriander. Prepare the seafood by cutting up the fish, cleaning the mussels and shelling the prawns (leaving the heads intact). Poach the seafood in the simmering tom yum stock for approximately 4 minutes. Add in the mushrooms, cherry tomatoes and remaining herbs to the broth. Season with oyster sauce if desired. Serve immediately. Sarong twist If you find that you cannot achieve the right flavour and depth for the tom yum soup, add some oyster sauce or more lime juice as desired. For a deluxe version, add yabbies or lobster to the selection of seafood.

Chilli Jam (Thai) INGREDIENTS 300ml vegetable oil 1/2 kilogram red onion 250 grams garlic, peeled 30 grams galangal, peeled 35 grams large dry red chillies 50 grams small dried shrimp 50 grams fish sauce 75 grams palm sugar 75 grams tamarind pulp METHOD Slice and dry roast the galangal in the oven until crispy. Finely slice the garlic and red onion. Heat all of the oil in a small pan to medium heat. Using the same oil for all the frying, first deep fry the garlic until golden then remove from pan. Then fry onion until translucent and starting to crisp on edges. Remove, and then follow with the dried shrimp. Finally deep fry the chillies for just 10 seconds only. Blend all fried ingredients together set to one side. Warm half a cup of the used oil and add the palm sugar and fish sauce. Add the paste to the oil and continue to cook through for five minutes, then mixing in the tamarind pulp to finish. Cool and transfer to the fridge.

Where is the one place visitors to Townsville must see: Go down Doorey Street, Railway Estate to the boat ramp just before dusk and watch the Ibises coming in to roost in their thousands. A CHAMPION FOR NETBALL

BEC BULLOCH IS HEAVILY INVOLVED IN NETBALL AND WILL TELL ANYONE AND EVERYONE ABOUT THE GAME SHE LOVES SO MUCH. WORDS NICOLE THOMSON-PRIDE PHOTOGRAPHY SANDRA HEIER EVENSEN

SOME PEOPLE look forward to their sweet 16th birthday. Other people count down the days until they turn 18. But when Bec Bulloch was growing up all she wanted was to turn nine years old – because that was the age when you were allowed to officially start playing netball. “Turning nine couldn’t come fast enough for me,” says Bec, who grew up in Bowen watching her older sister, Nat and mum, Helen play netball. “As it meant I could finally play netball – officially.” Since then Bec has always been involved in the game. She says she

fell in love with netball for its fast pace and unpredictability. “You never know what’s going to happen and momentum can change so quickly and often,” explains Bec. “There’s never a dull moment.” As she talks about netball with unwavering passion it is easy to understand why Bec is still so heavily involved in the game all these years later. When asked what she loves about the game so much, Bec admits she could probably go on forever. She has played netball, she has coached it, she has umpired it and she has even trained other girls to umpire games. “Developing some terrific

young umpires over that past six or so years is something I am proud of,” says Bec. “They do me proud on a regular basis.”

Another achievement she is proud of is helping to build the Phoenix Netball Club to what it is today – a club with excellent values and hard-working, passionate people. “[Building up the club] has been no easy feat, but it’s been rewarding.”

Bec’s life these days doesn’t revolve around netball quite as much as it used to. This year she is determined to pull back, just a little. Besides a new event planning business, Dream Cloud Events, Bec is also busy with a young family. But there is no need to worry about Bec’s future involvement in the game – with two beautiful young daughters ready to come through the netball ranks, Bec will be on the courts for a long time to come.

As has watching young girls develop into great netballers – and also great people, as Bec believes sport helps people to develop and learn. [Sport teaches people about] how to cooperate and play
